Take a journey through food

C

hef Michael Caines has been wowing diners for almost 20 years, but now he is sharing his secrets in a book for the first time. The two-Michelin starred chef has just released his first cook book, Michael Caines at Home, and on November 27 he will be returning to Bath to talk about his book at a special lunch at the Bath Priory where until last year he held the position of executive chef.

“This book is well over due,” said Michael. “I’ve been at Gidleigh for 19-and-a-half years and I’ve never done one but I got the right publisher and I have done the book I wanted to write. That was very important to me.”

It is a personal book – no cooking meal in 15 minutes, or creating three course meals for under a tenner – it’s a reflection of Michael’s own foodie

passions with snippets of childhood memories interspersed among bits of history and cooking hints.

“Food is personal,” said Michael. “I’m not writing recipes inspired by other people; they are inspired by my experience and knowledge.

“The book is a journey through ingredients with me talking about my passion and sharing my knowledge.”

Michael was heavily involved in the whole process of creating the book, not only writing it but also styling the food and assisting photographer David Griffen.

He said: “I styled the food myself – cooked it all. And David took all the shots.

“The shoot took ten days with a day of planning.

“I really enjoyed doing the photography and choosing all the different dishes and plates to use.

“I was very specific. I spent one day just going through every single shot, how it would be presented, what plate I wanted

to use. I had an agenda of how we were going to shoot it. It was keeping it focused.”

Not only is Michael at the helm of the renowned kitchen in Gidleigh Park in Devon, but he also has a partnership with hotelier Andrew Brownsword with ABode Hotels and Michael Caines restaurants so making time to put pen to paper was not always easy.

“The writing was easy,” he said. “It was finding the time to write which was slightly more difficult.

“I found that the best time to get a clear couple of hours was either late at night or early in the morning.

“I really enjoyed writing it though. I did a lot of research and I found it a real education.”

Michael might be one of the top chefs in the country, but he insists that the recipes are not only for the highly skilled.

“There’s something for everyone,” he said. “I have tried to bring the essence of being a Michelin starred chef into

people’s homes in a way that’s aspirational but also doable.

“I have tried to break everything down into bite-sized pieces so that people can do it.

“There are things that will be challenging, but there’s also plenty that’s achieveable. I think there’s something in there for everyone.”

Those coming to the event at the Bath Priory, organised by Topping and Co, will be treated to food inspired by recipes from the book, cooked by Michael and the team at the Priory, including his protege Sam Moody who now heads up the kitchen.

“It will be great to work with Sam and the team,” said Michael.

This is the second event Michael is holding at the Priory to talk about his book after the first was a sell-out.

“I have a great fan base and following in Bath,” said Michael. “And it shows in the popularity of these events.

“It’s really lovely to come back.”

Perfect crabby patties Two star Michelin chef, Michael Caines, shows us how to make his crab cakes with Thai red pepper sauce.

He said: “Fish cakes are simple and quick to make. This crab cake recipe is delicious the lemongrass and ginger add fragrance while the intensity of the crab combines with the chillies to give depth and warmth.

“It’s an Asian-inspired take on the humble fish cake! Combined with Thai red pepper and cocnut sauce, these have proved to be a winner in both my Cafe Bars and at home with the kids.

“The Thai red pepper and coconut sauce isn’t a classic Thai recipe but more an inspired collection of ingredients which come together well to make this lovely sauce.

“It can be used as a sauce or a dip, and even as a dressing.

“It’s quick and easy to make and full of flavour.”

The recipe is taken from Michael Caines at Home by Michael Caines, published by Preface, £25 How to make it: ■ Heat the olive oil in a pan over a medium heat and add the onions, peppers, lemongrass, ginger and garlic.

Cook for 5 minutes, until soft, then take off the heat and allow to cool. Once cooled, place in a bowl. Squeeze the crabmeat to get rid of any excess water, and add to the bowl together with the pureed potato,

chillies and coriander.

Season with salt and pepper, mix well, then mould into six cakes and place in the fridge to firm up.

(While they are firming up you could make the sauce) Preheat the oven to 180C/gas mark 4 and take the crab cakes out of the fridge.

Get ready three bowls: flour, beaten egg and breadcrumbs.

Dip the crab cakes first in the flour, then in the egg, then in the breadcrumbs.

Shallow fry them in vegetable oil until golden brown on both sides then place them on a baking tray and put them into the oven for six minutes.

Put the rocket, chilli, mint and coriander leaves into a bowl and dress with the lime and fish sauce.

Place the spinach leaves in the centre of the serving plate, arrange the crab cakes on top, and spoon the Thai red pepper and coconut sauce over and around the plate or on the side.

■ To make the sauce: Heat the lemongrass in the oil, then press through a sieve. Cook the onions, garlic and ginger pesto, chillies and coriander gently in olive oil.

Add the cocnut milk and red peppers and bring to the boil. Transfer to a blender and blend until smooth, then press through a sieve.

Correct the seasoning as required and set aside until needed.

Berry Christmas

Lights, tinsel, music and a generous helping of celebrity helped Bath celebrate the arrival of Christmas.

The queen of cakes Mary Berry turned on the city’s Christmas lights in front of hundreds of fans who filled Milsom Street in an attempt to get a glimpse of the baking star.

During the event it was announced that Mrs Berry would be given the freedom of the city.

Mrs Berry said being asked to be a freeman of the city, only the second woman to do so, had been a surprise but something she was very proud to receive.

“I’m immensely honoured, overcome.

Am I allowed to drive my sheep down the main high street and can I have free

parking?”

As well as an appearance by Mrs Berry this year’s Christmas lights switch on included performances by the Vocal Works Gospel Choir and Bath-based band Too Much Lipstick.

Bath Rugby Players Matt Banahan, Leroy Houston, Nathan Catt, Tom Biggs, Carl Fearns and Will Spencer also took part collecting money for the RUH Cancer Care Campaign.

After the switch on Mrs Berry was the guest of honour at a special reception hosted by the Bath Chronicle at the Roman Baths where she gave a short speech sharing her memories of her childhood in the city. She also posed for photographs with councillors, and members of the Bath business

Enduring enigma

f you were listing the great plays of the 21st century you might well include Howard Breton’s Anne Boleyn which was commissioned by Shakespeare’s Globe, and premiered at The Globe in 2010. Two years later the Globe’s production was revived for a tour of England and Scotland, jointly produced by Shakespeare’s Globe and English Touring Theatre which took the play to a much wider audience. It played at the Theatre Royal Bath in April of last year.

The Rondo Theatre Company is performing the play at the Rondo Theatre Bath from next Wednesday, a production that is being directed by Colin Barnes.

No dry history lesson this production explores the enigma that was Anne Boleyn.

With it’s heady mix of passion, intrigue, betrayal, religion, singing and dancing, not to mention cross-dressing.

Stunning costumes have been designed and made by local designer Chrissy Fryers, based on original styles of the period and props including a horribly life-like decapitated head have been fabricated by local artist, David Wood.

Classic Coward

N

ext Stage in Bath has won a bit of a reputation for performing new, cutting edge works often surrounded by a fair bit of controversy. That doesn’t mean they don’t do the classic stuff but it’s a bit of a treat when they offer something as traditional as Noel Coward’s Hay Fever.

The play is a cross between high farce and a comedy of manners all set in an English country house in the 1920s and over the years since it was first performed back in the twenties it has attracted some of the biggest theatrical names in the business.

Next Stage opens its production on Tuesday at the Mission Theatre where it runs until the end of the week.

Ann Garner, who is directing the revival, says: “In the theatricality of the Bliss household, life is never simple.

Matriarch and retired actress, Judith Bliss, creates a constant dramatic whirl into which family and friends are inevitably drawn.

“Without a crisis every few hours Judith would be bored, so her

long-suffering husband and children feel duty-bound to humour her and play along in her various theatrical games.

“Every so often, despite the mercurial Judith, the Bliss partners and siblings find the tedium of domesticity, even bohemian domesticity, too much to bear.

“The answer: a weekend house party.

Sandy, Richard, Myra and Jackie unwittingly arrive for what they fondly imagine will be a refreshing stay in the country, but their hosts, the Bliss’s, are soon running rings around them.

“The bewildered house guests are reluctantly caught up in the mischief and mayhem, with imaginary liaisons, clandestine pairings and an awful evening of parlour games to endure. It is little wonder that by Sunday all four guests are desperately plotting their escape.”

Ann says that Hay Fever is a “delicious play of manners infused with Noël Coward’s sparkling wit and repartee”.

This show is beautifully costumed and presented in-the-round this production with Next Stage favourites Joanna Bowman and George Gent as Judith and David Bliss.

From screen to stage

Gina Baksa talks to actor Paul Michael Glaser ahead of his role as Tevye in Fiddler on the Roof in Bath

I

n the mid-seventies, the whole world was in love with Starsky & Hutch – Paul playing the sexy, wise-cracking foil to David Soul’s sensitive ‘Hutch’ in the cult US cop series. Now 70, he doesn’t want to talk S&H… “That was a long time ago,” he drawls, his voice even deeper.

“A lot of people still love the show though, so I don’t mind being most known for it.”

Yet only a few years before the cardigans and iconic Gran Torino, Paul played studly suitor Perchik in the 1971 Oscar-winning movie version of Fiddler on the Roof, alongside Topol’s career-defining Tevye. Talk about life coming full circle.

Many acting and directing credits followed, including a cameo in the 2004 spoof Starsky & Hutch movie and helming Running Man with

Today, Paul is on a six-month UK tour with Fiddler.

The musical, with hits If I Were A Rich Man and Matchmaker, Matchmaker, is set in 1905 Tsarist Russia. He plays the village milkman, a man with traditional views that clash with his forward-thinking daughters.

“It’s a great iconic role, full of whimsy and sadness and great humour. Tevye is forced to deal with dramatic changes in his life. We can all empathise with that.”

Strictly’s enfant terrible, Craig Revel Horwood is directing. “He’s got me dancing and everything,” Paul admits. “I enjoy Craig a lot.”

So how did he get involved?

“The producers contacted my agent and I agreed. It’s a brilliant piece of theatre. Musical director Sarah Travis has done a fantastic job on the score.”

Does he prefer the stage or film?

“There’s a definite technique involved in movie acting, but it’s not as gratifying.

When you go on stage you’re telling a story to the audience, so there’s an interchange of energy and tension.

It’s a wonderful experience.”

Paul has also written a fantasy children’s book, Chrystallia and the Source of Light. Beautifully illustrated, it tells the story of a 13-year-old girl and her ten-year-old brother … “spending their last Christmas in their house as their mum is not well and the bank is about to foreclose on their home.

“On Christmas Eve they find themselves in an underground medieval kingdom, in search of the source of light.

And they discover that every being and everything they see is made of minerals and crystals. It’s a story about the awesome power of love.”

Paul first wrote it as a screenplay 14 years ago.

“At the time there was no technology to show the properties of light on the screen, so I wrote a book

instead, and I’ve recorded an audio version.”

The allegory clearly reflects his well-documented personal tragedy. Paul lost his first wife Elizabeth, and later their daughter Ariel, to Aids, after she received an HIV-infected blood transfusion during childbirth. Their son Jake, 29, also contracted HIV in utero, but thankfully remains in good health.

“Yes, you could say Chrystallia is a metaphor for my own life,” Paul agrees.

“I wanted to share what I’d learned about loss and helplessness, which has totally changed me. So I decided to write a book to the child in all of us.”

So what is the book’s message?

lot has changed for Big Deal since the release of their critically acclaimed debut album Lights Out back in September 2011 as you can hear when they play at Moles, Bath tonight.

Comprised of California-born Kacey Underwood and London’s Alice Costelloe, Big Deal’s bedroom-composed songs struck a pure and resonant chord with music fans and

critics all over the world.

Built on the duo’s gilded melodies and just two guitars, it was this sparse set up which allowed their intensely honest and at times, shockingly intimate lyrics to take centre stage.

Anyone who’s felt the sting of love unrequited, or the poignant pull of experiences savoured and lost; anyone who’s ever been consumed with feelings for another, can’t help but be moved by their music.

On a genre-tapping trip The Correspondents are unleashing single Fear and Delight next month via From Our Own. This ‘alternative pop’ anthem bubbles with the energy that the duo have become renowned for in their live shows.

Chucks’ production displays another upbeat genre blender of driving basslines over dynamic drum sequences that sinks midway into a glitchy electro breakdown before resurfacing.

For the last four years they have toured relentlessly with an average of three gigs a week, they have travelled the world bringing their unique live show to

crowds as large as 12,000 earning themselves Telegraph’s Top Ten Glastonbury Highlights two years in a row.

Their live sets are constantly evolving as they leap through a multitude of genres tapping a history of dance music from jazz and blues to electro and drum ‘n’ bass.

Band of brothers rock city

Bath-based boys on the way up The Family Rain play Komedia tomorrow.

Nearly a year since their rapturous home demo Trust Me… I’m A Genius started pricking the ears of tastemakers and industry alike, The Family Rain will be showcaseing tracks from their debut album, Under The Volcano which will be released in February.

It’s ten tracks of primal rock ’n’ roll.

From barnstorming singles such as the current track Feel Better (Frank), the crunching Reason To Die, and high octane belter Pushing It. Nagging melodies combine with heavy, metallic riffs to produce a searing rock record of intelligence and wit.

hen we think of the big annual cultural events in the Bath calendar we tend to think International Music Festival, Literature Festival and perhaps even the turning on of the Christmas lights.

But up there in the list of key city events must be the annual Bath Society of Artists Exhibition at the Victoria Art Gallery.

It’s probably the longest running event in the city having been held for more than 100 years and now attracting as many as 17,000 visitors a year.

And for those who have yet to discover the exhibition’s springtime pleasures this is not simply an exhibition of work by local artists.

Over the years some of the biggest names in British art have exhibited there including Walter Sickert, John Nash and William Scott. Each year hundreds of hopefuls from all over the country and often beyond compete to have their

Now local artist Peter Davies has written a book which is quite simply a history of the Bath Society of Artists.

Peter is a well known author and critic on modern British art. He writes for The St Ives Times and Echo ansd for The Independent. He is a painter a printmaker and has prints in the permanent collections of Falmouth Art Gallery and Guernsey Museum.

He is also a member of Poole Printmakers and is on the executive committee of the Bath Society of Artists.

The society was founded in October 1904 with 26 original members. The fortunes of both the society and gallery have been intertwined almost from the first. Work began on the gallery in 1897 which opened in 1900. Within just a few years the society held its first exhibition in the new building.

– – an account of a local society of artists but one that has been at the forefront of the changing face of British art for more than half a century.

Throughout the book you will find the pages littered with some of the great names in 20th century art.

But while there are great names there are also ones who had only a brief moment of notoriety in Bath. People like Walsall-based Karl Lewis who in the early 1990s had accepted for exhibitionin Bath an extraordinary, nine feet high mountain of rubbish.

When Karl was intereviewed by the Chronicle he was adding the final touch to his work which turned out to be an old shoe pulled from a rubbish dump just a few days earlier.

But in the book Peter gently takes to task Chronicle reporter Christopher Hansford’s search for “sensationalism, titillation and armchair satire” in his search for whacky exhibits while often turning his back on more enduring works.

Peter reminds his own readers that the 1990s also saw the emergence of Bath painter Peter Brown popularising direct

– – plein air street paining in the Georgian city.

Pete the Street as we know set up easel to create his perfectly pitched tonal townscapes.

In 1998 Pete was voted in as a member of the Pastel Society and as a new Bath Society of Artists member.

Although Peter went on to exhibit in London and beyond, Bath remained and remains the base for this much loved internationally acclaimed artist.

Feast of fine films As the Bath Film Festival opens, its producer Holly Tarquini this week picks 10 not-to-miss treats from this year’s line-up.

To compile this year’s festival programme, Holly has watched many hours of film and read through several miles of blurb.

The result is a line-up that takes in nearly every screen genre and features a wealth of household or Hollywood names.
