he stark reality I was reminded mid pandemic, was that I truly missed hugs and human connection. And a bloody good night out to look forward to.
Which makes this issue extra vibrant, as we get to share multiple pages of beautiful smiling faces you know. It’s official: gorgeous galas and fabulous fundraisers are back in full swing. Tom and I were lucky to attend most of them and we had a ball. Also breathing a big sigh of relief are the awe-inspiring non-profits we all love to support. Thanks to COVID-19 restrictions, we no longer take for granted an evening out for a worthy cause. (Think of all the money we saved last year!) Everyone is rocking these events with new vigor, excitement with pure electricity in the air. We are once again looking forward to dressing up, to frolic and mingle. Life is short, live it up a little. (Jeez you never know – it may go away again!) It’s not just galas and fundraisers either, it’s our kids, family, co-workers, and neighbors that can live it up a little again too! October brings Halloween. It devastated kids everywhere when trick-or-treating was canceled last year. No free candy? Then to add insult to injury we were ordered not to “gather” on the most iconic group holiday that celebrates giving thanks for friends, family, and strangers. Let’s face it, 2020’s Halloween and Thanksgiving sucked.

We can treasure life’s small events again. Ones that bring us great joy and create forever memories. We hope this Halloween your kids dress up, knock on doors, and have the best candy stash imaginable. We also wish everyone a big heartwarming, overflowing with gratitude, Thanksgiving holiday. ‘Gobble till you wobble.’ Living a great life leads me to the reason why we have black and white photography on the cover and inside. We know it’s a very different BayLife. Budding photographers call us all the time. But this one named Robert (Bob) Pool was intriguing. We met with him at the Grand Traverse Yacht Club. He drove alone, armed with his complete portfolio of prints. He briskly climbed the steps to the second level, where he proudly displayed each of his photos. We were blown away at the beauty and artistry. But what was completely staggering is Bob revealed he is 94 years young! He is a remarkable man, with historic generations of stories to tell. Tom and I were completely captivated by him and his collection. Along with Bob and his photos, we chose the prints that contained bodies of water. Quintessential BayLife Magazine photographs, with a twist. No sparkling blues, or jade greens. Just dramatic contrast with shapes and shades of grey. Timeless classics that will evoke emotion. Make a place on your coffee table, this one’s a keeper! It may be cooling down for fall, but I see smokin’ hot sizzling times ahead. Get out there and live it up a little. Let the holidays begin and the good times roll.

What three words best describe you? Service-oriented, conscientious, and curious. I have always been active in several organizations at a time and am especially passionate about children. I have been a “Big Sister” for the same “Little Sister” for 10 years, with the Big Brothers Big Sisters organization. I make every effort to do the right things and to do them well. I am always eager to learn and to think in new ways. Tell us something that would surprise us about you. I was in a ping pong league many years ago and won a few trophies. I could beat almost all the men and women on my college campus. I still play ping pong occasionally, but my skill seems to be diminishing—so no challenges! What is one thing you hope to check off on your bucket list? I always wanted to write a book and/or screen play but I still haven’t done that yet. Newsflash — Casual and fun neighborhood bar alert! If you haven’t yet been to Lil Bo, you are missing out. Gone is the musty and dark Little Bohemia of old. Instead, you step into a new and improved laid-back local treasure. Recently taken over by the Scott family, they are the third owners since 1932 and have kept this Traverse City tradition going. For years, the Scott family were Little Bohemia regulars. “I used to work here years ago,” says Jenni. “I got bit by the restaurant bug early, and it’s been a lifelong dream to own one,” she laughs. Jenni practiced her culinary skills owning Betty’s Hot Dish and Lil Betty’s food trucks. She perfected many beloved recipes. Now, her training wheels are off. “When we realized it was for sale, we were worried what might happen to it,” Jenni says. You could say they rescued it. With Jenni at the helm (now with a kitchen that sits still) they rolled up their sleeves and gave the place a fresh makeover. It’s a “come as you are” place with great laughs, great food, and great service. “We already have a lot of regulars, says Jenni. “I also never thought I’d be thanked as much as I have been for keeping the place alive!” They are one of the only places in town open seven days a week, with a smiling attentive staff. 540 West Front St., Traverse City lilbotc.com
High school senior Brooklyn Hall was in the midst of being homeschooled by her mom, Megan, when she had to come up with a small business idea for a project. “My family is from West Virginia and we have a secret family recipe for pepperoni rolls,” Brooklyn says. Italian immigrants made these to take into the coal mines for protein and carbs. They are hand-held and can be eaten hot or cold. Now Brooklyn’s peperoni rolls are becoming just as legendary here. Brooklyn and Megan are already expanding to a storefront space inside Logan’s Landing on S. Airport Road. “It has surprised us both,” says Megan. “We make these with love, and we love the contact with the community. I help but all the big decisions are still made by Brooklyn,” smiles Megan. They also plan to add Chicago style deep dish pizza to their menu. Which is a rare find on the East side of town. BEHIND NMC’S GREAT LAKES CULINARY INSTITUTE
Get Stuffed! A Thanksgiving feast isn’t complete without the stuffing. We scored the secret recipe from NMC’s Great Lakes Culinary Institute. Shared by the Culinary Arts Instructor himself, Joel Papcun.
Maple Pecan Stuffing Yield: 2.75 lbs. Pan size: 9” X 13” Portion size: 4 Oz. Temperature: 350° Ingredients: 4 Oz. Onion, minced 4 Oz. Celery, minced 4 Oz. Bacon fat or butter 1 .5 Lbs. Bread, cubed, day-old (I prefer focaccia) 8 Fl oz. Turkey Stock, hot - Chicken stock may be substituted 1 Ea. Egg 1 Tbsp. Salt, kosher .5 Tsp. White pepper, ground 1 Tsp. Rosemary, fresh chopped 2 Tbsp. Parsley, fresh chopped 1 Tsp. Sage, fresh chopped 8 Oz. Pecans shelled, roasted, chopped 2 Oz. Butter, melted - For drizzle with maple syrup 2 Fl oz. Maple syrup - Mixed with melted butter, (above) 24

Method: • Sauté the onions and celery in the bacon fat until tender. • Combine the bread, stock, and egg and add to the onion/ celery mixture. • Add the parsley, sage, rosemary, pecans, salt, and pepper. Mix well. • Place the stuffing in a buttered 9”X13”, cover with parchment paper and foil. • Bake at 350°F/177°C for 45 minutes. • Remove the foil and parchment evenly drizzle the maple/ butter mixture over the stuffing. • Enjoy.

Amarone’s Little Brother Goodbye summer…Hello fall. Once again with the season change, I am always looking for some new fun wines. As luck would have it, I stumbled on a very tasty Valpoicella Ripasso Classico Supreriore from Le Calendre Winery, Vendemmia Italy. A classic blend of Corvina, Rondinella and Milinara grapes, this wine shows elegance and balance with a long finish. A full-bodied wine with colors of ruby red, hints of dark fruit and spicy notes on the nose and with soft powdery tannins and good acidity on the palate. Ripasso refers to a method of wine making that began in the late 20th century where the juice of the grapes passes through the skins and seeds of the recioto and Amarone which have been aged on wood mats, for an extended maceration. The result is the “little brother” to the Amarone, which is livelier and pairs great with dishes such as pasta with red sauce, pork, and beef. I’m sure you will enjoy this little gem.
While Northern Michigan doesn’t have a wine made in the Ripasso method (at least as far as I have found), there are some hidden gems that sometimes get overlooked. One of my favorites is the Gamy Reserve from Chateau Grand Traverse. A lighter bodied red with dark cherry flavors and a bit of spiciness is delicious. Pairs up perfect with charcuterie, cheeses, and a nice crusty bread.

Just a few short months ago in the spring issue of BayLife we introduced you to a hopeful new business owner, Brent Temple. He was working hard to bring homemade recipes to life inside “Habibi,” his middle eastern style ethnic food carry out restaurant. Update! The results are in. Habibi is a runaway hit. Brent has kept the east side sizzling all summer long. Grilling up mouthwatering meats and creating his unique dishes from sun-up, offering lunch, to sun-down with dinner. He has succeeded with introducing this exotic cuisine to Traverse City, enlightening and tantalizing taste buds with delicious marinades, sauces and spices. All while creating loyal, repeat customers. “I like everything,” said one customer. “I’m a repeat customer, I’ve never been disappointed,” said another. “My husband lived in Israel, so he is a great authentic tester of this style of food and he agreed it’s amazing!” said one patron. “It’s the only place in town like this that I know of and it’s really good,” said another. Owner Brent had the best quote: “We have been blowing out the door every day,” he said, smiling. Brent also shared with us the fan favorites so far, which are skewers of Chicken Tawook and the Chicken Shawarma Wrap. Yum. He also is planning to add more sensational dishes to the menu like lamb burgers, tacos and even Mediterranean pizza. Tell us where you met and how you got to Traverse City. We became sweet on each other in college and have been together ever since. We are both classically trained Culinary Institute of America Alumni. Dave received his bachelor’s degree in Baking and Pastry Arts, and I have an associate’s degree in Culinary Arts. Dave is originally from Northern Vermont and I am a true Northern Michigan girl. How long has this been a dream in the making? Sharing our skills as a husband and wife duo with both sides of culinary arts has been the ultimate goal. We started as a truffle business and an opportunity for getting chocolate making equipment was presented to us. We have spent our life savings to make this dream a reality. During our developing stages, we as a family have overcome countless obstacles including one of our daughters having an unexpected medical condition. Our daughter Natalie is our “miracle baby” as we call her, and she has had three brain surgeries. Then we lost all our investors due to COVID-19 risks. No matter the obstacles, we have navigated them all with eager hearts to live the dream of owning our own place. We pushed through and built from the ground up. Though we wish it was easier, it has also made us stronger and prouder of what we were able to accomplish. Dave still has a “day job.” He is the Lieutenant for Grand Traverse Metro Emergency Services Authority. Tell us what is so special about your “bean to bar” philosophy? We welcome everyone to watch the whole process in our store kitchen window. For us, chocolate is an art form. It starts with the simple beans, purchased from environmentally and socially transparent suppliers. We grind them for at least three days and for dark chocolate we add both organic cane sugar and cocoa butter. We are one of only a handful of chocolate makers in the entire state of Michigan and we are excited about educating our community about the bean to bar chocolate movement.

here’s really no place like Michigan; and this house shows off Michigan’s best side like no other.
“We wanted to build in a place that felt like home – and a place that will keep our kids with their growing families coming back,” said homeowners Mike and Lauren McMillan. Constructed in 2019, and built by Paul Maurer General Contracting, this home was developed in a heavily wooded area on the sandy bluffs of Lake Michigan in Leelanau County. The homeowners worked very closely with not only the building company, but also Brad Shapiro, an architect from Memphis, where the couple used to live.

The house sits high upon a bluff, and one of the first features guests will notice when they enter the home is the spectacular view of Lake Michigan through tall, encircling windows. The height of the windows not only showcase the water’s gorgeous greens and blues, but also the sandy beach and the vast sky. North and South Manitou Islands can be seen from this view, as well as Pyramid Point and South Fox Island. “We wanted not only wide, but tall windows so the view is encompassing,” Lauren said. “So, you can look out and the lake is also in your peripheral vision.” When building, the homeowners didn’t want to see a lot of trees cut down. So, the placement of the driveway and house itself is meticulous. The trees that did have to be cut down were preserved and used throughout the house in the red oak floors, mantle, beech coffee and dining room table, kitchen shelves, as well as maple trim. “We are very proud we were able to repurpose the trees,” Mike and Lauren said. “We felt so bad about having to cut down any trees at all.”

alking into the house, guests will follow the white shiplap walls through the entryway until the shiplap stops in the stunning living area. And, if the view is the first thing that gets noticed, the impressive living area and kitchen are probably the second. Cozy seating surrounds a wooden coffee table and a gas fireplace in the living area, and plain white walls are contrasted by a white washed poplar wood ceiling. Neighboring the living area is the kitchen that has wooden tables, shelves, and nature tones throughout. A comfy nook makes up the dining space here, with a large booth as well as chair seating. More seating can be found at the island that has a unique granite countertop, which is from a query in Ireland. The rock has different shades of green, brown, and gray in it. “I just fell in love with this piece of granite,” Lauren said. “I wanted colors from nature in our kitchen and this just fit so well.” A six-burner stovetop with a griddle is in front of a backsplash with different shades of gray and white. On the floating shelves, which have puck lights underneath, are dishes and various sizes of globes. “We love maps and all the color globes have to offer,” Lauren said. The kitchen also has a sizable refrigerator and freezer. “This is something I’ve always wanted,” Lauren said.

alking through the house, guests are sure to notice the unique artwork, such as a large clay pot, clay wall hangings and paintings. These are proudly displayed as they are works done by Lauren’s brother, Mark Chatterley. There are also lots of photos and artwork from Memphis, the city where the couple used to live. Off of the living area and through double doors is the home’s master suite, which also has a view of Lake Michigan that can be seen through tall windows. Close the retractable shades for a good night’s sleep, or keep them open for sunlight. The bedroom is modest in size, which lends itself to a warm feel. Turn on the gas fireplace to feel even more cozy. An office nook sits in-between the bedroom and bathroom. The master bathroom is complete with a heated tile floor, double sinks, walk-in shower, and stand-alone tub. Across the hallway from the master suite, and through more double doors, is a craft and quilt room, with a half bath beside it. “I love to quilt,” Lauren said. “And I love having a dedicated room with lots of natural light.” The room overlooks a yard and a garden, which the homeowners are notably proud of.

ehind the kitchen is a spacious walk-in pantry and laundry room, which is lined with plenty of shelves and cupboards for storage. Next to the kitchen is one of Mike and Lauren’s favorite parts of the house – the screened in porch. Step out here and instantly hear the sound of waves swooshing on the shore. The porch as a large sitting area with chairs and couches facing a television and an impressive stone wood burning fireplace. Exposed beams line the ceiling and a dining table with seating for 12 is next to a large built-in grill. The homeowners can relax in the sun or watch the sunset from the outside porch that neighbors the screened porch. From here, the lake view is perhaps even more striking. Steps down to the 155 feet of shoreline can be seen from here, as well as a firepit with benches made from the repurposed trees. To the north side of the house are two trees that could have been cut down to optimize the view. “We already have enough view,” Mike and Lauren said. “We didn’t want to cut down even more trees.”

ollow the metal railing down to the lower level and guests will find a second living area as well as four guest bedrooms. A floating floor is used here, so that moisture doesn’t become a problem. “We wanted to use the repurposed wood from the trees for flooring here, but we were advised against it because of moisture,” Mike and Lauren said. Comfortable seating surrounds a gas fireplace and television here. There is also a pool table and wet bar next to it. “We have four grown kids and they each have growing families,” Lauren said. “We wanted to make sure we have plenty of space.” Behind the living area is a display Mike is particularly proud of. There are 48 records showcased here from Mike’s collection, or from gifts. “This was the only area of the house I was allowed to decorate,” Mike says jokingly. A sliding door opens to a lower level porch that mirrors the upstairs one can be found here, and it also offers a sunken hot tub. Down a hallway decorated with a very large United States map with the original 13 colonies, are the guest bedrooms. Each of the four guest rooms is spacious with a king-sized bed, and two out of the four have their own bathroom. The others have a Jack and Jill style bathroom. Each room also has a view of the lake. There is also laundry downstairs, as well as a reading nook filled with children’s books for Mike and Lauren’s two young grandchildren. “There are so many things about this house we are proud of,” Mike and Lauren said. The couple reiterated their close relationship and trust with their builder and architect. “When you work with someone so closely, a certain trust has to be held,” Mike said. “Lots of conversations with constructive criticism have to be had and you have to be OK with that.” Mike and Lauren bought the property for this house more than a decade ago. “We met up here and throughout the years we’ve always come back,” Mike said. “We are back now in a place that feels like home.”

20Fathoms is an organization
in Traverse City devoted to cultivating ideas and business growth. Their internal programs, tccodes & tccyber, provide technical computer programing and cyber security training to northern Michigan residents. We sat down with Keith E. Kelly, Program Manager of tccodes & tccyber, to discuss these programs.
Originally created by grant funding received through the state of Michigan, tccodes & tccyber became a series of workshops that provide educational experiences in the tech space. The workshops are designed to be accessible, meaning free for participants. Since its inception in 2019, the workshops have been attended by a wide range of participants, with varying levels of tech experience. This includes individuals without any coding background, to skilled professionals seeking to network and gain new skills, or anyone in between. Mentorship through these workshops is encouraged to be relationship-based. Participants can benefit by staying in touch with their workshop facilitators and maintaining a connection that could be utilized for future questions, advice, or opportunity. Keith shared a story about a young

professional eager to switch their career from the life sciences to the tech space. Utilizing the tccodes workshops, along with professional development services provided by 20Fathoms, this individual successfully landed a position as a junior developer at an established software company. This was a huge success story for the program. Keith is eager to create more success stories. In addition to improving the programs and adding more resources, his focus is also on community impact. Keith and 20Fathoms have placed an emphasis on boosting community awareness related to career opportunities in the tech space, a goal that he believes will ultimately benefit our local labor market through education.
