The South Carolina Festival of Discovery is the premier event of the year sponsored by the Uptown Greenwood Development Corporation. The event started in 2000, and has become the most highly anticipated event in the region. The festival celebrates the history, culture, food, arts, crafts, music and people that make South Carolina and Greenwood County such an incredible place to live and visit. With the downtown streets blocked off, guest enjoy mingling with cook teams, listening to live music and multiple arts and crafts vendors, food vendors and everything the downtown area has to offer. Smokin Gringos took home the Grand Champion prizes this year with

K & D Smokers took home first place in Chicken, Midnight Burn took home first place in Ribs, Hot Wachula’s took home first place in Pork, and Pig-ChickaCow-Cow took home first place in Brisket. This competition is definitely one to check out if you are in the area next year or if you want to plan a nice vacation in July. It is usually hot, and sports some rain but the setup and organization is spectacular.

Steak Contest are FUN! Dana Hillis

We made a run to Jacksonville and stayed at our daughters house and ate at Captain Jacks Smokehouse. If you are in the Fernandina Beach area Captain Jacks is a must eat restaurant. We were in town for a few days and made several stops to eat with our good friends Sandy and Jack. First of all the beer was really cold. The ribs were dry rubbed, perfectly cooked and delicious. We sampled most everything on the menu and really liked it all. I have to admit the Big Papa wings were the best I ever had. The Shrimp and grits are worth the trip and Janet loved it. You gotta try the pork belly and I promise you wont be disappointed! We made the trip to Williston Florida and cooked at a beautiful blueberry farm and had a blast. The ancillaries were anything blueberry and I have never tasted so many blueberry treats in my life. The blueberry lemonade was a real treat and I cant wait to go back next year. The Williston middle high school football team helped everyone load and unload and were a pleasure to be around. This event is one of the prettiest venues ever and the folks are as nice as can be. Make the trip next year and help support these football players and enjoy an awesome event. We made it to the Folkston event and this was held at a beautiful park The hospitality was fantastic and we had a
great time. We showed up at 8 am, set up, cooked and packed up and we left as soon as we turned in. We had to be in Chattanooga that night for our son Cadin’s wedding the next day. We made the trip in good time and other then having a hard time finding the right address on the Tennessee river for our AirBNB everything went perfect. We even got a call from the Wolfe Brothers to let us know we got a call for 4th place steak! Maybe we should leave early more often! While we stayed in Tennessee celebrating Cadin and Sabrina’s wedding we picked up a bunch of rib-eyes and fed the whole gang a few steaks while we were there. The in laws- Matt and Lydia rented a cabin on the river and it was truly a dream wedding week. The kids got married at a beautiful spot on a mountain in Georgia and the reception was held at a place called the car barn. The car barn was an old gas station that was fixed up for renting out for special occasions. This place was absolutely gorgeous and capped off a wonderful day. We made it home just in time to pack up the motor home and head to Johnson City. We cooked in the parking lot of a brand new Food City grocery store and we were greeted with true southern hospitality and enjoyed hanging out in this beautiful town. The Food City may be the cleanest store I have ever shopped in! A big congrats to the Pendray cooking team. Tonya won about everything ancillary and John won 1st in the steak contest! We had planned on leaving Tennessee for Michigan but the organizer canceled the contest due to only 11 teams being signed up. We looked on the schedule and found a contest in Glasgow Kentucky which only had 11 teams signed up. We signed up and by the time we got there they had 38 teams! We were a little disappointed in
not making the Michigan run but The Glasgow contest turned out spectacular being held at a really cool place called Rib Lickers. Dewayne Joiner met us when we pulled in and we parked up on the hill and made ourselves at home. We ran into a lot of old friends including Junior Urias all the way from Texas! We went down to the restaurant and Janet had an awesome burger and I had a wood-fired pizza that was really good. The first thing you check out at these BBQ joints is how cold is the beer and how tender is the brisket. Rib Lickers was impressive across the board! Dewayne Joiner started selling BBQ out of a trailer several years ago and has come a long way in a short amount of time. The music and atmosphere, the hospitality and the great food make this a must stop on anyones schedule. Dewayne road around and made everyone feel welcome to his contest. He had a big tent with appetizers, the music on Friday night was classic country and this event was definitely worth the trip. If you are a female steak cooker you may want to make the trip to Kentucky. 5 of the top 10 placers were women including the winner! Steak cooking is not just a mans sport! We headed back home and finished this whirlwind road trip racking up some great memories. My cousin Anthony met us in Johnson City and Glasgow and we spent a few days at his place and we had an incredibly fun time. We are heading back to his place in McMinnville Tennessee for the family reunion with a steak cook in Jacksonville along the way. Safe travels to everyone out there competing and cooking and we will see you thru the smoke somewhere soon!

Figuring out what went well and correcting what went wrong, much like a coach would with his team. #Foodsport Means Self Improvement Before you think we’ve moved into the self-help section of the bookstore, I’m referring to the skills you develop as you continue to grow as a cook. Sure, you can watch the Food Network 24/7 or sit in countless classes, but nothing will replace actually doing it. Hours of practicing in the backyard helps you develop your flavor profiles while you learn how to layer flavors. Then there’s the knife skills, although they man not be perfect, they’ve greatly improved. Remember when you’d just dump charcoal into the grill at the park and now you have developed this skill called, fire management. All this is because of food sport. #Foodsport Means Having a Blast Over and over the one item I keep hearing about food sport is, it’s fun.

Georgia BBQ Association TOY Banquet By Greg Sebastian GBA President
On July 13, 2019 the Georgia BBQ Association gathered for a night of fun, food and fellowship at the Anderson Conference Center in Macon, GA for the Annual Team of the Year Banquet. The GBA has worked hard to make these contests fun and fair, and we’ll continue working hard in the off season to make things even better. We’d like to thank all of our Teams, Judges, and Contest Organizers. It takes all 3 working together to make a successful season and the GBA is proud of our role in the process. Our teams are some of the best on the barbecue circuit, and our judges are second to none. The Contest organizers deserve a huge thank you for doing all the hard work (and putting up with all of us!). The GBA sanctioned 10 Professional contests this year, and one In Association With contest. We’ve already got 7 on the books for next year, with a few more possibilities in the works, so get ready for a full year of Barbecue in the 2019-2020 season! The GBA averaged just below 41 teams per contest. The largest contest this year was the Smokin’ Flamingo BBQ and Music Festival with a total of 59 teams. Dilly Dally in Dooly wasn’t far behind with 51 teams. 6 Teams attended all 10 GBA professional events: Big Butts BBQ, Fire In The Hole, Hootie Q, Of the Chain BBQ, Rescue Smokers, Weekend Warriors Competition BBQ Team 3 Teams competed in 9 events (We want Que, Peach Coast BBQ, Pirates of PorkScents), 7 teams cooked 8 events, 2 teams cooked 7 events, and 6 teams cooked 5 events. Continued from Page 6 The time crunch of getting a brisket sliced for the turn-in box is a blast. Cooking three or four hogs at Memphis in May is exciting. Putting together two presentation and ten individual desserts from scratch in two hours is exhilarating. Just like most anything we do in life, if it isn’t fun, enjoyable and full of laughter, then why do it at all? Sure there will be frustrating times, just like in any sport, but when you’re sitting at home licking your wounds from a poor showing, and you’re spouse asks if you had fun, you look up with that grin of yours to simply answer, “Yeah. their husbands in steaks and beating them. Husbands and wives competing together during a BBQ event. There’s the Kid’s Ques popping up at events left and right as we continue to raise up the next generation of live fire cooks. Then there’s the BBQ family at large where we step up for one another when the chips are down as well as there to cheer when one family member is riding high from a remarkable win. This is what a family does, a food sport family anyway. Family is the word used over and over to describe what we do. If I hear or

read “BBQ Family” once then I hear or read it a hundred times every single day. So if I have to sum up food sport into one word, it would be “family.” Although food sport has been around for more years than anyone can count, it’s no longer regulated to the county fairs and Rotary Club chili cook-offs. Today its everywhere from the Food Network to the SCA to the countless BBQ sanctioning bodies to the World Food Championships. So, with all of this around us, there’s really only one question to ask yourself, “What does #FoodSport mean to you?”

For teams cooking at least 50% of the Professional GBA Events in the 2018-2019 season, Off the Chain BBQ had the highest average Loin score at 597.46 (10 contests), Pots BBQ had the highest average Pork score at 596.53 (7 contests) and Smokin the Good Stuff had the highest average Rib score at 596.34 (7 contests). The teams stepped up this year and made it tough for our judges! Anytime our judges are handing out 600’s we know the competition is tight. There were a total of 20 600 scores awarded this season: 4 events awarded 1 600 score 4 events awarded 2 600 scores The Dilly Dally in Dooly event awarded 3 600 scores The Fire Ant festive handed out the most with a total of 5 600 scores And to top that off, there were 3 PERFECT scores awarded in GBA contests this year. A Perfect Score is an entry that is awarded a score of 10 in every criteria by all 6 judges at the table.
