STEPS TO THE PERFECT SETUP

Bellevue Club PGA golf professional Chris Getz shares his tips for setting up a golf swing. “The setup stage of the golf swing involves assuming the correct position before it actually starts,” he says. “There are many elements to consider, and overlooking key areas at the start will snowball into issues down the line.”

1. The club should rest flat behind the ball.

2. Your hands should flow straight down from the shoulders.

3. The knees should be comfortably flexed.

4. The upper body should be tilted forward and straight, between 25 and 45 degrees, depending on the size of your chest and the length of your arms.

5. The trailing hand should be lower on the grip than the forward hand, producing a slight tilt with the shoulders.

6. The weight should be evenly divided between the two feet and rest mostly on the balls of the feet.

A guide to the area’s most favorite fish. Rob Chandler, co-owner of TH Seafoods, talks with us about Pacific Northwest salmon.

Reflections magazine: What are the main PNW salmon varieties people should be familiar with?

Rob Chandler: The different salmon varieties come from the Columbia River, Puget Sound, the native groups of Neah Bay, Westport and Quillayute River. The various wild salmon varieties are kings/ chinook, red/sockeye, silver/coho, pink and chum. All species run in the PNW.

RM: How do salmon runs differ year to year?

RC: Every year is different and, unfortunately, we don’t always know why. It really depends on the escapement of fish and egg productions. In some years, other fish species eat the salmon eggs and that limits next year’s growth and runs. Some locations are hit so hard that the salmon do not return for years. For example, the Yukon River has had three years of zero production, and they don’t know the exact reason.

FISH FACTS: DID YOU KNOW?

For salmon to grow four to six pounds, it takes about two years. So runs are much older than people think.

Salmon live in both salt and fresh water.

Female salmon can carry over 4,000 eggs.

Salmon runs don’t like warm water. That is why Alaska has some of the best salmon in the world.

Farmed salmon has just as many omega-3s as wild salmon.

RM: How does this year look so far?

RC: So far, Copper River salmon fishing has been healthy this year, which means prices will be lower than the past several years.

RM: What can we be doing to be good stewards of the local salmon populations?

RC: To be honest, we all need to buy farmed fish to keep the wild production running. There are some really good sustainable farms, such as New Zealand king salmon. Sorry to say, but if we don’t buy farmed salmon, wild salmon will be gone forever.

What are your favorite ways to enjoy eating salmon? Favorite variety and favorite preparation?

RC: Like most people, I love king salmon. Simple grilling is best—just put it on the BBQ. Also, don’t forget to eat salmon with the skin on! The skin has large amounts of omega-3s.

With hot summer days around the corner, pool parties, boating and other opportunities to cool off will present themselves, and having little ones who don’t know how to swim yet can be stressful. Plus, swim lessons are even more difficult to find this time of year. Don’t worry, I’m here to help! I’ve been a swim instructor for 10 years at the Bellevue Club, and this is my insider’s guide to helping your children learn the basics!

TIPS FOR TEACHING TOTS

Don’t miss an opportunity to practice! Baths are a great place to practice blowing bubbles and getting comfortable in the water. Don’t hesitate to dump water on those little heads either. You might feel you’re doing them a favor by not getting water in their eyes, but you’re setting them back for the first step to swimming.

If you find yourself in the pool with your kids this summer, let them explore. If your kids aren’t swimming on their own yet, don’t put unneeded pressure on yourself and them to learn in a day. Stay within arm’s reach of them, and let them run, crawl or jump around in an area where they can stand. If you’re in a pool with stairs, this can be a great place for tots to explore.

Get creative! My personal favorite way to get a reluctant child to put their face in the water is to go on a “scuba adventure.” First, have them blow bubbles to “talk to the fish,” then have them dip an ear in to “hear the fish.” Lastly, have them put an eye or two in to “see the fish.” Then repeat with other sea creatures. Continue working on this until they are putting both eyes in the water comfortably.

The best safety skill you can teach your child is to flip to their back and float. This is something you can work on at any skill level, even if they aren’t putting their face in the water yet. Hold them in a floating position and roll them on to their back. Once they get the hang of independently floating on both their front and back, it will become easier for them to flip over unassisted.

GOGGLES OR NO GOGGLES?

If your child is hesitant to go underwater, goggles can help them gain the confidence to do so. However, once they are confident and are working on stroke development, be sure to have them practice without goggles so they don’t become dependent on them to swim, as this can be a safety concern.

If your child is comfortable putting their face in without goggles from the start, encourage it. Once they are confident, then have them wear goggles to make it easier to see where they are going.

There are hundreds of goggles out there to choose from. Finding the right pair can make such a difference for your child. Don’t worry about getting them the “fun ones” as these tend to leak, and your child won’t see them once they are on their face anyway. My personal favorite pair, which tends to fit every child, is the TYR Swimple Tie Dye Youth Goggles.

Stay away from goggles with dark lenses, as this can be a sensory overload for a child who is still trying to get used to having their face in the water.

SAFETY & LIFE JACKETS

Always stay alert and within arm’s reach of your child when they are in or near any body of water. Even if your child isn’t in the water, one unsteady step could send them right in.

Kids love to jump into the pool, and it can be a great way for them to get comfortable with water in their face. However, if they are timid, they might try to grab the wall as they jump in, which can result in stitches under the chin. Make sure they know to always jump away from the wall.

When choosing a life jacket, it is important to check the size and weight requirements. Puddle Jumpers make a great life jacket for preschoolers. The life jackets are U.S. Coast Guard approved and have an adjustable safety buckle in the back that kids cannot reach themselves.

Putting a little one in a life jacket can assist them in feeling comfortable floating and kicking around; it can also teach them habits that can be difficult to correct. To help combat this, encourage them to splash their feet while lying on their back or belly.

For those of us who are fortunate enough to call the Pacific Northwest home, there’s an abundance of diverse marine life found in our bays, estuaries and seas. From our popular king salmon runs and Dungeness crab, to our native Olympia oysters, spot prawns and almost mythical geoduck, our corner of the country has one of the richest seafood resources on the planet.

Recently, I had the good fortune of teaming up with local chef John Wahlke and Fremont Mischief Distillery on the cookbook: Spirited Cooking from the Pacific Northwest. Whether it’s serving fresh, sustainable fish, or aging their select spirits aboard the famed crab boats featured on Discovery’s Deadliest Catch, you’ll discover through the pages of the book that Fremont Mischief understands seafood and is committed to responsible sourcing while offering dishes that showcase just how lucky we are to live in the Evergreen State.

CRAB ROLL WITH SMOKED PAPRIKA & FENNEL POLLEN Serves

4 to 6

Inspired by the East Coast lobster roll, this recipe features fresh, succulent Northwest crab. You can use either king crab or Dungeness.

1/4 cup whole unsalted butter

4 fresh hot dog buns, split

2 cups Crab Salad, recipe follows

4 small lemon wedges

1 teaspoon fennel pollen, optional

1 teaspoon smoked paprika, optional

In a sauté or cast-iron pan over medium heat, add the butter. When the butter has melted, place the bun, cut side down, into the melted butter and toast. Remove from the pan and slice an opening into the top of the bun, creating a pocket for the crab. If you like, drizzle some pan butter into the pocket. Next, add the Crab Salad into the roll, making sure to stuff it well without tearing the bun. It’s okay to have some crab protruding from the top. Squeeze the lemon wedge on top, and finish with the fennel pollen and smoked paprika, if desired. Repeat process for the other three buns.

CRAB SALAD

Makes 2 cups

1 pound fresh cooked king or Dungeness crab meat, picked and chilled

In a mixing bowl, add the crab meat. Gently break the meat apart but leave some larger pieces intact. Add the red onion, celery, chives, mayonnaise, lemon juice, salt, pepper, fennel pollen, and smoked paprika. Mix well and reserve in the refrigerator until ready to use.

1 tablespoon red onion, peeled and thinly sliced and chopped

1 tablespoon thinly sliced and chopped celery

1/2 tablespoon thinly sliced chives

1/4 cup mayonnaise

2 teaspoons fresh lemon juice

2 teaspoons kosher salt

1/2 teaspoon fresh cracked black pepper

1/4 teaspoon fennel pollen

1/4 teaspoon smoked paprika

NORTHWEST CHOWDER Serves 4 to 6

As settlers in the Pacific Northwest, local Indigenous tribes cooked with an abundance of salmon, clams, oysters and crabs from the cold waters of the Pacific. This recipe is an attempt to relive those memories. The result is a hearty, creamy soup with tender chunks of potatoes that melt in your mouth. You’ll further enjoy the contrasting flavors of the kale and kelp and the fading brine of the fish and clams.

1/3 cup whole unsalted butter

1 1/2 cups diced yellow onion

1 cup diced celery

1 tablespoon minced garlic

1/3 cup flour

1 1/2 cups vegetable stock

1 pint clam juice

1/2 cup heavy cream

2 cups whole milk

1 tablespoon kosher salt

2 teaspoons fresh cracked black pepper

1/2 cup julienned kale

1/4 cup finely chopped bull kelp

(or ribbon kelp) blades

1 pound diced Yukon (gold) potatoes

1/2 pound fresh wild Pacific rock cod fillets

1/3 pound wild sockeye salmon

3/4 pound manilla clams, shucked

2 teaspoons minced fresh thyme

2 teaspoons thinly sliced chives

1/2 lemon (about 1 1/2 tablespoons), squeezed

1/2 teaspoon hot sauce

In a large saucepot over medium-high heat, add the butter. When the butter is melted, add the onions and celery. Sweat the vegetables until soft, but do not brown. Add the garlic and stir continuously to avoid burning. Add the flour and continue to stir, forming a roux. Reduce the heat to low and continue to thoroughly mix. Add the vegetable stock and clam juice and return the heat to medium-high. Stir to incorporate the roux into the liquid. Add the heavy cream and milk. Bring to a boil, then simmer on low heat while stirring to prevent scorching. At this point, the soup should be thickened. Add the salt, pepper, kale, kelp and potatoes. Simmer for about 15 minutes, stirring often. Add the fish and clams and let simmer for another 10 minutes, or until the fish is cooked through. Add the thyme, chives, lemon juice and hot sauce. Check the seasoning and add additional salt to taste, if necessary. Note: The chowder is best the next day after the flavors have had a chance to meld. Serve hot with fresh sourdough bread. The chowder will last in the refrigerator for up to 1 week in an airtight container.

BULL KELP PICKLES

Makes 3 cups

Forests of bull kelp thrive along our coastal waters. High in protein, potassium and trace minerals, bull kelp is beginning to find its way into kitchens. If you have an opportunity to get your hands on some fresh bull kelp, slice the stipe into thin rounds, pickle them per the recipe and serve them as you would traditional pickles. It’s a nice, crisp alternative to the pickled cucumber.

3 cups fresh bull kelp stipe, sliced into 1/8-inch rounds

1/4 teaspoons red pepper flakes

6 garlic cloves, peeled and crushed

1 teaspoon mustard seeds

1/2 teaspoon dill seeds

1 tablespoon coriander seed

2 cups white distilled vinegar

3/4 cup water

3 tablespoons kosher salt

1/4 cup granulated sugar

Place the sliced kelp rounds into a glass jar. Add the pepper flakes, garlic, mustard seeds, dill seeds and coriander seeds.

In a small pot over high heat, add the vinegar, water, salt and sugar. Bring to a boil while stirring occasionally until the ingredients are dissolved. Remove from the heat and pour the hot brine into the jars until the kelp is completely covered. Seal the jars and store in the refrigerator for 3 days. The jars will keep refrigerated up to 4 months.

GIN-CURED

SOCKEYE SALMON

Serves 10 (2 ounces per serving)

This recipe features gin and its botanicals—a fabulous flavoring for salmon. When shopping, select fresh, wild sockeye salmon. It’s the best salmon for this recipe because of its low-fat content.

1/2 cup Gin Botanicals, see below

1 1/2 cups salt

1 cup granulated sugar

2 pounds fresh sockeye salmon fillet, skin on, pin bones removed

6–10 fresh mint leaves

GIN BOTANICALS:

3 tablespoons juniper berries

1 tablespoon coriander

1 teaspoon dried lemon zest

1/2 cinnamon stick

1 bay leaf

1 teaspoon chamomile

3 cardamom pods, broken

1/4 teaspoon fennel

3 black peppercorns

In a blender, grinder or food processor, add all the ingredients for the Gin Botanicals. Pulse a few times just to crack the spices, but do not grind them. Transfer to a bowl, along with the salt and sugar. Mix well to combine.

Next, lay out a sheet of aluminum foil about three times the size of the fillet. Sprinkle half the curing mixture evenly on the wrap. Place the salmon fillet skin side down on the cure. Add the mint leaves across the fillet, then evenly cover the exposed flesh with a generous amount of the curing mixture. Wrap the fillet in foil and place on a baking sheet, then transfer to the refrigerator. Now place a second baking sheet on top of the fillet and hold it down to apply a light weight to the fillet. A couple soup cans work great for this. Keep in the refrigerator at least 24 hours.

Remove the salmon from the refrigerator, rinse and pat dry. Repeat the process (cure, foil, refrigerate for 24 hours) using new foil. You will repeat the process every 24 hours for 3 to 4 days depending on the size and width of your salmon fillet. The goal here is for the flesh to become slightly translucent and firm. The edges may be a bit saltier than the thicker middle part of the fillet. This is normal.

To serve, slice as thin as possible (works well if the fillet is slightly frozen). Store any unused salmon in the refrigerator (wrapped in plastic wrap) for up to 1 week. You can also portion and freeze the salmon in airtight freezer-safe bags for up to 1 month.

HEIRLOOM TOMATO GAZPACHO WITH SOURDOUGH TOAST POINTS & DUNGENESS CRAB

Serves 4 (5 to 6 ounces per serving)

Here’s a chilled raw soup that originated in Spain and ideal for summer gatherings. The most important step is to use the highest-quality tomatoes. Unlike commercial tomatoes sold at most supermarkets, in which the tomatoes have had their flavor systemically bred out of them for perfectly round shapes and bright red color, heirlooms—or homegrown garden tomatoes—are packed with wonderful, sweet flavor and are best for this recipe.

2 pounds multicolored heirloom tomatoes, quartered

1/4 cup kosher salt

1/4 teaspoon white pepper

1/4 cup balsamic vinegar

1/3 cup extra-virgin olive oil

1 1/2 ounces picked fresh Dungeness crab meat

1 teaspoon fresh chives

1/4 lemon, zested Basil Oil, as needed, recipe follows Sourdough toast points, as needed

Place the quartered tomatoes in a shallow pan and salt them generously. Cover and place in the refrigerator overnight. In a kitchen blender, add the tomatoes in four batches and purée on high. Add the pepper, vinegar and olive oil. Continue to blend until creamy and smooth, about 1 minute. Season to taste with salt. Transfer to a small bowl and add the crab meat, chives and lemon zest. Drizzle the Basil Oil on top before serving with sourdough toast points.

BASIL OIL

3 tablespoons olive oil , 2 fresh basil leaves, 1/4 teaspoon salt

In a kitchen blender, add the oil, basil and salt and blend well. Pass contents through a coffee filter to strain. Keep the Basil Oil in the refrigerator in an airtight container until ready to use for up to 5 days.

SPECIAL EDITION SUPPER CLUB

For a limited time, the Bellevue Club will feature the storytelling art of Eliaichi Kimaro. For the past 40 years, she has used her art to explore cultural inheritance and legacy, and she’s sharing it with our members.

Eliaichi is a creative storyteller who uses a wide variety of mediums—writing, music, photography, film and mixed-media art—to delve into her personal and family narratives. She loves layered stories that breathe in and out of space and time, stories that span generations and continents. She views art as an opportunity to simultaneously learn from her cultural inheritance and pass it on to the next generation.

“As a queer, mixed-race woman of color, a daughter of immigrants (Korean mother, Tanzanian father) and a survivor of abuse, I make art to tell stories—because every time we contribute our story, we create a more expansive, inclusive portrait of humanity.”

Her feature film A Lot Like You won six Best Documentary awards on the festival circuit before its nationwide PBS broadcast. For 10 years, Eliaichi has been engaging with communities around the world about the issues raised in her film, including gender-based violence, cultural identity and the power of personal storytelling. These keynotes culminated in her 2016 TEDxSeattle talk, “Why the World Needs Your Story.”

Since 2014, painting has been her focus. Eliaichi was selected for the Center on Contemporary Art Residency and the Artist Trust Fellowship. She’s received multiple grants from CityArtist, 4Culture and Artist Trust for her work in art and film. Recently, she received the McMillen Foundation Arts Fellowship, the Denis Diderot Grant and the Chateau Orquevaux Artist Residency in France.

Eliaichi is a member of Columbia City Gallery and CoCA Gallery, and has served on numerous boards, grant panels, film festival juries and museum exhibition committees.

Starting with electric guitar and drums at 12 years old, by 18, Harold was playing bass in Seattle rock groups, had regional radio airplay, headlined the Showbox in Seattle, toured the West Coast, and attended the 2005 MTV VMA’s on a personal invite by Sean “P. Diddy” Combs. Harold left the rock scene in 2006 to explore higher education, solo performance, travel, and to snowboard. Now, with a Cornish College of the Arts Music Degree in composition and performance, the background has diversified. GROUP SWIM LESSONS

Our program teaches aquatic and water safety skills in a logical progression. The objectives of our program are to teach people to be safe in, on and around the water and become efficient swimmers.

Swim assessments are given prior to registration to make sure your child is in the correct level. These are available at 3:50 p.m. and 6 p.m. Monday-Thursday. Swim assessments can be requested at members.bellevueclub.com or by emailing aquatics@bellevueclub.com. Every student should feel challenged. Baby/Toddler and Me Aquatics introduces basic aquatic skills to parents and children. Introduce your child to the water early to encourage confidence and comfortability in the water. Requirements: Swim unassisted for 100 yards. Basic understanding of the four major swim strokes (butterfly, backstroke, breaststroke and freestyle)

Perfect your swim technique and receive tips on how to improve your training from some of the best coaches in the country. These clinics are lead by BCST coaches and are for non-BCST members.

PRE-COMP

The focus of these courses is refining stroke skills and increasing endurance. The participant has perfected all four strokes when entering the precompetition courses. Participants should be able to swim all four strokes a minimum of 25 yards and use side breathing without lifting their head up.

Pre-comp runs in 6-to-8-week sessions throughout the year with current participants receiving priority enrollment in future sessions. PRE-COMP 1: BEGINNER

Prerequisites: Participants can swim 50 continuous yards without fins, using all four competitive swimming strokes. CANCELLATIONS: To receive a refund for a program, you must notify us of cancellation at least seven days prior to the start of all programs. MASTER THE ART OF AGING

Chris Thompson brought his extensive knowledge of exercise and aging to Mobility Matters, a programming system he designed “to help older adults prevent falls, maximize physical function, and achieve physical vitality, well-being and happiness.” He talked with Reflections to explain more about his philosophies on living well through the decades and why he’s making a special trip to the Bellevue Club this July.

BE A JACK OR JILL OF ALL TRADES. Cardio, strength, mobility, and balance are all key pillars to aging gracefully and avoiding injury. “You need to do a little of a lot of things to stay optimally healthy.” These are the four areas of training that Thompson focuses on in his Mobility Matters program.

TAKE FALLING SERIOUSLY. The most common injury from a fall is a wrist fracture. The second most common is a hip fracture, which can be life threatening. “Twenty percent of people don’t live past a year once they sustain that particular injury.” And, if they do survive past a year, their quality of life is usually affected quite a bit.

SMALL THINGS MAKE A BIG DIFFERENCE. “One of the simple things we focus on first is walking gait and the mechanics of moving.” As people age, they start to shuffle their feet, or their spine might start curving, causing them to look down a lot. This can lead to tripping or falling. Thompson’s program teaches clients how to start with the basics and build from there.

STRENGTH IS ALWAYS IMPORTANT. One aspect of strength that Mobility Matters emphasizes is being able to remain “forceful and quick with the muscles.” This can help correct a stumble or fall because oftentimes people can’t move powerfully enough to catch themselves. This is a slightly different approach from traditional strength training.

DON’T OVERTHINK THE BALANCE TRAINING. Balance work doesn’t have to be complicated or exhausting. Anyone can practice shifting from one leg to the other while standing in the grocery store line. “Make life an exercise and just do things when and where you can.” There are plenty of little tips and hacks to help people who aren’t used to vigorous exercise.

MOBILITY SHOULD BE MINDFUL.

Stretching and keeping a good range of motion in the hips, ankle and shoulders can keep people more agile as they age. Joints are crucial to keeping everything moving as it should in the body.

DON’T ASSUME HIGH ACTIVITY LEVELS PREVENT FALLS. Exercise can definitely help prevent injury, but also highly active older people are sometimes putting themselves at more risk by skiing, hiking, and so on. That’s why mobility and balance are equally important as cardiovascular exercise.

HAVE A CONVERSATION. Talk about how to stay healthy through the years. “We all have friends or family that have had a bad fall that changed their lives.” If we normalize the aging process, it can help people remove the shame and think about fall prevention.

Do you want to know the exact limits of your fitness goals? Or crush a new personal record? Two local medical experts are revolutionizing the way to test fitness levels among athletes, and they are bringing their system to the Club.

Chances are, if you’ve exercised or played a sport regularly for any amount of time, you know what it feels like to hit a plateau—the place where it feels like no matter what you do, you can’t get faster, stronger or fitter.

Dr. Jeff Cary says it’s a phenomenon he sees with even the most elite athletes, and he is speaking directly from his experience as a former NBA team doctor.

“Plateaus are when you hit an area in your fitness where you’re not improving,” Cary says. “Well, what we do is use a hospital-grade, internationally standardized system for measuring exercise to see where that true plateau is and why you are there.”

He goes on to explain that most fitness plateaus result from either a cardiovascular or pulmonary (lungs) limitation, or both. So he and his partner, David Earley, developed Belmar Cardiopulmonary Diagnostics, a cardiopulmonary testing system to give people the exact data they need to break through the wall.

The process looks like this: The experts perform an intake interview, get your vitals and review your medical history. Once you’re cleared, they place sensors on your torso and a face mask that tracks your breath. Then you hop on an ergometer bike and pedal away.

While you’re pedaling, the system captures all types of real-time information about how your lungs and heart perform during exercise. Meanwhile, they are looking at two big screens, interpreting all the data they see.

“We know exactly what your heart is doing, how much oxygen you’re taking in, how much CO2 you’re emitting, what your cardiac and breathing reserve is, and metabolic rates,” Earley says.

And eventually, you will hit a ceiling because they will increase the resistance until you can’t pedal anymore.

“This is known as your VO2 max. The system also pinpoints the place where your oxygen uptake changes from aerobic to anaerobic, meaning the oxygen supply to the muscles has been exceeded,” Cary says. “Also known as your anerobic threshold.”

“We’ll know if it’s your heart or lungs right away that’s creating your limits,” Earley says. “Among a bunch of other data points.”

Once you’ve hit your max, the test is stopped. They check vitals again and then talk about your results. Based off those results, they can prescribe an exercise plan for you to take you to the next level of fitness.

“We show you where your heart rate should be for weight loss, cardiovascular building, etc.,” Cary says. “We ultimately want to break that plateau in a way that’s functional with scientific numbers that can be interpreted by doctors and trainers.”

Afterall, some of the mechanisms used to gather the data (for example, heart rate monitors) aren’t new technology. Cardiologists and pulmonologists

have been using these machines in clinical settings to treat sick patients for years. But no one has ever combined them and pulled them out of the hospitals to use on healthy athletes.

Earley points out that while many wearable devices claim to be able to give you similar information, “the VO2 max on your watch is derived from an approximate guess.

There is absolutely no way to check your VO2 max from your wrist. It doesn’t know about what you metabolically did. These tests use years of science, culminating in real results.”

“It’s really about our ability to put it all together,” Cary says. “It’s cutting-edge; no one is doing this anywhere else.”

Once you get your exercise prescription, you can then give it to a trainer or coach for them to see how hard they can work you. And then you return in three months to see how you’ve improved.

“What we can bring into the exercise arena is a way to measure that tangible data to see progress,” Earley says.
