For this issue, I had the privilege of talking with Madeline Haydon, a Bellevue Club member, the founder of nutpods, and mother of two young girls. As the CEO of one of the largest non-dairy coffee creamers in the world, I asked her if her daughters recognized her accomplishments. Her answer was beautiful, and you can read the complete response on page 44. But in short, she said she believes the true value of what she accomplished as a woman of color during the time of a global pandemic will have a much greater impact on them in the future than it does now. That she’s setting an example now for their future selves. That got me thinking about all the important things we do daily for our future selves and those around us. Whether it’s working out, meditating, or eating well, the end goal is to wake up stronger, faster, more balanced, healthier tomorrow and the years ahead.

SOMETIMES IT’S CALLED A TRAP BAR, SOMETIMES A HEX BAR— REGARDLESS, IT’S ONE OF THE MOST VALUABLE YET OFTEN IGNORED PIECES OF EQUIPMENT IN THE GYM.

A DIFFERENT KIND OF DEAD LIFT:

There are many ways to perform a dead lift, but few compare to the hex bar method. Because of its unique design, it au tomatically sets you up for good form from the start. It has a wide neutral grip that encourages a hip-dominate motion that’s particularly good for spinal safety. It also distributes the weight around your body instead of directly in front or behind, like barbell exercises. HOW TO USE IT If it’s your first time using the trap bar, try it without plates. Set the bar on the ground with the handles up. Step inside the hexagonal shape with your feet a little wider than your hips. With a straight spine, reach down and grip the bar. Drive through the feet and stand up. Lower back down and repeat.

Aside from the dead lift, one very popular use for the trap bar is a farmer’s carry. To perform this ex ercise, step inside the trap bar and stand up. Then walk for a designated distance and return. Addi tionally, the “trap bar” moniker came about be cause you can also perform shoulder shrugs, which is known to strengthen the trapezii muscles.

OXYGEN SATURATION is the amount of oxygen circulating in your blood (SpO2 levels) at any given time. This is an important indicator of how well your lungs and circulatory system are functioning.

PULSE OXIMETER is the mechanism used to measure your saturation levels. The sensors can be very small and are often implanted within a larger device, such as a watch. They use red and infrared lights to reflect off your blood cells.

First, people who suffer from chronic respiratory disease but still want to exercise can use a pulse oximeter to monitor their health and make sure they aren’t putting themselves in danger. In general, lower oxygen sat levels are a good indicator that something is off in your body.

THERE ARE WAYS TO TRAIN for higher oxygen sat levels, including breathing exercises and cardiovascular training.

TYPICAL OXYGEN SAT LEVELS should be at 95% to 100%. During vigorous training, levels will drop as your need for oxygen increases, but if they drop too low, it can indicate a serious problem or the need to rest.

OXYGEN SAT LEVELS ARE HELPFUL during training for a few reasons.

IN ADDITION, those who train in higher altitudes, like the mountains, or participate in vigorous cardiovascular exercise can monitor how well their lungs are working. The higher your oxygen sat levels, the better you can perform and most likely recover.

BASIC BENCH PRESS

BENEFITS: shoulder, chest, triceps, forearm and grip strength

The bench press is a classic compound exercise that isolates the shoulders, chest, forearms and grip, all of which can help create a killer serve and power with your strokes. As a bonus, this movement will create stabil ity in the upper body that can prevent injury. Try three sets of 10 with a weight that’s ap propriate for your fitness level.

BENEFITS: oblique, shoulder and grip strength, plus spinal flexible and stability

To address the lower body, the squat is king. Like the bench press, the squat is a compound movement, but it focuses on the hips, quads, glutes and core all in one ef ficient motion. This will help produce more power from the legs and core for your strokes while giving you a stable base for running on the court. Try three sets of 10 with a weight that’s appropriate for your fitness level.

STRENGTH WORK

CLASSIC WOOD CHOP

This is the best twisting core exercise around, which is par ticularly important for tennis players. Forehand, backhand and serves all rely on strong, supple, flexible core muscles and spine. But sit-ups won’t cut it. To create truly dynamic strength and stability, master the wood chop. Try three sets of 10 with a weight that’s appropriate for your fitness level.

STANDARD SQUAT

This mobility drill uses a simple PVC pipe to work on your shoulder rotation and flexibility. While you won’t use this exact motion during a match, it will keep your shoulders and wrists healthy and happy so you can play for longer and avoid injury and soreness. Try three sets of 10 rotations.

FAST FEET Fast feet, like other footwork drills, is dedicated to increasing your speed and reaction time. When playing tennis, sometimes the difference between winning or losing a point is a matter of inches. This movement will help you get to the ball quicker and react faster. Try three sets of 30 seconds.

This exercise is great practice for moving laterally from one leg to the other with ease and explosiveness. Unlike the static strength exercises, this movement engages the lower body while in motion. This pattern mimics the unpredictability of playing a live match. In addition, you get the added benefit of some light cardiovascular training. Try three sets of 30 seconds.

As summer fades, the days darken and our shadows grow. From one of my preferred cookbooks come fall, New Native Kitchen: Celebrating Modern Recipes of the American Indian , I’m compelled to share several contemporary recipes inspired by rich Indigenous cuisine and fresh flavors. These autumn dishes represent and celebrate a thriving culture that remains a current, present, and relevant part of the Pacific Northwest. Warm, nourishing dishes like a hearty bison chili, braised chicken and decadent bread pudding are integral to maintaining wellness throughout the cooler months while offering a snapshot of just how easy and accessible Native American cooking can be.

1 can (14 ounces) kidney beans

BISONCHOCOLATECHILI

1 large yellow onion, peeled and chopped 3 garlic cloves, peeled and minced

1 can (14 ounces) diced tomatoes, with juice

In a heavy stockpot or Dutch oven over medium heat, add the oil, onion, garlic, bell pepper, thyme and bay leaf. Sauté until the vegetables are soft, stirring occasionally, about 5 minutes. Add the bison, salt and pepper, then sear the meat while stirring with a wooden spoon or spatula. Cook for about 8 minutes. Add the tomato paste and allow the paste to brown but do not burn. Add the cumin, coriander, paprika, cayenne pepper and diced tomatoes. Use the juice of the diced tomatoes to deglaze the bottom of the pot. Add the kidney beans and stock and bring to a boil. Note: Do not overboil or the beans will tear apart. Allow to boil for about 5 minutes, then simmer. Add the chocolate, then allow the chili to reduce to a nice stew consistency. Adjust the seasoning, if necessary, remove the thyme sprigs, and serve immediately. TO

Chocolate has a long, sacred history in Indigenous recipes. In 2000, the Chickasaw Nation became the only Native American community to create its own brand of artisanal chocolate. This recipe draws on ancient tradition to create a spicy, savory, herbaceous chili with a hint of that bittersweet goodness.

I love braised chicken thighs because they’re flavorful, easy to prepare and the perfect vehicle for this delicious sauce. Chokecherries were a staple food for Indigenous tribes, a common ingredient in recipes passed down from the Nez Perce, who cooked or dried them to offset the berry’s bitterness. Think of this dish as a new take on the familiar turkey-cranberry combination.

BRAISED CHICKEN THIGHS WITH SAGE & CHOKECHERRY

3 tablespoons canola oil

1 cup cranberry juice

SAUCE

1 bay leaf

2 cups chicken stock

1/4 cup chokecherry preserves

4 sprigs fresh thyme

1 tablespoon chopped fresh sage leaves 1 teaspoon salt 1 teaspoon fresh cracked black pepper

Place a heavy-bottomed large sauté pan over high heat and add the oil. When the oil is hot, add the chicken thighs and sear on all sides until crusted. Remove the chicken and reduce heat to medium-low. Add to the pan the onion, garlic, thyme, bay leaf, sage, salt and pepper. Sauté until the onions are translucent. Add the cranberry juice and deglaze the pan. Soon as the cranberry juice is cooked off, return the chicken thighs to the pan. Add the chokecherry preserves and chicken stock. Stir to incorporate, reduce the heat to low-medium and cover the pan. Allow the chicken to braise for 30 to 35 minutes. Uncover the pan and let the liquid reduce by half. Adjust the seasoning, if necessary, remove the thyme sprigs, and serve the chicken immediately with the sauce spooned over the top. 4

Preheat the oven to 350°F. Sift the flour, salt, sugar and baking soda into a mixing bowl. In another bowl, add 1/4 cup of water, the pumpkin purée, oil, eggs, nutmeg, cinnamon and allspice. Mix well to combine. Whisk the flour mixture into the pumpkin mixture. Then stir in the walnuts.

MAKES 1 LOAF

Grease a standard loaf pan (8-1/2 x 4-1/2 x 2-1/2 inches) with the butter. Pour the mixture into the pan and place on a sheet pan. Transfer to the oven and bake until cooked through, 50 to 60 minutes. Remove from the oven and let cool.

SERVES 6 TO 8

PUMPKIN

3 tablespoons unsalted butter 1 loaf Pumpkin Bread, recipe on page 25, cut into cubes of 1 1/2 inches 4 eggs, beaten 3/4 cups sugar 1 teaspoon salt 1 teaspoon vanilla extract 4 cups whole milk 1 cup chocolate chips Grease a 9-inch square baking dish with the butter. Arrange the diced pumpkin bread evenly on the bottom and set aside. In a mixing bowl, whisk the eggs, sugar, salt and vanilla, until well incorporated. Set aside. In a small saucepot over medium heat, bring the milk to a heavy simmer. Once simmering, slowly whisk the hot milk into the egg mixture. Note: Whisk slowly; if you add the hot milk all at once, the eggs will curdle. Slowly pour into the greased pan, over the diced pumpkin bread. Make sure all the bread is soaked with the mixture. Sprinkle the chocolate chips evenly over the top. Transfer to the refrigerator and let set for about 2 hours. When ready to bake, preheat the oven to 350°F. Prepare a water bath, which is used to keep baked items very moist, by filling a baking or ovenproof pan that’s larger than the 9-inch square with hot water. Slowly place the square inside the larger pan. Carefully transfer to the oven and bake until cooked through, 45 to 50 minutes. Remove from the oven and serve warm.

Indigenous recipes did include lightly sweetened, spiced, and roasted squash, but pumpkin breads or pies didn’t exist in traditional Native American recipes. If you’re interested in a pumpkin dessert, try this nutty, chocolaty, decadent bread pudding as a delicious alternative to the expected holiday pie.

Using one or two fingers, whichever feels comfort able to you, start by press ing on one of the pressure points (see the list on page 31). Hold the pressure for one to two minutes. Then move your finger in a small circle about the size of a dime. Reverse the direction and do another set of cir cular motions, roughly one minute in each direction.

Start with clean skin. Add a few drops of a neutral oil, such as jojoba or grapeseed oil. Traditionally, gua sha starts with the neck area. Hold the tool in one hand and pull the skin of the neck taut. Using down ward strokes, gently scrape the tool from the chin to ward your collarbone. Once you are ready for the face, switch to upward motions, and start from the center features (your nose, mouth, eyes) and move outward.

The gua sha is an ancient Chinese massage tool; the term means “to scrape away stagnation.” The tool is often made of precious stones, such as jade or quartz. While it can be used on the whole body, the gua sha is especially effective on the face because you can practice the scraping yourself. It’s known for encouraging sinus and lymph drainage while increasing circulation, relaxation and stress relief. RM: So, you were helping to create a better lifestyle? MH: Yeah. I’d also say I think if there’s anything we’ve learned during COVID, it’s that our health must also include mental health. Our kids were doing online remote school, separated from friends, and we’re working back from that. Finding ways to take care of ourselves—yoga, walks with our dog, trying new things like cooking classes, working on new skills, seeking out new opportunities—it’s really important. And it’s important to have conversations and ask, “What do you need?” Ask the family, “What would make you feel better?” This can happen over your morning cup of coffee or while baking recipes. Madeline Haydon: I created nutpods because I’m lac tose intolerant, and I had gestational diabetes. I noticed a lot of the creamers on the marketplace had a lot of added sugars and processed ingredients. I wanted a different, healthier option. When you take a look at me, I’m just pretty much an average woman. I’m not a size 0, but I like to make sure I’m feeding my body and my family with good quality ingredients. I have two girls, 8 and 13, and want to teach them how to have a healthy, balanced lifestyle.

Reflections magazine: What does health and wellness mean to you and your family?

RM: How did that assist in the creation of nutpods? MH: We are a dairy-free brand, but we work for a lot of different food tribes—whether it’s gluten-free, paleo, Whole30, vegan, flexitarian; we also work for people who don’t fit into any particular box, they’re just trying to eat healthier. Some people are embracing plant-based foods for environmental reasons. We want everyone to feel included. Everyone belongs for our brand. I would say that balance comes from how we live our lives as a family.

RM: How did your experience with health care inform you?

MH: Right now, our country has a big battle with diabetes and pre diabetes. Forty-four million American have type 2 diabetes, and 88 million have prediabetes. Nutpods’ options don’t just taste delicious, but they are all ZERO-sugar for consumers who are looking to reduce or move away from sugar. We don’t necessarily target or go after the diabetic market, but I feel an immense amount of pride knowing we help people.

MH: It was very intimidating. I worked for a medical device company, and I also supervised mobile blood banks, making sure community hospitals had what they needed. I have always gravitated toward roles that support the community and help people, and I feel like nutpods is a way to do that. But I didn’t know anything about food manufactur ing or selling to grocery stores. If you have conviction, though, you end up going into sponge mode and learning as much as you can. I put together an advisory board that had the experience I didn’t have. It has definitely been an odyssey.

RM: That’s true; food is about so much more than the act of eating.

RM: How do you keep the creative fire going?

MH: In terms of new flavors and relationships, I love keeping an eye on what is going on. I love to see what’s trending at coffee shops and experiment ing with flavors. But as trendy as Sriracha is, I can’t make it into a creamer (laughs).

MH: I always love hearing from consumers. What we hear time and time again is that the familiarity of a cup of coffee, especially during times like COVID, is reassuring. That makes me feel like we have a spe cial brand, we are continuing to build on that special relationship.

MH: As humans, we make so many memories around food and family. A lot of memories are attached to food. We’re really honored to be a part of daily rituals. Once people have their rituals set, it’s an every day presence for them. When I created nutpods, I created a whole Thanksgiving guide because it was a way to have all those familiar things and memories of mashed potatoes, green bean casserole, pumpkin pie—but have them in a healthier way. It’s made me really proud to be able to share that.

RM: Were you intimidated to break into the food space?

you

RM: What’s one failure went through that turned into a good lesson?

MH: So many learning lessons. Number one, it is really difficult to raise money. In order to scale a new brand, you need significant capital. Trying to raise money early on as a female founder, per son of color, and someone with no experience as a CEO, oh man, I had trouble. One of our first angel investors pulled out, and I was crushed.

It was demoralizing when they walked back on their commitment, but it was a great lesson. It made me dust myself off and say OK, there’s only one person who’s going to determine the success of nutpods and it’s me. I’m not going to give that power to one investor, one employee. I believe in myself and will find my way through this.

BEST PIECE OF ADVICE FOR OTHER FOUNDERS

MH: When COVID first hit, I also had a significant bout of impostor syndrome. I’m competing against large publicly held companies like Silk, Nestle and Star bucks, but eventually I realized even 20year veterans in the industry didn’t know how to lead through that. Experience wasn’t going to help, so I managed my way through by listening to my head and my heart. I had to be flexible and choose to believe in myself. It has been one of those lessons that’s so much harder than you want to admit.

RM: What’s in store for nutpods in the MH:future?Right now, we’re the No. 2 brand in plant-based coffee creamers. I want to be able to continue to be a go-to brand that is beloved by consumers and offer great new products. I’m always happiest when we put out new products that work. I’d like to continue to become a global brand—get into Canada (we just shipped to Japan), and explore international products and new channels. RM: That is an incredibly good lesson to learn. Any other bits of wisdom?

You can’t win on experience alone. There will always be some one with more experience than you, but no one will understand your brand and products more than you. That doesn’t mean don’t listen to other people who have more experience than you. It means if they had all the answers, they probably wouldn’t be work ing anymore.

RM: How have your girls reacted to see ing you persevere through all this? MH: Like with many things in parenthood, I think it will be delayed gratification. They aren’t going to recognize anything yet. My hope is that when they grow up and enter the business world they will look back and say, “My mom led during a time that was uncommon. It was uncommon for a female founder, for a person of color to not only compete but outcompete other larger successful organizations. I’ve heard and seen her overcome obstacles, keep work ing, keep going." The future them—that’s what I’m working for now.

The retreat takes place at Castiglione Ugolino on the Murlo Estate in Umbria, Italy. The familyowned estate includes seven villas that date back 10 generations, and it sits among 1,000 hectares (2,471 acres) of the country’s iconic rolling hills and rivers. From there, guests can hike, visit nearby villages, golf on a beautiful course and much more. “The property is close to the border of Tuscany and Umbria,” Serna says. “It’s centrally located to the major airports and other historical cities as well.” Within the villas, guests will get to choose their rooms. “Every room is different, and every room is beautiful,” Serna says. “They all have a view of the beautiful valley. They are spread out between two different buildings with lots of privacy.”
