The Amazon river has Giant Otters~ up to 75lbs! 9. Otters eat A LOT. Mostly fish! 10. Otters are excellent environmental indicators. 11. Sea Otters like to groom each other! 12. Otters like to nestle into abandoned beaver and muskrat dens. 13. Otters are speedy swimmers! 14. Most otters have claws, while only a few species do not. 15. Otters are endangered! Help by keeping their environment clean! Otters travel as a family hand-in-hand as they search the waters and shores for empty beaver and muskrat dens to call home. FUNKO AND EVERETT AQUASOX STRIKE SIX-YEAR DEAL Leading pop culture consumer products company, Funko, and Everett-based Seattle Mariners Class A affiliate, the Everett AquaSox, recently announced a six-year partnership that will change the name of Everett Memorial Field to Funko Field. As the body ages, it’s important to rethink and refresh your fitness routine to adapt to changing goals, whether you’ve been doing a routine for years or are just starting a new one. Bellevue Club personal trainers Jerry Flynn and Mary Worley crafted a workshop for those who want to learn and practice fundamental, functional movements that will give you the confidence to do everything from picking up your grandkids to safely executing more challenging strengthbased exercises. Attendees will explore movements that improve posture, balance and gait from the ground up. In this interactive workshop, you will have the opportunity to ask questions, practice drills and get feedback from experts. On the following page we offer an example of the type of exercises to expect.

FITNESS

wall hip hinge Start by standing six inches from a wall with your feet hip width apart. Place your hands on your hip creases (not at your waist), where the glute muscles connect to your hamstrings. Driving through the heels, hinge at your hips until your backside touches the wall. Be sure to keep a straight spine throughout the entire action. Stand up straight, and then repeat 10 to 12 times. How to add amaranth, einkorn, millet and more into your diet Although called ancient grains, many of these versatile ingredients are actually seeds packed with fiber, protein, healthy fats, vitamins and minerals. With mild flavors, they make perfect starters for a variety of meal options, from a sweet breakfast porridge to a savory dinner main dish.

amaranth veggie bowl

Prep time: 15 minutes; Cook time: 30 minutes Ingredients 3 cups vegetable stock 1 cup amaranth cup Parmesan cheese 3 tablespoons butter 2 garlic cloves, minced 1 large shallot, minced ½ cup local mushrooms (morel, chanterelle, oyster), sliced 2 cups spinach Other vegetables of your choice, sliced Instructions In a large stock pot, bring the vegetable stock to boil and add the amaranth. Turn the heat to low and let simmer for 25 minutes, stirring occasionally. Remove from heat and stir in the cheese and two tablespoons of butter. In a medium pan, add one tablespoon of butter and sauté the garlic and shallots until golden brown. Add the mushrooms, spinach and other vegetables. Cook until preferred tenderness. To plate, place a heaping spoonful of amaranth and top with sautéed veggies.

Ingredients 1 cup of teff 1 ½ cups water 1 ½ cups nut milk of choice 1 tablespoon butter cup Medjool dates, finely diced ¼ crushed almonds cup apples, diced ¼ teaspoon cinnamon ¼ teaspoon coconut sugar Banana slices Instructions In a large stock pot, bring the water to boil and add the teff and nut milk. Turn the heat to low, and let simmer for 15 to 20 minutes, stirring occasionally. Once slightly cooled, add the dates, crushed nuts, apples, cinnamon and sugar. Top with banana slices.

Ingredients 2 cups zucchini, cubed 2 cups eggplant, cubed 1 cup tomato, diced 1 cup millet 2 cups vegetable stock Pesto 2 cups basil (or herbs and greens of choice) cup pine nuts (or nut of choice) 2 garlic cloves cup Parmesan cheese ¼ cup olive oil Lemon Salt Pepper Instructions Heat your oven to 450 degrees Fahrenheit, and roast the zucchini and eggplant for 25 minutes. In a large stock pot, bring the vegetable stock to boil and add the millet. Turn the heat to low and let simmer for 20 minutes, stirring occasionally. In a food processor, add all the pesto ingredients and blend until smooth. In a large mixing bowl, combine the vegetables, millet and pesto. Add a squeeze of lemon and salt and pepper to taste.

Easy Weeknight Einkorn Pasta Don’t have time to cook? Nervous about trying something new? Mark Adams, a local naturopathic doctor specializing in natural nutrition and sports science, recommends Jovial’s einkorn pasta as an introduction to ancient grains. It’s a meal that quickly became a favorite of his 5-yearold son, passing the picky eater’s test. Below he combines it with raw Parmesan cheese and a highquality red sauce for a satisfying and healthful go-to weekday. Einkorn (rhymes with “fine corn”) is a genetically unchanged ancient grain dating back thousands of years. Many believe it is the first wheat grain used by humans. It has significantly less gluten, less starch and more protein than modern wheat. In fact, einkorn has more protein than any other grain at eight to nine grams per two-ounce serving. For reference, an egg has about six grams of protein. Einkorn is one of the few grains that has not been hybridized—making it a nutrient-dense and naturally less reactive alternative to modern wheat, mostly due to the lower gluten component.*

Prep time: 5 minutes; Cook time: 10 to 12 minutes Ingredients 1 box of Jovial einkorn* pasta “It’s a gratifying, nutrient-dense and low-reactive pasta you can like and feel good about—unlike the mac ’n’ cheese from a box or refined pastas and pasta substitutes,” Adams says. 16-ounce jar of red sauce “Find a sauce at the store and look at the list of ingredients. Ask yourself, “Can I buy all these ingredients at the store? Is this a recipe I could make on my own? If not—try the next sauce.” Grated raw Parmesan cheese “I recommend using raw cheeses as they, like the pasta, are a less reactive, more nutrient-dense form most folks can tolerate,” Adams says. Instructions Cook pasta as directed on the box, and heat the sauce in a pan on low until warm. Drain pasta, and add a tablespoon of olive oil if desired. Top with sauce and raw Parmesan. *Einkorn does contain some gluten, so it’s not recommended for those with celiac disease, but it has proved to be a positive alternative for many with moderate gluten sensitivity.

TREATING DEPRESSION WITH TECH written

Bellevue Club member Alex Bard and Dr. Kalyan Dandala work for Associated Behavioral Health Care, a local facility dedicated to giving patients who suffer from depression a cutting-edge, alternative solution to pharmaceuticals. They specialize in Transcranial Magnetic Stimulation (TMS) technology and gave us a rundown of exactly what that means. What is TMS? Transcranial Magnetic Stimulation has been around for a long time. In 1985 it started as a research tool. Scientists used magnetic pulsations to map the brain, and they noticed many patients were saying the protocol gave them more energy. Now, this kind of stimulation is FDA-approved to treat depression. But, it also shows great promise for treating anxiety, ADHD and other mental health conditions without medication. How does it work on the brain? The pulsations reawaken neurons that can go dormant from stress, trauma or genetics. Many people come to us and say they’ve always felt depressed because they’ve never been stimulated the way they need to. It works directly on the areas of the prefrontal cortex that are associated with ADHD, anxiety and depression. What are common misconceptions of TMS? Many patients associate it with shock therapy. It is not the same thing at all. Also, it’s safe enough for patients to drive themselves. There’s no anesthesia.

What is your success rate with this procedure? We’ve served more than 500,000 people in King County so far. Thirty-seven percent of patients go into remission for at least a year. With a success rate so high, why don’t more people utilize this protocol? Most primary care doctors haven’t heard of it. They are on the frontlines and dealing with large numbers of patients, so they don’t always have the time to educate themselves on the new procedures coming out and all the innovations. They can’t always know the latest and greatest. Also, it’s a largely academically driven procedure. It doesn’t have big pharmaceutical companies behind it. How do you know if someone is a good candidate for TMS? Anyone feeling depressed is a good candidate. Typically, depression patients have happy moments but often they describe them as fleeting and rare. They don’t stay in those moments. Someone without depression is generally living in those happy moments day to day. Are there any side effects or dangers? There are no negative side effects. Some people describe a little scalp discomfort where the magnetic components are placed. But it’s very mild. Interestingly, some positive side effects include improved memory and cognition.

Are there any inspirational success stories you can share? Yes, we talked to a local police officer who said he was suicidal and severely depressed for 30 to 40 years of his life. He came to us, and for the first time he said he can talk and enjoy conversations with people. He has a life now. We also had a couple that came in and they both had the therapy. It helped the whole family and they said it saved their marriage and family. Is this procedure safe enough for children? Right now the FDA has not approved it for children. But we are hoping for an indication [approval] within the year. That would be incredible because more children could get help without putting meds on their brain; instead it would actually increase neuronal growth and activity. Is there anyone who isn’t a good candidate for TMS? Yes, people with bipolar mania. In some cases, it seems to make it worse. What is in store for the future of this technology? We are very optimistic that more and more indications [FDA-approved uses] are going to be coming in the near future. It shows great promise for people who suffer from schizophrenia. Also, we’d like to see this technology become more portable. Right now patients have to come into the office Monday through Friday for 20 mins, for six weeks. Hopefully soon we will be able to provide the procedure to patients in their home.

THE KITCHEN NNECTION NNECTION Bellevue Club member and restaurateur Cindy Gayte carries on her mother’s foodie traditions with a new West Bellevue location.

WHEN

Lisa Ruhl, Cindy Gayte’s mother, opened Bellevue Thai Kitchen in 1981, she did so with the purpose of bringing a new kind of cuisine to the Pacific Northwest. “My mom took a lot of pride in educating people about her heritage and food," says Gayte. “I have the original menus, and there were Thai and Chinese dishes on them because people didn’t know what Thai food was then. She needed to get them in the door." Her vision has been a staple of the Eastside restaurant scene ever since, and the business became a family affair. The long heritage of restaurants also includes Gayte's brother, Tom Suanpirintra, who is the creative mind behind Thai Tom in the U-District in Seattle, boasting a cult-like following.

passed down her passion for cooking, and Gayte made it her mission to keep her mother’s vision for fresh, authentic Thai food alive. This spring she branched out and opened Thai Kitchen Bird Pepper, located in Bellevue Square on the second floor between Nordstrom and Crate and Barrel (the old Pagliacci Pizza space).

“I wanted to do something a little different for my own legacy. I’ve scaled down the Thai Kitchen menu (the current one has about 75 dishes) to our customers’ favorites and injected a few things I just love into it. I I added happy hour with beer, wine and cocktails in a welcoming, modern space,” Gayte says.

In her new endeavor, Gayte says she is taking the ‘less is more’ approach with a menu featuring a curated collection of Thai Kitchen favorites and a rotation of seasonal dishes, refined with heat and flavor. There is also a full bar with craft cocktails.

Bellevue Club member Dr. Todd Freudenberger knows a thing or two about the lungs and how they function during challenging physical feats. He is a specialist in pulmonary medicine and critical care at Overlake Medical Center & Clinic. And he spends his off-time mountaineering on Mount Rainier, mountain biking, trail running and more. As peak climbing season is upon us, he fielded a few questions about what happens to the body during high elevation exercise.

At what elevation does acute mountain sickness become a risk? After you reach about 9,000 feet or so, the problems associated with low oxygen environments are magnified. What is actually happening in the body when you reach higher elevations? At sea level, the inspired oxygen pressure in the air is about 150 millimeters of mercury, and in your body it’s about 90 millimeters of mercury. Oxygen is transported to muscles and organs by hemoglobin in red blood cells, which is 95 percent full or saturated at this altitude. The amount of oxygen you’re carrying is about 89 percent. When you’re at the top of Mount Rainier, your body is at about 50 to 60 millimeters of mercury and your oxygen levels are about 85 percent. How does this manifest? You can become very short of breath, especially if you reach high elevation quickly. Your body has mechanisms it uses to try and compensate for that, and one is to increase ventilation so you start taking bigger and more breaths per minute.

Anything else going on? Yes, your body becomes alkaline because you’re breathing more and more and your carbon dioxide levels drop. When that happens, the kidneys have to eliminate all that alkaline as another compensatory mechanism, which can be tough on some people. There are medications you can take for this though. What are the symptoms of acute mountain sickness? Dizziness, nausea, confusion, headache, lack of desire to eat and general malaise. It occurs most often when people attempt to ascend quickly. To treat it, you need to rest, take a non-steroidal anti-inflammatory like Tylenol or Ibuprofen, and hydrate. How can you tell if you are going to be susceptible to acute mountain sickness? It’s genetic, and there is no way to predict if someone will do well at high altitude for the first time. It isn’t affected by ability or your athletic prowess or even training. I have a friend who could destroy me cycling at sea level and we ended up pulling him up the mountain.

Can it be life-threatening? It’s very rare, but something called High-Altitude Pulmonary Edema or HAPE can develop. It usually occurs within two to fours day after being at 8,000 feet or higher, and it’s when fluid is escaping from the blood vessels in the lungs. It is accompanied by extreme shortness of breath and develops quickly. It is life-threatening and those people have to get taken off the mountain immediately. What are your recommendations if you know you are at risk for acute mountain sickness? Take the time to acclimatize. Take two days to get to 8,000 or 9,000 feet. The recommendation for susceptible people is don’t ascend 1,500 feet or more per sleep. Also, sleep at lower elevations if possible and then climb high during the day. There’s a mantra: climb high and sleep low. Other than that, there are medications that help a great deal called Acetazolamide (brand name Diamox). Also, alcohol should be avoided when your climbing because is has a depressive effect on the body.

What about those elevation training masks? Do they help? I don’t recommend them. Others say sleeping in a sealed tent helps. I saw one series of literature that suggests if you slept in a tent for two weeks it can help a little, but I don’t think it’s worth it when there are other more effective ways to help. Are there conditions where people should not attempt high altitude activity at all? Any kind of serious lung condition, like chronic obstructive pulmonary disease, or people with underlying heart conditions. It’s important to speak with your doctor if you are worried at all. What about asthma? People with asthma can actually do better up high because there are less things in the air that can trigger reactions. And for most people with asthma, exercise can help with airway dilation but the exertion should be moderate. And again, talk with your doctor first.

Anything else you want to let people know? Just that the classic thing is for the young, very fit athlete to push themselves, go too fast, too rapidly, and ignore warning signs. Take your time. Also, if you’re with a guided group, don’t hesitate to speak up if something is wrong. Sometimes you don’t know the other people and don’t want to slow down the group, but talk to your guide immediately if you feel unwell.
