Our restaurants, the hotel and other spaces received upgrades, and we put into place new safety procedures and policies. We also added a host of digital platforms. Our goal was to create a new kind of community gathering place designed for optimal wellness. Most impressively, many of our members also found ways to evolve and grow during challenging times. HOW TO PERFECT THE HIP THRUST UPPER BODY Begin with your back flat on the floor and arms stretched out to the side. As you perform the movement, keep the shoulders and upper back flat. NECK Do not allow your neck to crunch. To encourage elongation, keep the eyes fixed on the ceiling.
The hip thrust is a dynamic movement that strengthens the legs and core while encouraging mobility through the whole lower body. Let Bellevue Club personal trainer MaryAnn Carpenter help you achieve optimal form.
CORE Engage the abdominals and back muscles throughout the entire movement.
KNEES The knees begin bent and thighs go toward 90 degrees as the hips lift up.
HIPS Lift the hips off the floor, keeping them level and stable. Lower them back to the floor and repeat 10 to 12 times.
FEET Keep the feet flat on the floor and drive through the heels.

HOW TO ADJUST YOUR STATIONARY BIKE cycling is great for your heart, endurance and joints, but if you’re doing it from home for a virtual class or just starting out, there’s one adjustment that can be intimidating: fitting your bike. but, it is very important as it allows you to stay comfortable and reduces your chance of injury. here are a few tips.

SEAT HEIGHT
When you’re standing next to your bike, adjust the seat to be even with your hip bone. You can lift the leg that’s closer to the seat and bend your knee to a 90-degree angle to adjust the seat to meet the point where your hip bends. Or you can adjust the pedals when sitting on the seat so that when you straighten your leg to a 10-degree angle, the pedal is at the bottom of its travel. PEDALS
Remember to adjust your seat so your legs properly reach the pedals— not the other way around. While seated and riding, the ball of your foot should align with the center of the pedal and you should have enough room to fully rotate the pedals with your toes pointed straight instead of having to point them down at the bottom of your motion. SEAT POSITION
The easiest way to adjust your seat-to-handlebar positioning is to put your elbow on the edge of your seat and make sure the tips of your fingers can reach the resistance knob in front of you. HANDLEBAR HEIGHT
Handlebars are tricky: some riders like them high, and some like them low. The trick is usually to start with them an inch or two higher than your seat and find your comfort level from there, once you’re seated on the bike. Be sure to maintain a small bend in your elbows. For people with back or hip problems, it’s recommended to adjust the handlebar height to accommodate (perhaps higher so that you’re not bending over too much).

After months of hinting and maybe an impressively large coffee bill, you finally convinced your significant other to splurge for that espresso machine you’ve been eyeing. Now’s your chance to show the world exactly how well you would have done as a barista in another life—but wait, you’ve never made espresso before. Never fear, we’ve compiled a beginner’s guide to espresso and the most popular at-home drinks to brew.
espresso
Let’s begin with the basics: espresso is a drink but also an Italian brewing method. Following the instructions that come with your new appliance, you should have a drink that you can sip alone—though it might be a bit too strong for some people’s tastes because traditional espresso is a 1:2 coffee to water ratio versus coffee which is a 1:15 ratio.
americano
Next up is the Americano. Similar to the espresso, an Americano involves adding more water. To create this drink at home, brew your espresso shot and add two shots of hot water. If you’d like a bigger drink, continue adding one part espresso to two parts water. Americanos are great for those who want the purely espresso taste but also more volume.
latte
One of the most popular espresso drinks in America, a latte is made of one part espresso and three parts steamed milk (the guide on your machine should also explain how to create steamed milk). Most coffee shops add a layer of foam, and baristas use this canvas widely to show off their latte art, which is a newer feature of this classic drink.
cappucino
Created in the 1990s and named for its color, the cappuccino is another American favorite. Once you’ve mastered your espresso pour and steamed milk, the cappuccino is your next challenge. A cappuccino is equal parts espresso, steamed milk and milk foam. Ideally, the perfect cappuccino pour will be smooth, creating three distinct layers.
macchiato
The most complicated on our list but a very popular order is the macchiato. Originating in Italy, the macchiato is the first flavored drink we recommend at-home baristas try. American macchiatos combine espresso with a flavor shot (usually caramel or vanilla) and a “stain” of milk foam on top. Some prefer a bit of steamed milk as well, but this is where individual taste takes over. The defining part of a macchiato is its foam spot resting on top of the drink.

Many of us put our exercise programs on the shelf this past year during periods of quarantine and closure. And the thought of returning to your pre-2020 regimen might be daunting, to say the least. As we contemplate a return to moving our bodies and ramping up fitness programs, here are a few tips and tricks to keep the frustration and self-judgment at bay.

REMEMBER WHY YOU’RE DOING IT
Exercise is about way more than numbers on a scale. The CDC lists a reduced risk of all chronic diseases, elevated mood, lowered stress levels and improved sleep as some of the most important reasons to move your body more. If your health goals have taken a hit this past year, use that knowledge as practical motivation for finding a new routine that has more to do with how you feel than look. Find what feels good, as one famous yogi on YouTube intones.
MAKE SMALL, ACHIEVABLE GOALS
Author, podcaster and self-improvement guru Tim Ferriss has some very sage advice for setting goals: “Rig the game so you can win it.” He explains that human beings are inherently far more motivated after achieving a goal, so start with a milestone you know you can reach and go from there. That might look like as little as 10 minutes of activity a day in the beginning. WALK OR MOVE IN BETWEEN WORKOUTS
Walking is one activity that had its moment in 2020 because it is something most people can do from their homes safely. Don’t let those dog walks wane; they count and will help keep the ball rolling. Just because you aren’t hitting a new PR or crushing weekly mileage goals, doesn’t mean you aren’t doing the body good by strolling around the block.
PLAY A GAME
Having fun is one of the best motivators. Grab a racquet and hit the tennis or pickleball courts. Outside and socially distant options for both abound, and challenging someone to a friendly game can add an extra dynamic to the activity if you’re finding it hard to return to pre-pandemic pursuits.

EXPECT FAILURE; DON’T FEAR IT
Fear of failure can be especially potent when starting or re-starting a program. If you’ve taken time off, do not expect your body to be able to perform the way that it did, and definitely don’t add judgment to the mix. Not every workout will feel great, so don’t let one suboptimal sweat session make you feel like a failure. The most important thing is to shake it off, applaud the effort you did give and commit to the next one.
MAKE A BET WITH FRIENDS
A handful of emerging apps have taken accountability to new heights, which can make goal setting significantly more effective. It turns out peer pressure can have positive outcomes. Platforms such as HabitShare, Goalify and VERVO allow you to make collective goals with friends and even put money on them. Many include reward and punishment mechanisms that you can pick and choose based on how you are best motivated. TRY SOMETHING NEW OR LEARN A NEW SKILL
Similar to achieving small goals, learning a new skill has an inherent motivational reward system built in. You can’t help but feel good when you gain new knowledge. You can leverage this concept with your fitness goals by tackling something you’ve never tried before. Try running sprints for the first time, yoga, Pilates, martial arts or a number of other specific activities. Just remember, you won’t be an expert right away, so approach it with a beginner’s mindset and a healthy ability to laugh at yourself as you dive in.

In 1991, Jenny Tan moved to Seattle from China to pursue a degree in chemical engineering at the University of Washington. Soon, she met her husband and started a family with two children. Since both parents worked full time, they sent the kids to a local day care. “But I could never really find the ideal place,” Tan says.
For her, a major factor was a full-time bilingual classroom. At the time, she says many schools offered one hour of a second language throughout the day or a few lessons here and there. However, she was on the hunt for a truly immersive program, meaning two languages spoken all day every day. But she had no luck. Fast-forward to 2017, her family had the opportunity to develop an investment property in Bellevue, and a few schools reached out about using the space. “Something just clicked,” Tan says. “I had fallen in love with the Bellevue community, and realized I wanted to start a school.” So, within a short time, she created Eastside Children’s Academy, a bilingual school that teaches Chinese and English.

“The biggest difference is that I believe in consistency in teaching languages. We have fulltime teachers for both languages, and they do circle time in Chinese, they talk about food, talk about music in Chinese. It’s a fully immersive environment versus just a few lessons.” Prior to the pandemic, with only one year under their belt, the school had 70 children (infants to pre-K) enrolled. During 2020, the numbers predictably dwindled, but Tan says the school is currently operating under strict safety measures so that young children still have a place to learn. “It’s a great start for young kids, and they will retain the skills for a lifetime,” Tan says. “Kids’ brains develop very fast at ages one, two and three. They are like sponges.” And she is right, study after study confirms the massive benefits of raising bilingual kids. Here are just a few insights.

COGNITIVE DEVELOPMENT One of the most significant ways bilingualism affects the brain is cognitive flexibility or fluidity. This means someone who speaks two languages (or more) is better at seamlessly switching between two tasks, or two trains of thought. CULTURAL AWARENESS Language and culture are closely related. Tan explains that it was very important for her own children to speak Chinese because it connects them to their extended family, history and roots. DISEASE PREVENTION Evidence is stacking up suggesting that dementia, Alzheimer’s and other age-related cognitive diseases present less often in the brains of people who know multiple languages. While some researchers predict it has to do with the flexibility created, there are still too few studies to confirm. PROFESSIONAL SUCCESS As the workforce becomes more and more globalized, workers with an ability to communicate effectively with other cultures will be highly valued and can even be compensated with higher pay.

GROUP SWIM LESSONS Our program follows the American Red Cross Learn-to-Swim curriculum, which teaches aquatic and water safety skills in a logical progression. The objectives are to teach swimmers to be safe in, on and around the water and become efficient swimmers. Classes are 30 minutes each. $75/member Registration Opens: April 1 PRESCHOOL 1: INTRO TO WATER Ages 3–5, class size 4 M or W, 4-4:30 p.m., Sa, 10 a.m. P1 is designed to introduce young children to the water. Students practice floating, gliding and blowing bubbles with instructor support. PRESCHOOL 2: INTRO TO WATER SKILLS Ages 3–5, class size 4 Tu or Th, 4-4:30 p.m., Sa, 10:30 a.m. In P2, students develop independent forward motion for skills on their front and back. Children continue to explore arm and leg movement with minimal support from the instructor. PRESCHOOL 3: FUNDAMENTAL SKILLS Ages 3–5, class size 4 M or W, 4:30-5 p.m., Sa, 11 a.m. Through guided practice, students are taught to coordinate arm and leg motions with breathing to perform skills for longer distances and times. All skills are performed independently.
YOUTH 2: FUNDAMENTAL SKILLS Ages 6–12, class size 4 M or Th, 5-5:30 p.m., Sa, 10:30 a.m. Students focus on changing directions and body position while swimming greater distances. All skills are performed with independent forward motion and without support. YOUTH 3: STROKE DEVELOPMENT Ages 6–12, class size 4 M or W, 5:30-6 p.m., Sa, 11 a.m. Students build on the fundamentals of front crawl with side breathing, backstroke and treading water. Students are introduced to the breaststroke, dolphin kick, dives and diving rules. YOUTH 4: STROKE IMPROVEMENT Ages 6–12, class size 4 Tu or Th, 5:30-6 p.m., Sa, 11:30 a.m. Y4 students improve endurance and confidence by swimming greater distances. Participants also begin to learn coordinated breaststroke and butterfly as well as basic turns at the wall.
PRE-COMPETITION These courses refine stroke skills and increase endurance. Participants must complete a swim assessment with the coach before registering. REGISTRATION AND CANCELLATION POLICIES REGISTRATION FEES: Payment for programs is billed at the time of registration. Program fees cannot be prorated. Payment for services is billed the day of the service (fees subject to change.) TAX: Tax is not included in price for athletic classes, camps and training sessions. CANCELLATIONS: To receive a refund for a program, you must notify us of cancellation at least seven days prior to the start of program. For services, you must notify us of cancellation at least 24 hours before the service. Late cancellations and no-shows are billed at full price. (Cancellations cannot be made online.) MISSED CLASSES AND LATE ARRIVALS: There are no refunds for missed classes or late arrivals for services. CHECK IN/CHECK OUT: Parents or legal guardians of program or service participants younger than 12 must check their children in and out every day with the instructor.
GUEST POLICIES MEMBER SPONSOR: A guest may participate in a program or service when he or she is registered by a member. The sponsoring member must be in the club while the guest attends the program or service. Members have registration priority over guests. REGISTRATION: Members can sign up guests by calling or visiting the Athletic Services Desk. Guest registration is not available online. FEES: Guest fees for programs and services are typically 20 percent higher than member fees. (Fees subject to change.) LIMITATION: Guests are allowed to attend one program or service per year.
SAFETY PROCEDURES • All Bellevue Club camps will follow Washington State Department of Health guidelines for youth programs. • All camp participants and staff members will be required to wear a face mask. • Masks are not required for participants when in the pool; however, staff members must wear a face mask and a face shield. • All camp activities will be designed for social distancing. • Staff members and participants will be required to wash their hands with soap and water or use hand sanitizer before entering camp, every hour of camp, and before leaving camp. • Hand sanitizer will be available throughout the club, as well as in each camp location. • There will be designated drop-off and pickup rooms for each camp. • It is encouraged to have the same parent pick up and drop off camp participants. • All participants are required to fill out a waiver for club entry.
BILLING: Guest fees are billed to the sponsoring member’s account. No other forms of payment are accepted.

Bellevue Club member and food-safety expert Parastu Shubin launched a social media account just to document the effects of COVID on the PNW food industry.

Parastu Shubin has always been fascinated by the intersection of the food and restaurant industries with health care. With a master’s in food safety, she has made a career of studying and tracing foodborne pathogens, such as salmonella, listeria and more. In early 2020, when COVID-19 surfaced in Washington State, Shubin immediately knew the food industry was going to change—possibly for the long haul. So she did something she never had before: she grabbed her camera. “This is a project about storytelling,” Shubin says. “The food industry has had to deal with onerous new safety restrictions and been forced to overcome disruption and demand. To quickly troubleshoot and provide a safe working environment for food and farm workers, business owners had to take action according to CDC and OSHA guidelines and the best available science..”

As news was breaking of the pandemic, Shubin, taking all safety precautions possible, began visiting local and national restaurants and grocery stores to document what she instinctively knew would be the beginning of an evolution. “By sharing my story with viewers, I have created images to address the public’s concern with COVID-19 and convey a visual description full of integrity, tension, food workers and shoppers’ service.” She started an Instagram account @21st_ century_eats to post what she found. “I took immediate notice of how quickly things were changing, week to week, day to day,” she says. “Customer service now means pointing to where an item might be, filling per cup without refills, or asking the attendant for a new cup. Paying a local honey bee provider at a cash register means using a stick from eight feet away. Restaurants, grocery stores and fish markets try to cope by offering pickup or delivery. As a result, portions of their stores are now full of boxes waiting. “ She started noting what products couldn’t keep up with demand and the toll the experience was taking on the workers. But her main goal was to document what was working. “This ongoing project began [in March] as the world began to deal with the impacts of COVID-19 on our society,” Shubin says. “These photos focus on the best practices according to the health department and best-available science to minimize transmission risk.

“My hope in doing this project is to illustrate the ways social distancing, hand hygiene, group shopping, face covering and stocking up on pandemic household supplies have affected the food premises and employees.” Aside from photographing what’s happening here in the Pacific Northwest specifically, she spends her spare time learning from other experts—mainly reading about and listening to speakers on international food policy. “There are devastating stories about the pandemic from around the world as we deal with loss, uncertainty and change. One thing stays strong regardless of politics and cultures, and that is we continue moving forward and staying positive.” Shubin says.
