T H E E VO L U T I O N OF WELLNESS We’re sure you’ve noticed a few things have changed around the club recently. We’ve been hard at work improving our facilities and have more plans brewing. Here’s a quick rundown of what’s changed and what you can expect in the coming months.

HOTEL RENDERINGS

B E LLE V U E CLU B H OTE L After a year of renovation, the Bellevue Club Hotel reopens in late spring with completely new rooms set to a residential standard. Commencing with additional adjustments, which includes reconfigured Italian stone bathrooms, hardwood floors, open closets, enhanced case work, and furniture, provide a special retreat. Safety is paramount, including air handling that incorporates hospital-grade bi-polar ionization technology. All rooms were crafted with responsible materials that include reclaimed and recycled wood. For everyday convenience, features provide automatic drapery, enhanced lighting and temperature controls as well as Alexa-controlled add-ons and keyless entry. The distinctive Northwest style creates special accommodations.

FAM I LY AN D FI N E D I N I N G Many of the club’s classic dining outlets received enhancements as well. Splash now has a new look, larger booths and tables, plus touchless technology. Our new executive chef, Alex Chan, a veteran of the Tom Douglas empire, took charge of the menus and added more PNW-based fare fresh from local vendors. The Market, set to open this summer, is a new casual coffee spot where you can grab a latte before your workout or a beer with buddies after.

BALLROO M AN D P R IVATE E VE NTS Known as an elegant and dynamic property for hosting weddings, bar and bat mitzvahs, birthdays and other important momentous family occasions, the ballroom and meeting spaces have been refreshed with new floors, lighting and other special features. In addition, Polaris now has increased options for holding private business and personal events.

FAM I LY WE LLN E SS The club has long been a gathering place for families. As part of more expansive locker room renovations, we created a Family Changing Room to make things as functional as possible for families of all shapes and sizes. 8 | may/june 2021 reflections

THE FUTURE OF FITNESS While all these changes to the property are useful, fitness remains our top priority. The fitness department has plans for year-round PGA golf pros on-site, a large functional studio space and a dedicated spin studio. We sourced top-of-theline equipment and will continue to lead the pack with wellness offerings. Many of these spaces are in the beginning phases and will be rolling out in the coming months.

HOW TO PERFECT THE BENT-OVER ROW Ash Milad, a Bellevue Club Swim Team coach, demonstrates how to perform this simple compound movement that builds strength and stability in the back, core and arms. WORKING ARM

Choose a weight appropriate for your fitness level, and grip it with one hand while it’s fully extended toward the ground. Using a pulling motion, raise the weight up to chest height. With control, lower the weight back down. BACK

Keep the spine straight throughout the entire movement. Maintain a straight line all the way through the neck as your gaze remains on the floor. HIPS

Hinge forward at the hips until the back is parallel with the ground. LEGS

ANCHORING ARM

Keep the knees slightly bent in an athletic stance.

Extend the arm without the weight straight toward the ground. The hand can be in a fist or unclenched.

FEET

Place the feet hip-width apart with the toes slightly turned out.

WHY IT’S IMPORTANT TO PULL

Many traditional exercises emphasize pushing against objects to build strength. But practicing pulling is equally as important for a well-rounded, happy body. If you spend a lot of time on the bench press, this is the perfect way to get balance in your upper body.

ALL ABOUT GARLIC There are almost as many stories about garlic throughout history as there are ways to use this special ingredient.

Common garden pests like aphids also suffer from this fear: crush a few cloves of garlic with water and spray it over your plants and they’ll be insect-free! Different Muslim and Buddhist traditions over the years have forbidden eating garlic due to its pungent smell and the belief that it stimulates aggressive behavior.

In ancient Greece, brides didn’t carry flower bouquets. Instead, they carried bouquets of garlic and herbs down the aisle on their wedding day. INGREDIENTS

of f t h e pl at e There are two common household uses for garlic that don’t involve food at all. Garlic’s sticky juices can be used as an adhesive, especially projects that involve paper, or to fill in cracks in glass. You just need to crush the clove and extract the sticky inside. The other common use is to heal cold sores. Garlic has been used for ages to clear up cold sores. By cutting a clove in half and applying it directly to the sore, the antibacterial properties of the miracle plant will speed along the healing process.

• Four heads of garlic • Handful of thyme sprigs, rosemary sprigs and/or bay leaves • 1.5 cups extra-virgin olive oil DIRECTIONS

1. Preheat oven to 250 degrees F. Place garlic, herbs and oil in a small baking dish or saucepan. 2. Cover with foil and bake until the garlic is tender, 60 to 75 minutes. 3. Let cool and serve. You can also save this confit for up to two weeks in a chilled, airtight container.

KING SALMON, AKA CHINOOK

Season: Available year-round, but mostly in April Look and taste: Red, rich and firm The largest of all species, king salmon are about 20 pounds on average and have the highest amount of omega-3 fatty acids. You’ll find this specific salmon usually grilled with seasoning and lemon.

COHO, AKA SILVER

Season: July–November Look and taste: Orange and versatile Coho are leaner and smaller than king salmon, averaging 12 pounds. Even though they aren’t as impressive in size or fat content, they’re the most versatile and easy to find. SOCKEYE, AKA RED

Season: July–October Look and taste: Bright red, flavorful and lean Full-grown sockeyes average six pounds and top out at 15. Commonly used in households for burgers or smoked, sockeye salmon is the most accessible and usually cheaper option for those who want to experiment with new recipes.

PINK, AKA HUMPBACK

Season: June–September Look and taste: Light pink, mild and small These smaller fish are caught by the millions each year and are used in fresh cooking or are frozen and smoked, but most of the time they’re processed and kept in cans or pouches.

KETA, AKA CHUM OR SILVERBRITE

Season: June–September Look and taste: Orange and mild Keta are usually eight pounds, less colorful and less flavorful than king or sockeye, so their market price is significantly lower. Most fishermen will point out that it’s why these little guys are so great—you still get a large portion of healthy food at a lower cost when you buy keta. STEELHEAD, AKA RAINBOW TROUT

Season: Year-round Look and taste: Bright red, flavorful and lean Salmon and trout species overlap—all Pacific salmon and rainbow trout (including steelhead) falls into the same genus, Oncorhynchus. Steelhead average a lean eight pounds with a rich red color. ATLANTIC SALMON

Season: Year-round Look and taste: Orange and mild Atlantic salmon are usually farmed, which causes a bit of controversy. Wild Atlantic salmon are no longer sold in markets due to its status on the endangered population list. There are pros and cons to buying farm-raised salmon, resulting in a year-round supply and a low price. Just know, if you’re buying Atlantic salmon, it’s from a farm.

Mushrooms are uniquely versatile. Some are tasty, some are trippy and others are downright dangerous, even deadly. In recent years, other varieties, often called functional mushrooms, have even made their way into the wellness industry and promise everything from cancer prevention to better skin. In fact, in 2015 the National Center for Biotechnology Information published research that said, “More than 14,000 species of mushrooms are recognized, and among them, approximately 2,000 are identified as edible. Of the 2,000 edible mushrooms in 30 genera, 270 species are now considered as potential therapeutic or preventative agents that may ensure wellness of humans.” Of the 270 therapeutic varieties, about a dozen or so have risen to the top and become superstars. They now appear in supplement form, coffee and teas, tinctures and tonics, and more. While many health claims are still being researched, here are few fungi to keep your eye on.

for imm u n e f u nct ion REISHI (GANODERMA LINGZHI) This red-capped, fanlike mushroom is native to Asia, where it’s long been revered for immune-boosting properties. Most notably, it helps regulate the sleep cycle by promoting deep sleep and stimulates white blood cell production. CHAGA (INONOTUS OBLIQUUS) Chaga grows on the bark of birch trees in cold climates and, like many mushrooms, is widely studied in the treatment of certain cancers. Medical News Today says chaga “may help regulate the production of cytokines, supporting the immune system by helping cells communicate with one another. This could help fight infections, from minor colds to lifethreatening illnesses.” TURKEY TAIL, OR CORIOLUS (TRAMETES VERSICOLOR) This brightly striated variety grows on hardwood trees and boosts the immune system by promoting gut health. Similar to chaga, it is widely studied in cancer research, and is thought to help fight infections or diseases of the liver and lungs in particular. MAITAKE, OR HEN-OF-THE-WOODS (GRIFOLA FRONDOSA) This mushroom, which grows at the base of oak trees, is often found in the kitchen, but it does double duty as a powerful blood sugar regulator. It is known to aid in the treatment of diabetes and hypertension and acts as well as an anti-inflammatory.

for fo cus LION’S MANE (HERICIUM ERINACEUS) This large, hairy white fungus is a well-established neuroprotectant, meaning its claim to fame is brain health and cognitive function. The lion’s mane is often studied for its ability to mitigate dementia and Alzheimer’s. A 2013 study published by the National Center for Biotechnology Information explains it “reduces the risk of neurodegenerative disease-induced cell death.” For others, it can act as a light focus aid.

for en ergy CORDYCEPS (CORDYCEPS MILITARIS) Cordyceps grows on the larvae of insects and is touted for its ability to increase physical performance and decrease fatigue. HOW TO PERFECT YOUR POSTURE

My grandmother had a peculiar way to cure to bad posture. Growing up, if she saw me slouching, she would not-sogently take the knuckle of her pointer finger and, beginning at the base of the spine, run it up the entire thing. The motion would immediately force me to sit up straight and pull the shoulder blades back. Although the method was rather old-school, she swore it would save me from a lifetime of hunching.

Years later, I still think about her when I find myself sitting at a desk or on the couch for way too long. And over the past year, this has occurred way more often than I’d like to admit. There are all kinds of terms for it— tech neck, hunchback—but whatever you call it, physicians agree it is a real problem. When left unchecked, it can cause chronic pain, limited range of motion, spinal misalignment and herniated discs. Luckily there are a host of cutting-edge tools and exercises proven to help straighten you out, no knuckles needed.

THE TEST: HOW TO KNOW IF YOU HAVE BAD POSTURE There is a simple test to see if you suffer from bad posture. All you need is a tape measure and a friend. Stand against the wall with the back of your head, shoulder blades and glutes touching the wall. Your feet will be a few inches away. Then measure the distance from your neck to the wall and the distance from your low back to the wall. If the difference between the two measurements is greater than an inch or two, your spine is most likely out of alignment. Without using the test, you can often identify bad posture by a couple of classic symptoms: rounded shoulders, extreme curved spine or a neck that juts forward.

EXERCISES AND STRETCHES If you have identified posture issues, try the following exercises to counteract what the sitting has done to your spine. Benefits include spinal stability, mobility and strength. BIRD-DOG

Begin on all fours with your shoulders right over your wrists and your hips over your knees. Extend your left arm forward and right leg back behind you. Hold for 15 to 30 seconds and switch sides, with the right arm forward and left leg back. BACK EXTENSION

Begin laying face-down with your arms straight by your side, palms down, and your legs extended straight. Raise all your limbs about six inches off the ground and hold for 30 seconds. Repeat three to five times. KNEE TO CHEST

Begin on your back. Pull the left knee in to your chest and lift the right foot three to four inches off the ground. Hold for 30 seconds and switch to the other side. Repeat three to five times.

THE ZEN OF GREG MCLAWSEN Bellevue Club member Greg McLawsen talks about his path to becoming one of the most unique attorneys in the world and how COVID affected the practice in a positive way.

Greg McLawsen is a one-of-a-kind attorney. Literally. The majority of his clients immigrated to the United States under a family-sponsored visa, and usually after a divorce, fell into desolation. They often have been forced to live in shelters and other strenuous domestic situations with children in tow and very little financial means. He says they are also commonly the victims of domestic violence and don’t qualify for public assistance.

I WANTED TO BRING THE WORLD TO MY LAW PRACTICE AND WORK WITH FASCINATING PEOPLE.

“If you sponsor someone to come to the United States through a familybased visa, you have to sign a financial agreement,” McLawsen explains. But that agreement isn’t always honored, especially if personal relationships are strained or severed. That’s where he steps in. “I file lawsuits against their petitioners in federal court to make sure they have at least some money in their pocket and the chance of making a life for themselves,” says McLawsen, founder and managing attorney of Sound Immigration. “I fight to give them a shot.”

What makes this area of practice unique is that his specialty fits somewhere in between family and immigration law— and currently he’s the only one in the country filling this niche. “Nobody else seems to be interested in this area of practice,” he says. He believes it’s mostly because there isn’t necessarily a lot of money to be made. “It’s risky to take a case where the clients live on or below the poverty line. So, you’re going to federal court for two years, hoping down the line there is money. For many, it’s not appealing," McLawsen says.

For McLawsen, the reward comes from fulfilling a personal purpose he first discovered during his time spent at a Tibetan monastery in India. After receiving undergraduate degrees in psychology and philosophy from the University of Washington in 2004, he left on an extended trip abroad. There, he was steeped in the Buddhist way of life, and it changed the course of his career forever.

“In Buddhism, I learned that the pursuit toward the thing you’re aspiring to is all about the practice,” he says. In other words, “You don’t talk about the way of doing something, you just do it.” That time spent traveling and studying also gave him an immense amount of empathy, which he wanted to put into practice. From then on, McLawsen knew he wanted to help people from all walks of life that were trying to better their situations. So that’s how he thoughtfully crafted the creation of his Bellevue-based practice. “I wanted to bring the world to my law practice and work with fascinating people,” he says. Interestingly, this means he had embraced the idea of a virtual workplace long before COVID happened. He used video conferencing as a tool to work with folks from all over the country and world. He was ahead of his time in understanding how to perfectly mix ancient philosophy with modern technology. “Over the past decade, a remote practice was totally heretical to older colleagues. They thought there was no way to do it ethically and securely,” he says. “Now, it’s the standard. One of the positive effects of this situation is that it really catalyzed the court system to get past that. “If there is a case in Texas, they used to expect you to fly down and show up for that, and now we don’t have to.” The efficiency and monetary savings are clear, he says. “It greatly boosted the fairness of the justice system because of the reduced cost.” McLawsen hopes that, with this sweeping change and overarching acceptance, this type of practice will become easier in the future—more clients can reap the benefits and more young lawyers will be attracted to practicing this type of law. He also hopes for his own practice that he can return to traveling the world, learning valuable lessons about humanity in the process, and serving others. “In the future, I want to be practicing law from Bhutan or Thailand, bumming around a market and then logging in to litigate; I miss the world. Traveling is one of my major passions. It’s an awfully big and interesting world, and Bellevue is just a small, small microcosm,” he says. The most well-known and iconic rain forest in the park, the Hoh is named after the massive, rushing Hoh River that runs off Mount Olympus’s glaciated walls. There are three main trails that wind through the lush forests—Hall of Mosses (.8 miles), Hoh River Trail (18.5 miles) and Spruce Nature Trail (1.2 miles). Each offers a unique perspective of gorgeous land carpeted with dense flora from the plentiful precipitation.

QUINAULT RAIN FOREST

Lake Quinault and the surrounding Quinault Valley are the main features of this rain forest and offer a multitude of recreational activities for the whole family. Nearly 40 campsites at three separate campgrounds are available for those who want to stay. Visitors can relax in the natural beauty, but also beware that large animal sightings are common here. This rarely-talked-about rain forest is the only lowland forest of the bunch, but it still offers plenty of magic and chance encounters with wildlife. The best way to experience this beauty is to hike the trail that follows the Bogachiel River. The total trip is roughly 12 miles, but with only 400 feet of elevation gain, it’s doable for hikers of all levels, as long as you’re okay with a little solitude. QUEETS RAINFOREST

This rain forest is for advanced adventurers only. Considered one of the most remote places in the country, few people (but many bears) have found their way to the end of the trails. An intermediate trail, this path takes you up roughly 1,000 feet of elevation gain per mile, but the outlook at the top is well worth the grind. If you make the trip, you’ll be rewarded with an unparalleled glimpse of Lake Crescent, framed by famous nearby peaks such as Mount Ellinor. While the round trip is only four miles, be prepared for a healthy dose of adrenaline as the top requires some rope-assisted navigation.

You’ve probably seen these prominent peaks shining proudly beyond the Seattle skyline, but to stand atop them it takes a grueling 18 miles and a little bit of climbing expertise. However, it’s a perfectly approachable two-day backpacking trip for those who have bagged a bunch of day hikes. HERE’S HOW TO TURN ONE POTHOS INTO MANY:

1. On a mature vine, locate the section where a leaf meets the stem. Look just below the connection point for a small brown rough spot popping out of the stem. This is called a root node, and it will be the beginning of your new plant’s root system. 2. Use clean scissors to cut the vine right below the node so it is attached to your new cutting. Remove any leaves that are close to the node because we will be submerging this part in water. You can leave any leaves that will be out of the water on the vine. 3. Place your cutting in a clear glass vessel and fill it with water, ensuring the node stays submerged. Put your new propagation in a window or highly lit area. 4. Refill the vessel as needed to keep the node submerged for a few weeks, allowing the roots to grow.

Spring is here and it’s the perfect time to play with greenery, learn about plants and try something new. Propagation is the term used for creating new plants from a mature, fully formed plant. It is a simple, fun project that you and the whole family can do at home, while learning a bit about nature along the way. For this exercise, we’ll practice propagating a pothos, which is a vine-like plant you can find at all major hardware stores and garden centers. Pothos, or devil’s ivy, are known to be low-light tolerant and beginner-friendly houseplants.

5. Time to get dirty: once the plant’s roots have grown 1–2 inches, you can remove the cutting from the water and plant it into a pot with fresh soil. Note: Pothos can also grow and flourish in water for long periods of time. If you like the look of your new plant in water, where you can see the roots growing, feel free to leave it that way.
