WINTER Issue

A

s 2016 comes to a close, I am honored that so many of you continued to share your stories, photos and memories with Reflections this year. It’s never lost on me what a privilege it is to get to know the membership on a deeper level. That said, in 2017 there will be some changes with the magazine. First, this is my last official Editor’s Letter. What I have planned instead is to print a more dynamic conversation with Club management about the goings-on here and in the community. The magazine is also going up in page count. But that’s just the tip of iceberg. A few other changes include the addition of a community feature, which will highlight news bits from Eastside neighborhoods. There also will be a section dedicated to fitness gear reviews. Lastly, you will see a huge push from the magazine to get more members involved. That means I will be asking for more photos, more stories and more feedback from you about who and what you want to see in the pages. But before I get too ahead of myself, don’t forget to check out all the fun content in this Winter Issue. There are quite a few winter travel pieces (“The Marvels of Mammoth” on page 44 and “The Golden Touch” on page 62), but one of the most adventurous ideas might be found right in your own backyard with cryotherapy. Described as “an ice bath on steroids,” anyone with chronic pain, soreness or injuries might benefit from this new kind of cold therapy. Check out the whole story in the article “A Conversation about Cryotherapy” on page 56. There are also some great nutrition pieces meant to keep your family happy and healthy this winter. Whether you’re looking forward to hitting the slopes or just want to enjoy a warm and healthful meal with your family, I wish you a happy and healthy winter. See you in 2017.

CONTENTMENT

D

ear Friends, Over the past year, I have chatted with many of you about the nature of wellness and in particular about whole-person wellness. Whole-person wellness is the notion that because all parts of our being—body, mind and spirit—are interconnected, the wellness of each affects the wellness of the others. Together, they all contribute to how we feel about our state of wellbeing. Lately I have been thinking about another term in regard to well-being—contentment. Specifically, what is it and where does it come from? Most of us would say we want to feel content, but I think what we mean is not to be merely worry-free. We also want to feel an ongoing sense of joy and fulfillment. We want to feel that we are right with our families, our neighbors, our work, our health and also that things are going well for the people we care about. In my experience, a sense of contentment sometimes surprises us like an especially beautiful day, warming us for a while. This kind of contentment is lovely but all too fleeting. Certainly we should embrace and enjoy these moments when we’re given them, but where can we get a lasting sense of contentment? It turns out that achieving lasting contentment comes from actively pursuing it, not passively waiting for it. And it’s not just a matter of trying to add more to our schedules. Contentment starts by deciding what kind of person you want to be and then scheduling your life accordingly. If you find joy in being with your family, make time for that. If you feel calmer by working out, make it a priority. If you feel enriched through engagement with friends, set a date to get together with them. Here at the Bellevue Club we strive to provide a distinctive setting and unique opportunities for you to enjoy amazing family time, mindful health and wellness pursuits, and socializing with friends. Together let’s continue to create a growing and glowing community of wellness, a place to find contentment.

IF

you’re a fan of eggnog and over 21, you may want to make your way to Seattle this Christmas. Sun Liquor is a Capitol Hill lounge, distillery and bottle shop that has the perfect holiday fix for eggnog lovers. For the past 10 years, Christmas Eve and Christmas Day have been the only time of year to purchase their famous house-made Aged Egg Nog, and the tradition continues. They make their elixir with fine brandy, rum, bourbon, fresh eggs and cream, and then age the concoction for 30 days in the fridge. Each batch is prepared in small quantities for the best flavor. But you better beat the lines, the drink is sure to sell out within the two-day period. “Meticulous timing, patience, love and dedication is what makes this eggnog amazing,” says Erik Chapman, head distiller at Sun Liquor Distillery. This year they will sell 750 ml bottles in mid-December, but by the glass only on the 24th and 25th. “I’m not a religious person, but I do think there is a kind of magic that time of year, and a special handcrafted aged eggnog that is only available two days of the year seems to fit the vibe,” he says. Fortunately, this year you can get the delicacy in another form for the first time ever. This year, Sun Liquor and Snoqualmie Ice Cream are teaming up for a new seasonal flavor. Their eggnog custard will be available through December for its first holiday season release. Children can try this rich dessert too, since it is nonalcoholic. If you are busy for Christmas, you can have a taste of the magic with the custard version (but we recommend trying both!). Does holiday shopping stress you out? Do certain family members raise your blood pressure? Bellevue Club yoga instructor Tamara Weiss created the following vinyasa sequence to help you get through the busy season in peace. Designed to increase focus, patience, balance and serenity, Tamara suggests holding each pose for five deep breaths (or about 30 seconds). Enter into the sequence on the right leg and then repeat on the left. Also be sure to adequately warm up before attempting the series.

GETTING YOUR GAZE POINT Drishti (gaze point) is a single, unmoving point of concentration. Because wandering eyes can often cause distraction, the purpose of choosing one visual point is to strengthen focus and balance. Some practitioners use the point of their nose, but picking any point on the floor or wall in front of you will achieve the same thing.

Start standing with feet hip width. Step back on the right foot and raise your arms forward and up. Keeping your gaze on the fingertips, lower your hands down to chest height with your arms straight and palms pressed together. With your hips square, engage your core and keep the tailbone tucked. Hold for five breaths, with your drishti on your fingertips.

From the lunge, lift the right foot and hinge at the hips, bringing the chest forward to create a flat back. Stretch the arms backward. Engage the core, glutes and outer hip of the standing leg to keep your right leg lifted to the same height as your shoulders and head. Keep you shoulder blades away from the ears and hugging toward each other. Keep the drishti in front of you.

From standing splits, cross the raised leg behind the standing leg, with both knees bent. Sit hips backward, and hover off the floor. Press hands to the floor to engage your core and upper body. Keep your gaze forward. To exit the pose, uncross the legs and return your feet hip distance apart, keeping fingertips on the floor. Then return to standing with hands together at your chest. Pause for five breaths, then repeat sequence on the other leg.

Since the sun’s UVB rays are the best way to get your daily dose of vitamin D, consider purchasing an indoor UV-emitting light. A simple 15 minutes a day is enough to ensure your body is making enough of this important vitamin.

2. PURCHASE A HIGHQUALITY VITAMIN D SUPPLEMENT

The vitamin aisle in stores these days is almost as expansive as the cereal aisle, making selecting a supplement rather daunting. When purchasing a vitamin D supplement, make sure to get vitamin D3 (cholecalciferol) as opposed to D2. Vitamin D3 is the most active form of vitamin D, and the type our body naturally makes. Look for doses of at least 600IU.

3. FATTEN UP YOUR SUPPLEMENT

7. HAVE EGGS FOR BREAKFAST

You read that right! Consider taking your vitamin D3 supplement with a meal or snack that contains a good source of fat. Think avocados, olive oil, nuts and seeds. Vitamin D is a fat-soluble vitamin, meaning your body absorbs more of it when paired with fat. Since most vitamins do not come packaged in oil, taking your supplement with a good source of fat will help you get the most of your bottle.

4. ADD FISH TO THE MENU

Fish, specifically fatty fish, such as salmon, tuna and mackerel, are some of the best food sources of vitamin D. Just two servings a week can drastically increase your vitamin D intake in the winter.

5. INCREASE INTAKE OF VITAMIN D–FORTIFIED FOODS

Mushrooms are a great source of vitamin D and are in season year-round. Add some to an omelet or a stir-fry a few times a week.

Many foods are fortified with vitamin D, including milk and milk alternatives, yogurt, cereal and orange juice. To maximize the benefit, aim to incorporate varieties that contain fat, like full-fat Greek yogurt, or pair orange juice with a higher-fat breakfast of eggs and avocado toast.

Eggs are yet another good source of vitamin D. Remember not to discard the yolk, for it’s the part of the egg with the highest amounts of vitamin D. The yolk also contains important fat to aid in vitamin D absorption.

8. BE BOLD AND TRY LIVER

If you are up for trying new foods, liver, particularly beef and lamb liver, offers a great source of vitamin D. Ease into it by mixing with ground beef in spaghetti sauce, stews or soups.

9. BUDGET FOR A GOOD FISH OIL SUPPLEMENT

Quality fish oils are pricey, but can be found paired with vitamin D3. The fat from the fish oil acts as a perfect package for a vitamin D supplement and offers additional anti-inflammatory properties. The two-in-one supplement can help offset the sticker shock.

10. TAKE UP SKIING OR SNOWBOARDING

Altitude enhances the sun’s intensity, and can thus help our body’s natural production of vitamin D. This makes mountain sports a great way to enhance vitamin D production in the winter while also providing a fun workout. Remember, to reap the benefits, your skin must have open access to the sun.

BONE BROTH: How healthful is it? i n t e rv i e w b y k at h ry n s m i t h

Bone broth is often touted as a miracle to avert winter sniffles, among other maladies. But is it really a cure-all or just the latest nutritional fad? Wendy Caamano, registered dietitian, weighs in on the subject. Reflections magazine: What was your initial reaction when you heard about bone broth? Wendy Caamano: Honestly, I think I rolled my eyes the first time I heard about bone broth. It just felt like the new health trend or magic elixir du jour. The benefits of broth have always been known; hence, why chicken noodle soup is associated with being sick. So nothing has changed about the healing quality of various broths. RM: What is the greatest benefit of drinking bone broth? Why? WC: I think the greatest benefit is the additional protein offered from the bone that’s not typically found in other types of broth. While the body’s protein needs can be filled from other protein sources at the meal, protein included in the broth is bone broth’s unique feature.

I also think it has potential to enhance the immune system. There is limited research on chicken broth, specifically, reducing inflammation that can help reduce symptoms of upper respiratory infections like mucus production. Again, this is why chicken soup has always been associated with healing from colds and other ailments. RM: What other health benefits can it have? Can everyone expect the same results? WC: Aside from immune-boosting potential, the only other research specifically regarding bone broth is its use in sports recovery. Bone broth contains electrolytes (like sodium) and liquid (water) that can be helpful after intense exercise. >>>

RM: What are the most common mistakes when making bone broth? How do you know when it is done simmering to maximize benefits? WC: Most broths generally need to simmer between 8 and 24 hours to truly maximize the amount of nutrients within the broth. However, there is no research as to when that “magic” cutoff is. RM: Should consumers bother with a homemade batch always or is store-bought the way to go? WC: I personally believe part of the benefit of consuming bone broth is that it’s gotten people back into their kitchens, preparing whole-food-based recipes. This way you know exactly how it was prepared and with what quality ingredients. When grocery items are mass-produced for consumers, there is always the risk that quality has been sacrificed. If you purchase from a store, go for companies that are small and local as there is a greater chance that it’s smaller-batch prepared. RM: How frequently is often enough (or too much) to receive the benefits of bone broth? WC: Currently, there is not much clinical research specifically on the benefits of bone broth, and therefore there aren’t any specific dietary recommendations for consumption. Because bone broth is a food, as opposed to a supplement, there isn’t a concern about getting “too much” of any nutrients within the broth. Since there is no standard recipe for bone broth and no dietary recommendations through research, it’s hard to make a recommendation for how much. However, including homemade broth soups as part of your regular fall and winter repertoire will provide ample nutrition support. RM: What are some alternatives that provide similar benefits to bone broth consumption? WC: Eating a diet rich in leafy greens provides the amino acids needed to build collagen (one of the benefits claimed of bone broth); it is also denser in other key vitamins and minerals needed. Vegetable broth or a diet rich in vegetables can provide similar benefits. Therefore, if someone’s diet already includes a wealth of fresh fruits, vegetables, as well as quality protein sources (both meat and vegetarian sources), you have everything you need that’s included in a broth.

a guide to sourcing bones To get the most out of the broth, use the highest-quality ingredients possible. The bones, in particular, should come from properly cared for animals. 34 | december 2016 reflections


simple bone broth recipe INGREDIENTS • 4 pounds baked bones (preferably from grass-fed animals) • Water • 1-2 tablespoons apple cider vinegar • Salt OPTIONAL INGREDIENTS • 2 tablespoons peppercorn • Other herbs and spices • Onion • Carrot • Celery • Bay leaves DIRECTIONS • If bones are raw, heat oven to 400 degrees F. • Bake bones for 30 minutes. • Put baked bones in a slow cooker and fill with water until they are submerged. • Add apple cider vinegar and salt. • If you prefer to make a broth with vegetables, add preferred optional ingredients. • Bring to a boil, then reduce to a simmer for the remainder of the time. • Allow broth to cook for up to 24 hours for poultry or 48 hours for beef. • Remove from heat and let cool. Strain through a sieve. • Chill, and consume within the week.

THE MARVELS OF MAMMOTH MOUNTAIN

was a beautiful, bluebird spring day at Mammoth Mountain. Even though it was warm enough that I was comfortable in just a long-sleeve shirt and vest—no jacket necessary—the snow was still in great condition. And not only were my fledgling skiing skills feeling smooth, but I’d made friends on the mountain. Before lunch, an older gentleman and Mammoth regular had taken me under his wing and given me pointers on skiing with more confidence. Now, as the day was winding down, I’d been picked up by a group that thought I was ready to tackle more-challenging terrain.

In the Eastern Sierra region of California, Mammoth Mountain towers more than 11,000 feet above sea level, and its 3,500 skiable acres help it live up to its name—the resort really is mammoth. With what is traditionally one of North America’s longest ski seasons, it boasts 300 days of sunshine a year, making my cloudless experience the rule instead of the exception.

with the perfect weather, the fluffy snow, and the friendly BUT even locals, I felt like I’d gotten the wind knocked out of me as I

stood at the top of a black diamond run. I’d only learned to ski two months prior, and even though I’d fit seven resorts into my debut season, I was very much a beginner. I’d been led to believe I was heading toward a “challenging blue,” but as I stared down at a huge expanse of vertical terrain below me, I knew I wasn’t in intermediate territory anymore. At this point, there was no way to get off the mountain except to point my skis down. And ever so tentatively, I did just that.

I’m proud to say I made it to the bottom, unharmed, and only got lapped by the more-experienced members of my group once. I didn’t resort to taking my skis off and sliding down the hill on my behind like a comrade of mine did (but I totally understand why he went that route!), and so I consider it a win. And a lesson never to listen to sales guys who overestimate my skills.

MEMBER PROFILE

Bellevue Club member Bill Koefoed recounts the tale that took him from the bunny slopes to being a board member of the region's most important ski racing association.

Bill Koefoed admits he isn’t like most of the other board members on the Pacific Northwest Ski Association. He didn’t grow up skiing the local mountains. He never actually ski raced. He was late to the sport of skiing to say the least, and broke into it with very specific purpose. “I didn’t start skiing until after college. I met my wife, who is also from the Bay Area, and she was an avid skier. So I thought, I’ve got to learn how to ski or find a different girl,” Koefoed jokes. Now he and his whole family are immersed in ski racing. Koefoed currently sits as the treasurer of the Pacific Northwest Ski Association (PNSA), he has held the same position at Crystal Mountain Alpine Club (CMAC) and has two sons, Andy, 20, and Jack, 17, who ski race. Koefoed says he and his wife, Nancy, the girl he started skiing for, enjoyed many ski trips together, but that the lifestyle really took root after they had their sons. While the Koefoeds were living in the Bay Area and skiing mainly at Northstar Resort at Lake Tahoe, they put the boys in boots soon after they learned to walk. Their interest escalated from there. “Andy, he ski races at Colgate [University] now. But it all started when he saw kids racing at Northstar [Resort], and said, I want to do that,” Koefoed says. “Jack, the younger one, naturally got roped up in it too.” Twelve years ago the family moved to Seattle from California, and decided on Crystal Mountain as their new home mountain. “We had no idea what we were doing when we came here. We didn’t know anyone, especially in ski racing,” he says. “But the skiers here are such a wonderful, inclusive group of people.”

The Koefoeds subsequently spent a large amount of their free time skiing, traveling, competing and training. The boys went on to race at a high level, both making it to the Pacific Regional Championships. While Koefoed himself quickly became more adept at the sport and understanding what happens behind the scenes in the ski-racing world. “I got to be a much better skier by participating in the kids' ski racing, watching and learning and being around all these amazing skiers in the Northwest,” Koefoed says. Eventually, he was approached to lend his finance skills (his professional background is in corporate finance) to CMAC, and he jumped on the opportunity. That local connection evolved into his current position on PNSA, the regional governing body for ski racing in Oregon, Washington and northern Idaho. “That’s been really fun. You get to know other parents and people involved in all the local organizations at Snoqualmie, Stevens Pass—it’s a terrific organization,” Koefoed says. “The main job of the PSNA is to coordinate regional races. We set the calendar, make sure the coaches are coordinating amongst each other.

“We’re also part of the U.S. Ski and Snowboard Association, which in essence is the organization that determines who goes to the Olympics. So we participate in the alpine committee to set rules, for races regionally and nationally, and we’ve had good influence.” Koefoed further explains that the mission is to simply get more people involved. “The pendulum swung,” he says. “A few years ago it was all about creating the next Bode Miller. I think today it’s all about creating more skiers, kids all the way through masters. We want to create people who just love to ski and ski race." Bill encourages anyone interested to jump in. “It’s an amazing sport because it’s awesome for the family. We spent every weekend with our kids, and a lot of our best friends we met through skiing. You can ride up on a chair with somebody you’ve never met and ski with them the whole day,” Koefoed says. “Plus, we live in one of the most beautiful places in the world.” • For more information, visit pnsa.org.

A C O N VERSAT ION ABOU T C RYOTHERAPY The idea of cold therapy is not new. Athletes have been using ice baths for decades to reduce swelling, inflammation and soreness. Cryotherapy just speeds up the process by exposing your body to a chilly negative 250 degrees. Reflections magazine: Why did you open Icehouse Cryotherapy? Mark Hanson: So [Gail] played professional tennis on the circuit until about three years ago. Two years ago, we had a little boy. While she was pregnant, we were watching the U.S. Open, and some of the people she had beaten in the past were in the quarterfinals. She was like, ‘I want to start playing again.’ So we decided in February of that year that she’d start training again. We got a great fitness trainer, and he’s really tough physically. She was waking up in the morning barely able to walk, so I talked to a good friend of mine who is a recovery specialist. He said, ‘Have you tried cryotherapy?’ I had no idea what it was at the time, so I Googled it and there was one in Snohomish. We took a drive and both tried it. She loved it. Gail Hanson: At the time, I was dealing with general soreness and inflammation, the type of stiffness where you can’t function in the morning. And in the past, I had struggled with a lot of back pain, sciatica pain, and I found the cryotherapy helped me with both issues. I fell in love with it right away. Mark: So we started traveling 45 minutes twice a week. Then I thought, We’ve always had some extra space. So the three of us opened Icehouse Cryotherapy, which is the third one in Washington, the first open on the Eastside.

Reflections: And why did you jump on board? Filipp Pogostkin: I work and coach tennis with them. I’d never heard about it, but I’ve been through my fair share of injuries when I played [tennis] for Boise State. Two knee surgeries, with every sort of recovery method you can think of—Cortisone shots, prp [platelet-rich plasma] shots. They’d work for a bit and then stop working. They told me about cryotherapy and their thoughts, so I went and tried it and called them back immediately. Reflections: Can you feel the effects after just one session? Gail: The amazing thing about cryotherapy is you feel the effects of it right away. But for lasting effects, you have to do it pretty often, twice a week or so. It’s like anything, you have to keep it up. Filipp: I was sold so quickly because I’ve been through so many injuries and recoveries. As soon as I did it, I understood how it worked and how it fights inflammation. I’ve had the experience of ice baths, and this is just ice baths on steroids.

Reflections: Cold therapy is not a new concept; cryotherapy just takes it to an extreme level. Can you explain why that jump is so important? Mark: For me, it’s all about the time. I’ve taken ice baths after playing tournaments, and the feeling of an ice bath is something I really don’t like. This is such a short amount of time. It’s much better than sitting in a bath for 20, 30 minutes. Gail: Cryotherapy has such a great effect because the extreme temperature actually constricts your blood vessels to a degree where there is restricted blood flow to certain areas. Once you step out it flushes fresh blood through the extremities. It basically filters blood through and helps your body heal itself. It’s not magical; it’ll never heal a broken ankle, but it will promote your body to do the healing. Filipp: One of the great things about it is the practicality. This is opening up ice baths to the average person. Everybody does all these great activities—CrossFit, tennis, soccer, running—they do these activities, but don’t understand how damaging these activities are to your body. Professional athletes go through it all the time. They get done with a workout, then stretching, ice baths, all this stuff to make sure they can do that same thing the next day. But the average person doesn’t do that. It’s just not practical, so they’ll go through their activity and then be sore for the next three to four days. But with cryotherapy, the average person has the option to go in, recover and do the same activity the next day.

“The really interesting thing is everyone has a different response.” Reflections: Do any of you have a personal story of the impact it’s made? Gail: With my first son, I gained almost 80 pounds. When I started training again, I lost it in six months, just to show you how hard I was pushing myself training. I was able to push my body further than ever before without having to suffer the consequences of soreness and muscle pain, injuries, fatigue. It’s been extremely beneficial for me. Reflections: Speaking of weight loss, cryotherapy is sometimes touted as a treatment that can assist with it. Is that accurate? Gail: We don’t recommend it for weight loss specifically. In certain studies it has been shown that you can burn up to 800 calories the day of the treatment because your body is essentially going into hypothermia, so it does everything it can to heat back up. But everybody is different, so we’re not trying to sell it as a weight loss tool. We just want people to feel good. Reflections: Why do you think cryotherapy is having a moment in the spotlight? Mark: A lot of professional athletes have been using it for even longer than they’ve been saying. I know the Dallas Mavericks have about 10 of these. They are using it before and after practices, and a lot of boxers and football players use it. So when you start seeing people of the highest level utilizing things like this you have to look at it seriously. bellevue club december 2016 | 59

Reflections: How would you describe the sensations during and after the treatment?

Reflections: Is there anyone who absolutely should not try this?

Mark: The really interesting thing is everyone has a different response. I don’t think anyone’s come in and said they don’t feel different at all. For me, I feel a huge adrenaline rush like I’ve had five coffees. A lot of people lately say it feels like they’ve had a massage—that their muscles feel relaxed. We have a lady suffering from migraines, or tension headaches, and she swears by it. It’s not the cureall but it does a lot of good things.

Gail: Anyone with any kind of heart issues because it deals with circulation and constriction of the blood vessels. So anyone with heart palpitations, high blood pressure. Also pregnant women. But otherwise, there are no limitations.

Filipp: Again, it pumps blood through your body, so it’s a natural healing process for inflammation and anything related to circulation. And everyone will feel something different because everybody is hurting somewhere in a different way. Mark: We’ve all had different reactions while being in the machine. When I’m in it I have almost an asthmatic reaction, like when I dive into a cold swimming pool. I feel a little bit like that for the first 30 seconds, and then I’m fine. We had defensive line coach Travis Jones in, and he just stood there, looking at me. And I said, ‘You can move around if you want to warm up a little.’ And he said, ‘It’s colder in Green Bay, this is nothing.’

Reflections: Any last thoughts on cryotherapy? Filipp: Just a reminder that it increases the overall quality of life. I think people forget what it’s like to be without inflammation. Even if you’re just sitting at a desk in one position all day long, it bothers the lower back. Or older people struggling with carpal tunnel or arthritis. It reminds people what it’s like to be your normal self. Too many people attach inflammation to workouts. But there are all types of inflammation that can be helped.
