HOW OWNING A DOG CAN IMPROVE YOUR HEALTH Okay, kids, this one’s for you. While your mom and dad are distracted, let’s get you that puppy of your dreams. Here are four points to help convince Mom and Dad that a playful pet is good for your well-being.

14 | july/aug 2021 reflections

READING CORNER

1. LONGER LIFE SPANS

Believe it or not, a study in Sweden proved that people who owned a dog were less likely to die from cardiovascular disease and other causes even when age, body mass and socioeconomic status were considered. Those who lived with a dog had a 33 percent lower risk of death than those who didn’t.

2. REDU CES STRESS

We’re seeing dogs in airports, at schools and in our offices for one very good reason: canine companions are known to lower stress levels. One study of 246 college students found that those who had an opportunity to snuggle a pup were feeling happier and less stressed after. More impressively, that same group of students was still experiencing lower stress levels and fewer negative thoughts 10 hours later.

3. IMPR OVES S OCIAL SKILLS

As adults, it can be hard to make new friends. Studies show that children and adults who live in colder climates or who move to different cities can often feel isolated and alone. Researchers have found that about 40 percent of people who have dogs make friends more easily than those who don’t.

4. PREVENTS ALLER GIES

Recent research has highlighted a big misconception: having dogs and cats around the house can actually lower your child’s chance of becoming allergic to pets. According to the Journal of Allergy and Clinical immunology, studies show that up to 33 percent of kids will benefit from having a dog in their home and actually build a stronger immune system than children who don’t.

WHEN IT COMES TO SUNSHINE AND SKIN CARE, SUNSCREEN DOMINATES THE CONVERSATION—AS IT SHOULD. BUT THERE IS ANOTHER DARLING THAT DERMATOLOGISTS AND AESTHETICIANS AGREE CAN BE A SECRET WEAPON AGAINST UV DAMAGE AND AGE-RELATED ISSUES. HERE’S A QUICK RUNDOWN OF HOW TO INCORPORATE VITAMIN C INTO YOUR DAILY ROUTINE AND WHY YOU SHOULD.

WHAT IS VITAMIN C? Vitamin C is an antioxidant, meaning it protects your cells against harmful free radicals. These free radicals, mostly caused by UV exposure and pollution, can encourage premature aging, wrinkles, uneven skin tone and hyperpigmentation. HOW DOES IT WORK?

Because of its acidic nature, vitamin C triggers a healing response when applied on the skin. The natural restorative mechanism of the skin is to produce collagen and elastin, which will make it appear smoother.

HOW CAN IT HELP?

Vitamin C can help correct brown spots, dull or dry skin, fine lines and acne scars. It can be used as a preventative measure against wrinkles or sunspots. People with extra-sensitive skin should probably steer clear of vitamin C, although there are other products for these folks too. HOW TO USE IT?

There are dozens of products on the market boasting the benefits of topical vitamin C, but be sure to look for the ones containing ascorbic acid (sometimes listed as L-ascorbic acid). The Spa at Bellevue Club carries the SkinCeuticals vitamin C series, which includes C E Ferulic, Silymarin CF (for acne-prone skin) and Phloretin CF. You can also double up protection with Physical Fusion SPF or relax with the Vitamin C facial.

To find out more about these vitamin C–based products and services, email spa@bellevueclub.com.

COOKI NG WI T H CHE F Local celebrity chef Shota Nakajima returned to TV for the current season of Bravo’s Top Chef. But more importantly, the past year has challenged him to become a pioneer of change for the restaurant industry.

F

SH O

or one of Seattle’s most notable chefs, Shota Nakajima, the past year was filled with extremely high highs and equally low lows.

The obvious low was the closure of his popular Japanese restaurant, Adana. Like so many others in the hospitality industry, it couldn’t weather the storm of uncertainty that COVID brought. “It broke me down completely. I was at a standstill.”

Nakajima was forced to let go of more than 30 employees, many who had worked with him for years. “They understood it wasn’t my fault, but to me execution is the only thing that matters. I felt I failed pretty bad. Mentally, I took it hard, not having a backup plan to support people’s livelihoods—that broke my heart in a way I could have never predicted,” he says.

fter the closure, for three months straight he stopped talking to friends and family, logged off social media, drank a little too much and then left the city with his dog, Dodger, to ramble through the mountains alone. It was the only way he knew how to process the devastating loss. During that time, he had an epiphany: “The restaurant industry is broken.” He thought a lot about how high employee turnover rates, stressful hours and revolving doors of talent were the norm, and he couldn’t find any peace with it. He realized that if he returned, he would have to do things differently.

22 |

july/aug 2021 reflections

Luckily, the highs were right around the corner. Nakajima got a call from Bravo asking him to appear on the Portland-based show Top Chef. He quit drinking and jumped at the chance to start filming the series in September 2020. Quickly, he became one of the most beloved contestants, winning over viewers, fellow chefs and judges with his laid-back demeanor and raw culinary talent. “I think through Top Chef I got way better at cooking,” Nakajima says. “I’m able to put myself on the spot now and think quickly. I also just learned so much from everyone there. I took notes constantly.”

QUICK FIRE

with Chef Shota

FAVORITE COMFORT FOOD:

Rice or pickles.

GO-TO MEAL OUT:

Dim sum, all day every day. I’m very impatient, and I want to order, try everything and pay the bill quickly. MOST OVERRATED INGREDIENT OR TECHNIQUE:

Food that takes too long. I just want my food or my drink, but again, that’s because I’m a bit impatient. MOST UNDERRATED TECHNIQUE:

Being relentless.

YOUR DEFINITION OF SUCCESS:

Building a good company culture, like Netflix, with a healthy mix of freedom and responsibility. I value creativity a lot, and I’m a firm believer in keeping good people on board. ULTIMATE PRIVATE-DINNER PARTY GUESTS:

My mom’s mom, because she passed away when I was young, and I wish I could have cooked for her and with her. And Oda Nobunaga; he was an old Japanese warlord. I love the way he did things and the things he changed in Japan. I’d love to cook for him and get yelled at by him. INSPIRATION SOURCE:

The woods and people— friends and chefs I know.

A

t the time of publication, the final episodes of the season have yet to air, and he couldn’t say how far he got in the competition. But now equipped with the lessons he learned from being on the show and the perspective he gained from time spent struggling with his perceived failure, he opened his latest venture, Taku, in May on Capitol Hill to a line that wrapped around the building. The menu is built from his take on karaage, Japanese fried chicken, and he has plans to expand it in the near future, when the scene comes back to life. The design of the restaurant—with floor-to-ceiling comic book art and graffiti done by himself and other local artists—is just as interesting as the food. Everything about it was done with the simple intention to make people smile. “I think I’m good at having fun, cooking good food and putting out energy that changes the conversation in a positive way,” he says. Nakajima also wants to pioneer a new way to run a restaurant and brand. He is currently doing a host of pop-up and charitable formal events around the city as well as creating tons of content to help get people excited about the culinary world again. You can follow his YouTube channel, MakeUmami, for recipes, cooking tips and plenty of chuckles, or follow him on Instagram (@chefshota) for upcoming events and dinners. “Before all of this I just wanted to be the best chef—now I want to be the best leader,” Nakajima says. “My main goal is building a fair, responsible company that treats people right. We have a responsibility to take care of our employees, and to think about the whole industry differently.”

Going Green BI-POLAR IONIZED HVAC SYSTEM

SOLAR PANEL SYSTEM

We installed a powerful bi-polar ionized air filtration HVAC system to increase the safety of our guests. Ion technology removes airborne particles (dust, dander, pollen, smoke, odors, bacteria and viruses) from the air, making it healthier to breathe.

For added efficiency that reduces our carbon footprint, solar panels are now in place on the roof of the property. In total, they reduce the club and hotel’s overall electrical consumption by more than 35 percent.

RECLAIMED AND RECYCLED WOOD

ELECTRICAL VEHICLE CHARGERS

Urban Hardwoods provided salvaged wood from local Pacific Northwest neighborhoods that we used in the corridors and rooms. Each piece of wood came with a tag identifying exactly where it came from.

Complimentary electrical vehicle charging stations were added in the parking garage to support guests who drive hybrid and electric vehicles. They are easy to use and support most makes and models.

Tendrils restaurant is the primary place to eat, and it has a menu inspired by the local gardens that includes a wide range of fresh fare for guests. With a new look and executive chef, Dezmon Campos, you can enjoy farm-to-table-inspired breakfast, lunch or dinner experiences while watching the sun move over the gorge. Naturally, Cave B is the featured wine, and you can try all the varietals while overlooking the actual vines. If you want to keep sipping, pop into the wine tasting room for a few more glasses. Apart from camping sites, the options for staying along this stretch of the Columbia River Gorge are extremely limited. SageCliffe is the premier property to book if you plan on visiting the famed Gorge Amphitheatre for a show, as it’s in walking distance. Some of the artists that perform at the venue are also known to stay and play at the property and have certainly left their mark.

TRY TREASURE HUNTING

Did you know there are hundreds of treasures (geocaches) hidden all over the greater Seattle area? Geocaching is a worldwide outdoor recreational activity that involves hunting for treasures in your city. Most geocaches are small boxes with a log of visitors and treats. Visit geocaching.com and look for stashes near you. VENTURE OUTSIDE WITH THE HELP OF A VIDEO GAME

The creators of Pokémon Go have given parents a tool to mix up their kids’ screen dependence. Pokémon Go is an on-the-go game that entices users to travel around their city, collect Pokémon and participate in challenges with others in the area. All you need is a cell phone and some good walking shoes. Visit pokemongolive.com/en/ for more information. ADD A STORY OR SOME ART TO THE MIX

Summer is right around the corner, and with the warm weather comes more opportunities to get out of the house with the whole family.

Seattle neighborhoods are rife with Little Free Libraries and even some Little Free Art Galleries just waiting for you to discover and explore on a nearby street. Each Little Free Library contains books to be shared (and Art Galleries contain tiny art) with others who visit. The library organization’s tagline is “Take a book, share a book,” building community by inspiring reading for all. Visit littlefreelibrary.org to learn more.
