THE BASICS OF FLOUR Flour is a powder of ground raw grains, roots, beans, nuts or seeds. With about 400 calories per cup, 13 grams of fiber and three grams of fat, it’s not one of the popular superfoods, but it’s in the majority of prepackaged products we consume. That being said, how much do you really know about flour?

FUN FLOUR FACTS • Bread is a staple across many cultures throughout history; flour dates back to 6000 BC. • March is national flour month.

FLOUR VARIATIONS The biggest difference in types of flours is the protein content; different amounts of protein give each type its particular texture and weight. ALL-PURPOSE FLOUR has an average protein content,

making it versatile. It can be used in everything from cookies to gravy and breads.

CAKE FLOUR has the lowest protein content, making it very fine and soft. Cake flour also undergoes a unique bleaching and sifting process, which creates a powdered sugar-like appearance and texture. PASTRY FLOUR lands between all-purpose flour and

cake flour when it comes to protein and texture. It has a slightly higher gluten content as well, which aids in its elasticity (key when folding puff pastry and pie crusts).

• Bleached flour isn’t harmful; the process simply makes the flour whiter.

Finally, the very inner section of the kernel is the germ, which mostly consists of fats. Only the endosperm is used for white flours, but all parts are used in wheat flour.

OFF-SEASON SKIERG WORKOUTS THREE SKIERG SETS Ski season in the Pacific Northwest is officially over, but that doesn’t mean you have to lose the gains you made on the slopes. The SkiErg is a great tool to prep for winter; however, it can also help you stay in shape over the summer while resorts are closed. Below is a guide to using the SkiErg during off-season.

Start each workout with a five to 10-minute warm-up at 30 to 40 percent effort. THE INTERVAL SET — 40 seconds fast, 20 seconds slow. Repeat 10 sets. THE CARDIO SET — Three minutes at 70 percent effort, one minute slow. Repeat three to four sets. THE PYRAMID SET — Perform one-, two-, three- and four-minute intervals at increasing difficulty, then back down through three-, two-, one-minute intervals as decreasing difficulty.

PLATFORM — Plant your feet roughly 12 inches apart on the platform, facing forward and parallel. Drive through the heels during the entirety of the movement. HANDLES — Firmly grip the handles overhead and pull down to your hip points. WHEEL — Adjust the resistance and difficulty on a scale of one to 10.

A choose-your-ownadventure for crafting the perfect drops for you The use of bitters—herbs, spices, flowers, barks, fruits, nuts and more that have been soaked in spirits—has been around for centuries. The purpose is twofold. First, a few drops of bitters act as a digestif, which stimulates the production of enzymes to aid in digesting fatty food and supporting your detoxifying organs (the liver, kidneys, etc.). Traditionally, a few drops are taken directly on the tongue prior to eating, or in a cocktail or water after a meal is finished. The other primary use is for mixing with mocktails or cocktails. Bitters are often found mixed with whiskey, vodka or brandy, but there are all kinds of inventive craft cocktails that feature their own homemade bitters recipe. Bartenders and cocktail connoisseurs often refer to bitters as the salt and pepper or seasoning for a drink.

Because the recipes for bitters are relatively endless, they are a fun project to try at home. You can customize your version based on your unique palate and preferences. On the right is a mix and match of options, so try a few different flavors and see what you like best.

A SIMPLE BITTERS RECIPE Start with a 16-ounce glass canning jar. Fill the jar a third to half of the way with your aromatics of choice. Add a splash of sweetener if you want. Fill all but one inch of the top with water, and seal it tightly. For best results, shake the jar once a day for one to three weeks, depending on how strong you want it. When it’s ready, strain the water and pour it into smaller bottles with a dropper.

CAVIAR CHEAT SHEET Interested—but intimidated by— caviar? We’ve got you covered. Dmitriy Shur is the vice president of Awers Caviar, the largest producer of caviar on the West Coast. The longtime Bellevue local talked with Reflections about the different styles and traditions of caviar, plus how and when he prefers to enjoy it. In May, Awers is partnering with The Bellevue Club for a tasting event. If you’re new to caviar, enjoy this brief cheat sheet and get prepared for a fun evening. KINDS OF CAVIAR

“The different types of caviar are named after their appearance,” Shur says. The most common are red and black—and here’s what distinguishes the two. Red caviar comes from salmon. Locally, it’s harvested from pink, chum, coho and sockeye varieties. Red caviar typically has medium to larger eggs, a bolder taste and lower price point. It’s known for adding a pop of texture. Black caviar is harvested from sturgeon, like osetra and hackleback, and bowfin. This variety has a mild, buttery taste and smaller grain, and is considered a luxury item. Shur says, “Everyone likes black caviar, even those new to caviar. I don’t know anyone who doesn’t like the taste.”

It’s not as salty as most people think; most caviar has about 3.5 percent salinity. The price has changed a lot. Ten years ago, it was almost tenfold more expensive. It is illegal to import beluga caviar into the US. Kaluga and osetra taste similar, though.

THREE WAYS TO ENJOY CAVIAR

1. The most traditional way of consuming caviar is to take a slice of crispy baguette and spread a light layer of unsalted butter on one side. Add a layer of caviar on top and enjoy. 2. For an updated modern twist, place mashed or thinly sliced avocado on toast of your choice then add a layer of red or black caviar. 3. For a special occasion, crepe-style blini are often paired with champagne and used on special occasions—especially New Year’s Eve. Try the recipe from Awers below.

CREPES WITH RED CAVIAR AND SOUR CREAM INGREDIENTS

• 2 eggs • Pinch of salt • 1/2 cup flour • 3/4 cup milk (whole, low-fat or nonfat) • Butter or margarine to grease the pan DIRECTIONS

Beat the eggs well and combine with the salt and flour. Mix to a creamy consistency. Add the milk gradually and mix until smooth. If lumps remain, strain after mixing. Set mixture aside, or refrigerate. (May be prepared one to two days in advance and kept in the refrigerator until ready to use. Return mixture to room temperature and mix well before making blini.) To prepare the blini, grease a 6-inch skillet. Heat skillet over medium-high. Scoop about three tablespoons of the batter into a ladle or pitcher and add to the skillet. Tilt and rotate the skillet so the batter is lightly and evenly spread over the bottom of the pan. Heat until the edges start browning and come away from the pan easily and the top is set and dry. Turn the blini onto a towel, uncooked side down. Repeat process to cook more blini, lightly re-greasing the skillet every two to three blini. Add milk if the mixture seems too thick. To serve, arrange warm blini on a tray lined with a starched linen napkin. Put a small dollop of sour cream in the center of each, then place a few grains of caviar atop the sour cream.

liina, first digested the statistics about spirulina’s nutritional content they were shocked. After all, how much value can a simple blue green algae add to someone’s diet? “One tablespoon of spirulina powder is equivalent to eating six and a half pounds of fruits and veggies from a vitamins and minerals perspective, one full glass of milk from a protein perspective, and one full serving of fish from an omega fatty acids perspective,” Steinberg says. “It’s one of the most nutritionally dense foods on the planet.” They were further surprised to learn there weren’t many products— especially given its impressive numbers—on the market that gave consumers an easy and delicious way to incorporate it into their lifestyle.

“Why does this not exist, why is it not out there yet?” they questioned. During their research, they discovered one more remarkable characteristic: Spirulina is incredibly sustainable. “Spirulina provides the same quality and volume of protein as beef, but it requires 200 times less land and 215 times less water,” Steinberg says. “It’s also 400 times more efficient in removing caron dioxide from the atmosphere as trees.”

“We realized, it’s not just a product. It’s bigger than that,” Patrick says. “It’s a mission.” They were all in. As longtime athletes and outdoor enthusiasts, this was an idea that checked all the boxes. So, a few years ago, Patrick and Steinberg quit their day jobs to put all their energy into creating liina. "liina wants to be the spirulina brand on the market. Our aim is to one day have all things spirulina be synonymous with liina," Steinberg says. They made a trip to Mexico City, where the Aztecs cultivated algae for centuries—the home to spirulina. “Mexico City was originally under water and the Aztecs figured out how to cultivate spirulina and use it on a daily basis,” Patrick says. “It was the primary food source.”

S

isters-in-law Ashley and Joci Besecker had the idea for Premier Catch, an ocean-to-table seafood company, for decades. “We thought and joked about it for 20 years,” Joci says. But it wasn’t until the pandemic that the idea fully coalesced. With so many families stuck at home, the need for access to quality seafood delivery and purchasing grew exponentially, and the Beseckers thought they might be exactly the right people to fill the need. After all, the women were in a rare position. Years prior, when Ashley and Joci married their respective husbands, Tyler and Jeff, they joined a Pacific Northwest seafood dynasty. Their father-in-law, Dana, started the Dana F. Besecker Company in the 1980s, and it still provides millions of pounds of high-quality seafood to 54 countries today. “This was our time to get the product we have exclusive access to into other people’s homes,” Joci says. “Using our unique perspective and expertise to create something new.”

And both bring different skillsets to the table. Ashley is a registered dietitian and nutritional genetics specialist to professional athletes, and Joci is a self-taught chef for her large family. Plus, they both are busy mothers—meaning they understand the benefits of reliable access to wild seafood, no matter the age or lifestyle. “Basically, we are the consumers,” Ashley says. “And we thought about that every step of the way.” As the vision for Premier Catch grew, however, they realized they wanted to deliver something more than just a product. They wanted to create a complete lifestyle brand with the end goal of making it more convenient—and fun—for Americans to eat more wild seafood. “It’s really rare a company is vertically integrated like this. We own a vessel, have relationships with fisherman, and we know the wholesale company we purchase directly from,” Ashley says. “We have access to the best product and control over everything. But we also have a different perspective on how we can help people incorporate more fish into their diets.”

ALL ABOUT OMEGA 3s By now, everyone has heard that fish is good for you. But why? Mostly its health benefits come from omega 3 fatty acids. Here’s a breakdown of why that matters to you. “Omega 3s are the closest thing to a secret sauce that we have, and the best way to get that is from fish,” Ashley says. Healthy fatty acids are known to fight systematic inflammation in the heart, brain, gut, and more. Fish are one of the best sources of omega 3s because it’s extremely bioavailable in that form. Omega 3s come from the algae they eat, and it becomes concentrated in the fish. Omega 3s can help prevent, stop progression, or, in some instances, reverse issues in the body. There is a difference in quality. You should be super picky about the source. Ashley suggests everyone get one gram of omega 3s a day. “If you eat king salmon twice a week, that covers it. For the smaller fish, three times a week,” she says. Fish also contain trace minerals, such as selenium, iron, phosphorus and magnesium. “The biggest misconception with eating fish is the mercury,” Ashley says. “Yes, there’s mercury in fish, but there’s also a ton of selenium and selenium balances the mercury. JOCI’S TIPS FOR COOKING AND EATING SEAFOOD You just don’t want to overcook fish. Err on the side of undercooking. Overcooking makes it dry, plus it looses flavor, luster and nutritional value. • When it comes to getting kids to eat more seafood, sweeten the deal. Sauces are not scary. You do not have to serve salmon with just lemon and pepper. Add some teriyaki, BBQ sauce or honey. Try crab dipped in butter. All of it is awesome. • You can cook it directly from frozen, put it in the air fryer or bake it. • If you want to pan-fry it, use the quick thaw method. Fill a bowl with cold water and let the fish soak for 20 minutes.

irst, the Beseckers knew the fish had to be blast frozen on the boat or dockside. Blast freezing is the process of quickly getting the fresh fish to -35 degree F, which kills the parasites and maintains the nutritional integrity of the fish. It’s what makes fish “sushi and sashimi grade.” Basically, it ensures the highest quality possible. The other non-negotiables were that the fish be deboned at the time of freezing and portioned out for packaging. Through Premier Catch, you can purchase a whole fillet or a single serving, depending on your family’s unique needs. “Our biggest mission is to make eating wild premium seafood easy,” Ashley says. The next big step was to get a mobile freezer truck, they affectionately named Saucy, to set up pop-up events at local wineries and shopping areas. They immediately gained a loyal local following, and in 2021, began an online service.

Now, two years in business, they expanded to offer delivery to all 50 states, plus live events, as well as plenty of online content to help educate consumers on the benefits of eating fish and how to do it so it tastes good to everyone. “The seafood industry is a rough and gruff, traditionally male-centered place. We’re here to find the beauty in seafood. We see things differently and find what is missing,” Joci says. One of the ways they are helping to spread the word is by being involved with the National Seafood Council Task Force and Expert Working Group. “As of now, there is no such thing as the national Seafood Council. Which is crazy. ..How Hormones Got a Bad RaP.. Sandra Rice, MD, an internal medicine specialist who retired from Overlake Clinics in December 2021, is a rebel with a cause—and that cause is the well-being of women as they transition from perimenopause to menopause. She believes most women have been misguided about hormone replacement therapy, so she wrote a book about it. You can find The Estrogen Question: Know Before You Say No to HRT on Amazon to check out her scientifically backed arguments. In 2002, two very important things coincidentally occurred in Dr. Rice’s life. The first was the implementation of a Women’s Health Initiative (WHI) study concerning the use of hormone replacement therapy. The study condemned the use of exogenous estrogen replacement therapies (mostly prescribed to mitigate menopausal symptoms), proclaiming that they increased the risk of breast cancer, heart attacks and strokes. Overall, it lambasted hormones as harmful therapies and pointed fingers at the doctors who used them. Being the only study of its kind at the time, it made international news headlines. Rice says 80 percent of women stopped taking hormones due to the study. As one of very few female internal medicine specialists in Bellevue at the time, Rice had prescribed HRTs to hundreds of women. After all, it was widely accepted as the standard of care for women in perimenopause and menopause for a long time.

The other significant thing happening in her life was that she herself was beginning to enter menopause, which has been known to cause all kinds of uncomfortable side effects and some serious health concerns—including bone loss, weakening of the muscles, high blood sugar and more. She knew firsthand that estrogen was helping her through this challenging time and significantly increasing her quality of life. She saw the same for so many of her patients. So she was at a crossroads. Was she to heed the advice of the biggest women’s study known to date, or was she to question it? She chose the latter. >>>

REFLECTIONS MAGAZINE: WHY DID YOU QUESTION THE FINDINGS OF THAT STUDY? DR. SANDRA RICE: It didn’t make sense to me to throw it all out. I really questioned it.

I was a little bit of a renegade and stayed on hormones and kept most of my patients on estrogen. I knew I was walking a fine line, but some of the things being said just didn’t make sense to me.

RM: WHAT DID YOU FIND WHEN YOU DUG DEEPER INTO THE STUDY? SR: Most importantly, the average age of the women in the study was 62, and they

hadn’t been on hormones for 10, 15, 20 years and beyond, after their bodies changed. That immediately made me question it. RM: ANYTHING ELSE? SR: Yes, the link to breast cancer was

misrepresented. Technically, there were more incidents of breast cancer. Of the 10,000 women taking hormones, there were 58 cases of breast cancer reported. There were 50 women who got breast cancer who didn’t take the hormones, so only eight more women got it. And, to be honest, they most likely had more predispositions at the start. Estrogen does affect the breast tissue, but it doesn’t cause cancer. RM: SO, YOU'RE SAYING THAT THE BENEFITS OF HRT OUTWEIGH THE RISKS? SR: I believe hormones cause far more

benefits than risks. But now it has this reputation for wreaking havoc on women’s health.

RM: WHAT ARE THOSE BENEFITS? SR: First and foremost, it alleviates the symptoms that can be very disruptive to a

woman’s life, making them miserable. On top of that, it’s good for the bones, keeps cholesterol down, improves blood sugar regulation, helps produce collagen in the skin, keeps muscles from degrading and helps with sexual function.

RM: AND YOU’VE SEEN THIS FIRSTHAND? SR: Yes, absolutely. I’ve been following some women for 40 years and they undoubtedly

look better, feel better. Same goes for myself.

RM: AND THERE HASN’T BEEN ANY MAJOR FOLLOW-UP STUDIES IN THE TWO DECADES SINCE THE ORIGINAL WHI STUDY? SR: Not really. RM: WHY DO YOU THINK THAT IS? SR: A lot of the money—it’s extremely expensive to conduct these studies—comes

from pharmaceutical development, and hormones are dirt cheap. All they can patent is the delivery systems, so they aren’t going to do huge studies because they can’t make money. I really believe it has a lot to do with financial barriers.

RM: THAT MUST BE VERY FRUSTRATING FOR YOU. SR: Yeah, it is. That’s why it took me three years to

write the book. I feel really good about it, though. I wanted it to be a credible book. I didn’t want it to be anecdotal at all. It needed to be all about the actual science. It’s been out for a few years now, and everything in it has been reinforced and substantiated. It’s no surprise; [HRT] will help your symptoms, help your bones. The chance of breast cancer is so low. It’s not nothing, but it’s very low. RM: ARE MORE PHYSICIANS AND WOMEN CATCHING ON? SR: Right now, 20 percent of women in menopause

take them. Things are changing, but slowly. It’s not shifting at a very fast scale.

Ellensburg has a small-town feel, with some fabulous leisure activities. At the Alenté Spa and Salon, they use Aveda products and offer a multitude of services for a day of pampering. They do lashes, massages, hair and nail care. Ellensburg is close to countless farms, ranches and vineyards that offer wine (and beer) tours and tastings. There are five different wineries: Brix Wine Bar, Ellensburg Canyon Winery, Gard Vintners, the Ellensburg Distillery and Thrall & Dodge Winery. While there are many wine tours and tastings to choose from, there is only one brewery that stands out. Iron Horse Brewery is known for its signature beer, Irish Death; its headquarters and pub is dedicated to serving the local beer fan base. It is the sixthlargest producer of beer in Washington State and definitely worth a visit.

When you drive into town, you will notice there are a lot of cabins that have quilts on them, some visible from the I-90 freeway. A certain map leads you in and out of Ellensburg detailing multiple barns and different quilts. It is called the Barn Quilt Trail and it’s a first in Washington State, with over 50 quilts presented. It starts in Roslyn and goes as far east as the outer limits of Kittitas. A self-guided tour, it can be as long or short as you’d like. Outdoors enthusiasts can enjoy the Irene Rinehart Riverfront Park, which gives stunning forest views around the Yakima River. With a total trail length of 2.2 miles, it is a great place for a bicycle ride, jog or walk in nature. There is also a longer trail that connects in Ellensburg. Formally known as the Iron Horse Trail, it is now called the Palouse to Cascades State Park Trail. Starting in Ellensburg, you can travel east to North Bend or west to the Idaho State border.

Tricks and Mantras for Turning Anxiety into Excitement Have you found yourself saying to yourself or others, “Ugh, I have to go to work” or “I don’t want to go to that social function,” followed by whining or a grumpy demeanor? Or perhaps another thing was added to the to-do list and you are feeling anxious and overwhelmed. One of the best pieces of advice I ever received was to turn your anxiety into excitement. Here are some tips!

1.

It is easy to get bogged down with a negative mindset, so here are some ways to turn that frown upside down.

VOICE THE POSITIVE.

Focus on something small that excites you. Maybe it is seeing a friend or coworker, or even treating yourself to a snack. Focusing on small things can often make a big difference. “I don’t want to go to [insert place], but still I get to [insert something positive].” Doing this helps bring joy to any situation.

2.

TAKE ACTION.

What makes you feel refreshed? You know yourself best. Whether it is making a to-do list, exercising or creating little rewards for yourself when you complete a task, these moments of anxiety can be overcome by finding actions to work around it.

3.

PRACTICE SELF-LOVE.

Putting sticky notes on your bathroom mirror or something you see every morning can implement a positive mindset. Some of my favorites are: “You can do this,” “You’re doing amazing” or “She believed she could, so she did.”

4.

FOCUS ON THE BREATH.

The body does this naturally without thinking; however, try focusing on it. Try inhaling for a few seconds and slowly exhaling for the same number of seconds. You can also focus on your rib cage contracting and expanding or on how your chest moves up and down.
