WALT Wines Artfully Crafting Top-Tier Chardonnay in Sonoma County

Plus, Pick a Pack of Perfect Pairings By Melissa Vogt

The Ethos of WALT Wines Kathryn Walt Hall, proprietor of HALL Wines, WALT Wines and BACA Wines, is no stranger to the adage that great wine starts in the vineyard. At WALT, Kathryn’s vision was inspired by and in honor of her parents’ love for their vineyards. In this collection and under Kathryn’s leadership, WALT has become a premier Pinot Noir and Chardonnay house, crafting beautiful expressions of these beloved Burgundian varietals from California’s top vineyard sites.

BOB’S RANCH ESTATE VINEYARD, SONOMA COAST AVA

14

The WALT collection is made with noninterventionist winemaking, harkening to an Old World style of winemaking that rightly honors the purity of site and its expression in grapes. For their Chardonnay, the style was inspired by the delicate-yet-powerful White Burgundy crafted in the famous, French AOC (appellation d’origine contrôlée) of Meursault. Here, in its native roots, the Chardonnay grape is transformed into a highly aromatic wine with incredible texture, brightness, and acidity. Nutty and floral notes are often found in the bouquet of these wines, and candied citrus and minerality abound on the palate. In Sonoma County, WALT has absolutely honed in on the style and crafts a stunning trio of Chardonnays that are perfectly balanced and poised for springtime wine and food pairing.

The Chardonnay Collection Vice President of Winemaking Megan Gunderson strikes a balance between allowing the vineyard sites and grapes to express themselves, and artfully guiding the winemaking process to achieve a style of wines with complex flavor profiles, freshness, and bright acidity. Overall, the Chardonnay program follows strict quality measures and very specific winemaking procedures. All the harvested grapes are hand-sorted and pressed as whole clusters, a truly stylistic choice. Native yeast fermentation and extended malolactic fermentation yield those butterscotch and honey notes for which the varietal is known for. Aging on the lees with weekly bâtonnage give the WALT Chardonnays a beautiful richness on the palate, with full body, silky texture, and mouth-filling characteristics. While the winemaking process is non-interventionist, monitoring and carefully guiding each step in the process is a true art that really allows Gunderson to show her talents. Continued

15

The 2019 Bob’s Ranch Chardonnay ($70)—a new vintage release—is the flagship wine of the trio. It comes from the Bob’s Ranch Estate Vineyard in the Sonoma Coast appellation, where average temperatures are typically 15 degrees cooler than the neighboring and already cool-climate Russian River Valley appellation. At WALT, this estate vineyard site was chosen specifically for its terroir, knowing full well that the intensely cool-climate of the Sonoma Coast coupled with low rolling hills would yield incredible Chardonnay. In this estate vineyard, coastal breezes, morning fog, and wind define the climate. Well-draining soils stress the vines that ultimately produce grapes of full varietal intensity and appropriate ripeness. The best blocks of Bob’s Ranch Estate Vineyard craft this flagship wine each year. In 2019, the wine saw 15 months in 35% new French oak before being bottled, giving it just enough of those oak-spice, vanilla-laden characteristics to balance the bright acidity and citrus-packed fruit flavors. The 2018 Sonoma Coast Chardonnay ($40) is comprised of grapes harvested from two vineyard sites: Bob’s Ranch Estate Vineyard and the famous Sangiacomo Vineyards. Both vineyards are in the Sonoma Coast appellation and expressed those high acidity, bright fruit characteristics. Of course, the winemaking process comes into play in the balance of flavors which unfold beautifully on the nose and palate. A bouquet of the tropics and ripe lemon give way to a mouthful of rich and layered citrus and mineral notes. These flavors are rounded out by the touch of oak spice coming from the 15 months of aging in 30% new François Frères French oak barrels. The unique mix of heritage and clonal selections that go into this Chardonnay also give depth and nuance to this artfully crafted wine. The 2019 Sangiacomo Chardonnay ($55) is the final wine of the triumvirate and is also a new vintage release. This wine beautifully illustrated the Meursault inspiration with lovely aromas of hazelnut, white flowers, and flint. The “Old Wente” clone block, from the certified sustainable Sangiacomo Vineyards, yields pear, brioche, and lemon curd. It’s a highly concentrated Chardonnay featuring richness and complexity. This Chardonnay also saw 15 months in 30% new French oak to amplify the balanced notes of the wine. 16

Citrus-Cured Salmon

with Brioche, Horseradish and Nori Paired with 2019 Bob’s Ranch Chardonnay, Sonoma County Serves: 6-8

Pairing with WALT Chardonnay Each of these three WALT Chardonnays lend themselves to springtime wine and food pairing. Because they are nuanced and balanced, the wines hold their own next to the kind of fresh flavors for which spring often calls, and work to enhance cuisine when enjoyed together. One of the estate’s most beloved Chardonnay-pairing recipes is a citrus-cured salmon on top of brioche, with horseradish and nori. Bon appétit!

Visiting WALT Wines WALT Wines has two locations in both Sonoma and Napa counties. The original location on the downtown Sonoma Square offers an upscale tasting room with an inviting patio in which to enjoy the WALT collection of wines. Tasting experiences include current releases, an in-depth look at the terroir of the Pinot Noir collection, and chocolate pairing. In the newly opened Napa Oxbow location, guests can enjoy the same wine tasting offerings in a beautiful new tasting room, ideally situated in downtown Napa.

Ferrari-Carano Expands Culinary Offerings with New Estate Chef New Estate Chef Tim Vallery to Lead Development of Winery’s Growing Culinary Experiences Ferrari-Carano Vineyards and Winery, longtime a hospitality pillar in Sonoma County, is set to bolster its culinary experiences with newly appointed Estate Chef Tim Vallery. Tapping into Vallery’s talent, the winery plans to usher in expanded and brand new culinary offerings throughout 2022. A graduate of the Culinary Institute of America in New York, Vallery comes to Ferrari-Carano most recently from Coyote Sonoma Restaurant and Winery. His career spans 25 years and includes stints at Santa Rosa Golf and Country Club, The Hilton Hotel of Santa Rosa, and the Seafood Brasserie at Vineyard Creek Hotel among others; he also directed his own catering group – Peloton Culinary & Catering. Vallery’s move to Ferrari-Carano not only levels up the winery’s specialty food and wine experiences, it comes at a time when the winery as a whole is hitting the refresh button with an extensive remodel of its tasting room and outdoor spaces. “We are thrilled to expand Ferrari-Carano’s culinary programming under Chef Vallery’s leadership,” says Sam Sayad, Estate Director for Ferrari-Carano Winery, one of 23 wineries in the Foley Family Wines portfolio. “We believe that Chef’s well-designed food and wine pairings will highlight our dedication to the gastronomic arts as a whole, bringing a new level of hospitality and elevated wine experiences to our guests.” Since its inception, Ferrari-Carano has taken inspiration from its Italian heritage by practicing the 18

art of pairing seasonal food with complementary wine in celebration of la dolce vita. Vallery will further enhance these experiences by incorporating herbs and vegetables from the gardens in his culinary creations and curated pairings, including new experiences within the estate’s famed gardens and new Fontana outdoor pergola seating areas behind the villa. Guests will continue to have a choice of enhanced and elevated offerings at the winery (including its popular Sunday Wine and Brunch on the Sycamore Grove and Italian wood-fired oven pizzas offered in the summertime) as these freshly curated experiences make their debut. Newly appointed Sous Chef James Molina joins Chef Vallery as Ferrari-Carano looks to the future; similarly hailing from Coyote Sonoma Restaurant and Winery, Chef Molina’s training additionally includes studies at the Auguste Escoffier School of Culinary Arts. “Growing up, my nonnie always cooked with the freshest ingredients available,” Vallery says. “I’m excited to carry on this commitment to seasonal and fresh ingredients at Ferrari-Carano and to build upon their stellar reputation for Italian hospitality alongside Chef Molina and my amazing team. Cooking with estate-grown food to pair with wine made from estategrown grapes is a rare luxury for a Chef.” Ferrari-Carano Vineyards & Winery is located at 8761 Dry Creek Road, Healdsburg. SEQUOIA GROVE WINERY Get into the Groove at the Grove

Located less than half a mile off St. Helena Highway in Napa Valley, Sequoia Grove Winery greets you with its own special oasis, surrounded by greenery and majestic Sequoia trees that are hundreds of years old. Once off the road and seated in the beautiful outdoor tasting patios and gardens, it’s easy to forget the outside world, as you wait for a wine (or wine and food) experience that will take your senses to a new dimension. It’s easy to get into the groove at the grove. Sequoia Grove has a reputation for producing drinkable and ageable wines that pair well with food. Reds are typically aged two years in barrel, and then an additional two years in the bottle before being released. Although their reds are very age-worthy, the wine lover is able to open the newly purchased bottle ready to drink, enjoy and savor. Sustainable farming practices are always followed. Sequoia Grove is a certified Napa Green Winery, recently becoming one of the first five wineries certified under the new Napa Green Vineyard program. They are leaders in responsible farming, vineyard, and winery practices.

Feel the Sequoia Difference

There are several tasting options to choose from, both inside and outside. The outdoor spaces have been invitingly expanded, with larger areas for parties of 6 or 8, smaller intimate seating arrangements, and shade covered areas. Should there be a slight chill in the area, there are also fire pits to gather around. Sit back and enjoy this hidden enclave surrounded by greenery, the towering coastal redwoods, and the sound of birds welcoming in the springtime.

Taste and Pair

Wine and food, food and wine, they just go together! Sequoia Grove offers several options for pairing. With any of the “wine tasting experiences,” you may pair a cheese and charcuterie platter to accompany your tasting; there is also an à la carte “patio pairing menu.” A few of the current selections include: • Duck Confit Crostini, Blood Orange & Kumquat Marmalade • Mushroom Arancini, Roasted Tomato Marinara • Warm Brie Crostini, Pear & Apple Mostarda, Cabernet Syrup Sign up for our email newsletter at WineCountryThisMonth.com

21

However, for the ultimate food and wine pairing, you will want to reserve “A Taste for Cabernet.” Chef Britny Maureze prepares dishes to complement the wines, showing off that Cabernet Sauvignon is much more food flexible than the old “red with meat, white with fish” rule. The spring selections, each course paired one of four different Cabernets, includes: • Carrot Gnocchi (English pea puree, carrot slaw, pickled carrots, pecorino) • Seafood Paella Arancini (romesco, saffron aioli) • Roasted Squab (beluga lentils, chermoula yogurt, blood orange glaze) • Lamb Raviolo (lamb demi-glace, gremolata) Chef breaks through old barriers, while changing menus seasonally according to freshness and availability – showing off what pairs well together with the wine offerings.

Casual Elegance

Treat yourself to a wine tasting experience (or preferably) a wine and food pairing experience at Sequoia Grove. Enjoy the casual elegance of the location while learning about the award-winning wines, winery, and vision. Come relax and experience the best of Napa in this (almost) secret oasis. A History of Excellence Although the winegrowing heritage of the land that Sequoia Grove occupies today dates back to 1865, the present-day story of Sequoia Grove began when James and Barbara Allen purchased the property in 1978. Subsequently, the 114-year-old barn was repurposed and opened as Sequoia Grove’s first winery facility, with the initial Cabernet Sauvignon release occurring in 1980. Eventually the Allens sold the winery to the Kopf family who have continuously invested in quality through vineyard acquisitions and the new winemaking facilities. Sequoia Grove has remained in the Kopf family since, focusing on producing high-quality, small-production wines and specializing in Cabernet Sauvignon and Bordeaux varietals. Sequoia Grove has earned a niche as a highly respected, soughtafter producer, consistently earning accolades, high scores, and gold medals from the most respected wine reviewers and competitions in the industry.

Wine & Food Pairing LAMB BOLOGNESE Say goodbye to the same old pasta dish and hello to this rich and savory Lamb Bolognese. Fresh vegetables and herbs come together to complement the lamb in a sauce so decadent you have to try it for yourself. To enhance this meal, pair with Sequoia Grove Stagecoach Cabernet Sauvignon. This dish helps to bring out all the bold cab flavors. INGREDIENTS

Prep Time 20 minutes • Total Time 2 hours • Serves 4-6 a plate of food and wine

• 2 tbsp. olive oil • 1 lb. ground lamb shoulder • Kosher Salt • 2 medium carrots, diced • 1 stalk celery, diced • 2 garlic cloves, diced • 2 cups dry red wine • 12 oz canned San Marzano tomatoes, chopped

• 3 sprigs fresh thyme • 1 fresh bay leaf • Pinch red chili flakes • 1 lb. tagliatelle pasta • 1/4 cup grated Pecorino cheese • 2 tbsp. heavy cream • 2 tbsp. extra – virgin olive oil • 1 cup fresh mint leaves, chiffonade

Did you make this recipe? Tag @sequoiagrove on instagram and hastag it #winefoodfriends

INSTRUCTIONS

Heat a large heavy bottom pot with the olive oil over medium-high heat. Add the lamb with a liberal pinch of salt and cook until brown, about 4 minutes. With a slotted spoon, remove the browned lamb from the pan and set aside. Add the vegetables to the pan with a large pinch of salt and sweat until translucent and aromatic, 3 to 4 minutes. Add the garlic and sweat 1 minute more. Deglaze the pan with the red wine, scraping the bottom of the pan with a wooden spoon to get all the browned bits into the sauce. Bring to a simmer and cook until reduced by about half. Then add the tomatoes, oregano, thyme, bay leaf, chili flakes, and simmer for 10 minutes. Add the lamb back into the pan and let simmer 45-60 minutes longer, adding a bit of water as needed if the liquid reduces too much. While the sauce is simmering, bring a large pot of salted water to a boil. When you have 10 minutes left for the sauce, drop the pasta into the boiling water and give a stir so it doesn’t stick. When the pasta is cooked al dente, remove and set aside 1/2 cup of the pasta water, and then drain the pasta. Stir the pasta into the sauce to coat the noodles. Add the reserved pasta water, cream, olive oil and mint and continue to mix. Once everything is incorporated, remove from the heat and serve immediately. Distribute amongst shallow bowls and top with Pecorino.

CHARDONNAY Travel to just about any wine region in the world and you’ll find Chardonnay. It’s considered an adaptable winemaker’s grape that can handle almost anything thrown at it. — BY STEPHANIE CULEN —

C

hardonnay was born in the Burgundy region of France, where it is often referred to as White Burgundy. Recent DNA research from UC Davis in California found that Chardonnay is a result of the cross between Pinot Noir, Pinot Blanc and Gouais Blanc. There are few Gouais Blanc vines remaining and most of them are found in Germany. It is not certain when or where the crossbreeding occurred but estimates conclude that the Romans planted Gouais Blanc in French soils where Pinot Noir were planted and nature

then took its course. The vine was planted in Champagne and the grape became one of the dominant varieties for the famous French sparkling wines. But it is in Burgundy, where the wine gained its reputation as an elegant white wine. Lovely dry white wine expressions of Chardonnay can be found in the cool-climate of Chablis, as well as the notable Côte d’Or, where the finest, and most expensive, wines are May 2 often found. south end of Burgundy also produces larger volumes of Chardonnay that is more affordable. While France is certainly the grape’s spiritual home, especially in the various Burgundy appellations, the grape also produces high quality wine in many parts of the world including the United States, New Zealand, Australia, Chile, South Africa and several other countries. In the United States, it is grown in numerous states from coast to coast with its greatest success found in is Sonoma Coast appellations ation Northern California. Some al of Chard of the best Chardonnay in onna y California can be found in Day Sonoma County mostly from the Russian River Valley, Carneros and Coastal areas. Chardonnay also enjoys great success in the Santa Barbara and Central Coast appellations. In general, California Chardonnay can be separated into two distinctive styles. One is fuller bodied with rich, juicy fruit that is fermented and aged in lots of new oak. The other can be lean and restrained with more French-style notes and European temperament. This kind can be either oaked and aged in neutral oak, stainlesss steel or concrete. Today, there are about 34 different clones of Chardonnay that offer different expressions of the varietal.

swirl, sniff, sip, savor How to identify wine in the glass The flip side to Chardonnay’s easy growing nature is that its flavors can be quite varied depending on terroir, conditions and winemaking techniques. It is a white wine that can be simple or stoic, youthful and fresh or aged, consumed in the present moment or set aside. The grape can produce a dry wine as well as Champagne, sparkling and dessert wines. It can also be made to taste crisp and stony, buttery and toasty, or brilliantly fresh and sparkly. Expect the wine flavor of the Chardonnay to be representative of where it was grown. For example, Chardonnays from cooler regions will have more acidity and fresher structure leading to more citrus flavors and subtle floral essences. These wines tend to be more lean and crisp. On the other side, the warmer climate Chardonnays will be more sweet and reflect the more tropical flavors of pineapple, mango and guava. These wines tend to be more fuller-bodied with stronger buttery flavors. Overall, expect strong fruity profiles ranging in notes from crisp green apples to baked apple pie, tropical zesty pineapple to lemon curd and pineapple upside-down cake, and lean minerality to spices and smoke.

What’s in the glass? Would wine in any other glass smell as sweet? White wines are typically served in smaller bowled glasses that preserve the floral aromas and maintain their cooler temperature, but as with all things Chardonnay, the style of the wine will determine the glassware used. A classic Chardonnay glass is considered a “standard” white wine glass. Fullerbodied Chardonnays, however, may benefit from a larger bowled glass similar to a Red Burgundy or Pinot Noir glass.

how to pair like a pro Chardonnay comes in a wide variety of styles with different structures, levels of sweetness and acidity. Because of this adaptability, there are an equally diverse array of wine and food pairings that work with Chardonnay making it a relatively easy wine to choose for many different dishes. Typically all types of seafood from shell fish to grilled fish pair well with Chardonnay. Depending on the way the seafood is prepared will determine the style of Chardonnay to choose. A richer Chardonnay will work better with a buttered, meatier, fatty fish such as salmon, crab or lobster, while a crisp Chardonnay fits a flaky fish, shrimp or scallops better. Lean, mineral-driven Chardonnay will go well with raw seafood dishes, as well. For meat lovers, white meats such as grilled chicken, smoked turkey, veal with cream sauce and pork are all good pairings with Chardonnay. Again, depending on the preparations of the dish will determine the style of the Chardonnay that works best with the food. In general, the simpler the preparations, the leaner the Chardonnay to pair with it. There is a lively natural acidity in Chardonnay that makes a perfect pairing with a wide variety of hard and soft cheeses, as well as creamy cheeses like baked brie with almond slices and apples. Consider semi-soft mild goat and cow’s milk cheeses such as Humboldt Fog or a simple white mild cheddar cheese with your next glass of Chardonnay. For a completed cheese tray, add cut apples, figs or artichokes to round out the flavor palate. Vegetarians will find Chardonnay goes well with many dishes especially those that have fresh herbs and spices of tarragon, parsley, thyme, lemon zest, marjoram, white pepper mixed with yellow squash, peas, zucchini, asparagus, sun chokes, white mushrooms, truffles, chanterelles and slivered almonds. With its versatility and all-around good nature, Chardonnay is one of the the world’s most popular grape for white wine. It is the fifth most widely planted grape variety and its long standing popularity has awarded the grape its own holiday. Open a bottle of your favorite producer and celebrate International Chardonnay Day on May 26! Cheers!

Jean-Charles Boisset with Robert Chang

B

oisset Collection, the leading Franco-American, family-owned fine wine company, and the American Truffle Company® (ATC), the leader in truffle science and cultivation in North America, are pleased to announce their partnership to cultivate Périgord black truffles at Raymond Vineyards in Napa Valley, California. The truffles produced will be marketed by Boisset Collection and ATC to both professional chefs and home chefs alike. This special partnership is a marriage of Boisset’s luxury wine and spirits, food and home and lifestyle goods portfolio and ATC’s leading truffle brand, advancing Old and New World traditions with the best cutting-edge truffle science possible. “We are thrilled and honored to partner with Jean-Charles and his team at Boisset Collection,” says Robert Chang, ATC’s Chief Truffle Officer. “We’re confident that our extensive cutting-edge science will help him realize his vision of producing European black truffles here in the U.S., in the same way that his vision brought his family wine business from France to North America. We look forward to forging and deepening our synergies for decades to come.” Périgord black truffles are among the most expensive foods in the world, with soaring demand continuing to far exceed declining supply. Routinely commanding over $1,000 per pound, they have been produced almost exclusively in Europe. Using extensive science, however, ATC has been producing this culinary treasure (aka black diamond) in many areas outside of its native European habitat, including Northern California where the wine growing regions offer particularly suitable climates and soil. “We are ecstatic to partner with American Truffle Company and fortunate to be an early pioneer for growing Périgord black truffles in the Napa Valley,” said Jean-Charles Boisset, Proprietor of Boisset 26

Raymond Vineyards to Cultivate Périgord Black Truffles Collection. “We have always believed in providing the very best, highest quality products and ingredients to passionate food and wine lovers… To be able to revel in the experience of cultivating truffles in harmony with nature; to be able to grow them on our own land and make an epicurean delicacy from the Old World locally available to the New; and to share it all with our guests at dinners and events is a dream!” Cultivating truffles, like growing grapes, requires extensive science and technology. The key difference is while the science for growing conventional crops like grapes is widely available publicly, the substantial science for successfully cultivating truffles is not. ATC shares its proprietary scientific methodologies and data developed by Chief Scientist Prof. Paul Thomas by partnering with its client-partner growers to bring these rare fungi to the forefront of global truffle cultivation. Part of ATC’s rapid growth, Boisset has been an avid supporter since 2010, participating repeatedly as a host winery for ATC’s annual Napa Truffle Festival. Now, in 2022, Boisset has taken on the exciting mantle of truffle cultivation with soil preparation to begin this spring and planting to follow later in the year. Born in Burgundy, France, Boisset is no stranger to truffles. Recognizing that the success of growing European black truffles in the U.S. requires deep scientific expertise and a reliable, longterm partner, he will rely on ATC to lead all facets of his truffle orchard. Boisset will complement ATC’s efforts in truffle distribution by sharing them with their existing restaurants and chef clientele, at Boisset’s Oakville Grocery, the oldest continuously operating grocery store in California, and at Raymond Vineyards and JCB events and VIP dinners. boissetcollection.com www.americantruffle.com

New Wine Release Recommendations

Medlock Ames 2019 Bell Mountain Cabernet Sauvignon, $70 This is just about as quintessential Alexander Valley Cabernet as one can get. The 2019 Bell Mountain Cabernet Sauvignon from Medlock Ames is a beautifully crafted and balanced wine. It’s got structure and complexity, with supple tannins and a nice balance between fruit and savory characteristics. Blueberry and baking chocolate contrast each other on the full-bodied palate and the entire experience makes one want to drink more Cabernet from Medlock Ames.

Pope Valley Winery 2019 Fault Line, $72 The 2019 Fault Line from Pope Valley Winery is drinking beautifully upon release. It’s a Cabernet with so much approachability in its youth, with bright acidity and soft tannins and lovely notes of black cherry, pepper, eucalyptus, and clove. It’s always enjoyable to find a nuanced Napa Cabernet that can be enjoyed upon releases, while also still having the structure and power to age well. This wine should be stocked in multiples to enjoy now and later.

Dough Wines 2018 All You Knead Red Blend, $40 A good red blend can be a great wine, and that’s the case with the 2018 All You Knead Red Blend. Equal parts Cabernet Sauvignon and Merlot, and aged for 15 months in a combination of French and American oak, this wine strikes the right balance on all levels. Black cherry and vanilla are wrapped up in a full-bodied, incredibly smooth palate with firm tannins and a lengthy finish.

Bruliam 2021 Rosé of Pinot Noir The 2021 Bruliam Rosé of Pinot Noir is made in a truly Provençal style—bright fruit, crisp acidity, and dry. Watermelon rind and lemon zest grace the delicate bouquet, and the refreshing palate unfolds in waves of strawberry, kiwi, and candied citrus. Aging five months in stainless steel and neutral oak, this Rosé maintains freshness and a smooth and silky texture. It’s a lovely Rosé that’s perfect for enjoying during heat waves, warm summer nights, and just about any other time that calls for perfectly delicious and refreshing wine.

Proving his hustle, drive, passion, and unquestionable talent, are the pillars that hold up his ever-expanding brand. BLUE NOTE CHARLES KRUG SUMMER SESSIONS/Mitchell Glotzer

Announcing The 2022 Blue Note Charles Krug Summer Sessions Featuring Jeffrey Osborne, Chris Botti, Madeleine Peyroux, Sergio Mendes and more Blue Note Napa announces the return of music to Charles Krug Winery with its Blue Note Charles Krug Summer Sessions, an outdoor concert series presented on the winery grounds in St. Helena, CA. Blue Note Napa debuted its first music series in May of 2021, and after over 20 artists and nearly 40 successful concerts, is back by popular demand. The iconic club releases its preliminary lineup of seven artists and intends to announce many more in weeks to come. “We are thrilled to be back on the beautiful grounds of the Charles Krug Winery,” says Ken Tesler, managing director of Blue Note Napa. “We are looking forward to shows almost every weekend though September. • June 3 & 4 – Chris Botti ($159, $139, $79) Since the release of his 2004 critically acclaimed CD When I Fall In Love, Chris Botti has become the largest-selling American instrumental artist. His success has crossed over to audiences usually reserved for pop music and his ongoing association with PBS has led to four #1 jazz albums, as well as multiple gold, platinum and GRAMMY® Awards. Most recently, his latest album Impressions won the GRAMMY® for Best Pop Instrumental. Performing worldwide and selling more than four million albums, he has found a form of creative expression that begins in jazz and expands beyond the limits of any single genre. • June 18 – Big Bad Voodoo Daddy ($75, $65, $55) April 2022 marks the 29th anniversary of Big Bad Voodoo Daddy’s remarkable arrival onto the music scene. Since its formation in the early nineties in Ventura, California, the band has toured virtually nonstop, performing on average over 150 shows a year, and has produced a sizable catalog of recorded music, with sales of over two million albums to date. Early on, during their legendary residency at the Derby nightclub in Los Angeles, they reminded the world, amid the grunge era no less, that it was still cool to swing. The band, cofounded by singer Scotty Morris and drummer Kurt Sodergren, was at the forefront of the swing revival of that time, blending a vibrant fusion of the classic American sounds of jazz, swing and Dixieland, with the energy and spirit of contemporary culture. • June 24 – Madeleine Peyroux ($85, $65, $45) Madeleine Peyroux’s dusky voice has been likened to that of jazz greats Billie Holiday and Ella Fitzgerald. Much like songbird Edith Piaf, Madeleine Peyroux spent her teenage years busking the busy streets of Paris, befriending the city’s street musicians and making the city’s Latin quarter her first performing stage. • July 8 – Sergio Mendes ($125, $85, $65) Producer, composer, keyboardist and vocalist, Sergio Mendes is one of the most internationally successful jazz artists of all time, with his signature mix of bossa nova and samba defining Brazilian music. His hit single, “Mas Que Nada,” was the first Portuguese language song to hit Billboard’s U.S. Pop chart. A three-time GRAMMY® Award-winner, Mendes has recorded more than 45 albums, with numerous gold and platinum discs among them. With a career spanning six decades, his enduring influence on the music industry continues to evolve. • September 25 – REDMAN · MEHLDAU · MCBRIDE · BLADE: A MoodSwing Reunion ($125, $95, $65) MoodSwing, the 1994 album by Joshua Redman’s first permanent quartet, was an astonishing collection by four precociously talented musicians who would rapidly establish themselves as creative beacons. After years of individual triumphs, saxophonist Redman, pianist Brad Mehldau, bassist Christian McBride, and drummer Brian Blade join forces again for an eclectic night of straight-ahead jazz numbers.

Wine Tasting

Helpful Tips

Visiting a winery tasting room may sometimes be intimidating, especially if you are not used to wine tasting and aren’t quite sure what to expect. Additionally, Covid-19 has made it necessary for some changes and adaptations. Following the guidelines and etiquette tips below will help enhance your experience as you travel through wine country. Due to Covid-19, there have been changes to the wine tasting adventures. So please before you go: • Plan in advance. Most wineries are now by appointment and in some cases “as space is available” (should you not have made reservations). Don’t be shy to ask at the last minute, but understand they may be full or be reserved. • Understand that there may be a time limit • Ask about the different tasting experiences and costs. • If you plan to “share” a tasting, ask if it is okay. You may still be charged per person. • If this applies, ask if the winery is dog/child friendly. • Be sure to adhere to individual, local and state guidelines in place at the time (i.e. mask wearing until seated, etc.) • Be flexible • Don’t be self-conscious to share a tasting (*if appropriate) with your companion – it’s not looked on as being cheap, in fact, it’s smart. • Don’t worry if you think you don’t know good wine. “Good wine” is what you like. Period. • You don’t have to finish the glass. You are tasting, not drinking – use the dump bucket. Those little sips add up fast. • You don’t have to like everything poured. The reason you are tasting is to see what you do and don’t like. • Take time to smell the roses, or wine! Swirl the wine in the bowl of the glass then take your time, put your nose into the bowl of the glass … and inhale to experience the bouquet. See what fragrances you can identify: Earthy? Lemon? Honeysuckle? Cherry? Tobacco? It’s okay if you don’t identify any of those things, with time and tasting you will! • Remember the five “S’s” of wine tasting: See (the wine in the glass), Swirl, Smell, Sip and Savor. (Take a small sip. Let the liquid surround your taste buds, what flavors can you identify)?

SONOMA COUNTY RECOMMENDED WINERIES ★ BACA WINES AS WITH LIFE, BACA IS BEST EXPERIENCED FIRST HAND. • Award-Winning Wines • Panoramic Vineyard Views • World-Class Artwork Open daily; 707 433-2222; 2201 Westside Road, Healdsburg

★ BREATHLESS WINES Celebrate your breathless moments with award-winning sparkling wine! • Sparkling & Still Wines • Cheese & Charcuterie • Caviar Picnic • Sabrage Experience 707 395-7300, 499 Moore Ln, Healdsburg

★ CLINE CELLARS • Ask questions! Remember … there are no stupid questions. You are there to enjoy and learn, and your server is there to help. • Don’t feel pressured to buy a bottle or to join a wine club, (however, if the tasting is free, or if you have a private tasting with a winemaker, it is good form to purchase a bottle). • Leave a tip if you have had a nice experience ($5-$20 is a general rule, depending on the type of tasting). • Don’t wear scents into a tasting room (cologne or perfume), and try not to wear white! • Ask your server to recommend their favorite wineries to visit. • Seek smaller, out-of-the-way, boutique wineries. • Eat breakfast before you leave for the day and … hydrate – hydrate – hydrate! Hint: Drink one glass of water for each glass of wine. • Bring something to snack on such as crackers, breadsticks or a baguette, (but inquire in advance if outside food is okay to bring in). Take time for lunch. When picnicking at a winery, never bring wine from another winery • Don’t try to do too much. In general, three to four wineries will fill your day. • If possible have a designated driver (or use a driving service). If staff feels you have had enough to drink they may refuse service, it’s for your own well-being. • Trust your palate. Don’t worry if you don’t like what your friends or companions like. Not everyone likes the same things. This is about you – not them. • Enjoy yourself! Be respectful of all conditions and procedures. Wineries have had challenges to adjust their normal procedures due to Covid-19. Everything they do is to insure your safety, pleasure and that you have a great time. Covid-19 has had many positive effects for wine tasting: More intimate, less crowded, more time to really talk to your winery host. With this is mind ... let’s go tasting and BY DONALD SONDERLING have fun! (It’s prudent to double check your planned visit, if possible, the day of your visit.)
