Enoteca Reserve Tasting Enoteca, “wine library” in Italian, is the ultimate setting for a tasting of the top-rated limited-release and reserve wines from FerrariCarano. These wines are available primarily at the winery or through their wine club offerings. Located in the cellar and on the lower floor of the Villa, opposite their stunning wine barrel room, the Enoteca was expressly created for the more discerning taster. Sample smaller and limited-production wines like their highly acclaimed Pinot Noirs from Anderson Valley, Vineyard Select Chardonnays from Russian River Valley, Cabernet Sauvignons from their mountain ranches in Alexander Valley, and more. Salon-style tasting offered Thursday through Sunday, 11am to 5pm by appointment. Taste five wines for $50, wine club $40, reservations are required. Add a charcuterie board for $25, club $20.

Enjoy this sweet-tart dessert with your family and friends and a glass of Prager Port. 1-1/2 pounds plums, sliced 1/3 cup plum or apricot preserves 1 teaspoon vanilla extract 1/2 cup sugar, plus 1 tablespoon for topping 1/4 teaspoon ground allspice 1/4 cup Prager Port 1/2 (15-oz.) package refrigerated piecrust 1 tablespoon flour 1 large egg 1 tablespoon water 1/3 cup powdered sugar for dusting (optional) Preparation: Preheat oven to 350°F. Unroll the pie crust onto a parchment lined baking sheet. Roll into a 12-inch circle. Set aside. Mix plums, jam, vanilla extract, sugar, allspice, and Port in a large bowl. Let stand 30 minutes, stirring occasionally. After 30 minutes, drain and reserve the liquid from the plum mixture into a small saucepan, set aside. Add flour to plums and mix. Mound plums into center of pie crust, leaving a 3-inch border. Fold pie crust border up and over plums, pleating as you go, leaving about a 5-inch-wide opening in the center. Mix egg and water. Brush pie crust with egg wash, and sprinkle with remaining sugar. Bake for 45 minutes or until filling is bubbly and crust is golden. Carefully transfer tart (with parchment paper) to a wire rack; cool 20 minutes. While tart is cooling, bring reserved plum liquid to a boil over medium heat. Boil 1 to 2 minutes or until slightly thickened. Let cool slightly. After the tart cools, dust with powdered sugar. Drizzle 1 to 2 tablespoons hot plum sauce over the fruit in center of the tart. Serve immediately with remaining plum sauce, whipped cream, or a scoop of vanilla ice cream or maybe you would like all the three? 9

Blue Note Napa Reopens After 20 long months, with hundreds of performances postponed by the COVID pandemic, Blue Note Napa will celebrate its reopening with two nights featuring smooth jazz great Eric Darius on Friday, November 12 and Saturday November 13, 2021. In addition, and wanting to open with a local touch after all this time, a very special pre-opening show on Thursday November 11, 2021 has just been announced featuring Napa’s own, Bay Area vocalist Kellie Fuller along with The Mike Greensill Trio. Bookending a 2021 autumn and winter of great music will be a New Year’s week run with the club’s premier performer, Kenny G, playing December 30, 31 and January 1. The downtown Napa jazz club has been closed since March 2020. In the interim, Blue Note Napa staged an outdoor concert series outdoors at Charles Krug Winery featuring the likes of Dave Koz, Los Lobos, Pink Martini, Taj Mahal and Chris Botti among many others. Blue Note Napa, located at 1030 Main St. on the first floor of the Napa Valley Opera House, is now excited to reopen its doors in downtown Napa and welcome back live music lovers from the Napa Valley and beyond. The iconic club will also unveil some exciting modifications after renovations to the club’s main areas. The remodeling allows Blue Note Napa to offer additional seating options and an elevated viewing area inside of the club. Wine Tasting
Visiting a winery tasting room may sometimes be intimidating, especially if you are not used to wine tasting and aren’t quite sure what to expect. Additionally, Covid-19 has made it necessary for some changes and adaptations. Following the guidelines and etiquette tips below will help enhance your experience as you travel through wine country. Due to Covid-19, there have been changes to the wine tasting adventures. So please before you go:
• Plan in advance. Most wineries are now by appointment and in some cases “as space is available” (should you not have made reservations). Don’t be shy to ask at the last minute, but understand they may be full or be reserved. • Understand that there may be a time limit • Ask about the different tasting experiences and costs. • If you plan to “share” a tasting, ask if it is okay. You may still be charged per person. • If this applies, ask if the winery is dog/child friendly. • Be sure to adhere to individual, local and state guidelines in place at the time (i.e. mask wearing until seated, etc.)

• Be flexible Covid-19 has had many positive effects for wine tasting: More intimate, less crowded, more time to really talk to your winery host. With this is mind-LET’S GO TASTING AND HAVE FUN! • Don’t be self-conscious to share a tasting (*if appropriate) with your companion – it’s not looked on as being cheap, in fact, it’s smart.
• Don’t worry if you think you don’t know good wine. “Good wine” is what you like. Period. • You don’t have to finish the glass. You are tasting, not drinking – use the dump bucket. Those little sips add up fast. • You don’t have to like everything poured. The reason you are tasting is to see what you do and don’t like. • Take time to smell the roses, or wine! Swirl the wine in the bowl of the glass then take your time, put your nose into the bowl of the glass … and inhale to experience the bouquet. See what fragrances you can identify: Earthy? Lemon? Honeysuckle? Cherry? Tobacco? It’s okay if you don’t identify any of those things, with time and tasting you will!
• Remember the five “S’s” of wine tasting: See (the wine in the glass), Swirl, Smell, Sip and Savor. (Take a small sip. Let the liquid surround your taste buds, what flavors can you identify)? • Ask questions! Remember … there are no stupid questions. You are there to enjoy and learn, and your server is there to help. • Don’t feel pressured to buy a bottle or to join a wine club, (however, if the tasting is free, or if you have a private tasting with a winemaker, it is good form to purchase a bottle). • Leave a tip if you have had a nice experience ($5-$20 is a general rule, depending on the type of tasting).

GOOD TO KNOW • Acidity: The level of natural acids in a wine that give it freshness and crispness on the palate. • American Viticultural Area (AVA): A government-approved winegrowing region whose geological and climatic conditions create wines of distinction. A specific appellation of origin. • Body: A term used to describe the weight of a wine on the palate. • Bouquet: A term for the fragrance of a wine developed after it has been aged. Sometimes used interchangeably with “aroma,” which is technically the fragrance of a wine before aging.
• Brix: A grape ripeness scale, used primarily in the U.S., that measures solids (sugars) inside the juice of a grape. • Cap: The top surface of the must, where solids accumulate and are then pushed back down (punched down) into the juice to increase skin contact. • Crush: Harvest season that starts with picking grapes and ends months later with the transfer of wine to barrel. • Cuvée: A Champagne house’s best offering, usually made from the first pressing of grapes; A • Estate-bottled: The wine was under the control of the producer, start to finish.
• Fermentation: The transformation of grape juice into wine as sugar plus yeast convert to alcohol and carbon dioxide (and heat).

• Don’t wear scents into a tasting room (cologne or perfume), and try not to wear white!
• Ask your server to recommend their favorite wineries to visit. • Seek smaller, out-of-the-way, boutique wineries.
• Eat breakfast before you leave for the day and … hydrate – hydrate – hydrate! Hint: Drink one glass of water for each glass of wine.
• Bring something to snack on such as crackers, breadsticks or a baguette, (but inquire in advance if outside food is okay to bring in). Take time for lunch. When picnicking at a winery, never bring wine from another winery • Don’t try to do too much. In general, three to four wineries will fill your day.
• If possible have a designated driver (or use a driving service). If staff feels you have had enough to drink they may refuse service, it’s for your own well-being.
• Finish: The impression a wine leaves on the palate after swallowing or spitting. • Lees: Dead yeast cells from fermentation that settle at the bottom of a barrel or tank. When stirred in the wine, as done during the aging of Chardonnay, lees add body and creaminess. • Legs: Streams of wine that run down the inside wall of a wine glass. Narrow, fast-moving legs generally indicate low alcohol content and light body, while wide, slow legs usually mean richness and higher alcohol. • Maceration: A time period that allows grape skins to make contact with grape juice, usually before fermentation begins, in order to develop deeper color in the finished wine. • Meritage: The unique American term for a Bordeaux-style blended red wine made in the U.S. from two or more of the five classic red grapes of Bordeaux. Not more than 90% of a single grape can make up a wine labeled as Meritage. • Must: The mixture of unfermented grape juice with the solids from skins, stems and seeds of the grapes. • Nose: A term to describe how a wine smells, sometimes used in place of “aroma.”
• Reserve: Term used by a producer that usually indicates a wine ranked among their highest tier of quality. • Sediment: Residue accumulated during extended aging of a bottle of wine. Red wine sediment is formed by color pigments, tannin molecules and tartrates. White wine can sometimes show sediment of tartrates that appear as crystals. • Sulfites: Chemical compounds of sulfur that act as a preservative in wine.
• Enjoy yourself!
• Tannin: A primary component in red wine, it is a chemical compound (phenolic) developed in wine when fermenting juice makes extended contact with skins, seeds and stems; also added to wine as it ages in contact with oak. At an elevated level, tannin gives wine a dryness on the palate and causes the mouth to pucker (astringency), but when balanced with other components it provides the necessary structure that gives texture and grip.
Please be respectful of all conditions and procedures. Wineries have had challenges to adjust their normal procedures due to Covid-19. Everything they do is to insure your safety, pleasure and that you have a great time.
• Terroir: The accumulation of all conditions surrounding a grape-growing site, including soil, sunlight, daytime an nighttime temperatures, rainfall, drainage, elevation, etc., all contributing to each wine’s uniqueness.
• Trust your palate. Don’t worry if you don’t like what your friends or companions like. Not everyone likes the same things. This is about you – not them.
