4th of July Fruit Salad
INGREDIENTS • 2 Cups of Fresh Strawberries – Washed and Quartered • 1 Small Package of Fresh Blueberries – Washed • 1/2 Jicama slices • 10 Mint Leaves – Finely Chopped • 1/2 Lemon – Juice… if you prefer something a little sweeter use the juice of half an orange instead • Tool – small star cookie cutter
DIRECTIONS 1. Start by cutting the jicama into slices so you can easily use your cookie cutter to get the shape wanted. If you don’t have a small star cutter, cut the jicama into cubes and have a red, white and blue salad. 2. Once you’ve cut out as many jicama stars as possible set to the side and prep the rest of the salad. 3. Add blueberries to a large mixing bowl. 4. Add strawberries and mint to the blueberries. 5. Add your citrus juice and stir together. Tip: Consider keeping the stars separate from the salad until just before serving… jicama is porous so it will absorb the strawberry juice and turn a little pink. If you care about a true red, white and blue theme then add the stars at the last minute.

Water Classes, Swim Lessons, Lap Swimming And More The Palm Desert Aquatic Center (PDAC) – a one-of-its-kind water park in the Coachella Valley – announced extended summer hours. The new hours vary for the different areas, which are Monday through Friday from 11 to 5 p.m. for all activities including the swimming pool, diving boards, splash playground and slides; while the splash playgrounds and slides will remain open an additional two hours until 7 p.m. On Saturdays and Sundays all areas will be open from 11 a.m. to 7 p.m. For those interested in lap swimming, the pool will be open Monday through Friday from 5:30 a.m. to 7 p.m.; on Saturday from 7 a.m. to 7 p.m.; and Sunday from 8 a.m. to 7 p.m.
