The Varied Terroir of Napa Valley Napa Valley—the mere thought of this winegrowing region conjures up iconic visions of expansive vineyards and getaway weekends full of incredible wine. This world famous winegrowing region is home to the most sought after bottlings of Cabernet Sauvignon in all of America. This wouldn’t be the case, however, without the varied terroir of Napa Valley. Whether the grape variety is Cabernet Sauvignon or something else, the sheer diversity of terroir across the valley is what makes the job of viticulturists and winemakers in this region so exhilarating. Situated thirty-six miles east of the Pacific Ocean, Napa Valley is a narrow strip of land—only 30 miles long by five miles wide—that is home to sixteen unique appellations. Each of these appellations is mapped out by its distinct terroir: the combination of geographical features, soil type, elevation, aspect of slope, climate, and interaction with grape growers and farm workers that directly impacts the grapes. Below we have identified a general idea of terroir in each of Napa Valley’s appellations. Los Carneros
Oakville
At the southernmost end of Napa Valley is the appellation of Los Carneros. This appellation is unique in that it actually spans both Sonoma County and Napa County, with boundary lines established because of its distinct terroir that covers both counties. The climate here is the coolest in the entire valley, as it is situated on the north end of the San Pablo Bay. With significant maritime influence, fog and wind, Los Carneros possesses the ideal temperature for growing cooler-climate grape varieties such as Pinot Noir and Chardonnay. It’s elevation of sea level up to roughly 700 feet keeps the vineyards in this region within the wind and fog range, helping to maintain its moderate daytime temperature of no more than 80 degrees. Rainfall is also low in this region—the lowest of the entire valley. Soil types are dominated by clay with loam, while the northern end of the appellation has more alluvial soils. Although the region is known for its production of Pinot Noir, Chardonnay and sparkling, there are a handful or two of producers that also make Sauvignon Blanc, Albariño, Merlot, Malbec and Syrah.
Reaching up to mid-90 degree weather in summer, Oakville produces robust reds and whites with slightly more ripe fruit qualities than the appellations to the south. Again, Cabernet Sauvignon and Merlot are favored, while Sauvignon Blanc—yet another Bordeaux varietal—is the dominant white grape variety. Here, this part of Napa Valley truly becomes more of a valley floor—with only 75 to 500 foot elevation. Sedimentary, gravelly alluvial loams on the west side dominate the soils in this region, and the east possesses more volcanic soils with moderate fertility and depth.
Oak Knoll District Just north of Los Carneros lies the Oak Knoll District; moderate to cool temperatures with late afternoon breezes keeps this appellation slightly cooler than the north end of the valley. Although Oak Knoll District has similar elevation to Los Carneros, sea level up to about 800 feet, it actually gets significantly more rainfall than Los Carneros because of its proximity to Mr. Veeder on its western edge. The soils here are volcanically derived with stone and gravel consistency. Further from the base of Mt. Veeder, on the southern and eastern edges, the soils express more silty clay loam. Primary grape varieties in this region include Chardonnay, Cabernet Sauvignon and Merlot.

Hess Collection Veeder Summit Vineyard, Mount Veeder
Yountville As you go further north into the valley, Yountville is the next appellation, and it is situated far enough from the San Pablo Bay that white grape varieties are no longer favored. Here, Cabernet Sauvignon and Merlot are the dominant varietals produced. Although the marine influence still plays a part with a bit of wind and fog, temperatures can get up to 90 degrees during the daytime during summer. Elevation can reach up to 1,110 feet and rainfall is similar to that of Oak Knoll District—as it is also influenced by its proximity to Mt. Veeder. Soil types in this region include sedimentary, gravelly silt loams and gravelly alluvial soils with rock. There is a touch more fertility in these soils and because of the temperature difference, Cabernet Sauvignon and Merlot from Yountville will taste noticeably different than Cabernet Sauvignon and Merlot from Oak Knoll District.
Calistoga
Rutherford Gradually rising in temperature as you move to the center of the valley, Rutherford is home to Zinfandel producers, in addition to those that make Cabernet Sauvignon, Merlot and Cabernet Franc. The temperatures here are warm enough for Zinfandel—a grape variety that shows well when harvested fairly ripe. Elevation is still mostly at valley floor level, roughly 100 to 500 feet. The soils are nearly identical to Oakville, with sedimentary, gravelly alluvial loams on the west and more volcanic soils on the east—though on the whole, the soils tend to be deeper and more fertile than in Oakville.
St. Helena Towards the north end of the valley, St. Helena is the hottest appellation, with the ability to reach the upper 90s in temperature in the summer months. Blocked by the 18
Mayacamas Mountains on the west, St. Helena is more protected from fog and wind than neighboring appellations. The width of this appellation is much thinner than others, so the reflection of heat from the hillsides brings more ripeness. The elevations range from 150 to 600 feet, while the average annual rainfall is slightly more than Rutherford. The northern and eastern edges of the appellation possess more volcanic soils with more depth and fertility than the southern and western edges—which are primarily composed of sedimentary, gravel clay soils like many of the other growing regions. In a hot climate like this, red grape varieties dominate the vineyards. Cabernet Sauvignon, Merlot, Cabernet Franc, Zinfandel and even Syrah are planted here; fleshy white wines like Viognier also do well in this hot climate.
Calistoga is located at the northernmost end of Napa Valley. Warm temperatures fluctuate throughout the growing season, but more marine influence from the northwest affects the overall climate of the appellation. Cool breezes flow through the vineyards in the later afternoon and evenings. Rainfall can be rather high, while the elevation also sees a drastic increase from that of St. Helena—from 300 up to 1,200 feet. The soils here are almost all volcanic-based, ranging from rocky, stony loam to gravelly, cobbly loam on the slopes, to clay silt soils at the lower elevations. The interesting mix of warm temperature with cooler evenings and significantly more rainfall than other regions brings a unique variety of grapes to the appellation, including Cabernet Sauvignon, Petite Sirah, Syrah and Zinfandel.

The Mountainous Vineyards on the Western Side of Napa Valley
while planted white grape varieties are Chardonnay and Viognier. Merlot, which tends to exhibit less ripe fruit than Cabernet Sauvignon, excels in this appellation.
As each of these names suggest, the three appellations on the western edge of Napa Valley are more mountainous in nature than the preceding appellations we have discussed. Located up against the Mayacamas Mountains that separate Napa County from Sonoma County, the below three mountainous appellations produce wines of a much different style than that of the valley floor appellations.
Mount Veeder
Diamond Mountain District At the most northwest location, Diamond Mountain District borders the edge of Calistoga. The temperatures are moderately warm but because of its elevation range of 400 to 1,800 feet, the appellation sees less temperature fluctuation than other regions. Rainfall can be heavy, though the moderate temperature and higher elevation is perfect for growing Bordeaux grape varieties. Here, Cabernet Sauvignon and Cabernet Franc seem to express themselves in a true, Bordeauxstyle fashion with finesse and restraint. Soil types are still mostly volcanic in origin with gritty texture. The terroir here does not ripen the grapes quite as much as the intensity of the valley floor, so the wines tend to exhibit less ripeness than those appellations. As a result, the wines of Diamond Mountain District are known for their incredible agability.
Spring Mountain District Another appellation that sees a lot of rainfall is Spring Mountain District. Bordered by an evergreen forest, Spring Mountain District has smaller vineyard parcels planted on its steep hillsides. Temperatures are much cooler than the valley floor and the elevations of the region’s vineyards range from 400 to an impressive 2,220 feet. Sedimentary soils of sandstone, shale and loam have low fertility and high drainage—both good for the vines. Dominant red grape varieties here are Cabernet Sauvignon, Merlot and Zinfandel,
Howell Mountain
Mount Veeder is located on the southwest end of the valley and exhibits moderate temperatures; because this appellation possesses elevation ranging from 500 to 2,600 feet, many of its vineyards are situated above the fog line—which actually makes way for more sunshine and ripeness with certain grape varieties. Cabernet Sauvignon, Merlot, Zinfandel and Chardonnay are planted in the sedimentary, sandy loam soils—generally giving the wines fine-grained tannins and wonderful texture.
The Eastern Edge of Napa Valley Bordered by the Vaca Mountains on the east and the valley floor on the west, these appellations exhibit distinct terroir that favors a range of grape varieties. Elevation and temperature both range greatly in these appellations, and the proximity of the vineyards to the Vaca Mountains has a huge influence on the resulting wines.
Howell Mountain Jumping across the valley to the northeastern perimeter, Howell Mountain District is situated mostly above the marine layer. There is a little more heat and the air is slightly drier than it is on the mountainous western side of the valley. The afternoon sun is strong, and summer temperatures fluctuate with cool nights and hot days that get up to 90 degrees; the cool nights help maintain nice acidity in the wines from this region. Elevation is similar to the western side, ranging between 600 to 2,220 feet, though rainfall tends to be a little lower. Shallow, infertile volcanic soil with excellent drainage is planted to Cabernet Sauvignon, Merlot, Zinfandel and Viognier—very similar to the grape varieties grown in the mountainous appellations on the western side of the valley.
Chiles Valley District Just barely southeast of Howell Mountain is Chiles Valley District, which sees warm summer days with an average temperature of 80 degrees. However, elevation of 600 to 1,200 feet brings fog in the evenings and strong winds in the winter. Harvest is generally slightly later than in other appellations. The vineyards at lower elevation are mostly planted in silty clay that is marine in origin, while the hillside vineyards are planted in clay loam and stony clay, with some volcanic influence. This region grows predominantly red grape varieties, such as Cabernet Sauvignon, Merlot, Cabernet Franc and some Petite Sirah.
Atlas Peak Adjacent to the Mount Veeder appellation on the west, Atlas Peak is the eastern counterpart with volcanic soils. With elevation of 400 to 2,600 feet, moderate rainfall and many of the vines planted above the fog line, Cabernet Sauvignon and Chardonnay do well in these cooler climate vineyards. The result is higher acid Chardonnay and leaner, finessed Cabernet Sauvignon.
Stags Leap District Stags Leap District is located just east of Yountville; here, peak summertime temperatures can reach up to mid-90 degrees. Elevation ranges from roughly 60 to 400 feet; on the lower end of elevation, the vineyards are planted in volcanic gavel loams, while the higher elevation hillside vineyards are

planted more in rocky soils. Popular grape varieties include Cabernet Sauvignon and Merlot—as expected—but also Sangiovese, as well as Chardonnay and Sauvignon Blanc.
Coombsville The newest region to be given status, Coombsville, joined the Napa Valley appellations in 2012. Located just northeast of Los Carneros, Coombsville also receives influence from the San Pablo Bay. The climate is moderate, the soils are primarily volcanic rock and alluvial deposits, and the elevation of the vineyards generally ranges between 100 and 500 feet—though some vineyards are planted as high up as 1,000 feet. This region is interesting because of the lower elevation vineyard sites, which allow producers to grow Pinot Noir and cool climate style Syrahs, while still producing Cabernet Sauvignon, Merlot and Chardonnay from the hillside vineyards.
Wild Horse Valley The final appellation in Napa Valley, and consequently the smallest, is Wild Horse Valley. Situated in the very southeast corner of Napa County, Wild Horse Valley actually overlaps with Solano County. The climate here is generally warm, though still tempered by the San Pablo and Suisun bays. Elevation is between 600 and 1,900 feet with predominantly Cabernet Sauvignon, Pinot Noir and Chardonnay inhabiting the vineyards.

Almost everything discussed here requires reservations, but don’t let that deter you from last-minute plans. Most of us in wine country can usually accommodate “same-day” reservations. Fastest at ground level, obviously, is to go by car, but as this is about as far from “dry” country as one can or generally wants to get, most people, visitors and locals alike, appreciate having someone else do the driving, which is where several well-known touring companies come to the fore. California Wine Tours offers everything on four or more wheels, from touring cars to mini-buses, limos of all shapes and sizes, and full-size coaches; their website offers a huge range of tasting options in Napa and Sonoma. Beau Wine Tours, too, offers a plethora of options to tour and taste in both valleys, including sub-AVAs like hard-to-access mountain districts. Next up as ground-level transport, but at a decidedly more leisurely pace, and taking us back to the Valley of 130 years ago, is the world-renowned Napa Valley Wine Train, which offers multiple options to visit the Valley by rail, including lunch or dinner, specific wineries to visit, holiday specials and the always highly anticipated Murder Mystery dinner shows. NVR Adventures provides another interesting way to see wine country: with the speed of a car but the full-surround feel of a bike, motorcycle or mopeds are available for rent.
Air Another option out of a simpler age is to tour by hot air balloon. As noted, this can be combined with other transport or via individual companies, depending on the package and views desired. Balloons Above the Valley offers sun-rise rides above the Mayacamas followed by brunch in the vineyard. Napa Valley Aloft, Balloon Aviation of Napa Valley, and Aerostat Adventures all offer various tours of different areas of the Valley, accommodating a range of desires. And should you decide that seeing vines means seeing them as you actually fall from the sky, the ability to skydive, clearly memorable regardless of locale, is now available from Skydive Napa Valley, too. If you’re still looking for even more of the lessobvious but guaranteed to be no less memorable visitation options, look no further than some of these 26
folks. Wine Country Helicopters, out of the airport south of Napa, offers tours of the Valley.
A Slower Pace The other option, of course, is to slow it down completely and see wine country the way the original planters did, via foot- or pedal-power. I can say, in my experience, that this is the best way to enjoy the valley since it allows for full-sensory experiences in ways faster methods of movement do not. Walking or biking near vineyards allows a less-touristy and more experience-driven understanding of the surroundings; animals scared off by cars come out, the breeze ripples through the rows, and the hawks lazily circle above, each looking for a snack in its designated area of the sky. It really is impossible to understand both the absolute stillness as well as the total sense of living energy that wine country truly means unless you put yourself there in this way. The key is to select your location carefully as the business of main thoroughfares is an illusion quickly removed. In addition to wonderful and well-known biking options like Connolly Ranch, Napa Valley Vine Trail, Robert Louis Stevenson State Park and Skyline Wilderness Park, just about every large park throughout the North Bay has hiking and biking trails. In terms of biking packages, Napa Valley Bike Tours offers a plethora of options, and while you can rent bikes and ride pretty much

anywhere your feet will take you, their unique ballon-and-bike touring package is an innovative way to get to experience the valley through multiple lines of sight. If you have a boat, you can come up river as far as downtown Napa, but the marina is south of the city in Carneros for actual docking of open-water vessels. Napa River Adventures is the way to go if you desire water travel without a vehicle of your own to worry about. They offer riverboat trips around the valley and also have kayaks and canoes to rent. Napa from the river’s upwards vantage point offers access to a wide range of properties inaccessible otherwise. Going this one better, the Napa Valley Carriage Company provides horse-drawn carriages and food to accompany the wines of their tour. As you can see, while most of us get here by car and perhaps an assist via the airlines, once one is in wine country, the options abound, allowing visitors to customize on a daily basis how they want to get to know the vines, the folks who look after them and the products of all that time and effort: the wines themselves. It really is as simple as deciding how fast you want to go and from there the assistance is a phone call, email or click away from the incredible array of fine memory-making and return visit-inducing experiences that await. Carpe Diem: Ahi Tuna Tartare When it comes to Ahi Tuna Tartare, no one prepares it more flavorfully than Carpe Diem’s Owner/Executive Chef Scott Kendall. Located in downtown Napa, Carpe Diem has an exceptional reputation for pleasing palates with their delectable cuisine. This sashimi grade ahi tuna is fresh and tender, and delicately stacked in a delectable mound with crisp jicama, ripe avocado and wakame— edible seaweed. This freshly-prepared dish is served with thinly-sliced taro chips, bringing just the right amount of textual complexity one would expect for a tasty starter such as this. Topped with a tobiko and sesame ginger sauce, this sweet and salty Ahi Tuna Tartare is the perfect accompaniment to any of Carpe Diem’s flatbreads, small plates or large plates.
Ca’Momi: Bignè Come and taste Valentina Guolo-Migotto’s brilliant Bignè, the guiding force behind Ca’ Momi’s popular pastry. Bignè are a light, two-bite pastry filled with organic, fluffy cream. They are prepared early every morning with organic ingredients, including Clover Stornetta dairy and Giusto’s organic flour, and dressed with a variety of flavors and toppings, including TCHO Chocolate and Rigoni di Asiago hazelnut and fruit spreads. The dough base consists of only four ingredients including butter, water, flour and eggs. Bignè are baked in the oven and filled with different inclusions like cream and nocciolata (hazelnut), and drizzled with chocolate, sugar, candied mandorla (almonds) and other toppings. Ca’ Momi also makes both traditional and gluten free bignè. How sweet it is! 34

City Winery: Seared Salmon If you love fresh fish, don’t miss Executive Chef Joseph Panarello’s Seared Salmon marinated in a sweet & spicy Vadouvan sauce. Model Bakery: English Muffin
St. Helena Bistro: Eggplant Parmesan
Known for their artisanal products, The Model Bakery sets the standard with their world famous English muffin (featured on Food Network’s “The Best Thing I Ever Ate” by Chef Michael Chiarello). Deliciously buttery, this English Muffin looks like a biscuit, light as a cloud on the tongue. It is made out with organic ingredients, flour, butter, yeast, a pinch of vitamin C and a piece of focaccia bread to give it texture. Can you taste the muffin melting in your mouth?
For over ten years, Executive Chef Israel Perez has been cooking up a delicious Eggplant Parmesan at St. Helena’s Bistro. Using organic ingredients, Israel takes his time making a ‘to die for’ tomato sauce, which simmers over the stove for six hours. He calls it a simple dish, but his customers absolutely love it. In fact, when he took it off the menu, his customers complained. Happy to return, the fresh eggplant comes from California farms and is lightly breaded, covered in tomato sauce, and topped with lightly grated parmesan and béchamel sauce. This meal comes served nice and hot. Come and get it!

Cairdean Estate: Scotch Eggs We can credit former Executive Chef Joseph Humphrey of The Farmer and the Fox for the introduction of this pub-inspired dish to the wine country, igniting the trend throughout Napa Valley. Scotch Eggs aren’t just an attempt to stay current with the latest food trends, they are a reflection of the Scottish heritage that is woven into the history of the estate. The name Cairdean (“care-dean”) is ScottishGaelic for “friends,” and they wanted to share this special delicacy with you. What’s so special about Scotch Eggs? They are uniquely made, soft boiled, coated in a delicate layer of pork sausage, double-dressed in flour, egg wash and breadcrumbs, and then quickly fried to form a crispy, golden-brown layer. The egg, which is sliced in half lengthwise to expose the yolk, is finished with a touch of raw, grated horseradish, and gently placed on a bed of radish and watercress, which “offsets the richness, adds a touch of freshness and provides balance to an otherwise heavy dish,” notes new Executive Chef Aaron Meneghelli at the Farmer and the Fox. The Farmstead: Long Meadow Ranch Burger The Farmstead is famous for their Long Meadow Ranch grass fed burger. The Highland cattle is raised on the ranch and everything else is made in house, the bun, sauces, mayonnaise, mustard and ketchup, spice rub-beer chuck and cauliflower pickles. The shredded cheddar cheese you taste on top comes from Vela Sonoma. It’s nice and messy, the sign of a great burger, served with their fresh “to die for” crispy potatoes. Art at the Wineries More than meets the eye.

When most of us hear or see “winery,” what generally comes to mind is wine, tanks, barrels and vines. However, and perhaps not that surprisingly, many of the Valley’s estates put the emphasis as much on the milieu and surroundings as what’s in the barrels, the idea being that an environment appreciative of beauty and joy is also one best suited to the nurturing of “liquid poetry,” as more than one writer has said of our vinous creations. What follows is less a comprehensive overview and more a survey geared to enticing the eye via the range of kinds of artwork available for viewing throughout the Valley, and almost all for free, to boot.
The Hess Collection
Owned by the Raventos winemaking family of Spain, and designed outside and in as an ode to modern design, Carneros’ Artesa Vineyards & Winery houses a large collection of reflective metal and glass pieces. The space is designed to bring in and reflect a lot of natural light, so the works on display, many by internationally known local artist Gordon Huether, are a natural compliment. In 1997, he became the winery’s Artist in Residence, which allows for the creation and rotation of works designed specifically for the space and for more personal pieces than he is often commissioned to produce. Matched to the vista outside, the inside spaces are light-filled and transparent, creating a sense of the building itself as a work of art set gently amongst the vines. – BY JOSH STEIN –

Oakville Cross Road’s newly opened B Cellars— and its 15,000 square feet of caves atop a small knoll overlooking the lower valley—provides a dramatic setting for artist Seward Johnson’s creations. The fullsized human sculptures can be seen working on or walking around the grounds. These real-looking sculptures of fully dressed humans give visitors glimpses of the work involved in stewarding the land as various pieces can be spotted using tools on greenery, digging in the ground to set posts, or just meandering amongst the landscape. Another space very well aware of art’s display and impact, is the three-story 1903 stone winery of The Hess Collection on Mount Veeder, which remains my favorite spot for the interweaving of wine, winemaking, and modern art in all is various mediums, from electronic to photorealistic to abstract and beyond. Designed, outside and in, with art’s impact in mind, a free self-guided audio tour details the important works of Franz Gertsch, Anselm Kiefer, Leopoldo Maler and Robert Motherwell, amongst many other contemporary artists. The nooks and crannies hold surprises at every turn, and no spot is without an installation, including the landings for the center glass elevator and the walls of the stairways en route to each floor’s artwork. Mumm Napa Valley also has a spectacular photography-filled space. On permanent exhibit in their Private Collection Gallery is a collection of original Ansel Adams prints on loan from the Adams family called “Poetry of Light.” This collection includes many of Adams’ most famous shots, including “Monolith,” “Half Dome,” “Yosemite Park,” “Winter Sunrise from Lone Pine” and “Moonrise.” Equally, the rotating exhibits in the Main Gallery showcase the work of renowned international and local photographers throughout the year to pair with glasses of Mumm releases. Not far from there, at the Jessup Cellars Tasting Gallery, another exceptional collection of original paintings and sculptures is offered from a variety of established artists as well as local and up and coming creators. The gallery is also home to special events such as the Release Feast Soirees, TasteMaker Speaker Series and The Art House Short Film Series. Additionally, the original designed-to-impress winery, Robert Mondavi Winery, not only plays annual host to a wide range of musicians in concert, but also houses an extensive collection of sculptures, paintings and treasures from around the world. Folks wandering the estate will find works by Beniamino Bufano and Henry Waddell, amongst others. There are rotating painting exhibits and ancient examples of winemaking, such as a clay wine amphora more than two millennia old. Equally, if photography catches your eye, Turnbull is definitely the place for you. The large, barn-like building houses and nicely complements an extensive art gallery with changing visual installations, and the permanent collection includes work by Berenice Abbott, Ansel Adams, Eugene Atget, Yousuf Karsh, Andre Kertesz, Brett Weston and Edward Weston. As you can see, those appreciative of all kinds of art and performance pieces can find something to catch their attention beyond the wines while here in Napa Valley. Most other places would make a much bigger deal of their artwork, but “Napa casual” says not to point out the wealth of world culture heritage carefully assembled and maintained at every turn. That almost all are free for viewing simply adds to the underlying point: wine doesn’t get made or enjoyed in isolation, and the best way to enjoy this most alive of human endeavors is to also partake in other kinds of artistic impression, too—those which speak to the winemakers themselves and their own desires to put human energy and creativity into the bottle, capturing a moment in time, just like the sculpture, painter, photographer, and musician. It’s dusk. Dinner is being prepared and you and your friends are enjoying a glass of wine on the terrace. Get Down and Dirty at Trefethen’s Harvest Boot Camp Trefethen Family Vineyards invites guests to their 3rd Annual Harvest Boot Camp on Saturday, September 26. This very popular hands-on experience will feature an in-depth vineyard and harvest experience. Spend the morning with the viticulture team working in the vineyard and hand picking any grapes that are ready, followed by an al fresco lunch under the canopy of an ancient walnut tree in Katie’s Acre. Channel your “Inner Lucy” at Clos du Val’s Grape Stomp Weekend Roll up your pants, it’s time to join Clos Du Val’s Annual Grape Stomp Festivities! Lucille Ball brought grape stomping to the screen but you can have your own 15 minutes of fame here at Clos Du Val. Start with a light continental breakfast before you enter the barrel and get messy! Start Your Day Cellar Tasting Experience Since 1886 the Ehlers Estate has been producing fine wines and is currently 100% organic. For a limited time during harvest, Ehlers Estate is offering a 9:30 tasting experience that includes a visit to the cellar, crush pad and get the “back story” on what happens in the cellar on a harvest morning. Grgich Hills Offers Grape Stomping Daily throughout Harvest Grgich Hills offers grape stomping all during harvest, so don’t miss your chance. The grape stomping season continues through Halloween. Stomping occurs daily starting at 10:30 a.m. and ends at 4:00 p.m. For $30 per person, visitors get to taste three wines, do a stomp and get a T-shirt. No reservations are taken except for groups of 20 or more, otherwise first come first serve. Be sure to wear comfortable clothing and if wearing pants, ones that can be rolled up. Children are welcome to stomp, too.
A “Day in the Life” at Round Pond Estate On Sunday, October 18 experience the magic behind the wine by spending a “Day in the Life” at Round Pond Estate with winemaker Muiris Griffin. Your immersion into winemaking will begin in the vineyard where you will learn about—and participate in—each part of the process of turning great grapes into fine wine. In the winery, you will work on and sample wines in various stages, including fresh juice, partially fermented wine, and finished wine in barrel. Los Carneros Appellation Burgundian Classics, Sparkling and a Few Surprises
V
ast expanses of vineyards stretch across the gently rolling hillsides of the Los Carneros appellation at the southernmost point in Napa Valley. Hillside-studded oaks and undulating, healthy green vines juxtapose themselves against a sky that’s foggy in the morning, but piercing blue by mid-afternoon. Situated very close to the San Pablo Bay, Los Carneros is home to the coolest grape growing climate in all of Napa Valley—making the appellation an ideal candidate for grapes that do well with wind, fog, steady sunshine and slow ripening. Two classic grape varieties that thrive in cooler weather—Chardonnay and Pinot Noir—hail from the illustrious region of Burgundy in France, which exhibits a very similar climate. In Los Carneros, these two varietals make up the vast majority of the appellation’s production—both still and sparkling expressions—in addition to a small handful of other mostly French grape varieties. It is rare, but certainly not unheard of, to see the white grape varieties of Sauvignon Blanc and Albariño (a Spanish varietal), as well the red grape varieties of Merlot, Malbec and Syrah. These latter grape varieties are quite versatile, and produce unique and stunning wines when made from vines planted in cooler climates, with small pockets of heat in the many microclimates of the region. – BY MELISSA VOGT –

The general terroir of Los Carneros, heavily influenced by the San Pablo Bay, experiences significant fog and wind, both in the morning and evening. The elevation ranges from sea level up to about 700 feet, and the moderate daytime temperature rarely exceeds 80 degrees during the summer. Common soil types are clay with loam and alluvial soils. Los Carneros is unique in that it actually spans both Sonoma County and Napa County— established this way as a result of the region’s distinct terroir, not by its county boundaries. Although Los Carneros was granted official appellation status in 1983, the history of grape growing stretches back to the early 1830s. In the 1870s, Winter Winery was the very first winery established in the region. During this time, agricultural workers and farmers worked the land by planting grape, apples, plums, pears and apricots, and raised cattle and sheep as well. In fact, the appellations’s name means rams in Spanish—a nod to the former history of the region. Although grape growing took off in the region during the later 1800s, phylloxera and Prohibition in the early 1900s brought the industry to a halt. It wasn’t until 1935 that the first post-Prohibition winery was established. Today, Los Carneros is home to dozens of wineries—all offering unique experiences, dazzling wines and warm, friendly hospitality. VERY NAPA VALLEY

California Sparkling Shines in Los Carneros When visiting Los Carneros, it would be an absolute shame not to indulge in the stunning sparkling wines that the region is quite famous for. The origins of Los Carneros’ top sparkling estates, Domaine Carneros and Artesa Vineyards & Winery, can respectively trace their winegrowing and winemaking origins back to their home countries of France and Spain—two of the world’s most famous sparkling production regions.
Classic Méthode Champenoise Sparkling Wine at Domaine Carneros Claude Taittinger, of the French Champagne Taittinger family, first sought out vineyards in the United states for production of premium sparking wine in the late 1970s; after years of searching, he proudly settled on 138 acres in Los Carneros in 1987. Two years later, the glorious chateau of Domaine Carneros was built—modeled after the Taittinger family’s French estate, Château de la Marquetterie. Since the beginning, Domaine Carneros has consistently produced California sparkling wine in the classic Méthode Champenoise—the most respected method of sparkling wine production, developed in France and replicated in various parts of the world. In spring, majestic rose bushes rest peacefully at the end of each row of organically-farmed vines, making for a grand, colorful view upon approaching the chateau. A regal staircase climbs to the expansive terrace and the luxurious, inside salon. Table side service offers a rather relaxing wine tasting experience, where guests can be just as focused on the incredible Los Carneros views as they are the wines. At the classic level, the 2010 Estate Brut Cuvée is incredibly affordable for the immense quality in the bottle. A blend of Chardonnay and Pinot Noir grapes, this sparkling spends three years on lees and is finished with only .9% residual sugar—just about as natural as it gets. The nose is full of perfumed peach aromas, while the zesty palate expresses notes of lime and lemon zest, white peach and yellow apple; the medium body balances out the effervescence and gentle acidity, and the finish boasts a delightfully creamy texture. At the top tier, the refined 2007 Le Reve Blanc de Blancs is astounding. Spending an impressive six years on lees and finished with 1% residual sugar, this California sparkling parallels the best of French Champagne. Made with 100% Chardonnay grapes, the 2007 Le Reve Blanc de Blancs boasts a nutty, brioche nose with tropical fruit and spice; the palate brings a beautiful harmony of strawberry, yellow peach, lemon zest, a touch of lime and cashews. The bubbles enliven the tastebuds on entry, but subside and allow a creamy, silky body to surround the tongue through the finish. FALL/WINTER 2015

Spanish Cava Experts Conquer California Sparkling Wine at Artesa Vineyards & Winery The history of Artesa Vineyards & Winery begins with the famous Spanish winemaking family Codorníu Raventós—famous for their incredible Cava production—who purchased land in Los Carneros in the 1980s. The estate was originally named Codorníu Napa, and produced only traditional Méthode Champenoise sparkling wine. As the years went on, the estate’s name was changed to Artesa—which means “handcrafted” in Catalan, and pays homage to the young Spanish architect who built the winery. At this time, they also began to produce still wines in addition to their sparkling. Approaching Artesa is unlike any other visit to a winery in Los Carneros—a gradual incline leads you to the top of a hillside where a long staircase rises into the sky. The winery isn’t even visible until you climb the stairs and are taken aback by the incredible view that lays before you—an expansive fountain stretches across the grounds. The winery itself is dug into a natural hillside—a truly stunning architectural sight—and in the distance, rolling hillsides of vineyards stretch as far as the eye can see, interspersed with iconic oak trees. Entering the winery calls for another pause to revel in the breathtaking beauty. Gorgeous wood floors, majestic pillars, peaceful fountains, relaxing terraces, and expansive glass windows and doors give Artesa an elegant and inviting atmosphere. On busy days, every space is bustling with guests who are sipping wines and taking in the incredible beauty and artistic design of the winery. The two sparkling wines that Artesa produces are equally as impressive as the architectural brilliance. The Codorníu Napa Grand Reserve Brut Rosé is made from 100% Pinot Noir grapes that are grown on the estate vineyard. At only 450 cases made annually, this Brut Rosé is an exclusive bottling you won’t want to pass up tasting. This stunning Brut Rosé boasts lovely aromas of strawberry and lively lime zest. Having spent three years on lees, the palate is rich and creamy, with balanced acidity and delightful flavors of strawberry, dried red cherry and a touch of lime zest. One step above the Brut Rosé is Artesa’s majestic bottling of Codorníu Napa Grand Reserve Brut. This Brut is also made from estate-grown grapes, a blend of 51% Pinot Noir and 49% Chardonnay, and sees an impressive four years on lees, creating a wonderfully round mouthfeel and creamy texture on the palate. Los Carneros Classics: Burgundian Varietals In the Los Carneros appellation, it doesn’t get any more classic than the production of distinguished Chardonnay and Pinot Noir. These varietals originated in the Burgundy region of France, which shares a very similar climate to that of Los Carneros—making it the perfect region for growing these illustrious varietals in California.
Championing Single Vineyard Designated Bottlings at Acacia Vineyard One of the older wineries in Los Carneros, Acacia Vineyard, has been championing the cool climate terroir of Los Carneros from the beginning. In fact, they believe in the quality of the terroir so much so, that they focus most of their production on vineyard designated bottlings. By not blending different vineyard sites into a single bottle, this practice ensures that every bit of terroir will shine in the glass, because the personality of that vineyard has been kept in its purest form. Their impressive single vineyard designated Chardonnay and Pinot Noir bottlings are absolutely stunning, highly rated and well worth tasting. • 2012 Sangiacomo Vineyard Chardonnay – The notable 2012 Sangiacomo Vineyard Chardonnay is a true expression of Los Carneros fruit. This vineyard produces highly coveted grapes and Winemaker Matthew Glynn has done a superb job at transforming them into a stunning bottle of wine. Aromas of toasted oak and caramel apple grace the nose, while luscious golden apple, pear and desirable minerality express themselves beautifully on the palate. • 2012 Long Tree Pinot Noir – Of their Pinot Noirs, their estate grown 2012 Long Tree Pinot Noir truly captures the beauty of this varietal. Incredible layers of complexity unfold even on the nose, with aromas of cherry, plum and dried rose petals. The palate is silky and structured with balanced acidity, boasting flavors of raspberry and strawberry, integrated with a touch of vanilla from the barrel aging. 64

The Study of Pinot Noir at Etude Winery For true pinophiles, Etude Winery is the mecca in Los Carneros. Their Study of Pinot Noir experience is a seated, guided tasting that allows guests to indulge in six small production Pinot Noirs, five of which are from different appellations, while learning about the intricacies of each wine’s terroir. Unlike any other experience in the region, this premier introduction to understanding how terroir directly affects a finished wine, really allows guests to taste how climate, elevation, soil types and sun exposure create different textures and flavors in the finished wines. One of the unique parts about this tasting experience is that the wines not only range in appellation, but state and country of origin. Currently, the six wines featured in The Study of Pinot Noir hail from Los Carneros (Sonoma County), Sonoma Coast (Sonoma County), Sta. Rita Hills (Santa Barbara County), YamhillCarlton District of Willamette Valley (Oregon), and Central Otago (New Zealand). Etude Winery is the only winery in Los Carneros that produces a Pinot Noir from New Zealand, so having the opportunity to taste this wine is not only delightful, but also incredibly exclusive. During the tasting, a member of the hospitality staff walks guests through each of the wines—pointing to a large map, painted on the wall, to identify the location of each wine. As guests taste their way through the wines, a discussion about the unique terroir of the vineyard and appellation opens up, and questions are both welcomed and encouraged.

Estate Carneros – The 2013 Estate Carneros Pinot Noir comes from Grace Benoist Ranch. Smokey, earthy, mustard-like aromatics leap from the glass while the palate boasts bright red cherry, plum, forest floor, earth, baking spice, rose petals, a touch of caramel and subtle hints of mustard. • 2012 Heirloom Carneros – The 2012 Heirloom Carneros Pinot Noir also comes from Grace Benoist Ranch, but is a single vineyard designated Pinot Noir. The nose is classic Burgundian with a lot of earth making way for a palate full of concentrated fruit, such as dark red raspberry, blueberry and orange zest. The body is luscious and round with rich, complex textures; the wine finishes with a touch of caramel. • 2012 Yamhill Vista – The 2012 Yamhill Vista Pinot Noir from the Yamhill-Carlton Distrit of Oregon’s Willamette Valley is completely different from the Los Carneros wines. The nose is rather rustic with notes of cranberry and forest floor, and the palate has brighter acidity than the Los Carneros Pinots. Notes of red cherry and cranberry are wrapped up in a smooth, silky body with gentle oak accents balancing the fruit. • 2012 Ellenback Vineyard – The 2012 Ellenback Vineyard Pinot Noir from the Sonoma Coast appellation has a very floral notes, full of rose petals and violets. The palate also expresses those floral characteristics, along with concentrated flavors of strawberry, orange peel, a touch of cranberry and vanilla on the finish. Again, the body is smooth and round, while still maintaining pleasurable, cool-climate acidity. • 2012 Forté – The 2012 Forté Pinot Noir, from the Fiddlestix Vineyard in Santa Barbara County’s Sta. Rita Hills, is made up of 35 select blocks from the vineyard site. A smoky, oceanic, caramel-infused nose makes way for red spiced cherry, dark plum and a touch of cherry cola on the palate, enveloped in a smooth body. • 2013 Bannockburn Vineyard – The final wine of the Study of Pinot Noir—the most robust of them all—is the 2013 Bannockburn Vineyard Pinot Noir from Central Otago, New Zealand. Dark aromas of black cherry and dark wild berries abound on the nose. The palate is rich and full, much more dense than the California and Oregon Pinot Noirs, with notes of spice, plum, blueberry and crushed rocks. FALL/WINTER 2015
Organically Grown Grapes & Unique Varietals in Carneros at Cuvaison Estate Wines At Cuvaison Estate Wines, their wines shine because the grapes are treated with great respect in the vineyard. Farmed entirely organically, the vineyards at Cuvaison are of exceptional quality, and allow Winemaker Steven Rogstad to produce stunning wines. What’s more, is that Cuvaison also produces unique varietals for the region, from their estate vineyards. In addition to estate-grown Pinot Noir and Chardonnay, they also grow and produce estate Sauvignon Blanc and Syrah. • 2014 Sauvignon Blanc – “There is a richness and brightness to the palate,” Rogstad explains of their 2014 Sauvignon Blanc. Produced from a single block and a single clone, then aged in a combination of stainless steel, concrete egg and neutral oak, their newest release of Sauvignon Blanc is rich, full, complex and incredibly structured. Of course, using Old World techniques of hand harvesting and whole cluster pressing also contribute to the complexity and quality of this luscious white wine. The 2014 Sauvignon Blanc has a touch of spice and kiwi on the nose, while the palate is full of great citrus notes, such as grapefruit, lemon zest, alongside lovely minerality. The body is both round and crisp, making for a very structured white wine. The combination of stainless steel, concrete egg and neutral oak makes this wine very complex and incredibly unique—unlike any other Sauvignon Blanc you have ever tasted, in a good way. • 2012 Syrah – Although Rogstad admits, “I love making Pinot Noir and Chardonnay, because when I started, this region was making a name for itself with Pinot Noir,” he also has loved taking a vigorous variety like Syrah and seeing how he well can tame it in the cooler climate of Los Carneros. For this reason, it is absolutely worth a visit to Cuvaison to try some of the more unique varietals grown in Los Carneros. “Syrah is a vigorous variety so you want to put it in an area where the soil and climate can temper the vigor of the vine,”
Rogstad states. When tasting this lovely Syrah, the sense of place expresses itself well on the palate—the fruit is not over ripe and there is a wonderful acidity that one doesn’t always find with a full bodied red like Syrah. The 2012 Syrah boasts aromas of eucalyptus, smoke and charred meat. The palate is full of subtle, restrained black cherry, blueberry and blackberry with strong hints of violets and a cocoa-like texture. One can really taste how “soil and climate can temper the vigor of the vine,” making this coolclimate Syrah more intricate with less ripe fruit than Syrah grown in warmer regions.

A Taste of Something Different at McKenzie-Mueller Vineyards & Winery Visiting McKenzie-Mueller Vineyards & Winery is not like visiting any other winery in Los Carneros. In a quaint barn, set beside the family home on the estate property, guests are greeted by members of the Mckenzie-Mueller family. With 36 planted acres, they harvest grapes to make their estate wines, in addition to selling roughly 75% of their grapes to other wineries. Their small production estate wines are unique for several reasons—one of the most important reasons being that they age and hold their wines significantly before release. In the tasting room, wines range from 1998 to 2009—but nothing from a more recent vintage is poured. “We prefer the flavors of aged wines,” states Karen McKenzie. Tasting wines this old, as part of the standard tasting menu, is a rare treat in wine country. Outside of the classic Chardonnay and Pinot Noir that Los Carneros is famous for, McKenzie-Mueller also produces some incredible other varietals that are more unique to the region— Merlot and Malbec. • 2009 Merlot – The aromatics of the 2009 Merlot are full of eucalyptus, mint, black berry and currants. The palate expresses fruit flavors of red cherry, currants and blueberry, followed by
notes of mushroom on the finish. The chalk-like texture gives the wine excellent structure and complexity, and because of its age, the tannins are rather pleasurable. • 2007 Malbec – The 2007 Malbec is a stunning wine, full of life and intricate flavors. Aromas of black cherry, tobacco and cocoa make way for flavors of red cherry, currants, blackberry and cocoa on the palate. The texture is similar to the Merlot—with kind of a chalky, clay-like texture and minerality—and again, the tannins are approachable and even enjoyable.
Capturing Artistic Beauty in Los Carneros at di Rosa From paintings to murals, to sculptures and stunning pieces of architecture, di Rosa is a feast for the senses. Founded by Rene and Veronica di Rosa, this art preserve boasts a world-class collection of contemporary and historic art of many different mediums. While visiting di Rosa, guests can indulge in an indepth look at thought provoking art in the various spaces.
Inside Spaces The Gatehouse Gallery features a rotating exhibit of artwork from Bay Area artists, as well as permanent pieces from the di Rosa collection; the Gatehouse Gallery is open to the public for a suggested $5 donation. If you are up for a brief 1/3 mile hike, the Sculpture Meadow tour is a fabulous option; winding its way through sizable sculptures, the Sculpture Meadow offers guests both the opportunity to appreciate the beauty of sculptures as well as the beauty of the outdoor space that each piece of art occupies. The final space at di Rosa is the North Lawn—a location dedicated to overlooking the Sculpture Meadow, for those looking to view the beautiful works of art in their entirety, as they fill the center of the surrounding landscape of vineyards, oak trees and golden rolling hills of the Los Carneros appellation.

Keeping it Hyper-Local The menu approach at Harvest Table is simple—use as many ingredients as the property can grow, source locally and stay seasonal. On the property, resident Culinary Horticulturist Laura McNiff oversees the planting and tending to the gardens. “She is constantly planting new vegetables, plants, fruit shrubs, you name it—from artichokes to blueberries—and it’s fun to see what we’re able to produce,” Palmer says with excitement. Executive Chef Levi Mezick also works with McNiff to determine what new vegetables and fruits to plant for the rotating seasonal menu. “We’re learning with each other as we go and it has been a lot of fun,” Mezick states about having a garden of this magnitude at their fingertips. “We can grow so many different items, and to have a person that is dedicated to producing these items for the restaurant is simply incredible.” Incredible, indeed, as the seasonal menu boasts salad greens and baby carrots freshly picked just before dinner service, among other vegetables, fruits and culinary herbs that make their way onto the many plates that fly from the kitchen on any given night.
The restaurant itself is outfitted beautifully with both indoor and outdoor seating, spacious table arrangements, comfortable chairs and gentle lighting, all held together by an incredibly friendly and knowledgeable staff. The atmosphere is elegant and the mood is full of passion for culinary creativity and decadent dining—nothing short of the Napa Valley lifestyle.
Artisanal Ingredients
The Wine List
Outside of the ingredients they to source from the onsite gardens, Mezick works with local farmers and artisanal food producers to keep the menu as local as possible. “People are constantly stopping by and I am meeting new farmers and producers all the time,” Mezick excitedly states. “We also use the local farmer’s markets in Napa and Saint Helena.” From local grape seed and olive oils to vinegars, Mezick and his team strive to support the community by using as many hyper-local artisanal food products as possible. In addition, Mezick says of his fish and meat on the menu, “We get what’s good and what’s in season—what’s local and really phenomenal.” As if the menu couldn’t get any better, small touches like their house-churned butter or their freshly baked focaccia bread make every detail-oriented aspect of Harvest Table’s menu absolutely delicious. Simply put, corners are not being cut— rather, these culinary experts are going the extra mile to make sure every dining experience embodies as much freshness and flavor as possible.
On top of the innovative dishes that Mezick is whipping up and McNiff is growing produce for, Director of Operations Steven Geddes and Sommelier Lauren Helm oversee the wine list, which features a large majority of Napa Valley wines. “Our wine list pays homage to our neighbors in the area,” Palmer states. “However, we noticed that locals would come in looking for something other than a Napa Cab or Chardonnay.” It was at this point that Geddes developed the Blind Vine program, which features a small collection of non-Napa Valley wines for those looking to enjoy wines from other prestigious regions around the world. Like the produce from the garden, the fine selections on the wine list rotate as well.

Dining at Harvest Table When visiting Harvest Table, there are a few iconic dishes in each part of the menu that you would be remiss if you didn’t try. The following dishes are just the tip of the iceberg on the extensive menu, so make sure to visit, taste some of these classics and then delve into the rest of the menu’s innovative dishes as you see fit.
Prep Your Palate with Snacks On the snacks portion of the menu, Palmer says, “One of my favorite ‘signature’ dishes is our roasted carrots.” This classic dish has already become a mainstay for the restaurant, and for good reason. Freshly picked baby carrots are roasted in duck fat, then served with buttermilk—made via the process of the house-churned butter—vadouvan spice blend and crunchy granola. Wonderfully textured and incredibly flavored, this snack is a delectable way to get the dining experience started. 72

Another excellent snack option is the immensely fresh oysters, served chilled on a bed of ice with horseradish sorbet and tarragon. Pair these cold, briny and tender oysters with a glass of Domaine Carneros bubbly and your meal will be off to a delicious start.
Pick up the Pace with Starters The pan roasted shrimp and grits holds true to Palmer’s innovative style of classic American cuisine. On the plate, succulent shrimp, house-made Andouille sausage, cheddar cheese and bacon meld together to create one rich, delicious dish. The shrimp and grits, creamy in texture and spicy in flavor, pack a ton of flavor for the start of any meal. Enjoy this mouthwatering dish with the hearty 2010 Syrah from Burgess Cellars and you’ve got yourself a feast for the senses. For a lighter touch, the tomato and watermelon salad made with basil pesto, verjus and formage blanc is delightful. This salad tastes of summer—it’s fresh, crisp and full of bright flavors that undoubtedly pair well with a glass of Paradigm Winery’s 2014 Rosé of Merlot. Certainly not to be missed is the foie gras torchon—for those looking for a bite of decadence. Cured in house, this creamy, savory foie gras finds just the right delicate texture while still maintaining concentrated flavor. Each bite melts in your mouth as if it were a warm pat of butter—pure heaven.
Diving into the Plates Squab—it’s a dish that seems to be everywhere in wine country—but Mezick’s preparation is by far one of the most stunning. Tender squab is served with poached plums, stinging nettles purée, fermented turnips and sherry squab jus. The
combination of flavors has perfect synergy; there’s tanginess from the plums, texture from the turnips, and earthiness from the stinging nettles purée—each element complements the juicy squab, which is richly flavored and crisped to perfection on its edges. Of course, a discussion of the menu cannot be complete without mentioning the Snake River Farms wagyu. These incredible slices of high quality beef are complemented by toasted farro, broccoli rabe, black garlic and sauce bordelaise— an indulgent combination of intensely rich flavors and soft textures. The wagyu, of course, is seared to perfection—just crispy enough on the edges while still being impeccably moist. Toasted farrow brings forward delicious smoky flavors, while black garlic provides concentrated earthiness—both flavors mingle exceptionally well with the wagyu. This dish is rich and delicate, powerful and yet beautiful in its simplicity. Order this and enjoy with Round Pond Estate’s 2012 Cabernet Sauvignon and you’ve got yourself a match made in heaven.

A Taste for Cabernet Hosted by Sequoia Grove’s Senior Wine Educator, Dean Busquaert, A Taste for Cabernet guides wine and food pairing enthusiasts through Sequoia Grove’s single vineyard bottlings of Cabernet Sauvignon, as well as the top-tier Cabernet blend— Cambium. Following the tasting, guests are invited to taste one ingredient that represents each element of taste, in conjunction Cambium, to experience the way the flavors interact with the wine. In this unique food and wine pairing experience, not all ingredients go well with the wine. This, Busquaert states, allows Cabernet enthusiasts to understand how a great bottle of wine can be enhanced, or even ruined, by the meal it is served with— reinforcing the importance of food and wine pairing synergy. Leading up to the food and wine pairing portion of the experience, Busquaert urges guests to understand the importance of pairing Cabernet appropriately. He says that so often, someone will taste a wine and love it in the tasting room, but go home and enjoy it with an inappropriate pairing and be completely disappointed. Sequoia Grove’s A Taste for Cabernet, hosted by Senior Wine Educator Dean Busquaert, is both a unique and engaging experience that should not be missed when visiting Napa Valley.
Tasting Terroir Drawing on his own knowledge of Napa Valley and using slides of vineyard images and appellation maps, Busquaert delves deep into the terroir of each single vineyard bottling. Tasting through the unique soils, elevations and sun exposures, guests identify and discuss with Busquaert the influence of terroir and how it affects the finished wines. “This tasting shows you how when you move the same grape from location to location, it changes drastically,” Busquaert states.
Creating Balanced Wine To really allow the terroir to shine in the glass, Winemaker Molly Hill ferments and ages different blocks of Cabernet Sauvignon separately, before blending together the blocks to create each single vineyard bottling—proving just how much variation in terroir there is amongst individual blocks in a single vineyard.
