Mastering Wine & Food It really isn’t difficult to achieve a beautiful balance of flavors, richness and texture. As a veteran hostess of literally hundreds of dinner parties, I can attest to the magic that can happen when you bring people together over great food and amazing Napa wines. But deciding exactly which wine to serve with each of your artfully prepared dishes can be tricky. My play has always been to stick with the white-with-fish, red-withmeat dictates, but clearly there are more nuances to the art of food and wine pairing. Even wine that doesn’t at first appeal to the palate can come alive when paired with the right food. Recently I opened an off-dry Riesling, declared it too sweet, and demoted it to the cooking wine shelf in the fridge. However when my husband suggested we give it another try the next night with a lemon chicken and snow peas recipe I found, we discovered the residual sugar was exactly what was needed to compliment the tang of the dish, thus saving a perfectly lovely wine from the indignity of becoming a sauce ingredient. So how does a home cook and amateur wine aficionado go about discovering those perfect pairings? As it turns out, armed with a little knowledge of the science of food and wine, it is really not that difficult to achieve a beautiful balance of flavors, richness and even texture. – BY RONDA GIANGRECO –

Professional Pairing Experience Another means of learning the ins and outs of food and wine pairing is to treat yourself to a professional pairing experience like the one at B Cellars in Oakville. The private tasting for a maximum of twelve people can be enjoyed in their elegant Hospitality House, with soaring glass walls looking out upon an awe-inspiring vineyard view, or if the weather is agreeable, outside in the gardens. Chef Brian Green will lead you through a sumptuous array of food and wine combinations sure to spark your culinary imagination. Chef reigns over the magnificent, open kitchen at B Cellars in Oakville, creating witty pairings that hint at his lack of pretentious affects when it comes to matching taste sensations with the luscious wines. His advice for proficient pairing? “The best way to discover how food works with the wines you enjoy is to experiment. Have fun. Break some barriers. You will start to understand how your individual palate responses to flavor combinations and how different wines effect the food you like to cook.” When a celebrated chef suggests that you ignore your mother’s ban on playing with your food, it does give the entire task of wine and food pairing the vibe of a guilty pleasure. So grab your apron, your favorite cookbook and a nice big wine glass. It is recess time in the kitchen! 17


Pairing Varietals with Food Flavors All wine is composed of varying degrees of these five components: sugar, acid, fruit, tannin and alcohol. Not surprisingly, all food is identifiable by flavor categories as well. They are fat, acid, salt, sugar and bitter. Many experts also include in this list the flavor profile called umami, which can be best described as savory. The most successful food and wine pairings occur when you compliment the components of your wine with food from a similar flavor profile. Many favorite dishes, okay nearly all of the best ones, contain high levels of fat. Wine, thankfully, contains no fat (clearly the best argument for a benevolent deity). Wines with high acidity levels are perfect for balancing out those fats. A big, bold Cabernet, heavy on the tannins, will cut through and round out the fatty elements of a juicy steak, while the protein in the beef will, at the same time, soften up the wine’s edges. A wine with a higher alcohol content, over 14.5%, is also a lovely complement to a rich, buttery sauce, counteracting the lactose and allowing the flavor of the dish to take center stage. A simple, unadorned piece of salmon is hardly an appealing meal. But the mere addition of a quick squeeze of lemon causes the flavors of the fish to burst forward. That is what acid in both food and wine can accomplish. Many winemakers are now producing gorgeous Rhône varietals with higher acidity levels that partner with seafood to produce a culinary duet that is music to the palate. Choose a wine with citrus overtones, like a crisp Sauvignon Blanc to pair with salads that feature flavored vinegars and bright fruits. The wine will hold its own and not fade into the background. Salty food is problematic for wine pairing. While salt will often enhance the flavors of food, it can destroy the taste of many wines. High alcohol wines turn bitter. A Zinfandel loses all its rich, fruit forward elements and a delicate Chardonnay can just taste odd when paired with a highly salted dish. So what can you serve with that cool new truffle oil and sea salt popcorn appetizer you made? Easy. Sparkling wine! The bubbles help cleanse the palate and allow the wine flavors to cut through the saltine overtones. Wines with high levels of acid will also pair nicely with salty, briny foods like oysters or a seafood stew. Dessert wines seem pretty straightforward. After all, the course you pair with them is right there in the name. But caution is required here, too. For a successful pairing of an off-dry wine, always be sure your wine is slightly sweeter than the dessert you are serving. A very sugary confection will literally strip the sweetness from a dessert wine and render it tart. You might think the exception to the rule is the beloved chocolate and red wine combo. But a sweet chocolate dessert such as a rich pot du crème, paired with a bone-dry Merlot, would be a very unpleasant ending to your meal. Bittersweet chocolate and a big, jammy Zinfandel? Sublime. Then there is that food category of bitterness. Wine and anything bitter just doesn’t work. Beer is your best bet if you’ve decided to feed your guests a big kale salad. I, personally, cannot wait for this whole kale craze to pass. I know it is good for your health, but a bitter, chewy weed that ruins the taste of a beautiful glass of wine will never get served at my table. Just saying.

Secret to Using Tasting Notes The back label of a wine bottle usually contains a wealth of information to help you pair it properly. But to really understand the flavor components of a particular wine, go to the winery’s website and pull up the tasting notes on it. Here you will find the wine’s residual sugar, percentage of alcohol, the amount of aging it has received and the varietals the winemaker used during the blending process. Dry wines are fermented to remove all sugar and aged to soften tannins. Off-dry and dessert wines will have at least a small percentage of sugar remaining and will experience a much shorter aging process. Armed with the basics about the wine you wish to serve, you are ready to scour the cookbooks for a perfect pairing. By simply following these few rules you should have no problem discovering some wonderful and unique pairings. Best of all it gives you, the chef, an excellent reason to sample the wine repeatedly while you’re cooking in your quest for the perfect food and wine combination!

Craft Beer The Other Fermented Beverage in Wine Country Craft beer is everywhere these days—even in wine country. Napa Valley certainly prides itself on being a world-class wine destination, but for those looking for a palate refresher or even just a cold, tall one in lieu of wine, Napa Valley has got you covered. With five unique breweries in this narrow strip of a valley, there are plenty of refreshing options for craft beer lovers.

The Nitty Gritty on Beer Like wine, beer has unique styles and flavor profiles. Drawing on a variety of ingredients sourced from places around the world, every beer is unique in its final composition. With that being said, the vast majority of beer has the same foundation of ingredients: water, malted grain (barley, wheat, oats, rye, etc.), brewer’s yeast and hops. So, what makes each beer unique? Common styles of beer include, but are certainly not limited to, different kinds of ale (such as brown, amber, red, blonde, white, wheat, pale and India pale), stout and lager (such as pale, golden and amber)— just to name a few. Of course, beer styles are just as complex and intricate as wine, and should one care to dig a little deeper, you will find an immense offering of beer styles around the world that you never even knew existed. As for some of the local Napa Valley breweries, you can certainly expect to find a few of the basics like ales, stouts and lagers.

Taste the Difference Taking these basic beer styles into consideration, one might ask how the taste profiles differ. The truth is that each style has its own characteristics and flavor profiles, just like you find with wine. These flavor profiles depend on how much the grains are roasted and the type of yeast used. Of course, where the ingredients are sourced from, how much of each is used and what kind of brewery techniques are implemented all matter as well. To simplify these styles though, we’ve broken down some of the quintessential characteristics of these beer styles:

ALE: Depending on the kind of ale, you will taste very different flavor profiles. The color of the ale depends on how long the grain is roasted. A blond ale will be light, refreshing, sometimes fruity and usually with gentle hop characteristics, while an IPA (India pale ale) tends to be more aggressive on the palate with much stronger hop characteristics that might taste something akin to the smell of a pine forest. Brown ales can be rather nutty, while wheat ales are quite bread-like, yeasty, and often fruity with notes of citrus and spices. These are just a few examples of what to expect in the wide category of ales.

STOUT: Stouts, like the name suggests, are rather robust beers that express dark flavors, due to the heavy roasting of the chosen grain. Creamy textures and roasted flavors of coffee, nuts, smoke, spice and chocolate abound in stouts.

LAGER: Like an ale, lagers also come in various forms, such as pale, golden and amber. Again, the the color of the lager depends on how long the grain is roasted. In Napa Valley breweries, you will most likely be tasting a pale lager (which uses lightly roasted grain), because it is a very common type of American lager. These beers are crisp and light on the palate with mild flavor profiles—very drinkable! While this is but a brief and simple overview of just a few beer styles, it will get you on your way to noticing the differences in the beer you enjoy when visiting Napa Valley breweries. Sidestreet Savor the Luxury of Wine Country If someone led you, eyes closed, into The Sidestreet Club in downtown Napa your first pleasurable impression would be the aroma, a rich leather scent with undertones of polished wood and just a hint of tobacco. It is an Old World, classic fragrance that speaks of sophistication and refinement. That is exactly what Shawn Dougherty, the owner and proprietor of The Sidestreet Club, sought to achieve with his new uber-elegant private establishment that caters to a class of people who appreciate the grace of a time when an evening out meant you dressed in your finest, sipped a luscious Cabernet and enjoyed a handmade cigar. “My grandfather was an airline pilot and would talk about the glory days and how people would dress while out on the town or entertaining. I knew then I would like to build something representing those glory days.” There are two elements to Shawn’s enterprise. The first is a retail space where one can peruse cases filled with handmade cigars from The Dominican Republic, Nicaragua and Honduras. And, for a truly decadent experience to “celebrate your golden moments,” there is a $250 gold leaf cigar available. The chic shop also offers luxury apparel and accessories. But the heart and soul of Shawn Dougherty’s vision is the adjoining private club for members only. Access through private entrance, adorned with a discrete bronze plaque, is only obtained by the use of a personal fob. Once inside the vulgarities of the world are left behind. A closet just inside the entrance houses member’s personal smoking jackets. Private humidors, encased in luxurious wood lockers and identifiable with bronze nameplates line the walls. Shimmered crystal chandeliers provide soft lighting for several distinct gathering areas. There is the Founder’s Room with its plush leather sofas and blazing fireplace. A posh “Sinatra” Room, with walls of photographs depicting the Rat Pack in their heyday. sophisticated man or woman would require. Surprisingly, what this stylish cigar club does not have is smoke. Thanks to a highly engineered filtration system, The Sidestreet Club is an establishment that even a nonsmoker can enjoy. Cigarettes are strictly prohibited and, unless there is a crowd of cigar lovers who all light up simultaneously, the air is always kept clean by stateof-the-art technology. While the club does not serve food, with a simple call to any of the numerous world-class restaurants that surround it, your plated meal will arrive within minutes. No need to be distracted by a room full of diners or the noise of a kitchen. With club membership comes privacy and privilege. No wonder several celebrities and local business owners have joined the club. Thanks to the region’s geothermal activity, Napa Valley is crawling with hot springs that offer spa treatments specializing in utilizing the healing capabilities of geothermal heated ground waters and mineral baths. The town of Calistoga, in particular, is home to many spas that offer warm mineral baths fed by natural hot springs. Calistoga Spa Hot Springs offers four naturally heated pools in which guests can indulge, including a lap pool and a wading pool. Its four pools are complimentary for hotel and spa guests. Day passes are also available for pool use on a first-come, firstserved basis. Golden Haven Hot Springs Spa and Resort in Calistoga has a large, warm mineral water pool filled with water sourced from hot springs that run underneath the property. The pool is accessible as a hotel or spa guest or by purchasing a day pass to use the pool. Spa guests can indulge in a hot, herbal mineral water bath also sourced from these waters, and soak for an hour. Calistoga Ranch and Auberge Spa, at Auberge du Soleil, each offer an hour-long water therapy session in a heated mineral pool, during which a trained Aquatic Therapist guides guests through gentle rocking, movement and stretching. Similarly, Solage Calistoga invites guests into a hammock stretched above its geothermal mineral pool while being guided in a relaxing, floating meditation for 45 minutes.

Not all dirt is made equal. The mud used in spa treatments offers healing and cleansing properties, and Napa Valley has some very healing mud, thanks to its volcanic history and ongoing geothermal activity. Calistoga especially, on the north end of Napa Valley, is fortunately situated atop natural hot springs and volcanic mud, which its bevy of spas utilize in their mud bath treatments. Dr. Wilkinson’s Hot Springs Resort in Calistoga has been providing mud baths to its guests for more than 60 years. The mud contains pure volcanic ash and is combined with mineral water from the local hot springs and Canadian peat to make the mud treatment. The volcanic ash cleanses and smooths skin, while the peat provides maximum benefit from the water’s soothing heat. The treatments are warm and relaxing, as well as cleansing. The bath itself lasts between 10 and 12 minutes, but the process includes a shower, a soak in a mineral tub bath and time in the natural mineral steam room. After all this, guests are wrapped in cotton blankets where they can nap and cool down. A similarly indulgent mud bath is offered at Indian Springs Resort also in Calistoga. At this mid-century modern spa, guests will spend about 10 minutes soaking in a mud bath with volcanic ash mud sourced from the spa’s property and mineral water from its hot springs. for 15 minutes in geyser water that is rich in minerals and salt. Guests are then led to a steam room to spend five to ten minutes relaxing before being given a private room to rest for 15 minutes, wrapped in soft flannel blankets and cucumber slices placed on the eyelids. Golden Haven Hot Springs Spa and Resort also offers mud baths for one, two or three people that consist of three steps: the mud bath, the hot mineral jet tub and the blanket wrap. At Solage Calistoga, guests can visit the mud bar and bathhouse for a signature “mudslide,” which is a three-part experience. It starts with a customized mud bath infused with essential oils tailored to each guest’s needs. The mud is applied by a therapist on the body, then the guest is led into a heated mud lounge or an area to sun bathe while the healing properties of the mud soak in. After a soaking in a geothermal mineral water tub, guests can relax in the spa’s sound chairs listening to soothing music and healing vibrations. The treatment can be extended with a 30- or 60-minute power nap in the sound chair.

Indulge Seasonally The Spa at Bardessono in Yountville is dedicated to pampering in accordance with the seasons by changing its offerings with the time of year. It also customizes its organic oil blends for treatments. Also keeping attuned with seasonal changes, Solage Calistoga offers a Chocolate Ginger Orange Warming Wrap during the cold winter months. This treatment begins with dry brushing and an aromatic cocoa mud wrap. It continues with a massage using warming ginger oil and vanilla orange goat milk cream and combines the techniques of Swedish massage and hot stone therapy for a heat-intensifying experience. The Auberge Spa offers two winter-centric treatments, including a facial and a total body treatment. The Self-Care and Repair Body Treatment is meant to exfoliate, hydrate and restore by dry brushing, a mud wrap and an Aryuvedic 38

hair treatment followed by a cardamom and coriander sesame oil massage.

Organic Bliss Sustainable and organic farming practices are widespread in the Napa Valley wine-growing sector. This practice transfers to the region’s spa industry, so if you’re looking for pure organic products for your spa treatments, wine country is full of them. The spa at Eurospa and Inn in Calistoga uses all organic products in its treatments, and it has some interesting ones on the menu. Try the oxygen lift facial, which is a 60-minute treatment steeped in luxury. It is aimed at firming the skin and working against age by infusing oxygen, plant-derived stem cells, peptides and a high concentration of enzymatic botanical into the skin. The spa offers a slate of wellness therapies, such as reiki, chakra reading and balancing and reflexology. Spa Terra at the Meritage Resort offers the Organic Bliss facial that incorporates a variety of organic ingredients that are full of vitamins and bioflavonoids.

Active and Healthy The Silverado Resort and Spa in Napa is serious about treating its golfers right. It offers a slate of spa treatments especially for golfers looking to improve their game or restore after a day on the links. Guests can choose a massage tailored to ease the muscles used during a round of golf or a facial working to counteract the effects of sun exposure. Other special treatments for golfers include a golf-ball massage, which enhances what the spa calls its “swing therapy” by using the ball as a tool for deep-tissue work that enhances muscle relaxation and joint flexibility. Several spas offer sports massages, which incorporate deep-tissue work and the use of homeopathic arnica cream to encourage muscle healing.

If you’re looking to blend activity with spa treatments, many of the larger spa resorts, such as Calistoga Ranch, Auberge Spa, The Carneros Inn and Solage Calistoga offer access to their schedule of fitness classes, including yoga, Pilates and tai-chi as part of their package offerings.

Wine Country Specialties Since being in Wine Country is a special experience, some spas offer unique wine or grape-themed treatments, such as body wraps, scrubs, massages and facials. The Vinotherapy Massage at Bardessono Spa in Yountville relies on the anti-aging properties of organic Chardonnay grape seed oil to rejuvenate and restore skin. The massage is available for 60, 90 or 120 minutes. Also at Bardessono, guests can truly indulge Wine Country style by taking a Champagne bath. It’s not a bath in Champagne, but rather a bath accompanied by drinking sparkling wine. The bath water is infused with salts, essential oils, antioxidants and botanical extracts for optimal toxin release. This is available to hotel guests only, but it’s a good reason to stay there. A 50-minute treatment called Vino Bello at Spa Terra at the Meritage Resort in Napa begins with a grape-seed scrub, which is followed by a mineral and antioxidant-rich wine and rosehip mud wrap. The treatment ends with an application of grape-seed lotion intended to refresh and regenerate the skin. For its Grapeskin Wrap, The Carneros Inn Spa therapists apply a gentle dry brushing to the skin then use warm, oceanic clay enriched with Cabernet grape extract to smooth skin. The clay is rich in anti-oxidants from the grape skins so it detoxes and refines the skin. Following the clay application, a therapist gives a hot-oil hair and scalp treatment and then a rehydration massage with honey and quince lotion. 40

Men Only A spa day may not be the first thing that a man thinks to do on vacation, but many spas in Napa Valley offer treatments that cater directly to a man’s sensibilities, with specialized facials, massages and unique experiences. The Napa Spa at Calistoga Ranch offers men various male-exclusive treatments, including an Ale Bath. It’s bathwater infused with hops. The 30-minute bath is a traditional remedy to help calm the body, relieve muscle tension and support the overall immune system. While relaxing in the bath, guests enjoy a local craft beer and a selection of mixed nuts. The BABOUR facial for men offered at Spa Terra at the Meritage Resort in Napa aims to restore and balance the skin while remedying the negative effects of climate, fatigue, stress and shaving. The facial can be reserved for 50- or 80-minute sessions.

Romantic Interlude There’s no denying that Wine Country, from its winery estates to its majestic beauty, is a lover’s paradise. Solage Calistoga has an entire menu dedicated to connecting as a couple. Pairs can choose from couple’s massage to more intimate and unforgettable experiences, including an intentional wellness treatment. Couples can set an intention for shared wellbeing by creating a special aromatic oil blend and other customized products to be used by the treatment therapists for a full body exfoliation and massage. Calistoga Appellation Family-Owned Wineries, Hospitality and History When most people think of Napa Valley, they conjure up images of large wineries along Highway 128/29 that offer elegant tasting experiences and luxurious settings in which to enjoy the fruit of the valley. In Calistoga, there are certainly a few of these locations—namely iconic wineries like Sterling Vineyards and Castello di Amorosa. There are also, however, smaller familyowned wineries that harken back to an older era of Napa Valley. This eclectic mix of large and small, luxurious and down-to-earth, is what makes Calistoga such a special destination. It’s hard to think of Napa Valley as being filled with familyowned wineries because of the sheer fame and notoriety the region has received for producing world-class Cabernet Sauvignon, and because of bigger Napa Valley winery names that fill the shelves of retail stores and wine shops across the country. The truth is that Napa Valley only produces a very small amount of California’s wine and family-owned wineries far outnumber the big guys on the block. Exclusive, world-class wines from Calistoga aren’t easy to come by and here’s why: many of the family-owned wineries only sell straight out of their tasting rooms, which means that unless you visit the region, you would never have access to some of these small-production bottlings; and to top it off, even the bigger wineries craft smaller production bottlings that aren’t always sold in retail stores and wine shops. – BY MELISSA VOGT –

Elder says with pride, Calistoga “is a really neat small town. It’s a blessing that we have such a large collection of small family wineries.” Indeed, you truly do get a sense of family when entering Bennett Lane Winery, where comfort and warmth overtake your senses as you are greeted by the friendly staff. Always curious and ready to tailor experiences to each group’s desires, the friendly staff takes hospitality to another level—one that makes you feel at home in their upscale tasting room. Comfortable leather couches adorned with cozy pillows, a marble-top tasting bar and gorgeous views from their outdoor patio make the atmosphere luxurious and relaxed. There is a sense of good ol’ fashioned, down-to-earth hospitality waiting around every corner. “We want to be your own personal wine stewards in your living room,” Elder says with a smile. Certainly while tasting through the wines with Elder, this is exactly what guests can expect—a friendly conversation about wine that makes you feel as if you are catching up with old friend whom you hadn’t seen in years, and as the discussion continues, it’s as if no time has passed between you at all. At Bennett Lane Winery, Winemaker Rob Hunter and Assistant Winemaker Rachel Gondouin have crafted a wellbalanced collection of classic Napa Valley wines.

What to Taste at Bennett Lane For those looking for a taste of white wine, the 2013 Reserve Chardonnay is an excellent start—beautifully crisp on entry with a bit of body, this Chardonnay boasts notes of lemon meringue, melon, pineapple and a touch of honeysuckle and lime zest with a stony minerality that balances out that fruit. Fifteen percent malolactic fermentation and only 30% new French oak (aged for 12 months) makes this Chardonnay very balanced and pleasurable on the palate. Of course, the flagship 2009 Maximus is showing beautifully in this vintage. Aromas of blueberry, warm red fruit, cassis and a touch of vanilla lead to a palate with flavors of blueberry, subtle dark fruit, cocoa and white pepper wrapped up in a full body with soft tannins and a dry finish that lingers on the tongue. This is a stunning, wellbalanced blend of Cabernet Sauvignon (69%), Syrah (18%), Malbec (5%), Merlot (4%) and Petit Verdot (4%) that was aged for 14 months in 20% new French oak. For Cabernet Sauvignon purists, Bennett Lane Winery crafts both a Reserve and nonreserve bottling. The fruit from the 2006 Reserve Cabernet Sauvignon has fallen to the background so that more terroir-driven notes can lead on the palate with flavors of subtle blackberry, dark chocolate, volcanic soil and smoke. More recently released vintages like the 2009 Cabernet Sauvignon shows youthful notes of warm red fruit, plum and baking spice with soft tannins and earthy, eucalyptus undertones. Needless to say, the Cabernet Sauvignon at Bennett Lane Winery will surely exceed your expectations for this classic Napa Valley varietal. TEDESCHI FAMILY WINERY A Taste of the Old World in Calistoga

What to Taste at Tedeschi The 2014 Chardonnay’s seductive aromas of pineapple, green apple and a touch of barrel spice make way for the palate’s nice acidity, balanced by flavors of green apple, white peach, lemon zest and a touch of honey. Both unique and fantastic is the 2013 Grenache from the Sonoma Coast appellation, with luscious aromatics of dried strawberry, blueberry and dried red cherries. On the palate, this soft and seductive wine opens with notes of cocoa, dark chocolate and black cherry, followed by dried strawberry and hints of leather. When it comes to the Bordeaux varietals, Tedeschi Family Winery boasts a dark and stony, almost volcanic nose on the 2010 Merlot, with notes of dark raspberry, blackberry dried fruit and soft tannins on the palate. The 2012 Cabernet Sauvignon is also quite stony, granitic and earthy on the nose with a touch of red fruit; the palate shows initial flavors of leather, fresh tobacco leaf, cocoa, raspberry and blackberry enveloped in a luscious body with gentle tannins—quite drinkable in its youth.

There is no experience in Calistoga that parallels the laid back, family-oriented style of Tedeschi Family Winery. Situated among stunning, old walnut trees on a small oneacre parcel of Cabernet Sauvignon vines, Tedeschi Family Winery boasts a setup that makes you feel like you are stepping into Old World Italy, where everything is done on minute scales, family friends greet you at the door and casual strolls out in the vineyard are par for the course during a down-to-earth tasting of their sophisticated and unpretentious wines. The tasting room itself is really more of an old barn structure that doubles as the barrel room. To the side of the redwood-planked tasting bar is a makeshift office that suits the needs of this small family winery’s 2,000-case production operation. Lindsay, a family friend, can often be found behind the bar expounding on the warmheartedness of the Tedeschi family while pouring their incredible wines. Cesar, the family’s Tabby cat, may greet you with a gentle rub against the leg and faint meow from below. In the evenings, Aunt Fran of the Tedeschi family walks the vineyards with Cesar at her side. To say that the warmth and the history of the Tedeschi family is felt at their humble estate is an understatement. The place exudes family in a way that transports guests to another time and place. At Tedeschi Family Winery, guests experience the serenity of Calistoga at the estate property that is neatly tucked away between vineyards, trees and other family homes. There is a sense of comfortability, as if you’ve walked over to your neighbor’s backyard to enjoy a glass of wine, as Lindsay pours the 2012 Cabernet Sauvignon into your glass while you peer at the one-acre parcel of vines from which the wine is made. Who are masterminds behind the vines and the wine? Brothers Mario and Emilio Tedeschi. Mario and Emilio are fourth-generation Tedeschi family winemakers and viticulturists. They farm their one-acre parcel of estate Cabernet Sauvignon vines and source fruit from a variety of Napa and Sonoma vineyards that they have had longstanding relationships with. Having been rooted in Calistoga since 1919, and having purchased the family home and estate vineyards in the 1950s, the Tedeschi family takes pride in their connection to other grape growers in Northern California wine country; in this way, they are able to maintain the sourcing of excellent fruit for their varied collection of wines. The quality fruit is crafted into “Old World-style, low-alcohol, food-friendly wines,” Lindsay states. In true Old World fashion, Lindsay says about estate Cabernet Sauvignon vines, “are dry farmed; we haven’t watered in about twenty years.” Cover crops adorn the soil between the rows during the dormant season with legumes, wheat grass, fava beans and mustard plants. The wines also see very low amounts of new oak, mostly neutral, to keep in line with traditional Old World practices.

Their collection includes an impressive array of varietals, no doubt a result of their longstanding connections and their ability to source incredible fruit from many different regions. There’s a Carneros Chardonnay and an intriguing rosé that includes some Calistoga old vine Gamay. On the red side, there’s everything from a Sonoma Coast Grenache to the estate Calistoga Cabernet Sauvignon—and all of the wines are phenomenal. These are sophisticated, downto-earth wines that speak to the Old World sensibility of the Tedeschi family. They reflect and embody the genuineness of the family, the humbleness of the estate and their commitment to the vines in their passion for crafting Old World, terroir-driven wines with true personality and character.

Single Vineyard Heaven

If you are a lover of single vineyard wines, August Briggs Winery in downtown Calistoga is the place for you. Making an exclusive collection of single vineyard, single varietal wines (except for one blend) from highly regarded vineyard sites in both Sonoma and Napa counties, August Briggs Winery has been crafting small production bottlings for more than 20 years. “We started out of a garage,” Matthew Gasco states. The winery was founded in 1995 by namesake August “Joe” Briggs, who at the time was a winemaker consulting at various wineries in Northern California wine country. Having developed longstanding relationships with many grape-growers, wineries and vineyard-owners, Briggs began buying fruit to make his own wines. Today, Matthew Gasco and Colette Milliman run the winery; Briggs’ nephew, Jesse Inman, is the current winemaker. He grew up in the vineyards and studied under his uncle before taking on the role as winemaker. This downtown tasting room is very unique—it’s cozy and quaint in that down-toearth sort of way that makes Calistoga feel so special, and the wines offered are unlike any collection you’ve seen in other tasting rooms. Special offerings like Charbono and Pinot Meunier allow guests to taste outside the usual lineup, but of course, they still offer classics like Chardonnay and Cabernet Sauvignon. Case production on these wines range from anything as small as 50 cases up to roughly 400 cases—totaling around 3,500 cases annually comprised of about a dozen individual bottlings. The winemaking is simple and elegant, allowing the wines to speak for themselves without being masked by too much oak or an over-bearing hand in the cellar. Instead, these wines show finesse, restrained oak and the nuances of their special vineyard sites. These unique and classic single vineyard wines truly showcase the beauty of Northern California wine country’s premier vineyard sites—and August Briggs Winery does an excellent job at showcasing them in their friendly and cozy tasting room in downtown Calistoga.

What to Taste at August Briggs The 2012 Chardonnay, the winery’s only white wine, comes from Leveroni Vineyard in the Carneros appellation. The soils in this vineyard are rocky and alluvial, and the vines are planted to Wente and Robert Young clones. The aromatics of this wine show kiwi and lemon cream, while the palate brings lemon meringue pie, kiwi, a touch of pineapple and wet stones wrapped up in a gently creamy body, with nice acidity balancing out that fullness. Charbono is a food-friendly and versatile wine, and at August Briggs Winery, their 2012 Frediani Vineyard Charbono from Calistoga makes you wonder why more wineries don’t produce this varietal. The famous Frediani Vineyard is comprised of rocky, loamy soils on the Silverado Trail; the vines are old and dry-farmed, producing very concentrated and intense grapes. Light on the palate and aromatic on the nose, the 2012 Frediani Vineyard Charbono smells of mixed fruit liqueur and a touch of caramel. The palate offers luscious notes of raspberry and cherry, with excellent spice and floral characteristics; its gentle structure and lighthearted style make this a wonderful food wine and a deliciously easy sipper. 55

The 2013 Chardonnay shows lively aromatics of orange zest, golden apple and lemon cream, while the palate brings a nice balance between creamy roundness and crisp acidity, with flavors of green apple, lemon cream and caramel. Diving into the reds, the 2013 Pinot Noir hails from the Sonoma County side of wine country; the nose boasts smoky nuances with plum, dark berry fruit and a gentle whiff of vanilla. What to Taste at Frank Family There’s a Chardonnay for the old-school California Chardonnay lovers—the 2013 Lewis Vineyard Reserve Chardonnay—aged for 11 months in 100% new French oak, with rich flavors of Meyer lemon and apricot enveloped in vanilla-infused, creamy body; as well as one for those who lean toward a more Burgundian style—the 2013 Napa Valley Chardonnay—aged for nine months in 34% new French oak (with the remainder in 33% each of second- and third-fill French oak)—boasts brighter fruit of green apple, pineapple and stone fruit with touches of subtle caramel in a balanced, crisp style. A Castle Unlike All Others This estate and castle is owned by the historic Sattui family (who also owns the famed V. Sattui Winery). Castello di Amorosa was modeled in style to reflect a 13th century Tuscan-inspired castle. Rather majestic as it sits atop a hillside on the base of the Mayacamas Mountain range, Castello di Amorosa is a glorious site to behold. Its ancient, medieval architecture and labyrinthian halls beg you to spend at least a couple of hours on the estate, taking in all that it has to offer. Fruit from the iconic Bien Nacido Vineyard in the Santa Maria Valley appellation (of Santa Barbara County) is harvested for 2013 La Rocca. This beautiful Chardonnay is fermented and aged in a single concrete egg tank on the lees for ten months. With no oak influence, the aromatics, flavors and textures are unique compared to their other Chardonnays. Pineapple, green apple, green mango, banana and banana cream pie hover above the glass beautifully; the palate is filled with layers of fruit and spice, wrapped up in creamy, round textures that fill every inch of the palate. Under-ripe pineapple and green apple dominate with notes of wet rocks and cinnamon in the background. The acidity is gentle but still gives the right amount of contrast to the creamy texture—overall bringing great balance to this pure, unique wine. This Chardonnay is a great choice for those who aren’t a fan of oak-aged Chardonnay; it is fresh and delicious, showcasing the terroir and high quality grapes from which the wine is produced. What to Taste at Sterling Certainly a wine not to miss is the 2011 Platinum, which is a blend comprised of mostly Cabernet Sauvignon (95%), followed by Petite Verdot (4%) and Malbec (1%). Bordeauxlike in style, this wine offers aromatics of mint, volcanic ash and dark black fruit; the palate is silky smooth and dry, with flavors of raspberry and cocoa wrapped up in a gentle, finessed style. Another must-taste is the 2011 Winemaker’s Select Red, which is a blend of 65% Cabernet Sauvignon with Merlot, Petite Verdot and Zinfandel. With forest-like aromas on the nose coupled with raspberry, this wine draws you in; on the palate, a lighter-styled body and low oak allow for raspberry and red cherry notes to mingle nicely with floral characteristics, dark chocolate and espresso. 61

History, Fame and Consistently Classic Wines

Chateau Montelena—just the name gives you goose-bumps. This iconic Napa Valley winery, situated among the natural beauty of the Calistoga appellation, brought California wine to the forefront of the world wine scene. Famous for their 1973 Chardonnay that won the 1976 Judgment of Paris Tasting, which was organized in France by British wine merchant Steven Spurrier, Chateau Montelena is now one of Napa Valley’s most recognized estates. But the history of Chateau Montelena goes back much further than the Paris Tasting. In fact, Chateau Montelena was founded in 1882 by Alfred Tubbs. Working with French Winemaker Jerome Bardot, Chateau Montelena was the seventh largest winery at the time in Napa Valley, with a production of 50,000 cases. As is the case with most of the wineries during Prohibition, grape growing halted and winemaking ceased. Post Prohibition, Tubbs’ grandson—Chapin Tubbs—continued growing grapes, but did not make wine on a larger scale. In 1958, when Jeanie and Yort Wing (Frank) purchased the estate, Chateau Montelena went into a period of winemaking dormancy. However, the Wings’ presence is still visible everywhere, with the gorgeous gardens, lake and network of bridges and gazebos they put in during their period of ownership. Creating an environment that welcomed wildlife and preserved the rural beauty of the region, today Chateau Montelena is one of the most naturally beautiful wineries in Napa Valley. In 1972, Jim Barrett steps onto the scene as a Southern Californian looking for respite from his life as a real estate attorney. Seeking investment opportunities, Barrett settled on the purchase of Chateau Montelena. “That was the rebirth,” Kevin Jordan, tasting room associate and tour guide at Chateau Montelena says. It wasn’t but four years later that the estate’s second ever vintage of Chardonnay, the 1973—which was crafted by Napa Valley VERY NAPA VALLEY

icon Mike Grgich—won the Judgment of Paris. At the Intercontinental Hotel in Paris in 1976, this wine won the top score of all ten white wines tasted—beating out classic expressions of Chardonnay from France’s illustrious Burgundy region. Heads turned. Critics were flabbergasted. Wine geeks scoffed. The world took note of Napa Valley. This fame was only compounded by the 2008 film Bottleshock, which has brought eager wine enthusiasts to the estate with renewed interest for Chateau Montelena wines. Today, Chateau Montelena stands beautifully among the local flora and fauna of Calistoga. Redwood and oak trees are interspersed with the well-kept gardens, and the estate sits in the middle of all this, surrounded by their estate vineyards. Tucked back away from the hustle and bustle of Napa Valley, the Chateau is private, serene and incredibly inviting—and the wines continue to remain consistent classics of true Old World style Napa Valley wines. Their collection of wines is beautiful, terroir-driven and tastes even better with a bit of age.

The 2013 Chardonnay, of course! A trip to Chateau Montelena wouldn’t be complete without a taste of the famous Chardonnay. This beauty is made with no malolactic fermentation, preserving the wine’s natural acidity and freshness. It is aged for ten months in French oak, with just a mere 8% new. “Everything is done the same way—the only deciding factor is Mother Nature. You can taste the vineyards each year,” Jordan says. Fruit notes of green apple, lemon, lychee and kiwi mingle with excellent minerality; there is nice acidity on the palate juxtaposing a gentle, creamy body—this contrast dances slowly across the tongue on the long finish. The 2008 Cabernet Sauvignon is 86% Cabernet Sauvignon, 12% Merlot and 2% Cabernet Franc. Low yields of carefully selected fruit comprise this blend, which sees 14 months aging in 23% new French and European oak. Aromatics of raspberry, cherry liqueur, whiffs of baking spice and a rocky minerality express themselves prominently above the glass. In the glass, the palate possesses gorgeous body with a lot of rocky minerality, with the fruit quietly whispering in the background. The body is finessed and the terroir is evident in its essence of earth and minerals. The quiet raspberry and cherry fruit is nicely juxtaposed against those ashy/smoky notes. Made from 100% estate-grown grapes, the 2005 Estate Cabernet Sauvignon shows enticing aromas of dried leaves, rocky minerality and subtle fruit. Meaty, rock-like minerality flavors on the palate are enmeshed in soft tannins and immense complexity. Refined and silky, this Cabernet Sauvignon is very balanced, dry and long on the finish. Dried leaves, tobacco and dried fruit are hints of beautiful aging, though this wine still has many years to live—as there is still a gorgeous energy on the palate.

DAVIS ESTATES On the Horizon “My love affair with Napa Valley started when I was eight years old. We camped in the area,” Mike Davis, proprietor of Davis Estates, says with a smile on his face. A grand estate with no small detail overlooked, Davis Estates is primed to be one of Calistoga’s most luxurious places to spend an afternoon in Napa Valley. In 2011, Mike and Sandy Davis purchased this historic property from the Saviez family—who have been the owners for three generations. Upon launching the project, Mike Davis explains, “We had a vision for what we could do with it. The vast landscape, and the flora and fauna—all the way up to the mountain peaks. We wanted to design a winery that’s really representative of our wines.” There is no doubt that the Davis family has done just that. The buildings on the property that are already completed exude the same elegance and finesse of the current release wines. As for the remainder of the property that is still under way, the grand plans are unfolding gorgeously right before everyone’s eyes. Having hired Howard Backen, renowned architect of Backen, Gillam & Kroeger Architects who is also known for his work on Harlan Estate, Larkmead Vineyards and others, the estate exudes a sense of fine art. The entire concept of the estate, its unique buildings and sense of place, constructs itself like a masterful work of art. From top to bottom, every piece has been hand-selected to create a thematic experience that will leave guests in awe of the estate’s beauty. The brand new winery portion of the estate will be chock full of modern luxury—expect comfortable lounging in a variety of rooms and environments, a gorgeous balcony overlooking the valley, a wood-fired brick pizza oven and commercial kitchen, private rooms 64

for parties, gatherings and wine club members, and more. A bit of rustic history meets elegance in the refurbished, 1922-built barn. Still with its original walls intact and inner structure in place, the inside of the barn has been decked out for comfort and style. Cozy lounge couches surround elegant wood tables for seated tastings, and a massive and gorgeous barrel-stave table sits atop wine barrels in its simple beauty. There’s a 1909 piano that “began its life in New York in the silent theater,” Davis states, as well two classic tractors—a 1939 John Deere and a 1949 Ford. These are the personal touches that Davis has overseen while working with Backen. “I love the old historic look and feel,” Davis says. “I wanted to carry that through the winery.” Keeping that sense of history that comes from this historic property, Davis has also made every effort to respect the land. For the vineyards, “we went through and scientifically pinpointed what we wanted to plant where,” he points out. Davis is excited to see how the terroir suits each of the grape varieties he has planted and farming the vines with as much attention to detail as he has given the design of the estate. The vines are cared for meticulously, hand-harvested and the quality of clusters is a top priority. From these estate grapes, as well as vineyards they own in Howell Mountain, Carneros and Rutherford, Davis has hired Cary Gott to make wines for the Davis Estates label and Hungry Blonde/Ravishing Raven, and Philippe Melka for the Phase V. All of these wines are very small production and exude elegance, finesse and craftsmanship. When it’s all said and done, there is no telling what the demand for these wines is going to be like. The word is going to get out that the wines are incredible and that the estate’s beauty matches in comparison. Estates like this are what keep visitors coming back to Napa Valley again and again.

What to Taste at Davis Estates The 401-case production 2013 Sauvignon Blanc is aged for ten months in 60% new French oak. This gorgeous wine exudes opulence and complexity. Aromatics of lemon curd, minerality and wet stones leap from the glass, and the palate isn’t shy either—it is full of life with a gorgeous mouthfeel, pleasurable stone minerality, gentle preserved lemon nuances, cantaloupe, and touches of caramel and vanilla to round out the crisp acidity. The 2012 Cabernet Sauvignon sees 1% of Cabernet Franc, Merlot and Petit Verdot. The wine was aged in 50% new French oak, with the remainder in older French oak, for a total of 22 months. A fabulous vintage, this 2012 expression is young but already a beauty. A highly aromatic nose of mixed fruit leads to a palate that is both dark and robust, while still being balanced and finessed. Notes of dark fruit mingle with well integrated oak, gentle tannins and volcanic-like minerality with a finish full of floral and fresh herb characteristics. SPRING/SUMMER 2016

A lounge-style bar area sits adjacent to the more formal dining seating—everywhere you look there is a sense of comfort and style, and the aromas from the kitchen are intoxicating. Starting off with some small bites, you wouldn’t want to miss the fried Brussels sprouts; perfectly crispy on the outside and tender on the inside, these little bite-sized pieces of heaven are delicious when dipped in the house-made aioli. Another excellent small plate is the house-made ricotta crostini served with pepper jam. Pair this creamy, sweet, spicy and crispy combination with a glass of Schramsberg’s non-vintage sparkling rosé and your meal will be off to a great start. Of course, you can’t go wrong with the incredibly fresh chilled Hog Island Sweetwater oysters—always fresh, salty, meaty and delectable when slurped down with a variety of sauces. These tasty morsels are a real delight with Coquerel’s 2012 Calistoga Verdelho; this grape variety originates from Portugal and this Calistoga expression is both creamy and crisp with flavors of lime zest, nectarine, white plum and a touch of barrel spice. It’s an instant classic with these fantastically fresh oysters. You could also pair this wine with the Opah ceviche, which is fresh, briney and delicious in its simplicity of flavors. Another favorite is the celery root and chestnut soup. There is incredible depth of flavor in this soup, which brings creamy texture together with savory and earthy flavors. The layers of depth keep unfolding on the tongue with bits of bacon, fresh herbs and chunks of chestnut that bring an extra meatiness to the soup’s already hearty taste. This soup is nicely paired with Olema’s 2013 Sonoma Coast Pinot Noir; the wine’s lush and silky texture matches the soup, and its mouthwatering flavors of strawberry, red cherry and earth bring added complexity to the pairing. For main courses, you can’t go wrong with the classic pork chop or tasty branzino. The pork chop is tender and juicy, and nicely contrasted against the spicy horseradish and flavorful polenta. The branzino— grilled sea bass—is tender on the inside while maintaining crispy char on the outside; this is beautifully coupled with soft potatoes and hearty, earthy greens. A delectable dish, this pairs beautifully with Venge Vineyards 2013 Scout’s Honor—a sophisticated blend of Zinfandel, Petite Sirah, Charbono and Syrah. This distinct blend couples nicely with the char of the branzino, making for a fine pairing. Top the meal off with the candy cap churros served with cream and dulce de leche, and you’ve got yourself a sublime finish to a delicious meal! Of course, if you pair those crispy-on-the-outside and soft-onthe-inside chunks of cinnamon/sugar heaven with a 10 Year Tawny Port, you’ll be begging for more. From start to finish, Sam’s Social Club offers excellently prepared cuisine that is full of flavor and depth, and even better when paired with wines from their carefully curated wine list. 68
