ecilia and Rigo Garcia cordially invite you to visit their restaurant, Fresh Agave, and taste their signature Fresh Agave Margarita (Don Julio Silver Tequila, lime and agave nectar) to judge for yourself how well it pairs with their tasty menu, full of traditional favorites with a contemporary flourish. When you walk into their attractive eatery, a number of things stand out. The space is divided into a cantina and an airy dining room. Teal walls feature artistic renditions of the agave plant alongside colorful metal sculptures playing off more old-fashioned wall sconces. The moment you enter, you are greeted and served by one of the friendliest crews in town. Owner/manager Cecilia is a petite and animated woman with a memorable smile. She has a clear philosophy of her business and what she hopes to achieve every single day with every single patron: “We want our customers to feel right at home so we serve great food with an emphasis on that warm feeling of welcome we have become known for.” Indeed, Cecilia and Rigo, who both come from families with a tremendous record of restaurant experience, started in the

business at the tender ages of 14 and 16 respectively. While Cecilia has been employed as a hostess and server, Rigo has held every position imaginable as he worked his way up from dishwasher. Because of their estimable work ethic, attention to detail and amicable personalities, locals got to know and remember them, following them from job to job until they were able to open their own place. “We have been at this location for five years and feel fortunate that so many of our longtime clients have become regular patrons,” Cecilia said. Chef Elias Jimenez and Cecilia, who have overseen the development of Agave’s menu, have ensured that it is interesting and varied, with something for every taste. “Chef Elias loves to cook,” Cecilia told me. “He demonstrates a real passion for the kitchen.” The top seller would be the Fajitas Agave (strips of succulent chicken or beef sizzling on a skillet with caramelized onions, green peppers, guacamole, pico de gallo). You can also order shrimp or calamari steak. For a real treat, try the Fajitas Grande, which comes with chicken, beef, calamari and shrimp. Rigo and Cecilia’s pick is the Taco Fiesta for 2 (an array of lively proteins includ-

ing carne asada, pollo Asado, carnitas and chorizo) with fixings like pico de gallo, sour cream, jalapenos and cheese to construct your own perfect meal. The chile rellenos are made from light and fluffy poblano peppers stuffed with Monterrey Jack cheese, Salsa Ranchera and Cotija cheese. And you should also consider another house specialty – the Tamales Jalisco (finely ground corn meal dough replete with delicately spiced beef, chicken or pork, wrapped and steamed in corn husks and drizzled with salsa roja). For fish lovers, the salmon is beautifully grilled and smothered in a chunky Ranchero sauce. Of course, Fresh Agave offers a full bar, a nice selection of wine and a good choice of Mexican and American beers. n 1969 Papa Nicolino, his Emilie and two son’s Michael and Mark moved to Palm Springs and opened an Italian Deli and Bakery. The bakery and deli was named Nicolino and Sons. It was an overnight success with the first to serve the valley with Italian specialty breads and delicious Italian cold cuts. The valley’s local residents along with Palm Springs celebrities, such as Frank Sinatra, Burt Lancaster, Natalie Wood, Robert Wagner, Sonny Bono, Pat Henry and the list goes on who enjoyed Papa Nicolino’s fresh bakery items and deli. Papa Nicolino, his wife and Michael moved and opened an Italian Restaurant in Lake Havasu, AZ in 1985 and again became a success in that community. In 1985 Mark and his wife Rhonda closed the Palm Springs location and opened Nicolino’s Famous Italian Restaurant in Cathedral City. With the great recipes passed down from Papa the local favorite restaurant continues to be popular with the valley locals, celebrities, young families, lovers, seniors, visitors and just about all walks of life that enter into these doors. Y
ianni Psalios is a force of nature. If you’ve ever met him, you know what they mean. His smile is as warm as a Mediterranean summer, but when you shake his hand and see the confidence in his eyes, you know you’re in the presence of a man who makes things happen. Born on the island of Cyprus, Yianni came from generations of farming and winemaking. He spent his boyhood in Phini Village, a lush resort area in the island’s verdant Troodos Mountains. His father hoped he’d practice medicine, but even in those early days, the boy had ideas of his own. At 10, he landed his first job, picking up bottles and glasses around a hotel pool. The next summer, he was promoted to dining room bus boy. When Yianni was 15, the first hotel management school opened on the island and Yianni arranged, without his father’s knowledge, to take the entrance exam … along with about 500 others. Though still in high school, he was chosen one of only 30 applicants to be accepted for the two-year program. With diploma in hand, Yianni completed his mandatory army service before setting out to see the world. On passenger ships and merchant marine vessels, he sailed the seas, working his way from port to port as a chief steward. Over time, the one place he loved returning to was Vancouver, Canada. In fact, the city drew him so powerfully that he actually “jumped ship” at one point – by-

passing official immigration channels – a decision it took him two-years to sort out. Working several jobs and becoming acquainted with the area, Yianni came to a conclusion: the city needed an authentic Greek restaurant. And so, at the age of 23, Yianni opened Kypriak Taverna. Before long, the success of the first bred a second, Kypros. As word of his food and hospitality spread, visitors from other parts of Canada became regulars. New friends persuaded Yianni to visit Edmonton. It was the tail end of an oil boom and Yianni liked what he saw, particularly a comely, dark-haired young woman named Kally, whose parents just happened to be in the restaurant biz. Since starting over was Yianni’s forte, he sold his Vancouver holdings and relocated to Edmonton. His marriage and a new restaurant called Yanni’s Backyard was followed in short order by Koutouki (Yianni translates this word as Greek for “hole-in-the-wall with good food and wine”). Over the ensuing decade, 12 more restaurants – and in the years since, 12 more. When asked why so many, Yianni answered: “I opened a place; it was successful but not big enough; waiting lines to get in; I open another, bigger place; then IT was successful; more waiting lines … I had overflow. After hearing for years how great Palm Desert was, Yianni brought the family for a visit in 2013. It was 30 below in Edmon-

ton and 80 degrees in California. He liked what he saw, and so did his family, who are all involved in the family enterprises. “I decided what Palm Desert really needed was an authentic Greek restaurant!” On August 12, 2015, Yianni and family opened Koutouki Greek Estiatoria, specializing in traditional dishes Yianni enjoyed as a boy. Ocean blue awnings accent a white washed exterior. The interior, flooded with natural light, exudes a southern European beach ambience. This is a place to dance and dine and sip with good friends. Son-in-law Chris points to the Octopodi Skaras (char grilled octopus drizzled with olive oil and lemon juice) as a foodie favorite. The family also recommends the Koutouki Meze – a dazzling 12 course meal designed to be shared consisting of salads, dips, pita bread, cheeses, vegetables and lamb. It is a spectacular spread, meant to be savored slowly. These days, Yianni and family are settling in nicely. They all adore the desert – Yianni says, “It feels like home, a city with a village mentality and welcoming manners; approachable.” Interestingly, this is also an apt description of the area’s newest Grecian-flavored enterprise.
