The Funk Zone in Downtown Santa Barbara TASTING ALONG THE URBAN WINE TRAIL Stretching from the beach at Cabrillo Blvd. to Highway 101, between State and Garden streets, The Funk Zone is home to The Urban Wine Trail. This area is not only hip, groovy and very trendy. Come for the wine tasting … and as you do, explore the rest. Pick up a walking map at any of the many tasting rooms to guide you to well over two dozen tasting rooms where you will spend the day enjoying wines representing Santa Barbara’s best and meeting like-minded wine explorers. The Funk Zone’s businesses are mostly in old converted warehouses, exuding a unique vibe and personality, so prepare to discover the many wine adventures awaiting you, such as: Corks n’ Crowns, cool, hip, sophisticated, laid back, eclectic, funky and NOT to be missed – especially on a Sunday! This is not your typical tasting room! This IS the place where you go to taste wines and craft beer, and on Sunday, have your wine tasting paired with gourmet cupcakes from Violette Bakeshop! (Note: when the cupcakes are gone…they are gone, so get there early). Highly recommended is the Sparkling Wine pairing with cupcakes, truly SA

And, if it’s beer you want, enjoy a tasting from some of America’s finest craft breweries. Don’t miss visiting this fine wine and craft beer tasting room on The Urban Wine Trail. Sip around the spacious bar in the front room, or go into the back barrel room and relax with your tasting as your affable host or hostess pours and guides you through a selection of award-winning wines and relates some winery history. To enjoy your tasting to the max – ask about the gourmet cheese pairing (offered Friday-Sunday), and before you leave, if you would like a tour of the winery – just ask! You’ll be hard pressed to find a more relaxing, friendly winery on the Urban Wine Trail – so go back to where it all began in 1962 – enjoy a taste of the Funk Zone while you enjoy a taste of Santa Barbara Winery! 227 are known for two things: Oreana Winery unabashedly says they PARRISH FAMILY VINEYARDBut, don’t take their word for it, Great Wines and Fabulous Parties! make it a point to visit and prove it to yourself. Justin Vineyards & Winery Opens New Tasting Room in Downtown Paso Robles Justin Vineyards & Winery opens a second Tasting Room location situated prominently on the square along Downtown City Park in Paso Robles. As the region continues to gain global recognition as an award-winning AVA, this expansion allows more visitors the firsthand opportunity to experience the renowned Justin brand. As guests enter the Justin Downtown Tasting Room, they are met with an elegant space featuring an expansive wine-tasting bar, lounge, and a full dining room, all ideal for exploring Justin’s portfolio of award-winning Bordeaux-style wines. Guests can enjoy Justin’s seasonal wine-tasting flight and select wines by the glass, which can be savored alongside a locally-sourced artisanal cheese platter or pâté board. Those looking for a more formal dining experience are encouraged to indulge in the rotating menu of à la carte items or a seasonal pairing flight, both inspired by the award-winning Restaurant at Justin. Every detail of the new space was artfully curated and customized—from the “infinity” underground bottle display at the front alcove down to the pattern of the floor tile, which is a reproduction of the famous “Gaudí tile” designed by Catalan architect Antoni Gaudí in the early 20th century. Kaoru Mansour, a Japanese-born artist now based in Los Angeles, created the series of six paintings displayed throughout the dining area and French artist Christophe Côme created the room’s dramatic metal and glass divider. Throughout the space, 14 stateof-the-art high-definition screens take

guests on a visual enological journey coined, “Liquid Containers.” The rotating digital installations produced by Mill+, a collective of the Oscar-winning studio The Mill, feature a series of different Justin wines being slow-poured at 1,000 frames per second. “Nearly 40 years after first establishing our roots in Paso Robles, we are thrilled to welcome our neighbors and wine lovers alike to our second location in the heart of downtown for a taste of Justin’s world-class wines in one of California’s most distinguished wine regions” said Clarence Chia, Vice President of Marketing and Direct-to-Consumer. The new Justin Downtown Tasting Room is located at 811 12th Street (next to the historic Acorn Building) and is open to the public Sunday through Thursday from 11 a.m. to 6 p.m., Friday and Saturday from 11 a.m. to 8 p.m., as well as for private events by reservation only.

PARRISH FAMILY VINEYARD OPENS ADELAIDA TASTING ROOM CENTERED ON HOSPITALITY AND WINE-CENTRIC EXPERIENCES Parrish Family Vineyard is known for award-winning Bordeaux varietals and its new winery and tasting room on Adelaida Road is quickly becoming a hotspot for wine lovers to relax and enjoy a tasting, pairing, glass or bottle of wine. Parrish Family Vineyard was a staple in downtown Paso Robles for seven years. Just opened in August, the winery and tasting room are set among 30 acres of picturesque estate vineyards and sweeping panoramic views. “While we adored our downtown location, we were ready to offer a more meaningful experience that combines education and exceptional hospitality,” says Cecily Parrish Ray, general manager. “We’ve created a place where people can be inspired and informed through a range of flights and pairings to experience the true essence of Parrish Family Vineyard.” At the new tasting room, guests are able to select their seats choosing from an indoor bar, lounge area or couch

seating, as well as a wraparound deck, patio area or around the fountain. The wine is served to them wherever they choose to sit so they can focus on their experience in a comfortable and charming environment. Dogs are also allowed in all spaces, indoors and outdoors. One of the more popular activities is a progressive tour and wine tasting through the vineyards every Saturday at 11am. Guests are able to taste wines right next to where the fruit is grown. Back in the tasting room, there are two menus available including a $20 welcome tasting and a $30 reserve tasting. Guests can also choose from cheese and charcuterie boards, bread and tapenade, a vegan veggie platter and chocolate truffle pairings. Be sure to try the bread made from scratch on site by Parrish Ray, including a sourdough that used Cabernet Sauvignon grapes as the starter. The large space also allows for groups of all sizes. Reservations are requested for groups six and larger, and can be made through the website. There are also several events spaces available to rent including a small conference room with vineyard views and a private dining room that seats 40 people for special events or dinners. While visiting, keep an eye out for winemaker and owner, David Parrish, who can often be found pouring in the tasting room or giving tours of the property. He was named one of “Wine’s Most

Parrish Putting Green The Parrish Family Vineyard putting green is an homage to David Parrish’s grandfather, who was one of the first people to plant grapes in Atascadero. The tradition dates back to 1925 where he planted and managed more than 740 acres. Then prohibition happened. So, he entered the golf business and the rest is history. ROBERT HALL WINERY COME STAY AWHILE — YOU’LL JUST WANT TO

The First Impression As the saying goes, “there is no second chance for a first impression,” and you won’t be disappointed at your first impression of Robert Hall Winery. The people “behind the counter,” being the face of the winery, are warm, friendly, knowledgeable and personable. The staff will make certain your tasting and touring experience is not only memorable, but one that compels you to return, and return with friends. They will greet you eager to pour, tell you about their boutique wines while introducing you to a unique experience.

The Beginning of a Winery Robert Hall, a Minnesota businessman, entrepreneur and real estate investor, was the founder of Robert Hall Winery. Becoming enamored with wine during a trip to France in the 1970’s, discovering Paso Robles in the 1990’s, Hall planned to build a world class winery in his “retirement.” The initial vintage was in 2001, with the property opening in 2005. During the time since, Robert Hall Winery has become a Paso Robles wine country destination, welcoming visitors to an elegant tasting room, surrounded by vineyards, to sample and enjoy their boutique wines.

Wine and Warmth You may be familiar with the Robert Hall name because of their retail distributed wines, however, selections being offered on the winery tasting menu are small lot production wines, under the Hall Cavern Select label (total production of about 4,000 cases). The current tasting menu features

FACTS AND FUN Take a tour of the 16,000 foot wine caverns and production facility (built in 1999). The tour is complimentary with a tasting, and depending on time, you may even be able to do some barrel tasting-educational and very interesting. To enhance your wine tasting, consider adding a perfectly paired cheese plate, described on your tasting menu. Create your own charcuterie board to accompany your wine-ask your host! Child friendly-for children of any age. Sip on the patio overlooking the vineyards; enjoy playing giant chess, jenga, checkers or bocce ball, while you make new friends, as you wine taste and munch. Be entertained by the Robert Hall Concert Series (mid-spring through mid-fall), Friday evenings 5:30-7:30. Featuring local musicians, local food (BBQ or Food Trucks), and wine, of course. Voted Paso Robles Winery of the Year in 2017 by the New York International Wine Competition and in 2016 by the Central Coast Wine Competition. Robert Hall wines have received multiple accolades and awards from: The Central Coast Wine Competition, the Monterey Wine Competition, The San Francisco Chronicle Wine Competition, Wine Enthusiast Magazine, Wine Spectator Magazine and others. Twenty-one separate varietals are sustainably grown on the 300 acre Hall ranch. The winery was purchased in 2016 by the O’Neills, a fourth generation winemaking family.

five wines, with the tasting menu changing monthly. Being limited production wines, you will only be able to sample the Cavern Select brand at the winery, and only purchase them through the winery or wine club. Winemaker Don Brady has been with Robert Hall Winery since the beginning, and has overseen every vintage since the initial 2001 release. Brady is proud to produce wines he says “are the essence of Paso Robles,” and indeed they are. Grapes sourced for Robert Hall wines come from each of the eleven Paso Robles AVA’s (American Viticultural Areas), truly representing the variety of the Central Coast Wine Country area.

The Three “S’s” Of Visiting As in the four “S’s” of wine tasting (see, swirl, smell, sip), the three “S’s” of visiting Robert Hall Winery are: Sit, sip, stay – which you will want to do. After our tasting, we just hung around for another hour or so to chill and enjoy the peaceful ambience. The view of the vineyards, the friendliness of the staff, the comfort of the tasting room and the relaxing patio simply calls to you to come, enjoy, rest and leave the stress of the outside world behind while experiencing “the essence of Paso Robles,” and Robert Hall wines. >> DON SONDERLING

The Hunt Family: Destiny, David and Satik

HUNT CELLARS Along the scenic Highway 46 West Wine Trail, just three miles west of Highway 101 at Oakdale Road in Paso Robles, is Hunt Cellars. For nearly 20 years, the tasting room has served wines crafted small batches created by David Hunt, owner and winemaker. David’s Bordeaux, Rhône-style Italian wines, Chardonnay, Pinot Noir and five highly acclaimed varietal ports aged in American and French oak barrels, are sourced mostly from rootstock nestled among gentle-to-steep hillsides within his 550-acre “Destiny Vineyards” parcel in Creston, just east of Paso Robles. The parcel is juxtaposed between two coastal influences of Morro Bay and Templeton Gap, which converge around Hunt’s mountaintop vineyard. “The source of the fruit is the most important component,” said David, whose Destiny Vineyard is named after his lovely daughter. “In the mornings, the vineyard is typically cool, a little foggy, and then starts warming up. By 4-5pm, you feel a dramatic chill from the west as coastal breezes come. That’s why we planted the vineyard from west to east. The breeze not only dramatically lowers temperatures but adds a little stress to the clusters to cling, thus creating great varietal intense fruit.”

18

The fact that David eventually lost his eyesight to retinitis pigmentosa from childhood doesn’t sway him. Rather, he takes full advantage of other more heightened senses to create great wine and along with music. Throughout Hunt Cellars, a musical theme can be found everywhere, from wine labels to the white baby grand that he occasionally plays to accompany his singing in the tasting room. The tasting room features a spacious deck and an open, yet intimate tasting room where visitors can relax and sample current releases and library selections either tableside or at the bar. Picnic lunches are encouraged, and private and corporate events for up to 40 guests are welcome with reservations. Featured just in time for the holidays are a half-dozen highly acclaimed Hunt Cellars wines, all of which has earned high scores in competitive tastings. Their 2014 “Cabovation Grand Reserve” (94 pts.) is among the most popular. Other current selections being poured in the tasting room include 2014 Cabernet “BonVivant” (93 pts.), 2013 “Red Velvet Grand Reserve” (94 pts.), 2013 Petit Verdot “One Hit Wonder (93 pts.), 2013 “Maestro” (92 pts.), and 2013 “Thriller” (92 pts.). Also popular is Hunt Cellars’ Cloud 9, a richlyflavored red made from three blocks of different soil types and

Hunt Cellars terroirs of cabernet from their estate vineyard. David notes the attributes of his wines that consistently surprise the customer, such how well Hunt wines age in the bottle. “I hear this all the time,” said David. “We can serve a 2005 red that people will swear is a 2012 vintage. Our 2008 Sauvignon Blanc has been compared to a 2016 vintage or a wine from Montrachet.” Another commonly mentioned comparison is the quality that surpasses high-priced wines from other regions. “Some visit restaurants wanting a Napa cabernet, which can be terribly expensive. What they don’t anticipate is how delicious our Paso Robles cabernet is without the sticker shock,” said David. “At our winery, our cabs aren’t ‘stewed’ – that is, our grapes are never allowed to become overripe. Timing is everything,” said David, “and critical to what we do.” Like the beat of a favorite song, David applies his perfectly honed sense of timing toward making great wine.” >> MELISSA CHAVEZ

MICHAEL GILL CELLARS

Michael Gill saw the potential in the wilderness that was Peachy Canyon Road as a young dentist from Bakersfield in 1977. He was in search of a vacation home and sought the refuge of a destination 25 minutes outside of town. Little did he know that in 40 years, Peachy Canyon Road would be home to some of California’s most well-regarded vineyards and a world known wine tasting destination. Michael had been introduced to wine by a classmate of his in dental school, whose parents were culinary photographers. They would photograph a bottle of wine, which might have been a first growth from Bordeaux, and then give the two students the wine to drink when they were done with the shoot. Michael quickly developed a taste for fine wine, and eventually decided to plant 12 acres of grapes in 1998, alongside some of his famous neighbors. The vineyard consists of Viogner, Vermentino, Counoise, Primitivo, Tannat, Zinfandel, Alicante Bouchet, Tempranillo, Syrah and Negrette. When Michael first started to harvest his fruit, he sold the grapes to several local winemakers. Mat Garretson, a renowned winemaker of Rhone wines in his time, purchased Syrah from Michael and began to receive rave reviews and scores in the high nineties from Robert Parker, Jr. This inspired Michael to do some winemaking of his own, in what he calls a “giant leap of faith,” and he produced his first commercial bottle in 2008. The winemaking is a collaboration of friends and colleagues with Michael at the helm. The tasting room, which offers a lovely selection of wines from Gill Estate Vineyard, opened six years ago. Today, Michael and his wife Shelley can be found behind the bar entertaining customers; alongside their adorable Borzoi pups – or Russian wolfhounds – Bella and Krasniy. Michael’s other main passion is hunting, and his prized trophies decorate the space. Beyond the tasting room is a brick courtyard overlooking the estate, its vineyard and oak trees, with plenty of shade, perfect for a picnic lunch!

One day, a woman came in on her own to seemingly enjoy a quick wine tasting. After a bit of discussion, she revealed to Michael that she is a judge for the California State Fair wine competition and encouraged Michael to submit his wines. Beginning with his 2011 Syrah, which won Best of Class at the Mid-State Fair, the wines have become highly decorated. Since then, Michael Gill Cellars has been sweeping awards across the country, with stellar results throughout California, and significant recognition beyond such as Best of Varietal, Best of Class, Double Gold in Jerry Mead’s New World International Wine Competition for the 2015 Black Tie Syrah. Black Tie is the “reserve” line of wines Michael has developed in his cellar. These are produced from the premier barrels of select varieties from the estate vineyard. In addition to the Black Tie series, the other 100% varietal wines are true to their terroir and expected composition. The 2015 Vermentino is a shining star, with bright green apple notes and delicate balance; it is a perfect sipper as the warmer months approach. For those who prefer red, the 2016 Counouise is an exceptional choice for a slightly chilled red, it is bursting with strawberries and accented with tangerine peel. Michael Gill Cellars is known for a couple other key attractions such as the exclusive Vineyard Cottage situated on a hilltop over looking the winery and vineyard. Priority is given to wine club members but interested guests are encouraged to call the winery to inquire about reservations. The tasting room is open Friday through Sunday from 11am to 5pm. >> BRETTE ANN WOMACK

More than 200 wineries produce critically acclaimed vintages in Paso Robles, Edna Valley and Arroyo Grande Valley. Visitors can head out along the gorgeous country roads to sip their way through the vineyards.

San Luis Obispo’s unusual natural beauty, along with its gentle climate, first attracted the Spanish padres to the area in the 1700s. In 1772, they built the fifth of California’s 21 missions Too Paso Pas aso Ro Robless (26 m mi miles ) MO

here, on the banks of San Luis Creek, and named it Mission San Luis Obispo de Tolosa. Today, many consider this the most beautiful of the Spanish missions.

t’s no wonder the people here call it SLO. No one is in any hurry in the cafes or on the sidewalks, and certainly no one is in any rush to leave. Strangers are genuinely friendly, always ready to talk about their favorite hiking trail or barbecue joint, or to point the way to the winery with the best Pinot Noir. It’s all part of the SLO life, that combination of good stuff that makes visiting here so nourishing to the soul.

The Garagiste Festival Wins ‘Best Wine Festival’ in USA Today’s 10Best THE GARAGISTE FESTIVAL, WHICH HAS IGNITED AWARENESS OF THE AMERICAN GARAGISTE WINEMAKER, ACHIEVES NUMBER ONE SPOT AS IT SHOWCASES UNDER-THE-RADAR CALIFORNIA ARTISAN WINEMAKERS The Garagiste Wine Festival has been named the US’ “Best Wine Festival” in USA Today’s 10Best Readers Choice Awards and marks its 21st festival, and 8th anniversary, at its home base in Paso Robles, November 9th through the 11th. Launched in 2011 in Paso Robles, the Garagiste Festival was the first to define, and shine a spotlight on, the American “garagiste*” wine movement and features the wines of commercial artisan winemakers who make under 1500 cases. At its festivals across California - from Paso to Los Angeles to Sonoma to Solvang - The Garagiste Festival has introduced hundreds of outstanding under-the-radar California artisan winemakers to thousands of passionate wine consumers, members of the trade and media. “When we came up with the idea eight years ago, we were pretty sure we had lightning in a bottle, but at that point it was just intuition,” said Doug Minnick, Co-founder of The Garagiste Festival. “Fortunately, there was an amazing core of people who understood our vision - from the wineries who poured, the sponsors who supported us, the volunteers who helped make it happen and the fans who bought tickets to what was then an unknown event. We sold out that first festival – and every festival since then.” Dubbed “tasting nirvana” ‘strange and wondrous,’ and “one not to miss” by the LA Times, the Garagiste Festival is renowned for its renegade spirit, passionate winemakers, handcrafted wines and rules-breaking, ‘no snobs allowed’ ethos. The nonprofit festival, which celebrates its 21st festival in Paso Robles in November, has raised over $125K to support the education of future winemakers through the Garagiste Festival Scholarship fund of the California Polytechnic State University at San Luis Obispo Wine and Viticulture Department. A panel of experts partnered with 10Best editors to pick the initial 20 nominees, and the top 10 winners were determined by popular vote. Experts Jill Barth, a Provence Wine Master; Karen MacNeil, one of the foremost wine experts in the U.S.; and June Rodil, a Master Sommelier were chosen for their knowledge of wine and the American wine scene. “We have always been focused on quality and pushing the boundaries of convention, and we have never lost our healthy dose of irreverent optimism,” said Garagiste Festival Co-founder Stewart McLennan. “Thank you to everyone who voted for us as the Best Festival in the US for validating that optimism, and to the 10Best Editors for nominating us. The Festival, like the wineries who participate in it, sprang from humble beginnings and has flourished as a true labor of love.” The Garagiste Wine Festival Garagiste Wine Festival, named the ‘Best Wine Festival in the US in 2018 in USA Today’s 10Best Readers Choice Awards, is the first and only wine festival dedicated to the undiscovered and under-recognized American artisan ‘garagiste’ producers who are making some of the best, most exciting, handcrafted small-lot production wines in the world. Founded by fellow garagistes Stewart McLennan and Douglas Minnick, the Garagiste Festivals

Wine Country This Month: Central Coast

are committed to discovering the best and most innovative limited-production winemakers and promoting and showcasing them to a broad audience of discerning wine consumers. In addition to its flagship annual festival in Paso Robles, CA, the Garagiste Festival line-up includes Garagiste Festival: Southern Exposure, featuring Santa Ynez Valley garagistes; the Garagiste Festival: Urban Exposure, in Los Angeles; the Garagiste Festival, Northern Exposure, in Sonoma; winemaker dinners, a newsletter, garagiste profiles and more. In addition was named one of the ‘Top Nine Incredible Epicurean Vacations’ in the world by ABC News, * “one of the premier wine events of the year,” by the LA Times and “Best Festival” by Sunset Magazine’s ‘Best of the West.’ The festivals are produced by Garagiste Events, a non-profit dedicated to furthering the education of future winemakers and those training for employment within the wine industry. Proceeds from the festivals support the Garagiste Festival Scholarship fund of the California Polytechnic State University at San Luis Obispo Wine and Viticulture Department. *Garagistes (garage-east) is a term originally used in the Bordeaux region of France to denigrate renegade small-lot wine makers, sometimes working in their "garages" (anything considered not a chateau), who refused to follow the “rules,” and is now a full-fledged movement responsible for making some of the best wine in the world. The Garagiste Festivals were the first to shine a light on the American garagiste winemaker in 2011. For full schedule details, go to www.californiagaragistes. com/2018-paso-fest. For special discounts and updates on Garagiste Festival events and news, sign up for The Dirt at www.garagistefestival.com/sign-up.

Alapay Cellars: Where Water Turns to Wine Avila Beach, has been the home for Alapay Cellars since 2001. Located just steps away from the majestic Pacific Ocean in the quaint, beachside downtown, the Alapay Cellars tasting room is a popular destination for visitors. Owners/Winemaker Rebecca and Scott Remmenga founded Alapay, (which translates to “Heavenly” or “World-Above” in the Chumash Native American’s Samala language), and set upon a course in crafting high quality, Frenchoak, barrel-aged wines that are approachable and food friendly.

Heavenly Wine A visit to the Alapay Tasting Room offers guests an opportunity to peruse the wide selection of whimsical wine gifts and accessories, as well as the impressive salt water aquarium behind the bar, all while enjoying a wine tasting. Non-pretentious, with ample seating, and over a dozen wines to choose from, guests can find the perfect wine for any occasion to enjoy and spend a relaxing afternoon! A tasting experience at Alapay leads you through the Central Coast wine growing region, where terroir tells the story of each wine, from a rich buttery Chardonnay to the extremely rare Valdiguie, full of fresh plump strawberry and red raspberry. Sourcing fruit from high quality growers on the central coast, Alapay Cellars touts varietals such as Tempranillo from French Camp Vineyard in Paso Robles (46 East) and Reserve Syrah from the Jack McGinley Vineyard in the San Ynez Valley. A Cinsault from Santa Barbra and Ultra Reserve Zinfandel from Tres Niño’s Vineyard are the perfect accompaniment for a hearty dinner and can easily be followed with a nightcap of the Zinfandel Port, whose jamy flavors are perfect with a bite of your favorite dark chocolate. A newly released Rebekah from June is the winery’s flagship blend of Cabernet Sauvignon and Petite Sirah, with its beautiful new pewter label, a symbol of this wines body, soul and workmanship. You will finish this grand tasting with a Gold

Medal winning Late Harvest Moscato blend of Muscat Canelli and Viognier with aromas of white flowers, vanilla and apricot.

Wine Club With a production of 5000 cases, all Alapay Cellars wines are sold exclusively through the tasting room, with priority access to Alapay Wine Club Members, who receive two shipments annually at a fixed price of $180/ shipment. Wine Club members receive complimentary wine tasting, discounts on wine and merchandise purchases and invitations to special events, including the annual winemaker dinners, bay cruises and exclusive wine club pick-up parties. The winery also enjoys cruising with their club members around the world on the Oceania Cruise Lines yearly. Solar panels supply all the power to produce 300,000 cases a year.

RIBOLI FAMILY OF SAN ANTONIO WINERY OLD-WORLD MEETS HIGH-TECH, PRESERVING OUR RESOURCES One-hundred-year-old businesses have become an endangered species in the New Millennium of startups, restaurant pop-ups, and virtual brick-and-mortars, but San Antonio Winery stands among the exceptions of modern-day forced obsolescence. To bring this into broader perspective, 1917 was the year that Woodrow Wilson declared war on Germany, Vladimir Lenin became the newly minted head of Soviet Russia and jazz great Ella Fitzgerald was born. Throughout four generations, the Riboli family business weathered two world wars, Prohibition and three stock market crashes. Anchored in Los Angeles, their San Antonio Winery first opened its doors in 1917. Not only has their winery not only

survived, it has continued to thrive. Today, along with bold reds, aromatic and flavorful whites, refreshing sparkling wines and impressive ports, San Antonio Winery possesses an arsenal of 20 brands as proof of its fortitude. Geographically centered smack dab between San Francisco and its Los Angeles headquarters, the Riboli family formulated a course for the future with a newly constructed Event Center and Winery in Paso Robles. The new location is now closer to the regions from which the winery sources their harvests – from Napa Valley to Paso Robles to Monterey, where the Riboli family owns estate vineyards, and in proximity to their Tasting Room, where Highway 46 East meets Buena Vista Drive near the 101 Freeway.

Restorative Practices through Technology Their equipment is among the newest and most efficient available for an operation of its size to complement the biodiverse techniques used in their vineyards that use less intrusive, more natural environmental aspects of soil maintenance and protection that include cover crops, bird sanctuaries and sheep pastures. Completely powered by solar panels atop both the facility and crush pad, the newly constructed insulated metal building in Paso Robles features six-inch-thick walls, an eight-inch-thick concrete slabs, state-of-the-art technology, and a capability of producing up to 300,000 cases of wine per year.

Wine Country This Month: Central Coast

Brad Kresky, photo courtesy of Melissa Chavez “Our solar panels provide 100 percent of our electricity,” said 4th generation winemaker Anthony Riboli. Estate-grown grapes are harvested and delivered to the winery. Pre-fermentation by-products, such as excess leaves, stems and post-fermentation by-products, such as seeds and skins, are deposited into an underground auger. This residual material, rich in nitrogen, sugar, amino acids, is then carried away to be used for fertilizer and animal feed. Nearby, an onsite water treatment plant recycles wastewater from wine processing which is then used for landscaping and vineyard dust abatement. No wastewater is released in to the sewer. “We have processed more than one million gallons of wastewater,” Riboli confirmed. Inside the winemaking facility are 50 modern stainless-steel fermenting tanks plus 10 open-topped fermenters, each of which can be electronically monitored on and offsite. This equipment is organically sanitized with an ozone-generated system to ensure cleanliness and to overall product quality. Both here and in the barrel room, the environment is kept thermodynamically stable around the clock from seasonal diurnal swings that range up to 50 degrees, from triple-digit temps in late afternoon to the coolest temps in the early morning hours. For all this sophisticated equipment and technology, it is other elements from the winery’s early beginnings that endure well after the harvesting, processing, fermenting and bottling take place. The first is family. A close second, of course, is the sharing of all this great wine! >> MELISSA CHAVEZ

STEPHEN ROSS WINE CELLARS MOROCCAN SPICED YELLOW SPLIT PEAS

I am quite often asked for advice on food and wine pairings in the tasting room. These are some of my favorite questions. Answering them is like living vicariously through someone else’s efforts in the kitchen. As winemakers, I would love to say that we eat in a curated way, to always have our wine and food thoughtfully matched. In reality, the wine business and family life keep us really busy and chronically over-scheduled! We most often gravitate toward meals that are wholesome, easy to prepare, and tasty. Of course, good wine is always at hand. This is my new favorite recipe, paired with my longtime favorite variety, pinot noir. The recipe is appropriate for all levels of cooks and is one that can be made from items in your pantry. It’s great for mid-week dinners, yet also it’s so delicious and pretty that you can break it out for company. Add a green salad, crusty bread and a bottle of our Stephen Ross Escolle Vineyard Pinot Noir and your meal is complete. My wine recommendation for this dish is our 2015 Pinot Noir, Escolle Vineyard. This gem bursts with richness that complements the spices in the dish in an amazing way. The nose is youthful and brings notes of dark cherry, plum, cassis, coffee, dark chocolate, and subtle hints of oak with vanilla bean and allspice. The long finish is all finesse, with balanced and integrated acid and refined tannins – a perfect good wine with a moderate 13.5% alcohol. 101 cases produced. 93 pts Wine Spectator. Retail Price $42.

Serves 4 as a main course. 1 ½ Cups Yellow Split Peas ½ teaspoon ground turmeric 4-5 Garlic Cloves, whole ¾ teaspoon salt At least ½ C high quality extra virgin olive oil – important! 1 ½ teaspoon paprika 1 ½ teaspoon ground cumin ¾ - 1 teaspoon cayenne With 4 ½ Cups of water, combine the yellow split peas, turmeric and garlic and bring to a boil over medium heat. Reduce heat to low and partially cover the pot. Cook gently for 50-60 minutes, until the split peas are very tender. Stir occasionally. It should be a gentle simmer. Mash the peas and garlic with a potato masher until you have a consistent, coarse puree. It should be thick; but if too thick, add a teeny bit of water. Add and stir in the salt, 1 ½ Tablespoons of the olive oil, ½ t paprika, ½ t cumin and ¼ t of cayenne. (Note this is not all of the spices.) Ladle the peas into shallow bowls and smooth out the top. To serve, sprinkle over the top of each bowl a scant ¼ t each of paprika and cumin, and less of the cayenne. Float a thin layer olive oil over the peas – this is why you need really good olive oil. Serve hot.

Paso Robles Wine Region’s Allegretto Vineyard Resort Creates the World’s First Sonic Labyrinth New Outdoor Sound Circle Complements Luxury Resort’s Wellness Offerings Nestled Amongst 20 acres of Vines and Olive Trees on California’s Central Coast The Allegretto Vineyard Resort, a 171-room luxury resort in the Paso Robles wine region, announces the creation of the world’s first Sonic Labyrinth ‘Sound Circle.’ Designed to provide guests a tranquil space with a distinctive series of sounds created by wind instruments, the new Sonic Labyrinth deepens the resort’s wellness offerings in the heart of Paso Robles Wine Country on California’s Central Coast. According to proprietor Doug Ayres, the Sonic Labyrinth utilizes music and space as a way to compel guests to slow their pace and become more mindful. As a symbol of life’s journey, a labyrinth is an archetypal pattern that leads one along a single, meandering path to a center point – the center being a metaphor as well as a physical spot. Labyrinths provide an opportunity to free the mind at one’s own pace, by incorporating sound into the experience. Activated by motion sensors, the Sound Circle creates a series of soft, soothing tones that evolve as one walks through the labyrinth, cultivating a sense of relaxation and focus, while an intentional central null space creates an added sense of grounding. Guests will hear the unique sounds of vessel flutes known as The Innate; these original handcrafted wind instruments made from European clay, have three chambers that impart an unusual harmony. “The idea is not to have a musical melody exactly, but to have different notes of harmonic sound to help evoke various emotions, ultimately creating a calming state of mind through this transformative experience,” said Ayres. Designed to broaden the resort’s wellness amenities, the awardwinning hotel also offers a European-inspired spa, Chära wellness program, individually selected and purposefully positioned art collection by Ayres throughout the resort, peaceful garden walkways and French-inspired Abbey. The custom-designed Sound Circle exemplifies another way Allegretto seeks to foster a serene, contemplative environment for its guests. “Just like the musical term ‘allegretto’ describes a cheerful tempo, the Allegretto Vineyard Resort is meant to express a life lived joyfully and in harmony,” explains Ayres. “We’re pleased

Wine Country This Month: Central Coast

that this new Sound Circle in our labyrinth will add to the resort’s harmonious experience in an entirely new way, taking guests on a path of personal discovery.”

The Allegretto Vineyard Resort The Allegretto Vineyard Resort offers guests exceptional spaces, experiences, services and amenities along the path of life’s journey. The Allegretto is inspired by wine country and European hospitality, set amongst 20 acres of vineyards and fruit-bearing orchards on Paso Robles’ serene east side. The resort is a world unto itself with 171 guest rooms and suites, locally farmed and foraged cuisine at Cello Ristorante & Bar, a tasting room featuring the resort’s own private wine label, ballroom, intimate meeting spaces, over 40,000 square feet of event space, full-service boutique spa, pool and cabanas, manicured gardens, walking paths, 12,000-square-foot piazza, French-inspired Abbey, curated art and artifacts along with inspired vignettes that evoke that luxury, warmth, and the beauty of the good life. The Allegretto Vineyard Resort is located at 2700 Buena Vista Drive in Paso Robles, California, 93446. For more information, please visit AllegrettoResort.com, or call (805)369-2500.

Wine Country This Month: Central Coast

Santa Maria Costa de Oro Tasting Room Costa de Oro Tasting Room is located right off of Highway 101 in Santa Maria. This site pays tribute to the history behind Costa De Oro — it was the strawberry stand for Gold Coast Farms, the parent company of Costa De Oro, which has been farming Santa Maria since 1978. Gold Coast Vineyard was planted to 20 acres of Pinot Noir and 10 acres of Chardonnay in 1989, and these grapes were sold to the area’s best wineries — including Au Bon Climat. Gary Burk, Costa de Oro co-owner and winemaker, was fortunate to work in the winery with Jim Clendenen from 1994-2002, and during this time he began to make his own wine. Gary started with just one barrel of Chardonnay and one barrel of Pinot Noir. Today, Costa de Oro produces more than 6000 cases featuring Chardonnay and Pinot Noir from the estate — Gold Coast Vineyard. At the 2017 Central Coast Wine Competition their Estate Chardonnay won “Best of Show” and their Estate Pinot Noir received a “Gold Medal.” The best place to experience the wines is at the tasting room, where guests can taste five wines for only $10.

Live Music In addition to their regular tasting room hours (normally 11 a.m. to 6 p.m. daily), they have music three nights a week...Thursday

5-7 p.m. (Classical), Friday evening, “Friday Night Wine Downs” featuring live music from local musicians & $12 food plates available. Then on Saturdays they have acoustic music 3 to 5 p.m.

Kegs Another facet to the Costa de Oro portfolio is their “Wine on Tap.” Kegged wine, wine stored and shipped inside five gallon kegs instead of bottles, has been gaining popularity throughout the past several years. Costa de Oro started kegging wine for high-end accounts, like Roy’s Hawaii. Now these wines, a white and a red, are available in the tasting room by the glass and by the growler (these can be refilled). Costa de Oro wine club members receive discounts on keg wines, bottled wines and merchandise. To Sa San Luis Obispo (32 miles )

Los Alamos Martian Ranch Martian Ranch is the creation of Massachusetts native Nan Helgeland, who found her inspiration in the vineyards and wines of Santa Barbara County. After years searching for the perfect property, she purchased this 102-acre parcel on Alisos Canyon Road in 2006, and named it Martian Ranch – the combined childhood nickname of her two sons: Martin and Ian. While attending Hancock College, Nan decided to farm the ranch Biodynamically upon the combined counseling of Peter Sischel, her East Coast neighbor and Alfredo Koch, department head of viticulture and enology at Hancock where Nan attended. Both gentlemen farm their family vineyards Biodynamically in France and Argentina respectively. After three years of diligence and care, Martian Ranch & Vineyard became a Demeter Certified, Estate winery in 2015 with 20 acres of vines planted to 10 different grape varietals, each perfectly suited to the Mediterranean climate of the ranch. The vineyard was planted in 2008, with the first Estate vintage in 2012. Estate varietals are a combination of Rhone, Iberian, Beaujolais and a touch of Bordeaux. Albariño, Grenache Blanc, Viognier, Clairette, Gamay Noir, Mourvèdre, Grenache Noir, Syrah, Cabernet Franc, and Tempranillo —approximately 2 acres planted of each. Martian Ranch is known for carefully farmed, vibrant and loweralcohol wines. Biodynamic principles, which take organic farming to the next level, strive to create a diversified and balanced ecosystem while focusing on the health and fertility of the soil. Being a closed system, the ranch grows its own livestock feed and is home to four Irish Dexter cows, who’s manure is used to create healthy compost for the vineyard. Each part of the growing process revolves around four elements: root, leaf, flower and fruit. Together, these elements dictate what will be done in both the vineyard and the cellar and create the highest expression of harvest. The tasting room has been open since October 2013 and currently offers a rotating list of Six wines to taste. Wines are also available by the glass to enjoy with our house made charcuterie & cheese plate. Martian Ranch also hosts a variety of private events, fully customizable to your liking. Email Amanda at amanda@ martianvineyard.com for all inquiries. In addition to our Tasting Room, you can taste and purchase our wines at the Thousand Oaks Farmer’s Market on Thursdays

Los Olivos RANCHO OLIVOS As autumn yields to winter, one way to celebrate the cooking season is by acquiring some fabulous, fresh local olive oil. Surrounded by olive groves, just off Highway 154, just three minutes from downtown Los Olivos, is Rancho Olivos. Right here is the place to discover 100 percent extra virgin olive oil. Shannon Casey, a serious “foodie” and cook, is dedicated to promoting locally grown, sustainably farmed products. Together with her husband, John Copeland, their shared interests led them to the Santa Ynez Valley, where for 10 years, they have produced pure, extra virgin olive oil along with other farm stand produce.

Not your store-bought olive oil Fall is a great time to visit the Rancho Olivos, where the olive oil is made from seven acres of Italian, Spanish and Mission olive trees. Visit their adorable farm dogs while sampling a wide variety of fresh, extra virgin olive oils. Not only does fresh local olive oil taste delicious, it helps to lower bad cholesterol and boosts good cholesterol levels. Heart-healthy polyphenols help fight oxidative stress to keep arteries clear of plaque. Unlike many imported olive oils, which may be diluted or laden with additives, Rancho Olivos’ oils are not mixed with “mystery” oils, and the test is in the taste. Currently there are two varietal oils and five flavored oils from which to choose: Garlic, Meyer Lemon, Garlic-Rosemary, Meyer Lemon Basil and Jalapeno. Once you visit and taste, chances are, you’ll never think of olive oil in the same way again. The oils are available in small bottles for travel, and the farm stand carries olive oil packaging options for tasty gift-giving that friends and family are sure to appreciate.

But wait, there’s more! The farm stand at Rancho Olivos also sells locally gathered raw honey with the best flavors you can imagine. Organic and unfiltered, depending on the season, choose from orange blossom, sage blossom, and Santa Barbara county wildflower honey. Local lavender and jam are also available, along with seasonal fruits and vegetables. Tasty heirloom tomatoes are in season that will make your caprese salad or any tomato dish extra special. When visiting the farm stand, chat with John and Shannon.

Come see why Robert Parker, Jr. said... “Production is small, but these wines are well worth seeking out!” Open Daily 10:30-5:30 5249 Foxen Canyon Rd, Los Olivos 805-686-9604 www.AndrewMurrayVineyards.com

The caveat of the Reserve Tasting will be its ever-changing menu featuring rare single-vineyard bottling and special older vintages of Hitching Post. For those seeking the ultimate experience, Hitching Post Wines offers customized Private Winemaker Tastings with Gray Hartley and Frank Ostini for $60 per guest and by appointment only. Hitching Post Wines would not be complete without the added flavor of Hitching Post 2’s Santa Maria Style BBQ food pairings to enjoy while tasting. Classic crowd-pleasing favorites served from the restaurant include HP Burgers; Triple-Fried French Fries; Santa Maria BBQ Artichokes; and Grilled Corn Quesadillas. Coming soon, the public will experience an expanded lunch menu served from a refurbished 1970s Vintage Airstream trailer, relocated from Seaside, Florida, and converted into a first-class Santa Maria BBQ kitchen on wheels. Hitching Post Wines is set in a mid-century farmhouse off the 246 Highway with trailing walkways and outdoor seating areas banking a view of the Santa Ynez Mountain landscape. The tasting room building covers 2,000 square feet and sits on nearly twelve acres of land, landscaped by red oak trees, including a 200-year-old tree greeting passers-by in the front of the property. and is scattered with picnic tables and ample seating areas covered by shade screens. The charming cottage has a gray exterior trimmed in white accents and window shutters. Guests first view a cast iron Hitching Post brand inlaid into the polished concrete floor when entering the front door. To the west, the main tasting room boasts original oak floors and a fireplace dating from before 1950. The color palette includes warm stone grays with details of white, copper and bronze. To the east, there is a private tasting room ensconced in gray wainscoting accented by a distressed corrugated tin ceiling. Separating the two wings is a secondary tasting room showcasing historical photos of Frank Ostini and Gray Hartley with a timeline of Hitching Post wines. The tasting bars are covered in burnished copper and composed of repurposed barn-wood siding, copper piping footrests and illuminated by oil-rubbed bronzed and copper farmhouse hanging fixtures. Throughout the property are walkways and casual picnic areas that invite guests to linger over a bottle of wine while taking in the dramatic Santa Ynez Mountains and river landscape. Dogs with attending families are welcome. Hitching Post Wines is open Sunday – Thursday: 11 a.m. – 5 p.m. and Friday and Saturday: 11 a.m. – 8 p.m. Food service from The Hitching Post 2 is available from 11:30 a.m. until 2:30 p.m. with limited cheese and charcuterie available for purchase in the tasting room.

SPRING STREET

Frank and Jami Ostini and Gray and Charlotte Hartley announce the opening of their new tasting room, Hitching Post Wines at 420 East Highway 246 in Buellton, located next door to the famed Hitching Post 2 restaurant. Hitching Post Wines is their first-ever tasting room and is complemented by Hitching Post 2’s take-out and delivery menu, offering lunch for guests of the tasting room and picnic grounds. Leading the Hitching Post Wines team are the creators and two long-time friends, Gray Hartley and Frank Ostini, who have been making wines in Santa Barbara County, California since 1979. Long before Hollywood discovered the winemaking landmark and its excellent wines, Gray Hartley, a former Alaskan salmon fisherman and Frank Ostini, chef and owner of the famed Hitching Post 2 Restaurant in Buellton, were brought together by their love of wine and winemaking. Over the years their backyard hobby has turned into a highly acclaimed winemaking enterprise. In 1981 they discovered the wonders of Santa Barbara Pinot Noir; since then Pinot has been their primary focus. Their flagship wine is the Hitching Post Highliner. The “Highliner” is the best fishermen in the fleet, and this name honors the great men of the Alaskan Salmon Fishery alongside whom Gray Hartley worked for 28 years. A special wine, Highliner is meant to be the “best of their fleet” of Pinot Noirs. Along with ten selections of Pinot Noir, Hitching Post produces a dry Rosé called Pinks, a Syrah, and a Merlot-based red named Gen Red. Then came Sideways in 2004, the Academy Award® winning film set in Santa Barbara wine country, prominently featuring The Hitching Post 2 and Hitching Post Wines. Since exposure in the movie, Hitching Post wines have gained in popularity. Currently, the winery has 12,000 barrels and produces about 17,000 cases a year. Hartley and Ostini strive to create flavorful handcrafted wines that possess poise and balance, putting a slice of Santa Barbara in each glass, and a piece of their soul in every bottle of Hitching Post. The Traditional Tasting at Hitching Post Wines offers a flight of five Hitching Post Wines consisting of Pinks 2017; Hometown Pinot Noir 2016; Cork Dancer Pinot Noir 2015; Santa Maria Valley

Foxen Canyon The Foxen Canyon Wine Trail Santa Maria and Santa Ynez Valley

Andrew Murray Winery And Visitors Center

The Foxen Canyon Wine Trail, about a 10-minute drive north of the wine town of Los Olivos, connecting the Santa Maria and Santa Ynez valleys. If you have never been up The Trail … this is a must; if you haven’t been on The Trail for a while, it’s time to go back! Travel the meandering roads while enjoying breathtaking views with tucked-away vineyards along the 30-mile road. It’s the perfect way to taste wine from the oldest appellation in Santa Barbara County. With long growing seasons and a truly rare transverse geography, the wineries along Foxen Canyon Road produce complex and distinctive wine. The wines, combined with the casual environment demonstrate how the Santa Maria Valley values real experiences with real people. So, get in your car, and if coming from the south, stop at Panino in Los Olivos to pick up a picnic lunch for your drive up The Trail. Should you have a convertible, put the top down and enjoy the wind rushing around you and the sky overhead. Plan to visit during December and experience Christmas on the Foxen Canyon Wine Trail on Saturday and Sunday December 8 and 9. During this two-day extravaganza, with your passport to visit 13 participating wineries, you will not only sip, but have your wines accompanied by baked goods, chocolates, cheese and charcuterie platters. There will be food trucks at some of the wineries, music and well, just a GREAT Christmas Holiday time celebration. Check the website to purchase your passport to fun, www.foxencanyonwinetrail.net.

Andrew Murray Winery and Visitors Center has a modern feel, and an ambience that lets you know that you are going to experience something special. The area is sleek, with metal and smooth surfaces glinting in the sunlight. It highlights the type of tasting experience you will have at Andrew Murray’s locations, elegant and noteworthy. For Chocolate Lovers Andrew Murray offers a truffle and wine pairing. Truffles from Jessica Foster Confections are paired with wines from the Rhone Zone Flight. The chocolates have tantalizing flavors like curry and cinnamon apple. Don’t worry, however, if you’ve tried one truffle and wine pairing, there will always be a new one to try. Every time the wines in the tasting room change, a new set of truffles are chosen to go with them.

So Many Wineries – So Little Time There are well over a dozen wineries along, and in close proximity to the Foxen Canyon Wine Trail. If you figure your average tasting to be somewhere between one hour to an hour and a half, you will have time for three, maybe four visits during the day. Possibly the best thing to do to fully enjoy your trip up (or down) The Trail, is go online before you leave, pick several wineries to visit (and decide where you want to picnic), and then: GO! Once you have had a taste of The Trail, you’ll be back. Some of the many wineries you will want explore include:

Fess Parker Winery & Vineyard You know, Davy Crockett and Daniel Boone, yes THAT Fess Parker, and what a picturesque winery. You can’t help but enjoy the award-winning wines you will find here on the family estate that dates back to the late 1980s. The parklike grounds are perfect for a picnic, with an expansive and welcoming tasting room, where on a cold winter day the leather couches in front of the crackling fireplace beckon you. When visiting, choose between the “Classic” or “Enhanced” tasting, consisting of small-lot, highly rated wines (90+ point ratings), representing “the best of the best” of the Fess Parker lineup. Or, for a truly elite experience, ask about the Addendum tasting (advance appointment required): Four Cabernet Sauvignons, sourced from elite Napa Valley vineyards. This is Fess Parker Winery’s “New Frontier,” and judging from the initial accolades, ratings and consumer response-Fess Parker Winery is producing serious Cabernet Sauvignon for the wine connoisseur. Zaca Mesa Winery And Vineyards’ story began in 1973, as the third winery in Santa Barbara County. With a reputation as “a Syrah house,” (also producing outstanding whites and other red varietals), this family-owned winery is a delightful

My wife and I have fond memories of “The Shack,” the original Foxen tasting room. It was here, about 30 years ago, on a spring “day trip” from Los Angeles, driving up the Foxen Canyon Wine Trail in my Fiat convertible that we stopped at this newly opened tasting room. What did we know from wine? Not much, but it was at “The Shack” that we first heard about, and tasted Viognier. This is where a life-long love affair started for me, perhaps it will for you also. Much has changed at Foxen since then – much has remained the same. From the start, Foxen has dedicated themselves to growing and sourcing the best grapes possible to make the best wine possible. Tastings are fun, educational and held in a relaxing atmosphere. The Shack still has that “vibe” 135 of yesteryear, being an 1885 blacksmith’s shed – character MAIN ST abounds. Relax in this historic structure, while sampling foxen Wine Country 7200’s award-winning Bordeaux and Italian varietals. And, from STOWELL RD February-September, on every second Sunday between 12:30 and 3:30 p.m., come to their winery tasting room located just ¼ mile down the road where you can purchase food from an area food truck, enjoy live music by local musicians, drink good wines, and have one heck of a great time. Built in 2009, Foxen’s solarCAB RILL OH WY room sets the bar powered, state-of-the-art winery and tasting high for environmental consciousness. Specializing in Rhône, Core Burgundy-style andWine Pinot Co. Noir wines, Foxen successfully blends old world romance, with new world technology – producing praiseworthy wines. These are only a few of the many wineries and adventures that await you on The Foxen Canyon Wine Trail. Once you1 visit this off the beaten path area, you’ll want to plan time to explore the entire trail: Sip, visit, relax and enjoy. www.foxencanyonwinetrail.net

Firestone boasts one of the most popular tasting rooms in Santa Barbara County. The lovely visitors’ center has an expansive island bar backed by large picture windows that look out on the vines. In addition to its featured and reserve tasting options, Firestone is one of the few wineries that offers a comprehensive and complimentary public tour, running daily at 11:15 a.m. and 1:15 p.m. After the 30-minute in-depth tour, guests can picnic outside and view the estate vineyards, which have been planted on a series of mesas. Wine Tasting 101 Visiting a winery tasting room may sometimes be intimidating, especially if you are not used to wine tasting and aren’t quite sure what to expect. Following the guidelines and etiquette tips below will help enhance your experience as you travel through the wine country of California’s Central Coast. Be aware, although some wineries don’t charge for tastings, most do. Figure an “average” tasting fee may be $10-$30. Many wineries will also waive the fee with a purchase, always ask. Ready to taste? Let’s get started! • Don’t be self-conscious to share a tasting with your companion – it’s not looked on as being cheap, in fact, it’s smart. • Don’t worry if you “don’t know good wine.” “Good wine” is what you like. Period. • You don’t have to finish the glass. You are tasting, not drinking – use the dump bucket. Those little sips add up fast. • You don’t have to like everything poured. The reason you are tasting is to see what you do and don’t like. • Take time to smell the roses, or wine! Swirl the wine in the bowl of the glass then take your time, put your nose into the bowl of the glass…and inhale to experience the bouquet. See what fragrances you can identify: Earthy? Lemon scented? Honeysuckle? Cherry? Tobacco? It’s okay if you don’t identify any of those things, with time and tasting you will!

56

• Remember the five “S’s” of wine tasting: See (the wine in the glass), Swirl, Smell, Sip and Savor. (Take a small sip. Let the liquid surround your taste buds, what flavors can you identify)? • A sk questions! Remember…there are no stupid questions. You are there to enjoy and learn, and your server is there to help you. • Don’t feel self-conscious expressing your opinion, there is no right or wrong. • Don’t feel pressured to buy a bottle or to join a wine club, (however, if the tasting is free, or if you have a private tasting with a winemaker, it is good form to purchase a bottle). • Leave a tip if you have had a nice experience ($3-$10 generally). • Enjoy yourself and remember, what you like today, you may not like tomorrow; your taste and palate may change, and that’s a good thing. • Don’t wear scents into a tasting room (cologne or perfume), and try not to wear white! • A sk your server to recommend their favorite wineries to visit. • Seek smaller, out of the way, boutique wineries. • Hydrate—hydrate—hydrate! Hint: Drink one glass of water for each glass of wine. • Bring something to snack on such as crackers, breadsticks or a

baguette. Take time for lunch. When picnicking at a winery, never drink wine from another winery. • Try to plan ahead. Do some research to determine if there is a tasting fee, if appointments are necessary and the policy on dogs and children. In general, three to four wineries will fill your day. • If possible have a designated driver. If staff feels you have had enough to drink they may refuse service, it’s for your own well-being. • Trust your palate. Don’t worry if you don’t like what your friends or companions like. Not everyone likes the same things. This is about you – not them.
