Rock-Crete Foam Insulators Helps Lower Power Bills. Rock-Crete is going on 8 years in this exciting and wonderful business. We actually make a difference in the way people live. We make their houses more comfortable, and their electricity bills more affordable. We save them from 30%-70% on their utility bills depending on whether the house is existing or in the building process. At Rock-Crete Foam Insulators, we talk about air-conditioning as much as we talk about insulation. The two are married, and if you do not understand this, then you should not be spraying foam. The first rule should be, “Do no Harm! When we get on the scene, we are usually the only experienced people that have showed up that can intelligently discuss the needs of air conditioning and heat in a new or existing house with foam. On existing homes we seal the attic and drop your utility bills from approximately 30-50 percent and sometimes even more. We have some competitors that apparently don’t like to work in hot attics, and discourage people from contracting for this kind of work. When they do it, they don’t even do it right and you spend your money for a “pricey radiant barrier. At Rock-Crete, we brought spray foam to the area. Not only that, but some of our first jobs 8 years ago were existing homes in which we created a sealed attic. For years we were the only ones doing that. Now, some have come along trying to get some of that business in a down economy. They do not like it, and often do not do it right. We stand behind our product. In a 100 degree day, your attic temperatures should be between 77 and 85 degrees, but only if it is done right. Your humidity usually goes down also. Retrofit example: 1. Leaverage, 1500 sq foot added 1000 sq foot; foamed roof of both and walls of add on. Bills dropped from 400 to less than 200.00. That is on a 2500 sq foot older home! 2. Claraday home, large home with hot 2 story. Took our advice on air conditioners and foam, and reduced a $1,200.00 bill down over 65% and now have a comfortable home, including the upstairs. 3. McWhorter Home, before $500.00 after, $225.00. 4. Baggs home and office and Winkler home and office, both report it was unbearable before, and comfortable now with savings over 30%.

Cookie D seasoN Simple delicacies are party types
elicious, pretty — cookies are popular all over. Even fans don’t often think of this, but these little treats also have a flair for adding creativity to parties. A cookie decorating party is a natural for children, but grown-ups who love sweets are likely to be drawn in, too. On a more practical level, groups that sell cookies to raise funds can use decorating parties as a way to finish and package stacks of goodies while everyone has fun. This sort of project will require loads of cookies, so use a dough that can be portioned out, then flavored and colored in several ways. We adapted ours from “One Dough — Fifty Cookies” by Leslie Glover Pendleton. We divided the dough and made vanilla and chocolate flavors, then added our favorite peanut butter cookies. Next, fillings: Mix buttercream icing, either homemade or canned, in several flavors and colors. Continued on next page

Gift Cookies This dough can be refrigerated for up to a week or frozen for up to three months. • 1 pound (4 sticks) unsalted butter, room temperature • 1 1/3 cups granulated sugar • 3 egg yolks • 4 teaspoons pure vanilla extract
• 1 teaspoon almond extract • 4 3/4 cups unbleached flour • 1 teaspoon salt In the bowl of an electric mixer, beat the butter and sugar until smooth. Add egg yolks one at a time, mixing well after each addition. Add vanilla and almond extracts. Into a separate bowl, sift the flour and salt. With the mixer running, add the flour mixture a little at a time to the butter mixture. Halve this dough. Shape one portion into a long cylinder, wrap it in plastic and refrigerate it. To the remaining half, add these ingredients and mix just until blended: • 1/3 cup granulated sugar • 1/2 cup dark cocoa • 1/8 cup Dutch-process cocoa Shape the chocolate dough into a cylinder, wrap it in plastic and refrigerate. To make cookies: Let the dough come to room temperature. Place a quarter of one cylinder between pieces of waxed paper. Roll dough 1/8-inch thick. Slide the dough on its waxed paper onto a baking sheet and refrigerate until quite firm. Use a small cookie cutter to make

shapes. Refrigerate again so the shapes will be firm.
Let the cookies cool completely before decorating or adding filling.
Heat the oven to 350 degrees. Place unbaked cookies on a parchmentlined baking sheet. Bake the vanilla cookies until they’re very light golden on the edges, about 9 1/2 minutes, depending on your oven. Also use this as a time gauge for the chocolate cookies, which don’t change color as they bake.
Filling: Storebought or homemade buttercream, peanut butter and jellies work well. Coating: We dipped our sandwich cookies in melted chocolate, but almond bark is another possibility. Makes about 22 dozen cookies 1 to 1 1/2 inches in diameter.

Set up tables with trays of cookies plus icing in pastry bags fitted with small round or star tips. Let party guests – or colleagues, if this is a fund-raiser project – make their own sweet sandwiches or decorate single-layer triangles as Christmas trees. Offer small spatulas to anyone who prefers spreading to piping the fillings. A final delicious touch: Dip the finished sandwich cookies in melted chocolate and set them on waxed paper to firm up.

mericans waste about 40 percent of the food produced in this country, according to a 2009 study by scientists at the National Institute of Diabetes and Digestive and Kidney Diseases in Bethesda, Md. That’s like nearly half your family’s grocery budget going into the trash can. To keep food bills in check and manage waste in your kitchen, follow these tips from the Kansas State University Cooperative Extension Service:
Make sure leftover containers stay near the front of shelves so you remember to use them first. If you’ve tried these strategies to not waste food, but you still end up with something that needs to be pitched, use it for compost instead of throwing it in the trash. get organized. Plan meals a week at a time, shop for the ingredients in one trip, and check your pantry and fridge before you leave for the store to be sure you need everything on your shopping list.
Have a plan for leftovers. If you know a recipe you’ll use only calls for half a can of tomato sauce, plan for what to do with the unused half rather than tossing it out or putting it in the fridge without a specific purpose in mind. unclutter the fridge. Leftovers usually go bad when they’re forgotten in a crowded fridge. If you’re buying only as much fresh food as you can eat in a week, you should be able to keep the fridge fairly organized.

Avoid buying perishable items that aren’t required for your week’s menu plan. Get in the habit of checking your fridge every day for items that are on the verge of spoiling so you can find a way to use them before they go bad. If fruits and vegetables seem a little too ripe to eat fresh, look for other uses. Slightly overripe fruit can be added to muffins or bread mixes. Vegetables can be added to soups, sauces and casseroles.

Unwrap wellbring at Brazos Healing Center in College Station By Billy Mau The Eagle
The holidays can be a stressful time for many people. With that being the case, why not give someone – or yourself – the gift of relaxation and wellbeing from Brazos Healing Center. Brazos Healing Center, located at the College Station Medical Center, offers a wide variety of programs designed to help both the mind and body. Owners Filipa Lechin and Lisa Tauferner opened the center out of a shared dedication to complimentary alternative medical therapies (CAM therapies) in April 2010. In the time since then, the center has become a respected provider of health and wellness services. Both ladies have a background in holistic and alternative therapies. Taufererner has taught Yoga since 2001 and is certified in both Hantha and Kundalini Yoga. She is also a certified Master Reiki practitioner and teacher. Lechin has
a master degree in nursing with a concentration in holistic nursing and is a certified Advanced Holistic Nurse (AHNBC). She is also a certified Yoga instructor, a certified level 3 Master Usui Reiki practitioner, level 3 Healing Touch practitio-
ner and well versed in guided imagery, aromatherapy and clinical hypnotherapy. Their CAM therapies are designed to work well in conjunction with the standard medical therapies their clients may be receiving.
“Everything we do is from a perspective of what is going on to create a healthier individual,” Lechin said. “We would never do anything that would take away from what your medical doctor thinks is best for you.”

in the New Year focused on fall prevention. The program is designed for older people who want to learn techniques that will help regain strength, flexibility and balance as a way to prevent falls. Falls are a leading cause of death for those over the age of 65, something that in many cases can be prevented. By working on the muscles associated with maintaining balance, Tauferner hopes seniors can benefit from the easy-to-follow classes. “The class should work very well for people in the older population who may be losing their balance a little bit more as they age,” Tauferner said. “Also, Tai Chi has been proven to help ease the pain of arthritis and can help anybody with their mobility and flexibility.” Brazos Healing Center gift certificates are good for any of the services offered and make a great present for anyone looking to add a little peace and calm into their lives. Everyday life can be stressful and hectic, and the holidays even more so. Why not take advantage of the gift certificates for yourself as a way to celebrate making it through the holidays. “I think taking time for yourself is especially appropriate when you’re giving so much to others,” Lechin said. “Learning how to take care of yourself and bring yourself a little bit of calm is invaluable.” For more information on Brazos Healing and the services offered, visit brazoshealing. com or find them on Facebook. There you will find class descriptions and schedules. You can also call 979-402-3595 to set up a holistic consultation to see which of Brazos Healing Center’s services are best for you.

The center recently added Reiki energy therapy to their services, something Tauferner is very excited to offer her clients. Energy therapy is a holistic health/alternative medicine therapy that works with the body’s electromagnetic field to promote wellbeing. “Energy therapy is one of those things that from the outside looking in doesn’t look like there is a whole lot going on,” Tauferner said. “The practitioner may have their hands on a certain spot or just above a certain spot of the body and hold them there for a while. What’s happening though is that energy therapy works on the body’s natural electromagnetic field. “We know when we feel drained and feel like we don’t have any energy. Usually when that happens we reach for something to take to give us a boost. When you get an energy therapy treatment, I tell people at the very least they are going to feel more relaxed after treatment. If there are any pains like headaches or things like that, you’ll feel those lessen and you’ll feel emotionally better because you are more relaxed and at ease.” Brazos Healing Center also offers Tai Chi and will be doing a special Tai Chi program

set the tone for a party and build anticipation for the fun in store. Offer a self-serve bar Set up a self-serve bar so guests can be their own mixologists. Welcome guests with a drink upon arrival by placing a tray of champagne and sparkling water near the door. Keep appetizers simple Consider serving dinner by the bite with trays of mouthwatering hors d’oeuvres in lieu of a sitdown meal. This less-formal approach allows guests to sample lots of different flavors and provides more opportunities to mingle. A few favorites are toasted pita wedges with hummus and eggplant dip; bruschetta with buffalo mozzarella, cherry tomatoes and basil; and warm Marcona almonds sprinkled with sea salt.

GIFT CARD TIPS
SHOP BRAZOS .COM
Gift card basics By Wynne Everett SPECIAL TO THE EAGLE
F
or holiday shoppers who just can’t decide what to get someone on their list and don’t want to give cash, the gift card has long been the perfect go-to present. They’re increasingly convenient to pick up at the last minute and great if you have to ship gifts. But gift cards are more complicated than they seem, said Judd Lillestrand of ScripSmart.com, a consumer watchdog site that tracks and rates retail gift cards. “It’s not easy to be a smart shopper with gift cards,” Lillestrand said. “It can be tough to understand the terms and conditions for each card and to have a good idea of whether a company has a good track record of being consumerfriendly with their cards.” Lillestrand had this advice for using gift cards this holiday season:
Beware of troubled companies. Don’t buy gift cards from retailers that you know are in financial difficulty. If your gift recipient’s favorite store goes out of business before he uses the gift card, he could be out of luck. Look for cards you can use at more than one store or restaurant. Many large companies that own numerous brands let you use their gift cards at any affiliate company. For instance, cards from The Gap can be used at Old Navy and Banana Republic. Cards from Chili’s can be use at Macaroni Grill. Look for cards that can be used online and in a store. Some cards are limited to one or the other, which can be inconvenient. Make sure the card doesn’t have an expiration date or any fees. This is getting less common, Lillestrand said, particularly with gift cards from major national chains. But double-check to be sure. If you get a gift card, use it quickly. “Don’t go out and buy things you don’t need with it just to use it up,” Lillestrand said. “But generally, the sooner, the better.”

Count the kids in for a New Year’s Eve party By Melissa Erickson Special to The Eagle
12
T
raditionally a late-night, adultsonly celebration, New Year’s Eve doesn’t mean you have to pack the kids off to a babysitter to welcome in 2012. With some innovative thinking, New Year’s Eve festivities can be filled with food and fun, surprises and silliness for the whole family — and you don’t even have to stay up until midnight. The key is “to keep the party simple so mom and dad can have fun, too,”
suggests Sue Kirchner, founder of ChocolateCakeClub.com and blog ChocolateCakeMoments.com, both designed to inspire and help busy families have more fun. “Keep it low-key. You don’t need to go crazy cleaning the house, buying party favors and cooking to have a fun New Year’s celebration.” While you don’t need to go overboard, New Year’s Eve should be an exciting celebration. Invite friends, family and neighbors. You can all help watch the kids, and it will keep people off the roads. Depending on the number of kids and ages, you might hire the teens to supervise the little ones’ activities.
“They can lead games for the kids or just watch to make sure no one is getting hurt or destroying the house. It gives the adult guests a little break, you peace of mind, and the babysitter gets some postholiday spending money,” Kirchner said. Get the kids in on the action by letting them help decorate the house with homemade garlands and streamers, a miniature New Year’s Eve ball, party hats or their own time capsules. While many adults with children would enjoy a low-key New Year’s after the hustle of the holidays, the kids want to party. Here are some suggestions that are easy and fun:
NEW YEAR’S EVE
SHOP BRAZOS .COM
Balloon drop
Time is relative
Break out the board games or fire up the Wii for a game night. Share some laughs in the kitchen with a pajama pizza party. Get dressed up in your finest or kookiest attire for a fancy-schmancy party. Create a playlist, make a dance floor and boogie the night away. If weather permits in your area, how about a backyard campout complete with tents, a fire pit, grilling snacks and flashlight tag?
Have the kids help you blow up a bunch of balloons and string them up on the ceiling with a net (bought from a hardware or party store). At midnight, let the balloons drop. The kids will have a blast chasing them, and you can let them pop the balloons for a noisy celebration. If you don’t want to hang the balloons from the ceiling, store them in a garbage bag until needed, then pour them out from the top of the stairs.
Consider turning back the clocks and celebrating midnight at 9 or 10 p.m. “The kids will feel like they got to stay up and celebrate, and you will still be able to put them to bed at a decent time,” Kirchner said.
Get active
Make some noise
Parties run more smoothly if you give them a theme. You’ll keep the kids laughing and the adults occupied as you wait for midnight.
Kids love to make noise, so ring in the new year with clackers, kazoos, cowbells, whistles and party poppers. Save some money by shopping at the dollar store. Another idea is to buy a large roll of bubble wrap (or even better, recycle it) and lay it out on the floor or driveway for kids to jump on. Be sure to buy the large size for firecracker-level pops.

Kirchner’s Chocolate Fondue
Dipping suggestions
• 2 8-count packages hot dogs • 2 16-ounce packages bacon • 2 cups packed light brown sugar • 32 small dinner rolls
• 1 pound of your favorite milk chocolate bar • 4 oz. dark chocolate bar • 3/4 cup heavy cream or half and half • 1 tablespoon vanilla
Cut hot dogs in half crosswise. Wrap with a slice of bacon, secured with toothpick. Alternate layers of hot dogs and brown sugar in a slow cooker. Cook on low 10 to 12 hours or until bacon is browned; drain. Transfer hot dogs to baking dish; remove toothpicks. Keep warm in a 250-degree oven until serving time. Serve on dinner rolls.
Break the chocolate bars into pieces and place in your fondue pot, hot pot or double boiler. Keep on a low setting. (If you don’t have any of those, just use a regular pot on very low setting and make sure you keep stirring.) Add cream and stir constantly until chocolate is melted and smooth. (If you are melting this on a stovetop, watch the heat. Don’t walk away or the chocolate will boil and be ruined.) Stir in the vanilla right before serving. Serves 6.

Come on in Here are some ideas for transforming your entry into a most welcoming space.
1
If you have a larger entry area in your home, furnish it just as you would any other space, with artwork, flooring and accents. For one setting, I placed a console table against the largest wall, then topped it with a huge mirror. This powerful display didn’t gobble up much floor space, keeping the entry hallway open for traffic.
2
Instead of filling the console table with a lot of little accents, I placed one lovely but large urn on top of a riser and filled it with boughs of pine. The accents matched the scale of the furnishings perfectly and made a memorable statement. Similarly, in my home, I have a long, narrow console table against the wall by my staircase, which gives me a place to highlight accessories. I like to change out the display regularly, adding a few touches here and there for each new season.

HOME DESIGN
My foyer also has a nook by the front window, which I thought was the perfect spot for a comfy seating arrangement. Now it holds a table and two winged-back chairs.
Inviting entries should make great first impressions By Mary Carol Garrity Special to The Eagle
4
If your entry area is more like a wide hallway filled with doors to the front rooms, leaving you no wall space against which to place furniture or art, you can still define the space using furnishings. Put an area rug a few feet from the front door, then place a round center hall table on top of it. Dress up the table with a dramatic accent, like a large ginger jar or an olive-oil vessel holding foliage.
5
One way to give your foyer jaw-dropping presence is to turn it into a mini art gallery. A perfect place to start is your stairwell. Art can be pricey, so start small. Tackle one little wall. Do a lovely patchwork of treasures out of a host of dissimilar pieces, from trays to a lovely plate to sketches. You could also start by placing just one nice piece in the center of the open wall space. Then, over time, add to your collection. Don’t leave any good walls unadorned. I like to feature artwork above the interior doorways in my foyer because it adds to the “wow” factor of the space. A set of bird prints, for example, looks fabulous tucked into the empty spot between the top of the door and the ceiling, and gives the room more grandeur.
