Desserts to steal your heart 1/3 cup granulated sugar, plus ½ cup for coating 1 ½ cups all purpose flour ¾ cup Dutch-processed cocoa powder ½ tsp baking soda 3/8 tsp salt ½ cup dark corn syrup, such as Karo 1 large egg white 1 tsp black walnut extract, or vanilla extract 1 ½ sticks unsalted butter, softened to room temperature

1/3 cup packed dark brown sugar 4 ounces bittersweet chocolate, chopped into ½ inch pieces Heaping cup of chopped black walnuts I cup dried cherries Adjust oven racks to upper and lower middle positions. Line 2 baking sheets with parchment paper. Place ½ cup granulated sugar in large shallow dish. Whisk flour, cocoa, baking soda and salt together. Whisk corn syrup, egg white and vanilla together well. In stand mixer fitted with paddle

After chilling, shape into large walnutsized balls, then roll in the sugar. Place on baking sheets about 2 inches apart. Bake 5 minutes, then reverse position of sheets top to bottom and front to back. Bake another 5 minutes. Cookies will be puffed and cracked and seem underdone, still wet in cracks. Do not overbake or chocolate will burn. Cool on sheet 5 minutes, then remove to wire rack and cool completely.

1 1/2 cups sugar 1 teaspoon baking soda 1 teaspoon salt 1 teaspoon cocoa powder 1 1/2 cups vegetable oil 1 cup buttermilk, room temperature 2 large eggs, room temperature 2 tablespoons red food coloring 1 teaspoon white distilled vinegar 1 teaspoon vanilla extract Cream Cheese Frosting

1 pound cream cheese, softened 2 sticks butter, softened 1 teaspoon vanilla extract 4 cups sifted confectioners’ sugar Chopped pecans and fresh raspberries or strawberries, for garnish Preheat the oven to 350 degrees F. Line 2 muffin pans with cupcake papers. In a medium mixing bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder. In a large bowl gently beat together the oil, buttermilk, eggs, food coloring, vinegar, and vanilla with a handheld electric mixer. Add the sifted dry ingredients to the wet and mix until smooth and thoroughly combined. Divide the batter evenly among the cupcake tins about 2/3 filled. Bake in oven for about 20 to 22 minutes, turning the pans once, half way through. Test the cupcakes with a toothpick for doneness. Remove from oven and cool completely before frosting. For the Cream Cheese Frosting In a large

attachment, beat butter, brown sugar and remaining 1/3 cup granulated sugar at medium-high speed until light and fluffy. Reduce speed til medium low and add corn syrup mixture, beat until well mixed, scraping once with spatula. At low speed, add flour mixture and chocolate, mix until just incorporated, scraping once; mix in nuts. Give dough final stir with spatula. Chill for 30 minutes, no longer. Meanwhile, preheat oven to 375.

T

hat bottle of Bud or Guinness or even a local brew in your hand is a piece of history. Beer is perhaps the oldest of processed beverages, third only to water and tea worldwide. The earliest mention of beer is 7,000 B.C. in Iran. Egyptian drawings record early brewing. Christian monasteries spread beer worldwide. Brewing jumped from a local process to industrial mass production by the mid-1800s. Invention of the thermometer and hydrometer offered the quality control necessary for large-scale brewing, as did pasteurization. In America, light beers (smooth, low calorie) in four decades have surpassed premium beer. Sales of imported and domestic small-batch beers continue to climb at the expense of major domestic brewers. Today’s beer faces heady competition from fermented malt beverages that are not beer. These are a variety of drinks including hard lemonade (Mike’s), hard cola (Jack Daniels) and hard citrus drinks. Brewing as always is driven by the fight for alcoholic-beverage supremacy.

Hops shortage Wonder why your beer is climbing in price? Blame Ma Nature and ethanol politics. Craft brewers are battling the fourth year of a worldwide hops shortage, worse than the hops blight of the late 1800s. The price of brewing barley has followed other grains to record prices. Hops are the heart of beer, tempering the sweetness of malted grain. Hop oil is bitter and crucial to beer flavor. The Central European and German hops-growing regions have been decimated by floods and cool weather. This comes as many farmers switch from growing barley and hops to corn. Corn is at record prices due to its use in ethanol fuel. Wildfires in California, a top hops producer, have damaged the crop for

Planning to save money next year? Hoping to lose weight? Make your New Year’s resolution a reality BY MOLLY LOGAN ANDERSON, SPECIAL TO THE EAGLE

W

hat are your intentions for personal change in the next year? If you made big plans when the ball dropped Dec. 31, you weren’t alone. While statistics show that nearly half of Americans typically make at least one New Year’s resolution, in 2009, 59 percent of those surveyed by TD Ameritrade resolved to save more money. Other top resolutions on lists across the U.S. are weight loss, exercising more and quitting smoking. While people make life changes throughout the year, the ceremony of ringing in a new year seems to ignite the passion for change in us all. “I think that people have goals all year round,” says Dr. Jonathan Fader, a licensed clinical psychologist and member of the Motivational Interviewing Network of Trainers. “But the New Year is a time for a reboot of the system, a time for everyone to update.” As those who’ve tried to succeed in the past know, New Year’s resolutions can be difficult to keep. If you approach goal-setting with the following tips in mind, your resolution is sure to stick.

Behavior-related resolutions In a struggling economy, many folks will resolve to find a better job or make more money — both terrible resolutions according to Fader. He recommends choosing behavior-related goals that we can control. For employment-related resolutions, that means identifying behaviors, like using automated online job searches or applying to a certain number of jobs each day, that are within our ability to achieve. For folks looking to lose weight, Fader recommends behavior-related goals like increased activity or healthier eating in lieu of losing a specified amount of weight.

Staying motivated Do it now At the beginning of a new year, the world is buzzing with excitement about what’s to come. Folks are talking about what they’ll change or what resolutions they’ll make. “There’s a cultural norm that this is the time of year for making changes,” says Fader. “People say, ‘This is the day I’m going to change my behavior.’” Discussing your plans with family and friends at holiday gatherings is a great way to get motivated.

Realistic goals For resolutions to really stick, focus on realistic, incremental goals that are within your reach. “People set huge goals when they’re feeling really motivated,” says Fader, who recommends cutting your goal in half before committing to it. “The best-case scenario is that you’ll surpass your goal and feel better about yourself.”

Charge Your Battery “If you think about it, a motivator is really a battery for your goal,” says Fader. “The better the battery, the better your success rate.” Evaluate the reasons you have for setting specific goals, and really think about those reasons. Do you have a strong battery with a long life? The more specific and relevant the reasons are to you, the more likely you are to succeed in making your resolution your reality.

Revisit: Remembering why you elected to make your desired change is one key to keeping it top-of-mind. Once you’ve set a goal, write it down along with the reasons for doing so. Licensed clinical psychologist Dr. Jonathan Fader recommends listing three to five reasons for your goal on a laminated index card kept in a wallet or purse for easy reference. Reward: Don’t underestimate the power of positive reinforcement. When you reach an incremental goal, find a way to reward yourself. “Let your body and mind know that good things happen when you stay on top of your behavioral goal,” says Fader. Slip, don’t fall: Don’t be afraid to slip along your way to success; most people do. “The abstinence violation effect is when you throw in the towel after having a setback,” says Fader. “Protect yourself by learning that when you slip, you can get right back to your goals.”

Barksdale said Valentine’s Day is not just for sweethearts; many people like to give gifts to their family and friends, too. “I have a lot of gifts that would be appropriate for those occasions, as well,” she said. For Valentine’s Day, Barksdale said most men think of red roses when picking out gifts, but she suggested they consider other options, too. “There are options besides the typical red rose, and I think it shows a little creativity,” she said. She said there are roses in a wide variety of colors, but there are also several other types of flowers that could be used for Valentine’s arrangements, such as tulips, irises, calla lilies and hydrangeas. She also noted that Valentine’s Day falls on a Monday this year, “which means guys really need to plan ahead.” The earlier they or-

der flower arrangements, the better choice of materials they will have from which to choose, she said. She also noted that her arrangements are all different. “I don’t just mass produce. Every arrangement is handmade,” she said. One thing she does to make arrangements special is to use unusual containers, such as antique sugar bowls or teapots, which will also make good keepsakes after the flowers are gone. She also tucks herbs in flower arrangements to add fra-

Barksdale also said sending flowers is a way to show you care or to show support. “They just make people feel better, whether at work or at home,” she said. “It’s comforting to have people show they care by sending flowers.” Sometimes people don’t know what to say, for instance, if someone they know loses a loved one, she said. Flowers say the words for them, she said, and are comforting to those who are grieving. However, she suggested not waiting until the loss of a loved one to send flowers. Barksdale said many younger people don’t know the art of showing appreciation through sending flowers or thank you cards. That’s an art people should teach their children and grandchildren, she said. “It is a form of showing appreciation,” Barksdale said about giving flowers. “It doesn’t have to be a whole bouquet. It’s so easy to make someone’s day.” Barksdale also said some people

say they don’t order flowers because they don’t last long. “Great care has gone into each flower to promote longevity of the arrangement,” Barksdale said, adding that employees will send flower food and give instructions on how to make the arrangement last as long as possible. One thing that helps make arrangements last longer is to pluck out the flowers that are fading because if not, they will speed up the wilting of the remaining flowers, she said. She can also help customers looking for longerlasting flowers. Esperance roses, for example, can last up to two or three weeks, she said. She also compared buying flowers to purchasing a good meal. “It might not last long, but didn’t you enjoy it?” she said. Barksdale said she is passionate about flowers, and gets excited to work with the natural pieces of art. “I want people to experience the joy of flowers,” she said. For those on a budget, Barksdale said customers could buy a vase with flowers for around $10. A minimum purchase of a $40

arrangement is required for delivery, though. Barksdale also carries a wide variety of silk flowers, and said customers often come in for occasions such as when they change the color of their wall paint. “It’s like accessorizing your home,” she said. Barksdale said often people are intimidated by ordering flowers because they’ve never done it before, but employees can offer suggestions to help. Barksdale said she also likes to educate the public and promotes shopping locally. Local businesses support their community, such as with donating items for silent auctions, so Barksdale said nearby residents should also be supportive of Bryan-College Station businesses. She said shoppers often don’t realize when they do a search online for florists in Bryan or College Station, results will yield companies that will deliver flowers to the area, but aren’t located in the area. “I feel that’s very deceptive,” she said. She said on March 29 she will meet with the Texas State Floral Association to talk to state legislators about florist companies’ deceptive online advertising during the association’s Legislative Action Day at the Texas State Capitol in Austin. Barksdale said all the florists in the Bryan-College Station area provide quality products, and want to maintain their level of service. She also said that studies have shown that one of the things that is important to people when shopping is convenience. She said it can’t get much more convenient than walking in the front door, saying what you want and having something custom
