Sci-Tech Discovery Center ! Families across North Texas are in for a slimy, stink, crusty good time when visiting Sci-Tech Discovery Center this fall. The Center, which hopes to inspire a new generation of innovators, scientists and engineers, is opening October 3 in Frisco, TX with the travelling exhibit Grossology: The (Impolite) Science of the Human Body. Based on a popular series of books by science teacher Sylvia Branzei, Grossology is an educational experience grounded in the theory that the best way to get kids interested in science is to present it in terms they find most appealing. Let’s face it, topics such as snot, vomit, gas and scabs are completely fascinating for your average six to 14 year old. These subjects have become an interactive, larger-than-life biology lesson that harnesses kid’s natural curiosity about themselves and teaches them about how the human organism functions. Following are some fun facts associated with many of the entertaining and educational displays and games at Grossology: The (Impolite) Science of the Human Body Exhibition.

Speak Out About School Cafeterias by Kelly Kemp

Some Food For Thought Cookies or carrots, water or soda? Fresh or fried? Do you know what your child is being served at school? Do you know what they are choosing to eat while at school? The junk food and the processed food in school cafeterias across the nation have become abundant and are directly contributing to the deteriorating health of our children! If you've ever thought about the direct correlation between food and health (and if you’re a Mom like me chances are you have at least once!) or been frustrated with the school food environment in your community, you are not alone! I discovered one Mom’s mission that started while packing healthy lunches for her kids, only to find that she was being undermined by the school's offerings of junk food with no nutritional value. It made her angry-yes ANGRY and it’s OK to be angry right? So this Mom, Amy Kalafa joined forces with a fellow-angry Mom, Dr. Susan Rubin, and decided to do something about it; she made the movie, Two Angry Moms. Two Angry Moms offers strategies for overcoming roadblocks and getting healthy, good tasting, real food into school cafeterias while educating ourselves as parents and our children to make healthier choices-not an easy task for most in this world of fast, over processed foods. The movie also explores the roles the federal government, corporate interests, school administration and parents play in feeding our country's school kids! Former Texas Agricultural Secretary Susan Combs said that it will take 2 million angry moms to change school food. This fact gave Amy an idea.... Build from 2 to 2 million angry moms, start a grass roots revolution by word of Mom; together we can make a difference! Recent implementation of Texas legislation to remove fried foods from school cafeterias supports the beginnings of this movement for us!

Starting the Mom Movement in North Texas Rallying around their motto of, "Patriotism, Efficiency and Service," the members of Altrusa International Inc. of Downtown Dallas are first and foremost, a community-based organization that seeks to solve the problems in their own back yards. Inspired by Thoreau, Mamie L Bass, the First Altrusa President, put it best: "It is not enough to be good; Altrusans must be good for something." Altrusa International Inc., of Downtown Dallas members have been quietly raising funds, donating dollars and service hours to Dallas area organizations to the tune of $600,000 and 600 hours since 1982. With a 2009 focus on food literacy and school nutrition, Downtown Dallas Altrusan member Barbara Clays’ research led her to Two Angry Moms. With unanimous support from the Downtown Dallas Chapter members, a $10,000 grant was given to filmmaker Amy Kalafa for the creation of a Spanish translation of Two Angry Moms and a Dallas premiere date was set. “This is an important message for all families, “ said Barbara Clay, Altrusan and Project Chair, “it is vital that viewing the movie and beginning the movement in Dallas begins with both English-speaking and Spanish-speaking educators, cafeteria workers, administration, staff, moms and dads and all community members that care about improving the health and food literacy of our children.”

Tricks to Teach Children How to Read Food Labels

by Geri Moran One of the fondest memories of my childhood, as the youngest of 5 daughters, was grocery shopping alone with my father. It was challenging to feed a big family on a tight budget so there were many important lessons to be learned. He always made it fun, taught me how to spot the best buy, pick the ripest fruit and bought me a special treat from the bakery - a square of white cake came dipped in chocolate and sprinkled with coconut. Yum... As a young married couple we would often do a date-night Grocery Store Marathon, clipping coupons and hitting three stores in one night! I was a cheap date back then and those were good times. I enjoyed grocery shopping then and still do today -- this week we celebrate 34 years. Today it is especially challenging to be a wise shopper, to find the best value and quality for your money. It is particularly important for us as parents to teach our children how to be smart shoppers and how to recognize nutritious food from “fake foods”. I believe we as parents owe it to our children to regain the control of the food in our home and involve them in meal planning. They may be someone’s spouse someday. David Katz, MD. is an internationally renowned authority on nutrition, weight management, and the prevention of chronic disease. As an expert in Preventative Medicine, Dr. Katz has twice been recognized by the Consumers Research Council of America as one of America's top physicians in Preventive Medicine. He has created an enchanting video titled “Nutrition Detectives”, to teach elementary-age children how to determine which foods are good for them, and which ones are imposters. Abracadabra! With his magical magnifying glass the children are transported into a classroom diorama, a 3 dimensional miniature farm scene, where there are no bags, boxes, bottles or jars to be found. He reviews Why Food Matters. If you are what you eat, then what are you? Kids see how real food is fuel for our body, how it helps them grow and stay healthy, and have the energy to do the fun things they enjoy. With a colorful rainbow he shows how to add more fruits and veggies, so the food we love can love us back. Dr. Katz takes his viewers on a clever “Nutrition Safari” that shows kids how not to be fooled by the pictures on packaged food, but to actually seek out the Nutrition Facts and Ingredients List, and have fun analyzing them! With 5 clever clues he explains, in kid friendly terms, ways they can understand the complex jargon. They take an up close and personal look at whole unprocessed foods fresh from the garden or market. TIPS FOR CREATING HEALTHY EATING HABITS • Remember our children are what we eat -before and after they are born • Eat as many meals at home as possible • Pack lunch • Encourage children to help plan menus and prepare foods • Serve colorful foods • Eat a plant based diet consisting of 80% fruits and veggies, mostly raw. As a family we long remember laughter over special meals shared. Establishing good habits now will pay off later. Someday, believe it not, your kids may actually thank you. That led us on a trip through nearly her entire house where we got to see SO MANY of the most AMAZING rummage sale and garage sale finds. I mean, SERIOUSLY, if you went to her home you would NOT be able to spot the find. So here are a few of our best combined tips for finding great items and we’ll cover best rummage sale secrets in a later column – look for that in a few months. 1. Rummage Sales – Craigslist.com and local newspapers offer a list of rummage sales listed for the coming weekend. Churches and other organizations create a buying extravaganza for would be hunters, I mean, shoppers. These sales also typically have lower prices too. Plus, you’ll save gas by staying put for hours. 2. Garage Sales – Sometimes just as good as rummage sales. Depending on what you are looking for, these can be quite reliable. If you are looking for artwork or upscale items, go to more upscale neighborhoods. If you are looking for holiday decorations, look for less expensive neighborhoods. The same holds true for resale shops. We bought 20 artificial, light-up pumpkins for our big annual Halloween party at a local Goodwill in a neighboring city at half the price they cost at our local Goodwill. 3. Craigslist.com – We do love Craigslist.com don’t we??? What did we do before it? Craiglist allows you to search for a specific item and also by price. Sometimes just going to Craigslist can help you decide that you really didn’t want to buy anything in the first place, you just wanted to cybershop. Use this powerful tool wisely! 4. Resale Shops – Stores like Goodwill, Salvation Army, Half Price Books, Kid 2 Kid, Once Upon a Child, Play It Again Sports, and the many others that offer resale for clothes create an amazing shopping experience complete with items that are categorized for you. Furniture on one side, artwork on the other, and holiday fare in another room. With our consumer crazy world a lot of what you will find in these stores looks brand new. I took a friend to her first garage sale, and nearly 20 years later, we still hunt for bargains, and share tips on various stores that have the *best* merchandise. We still shop at regular stores, but for us bargain shopping is all about the hunt and the FIND. Share with us your favorite stops so we can share them with others! If You Give a Mouse a Cookie A Review by Alexandria Battle By Laura Joffe Numeroff 32 pages • Ages 3-7 • HarperCollins Publishers (Oct, 1996) Laura Joffe Numeroff, the author of the well-known series of “If You Give…” books, lives now in Los Angeles, California but grew up in Brooklyn, New York with music and books and art around her (guess what? She’s a great artist as well!), as well as two amazing older sisters. She also played the piano, sang, and danced as a child. While she had her doubts about becoming a writer at first, she soon discovered that she was great at it and went on to graduate college with a contract for the very first book she published! Luckily for us, she didn’t stop there. If You Give a Mouse a Cookie is a wonderfully easy to understand picture book, one you can’t help but like. If you give a mouse a cookie, he’s likely to want a glass

of milk to go along with it… These words start the beginning of a boy’s mission to give his new mouse friend everything he might possibly want or need. After he has received a straw to drink the milk with, the mouse next wants to clean away his milk moustache, trim his hair, sweep the floors of the house, draw a beautiful picture of his family and himself (and illustrate it, of course!), and so many other tasks that the reader’s head is likely to spin with the amount. What I liked best about the book is the way all of the events that packed the boy’s day as he strived to keep the mouse happy came full circle at the end. I won’t tell all of the things the mouse asks for throughout the day—that would be

no fun at all. You’ll have to discover them on your own as always. While you’re at it, I recommend If You Give a Moose a Muffin, If You Give a Pig a Pancake, and If You Take a Mouse to School, along with any other books by this talented author.

Brady is a princess and she knows it. She knows what she wants, and what Brady wants is her banana puffs. I say with a tone of gentle determination, “Brady, you need to finish your bottle.” Her piercing blue eyes communicate clearly and succinctly, “I want my puffs, give ‘em to me NOW!” We go around and around, Brady and me. I win, but just barely. Brady is an adorable, self-assured, independent, 9-month-old who does indeed reign in her kingdom as one of a set of triplets. Although both of her brothers are eating without difficulty, since birth Brady seems to associate eating with pain. Arching her back and refusing the nipple it became clear early that Brady has a noticeable challenge eating. A swallow study gave Brady’s concerned parents the answer: Due to Brady’s immature suck-swallowbreath pattern and overall muscle weakness, she is not able to propel the liquid to the back of the throat into her esophagus. Instead the liquid is entering her lungs and causing Brady intense amounts of pain. Her cough reflex does not trigger causing Brady to silently aspirate. Her eyes look back at me. “Did you not understand me the first time? I want those banana puffs!” “First bottle, then puffs,” I say back, as I point to the bottle then the puffs. There is a 10-second pause, a stare down. Who will win this battle? Nine-month-old female infant, against 34-year-old male speech therapist. She looks at the bottle and slowly reaches with both hands. The bottle gets knocked over on her high chair table. I pick it up. She

tries again, this time grasping the bottle with both hands and bringing it to her mouth. A little help to tilt it to her mouth and voila, we both get our desired result. Brady selffeeds and Brady gets her reward, a banana puff. Are you wondering? How does Brady eat banana puffs if she aspirates? Brady’s story is a story of hope and inspiration for therapists and families alike. Do not give up hope when you have a “gut feeling” a child has the tenacity to fight through challenges facing them early in life. With supportive parents such as Brady’s and with cutting edge treatments such as VitalStim, a form of Neuromuscular Electrical Stimulation (NMES), Brady is one of THERAPY 2000’s success stories. However, as you will learn, things were not always as positive as this; in fact, Brady’s outlook at one point was grim as she faced surgery for a feeding tube, a surgery cancelled one day before a second swallowing study confirmed the feeding tube was not needed. VitalStim was indeed “doing the trick” leading up to the banana puffs Brady demands today. I first met Brady Oct. 16, 2008, when she is three months old. She is referred for dysphagia treatment after failing a swallow study on August 27. She aspirates on all liquid consistencies and is immediately recommended for alternative feeding methods. A naso-gastric tube (ng tube) is inserted and Brady is sent home with her mother and father who feel very unsure what to expect regarding their daughter’s swallowing status. Both parents are professionals working full-time with a hired nanny in the home taking care of the triplets. Outpatient therapy is out of the question making home health therapy the only alternative.

After attending a two-day course in June 2008 on VitalStim I decide to see how Brady will tolerate electrodes on the muscles of her throat. My first attempt proves to be very successful. Brady does not show signs of discomfort or pain and she is able to swallow 10 CCs of her formula without resistance. Orders are immediately sent to the doctor for approval of an intense VitalStim treatment program three times per week for 30 minutes per session. Brady will continue with her ng tube feedings until her sucking coordination and strength improve.

Do not give up hope when you have a “gut feeling” that a child has the tenacity to fight through challenges facing them early in life. The next swallow study is scheduled for November 26, four weeks after beginning VitalStim. Brady has made good progress and is now able to drink 20 CCs of formula without showing signs of fatigue or discomfort. She no longer resists the electrodes placed under her chin. She appears to enjoy the VitalStim treatments. Despite the progress, the swallow study appears to show aspiration on all liquid consistencies. At this point Brady’s parents are faced with a difficult decision. Will Brady be more comfortable with feeding if she has surgery for a g-tube due to all the irritation caused by the ng-tube? The swallow study comes as very disappointing news considering our high hopes Brady will no longer need alternative means of nutrition. As Brady’s therapist I take the news especially hard. I am optimistic going into the study having worked with Brady and watching her

progress. I feel certain the results are not consistent with the observations I make during therapy. Why is Brady’s oral intake improving and her signs of fatigue and discomfort dissipating if she is still aspirating? This is when a therapist is pulled between the opinion of another professional and his own gut feeling. After much thought I recommend a second opinion. A second swallow study is scheduled the next week to see if taking the ng tube out will make a difference. A rush is put through on insurance and at the hospital, paperwork is a slow process to sort through but we all work together in order to avoid surgery the following day. The gut feeling pays off and Brady’s parents and I stand in the small room close to tears when a second swallow study proves Brady is indeed enjoying her food and surgery is not needed. The ng tube can be permanently removed. Brady can receive all nutrition orally. I continue VitalStim until the middle of March and today Brady is the little princess I mention above, enjoying her banana puffs and causing a fuss. She has a look on her face when I walk in, hey speech therapist, where’s the stash, and isn’t it about time you stop putting that vibrating gadget on me? I’m swallowing just fine. Indeed it is time. Football gets serious in middle school by Mike Kravik

Middle school in North Texas is one of the first mileposts of separation for kids from their parents. In so many ways it's even more so for football players. "Daddy ball" no longer exists when boys get to seventh grade. Middle school football also means practice every day of the week during the season, taking care of equipment, keeping locker rooms clean, learning how to properly represent a school and that there are consequences for not being a good student-athlete. Rex Burkhead and Carson Meagher are two of the most storied athletes to ever graduate from Plano High School. In the fall of 2003 they were 7th graders at Schimelpfenig Middle School (SMS) who spent every morning of the week impressing a young second year football coach named Don Bassham. Today, Burkhead is a freshman second-string running back at Nebraska while Meagher is in the mix as quarterback for the University of Texas El Paso. Bassham has since become the Athletic Director at SMS. Bassham says that Burkett and Meagher were going to be very good regardless of who was lucky enough to coach them. Modesty aside, the fact that both played for him makes him a link in the long chain of their success. SMS is a wonderful place for kids to attend with many unique distinctions but it is also a very typical middle school in the Plano Independent School District (PISD). SMS is geographically central within the district and located in a neighborhood that's neither old nor particularly new. The demographics are a nice cross-section for the entire district. It is also a perfect place to find out what typically happens behind the curtain of middle school football in Plano. After the school year begins, 24

coaches assess what kind of athletic talent they have. In that first week, coaches are looking for body control, agility, coordination and speed. After Labor Day, kids start working out in pads and coaches get a chance to gauge aggressiveness. Bassham says, "We can always find a place on our football team for a kid who is aggressive regardless of their athleticism. Seeing the kids in pads makes a big difference. Some kids look like Tarzan but hit like Jane." The first week the kids are in pads isn't about coaching football as much as it is sitting back and assessing talent. The coaches have a loose rein because they want to see which players have the most basic skill-sets. Invoking discipline also becomes a priority. The coaches constantly remind the players to do the little things correctly. Short, blunt phrases like "Mouthpieces in", "Stop walking to the line", and "Quit talking" are commonplace. One of the coaches barks, "If we don't do the little things in practice, there is no way we can do the big things in a game." The team is divided and the boys get ready for the "Oklahoma Drill". Four linemen are split up on both sides of the ball and a ball carrier tries to get through (not around) the gauntlet. The coaches want to see immediately which kids are willing to hit or get hit. Some boys excel while others are tentative and having their commitment to the sport being tested. On the other end of the field, quarterbacks and wide receivers are going through their own drills as a coach in a tower calls plays and observes the results. Knowing how to run correct routes is something that can be fine tuned later but not

knowing the plays the first week in pads is a red flag. The coach in the tower will randomly call out to a kid "Whaddya got on this play?" SMS runs a relatively complex passing game and can't afford to have players on the team who don't know their plays. There are sixty kids who have gone out for the football team at SMS and everybody will make one of the two seventh grade teams. It is up to Bassham and his coaches to sort out who will make the A Team and B Team. Through the first week of working out in pads the coaches had identified 18 kids (out of 24) as possible candidates for the A Team. Bassham explains, "Those 18 kids have been identified as being either good athletes or very aggressive. Everything is fluid before and throughout the season. Some kids who are on the B Team have the light come on after a few games and we move them up. Sometimes kids get hurt or don't make their grades. The B team is a wonderful thing for the kids because it keeps them involved with the football team but it's also a wonderful tool for coaches to use as well." Bassham has two coaches (Blake Herpeche and Sean Jones) that run the offense and defense for the seventh grade team while he coaches defense for the eighth grade team along with his offensive coordinator Kevin Kelen. All four coaches help out at the morning and afternoon practices for all the teams. A grueling 12 hour workday culminates as the coaches get together and talk about players and the events of the day. Rosters for teams are typically announced a few days before the first game on September 28. The season for PISD seventh grade football lasts for seven weeks and there is no championship game.

Once the season starts, kids will begin studying film of both practices and games. The kids at SMS also have their names placed into a colorcoded data base that grades everything about them as it relates to their time at SMS. With so many kids going out for football at the same time it is an excellent way to account for everybody and an attempt to not let anybody fall through the cracks. Athleticism, off-season participation, strength, speed, academics and grades are all included in the software of the data base. What's a successful season for a seventh grade football team? Bassham relates "I am as competitive as anybody and would like to win every game we play but that's not how coaches are judged. A successful season in 7th grade means playing .500 and doing everything else right. You need to have kids that make their grades and behave well in school first and foremost, otherwise it is a waste of everybody's time. The other thing that needs to happen is to make sure your kids are ready for eighth grade football and beyond. Another source of competition amongst the middle school coaches of PISD is to have more players from your school playing on Friday nights than the other coaches. Bassham beams, "I love to watch kids I coached earlier in their careers play on Friday nights. It is a source of pride and validation of a job well done." This year is different because Don Bassham has been around long enough that he can also puff his chest out on Saturdays and see kids he once coached named Rex Burkhead and Carson Meagher on television.

My family had been to Austin Avenue Grill & Sports Bar before, but this time the food tasted extra good! I went with my Dad and brother, my Mom was at book club. She is an avid soccer player and enjoys swimming, computer games, baking, and getting together with friends.

How you can give your child an Emotional Well-Visit by Adina Rich A lot of emphasis throughout the years has been placed on children's academic successes and the resources we need to tap to help kids make the grade. However, not as much emphasis has been placed on resources to help children combat issues such as stress, depression, or anxiety. Because feelings themselves are abstract, it can be difficult for children to label how they are feeling accurately. For example, a child may feel frustrated or embarrassed, which is sometimes more difficult to describe than just mad or sad. Further, children have difficulty taming emotions, and may carry things to an extreme. My son recently had a very dramatic temper tantrum, kicking and screaming, crying and hitting a chair, over being asked to share a snack with his brother. Although he was very angry, he found it difficult to deescalate, even though he had also realized that his reaction was extreme for the situation. Parents need to realize that children, like adults, need to be able to freely experiment with different problem solving aspects of using their feelings. Children can talk things out, share objects using a timer, or even to identify a worse case scenario for a fear. For example, children can discuss what they are afraid they will find under the bed, how they can visualize their success on passing the spelling test. Also, children may have problems discerning body language and may not be sensitive to the mood of others. Parents may have had a bad day, or their child may interrupt them on the phone, and the parent may snap without realizing it. Because young children are basically egocentric, we, as parents and caregivers, need to realize that this behavior is normal and that children may not be developmentally ready to process this type of abstract information in the early elementary years.

Children need to be taught how to deal with demands on their time as well as environmental and social pressures. Parents need to model problem solving verbally, showing the child how to process the information and come up with a solution. Children need to be given choices for managing things like extra-curricular activities, so that they do not become overwhelmed. Meditation and strategies for managing down or quiet time are also important. Parents need to help kids understand that they do not have to be busy all of the time. They need to appreciate down time and the art of amusing themselves. Daily check-ins with your child, focusing on not only what they did at school, but how they felt about it, can be helpful. All in all, when your child realizes that he is a unique and special individual with awesome coping skills, he or she will earn that E! Swine flu and your family

With all the headlines about “swine flu” I have been receiving many questions from parents regarding whether this is something that they need to worry about for their children:

What is the Flu and how is swine flu different?

Influenza (the “flu”) is caused by a virus spread both through direct contact and by droplets spread with coughing or sneezing. It causes symptoms more severe than the common cold, such as fever, cough, vomiting and diarrhea. While most patients recover easily, Flu can be deadly, especially in the very young and very old, killing up to3 6,000 every year in the United States. H1N1 “swine” flu is a new strain of flu which emerged in early 2009. The risk from this flu comes from its “novel” nature—as the majority of the population is not yet immune to this virus. The severity of illness caused by H1N1 is similar to that of the seasonal flu we see every winter.

How should I protect my child from swine flu?

Because this is a new virus, prevention is key. The Dallas County Health Department recommends good hygiene such as hand washing, shielding coughs and avoiding sharing items such as toothbrushes and drinking glasses. Also, keep children at home when they exhibit flu-like symptoms. For more information, see www.dallascounty.org. Vaccination represents the other important action in the battle to prevent swine flu. The swine flu vaccine has been approved for release in October, 2009, and should be taken in addition to the annual seasonal flu vaccine. You should contact the Health Department or your doctor for information on obtaining this vaccine. Despite the fears associated with this new flu virus, a plan of prevention including vaccination and careful cleanliness will help keep your family safe and healthy.
