resh off the Sochi Olympics and Paralympics, we are bursting full of Canadian pride watching our country’s finest sportsmen and sportswomen battle with the world’s best winter athletes. If you had the opportunity to attend the winter Olympics here in Vancouver in 2010, you would have been fortunate to feel the resurgence of nationalism that we all are thrust into at the commencement of these international games. Our pride seems to build over the period of a couple weeks to a crescendo culminating with the gold medal hockey game. I am fortunate to have a family member who played on team Canada’s men’s hockey team. Like every other Canadian, we were delighted beyond belief as cousin, Patrick Marleau and the rest of Team Canada’s men’s hockey team did us proud as a family and as a nation. It seems as if the entire world comes together as a family whilst the air of competitive spirit, fair play and sportsmanship are the prevalent attitude that makes the Olympics such a wonderful event. It is this very spirit and innate goodness in mankind that the world needs to feel more of. When the Canadian cross country ski coach ran onto the course mid-competition to give the Russian skier whose ski had disintegrated beneath his foot a replacement ski that belonged to one of our athletes’, that was the moment when I realized how special this worldwide event really is. It just isn’t about the medals, or the competition; it is about the act of representing your nation in a way that makes not only the athlete excel but also makes us, the fans, the supporters, the coaches the mentors and the sponsors elated with the display of the world’s best doing what they have dedicated their lives to at the highest level possible. We fans are the virtual teammates of all the Olympic athletes and the spirit and camaraderie that every country displayed makes one wonder how there can be turmoil and political unrest in so many nations around the globe. If the world’s political and economic leaders embodied the same spirit that the Olympic athletes and the Olympic movement represent, the world would be a better place for us all. In this issue we feature Canadian actress Sitara Hewitt from the hit television series, Little Mosque on the Prairie. Sitara is a motivational speaker, well-being expert, and energy healer and her passion for health is what drew us to her. Read her story to find out more. The spirit of competition is alive and well throughout the world and occasionally in sport, the spirit of fair play trumps all. Imagine if we lived in a world where fair play was the rule and not the exception and winning a medal in life was not the motivation, but rather we were inherently inspired to help those whose skis had disintegrated beneath them!

riends and family regularly tease me about my approaching curmudgeon status, particularly after they have had to listen to one of my rants, many of which center on the perceived lack of logic in the world. That persistent (and sometimes annoying) quest for logic has found some measure of satisfaction as I have worked with the editorial contributions o this issue of Vista. Take our feature on Sitara Hewitt for example. As she discusses her career and commitment to health and wellness, her emphasis on making a healthy life a good life as well is refreshing. Stressing that food can be healthy and taste good and that living well should be pleasurable if it is to be sustainable, she strikes a responsive chord in my curmudgeonly soul. Always one to be counted on for a reasoned argument, David Suzuki weighs in on the logic of risking the world’s water supplies, the basis of life, in the pursuit of petroleum resources. Agree or disagree, his article challenges the reader on more than just an emotional level and should stimulate more thought and discussion as should Dr Dahl’s explanation of what it really means to have licensed natural health products. The approach of spring and its annual focus on renewal and rebirth, complete with cute bunnies on the Contents pages, presents another opportunity to reflect on our lifestyle and priorities and make changes. Spring always seems more new than New Year’s Day to me as the life cycle begins again. Our contributors offer up suggestions on how to make changes small and large, from enjoying a green smoothie for breakfast to making better use of natural and herbal medicine. The Vista team has always pursued one primary goal: to provide our readers with solid information to promote health and well-being. We hope that this issue adds to that process and that you and those you love and care for will find opportunities in the opening of this precious season to experience the truth of Sitara Hewitt’s thought: living well should be pleasurable. You know you need to supplement your diet with Omega-3 fatty acids but did you know: • It takes 1000 kgs of fish to produce 25 kgs of fish oil? • Today’s fish oil may be contaminated with dioxins, heavy metals, polychlorinated biphenyls and radioactivity? • It’s estimated that up to 75% of fish oils are esterified which means the body cannot properly break down the fatty acids? Now that you know, choose an Omega-3 that is good for you and the planet. A.Vogel is proud to bring you VegOmega•3. It’s a unique blend of fresh organic flaxseed oil and a sustainable contaminant-free algae, which allows the body to access ALA, DHA and EPA and therefore ALL the benefits of Omega-3s. • Smaller capsule size = easier to swallow • No fishy aftertaste • Veggie capsule shell makes it suitable for vegans. s Canadian consumers are becoming more health conscious, interest has grown in monitoring sugar intake. However, most consumers may not know that sugar is a widely used and often unexpected ingredient in a variety of processed foods including pasta sauce, ketchup, salsa, relish, condiments, salad dressing, and barbecue sauce as well as candies, frozen desserts, and baked goods. Excessive sugar consumption has been linked to childhood obesity, diabetes, and neurological and behavioral disorders. Monitoring your family’s intake of sweets as well as the ingredients and additives in these foods is vital to protect your family’s health. Take note of the following health conscious tips to satisfy your sweet tooth.

VISTA MAGAZINE ISSUE 94

Avoid Harmful Ingredients

10

Conventional candies and sweets may contain harmful ingredients including artificial sweeteners, artificial colors, artificial flavors, and artificial preservatives. Artificial ingredients have been linked to health and behavioral problems in children. The chemicals used to create these unhealthy ingredients are often derived from petroleum and may contain trace amounts of arsenic, mercury, lead, and other carcinogens. Artificial colors to avoid include FD&C Yellow #5, Blue 2 Lake, and Red 40. Artificial preservatives include BHT, BHA or TBHQ, which give candy a longer shelf-life by preventing any fat and oil ingredients from going rancid. Artificial sweeteners such as aspartame, sucralose, saccharin, and acesulfame K should be avoided as well as artificial flavors including butyl alcohol, isobutyric acid, and phenylacetaldehyde dimethyl acetal. Chemicals used in artificial fla-

voring are not always listed on product labels making it difficult to pinpoint which ingredients may cause unwanted health reactions.

Avoid Pesticides and GMOs

The vast majority of sugarcane is not organically grown. Sugar plantations may employ unsound agricultural methods that have a negative impact on health and the environment. This includes heavy pesticide, herbicide, and insecticide use. Pesticide exposure is correlated with declining IQ, memory, neurological functioning, and ADHD in young children. GMOs are a growing health and environmental concern. Sweeteners are sourced from crops that are high risk for GMOs including corn and sugar beets. High fructose corn syrup (HFCS) is a popular sweetener often derived from genetically modified corn and linked to liver and kidney disease. Watch out for sugars and candy imported from the U.S. where half of the sugar currently available is sourced from genetically modified sugar beets. Although candy manufacturers are required to list sugar ingredients as “sugar,” unless the label specifically says “cane sugar” or “evaporated cane juice,” there is a good chance that the product is beet sugar, which is genetically modified. Choose certified organic sugar to be safe.

Sweeten Naturally - Choose Certified Organic

Choose from the following list of satisfying and healthy options. • Fresh Fruit Certified organic fruits are free from harmful pesticides, herbicides, fungicides, irradiation, and GMOs. Choose

Changing your mind

In our modern world, we live so deeply in a limited mindset and it is the source of so many people not being happy, healthy and living a life of ease. In this limited mindset we are consumed with irritation, worry, aggression, and fear – these are habitual unhelpful patterns of conditioned reactivity.

For thousands of years, mushrooms have been used to bring a change in perspective and a change in awareness, and have brought people closer to an understanding of their authentic selves. In this state, we know what is true and real, and happiness, wellness and ease become our norm.

Stress is the name we use for the condition that envelops all the symptoms of the limited mindset. Stress is energy draining and takes us away from our true inspired selves.

Changing the way your mind works is the first step to recovering your true personal power and ease. We call this Changing Your Mind. We invite you to take a small step in the direction of finding the greater you. For one week, try this simple program, and when you’re done, please share with us how you feel (changeyourmind@purica.com)

On some level we know that our natural state is one without stress, where we can endure the rapid pace of life without difficulty, where we experience joy and where our mind is clear. But most of us have lost the understanding and appreciation of the true holistic way and we live detached from nature and this greater way of being.

You May Be More Sensitive Than You Think

Just about everyone has some difficulty digesting gluten according to Naturopathic Doctor Jonathan Beatty. Gluten proteins are most abundant in wheat, barley, rye, and triticale (a cross between wheat & rye) but many foods and beverages have gluten added. A study from the

Gluten-Free Superfoods Reduce Inflammation

Gluten-free living has many health benefits that are still coming to light. The most significant one is reduced inflammation. The move away from pro-inflammatory gluten foods and towards anti-inflammatory superfoods like hemp protein, ancient grains protein, spirulina and chlorella has immediately positive effects.

Eat Superfood Plant Proteins

16

Plant proteins are absolutely essential to good health! As preventatives against cancer, heart disease, obesity, and diabetes, vegetable protein sources have become a cornerstone for healthful eating. Protein is found in a wide variety of foods, but not long ago, the nutritional thought of the day was that only animal sources of protein were valuable. We know better now! Vegan (plant) sources of protein such as fermented soy, raw hemp seed, sprouted brown rice and sprouted ancient grains are not only recognized as valuable, they are recommended as being absolutely essential to good health.

levels and modulate immune response. Eating more plant-source proteins with naturally balanced omega fats - just like hemp protein - reduces all kinds of inflammation and leads to stronger hearts, resilient skin, flexible joints and enhanced immunity.

Vegans are Leaner & Healthier

The first study ever of thousands of vegans published in the Journal of the American Diabetes Association found that vegans are, on average, 40 pounds leaner than non-vegans. They also have less heart disease, diabetes and cancer. On the other hand, vegans need to be vigilant about getting enough B12, iron, calcium and iodine.

Is Your Plant-Based Protein Organic?

Certified organic growers plant non-GMO seeds and use only safe, natural pest and weed control methods. They employ a wide range of non-toxic farming practices that protect our health and the health of the soil, air, and water. LeafSource stops woman’s pain within days!

Advertisment

stops customer’s pain within days!

“It works! I’ll take another two bottles please! This coming from a customer who had tried every other natural remedy under the sun in the past few years to take away her pain. Ian, the owner of the health food store couldn’t believe his ears. He had finally found the perfect product to stop his customer’s miseries. This is what every owner of a health food store dreams about, a natural product that receives so many outstanding testimonials on such a wide variety of health issues. “I had recommended a new product called LeafSource, which we recently started carrying. We have had tremendous success with this product, and almost everyone we have recommended it to over the last few months has come back and thanked us over and over again” said Ian.

Before trying LeafSource, the woman had complained about her ongoing joint pain and was at her wit’s end. Although she had experienced some relief through the numerous natural remedies she had tried over the years, the pain would never fully go away.“She returned to my store, in tears, less than one week after buying LeafSource. I didn’t know what to make of this woman standing in front of me crying, until she told me that within a few days of taking LeafSource her pain started to disappear and within a week it was completely gone - as if it was never there.” Ian goes on, “This coming from a woman whose painful joints and ongoing sciatica were so bad just one week earlier, that the pain was unbearable but now has completely subsided.”

By now you are probably wondering what is LeafSource and why is it so effective? LeafSource is a 100% natural product derived from a proprietary organic mineral composite with over ten years of university research. LeafSource helps regulate the inflammatory process and the body’s ability to repair itself. The vast majority (70 - 80%) of the population over the age of 50 have joint problems — often called osteoarthritis. This is due to the natural (or unnatural) wear and tear on joint tissue that develops through the aging process. With joint infl ammation, movement is limited and pain can be constant. LeafSource seems to have the ability to help people get their mobility and zest for life back. Millions of people seek treatment for their joint and inflammation problems by resorting to expensive, toxic prescription drugs (i.e. NSAIDs) with multiple side effects. These range from nausea and vomiting to serious intestinal disorders (bleeding, gas, pain) and even kidney and liver failure. Isn’t that too large a price to pay for a little pain relief!? LeafSource is a safe alternative to these destructive anti-infl ammatory drugs that

Best Superfood with multiple health benefits 2010 Bes t in Canada Award

cause more problems than they solve. There are absolutely no side effects and it doesn’t interfere with any other medications. Controlled experiments and observations have revealed that LeafSource is a potent antiinflammatory that has been shown to bring a reduction to inflammation and pain within a few days. People notice great results in terms of more energy and less pain by taking anywhere from 2 to 6 capsules/day. Typical maintenance is usually 1 capsule twice daily. This product gets results! LeafSource is scientificallyvalidatedthroughmore than 10 years of research at 4 universities, including the Department of Pharmaceutical Sciences, Mercer University. Aside from its incredible anti-infl ammatory and pain reducing ability, it has also been shown to improve the performance of your daily nutrition and vitamin programs. It helps increase the absorption of vital nutrients, which in turn helps these nutrients work better. Better absorption = better results! It’s almost as if they have become supercharged! LeafSource has also been shown to help enhance energy levels, improve intestinal health, strengthen hair, skin and nails and improve immune function. To see someone go from intense pain to a new lease on life within a week is truly incredible. Imagine being able to move freely without pain. Who wouldn’t want to get out of bed in the morning with more energy? It’s amazing how much of this stuff we take for granted, until it’s gone! Ian adds, “I often recommend

that LeafSource be taken with other natural joint products in order to help them work better and provide even faster relief. One of the things I hear most often from people who have tried LeafSource is they just plain feel better, have more energy and less pain. We’re so confi dent, we guarantee LeafSource 100%! That alone should be enough to try this incredible product.”

SIMPLIFYING THE COMPLEXITIES OF

HERBAL MEDICINE By Marva Ward CNP

VISTA MAGAZINE ISSUE 94

T

18

he use of plants for medicinal purposes has been the basis of medical treatment throughout human history. Archaeological evidence suggests that the use of plants as a therapeutic tool dates back to the prehistoric era of over 60,000 years ago. The earliest written history of herbal medicine dates back to 3000 BC. From 3000 to 100 BC, Indians, Chinese, Egyptians and Greeks catalogued as many as 250 plant-based medicines. By the medieval era and the 9th century, details of 638 herbal medicines were documented in a Materia Medica. However, it was Avicenna 980-1037, a Persian philosopher and physician, whose Canon of Medicine (completed in 1025) possibly made the most profound contribution to herbal medicine and to science. His text was used as the primary medical reference in the universities of Europe until the mid 1600s. Today, the World Health Organization estimates that over 80% of Asian and African countries use herbal remedies as their main source of health care. They also estimate that the basis of over 25% of modern pharmaceutical drugs have plant based origins. Among the 120 active compounds isolated from the higher plants and used in modern medicine today, 80% link their modern therapeutic use to the traditional use of the plants from which they are derived. More than two-thirds of the world’s plant species, over 35,000, are estimated to have medicinal value. The active components found in plants are divided into 16 main groups such as phenols, saponins, alkaloids, and anthocyanins to name a few. Within these groups, the isolation of all other active ingredients is monumental as plants synthesize thousands of primary and secondary constituents, but plants that have higher levels of certain families of chemicals often have similar therapeutic effects. Take adaptogenic herbs as an example. The category of herbs referred to as adaptogens are said to stabilize and regulate physiological processes that promote homeostasis (optimal regulation of interdependent health components). In the case of stress, they decrease cellular sensitivity to the stress response by controlling and regulating the chemical reaction within the body. Plant adaptogens that demonstrate an effective response in just one dose, rhodiola and eleuthero (Siberian ginseng), contain high amounts of phenols, particularly phenolpropane and phenolethane derivatives. As these compounds are structurally related to catecholamines (epinephrine, norepinephrine and dopamine), this suggests that they may play a role in the function of the central nervous system.

Alternatively, panax ginseng and plants that contain tetracyclic triterpenes are structurally similar to corticosteroids and they tend to support a healthy stress response after an ongoing daily dosing protocol of one week or more. As corticosteroids are involved in a wide range of physiological processes that include stress response, immune response and regulation of inflammation, the active components in these plants play a key role in the regulation and optimal function of the immune, endocrine and neurological systems. Herbal medicine still relies heavily on traditional dried herbs from specific plant parts as the full spectrum of chemicals and plant nutrients are contained in the remedy. However, modern day herbal supplements also take advantage of herbal extraction to concentrate particular components of a plant that are known to have therapeutic activity. Medical research often favours herbal extracts (standardized extracts or botanical concentrates) to more accurately quantify the efficacy of the plant. The extraction process is sometimes controversial, because traditional herbal medicine suggests it is the synergistic action of all ingredients in a plant that result in the therapeutic action, rather than any one particular component that has the most benefit. A concentrated herbal extract is often identified with an extraction ratio. For example a 10:1 ratio indicates that 10 parts of dried herb were used to create 1 part of dried herbal extract and the natural chemical constituents are concentrated 10 times. Standardized herbs may indicate a concentration ratio, but they always measure the amount of a specific plant “marker chemical (primary active component). For example, NOW Holy Basil (Tulsi) is a standardized extract with a minimum of 2% ursolic acid. Although holy sasil contains many active constituents, ursolic acid has proven anti-inflammatory properties allowing for numerous health benefits. It is particularly interesting to researchers as it has been shown to inhibit cell growth and induce apoptosis (cell death) in various tumours (pubmed 2012; clinical cancer research). The percentage of active ingredient noted in herbal supplements should represent the clinically proven, effective levels, of a specific compound. The complexity of herbal medicine is undisputable and so are the therapeutic results when included in a healing protocol. Finding a reputable Master Herbalist or herbal professional may be as easy as visiting your local health food store. The knowledgeable staff members often have the designation and/or expertise and if not, they may be able to direct you to a herbal professional in your area.

H

er role as Dr. Rayyan Hamoudi on Little Mosque on the Prairie brought Sitara Hewitt a greater level of recognition, but life holds so much more for this multi-dimensional actress, blogger, and mom. Her childhood spanned the globe from small town Ontario to accompanying her parents on academic excursions to locations as remote as Tibet. That diverse life course includes dance, theater, film and television; fluency in Urdu and Hindi; and a labour of love as a blogger and wellness advocate.

Of course, our conversation had to include Little Mosque…

“Little Mosque stands as a uniquely Canadian show that probably couldn’t have come about anywhere else. It is unapologetically multicultural, a reflection of Canadian life. It also features unique female characters who are more fully developed than in many TV shows.”

Your interest in health and wellness seems almost as strong as your interest in acting. Where does that interest originate?

“I actually trace it to the entertainment industry. The work schedule in theater, film, or television is really not healthy, but it forces a person into making healthy living choices. If you are not sleeping and eating right, stamina can be a serious problem. “When I was younger, I didn’t always do things right. When I didn’t make the right choices, I felt off, and felt like I was not looking my best. “In addition to the demands of the industry, I also had some personal health concerns. I wanted to become empowered and take control of my life and the felt and looked.”

How did that develop into your work in promoting wellness?

How does that translate into your own life? What do you eat at home?

“I try to follow the basic rule of eating whole, unprocessed foods. I try to buy organic as much as I can – lots of dark leafy greens and superfoods like chia and acai. When I get a lot of leafy greens I feel more balanced, relaxed and energized. I love farmers’ markets because it is hard to beat the freshness – and the flavour.

“I am fortunate in that I am able to retain encyclopedic amounts of information, so I tried to learn as much as I could. I just try to take control and take a holistic approach. “I believe in building beauty from the inside out, and that is the approach that I take with my blog, www.livingwellwithsitara.com. Wellness is not one dimensional, and the blog deals with many aspects, not all physical. It also addresses the mental and spiritual side of things. Positive affirmations, for example, can be so powerful in promoting healing and growth.”

“Food has to taste good and be healthy.” Do you include supplements in your diet?

“There are certain supplements that I use regularly and often recommend. Magnesium is really helpful for sleep and digestion and I make sure I take omega oils for brain and skin health. B vitamins boost my energy and I find holy basil a great de-stresser and adaptogen. “It seems like probiotics are good for everything from skin problems to irritability, and I make use of some natural basics like aloe, apple cider vinegar, and herbal tea. I also start the day with a green smoothie.”

What role does exercise play for you?

“I exercise 4 to 5 times a week, and I like variety. I walk; I ride; I go to the gym; or I do yoga. Playing with four-year-old son certainly burns a lot of energy.

“I have had various trainers… in fact, my husband is a personal trainer and fitness expert, so I have access to really good input when I need it.”

Which comes first for you – the acting or the wellness work?

“I don’t think I have to make a choice. I am pursuing both acting and well-being synergistically, and I have to say that the public profile that comes from my acting gives me opportunities to be heard that I might not have otherwise. “Celebrity can be used to inspire people in their own lives. I like it when celebrities do useful things in the areas that interest them. For me, it is promoting holistic wellness.”

What has been the response from your industry colleagues and friends?

“Some of them embrace the concept of pursuing wellness, and some are not into it at all. I make a conscious effort not to preach. I think most people recognize that my approach and commitment are genuine. “I did have one Little Mosque cast member joke one day: ‘You play a doctor on TV and now you can prescribe health supplements.’ “I guess the bottom line is that I want to look good and feel good. Healthy living is pleasurable!”

id you know that bone broth is known as a superfood? The cooking process breaks down bones and connective tissues – including proteins, minerals and fat – that heal the body in various ways. When you ingest bone broth, it feeds the body with collagen, which is the building block of cells to bones, ligaments, cartilage and the brain. Gelatin, a form of collagen used in food, is used (among other benefits) to help digestion because the liquid gets absorbed into the body quickly and without much effort. There are other virtues of bone broth. Bone marrow helps the immune system by carrying oxygen to cells in the body. Minerals such as calcium and phosphorus are essential for maintaining healthy bones and generating energy. Without a doubt, making your own stock is far healthier and more cost effective than buying the canned or boxed alternative. If you are pressed for time, then use filtered water with herbs and spices for a quick stock. Most store-bought cubes and liquid broths have added ingredients that are not for the health conscious individual. For example a store bought beef broth can include: salt, monosodium glutamate, sugar, partially hydrogenated palm oil, corn starch, less than 2% dehydrated beef, caramel colour, natural flavour, disodium inosinate, TBHQ as a preservative and can be made on equipment that has also processed wheat, milk, eggs, soy, fish and shellfish. These ingredients can be hazardous to those with allergies to any one of them. There are no hard and fast rules when making stock; however, here are a few tips that may make the process easier and more efficient, healthier and more flavourful. • Use a stockpot that is tall and narrow to help slow water loss from evaporation. • Use cold water for the stock; this promotes the extraction of collagen which may be sealed if using hot water. • Stocks are simmered gently, with bubbles just breaking the surface, and not boiled. If a stock is boiled, it will be cloudy. • Add salt at the end of cooking, as the stock may become too salty. Always test taste prior to serving. • Meat stocks benefit from long, slow cooking. Vegetable stocks do not. Quick vegetable stocks should take 25 to 30 minutes; basic vegetable stocks, 45 minutes to one hour. • Some vegetables should be avoided for making stock such as the cabbage family, turnips, rutabagas, Brussels sprouts, broccoli and cauliflower as they can overpower the flavour. Asparagus can also be a strong flavouring. • Tomatoes can be overwhelming to the flavour of stock, so unless you want a strong tomato flavour, keep it to a minimum. The following fresh vegetables are great for stock: onions, garlic, potatoes, carrots, celery, mushrooms, green beans, bell pepper, green onion, scallions, and green peas, also, fruit scraps such as apples, pears and pineapple. Once cooked, cool the mixture and strain it to remove any pieces of vegetables, fruit or scraps. Bouquet garni (or bag of herbs) consisting of parsley, bay leaves, a sprig of thyme, and possibly other herbs, is common. This is often placed in a sachet to make it easier to remove once the stock is cooked. Fresh meat should be added to a stock before vegetables, and the

“scum” that rises to the surface is skimmed off before further ingredients are added. If you want to remove the fat, after the stock is finished, allow it to cool completely. Once it is cooled, the fat separates and solidifies into globs and rises to the top, which can be removed easily. Stocks can be frozen and kept indefinitely, fresh is always best. Make sure to cool thoroughly before refrigerating or freezing the stock. Homemade stock provides a background to soup. Choose ingredients that are complementary, not overwhelming. Today’s fresh or even last week’s vegetables are fine, as long as they’re still healthy. The refrigerator shelf life of a stock is three to four days, but the stock can be boiled at the end of this period and the life extended another three to four days. Stock can be kept for extended periods in this manner. This is good to know. Leftover cooked meat, such as that remaining on poultry carcasses, is often used along with the bones of the bird or joint. Fresh meat makes a superior stock and cuts rich in connective tissue such as shin or shoulder of beef are commonly recommended, either alone or added in lower proportions to the remains of cooked poultry to provide a richer and fresher-tasting stock. Quantities recommended are in the ratio of 1 part fresh meat to 2 parts water. There are four main types of stock: vegetable, chicken, meat and fish. It’s best to stick with the stock that goes with what you’re cooking. For example, if you’re making a chicken dish, use chicken stock instead of beef, though vegetable stock may also add a nice layer of flavour to certain recipes. • Vegetable stock is made only of vegetables and simmered for one hour only. • Chicken stock — bones should be cooked for 3–4 hours. • Ham stock — bones should be cooked for 4 hours. • Lamb stock — bones should be cooked for 5 hours. • Fish stock is made with fish bones and finely chopped vegetables. Fish stock should be cooked for 20-25 minutes—cooking any longer spoils the flavor. • Shellfish stock is made from boiling shells from seafood for about one hour. Stock made from bones needs to be simmered longer than stock made from fresh meat.

What is a Master Stock?

The defining characteristic of a master stock from other stocks is that after initial use, it is not discarded or turned into a soup or sauce. Instead, the broth is stored and reused in the future as a stock for more poaching. With each use, the poached meats and other ingredients absorb the stock’s flavour while imparting their own back into the stock. In this way, over time, flavour accumulates in the stock, making it richer and more complex with each poaching, while subsequent poached meats absorb this flavor and likewise become more flavorful. In theory, a master stock could be sustained indefinitely if due care is taken to ensure it does not spoil. There are claims of master stocks in China that are hundreds of years old, passed down through generations of cooks in this way. I found this very interesting. I hope that with these tips I’ve shared will entice you to start making your own soup stocks. Bon Appetit!

T

his may sound strange coming from the founder of a supplement line that is entirely licensed; however, I am talking about the flip side of the coin. Most people would assume that if a product has been reviewed and approved by Health Canada for licensing, it must be high quality. But nothing could be further from the truth. Customers often ask us, “If a product is licensed, shouldn’t it be high quality and therapeutic?” Ideally, it should be, but all products are not created equal. Because of the different sources of raw materials, NPN licensing simply becomes window dressing. It hides the real issue and creates empty hope for those who are suffering and seeking natural relief. When pursuing quality, it is often reflected in the price you pay. When the price seems just too good to be true, the bargain may actually cost you more than the higher quality version. The best way to describe the difference is to discuss the details of different manufacturing methods. Let’s use Amino Acids (AA) as an example. With the enzymatic reaction method, an amino acid precursor is converted to the target amino acid using 1 or 2 enzymes. This enzyme method allows the conversion to a specific amino acid without microbial growth, thus eliminating the long process from glucose. This method comes into its own when the amino acid precursor is supplied at low prices. With the extraction method, natural proteins are degraded to various amino acids, but the amount of each amino acid contained in the raw material proteins naturally restricts the yield. Cheaper versions are derived from non-vegetarian sources starting as a protein, and often from sources such as bird feathers, human hair and/or sewage sludge. The inorganic proteins are cleaved into component Amino Acids, which must then be purified or cleaned up to isolate the individual AAs of interest. The purity of the finished product is highly dependent on the efficacy of the purification steps taken, and consumers buying AAs based on price alone will not likely end up with a bioavailable product that is able to absorb to the cellular level. Customers must question the things they take into their bodies, especially when it is intended to bring better health: “If this is the starting position, what else is still in there? What chemicals used to clean up the finished product still exist?” The amino acid fermentation method is a method for the production of amino acids utilizing the phenomenon that microorganisms convert nutrients to various vital components necessary to themselves. In order to produce amino acids using microorganisms, it is important to find a microorganism with a high potential for producing amino acids. Once a microorganism suitable for the fermentation method has been selected, it is necessary to enhance its potential - that is, to make improvements to take full advantage of the potential of the organism. Fermentation method uses 30 enzymes to produce amino acids - hardly comparable to the enzymatic reaction method.

WHEYFINDING

VISTA MAGAZINE ISSUE 93

By Dr Cory Holly

28

The Way Back is a 2010 drama film about a group of prisoners who escape from a Siberian camp during World War II. Lack of food and water, sandstorms, sunburn, blisters and sunstroke weakens the group and many die. The key to their escape and survival is the motive to be free. Wayfinding describes the various techniques used by travelers to locate unmarked regions or routes that are labeled incorrectly. These include the concept of dead reckoning, map and compass, astronomical and global positioning. Dead reckoning is the process of accurately predicting the location of an object through mathematical calculation. Wayfinding is used widely in travel and tourism literature and is accepted as a standard process for traveling between two points with the least amount of difficulty. It is also utilized by hotels and parking lot companies as a strategy to help drivers find parking garages.

Wheyfinding: Which Whey To Go?

Whey protein was originally introduced into North America in the late 1980s and by its own virtue became extremely popular in the early

1990s. Today, you can order whey protein online or find it nationwide in pharmacies, large retail/wholesale chains, mainstream food centers and even corner grocery stores. But not all whey is created equal. Although athletes and several sports nutrition companies popularized it, whey protein was first isolated and used for medicinal purposes in Germany, France, Switzerland and England. After research scientists discovered its remarkable healing and restorative properties, small numbers of alternative medical physicians began utilizing whey peptides orally and intravenously as a treatment protocol for cancer and AIDS patients, who, as a result of their disease, were losing tremendous amounts of lean mass (cachexia). Whey peptides countered the catabolic effects of these wasting diseases by helping the patient maintain a positive nitrogen balance. Whey peptides also strengthened immune response, which tends to collapse in degenerative disease, especially among the elderly. I personally discovered whey protein isolate at the 1993 Anaheim Expo West Natural Products Trade Show, and since then, it has been a primary food staple in my diet. But not only mine.

www.vistamagonline.com

Tracy and all the kids, including our grandchildren and even infants, have WPI shakes every day. They’re something I recommend to each and every one of my students, clients and friends because everyone in my family has benefited from whey protein isolate in countless ways. I gained about 15lbs (6.8kg) of solid lean mass in 18 months after adding whey protein isolate to my diet for the first time, moving from a body weight of 205lbs (93kg) to 220lbs (100kg), and that was in my mid to late 30s. That was without any changes in my diet or training routine! Now at age 56, I’m just as fit and lean. In fact, in 2013, I entered and won my division title at the INBA Hawaiian Muscle (Mr. Natural Hawaii) in Honolulu. I consume up to four shakes a day on average, taking in 1-4 scoops (25-100g) of WPI per shake, depending on when and for what reason. I never miss pre- and post-workout application, and this approach should never be underestimated. I take a bucket of WPI and my blender with me on every road trip and tour, which I have learned by experience helps overcome the catabolic effects of sleep deprivation, high stress and working long hours. Whey is extremely soluble but unlike whole raw milk, whey protein isolates are almost entirely free of carbs (lactose) and lipids (fat), making this culinary agent bio-friendly to every ethnic origin, age and gender. WPI is acceptable even if you’re lactose intolerant. When you’re isolated, you’re free, but you’re all alone. That’s the cost of freedom. The best whey to use whey is to add a scoop or two to a cup of filtered water in a blender. Add 1-2 tsp of a mixed blend of omega-3 rich seed oils (hemp, flax and pumpkin), fresh and/or frozen fruit, and any number of additional nutritional performance powders including creatine, glutamine, ribose or spirulina. Now you have a complete meal comprised of clean high-water volume, antioxidant enzyme rich carbs, a beautiful source of essential fatty acids and the best protein known.

What is Whey?

Whey is the thin, watery part of milk that separates from the curd after coagulation, as in cheese-making. Whey is mostly sugar (lactose) and water, and contains less than 1% protein, but these proteins, referred to as “whey peptides”, are the finest highest quality proteins known as determined by nitrogen retention, growth promotion and biological value (BV). It’s the milk curd that contains the undesirable protein casein, not whey. It takes over 229 liters of milk to produce one kilogram (1000g) of concentrated, high-quality whey protein isolate. WPI refers to a standard or scale created by the dairy industry (not the health food industry or biochemistry text books) for the benefit of selection and

sale to wholesale suppliers, manufacturers and consumers. WPI by definition contains no less than 90% protein. If it contains less than 90% protein, it is classified as a whey protein “concentrate” (WPC). Concentrates are inferior to isolates in the same way that silver has less value than gold. Concentrates have less protein and less biological value. They have less than 90% protein but not less than 35% protein, so disparity between various concentrates can be enormous. With the advent of sophisticated extraction and special filtration methods, including cross-flow microfiltration and ion-exchange, it became possible to isolate the peptide or whey protein microfractions without using harsh chemical solvents, toxic acids or high temperature. As a result, up to ninety-nine percent of the protein remains non-denatured and viable. To optimize health and performance, a full range of low, medium and high molecular weight peptides should be present, as each peptide possesses its own unique healing and restorative property. Peptides are isolated by extraction without the need for heat or acid-treatment. This preserves the integrity and biochemical properties of the protein microfractions. The principle microfractions present in WPI include beta-lactoglobulin, glycomacropeptide, high alpha-lactalbumin, immunoglobulins, albumen and lactoferrin. And guess what? Whey protein isolate is one of the best sources of the branched-chain amino acids (BCAAs) considered by many to be ideal for recovery and for fueling hungry growing muscles. So to reiterate, whey protein isolate alone, not whey protein concentrate or blends of the two, is my single favorite best choice of any protein supplement on the market. Twenty years after that first whey protein isolate “hit,” this incredible supplement still serves me as well as my workouts in the gym and the enrichment of my mind through research and online education. I should mention here that I do reinforce my WPI shakes with a very nice all-in-one nutritional blend powder consisting of hemp, brown rice, saviseed, pea, chlorella, omega-3’s, greens, antioxidants, probiotics, digestive enzymes and a complete spectrum of vitamins and minerals. So there you have it. Shake’n’Take! The Whey to good health is simple, but difficult to follow. The road is steep and narrow, and filled with many potholes, rocks and sinister edges. The key to your escape and survival is the motive to be free.

TRADING WATER FOR FUEL

IS FRACKING CRAZY

I

t would be difficult to live without oil and gas. But it would be impossible to live without water. Yet, in our mad rush to extract and sell every drop of gas and oil as quickly as possible, we’re trading precious water for fossil fuels. A recent report, “Hydraulic Fracturing and Water Stress”, shows the severity of the problem. Alberta and BC are among eight North American regions examined in the study by Ceres, a U.S.-based nonprofit advocating for sustainability leadership. One of the most disturbing findings is that hydraulic fracturing, or fracking, is using enormous amounts of water in areas that can scarcely afford it. The report notes that close to half the oil and gas wells recently fracked in the U.S. “are in regions with high or extremely high water stress” and more than 55 per cent are in areas experiencing drought. In Colorado and California, almost all wells — 97 and 96 per cent, respectively — are in regions with high or extremely high water stress, meaning more than 80 per cent of available surface and groundwater has already been allocated for municipalities, industry and agriculture. A quarter of Alberta wells are in areas with medium to high water stress. Drought and fracking have already caused some small communities in Texas to run out of water altogether, and parts of California are headed for the same fate. As we continue to extract and burn ever greater amounts of oil, gas and coal, climate change is getting worse, which will likely lead to more droughts in some areas and flooding in others. California’s drought may be the worst in 500 years, according to B. Lynn Ingram, an earth and planetary sciences professor at the University of California, Berkeley. That’s causing a shortage of water for drinking and agriculture, and for salmon and other fish that spawn in streams and rivers. With no rain to scrub the air, pollution in the Los Angeles area has returned to the dangerous levels of decades past. Because of lack of information from industry and inconsistencies in water volume reporting, Ceres’ Western Canada data analysis “represents a very small proportion of the overall activity taking place.” Researchers determined, though, that Alberta fracking operations have started using more “brackish/saline” groundwater instead of freshwater. The report cautions that this practice needs more study “given the potential for brackish water to be used in the future for drinking water” and the fact that withdrawing salty groundwater “can also adversely impact interconnected freshwater resources.”

Although BC fracking operations are now mainly in low water stress regions, reduced precipitation and snowpack, low river levels and even drought conditions in some areas — likely because of climate change — raise concerns about the government’s plan to rapidly expand the industry. The report cites a “lack of regulation around groundwater withdrawals” and cumulative impacts on First Nations lands as issues with current fracking. Ceres’ study only looks at fracking impacts on freshwater supplies, and offers recommendations to reduce those, including recycling water, using brackish or wastewater, strengthening regulations and finding better ways to dispose of fracking wastewater. But the drilling method comes with other environmental problems, from groundwater contamination to massive ecosystem and habitat disruption — even small earth tremors — all done in the name of short-term gain. It’s important to heed the conclusions and recommendations of this study and others, but given the problems with fracking, and other forms of extraction, we must find ways to control our insatiable fossil fuel demand. That burning these — often wastefully — contributes to climate change, and our methods of extraction exacerbate the problems, should make us take a good look at how we’re treating this planet and everything on it, including ourselves and generations to come. It’s a reminder that we need to conserve energy in every way possible. In the short term, we must realize that we have better ways to create jobs and build the economy than holding an “everything must go” sale on our precious resources. In the longer term, we must rethink our outdated economic systems, which were devised for times when resources were plentiful and infrastructure was scarce. Our highest priorities must be the air we breathe, the water we drink, the soil that provides food and the biodiversity that keeps us alive and healthy.

Here ’s Why I Love Them and Why You Will Too.

Green smoothies are: Fibre Filled – Fruit and green leafy vegetables are packed with healthy fibre. Fibre helps digestion and eases elimination issues. Fibre also makes you feel full, which keeps you from making unhealthy food choices out of desperation. Nutrient Dense – So many of us are carrying extra weight and eating a bit too much, but our body is still starving – not starving for more calories, but starving for nutrients. Green smoothies are nutrient rich. They’re packed with vitamins, minerals, amino acids (what protein is made of), and antioxidants (which help fight disease). The nutritional power of green smoothies does more than feed your body – it heals your body. Alkaline – Helping your body have an alkaline Ph level fights inflammatory-based diseases such as cancer, diabetes, arthritis and autoimmune diseases. Because green smoothies are made of fresh fruits and vegetables they are an ideal anti-inflammatory food.

9 Ways to Fit Green Smoothies Into Busy Lives

Here’s how to prep these nutritional powerhouses in the midst of busy lives? Getting into the green smoothie habit is so much easier with these time-saving strategies. 1. Have the Basics on Hand. Ensure that the basic ingredients of green smoothies are staples on your grocery list so your refrigerator is always loaded with greens. 2. Keep Bananas in the Freezer. Peel overripe bananas and keep them in a plastic bag. These add sweetness and creaminess to any green smoothie. 3. Create Smoothie Packs. To prepare for several days, assemble 5 ziplocks filled with all the ingredients needed, except liquid. All that’s left to do is add liquid, blend and enjoy. 10 extra minutes of advanced prep time = 5 days worth of effortless smoothies. 4. Prepare the Night Before. Load the blender with desired ingredients the night before. Store in the refrigerator overnight. In the morning, add liquid and blend. 5. Invest in Good Tools. Get a large chopping board, a sharp knife, salad spinner, and a good blender. I love my Vitamix – and use it 4 times a day sometimes.

Guidelines

6. There’s no “right” way to make a green smoothie – only what’s right for you. You want to be making green smoothies you love

to drink. Yes, it may take a bit of getting used to drinking a glass of greens, but you’ll love the way it makes you feel. When I tell clients that they will be addicted to it, they look at me like I am an absolute lunatic. I just might be, but let me tell you every single one of my clients, every one, is addicted to the juice. Not such a bad vice to have. 7. The point of a green smoothie is to incorporate a boatload more greens (super nutrient dense food) and more fibre into your diet. 8. There are a lot of smoothies out there called green smoothies. However, many of them are fruit smoothies with a small handful of baby spinach thrown in. I encourage you to make your green smoothies very green, like the recipes below. It may take a bit of experimenting to make your ‘just-right’ green smoothie. Have patience and experiment. 9. Green smoothies come out super smooth in a high-speed blender (like a Vitamix – my favorite kind). Still, you can make your green smoothie in a regular blender. You just may need to cut up your veggies smaller and blend them for longer.

n ounce of prevention is worth a pound of cure, or in this case – an ounce of enzyme is worth a pound of caustic soda; or a hundred bucks spent on a plumber. I’ve lived in a few houses that aren’t on mains sewerage – they’ve either used septic systems or a blackwater recycling system. These types of systems need to be treated with extra care as (good) bacteria do the work of breaking down all the icky stuff. A caustic soda (sodium hydroxide) based chemical for clearing drains in these scenarios is a sure-fire way to kill all the hard working bacteria in these systems. So, in that respect, yes, it’s an environmental hazard. Even if you are on mains sewage, pouring Drano or a similar product down the sink isn’t exactly the best choice. For starters, it’s a hazard having it on the premises and it’s a very dangerous product to have anywhere near children. Secondly, caustic soda, while breaking down rapidly in the environment, also breaks down just about anything it touches. There are certainly more earth friendly options. One alternative is to pour a scoop of baking soda mixed with half a cup of vinegar down the drain, and follow it quickly with boiling water. The other alternative, what I use, is an enzyme/bacteria-based preparation. These are sold under various names and can be purchased in most hardware stores. Although they appear to be a little expensive, it’s the solution that keeps on working; only requiring an infrequent top up dose. What they do is to help establish colonies of useful bac-

teria in your drains and systems that feast on.. ummm.. well, if it’s organic they eat it basically ;). The great thing about these preparations is that they are totally non-toxic to humans and the environment and they are very easy to use – no complicated mixtures, just pour and you’re done! Tip: when using these types of preparations, it’s best to add them just as everyone in your family is heading to bed – if large amounts of water follow the preparation, it can wash away the bacteria before they’ve had time to get a foothold in your drains. The next time you notice your drains smelling or perhaps water not getting away as quickly as it should, reach for bacteria instead of caustic soda. Bacteria, while sometimes our enemy, are quite often our friends! Another couple of tips in the “prevention vs. cure” genre: If you have a grease trap – check it regularly. I became a bit lazy and assumed my grease trap was still in good working order after a scrape 12 months prior. I had gone into an over-enthusiastic water saving mode, which didn’t help, and I had also slacked off on adding enzyme – with rather smelly and messy consequences. Something else I’ve found very useful is a sink drain strainer – these trap food and debris before it winds up in your plumbing.
