he kids are back in school (except in BC), the pace slows down a bit and our lives return to a somewhat scheduled routine as we enter the fall. It is always such a beautiful time of year no matter where in Canada you live. With the exception of a few unexpected storms, we all will ease into the new season and bid a fond farewell to summer. With the fall comes a change in our diets and pace of life. Life tends to get more hectic after summer and we turn to convenience for our dietary needs. This fall be more selective in how and what you feed your family. It is just as easy to cut up some fresh fruits or vegetables as it is to grab a processed flour and sugar ridden denatured nutrition-less piece of packaged crud. Eat whole foods people! Lean protein and whenever possible, organic produce. This type of diet will keep you healthy on so many levels and it is preventative in nature so you add to your longevity and quality of life. We are very fortunate here in Canada that we are a charitable nation. Over the past month social media has been a driving force across the world with the ALS ice bucket challenge being accepted and passed forward by socially aware people everywhere as well as entertainers, athletes and media members. The very nature of charity is in itself a noble and worthy means of not only giving to others but also giving to oneself in that there is a very rewarding feeling that comes from helping those in need. We rose to the challenge as Canadians always do and aside from the millions raised, the videos have been hilarious. This has been a summer of learning for me. I have learned to enjoy life more while having fewer things. I have learned that no matter how much you want to believe what someone tells you, you are almost always better relying on your gut instincts. I have also learned that life is very precious very fragile and goes by very fast. Enjoy the ride people!

ALLERGY VS. SENSITIVITY VS. INTOLERANCE

First, it is important to understand the difference between food sensitivities, intolerances and allergies. Most people are familiar with the classic concept of an “allergy” (or anaphylaxis) where substances such as peanuts or bee stings can cause rashes, hives and swelling of the throat, often requiring emergency treatment. However, adverse reactions to food can also occur over a longer time period, an event referred to as a “delayed-onset” reaction. The body creates an antibody (a specific memory molecule) against a certain food, which causes symptoms every time that food is ingested in the future. Food sensitivities and intolerances do not cause acute and severe reactions, but rather, cause a low grade, chronic effect that can be responsible for a wide range of symptoms. These effects happen slowly over a period of hours or even days! This makes it much more difficult to identify a food sensitivity, or intolerance. Some of the most common symptoms are indigestion, diarrhea, frequent colds and flus, headaches, bloating, chronic sinus congestion, fatigue and acne. A well-known example of food intolerance is lactose intolerance. In this condition, the body can’t digest lactose (due to a missing enzyme), which causes bloating, diarrhea and intestinal cramping. An example of a common food sensitivity is sensitivity to wheat, which contains the protein gluten. This reaction may produce symptoms such as headaches, sinus congestion and joint pain. A key difference is that food sensitivities occur via immune system reactions while food intolerances do not. There is a degree of overlap between the different types of food reactions and it’s difficult to identify which type you may be experiencing without advanced testing. Note: For the remainder of this article all three types of reactions will be referred collectively to as “food allergies” for the sake of simplicity.

WHAT DOES THE RESEARCH SAY?

There is a large, growing body of scientific research that has connected food allergies to numerous diseases. Inflammatory bowel disease (IBD), irritable bowel syndrome (IBS) and rheumatoid arthritis (RA) are three of the most well researched examples. When eliminating gluten (a protein commonly found in wheat), patients with IBD, IBS and RA have shown significant improvements. Other diseases that have been linked to food allergies include autism, acne, joint pain, autoimmune disorders, migraines, thyroid dysfunction, recurrent infections and depression.

THE GUT-IMMUNE CONNECTION

A key concept in understanding why food allergies have such a powerful and wide-ranging effect is the connection between our digestive tracts and immune systems. The majority of the immune system is actually located just outside of the gastrointestinal (GI) tract. The human body has evolved this way strategically because our GI tract is one of the most common ways that foreign invaders, such as bacteria and viruses, can enter the body. Food allergies and sensitivities cause chronic irritation and inflammation of our digestive tracts, in turn causing our immune systems to be overstimulated and sensitized to normally harmless food particles. To further compound the problem, specific chemicals and refined substances have been linked to the promotion of food allergies. Benzoates, sugar, fat, hydrogenated vegetable oils, MSG, nitrites, sulfites, salicylates (aspirin) and tartazine (food colouring) have all been linked to food allergies.

HOW TO IDENTIFY YOUR UNIQUE FOOD SENSITIVITIES

The obvious question: “How do you identify a food allergy and resolve your symptoms?” The simple answer is to avoid the most common food allergens and substances that promote them to stop this cycle of inflammation and damage. The most common food allergens are dairy products, soy, corn, eggs, oranges, beef, pork, and gluten/wheat. Any proper detoxification program should start by eliminating these allergenic foods. If done properly, some people find that this alone can improve their symptoms. However, a person can have sensitivity to any food or multiple foods which can complicate the identification process. To identify what specific food intolerances you may have, there are generally two options. The most cost-effective, but time-consuming, option is to go through a full food elimination diet where a person stops eating the most common food allergens. This method is the most precise in identifying food reactions but can take up to a month to identify which foods cause symptoms. Elimination diets can be a challenge to complete, since most people are not able to completely avoid the most common allergens without proper guidance. The second option is to get a food allergy blood test, which assesses the person’s blood for reactions to the most common foods (usually approximately 100 different foods). This option costs additional money and requires a registered healthcare practitioner (i.e. a Naturopathic doctor) to administer, but it avoids the time-intensive elimination diet process. Identifying which foods you are sensitive to is essential to addressing the root cause of your symptoms. This can take commitment, effort and patience. Most people give up once they find out they need to remove common foods they eat daily. It is also important to remove substances such as refined sugar, food preservatives and dyes in addition of food sensitivities since they can further damage digestive tract and normal cellular function. Only once you remove these obstacles you can allow your body to heal and your symptoms to resolve.

he awareness of food allergies, food intolerances and food sensitivities has been growing rapidly over the past few years. More specifically, people are discovering that certain foods have the power to negatively impact their health. How Do You Oil Pull?

Oil pulling is a simple process that can be done in the comfort of your own home. Place one teaspoon to one tablespoon of cold-pressed, organic coconut oil or sesame oil inside your mouth, and swish in your mouth for ten to twenty minutes. reast cancer is the second most commonly occurring cancer in women, after non-melanoma skin cancers. It is the second most deadly cancer in women after lung cancer. Breast cancer patients would be well advised to eat fish and take fish oil during and after breast cancer treatment. What is so special about fish oils? They are loaded with the most important omega-3 fats EPA (eicosapentaenoic acid) and DHA (docosahexaenoic acid). Those fats, which the body cannot make, must come from our food and the richest supply is found in fish or fish oils. Fatty fish like salmon, mackerel, sardines and tuna are rich in these omega-3s, and two servings a week is a good rule to follow. Omega-3 fatty acids play important roles in brain function, visual acuity, normal growth and development, and balancing inflammation. Several studies also have found that fish and fish oils help the body fight breast cancer. They also make one of the leading cancer drugs, Tamoxifen, more effective. In 2013, Chinese researchers reviewed 21 studies and found that having higher intake of fish oils was linked to a 14% reduced chance of breast cancer in post-menopausal women. In addition they learned that for every 100mg per day of additional omega-3 intake from fish, the woman’s risk of breast cancer decreased by 5%. And an important caveat (sorry vegetarians): in this study, the plant based omega-3 “ALA” appeared to have no anti-cancer properties. This work supports the findings of the 2010 VITAL study published in the Journal of Cancer Epidemiology, Biomarkers & Prevention. In the VITAL cohort, researchers from the Fred Hutchinson Cancer Research Center evaluated the use of dietary supplements on breast cancer risk. More than 35,000 postmenopausal women were followed for six years. The women in this study did not have a history of breast cancer and did not have breast cancer when they enrolled in the study. Of the various supplements used by the women in this study, only fish oil was associated with a reduced risk of breast cancer. Risk of breast cancer was 32% lower among women who reported regular intake of fish oil supplements. At the American Academy of Cancer Research’s annual meeting in 2013 researchers reported that omega-3 fats from fish were particu-

larly effective against the highly aggressive and very deadly triple-negative breast cancer. Breast cancer is classified into four types: • Luminal A, often treated with Tamoxifen which targets the estrogen receptor • Luminal B, also often treated with Tamoxifen • Tumors that test positive for the HER3 receptor, often treated with Herceptin • Triple-negative tumors At a molecular level these different types of cancer respond to different treatments, and the prognosis for triple-negative is often very poor since this cancer does not respond to Tamoxifen or Herceptin. The researchers, a team from the Breast Cancer Research Laboratory at the Fox Chase Cancer Center collaborating with Pennsylvania State University, reported that omega-3 and metabolites from omega-3 work against proliferation of all the aforementioned forms of breast cancer. They work to undermine the cellular machinery involving apotosis (programmed cell death) and proliferation (spread) of those cells. But they were especially effective against the triple-negative cell lines. Proliferation in those cells was reduced by as much as 90%. The same team of researchers reported in 2011 that fish oil intensifies the effects of Tamoxifen, a breast cancer drug that interferes with estrogen. If a tumor was being treated with the drug, adding fish oil to the diet made the tumor more benign, less aggressive and more responsive to the treatment. The omega-3s also suppressed counterproductive immune responses like allergy and inflammation, which hampered the cells’ ability to fight cancer. et’s be clear about one thing. Karlene Karst is not about fads and shortcuts. Her work as a registered dietitian and author is focused on helping people see the big picture… to establish lifestyles that promote good health and a genuine sense of well-being. That work extends to the development and distribution of natural health products as founder of Sea-licious. Karlene is also quick to lay claim to her key role as a happy, grateful mother. She shares with VISTA some key aspects of her work, her philosophy, and putting all of it to work in her own life.

Her interest in nutrition and wellness springs from her own experience.

“Growing up on a farm in Saskatchewan, I experienced the best of what family means along with some of the challenges that life brings as I lost three of my grandparents from cancer and my father was diagnosed with stage-3 bladder cancer when he was only 35 years old. I suffered through some health challenges of my own in my early 20s that led me to change my approach nutrition and to use natural health products, which subsequently led to my career in the natural health industry. I saw that without our health, we really don’t have anything. “I truly believe that people, experiences, friends, teachers, and jobs come and go throughout our life for various reasons. My first job in the natural health industry was working for a local company manufacturing plant oils such as flaxseed oil. At the time, I didn’t consider it to be my dream job, but as it turned out, that company put me on the path to healing and the life I have today.”

Then came progressive growth in understanding and applying what she learned.

“The only supplements I had ever taken in my life at this point were a Flinstone multi and a chewable vitamin C (both of which are all sugar). Working for a company manufacturing supplements considered to be “good fat” was an eye opener. I started to use a combination of borage oil, fish oil omega-3s, and flax oil, and within about 6 months, I had my “aha” moment. I wasn’t reaching for that giant bottle of advil. I wasn’t getting headaches as often, nor did I feel in as much pain. This was the beginning of my love for natural health and the importance of omega healthy fats. “I co-authored my first book in 2004 called Healthy Fats for Life, which became a national best-seller and set me on course for the next 10 years of sharing the science of good fats. Sea-licious is the result of my health journey, story and passion for health.”

It doesn’t work that way. To find your optimal health takes trial and error, discipline, consistency, and a deep inner belief that you can feel your best.”

Despite individual variations, there are some foundational concepts.

“Each body is unique and what works for one doesn’t necessarily work for another. I believe in a foundational nutrient program to help build the body right from the basic cell level. My nutrition mantra for everyone has always been to eat whole, real food as much as possible and to eat five small meals/snacks every day. “This advice has been golden for so many people who are accustomed to going most of the day on little food (after skipping breakfast) and living on caffeine and “office snacks” for most of the day. Continually fueling your body will improve your metabolism, keep your body revved up, stabilize your blood sugar, and prevent excessive hunger at the end of the day which leads to binge eating and late night snacking. Each one of those five meals/snacks should include protein, carbohydrate (fiber) and healthy fats (omega-3s). Most people will respond favorably to this nutrition advice and feel very energized and ready to make even deeper changes within their lifestyle.”

As a health and wellness educator, there are many occasions for satisfaction.

“I have taken great pride over the years in really being able to connect with people on a very personal level, which I believe helps people to trust my advice. Sharing personal details from some of my own struggles and successes allows people to feel that it’s OK to make mistakes. Health is a journey and one that can take some time to really get the hang of it.

“I also am very honest in that I know I still have things that I need to improve on from better controlling my own stress to finding better balance in my life. As the saying goes, you can only lead a horse to water, you can’t make it drink. For people to make effective changes to their lifestyle, they need to REALLY WANT it - not feel like someone else wants it for them. They need to have a sense, deep down, that now is the time to make the changes and that they don’t ever want to turn back. “My health journey has progressed considerably. Each day/year I strive to continue to make improvements in my body and my health. I would never have thought I would be blending spinach and kale for breakfast, but I do now. Our body has an innate ability to health itself when given the proper nutrients and environment. “Each day I try to learn something new. I know when I am pushing myself too hard–my body tells me. Then, I need to take a step back and re-evaluate. Stress and lack of sleep are big triggers for me and I continue to work on ways to help minimize the impact of my very busy life.”

There is a role for nutritional supplements.

“For the most part, I love supplements, although it can be very tricky to navigate through the plethora of options available. Remember to keep it simple. Incorporate the basic nutrients like omega-3s, probiotics and vitamin D. If you have specific health issues that may require higher dosage, that will require some investigation that you need to either consult with a practitioner or become knowledgeable yourself. And remember not all supplements are created equal, and not always is something more expensive the better option. Natural health food stores are great options for helping customers choose the right product. At the end of the day, become knowledgeable so you can make the right decisions.”

We need to understand and embrace the approaching the change of seasons.

“As a Canadian, I feel lucky to live in a country with four seasons and eagerly anticipate the change from one to the next. Fall is honestly my favorite: the cool, damp mornings, followed by warm sunny afternoons. Watching the leaves change is my “happy” place. The abundance of harvest that accompanies this change of season is also one of comfort and warmth. “When it comes to our nutrition, I let the season guide my food selections as I try to focus my family’s eating on seasonal and local goodness. Now is the time to enjoy hearty soups, stews and casseroles packed full of root veggies, beans and legumes and ancient grains. And of course, we can’t forget about all the delicious fall fruits—I just recently picked up a few BC Bartlett pears, which are juicy and amazing. “As a family, we love spending our weekends at local farmers’ markets or enjoying apple picking and pumpkin patches. Really, it’s just taking the time to recognize, appreciate and be grateful for all we have.”

And life just keeps unfolding.

“Next up: Project Baby! Haha. I am expecting another baby (my third) in December. Our family is very excited about this new addition. And of course I will continue to grow Sea-licious and hopefully inspire and teach people along the way to make healthy changes in their lives.”

COQ10, THE BODY ’S ‘S PARK PLUG’ By Barrie Carlsen

oenzyme Q10, called ubiquinone because of its ubiquitous nature, can be called Natures ‘spark plug’. Ubiquinone is concentrated in the mitochondria - the “power plants” of the cell - and plays a vital role in the production of adenosine triphosphate (ATP), the body’s so called “energy currency.” Through its synthesis of energy, ubiquinone is involved in all body processes requiring energy: energy synthesis; active transport; membrane and nucleotide stability; syntheses of enzymes, coenzymes, hormones; neurotransmitter synthesis and reuptake; cillary activity in the upper respiratory systems; all muscle contractile functions; sperm production and motility; deactivation of muscle contractions; pumping action of sweat and other cutaneous glands; etc. Ubiquinone is the hub around which life processes revolve in the human body. Coenzyme CoQ10 exists in two forms and structure as ubiquinone and ubiquinol, having two separate but essential functions, and its ability to act as a redox pair to recycle each other as needed. Without ubiquinone, life is not possible because the body cannot survive without energy. Ubiquinol, due to its antioxidant properties, recycles ubiquinone to maintain the life sustaining supply of energy. Ubiquinol and other antioxidants act as part of the host defense system and prevent the toxic by-products (free radicals and super oxides) from the synthesis of energy from damaging our cells and shortening and reducing the quality of life. Ubiquinone and ubiquinol, being redox pairs, are easily converted from one form to the other in the body. When exogenous ubiquinone is absorbed from the intestines it is converted to ubiquinol in the absorption cells, the lymph, or in the blood. Since CoQ10 is not used to produce energy in the lymph system or blood, it is understandable that this conversion takes place to fulfill the need for anti-oxidant protection in the circulation. On the other hand, in the inner membrane of the mitochondria where energy is made, the oxidized ubiquinone is necessary, and the reduced form ubiquinol is rapidly converted to the oxidized ubiquinone form. This conversion is known as the Q cycle, and it was once thought that the proportion of ubiquinone and ubiquinol required for energy synthesis would last indefinitely. It is now known that age and disease diminish the body’s ability to produce ubiquinone and to convert it to ubiquinol and that CoQ10 deficiency would be prevalent in an ageing society. Pyridoxyl-5’-Phosphate (PLP), the active form of vitamin B6, should be included with CoQ10 supplementation because it further enhances plasma concentrations of CoQ10. PLP is essential to the endogenous (internal) synthesis of CoQ10. It is known that the endogenous bio-synthesis of CoQ10 from the precursor tyrosine is dependent on adequate PLP levels. Research has found that individuals with low plasma CoQ10 status are also low in plasma PLP. Taiwanese researchers found that high blood levels of CoQ10 and vitamin B6 (pyridoxyl-5-phosphate) were linked to lower artery disease risk. Phosphatidylcholine (PC): A more effective delivery system (release in the small intestine) should include the use of fat soluble emulsifying agents such as phosphatidylcholine to increase the bio-activity

of CoQ10. It was demonstrated that the bio-availability of sitostanol, a phytosterol compound, was increased when formulated with lecithin. Another study showed that absorption of the fat soluble carotenoid lycopene was enhanced with the enteral administration of phosphatidylcholine. In addition to PC’s ability to assist in the transport of CoQ10 throughout the bloodstream and bile, it functions structurally as a component of the cell membrane and as a neurotransmitter for normal brain function. Supplemental intake of CoQ10 formulated with phosphatidylcholine and pyridoxyl-5’-phosphate will enhance plasma concentrations of CoQ10, thereby improving its bio-activity. In addition, this combination of nutrients may also help reduce the levels of plasma homocysteine (an independent marker for cardiovascular disease risk), since pyridoxyl-5’-phosphate and phosphatidylcholine support the methylation pathways responsible for lowering homocysteine levels.

Bio-Availability of Ubiquinone and Ubiquinol

CoQ10 (ubiquinone) is a large molecule that is absorbed through the absorption cells in the small intestine by a simple passive facilitated diffusion process. Passive means that the process does not require energy. Facilitated means that the process requires a lipid molecule such as phosphatidylcholine to act as a carrier for the CoQ10 molecules. After absorption, CoQ10 accumulates in the blood and becomes bioavailable to all body cells. Bioavailability reflects absorption, but it is not the actual absorption and should not be used as an accurate measure of such. It does, however, give a good estimate of the amount of CoQ10 available as an antioxidant in the blood and that’s available to the body cells. CoQ10 is accumulated and is stored in the cell membranes and in the membranes of the organelles in the cell. It has been known for over two decades that the bio-availability of the pure crystalline CoQ10 is less than that of liposome, micelle, and dissolved CoQ10 forms. The current commercial and scientific issue is the bio-availability of ubiquinol compared to that of ubiquinone. Both forms are poorly absorbed when supplemented in traditional hard and soft gelatin capsules or tablets, with only 1% of the oxidized ubiquinone absorbed in its pure crystalline state. Up to a 3-times increase in absorption is possible with ubiquinol or with micelle forms of ubiquinone; however, 3 x 1% is still only 3%, a very low absorption. The 97% of ingested CoQ10 is “digested” by stomach acids and enzymes and very little actually enters the small intestine for absorption.

eorge Costanza from the hit comedy Seinfeld is my hero. Like George, I pay attention to how things are done by the conventional mainstream, but in real time, I do the exact opposite. This is my formula for personal success. In matters of behavior that relate to my own personal health and wellness, I Do the Opposite of what the collective does. Why? Because I want to stay well and live free. I want to be highly functional as I age. To achieve these goals, I have to protect myself from oxidative stress and minimize telomere loss.

In episode 86 of Seinfeld, the hapless George Costanza realizes that all of his instincts to date have been wrong. George: “It’s not working Jerry, it’s just not working”. Jerry: “What is it that isn’t working?” George: “It all became very clear to me sitting out there today that, every decision I’ve ever made in my entire life has been wrong. My life is the complete opposite of everything I want it to be.” Jerry: “If every instinct you have is wrong then the opposite would have to be right”. When I watched this episode on TV for the first time, I laughed a mile high, and this is how I know the principle is legitimate. Watch any great comedian perform on stage to see what I mean. The truth is the funniest thing known to man. Of course the notion of doing the opposite of the majority seems ridiculous, but the more I thought about it, the more I realized just how true it was.

Do the Opposite!

Whatever conventional wisdom recommends when it comes to nutrition, health and fitness, Do the Opposite. When I apply this principle in my own life, I get exactly the same results that George got when he did the opposite, and I’m not kidding. It truly is a phenomenal formula for success. I call this phenomenon the Costanza Principle. Here’s an example of the new George in action: George, Jerry and Elaine are seated at their favorite table at the local diner. An attractive blond woman shoots a glance George’s way. Typically the balding and shy George would conclude that this beauty was way out of his league, but not today. Today the new and improved George has discovered that all of his instincts were wrong, so the opposite must always be right. So he gets up, walks boldly over to the girl who gave him the eye and says: George: “My name is George. I’m unemployed and live with my parents.” Blond: “I’m Victoria. Hi.” Not only does George land a new girlfriend, but he moves out of his parents’ house and scores an awesome job by telling off New York Yankees owner George Steinbrenner. One scenario after another always leads to the same outcome. When George does the opposite, he keeps getting better and his life keeps improving. Believe it or not, this same approach works like magic when it comes to preventing chronic disease, disability and depression. Here are a few real life examples: Conventional food guides and pyramids encourage everyone to eat a ton of bread, bagels, muffins, pasta, crackers and grains. Do the Opposite. Drink lots of clean, filtered water, eat lean animal proteins and plenty of fresh multi-colored fruits and vegetables. Consume a diet that is genomically compatible with your genome, not a garbage can. You’re not a mindless idiot designed for agricultural exploitation. Cardiologists often tell heart patients with elevated serum cholesterol to stop eating eggs. Do the Opposite. Eat plenty of soft-boiled eggs, sardines, shellfish and liver from animals raised with their health in mind, but cut out the sugar, flour and fried artificial foods. Dietary cholesterol has next to nothing to do with the “cause” of vascular and heart disease. If that was true, our species would have died out long ago. Surgeons frequently tell their patients not to take vitamin E before surgery. Do the Opposite. Double or triple the dose! Load up on antioxidants before they cut you open and expose your insides to the outside world. Only you can prevent inflammation and infection. It is you and not the surgeon or hospital staff who will suffer. When you injure yourself and conventional health professionals warn you against the hazards of physical movement and exercise, Do the Opposite. But ease into it, exercise correctly and train like a pro. Rely on the science and proven medicine of exercise rehabilitation,

yoga and weight training, not prescription and OTC drugs. You’re body is designed by nature to move with elegance and power, but ask yourself this question, “What is the best way to prevent injury?” If (when) your friends, family members, doctors, pharmacists, college professors or athletic coaches tell you not to take dietary supplements because they’re useless and only create expensive urine, Do the Opposite. Take your vitamins, minerals, antioxidants, adaptogens and protein shakes faithfully. Believe that your condition can and will change, that your body has the power to heal itself, and that natural whole foods and NHPs exist to support the very biological process they have no respect for or knowledge of. Ignorance isn’t bliss, but it’s wonderfully profitable for the machine that needs and feeds on your disease or disability. When your ship of life turns upside down because of a huge unexpected stress wave, don’t listen to those who will try and persuade you to remain with them at the bottom and say that help is on its way. Do the Opposite. Start climbing up to the top ASAP before the false bottom caves in, and as the sea of life comes crashing in and drowns everyone just as you predicted, be thankful you relied on reason and the power of logic. In any life situation, be it money, health, marriage or career, listen to what convention has to say. Closely observe the behavior of the collective mainstream. Assemble all the facts in your mind and apply the principle of cause and effect, “For every action there is an equal and opposite re-action”. Take a good hard look at the mainstream majority. Are they well? Are they lean? Are they functional? Analyze how they behave, what they do and why they act. Once you’ve identified what effect their attitudes and actions are having on their health and performance…

magine a world where every young child learns the ABC’s of organic food and gardening. Envision the health and environmental benefits of an entire generation trained to create an adequate food supply for all – providing safe food and pure diet-based solutions to childhood health problems such as diabetes, childhood obesity, allergies, and ADHD. Growing Up Organic (GUO) in Canada is just one of many North American projects associated with the innovative Edible Schoolyard program originating in California, USA and reflecting the educational values of the Center for Ecoliteracy, which promotes K-12 education for sustainable living and the concept of “ecological intelligence” which teaches children to comprehend the complexity of natural biosystems and the interplay between the natural and man-made worlds. Offered under the auspices of the Canadian Organic Growers (COG), Growing Up Organic sets a prototype for schools and schoolage children across Canada. With four chapters including the Organic Food Council of Manitoba (OFCM-COG); Island Natural Growers, Salt Spring Island; Ottawa Canadian Organic Growers; and Perth/Waterloo/Wellington; GUO aims to increase youth awareness of and access to local organic foods while encouraging increased organic food production for each local community. To this end, GUO delivers inter-related program components which emphasize school gardens, farm field trips, organic educator visits to the classroom, and hands-on food skills including nutrition education. The initiative is designed to increase the amount of organically grown food in Canadian institutions, including child care centers, to ensure that young children have access to safe pure food. GUO also works with elementary, junior high, and senior high school teachers and administrators to increase the amount of organic food served in school cafeterias. Growing Up Organic is an organization which seeks to increase consumer consumption of local organic fruits and vegetables while increasing awareness of the health benefits of “going organic.” Providing fun and constructive solution-based program for parents concerned about the hazards of conventional pesticide exposure, chemical addi-

tives, and junk foods, GUO is a happy and natural approach to healthy family food consumption. Encouraging consumers to “Buy Local” GUO seeks to create meaningful relationships between local organic farmers and local schools. As a result, GUO is creating new market opportunities for local farmers by culturing a stable long-term institutional (school-based) demand for local organic food while teaching children that “We are what we eat!” and the ABC’s of good nutrition and self-sufficient food production. Growing Up Organic offers regular workshops for teachers and parents which include hands-on experience in the following areas. • How to implement garden-based education • Using the garden as a curriculum tool • How to start an organic garden at your school • How to choose a site, materials, and supplies • How to garden according to the season • Fundraising tips Having trouble getting your children to eat their vegetables? Parents who garden organically report that their children are more likely to reach for food that they grow and prepare themselves! Once your children taste the sweet homegrown difference experienced when eating freshly picked produce, they will quickly become enthusiastic about organic gardening and the fruits of their labors. Children enjoy seeing the “seeds that they have sown” being served at the dinner table. In celebration of Canada Organic Week, Sept 20th-28th 2014, families across Canada are encouraged to initiate similar projects in each locality. Young and old alike can benefit from these simple lessons in pure food and organic gardening – supporting self-sufficient local food production for good health, food security, and a sustainable world.

hen we elect people to office, we give them power to make and enact decisions on our behalf. They should have a vision that extends beyond the next election and the latest Dow Jones average — to our children and grandchildren. We expect our leaders to have a clear picture of our world and the conditions necessary for human life and well-being. If they don’t, how can they make informed decisions? So let me outline some simple, scientifically validated truths about us and the world we live in — truths that should guide our political decisions. We are, above all else, biological beings, with an absolute need for clean air from the moment of birth to the last death rattle. We take air deep into our lungs and filter whatever’s in it. Plants on land and in the ocean take in the greenhouse gas carbon dioxide and release oxygen during photosynthesis, creating the atmosphere we depend on. We are about 60 per cent water by weight, so we need clean water to be healthy. When water falls to Earth, it’s filtered through tree and other plant roots, soil fungi and bacteria, cleansing it so it’s safe to drink. All the energy in our bodies that we use to move, grow and reproduce is sunlight captured by plants in photosynthesis and converted to chemical energy, which we ingest. We eat plants and animals for our nourishment, so whatever they’re exposed to ends up in our bodies. We need clean soil to give us clean food. These are basic, biological facts and should be the prism through which any decision is made at individual, corporate or government levels. Protection of air, water, soil and the web of life should be the highest social, political and economic priority. We’re also social animals. Scientists have shown that love during childhood is essential for healthy development. Children who are deprived of love at critical points can develop a variety of physical and psychological deficits. To avoid those, we have to work for strong families and supportive communities, full employment, justice, greater income and gender equity and freedom from terror, genocide and war. Finally, we are spiritual creatures who require sacred places, a sense of belonging to the world and a recognition that we are not in charge of nature, but dependent on the biosphere for our health and

well-being. We are not outside of nature; we are part of it. To be fully healthy and human, our most elemental needs are biological, social and spiritual. Politicians ought to know this. Their role is to protect and enhance those necessities of life; otherwise there is no vision, direction or leadership. That’s why it’s absurd for a politician or government representative to speak about any aspect of the economy without acknowledging the threat of human-induced climate change. Many oppose doing anything on ideological grounds, but the science is overwhelming and compelling, and the need for action is clear. What can you say about “leaders” who choose to ignore the best available evidence to the detriment of the people they are elected to represent? Surely those who act only for short-term economic gain, imposing destructive consequences on generations to come, must be held responsible. We must also consider the consequences of rapid and excessive exploitation of fossil fuels on the world’s poorest people, who have done little to create climate change but are most affected by it. Even though Canada ratified the legally binding Kyoto Protocol, which spelled out our obligations to reduce the risk of climate change, many of our “leaders” have wilfully ignored scientific evidence and urgent calls to meet the protocol’s targets, and Canada eventually abandoned the agreement. What should we call that? And what can we say about “leaders” who can see something is wrong and have the means to respond but choose not to? This is what Canada is doing — in the face of overwhelming evidence and the pleading of other industrialized nations. Our elected representatives deserve respect for their commitment. But the elevated status and power of politicians also carries responsibilities. Many are abrogating those responsibilities for ideological reasons that have nothing to do with our well-being.

USING EUCALYPTUS OIL AROUND THE HOME by Michael Bloch

Production, active ingredients and buying tips

Eucalyptus oil is most commonly steam-distilled from the leaves of certain species – not all eucalyptus trees are suitable for oil production due to their poor yield. Different species also have varying attributes medicinally speaking. Eucalyptus oil is highly flammable and contains compounds that are natural disinfectants and pest deterrents. The main active ingredient is cineole, also known as eucalyptol, which gives eucalyptus oil its distinct aroma and taste. An aspect to compare when selecting eucalyptus oil is the cineole/ eucalyptol percentage. Pharmacy grade eucalyptus oil has a minimum of 70% cineole/eucalyptol content and some brands may have as little as 40%. If two brands offer the same volume and one is more expensive, it may be due to its being higher grade oil containing more cineole – which should be mentioned on the label. Another indicator of a low cineole content brand will be the addition of a camphor extract, which should also be stated on the label. While a very Australian product, it’s interesting to note that Australia only produces around five per cent of world eucalyptus oil requirements these days. The majority of the world’s commercial production occurs in China. You can still buy fair dinkum, true-blue and ridgey-didge (Aussie slang terms for “the real thing”) 100% Australian Eucalyptus oil from companies such as FGB Natural Products and Emu Ridge. You just can’t beat eucalyptus oil made from trees grown and harvested in Australia, but I guess I might be biased being an Aussie :). While eucalyptus oil is used in many medicines, always exercise caution and seek professional advice if you’re considering ingesting it as it can be toxic in high enough doses. In Australia, products with over 25% eucalyptus oil content must be labelled as a poison, although a death from eucalyptus oil poisoning hasn’t happened in the country for around 50 years, as far as I know. It’s my understanding the “poi-

son” labelling isn’t a requirement in other countries. I make mention of this in case you’re in another country and import eucalyptus oil, so you’re not put off by the labelling, but again – seek professional advice before ingesting or applying any brand, imported or local, to your skin.

Storage and shelf life

Like many essential oils, eucalyptus oil should be store in a dark glass bottle and kept in a cool place out of direct sunlight. Unlike many essential oils, eucalyptus oil is quite robust and if stored correctly, will keep well for 1 to 2 years from the date of production.

Uses around the house

Aside from medicinal uses, eucalyptus oil can be used around your home to replace many environmentally harsh synthetic chemicals. Penny, a professional cleaner, wrote to me with these tips: “I make a spray and wipe with water, eucalyptus oil and some washing up liquid. The idea comes from a hospital cleaner and works well. Proportions are not rocket science. Fill the bottle mostly with water – add a slurp of dishwashing liquid and then a capful or thereabouts of 100% eucalyptus. Shake gently to mix. Works well on all surfaces. I use it diluted again in a little water in a bucket and it is great for all those finger marks that are hard to move from laminex finishes.” • You can also make a general disinfectant for toilets etc. and again, it’s a very simple recipe. Mix 50 ml (1.6 oz) of eucalyptus oil with a litre (quart) of water. That’s it – you can store it as you would a normal disinfectant. • Eucalyptus oil can be used neat in order to remove sticker/decal residue from glass. • Add 1-2 teaspoonfuls of eucalyptus oil to your load of washing for a fresh scent along with the anti-microbial benefits. • Use the oil neat to help remove paint, grease and ink from clothes. • If you have a hanging car air freshener that’s almost dead, reinvigorate it by adding a few drops of eucalyptus oil. • Half a teaspoon mixed with half a litre (half quart) of water makes for a good bug repellent for plants. • Use it as a stainless steel cleaner. • To use as a room air freshener, mix a quarter of a teaspoon or 15 drops of eucalyptus oil with a half teaspoon of vodka, place in an atomizer/spray bottle and add 2 cups of water. This should be quite subtle, so you may need to add more. here’s nothing quite like the scent of a eucalyptus forest after an extended dry spell is broken by rain – everything smells so clean and fresh! Eucalyptus trees, more commonly known as gum trees locally, are the predominant genus of trees in Australia. Australia has over 600 species; comprising nearly 75% of our flora. Some species of eucalyptus, such as mallee, can survive in incredibly dry and hot conditions; others are quite at home in below-freezing temperatures. While much loved here, unfortunately, eucalyptus trees have become invasive species in other parts of the world, such as California, where they have been around since approximately 1853. he rate of personal consumption of refined sugar is astronomical. In 2011, statistics indicate that both Americans and Canadians consumed an average of 26-27 teaspoons per person per day, equating to 100 lbs or 45.36 kg yearly. How did this happen? Where did our love affair with sugar begin and ultimately what are the consequences of this seemingly uncontrollable self-indulgence? The islanders of New Guinea were the first to discover the seductive power of sugarcane around 6000 BC. Spreading slowly in popularity throughout surrounding areas, it reached the Asian countries in approximately 1000 B.C. The process of turning sugarcane into powdered or granulated sugar was developed in India. By 600 AD, sugar had reached Persia and when Arab armies conquered that part of the world, they too returned home with this new, delightful bounty. Fast forward to the 14th century and the passion for sugar reaches Europe. Soon after its European introduction, France and Britain sought out tropical islands suitable for the successful cultivation of sugarcane. The growth of sugar cane cultivation exploited the land resources, the native people and those forced into slavery to support the plantations. The results were the devastation of both the physical and cultural environments of these islands and the slave homelands – the

results of which are seen to this day. By the end of the 17th century, abundant global supply saw the cost of sugar fall, so that it was accessible to all economic classes and grew to become a staple in most households around the world. Despite being, at best, nutritionally void, sugar still demands the greatest market share of the table-top sweetener market, but high fructose corn syrup (HFCS) is becoming a more popular choice for many food manufacturers and is widely used for confectionary, soft drinks, cakes and cookies. HFCS, a combination of glucose and fructose, can be even more harmful as the method by which it is metabolized in the body is a possible catalyst for many 21st century diseases. Diabetes, obesity, cardiovascular disease, Alzheimer’s, hyperactivity and many others are linked to our uncontrollable consumption of refined sugar and HFCS. Luckily it is possible to “have your cake and eat it, too”, without serious health consequences. A number of natural source, less refined, sugar alternatives are available at your local health food store. What constitutes “natural”? Unlike, aspartame and sucralose (Splenda) which are synthetic ingredients created in a laboratory, natural sweeteners exist in nature and are extracted from natural sources.


symptoms such as bloating, gas and diarrhea. Xylitol is one of the most popular choices and its antibacterial properties have an added benefit in promoting dental health. Erythritol is an alternative SA option. In commercial settings, it is produced from glucose by fermentation with yeast. It is 60–70% as sweet as table sugar yet it is almost calorie-free and it does not affect blood sugar. As with xylitol, erythritol does not promote tooth decay. The most significant difference between xylitol and erythritol is in how they are digested. Although both are only partially absorbed by the body, erythritol does not go into the lower intestine for elimination. It is primarily excreted in the urine. Because of this unique digestive pathway, it is less likely to cause any gastric upset. The new age of sugar alternatives is dawning with stevia, xylitol, erythritol, and others providing an alternative to refined sugar. Recently manufacturers have taken the guessing out of combining these ingredients by creating natural sweetener combinations that act as a sugar replacement, in a 1 to 1 ratio for any application. At long last, there is a choice and perhaps a solution to the uncontrollable North American addiction to sugar.

Stevia is approved as a food additive in many countries around the world. It is a popular, plant-based sweetener and a viable sugar substitute. Stevia is 250-300 times sweeter than sucrose (table sugar), heat stable, PH stable and non-fermentable. It is suitable for diabetics and any individual looking for a calorie-free alternative sweetener that will not impact blood sugar levels. It can be used in cooking and baking; however, due to its concentrated sweetness, it is necessary to alter recipes to accommodate its use. Sugar Alcohols (SA) represent another class of alternative, naturally-occurring sweeteners. Available in Canada for a number of years, SAs are manufactured by adding hydrogen atoms to sugar. The result is a sweetener that looks and tastes like conventional sugar, but with a reduced calorie content and glycemic load. It is because of this similarity to sugar in taste and density that they are being successfully used as a sugar substitute in cooking and baking. SAs pass through the digestive tract relatively intact and then they are eliminated through the bowel. This unique digestive process is the primary reason that they have a relatively low glycemic index (GI) and are popular among diabetics. Alternatively, this may also be problematic for some individuals as overindulgence has been known to cause

To make Bollywood soup – think of choreographing a dance routine! First you make the stock (entrance), then you add the vegetables (the body), then you add the spices (the chorus line), and last, but not least, you add the coconut milk (the grand finale). It’s always good to have a dress rehearsal. That’s why I make Bollywood soup a day ahead; plus it gives the combination of the ingredients a chance to savor in all the flavors. Like Bollywood dancing, Bollywood soup is very versatile. This soup can be made vegetarian or with added meat, fish or chicken. Use brown rice instead of lentils. Add lemon or lime juice or use a different variety of vegetables that you prefer. You can’t go wrong. If you like it hotter add more chilies; if you like it milder, add less. Any way you choose to move to the music will create a great performance! Garam masala is a blend of ground spices common in North Indian and other South Asian cuisines. It can be used alone or with other seasonings. The word garam refers to intensity of the spices rather than capsaicin content. Capsaicin is the active component of chili peppers responsible for the burning sensation. Garam masala is the heart of most Indian dishes. It’s a combination of different spices and has as many different combinations of ingredients as there are households in India! Here’s one basic example: coriander seeds, cumin seeds, black peppercorns, black cumin seeds, dry ginger, black cardamom, cloves, cinnamon and crushed bay leaves. Red lentils or Masoor lentils range in colors from gold to orange to actual red; these are the sweetest and nuttiest of the lentils. They fall somewhere in the middle in terms of cooking time and are usually done in about 30 minutes. They tend to get mushy when cooked through, so they’re perfect for curries or for thickening soups. Cumin seeds have a nutty, peppery flavor. They serve an important role in Indian and Middle Eastern cuisine and are a key component in curry powder. Cumin seeds resemble caraway seeds, being oblong in shape, longitudinally ridged and yellow-brown in color. Cumin, caraway, parsley and dill belong to the same plant family, known as Umbelliferae.

INGREDIENTS

• 12 cups filtered water • 1/2 cup Bragg’s Amino Soy or low sodium tamari sauce (wheat free) • 1 cup chopped carrots (1 large carrot) • 1 cup chopped celery (2 stalks celery) • 1 cup chopped onion (1 small onion) • 1 cup chopped tomatoes • 2 cups Masoor (orange) lentils • 11/2 tsp garam masala • 1 tsp cumin seeds • 2 tsp fresh ginger chopped or 1/2 tsp powdered ginger • 4 cloves garlic chopped or 1 tablespoon powered garlic • ½ tsp red chili peppers • 2 cups full-fat coconut milk • Serves 8 large bowls

PREPARATION

Make sure to chop all the vegetables into uniform pieces (all the same size). In a large pot, add water and soy and bring to a boil; add vegetables and then spices. Do not add the coconut milk, lower heat. Let simmer on low heat for one hour. Turn off the stove, stir in the coconut milk and it’s ready to serve. Serving suggestion: This soup always tastes best the next day!

2 cups coconut milk with 1 cup freshly squeezed lemon or lime juice or add 1 cup coconut milk and 1 cup fresh juice 2 cups lentil with 2 cups brown basmati rice
