letter from the EDITOR
Hello
BEAUTIFUL & DAUNTLESS,
I know that this magazine reaches to the far corners of the world and I think that is absolutely amazing. Forgive me for focusing so much on American tradiations and season. If you haven’t guessed already, this issue is focused on another American tradition called Thanksgiving. This tradition dates back to almost the beginning of the colonization in the States. This was one small, but beautiful moment when the settlers and the Native Americans came together and shared their food with each other. Naturally, both sides were thankful for their new neighbors at that time. Hence, Thanksgiving was born. Thanksgiving is celebrated differently from household to household and you can read some of the traditions that have been shared within these pages. But the thing that is most important to remember, no matter where you live or what your life looks like right now, be thankful for what you have. It may not be much or it may be too much but live today with a thankful heart. Be blessed and Happy Thanksgiving, XOXO,

Can I be honest with you? When I was a little girl, I did not understand the point of being thankful. I remember some Thanksgivings when we would sit around the table, with our plates heaping over with mouthwatering food. But instead of eating, we would first take time sharing reasons of why we were thankful for things that happened that year. I used to hate that for a few reasons: when food is before me, I want to eat it! And I used to think that there was nothing in my life to be thankful for. I have come a long way since than. But to be honest, I used to hate my life. I thought that it was horrible and I saw no point in being thankful for anything in it. That is really a selfish way to think, and I see that now. But when I was younger all I saw was pain. Pain that was caused from circumstances in my early life.
15
Fast-forward to the present, my life has done a 180. I see reasons to be thankful for everything great and small. I still see the past and the pain that it carried but I can see that I had so much even in those dark years. I am thankful that I no longer live in them. I am thankful for a new take, a new perspective on life. I know there are many, many people out there that are thinking they have no reason to be thankful. I know how easy it is to think that. But I also know how that mindset will keep you trapped in the life of despair, pain, and torture that you are living in. As soon as you start to see that you do have reasons to be thankful, it is like a splash of color enters into your dark, gloomy life. I am not even joking! Believe me, I have been in your shoes. I know the skeptical thoughts going through your mind. I also know that you want out of that prison, even if you won’t admit it.
16
17
18
The only way you will know if I am telling the truth or not, is if you try it for yourself. Go ahead, think of one thing to be thankful for. If you can’t, than be thankful for the breath you just took. Your life is a gift, whether you are able to see it that way or not. People die constantly, but you are still alive and breathing. Be grateful for the gift that was given to you, the gift of life, that none of us deserve and all of us take for granted. Life is but a vapor, here today and gone tomorrow. You are not promised another second on this earth, and definitely not another day or another year. It is time for a perspective change because the one you are sporting does not do you any justice.
19
Be thankful for your life and as you are starting this new thing, called being thankful, start living a life that you can be thankful for. All you have is this moment, make with it what you will. Do not wait for life to happen to you. Go and make life happen. Years later, I can now say that I am thankful for my life. I am thankful for every single moment of it whether it was good or bad, happy or sad. I am so thankful for you. I am thankful that you are alive. I hope that you are able to say the same about yourself. By Karissa Hagemeister

Spaghetti Squash & Chicken Veggie If you are looking for something new and exciting to eat for dinner, maybe try this delicious fall meal. I love spaghetti but I cannot eat gluten because I have a food allergy to it. There are GF spaghetti noodles, and then there is spaghetti squash. This squash tastes like noodles but it is so much more healthy for you. Instead of regular spaghetti, try some different alternatives like this little number:
Ingredients 2 medium-small spaghetti squash [6-7 inches long] 2 chicken breasts 1/2 cup pesto, extra to taste 1-2 cups fresh baby spinach, torn/chopped 1 extra large carrot, shredded 1 medium red bell pepper pepper, chopped salt and pepper, to taste 8 oz shredded cheese 1-2 TBSP fresh parsley to garnish 26
Medley
27
Instructions Pre-heat oven to 400 degrees F. Slice your spaghetti squash in half lengthwise and scoop out the seeds. For easy cutting, feel free to stick each squash in the microwave for 5 minutes to soften it up just a tad. The knife slides through way easier this way! Next grab a lipped baking sheet or a rimmed baking dish. To prevent sticking, rub the cut side of the squash with a teeny bit of olive oil or simply place a little water inside your baking dish. Both work great! Place inside a baking dish or atop rimmed, lined baking sheet [some liquid will escape] and roast face-down for 30-40 minutes, or until tender and easily pierced with a fork. Cooking time will vary a bit depending on the size of your squash, and the once rock-hard exterior of the squash will be visibly softened. The squash can be roasted and stored in the fridge for a few days if you’d like to meal prep and plan ahead for a

speedier dinner. You can also make the whole shebang one weekend and pop it in the fridge until about 30 minutes before dinnertime. Wind up with a little bit leftover? It reheats marvelously the following day! Now let’s get back to the recipe! While the squash roast, cook chicken via your favorite method or squirrel away leftovers from the previous night’s dinner. I poached mine. Chop chicken into bite sized pieces and toss with pesto. Set aside. In a small pot, heat a drizzle of olive oil to medium-high heat and sauté your bell pepper and carrot for a few minutes until tender. Next add the spinach and pesto chicken and stir to wilt the spinach. Season with salt and pepper to taste. Next add your cheese to the hot mixture. Mix a little over half the cheese in with the chicken and veggies and save the rest for topping. To stuff the squash you can simply pile on your pesto chicken and veggies or fluff the squash first with a fork before stirring in all you yummy mix-ins so there’s yummy squash in every bite! Top with the rest of your grated cheese and cover the baking dish in foil, leaving a little room at the top [like a tent!] so the cheese doesn’t stick. Bake at 350 degrees F for around 20-30 minutes or until hot and bubbly. Garnish with fresh parsley and/or basil leaves and dig in! 29

One thing that I love about the fall season is cooking with my mom. Though I do not live at home with her anymore, I do visit occasionally and she always has something yummy for us to bake. My season favorite are Gluten Free Pumpkin Cookies with Cream Cheese Frosting. These little guys are absolutely delicious, especially hot out out of the oven.
PUMPKIN COOKIES 1 cup light brown sugar 1 cup sugar 1 cup coconut oil 1 15 oz. can pumpkin 2 eggs lightly beaten 1 tsp vanilla 3 1/2 cups gluten free all purpose flour blend 1 tsp baking soda 1 tsp baking powder 1/2 tsp salt 2 T pumpkin pie spice

mpkin & Cream eese Cookies
FROSTING 4 oz cream cheese, room temperature 1/2 cup powdered sugar 1/4 cup Greek yogurt Sprinkle Cinnamon 31
INSTRUCTIONS Preheat oven to 350° and line a baking sheet with parchment paper. In a medium bowl combine brown sugar, sugar, canola oil, pumpkin, eggs and vanilla until fully incorporated. In a separate bowl whisk together the flour, baking soda, baking powder, salt and pumpkin pie spice. Pour 1/3 of the dry mixture at a time into the wet ingredients making sure to fully combine before adding more. Use a small cookie scoop to place mounds of the dough onto the parchment paper. with the back of a spoon. (The shape they are going into the oven is pretty much the shape they will be when they are done) Bake for 11-13 minutes.
Remove from the oven and place on a cooling rack and let cool before glazing. To make the frosting, combine the cream cheese, powdered sugar and yogurt until smooth. Frost each cookie, sprinkle cinnamon on top and enjoy! 33

Over the past few months I have done something that is almost impossible for a clothes designer to do. I have decided to clean out my closets and my dressers and get rid of some of my clothing. I honestly have no idea how much clothing I had or still have. If I wore one outfit a day, I could have probably gotten through a few years without ever wearing the same thing twice. Yes, it was that bad! But it is not a hoarder thing. Unless you are a designer or a creative you will not understand. Everything that is made with fabric is a potential masterpiece waiting to happen. I repurpose clothing all the time because it is fun to me, allows me to be creative and looks better when I get done with it. I also make things from just plain yards of fabric. So to get rid of a potential fashion canvas is almost like cutting my heart out. I know it sounds dramatic but it is really painful. I finally came to the realization that even if I did want to create with some of these pieces of clothing, I would never have time to do it with all of them. I have gotten rid of about 5 bags now and still have a few more to go through. That brings us to the point of this article, maybe you need to do a little closet cleaning yourself. Or maybe you are on the opposite end of the spectrum and need to amp up your wardrobe. What do you do with the excess clothing or where do you get some amazing pieces at a fraction of the cost?
38
Secondhand buying and Selling This has become a fashionista’s kingdom. ThredUp So the first one that I stumbled on was ThredUp. This site blew me away at first. All you do is order a special shipping bag to be sent to you, you fill it up with your “like new” or “gently used” pieces” and then they do all the work. This is a perfect site for the girl on the go. Not much work on your part. The downside is, I had at least 50 things that I sent to ThredUp in my bag. They only used about 10 of them. My profit came to just under $2.00. NOT worth it. They take money for shipping, and posting your products on their site from what you send in. You get a very small percentage from what is sold because they are doing all the work. It is a really cool site but if I am wanting to make money from my clothing this is not the way to do it. As far as purchasing from them, I have not done that yet. I am sure it would be nice quality because they are picky with what they choose to put in their store.
Poshmark Just recently, I stumbled upon another secondhand platform that I have just fallen in love with. Poshmark allows you to post your pieces that you want to sell, and set your own price. They take a small percentage from what you sell. I’ve only just begun my journey with them. The day after I started, I had already sold a skirt and got $20 from it. Already a huge increase from what I made on ThredUp with 10 pieces of clothing. I actually made a purchase just a few days ago too. It is easy to find something you are looking for. You can suggest lower prices to the seller. There is a flat rate shipping of $6.95 that the buyer pays and it gets to them in 2 days. Absolutely amazing! I have just begun to tap the surface of this platform. There is so much potential here. If you are needing to buy or sell some clothes, jewelry, accessories ... check out the pros and cons that I mentioned and see which platform works for you. Poshmark has my vote. SKIN CARE THAT DOES MORE by Karissa Hagemeister

When I found good products that I really believe in, I love to share them. I was introduced to this amazing beauty product line not too long ago and I am amazed at the quality of this product. I am sure that you are just as annoyed as I am about these beauty commercials and advertisements that are promoting products that do not do what they say they are supposed to do. I have tried too many of those massacres that do not make your eyelashes longer or the nail polish that does not last even a week. Beauty Counter is different. I have a supplier in California that sent me samples of many of their products. I started off trying the facial cleanser, day cream, night cream, exfoliator and eye cream. Now honestly, I was not expecting much from it. Most face products do not leave much of an impression on me and that is why I do not really stick to one product or one brand. However, the first night that I tried these products I seen a change right away. Each of the products feels light and gentle on my face. Unless you have experienced that for yourself, it can be hard to understand because the normal products do not feel harsh on our face. Then after applying the night cream ... wow!! My face has not felt so fresh, soft and healthy. Why Beauty Counter works So what is different about Beauty Counter than other products? Well, I am glad you asked. Whether you are aware of it or not, the products that we have been placing on our skin are actually bad for our skin’s health and our body’s health. Beauty Counter chooses not to use these chemicals in their products because they understand the harmful effects that they have on us. Check out their mission ---> straight from their site. 42

ABOUT DAUNTLESS The second half of this magazine is now being taken over by guys, for guys. Since the creation of this magazine, January 2017, we have excelled at offering real life stories, advice and insight into daily matters. Our writers share what is on their heart in order to bring some life to your current situation. Up to this point, much of the material has been more “lady focused” but we hate to leave out our male counterparts, as they need special rays of light to impact their life as well. In May 2017, after receiving much feedback from males asking for more content geared towards them, our wheels started turning. We came up with the idea of having the dual magazine, but we need a name. After conducting a poll on social media, we were given some insight as to what a guy might prefer to be thought of as, and DAUNTLESS was the winner. Below are a few of the reasons as to why Dauntless is now the name of the second half of our e-mag. So, gentlemen, as you are reading, think of yourself in these terms:
“Dauntless means, ‘I am BOLD, COURAGEOUS, and GALLANT. Which trumps all other choices. IMHO.” - Larry “Dauntless for sure. Dauntless means, ‘Showing FEARLESSNESS and DETERMINATION.’ That is how I would like to be defined.” - Arman
