Hello and welcome to this the NEW BLOOD issue of Bed Sheets Magazine. Our search for the new movers and shakers that are leading the new wave of creativity coming out of the City of Angels started right here at Bed Supperclub with our very own DJs. They chase the bass by night and get creative in the corporate world by day utilising their skills in visual communication, advertising, digital media, illustration, and photography. As the country heals from the recent flood devastation, we wanted to give a nod to the kids who are spearheading the new wave of talent that will ensure that Thailand keeps its cool and stays ahead of the game. Plus, as always, we’ve also got the buzz on some of the essential events that Bed Supperclub has lined up for the Festive Season and beyond. So all that remains is for me to wish you a Merry Christmas and Happy New Year! Ta-ta for now‌ Bee PAUL - BEE - HAMPSHIRE Twitter : beefuton Facebook : goobee Email : bee@bedsupperclub.com 10

ONE NIGHT IN...

[ by Pa u l Bee Ha mp sh i re ]

..........................................................................................................................................

What should I know before I go?

One of Tokyo’s hippest underground parties; it’s still going strong after six years.

Who’s going to get me on the guestlist?

Tokyo’s most outrageous clubkid Leo dazzles the crowd and DJs there. Tap, the club’s creator is one of the sweetest people you’ll meet but his mental costumes often make it almost impossible to recognise him so good luck with that one!

What should I wear?

Anything goes. You could wear the most outrageous outfit in your wardrobe and you’ll still get lost in the crowd.

What time should I make my entrance?

The party starts at 10pm and there’s never a dull moment until it closes, so don’t worry about being too early but do pace yourself and be prepared to dance till dawn.

What’s the music?

It’s hard and heavy electro punctuated with weird and wonderful kitsch cuts, expect to be entertained by Tokyo’s most-happening DJs.

PORTRAITS FROM THE BANGKOK NIGHT

BY CHRIS COLES 8TH-18TH DECEMBER, 2011

EXPRESSIONIST EXHIBITION Who should I look out for?

The capital’s coolest club kids rub shoulders with hip artists, models, musicians and actors but there’s no snobbery. The crowd is there to be seen but also to get trashed and have a good time. It’s a stunning potpourri of people: Asian, Caucasian, gay, straight, young and old.

What time does it close?

Usually around 5am and most people stay until the bar closes and the beats stop.

fancyHIM parties are held every two months but do look out for special events www.fancyhim.com

BED HOPPING ..........................................................................................................................................

..........................................................................................................................................

PARK HYATT TOKYO Hermetically hip, a stylish oasis of space and tranquility proudly overlooking Tokyo and the Kanto Plain all the way to Mount Fuji.

Where is it?

The Park Hyatt is perched high in West Shinjuku on the 39th to 52nd floors of the magnificent granite-and-glass Shinjuku Park Tower, which was designed by the influential protagonist of the structuralist movement, Kenzo Tange.

Newcomers to Tokyo will also be amazed by the ultra high tech toilets. Walk-in closets, personal entertainment centres and a selection of books for both reference and pleasure are also excellent features. All 177 rooms are reminiscent of contemporary private residences with original artworks, exquisite fabrics and superb woods.

So tell us more about the rooms.

How’s the food?

The Zen art of indulgence, understated modern decor features subtle hues of green marble and granite, original pieces of art and rare Hokkaido water elm panelling. As you would expect, all rooms are equipped with state-of-the-art mod cons from high-speed wireless internet, two dedicated phone lines, data port and voicemail to sumptuous down feather duvets, luxuriously deep bath tubs and Aesop products in the bathroom.

30

There are five restaurants, two bars and a patisserie all overseen by an executive chef. As well as some of the most succulent steaks on the planet the New York Grill also has the largest selection of US wines in Japan. The Park Lounge serves up fabulous views and scrumptious afternoon teas.

Girandole is a chilled and dreamy spot for allday dining from hearty buffet breakfasts to French brassiere selections and Asian dishes. If you fancy authentic Japanese, head for Kozue and feast on the finest and freshest ingredients during each of the four seasons. The New York Bar is the perfect place to hang back after dinner and hear live jazz and take in the spectacular nighttime views.

Not suitable for: Those on a budget should check out the capital’s cheaper options such as business and capsule hotels.

So tell me again, why should I stay here?

If I want to book now where do I go ?

it’s easy to get seduced by the hotel’s halcyon atmosphere and spend hours in a calm cocoon mesmerised by the breathtaking views or lost in the hotel’s library, which is brimming with books on art, travel and culture.

No other hotel that we’ve stayed at could have Get great deals at agoda.com provided the perfect flickering-neon Tokyo backdrop for Sofia Coppola's "Lost in Translation" movie. But do be warned that despite the seductive shopping, extraordinary tourist attractions and tantalising treats Tokyo offers 24/7,

Where is it?

The Park Hyatt is perched high in West Shinjuku on the 39th to 52nd floors of the magnificent granite-and-glass Shinjuku Park Tower, which was designed by the influential protagonist of the structuralist movement, Kenzo Tange.

But do be warned that despite the seductive shopping, extraordinary tourist attractions and tantalising treats Tokyo offers 24/7,

..........................................................................................................................................

James Gilbody ( DeLorean ) What do you do at Bed Supperclub? Most of the time you’ll find me with a camera fixed firmly in my hand. Occasionally you’ll spot me behind the decks. When are you the happiest with your work? Making a living by being creative, I consider myself very lucky to be one of the chosen few who enjoys their work. What’s the most creative thing that you’ve ever done? Being able to fund my early years without a real 9 – 5 job! I was making websites when I was 15 and putting D&B parties on when I was 16! What genre of music do you listen to most? At the moment I’m loving the Future Garage movement coming out of the UK. It’s going to explode next year so keep your eyes peeled for that one! Be honest, are you a pirate? My buccaneering days are over! Argh.

JAMES 32

What magazine do you read most often? I’m more of a blog fiend; Highsnobiety is up there as my most checked; lots of eye candy, shoes and clothes to add to the wish list. I can highly recommend Xlr8r for a musical fix. What’s your weakness? Cheese.

Pick the one person who’s had the biggest influence on the person you think you are. Picking one person is difficult although I’ve only just passed two decades. There have been a lot of people while growing up who’ve inspired me but right now it would be my girlfriend for being incredibly supportive in everything I want to do and helping me keep my head out of the clouds… most of the time. What annoys you the most? Backpackers on the road to enlightenment and a motorcycle crash. What brand do you head for first in a clothing store? Shoe shop? Has to be Nike. For everything else, I love checking out independent clothing companies. A very close friend of mine runs a company and to see the amount of hard work that goes into it you can only admire those you try. What would you like to stop doing? My girlfriend would probably say moaning, but I think it’s about time to stop hammering the nail in the coffin and quit smoking. If we were to give you one Belgian chocolate now or two in an hour, which would you go for? Ask if you had any Reeses Buttercups. Draw the next thing that comes to mind … I passed art at school by burning flags. I’d be happy to try recreating that with the magazine. 33

Adrift. On ceding Siamese territories to the east of the Mekhong to the French, His Majesty King Rama V ensured he would remain forever in the annals of Thai folklore. More than for advancing – and uniting – the country through key infrastructure reforms, he is remembered, and fondly so, for the act of sacrificing a 'limb' to save the 'body'. Over the last hundred years, though, the continuation of the nation’s modernisation, in the shape of industrial zones, housing estates and entertainment complexes has been so unchecked that it has transformed the Thai central basin into a concrete jungle with little of the natural irrigation once provided by canals, forests and fields. And now, as the contents of hundreds of thousands of suburban addresses of Thailand’s lower and middle classes float abandoned in stagnant waters, in the wake of northern run-off that’s been trapped by the city’s ‘big bag’ wall, the nation is again making a sacrifice. This time, however, the flood is proof that unifying nationalistic rhetoric is not exactly watertight. The convenient truth, for Bangkok, is that the city must be saved to save the country. The real truth is though that the ‘body’ has become severed from the ‘head’. The two are on separate courses: from the capital the country has truly come adrift. Still image from the forthcoming short film from The Human Eye Corporation. INTERVIEW ..........................................................................................................................................

BRIAN WOULFE Suave, youthful and fuelled by his passion for the seamless delivery of bespoke interior design solutions and luxury living environments, Phuket-based Brian Woulfe is becoming the first port of call for a diverse range of clients from all over the globe, that yearn for his distinctive and committed approach to design.

What made you decide to settle in Thailand I was lucky enough to visit Phuket for a birthday celebration nearly two years ago. I’m not really a sit-by-the-pool-and-work-on-my-tan kind of guy so I found myself venturing out to have a look at the Island. I stumbled on a development called Malaiwana. Its design, location and quality of build blew me away. After speaking to a few people, both developers and agents, it became clear that there was a market here for high-end bespoke interior design services. I left Thailand with a fire burning in my mind and a couple of months later I found myself back here, living and working. I haven’t looked back since; it’s been one of the most exciting years of my career so far. Who’s your design icon? Well, it’s hard to choose only one. There are many and I have many thoughts about their work. Christian Liaigre is one designer that has found his own place in design. That is a great achievement for anyone creative. Some see him as an interior designer whilst others identify him with furniture. Whichever the case may be he is certainly the most copied designer of our time. I’ve only recently started to study the different layers of his work. Liaigre’s spaces draw inspiration from the rugged textures of the French Atlantic coast where he grew up. He always seems to make a deep connection with the tradition of each of the locations he works on, which is something I always try to do with the projects I am working on. His books make for great coffee table pieces and are a must for anyone interested in design. Where do you draw your inspiration from? I get inspired by many things. The people around me, my friends and my family are all huge inspirations. I love spending time in cities, museums and in the countryside. I find myself looking at, and drawing inspiration from the interiors and architecture of the hotels, restaurants and bars that I visit. It’s great to see how a designer has brought their design together and it's even more fun

42

to consider what I’d do differently. I also love fashion and I draw constant inspiration from it which I translate into my interiors. Be it color combinations, shapes, stitch details or even a pattern. Fashion most definitely influences decor; it always has. Colour combinations, motifs, themes translate easily from fashion to home decor. We often use fashion-scapes to establish moods/feelings. It’s a great way to explain a concept to a client. Much easier for them to understand sometimes. What brings the biggest challenge and the biggest reward in your work? Gosh, that’s a hard one! I mean, I face challenges every day in my work but I never see them as something “big” or impossible to overcome. Simple things like sourcing something at short notice, or working on a particularly difficult floor plan to get the most out of the space are all parts of my everyday life. One of the challenges that I face the most here is keeping an eye on the finished detail. It can be a time-consuming task and infuriating at times but it’s a very important part of design. I always say the devil is in the detail! The biggest challenges always bring the biggest rewards. What are you working on at the moment? My work at the moment is mainly focussed on private residential homes. It’s exciting because I get to work with some great properties. One of my clients purchased a Club Penthouse at the Kata Rocks development in Phuket. It’s a great project to be working on as it won Best Apartment in the World 2010. I’m also working on a couple of villas at Malaiwana Estate. It feels right to be working on them given they were so influential in my decision to move to Thailand. Consulting takes up a proportion of my time and I’m working with developers to choose finishes etc for their project. At the moment I am working with clients based in Hong Kong, Germany, Switzerland, UK and Thailand. It’s great! Every day I wake up and I have something new to do… I could never say my job is boring! 43

SNIFF THIS ..........................................................................................................................................

We can observe the shen in ourselves and others through the sparkle or dullness of the eye and the glow, or lack of it, in the complexion of the face. In times of anxiety and loss people often become pale, even grey-faced. Some people are almost constitutionally monochrome and joyless. The other extreme is manic overexcitement where joy spins out of control. The shen’s presence creates vitality; when it is absent or clouded there is a lack of connection and eye contact. The far ends of these spectrums require medical treatment but the day-to-day imbalances may be helped with aromatherapy. Looking back over the blends I have created here I have often included an essence to support the shen. Oils don’t have to be blended. Just one on a pillowcase or in the burner can be enough. So here are the ones most healing for the spirit:

neroli

SHEN / Heart Spirit Aromatherapy falls under the sphere of ‘holistic’ therapies, those that aim to treat the whole individual rather than just particular symptoms or organ systems. This is often seen to encapsulate the mind, body and spirit. In traditional Chinese medicine (TCM) the mind/spirit is called the shen and is housed in the heart (or the Heart’s blood). When the shen is disturbed there may be problems like anxiety, mania or lack of mental clarity. When the shen is ‘not housed’ due to weak blood there may be insomnia or vivid dreams. On an elemental level, the shen is associated with summer and fire-think roses and mid-summer madness.

palmarosa

ylang ylang

Lavender, melissa and neroli calm and cool an agitated shen Rose and palmarosa and geranium nourish and soften a brittle shen Jasmine and ylang ylang relax and uplift a cold withdrawn shen Rosemary… is for memory. Can you smell the feeling? Do you need some support for your spirit? Think about buying a natural day or night cream including one of these, or just an individual oil to sniff on your wrist when things get tricky. Do make sure it’s the real thing though…

A NEW YEAR'S ANTIDOTE FOR THE HOLIDAY HEAVIES NIGELLA LAWSON

Fiddle if you like, replacing the crab with shrimp, the coriander with fresh mint – play as you see fit. But any way you make it, this is light food that’s heavy on pleasure and reward. BAKED RICOTTA Time: 40 minutes 18 ounces (2 1/4 cups) ricotta cheese 2 large egg whites, lightly beaten 1/4 teaspoon dried oregano Finely grated zest of 1 lemon Salt and freshly ground black pepper Vegetable oil for greasing pan 1. Heat oven to 350 degrees. In a mixing bowl, combine ricotta, egg whites, oregano and lemon zest. Season to taste with salt and pepper. Lightly oil an 8-inch springform baking pan. Pour in ricotta mixture, and smooth surface. 2. Bake until ricotta is dry on top but not browned, about 30 minutes; it will have risen slightly but will remain a thin disk. Allow to cool slightly, and release from pan. Cut into wedges, and serve warm with a plate of roasted tomatoes. Yield: 4 to 6 servings.

These recipes comply with any particular diet sheet, but all give the eater something more than frugal sustenance: a ricotta tart, light and crustless, and bound with the whites of egg and served with some roasted cherry tomatoes, and a highly spiced, aromatic and crunchy salad of cabbage and crab that you can pick at for hours without feeling guiltily The romance was short-lived, and I’m not go- self-indulgent. ing to bombard you now with descriptions The ricotta tart is an unusual concoction but of meagre dishes, but it’s impossible at this the perfect thing to cheer a palate otherwise time of year to resist seasonal pressure to be bored with grilled meats and fish and sparse portions of bland chicken. I love it for a light a little restrained about food intake. Most weight-loss regimens work because supper or for lunch, and it works well as a they exclude certain foods, but unfortunate- starter if you want to have people over withly most people fall off the dietary wagon be- out blowing all the New Year’s resolutions. About 100 years ago, when I had a brief affair with low-fat food, I started to sneer at real cooking. Anyone, I thought, could make food taste good without any dietary concerns getting in the way at the stove. The real challenge was to produce food that you actually wanted to eat when you were painting, as it were, with a restricted palette.

cause of the tedium of eating food with little variety. The trick of eating less lies in making the food you do eat both good and varied. A meal must always be a reward. 48

The cabbage salad is really a version of a Vietnamese chicken salad that I love to keep in the refrigerator to pick at when the alternative might be a much less wholesome toasted bagel or piece of toast. 49

What’s your favourite noise? Almost every kind of music. I love dancing so much! What’s your least favourite noise? My dog's crying to get my attention when I'm sleeping in the morning or at night. What would you change if we gave you the chance to change anything? Normally I would answer this question by saying, "There's nothing I want to change in my life, because everything that’s happened has made me become the person I am today, and I'm pretty happy with myself.....But there's a devilish voice in my mind saying ‘Bitch! Just tell them the truth that you wanted to change the numbers of your lotto ticket and win the big prize so you would be so frigging rich that you could have thousands of dogs’. Oh yes, I love dogs that much. If you could dine at Bed with two celebrities who would they be? Oprah Winfrey and Sandra Bullock. I love everything about Oprah. Not only is she successful in every aspect of her life but she's also very kind and generous. I like altruistic people who give to others in need. Sandra Bullock is another idol of mine; she’s smart, talented, funny, and also very generous. She always seems to be one of the first stars to step up and donate to disaster relief campaigns. If you could only eat one food for the rest of your life what would it be? Thai fish chill paste. A lot of foreigners think it smells really gross but that’s just like the French eating smelly cheeses. It’s also very nutritional, crammed with calcium and vitamins. Although there is a price to pay. My boyfriend won’t kiss me for days after! We heard you were very active during Thailand’s recent floods. Yes, initially I went out to help rescue dogs that had been abandoned by their owners when they evacuated for higher ground but it soon became apparent that many people were still stranded and suffering. Elderly people were actually out wading in waist-high water begging for food and medicine so I ended up going to very remote areas in my boat and taking food and medicine and doing whatever I could to help. We left early in the morning and most days didn’t get home till around midnight. It was quite perilous at times; at one point I was out in the water and a cobra swam passed me. One of my team was less lucky; she had to spend a week in hospital after being stung by a giant centipede. www.bedsupperclub.com/vip www.bedsupperclub.com/vip 52

LOOKIN' GOOD FEELIN' GREAT

[ BY PAUL HAMPS HIRE ]

..........................................................................................................................................

Question – Do you want to look slimmer and live longer? We’re guessing that your answer’s yes, so you should ensure that your cholesterol level isn’t too high. Cholesterol is a waxy substance that occurs naturally in all parts of the body. We all need a small amount to produce hormones, vitamin D, and acids that help us digest fat. However, too much can lead to atherosclerosis (also known as arteriosclerotic vascular disease or ASVD), a condition in which fat and cholesterol are deposited in the walls of the arteries in many parts of the body. Lowering your cholesterol naturally is simple, so don’t opt for the easy route of taking drugs that lower it as they often come with crappy side effects such as memory loss, irritability, tiredness, liver inflammation and long term use can even lead to congestive heart failure. Do it naturally and you’ll enjoy added health benefits. Diet plays a crucial role in lowering your cholesterol. Here are five foods that can lower your cholesterol.

Go fish Eating fatty fish can be heart-healthy because of its high levels of omega-3 fatty acids, which can reduce your blood pressure and risk of developing blood clots. The highest levels of omega-3 fatty acids include: Salmon Mackerel Herring Sardines *Note - steam, bake or grill the fish to avoid adding unhealthy fats. Go nuts! Almonds and walnuts are the healthiest option. Eating a handful of nuts a day may reduce your risk of heart disease but do make sure they aren't salted or coated with sugar. Foods with added plant sterols or stanols Foods are now available that have been fortified with sterols or stanols - substances found in plants that help block the absorption of cholesterol. Margarine, orange juice and yogurt drinks with added plant sterols can help reduce LDL cholesterol by more than 10 percent. The amount of daily plant sterols needed for results is at least 2 grams - which equals about two 8-ounce (237-millilitre) servings of plant sterolfortified orange juice a day.

Saturated fat sucks! Experts used to pin the blame on cholesterolrich foods and eggs, however they now know that dietary cholesterol isn't the main culprit. It’s now believed that saturated fat causes increases in cholesterol so cut it out of your diet. That means no more animal fats such as cream, cheese, butter, and ghee. You veggies aren’t off the hook either. You need to watch out for plant-based sources of saturated fat, principally coconut oil and coconut milk, palm kernel oil, cocoa butter and palm oil.

Have you had your oats today? Oatmeal contains soluble fibre, which reduces your low-density lipoprotein (LDL), the ‘bad’ cholesterol. Fibre products that contain psyllium are especially good so try to include some in your diet. Soluble fibre is also found in such foods as pears, apples, barley, kidney beans and prunes. 54

Finally, lose the fags and cut down on caffeine and alcohol as they also lower the level of our HDL good cholesterol, which helps us remove the bad cholesterol from our arteries. 55

D.RAMIREZ THURSDAY 22ND DECEMBER

He's achieved five top 20 hits, played on every continent and single handedly coined THAT electrohouse sound. Whether he's hidden behind devilish disguises such as The Lisa Marie Experience, Cordial, Finger Fest and Rambo, or performing as the man you know best as D Ramirez, Dean Marriott has achieved more than an entire legion of lesser DJs. His remix of Bodyrox 'Yeah Yeah' scored him an Ivor Novello nomination, his recent collaborations with Underworld and Mark Knight and past exploits such as 'Keep Us Together', 'Colombian Soul' and 'La Discotek' have all achieved coveted Coolcuts and Buzz chart hotspots. Back to the future, and we reach a new chapter in his story. Tired of the over-peddled electrohouse sound, Dean's moved on to pastures new. Inspired by the noises of his tough-talking DJ sets, Dean's sound has been rejuvenated of late by deep house and techno. Knowing the success he's had at every other stage, you can only imagine what awaits him in the near future and what awaits Bangkok when he lets rip at Bed Supperclub!

ALL ABOUT BED

I heard that you changed your menu – is this true? It is. For the past nine years, Sun-Thurs, we offered a three-course set menu. As of Feb, 2011, we offer a menu that is no longer restricted by a set, but is much more flexible (a la carte) to give our guests greater freedom when ordering. We also offer half -size food portions and the kitchen is open longer.

Frequently Asked Questions by Bed GM, Justin Dunne

..........................................................................................................................................

How do you describe the food at Bed? Modern eclectic cuisine. I would like to buy some Bed merchandise, Do you have anything I can buy? We do. Tons. We sell several T-shirts, CDs, books, umbrellas, Champagne flutes, shot glasses, and more. Please ask any staff to assist. If I wanted more information on what’s going on at Bed, what would you suggest? I didn’t know that you guys had a restaurant. I thought that you were only a club. Yup, nine years later, this is still the biggest misconception that we have. Since the beginning (2002) we have always had the restaurant, but it often and unfortunately, stands in the shadow of the clubbing aspect. We are currently offering more special dinners (wine dinners, tequila weekend dinners, etc), in an on-going effort to push the visibility of the restaurant.

Why are your wines so damn expensive? Yes, this is very unfortunate. Due to the 400% tax on both foreign and local wines (geared in part to protect the consumption of local Thai beverages), our prices are forced to reflect this tragedy.

How’s business? Good. Very good. We’ve been very blessed. Frustrating indeed. We always make sure that the concierges around town have the Bed Supperclub map. 92

Why do I need an ID? Why are you so strict? From the Foreign and Commonwealth website here in Thailand: By law, you must carry your passport with you at all times in Thailand. Tourists have been arrested because they were unable to produce their passport. Although this is rare, because we are a very high profile venue, the local authorities do keep a very close eye on us. Thus, we ask all guests to carry an official, government issued ID – a good copy of your passport is fine. How do I receive a Bed World card? Our Bed World card is given to guests strictly through word of mouth to those who have shown incredible loyalty over the years.
