Surrounded by crystal clear waters, one would think that our traditional cuisine would be fish-based. Surprisingly, Maltese cuisine mostly centres around seasonal vegetables and meat. Chef and food stylist Claire Borg shares her thoughts.

W
e do have popular fish dishes that appear on most menus...like octopus, served stewed or as part of a salad, Lampuki when in season, a lot of pasta with seafood, fresh tuna steaks, and our very famous Aljotta – our traditional fish soup. But the more authentic traditional fish dishes are made in our homes. Every family has its own recipe or version of the Maltese Aljotta. The key ingredients to making this superb dish are mint, marjoram and basil, onions, garlic and tomatoes and fish of course, stewed over a low flame and served with rice. As a matter of fact, most Maltese dishes are very simply cooked. Fried Vopi (blue runner bogue); Lampuki (dolphin fish) with a tomato and caper
sauce, or made into a pie; slow-cooked octopus stew served with spaghetti; stuffed calamari; sweet potato and salted tuna stew; Trill Moqli (fried red mullet); Pulpetti tal-Voparella (baby bogue patties) These would be the kind of fish dishes traditionally prepared by our grandmothers. Fish is becoming more popular, not only because it is a healthy options of food, but because more people are now appreciating what a wonderful ingredient it is. We are lucky to be able to buy fish that is so fresh that, at times, is still moving when it arrives at our homes. I have been frightened several times by the flipping of fish on my kitchen counter. Eels, monkfish, stargazers, lobsters and scorpion fish for instance are well known to stay alive for a long time out of the water.

I remember eating sea urchins on the rocks by our summer house in Qbajjar (Gozo) that had been just caught and cracked open, searching for Imħar (limpets) to eat raw, catching baby shrimp from ponds to use as fishing tackle, and hunting for camouflaged octopi by the rocky shores. My summer childhood memories are made of moments like these. I cannot recall ever eating frozen locally-caught fish. It is not even an option in my family. You eat fish when it's available; you’ve fished for it yourself, or know of a fisherman’s whereabouts, and get hold of prime catches. Like a trustworthy butcher, you would have a trustworthy fish supplier here in Malta. Some of my relations lived in Tunisia for many years in the past, and a few of our family recipes have, of course, been influenced by north Arabic flavours. Scents of cumin and saffron, green peppers, chickpeas, couscous and chillies are predominant in our fish soups. But I have to say, this is also an exception – normally we do not venture very far beyond our comfort zones of grilling and stewing when it comes to preparing and cooking fish. Over the years we have become increasingly influenced by our neighbouring countries and their cuisines, and this has been translated into a wave of modern seafood cuisine that's widely available in our restaurants. Dishes such as flambéed king prawns, tuna carpaccio, gratinated scallops, deep-fried baby fish and shrimp, pasta with sea urchins and whole fish cooked ‘al sale’ (with a sea salt crust) are just a few of the new dishes that have been introduced into our menus. We learnt, that by using our own fantastic basic ingredients, and Mediterranean produce like olive oil, lemons, pistachios, tomatoes, fresh herbs, we could make fish dishes more appealing and more varied.

or those who don’t follow the scene, Kris is a smart young man who has chosen to describe himself as creative, adventurous and ambitious for the sake of this interview. If I had to add another three adjectives to that, I’d probably go with talented, dedicated and charming, simply because he really is. Of course, talent always plays its part and despite being a self-taught photographer, Kris’s work is definitely a cut above the rest. How long have you been taking photos for? I curiously enquire. “It is difficult to establish the
day one becomes a photographer,” he muses. “It’s a long learning process – as time goes by we learn new things, our tastes mature and we become more aware of the different dimensions around us and the different experiences that inspire us.” Kris recalls how it took several years of experimenting until he started to see progress in his work. “I feel that last five years have been some of the most exciting of my career, and also my life. I have been commissioned by various magazines and designers on the local and international scene, and have exhibited in various countries, including Holland (Maastricht),

France (Saint-Tropez), Spain (Barcelona & Marbella), Ukraine (Kiev), Belgium (Brussels), Gibraltar and Palestine (Jerusalem). Nonetheless, I still feel that the years ahead of me have a lot to teach me as a photographer.” REGNVM is a contemporary collection of photographs that bring together Adonis-like human forms and a killer use of light; despite being entirely shot underwater. Each of the striking images depicts elegance and grace, leading through to more powerful and eerie scenes that reach out to the unsuspecting
viewer. Their ambiguity is probably what drew my attention towards them first time round. So, what is REGNVM all about? I eagerly enquire. “Well, this is my first solo exhibition in Malta,” he calmly explains. “It’s a collection of photographs I’ve created portraying an imaginary kingdom and the beings that inhabit this submerged world.” Kris relates how the entire REGNVM collection was photographed over the span of two summers. “Of course, choosing the sea as my studio was not the most practical of ideas in

retrospect,” he chuckles. “The sea has always played an important part in my life; it inspires me, it motivates me and it soothes my mind, there is no way that I could have ever created my underwater kingdom in a pool!” Despite its majestic beauty, the sea is also unpredictable and Kris recalls several shoots that needed to be rescheduled due to wind and visibility conditions. “Water clarity, of course, played another important role. REGNVM was shot in various bays around the Maltese Islands, however we found Blue Lagoon in Comino the easiest to work with.” Apart from public exhibitions, Kris has also produced 250 copies of a limited edition book that carries the same title. Backed by a creative story crafted by Stanley Borg, the printed edition promises to extend the fantasy of his latest enchanting creation in a more tangible fashion. So what’s the real story behind this exhibition? I quiz. “It’s an adaptation of my everyday observations and experiences, transformed into underwater dwellers,” he casually replies. What else? I pry. “Well, to be quite honest, every photograph represents someone in my life. Through this exhibition I wanted to capture their essence, and immortalise it in the image of a fantasy character. The protagonists of REGNVM are, in fac,t at the centre of my own kingdom. They represent past experiences, intense emotions and lifelong friendships.” Any chance of knowing a little bit more? I question. “Not a chance,” he grins.

Oh So Blue! The Blue Grotto, previously known as ‘Il-Ħnejja’ (The Arch), is a picturesque seaside cave only accessible by boat in the quaint village of Żurrieq. Ricky Vella spells out the details.
T
he English name was given by a British soldier who thought it looked similar to the Grotta Azzyzza in Capri, Naples. The Blue Grotto is certainly a very popular tourist attraction and, once visited, it is clear to see why. It is situated near Żurrieq in the south-west of Malta and is an area famous for its natural sea caves and rocky shores. One may come across blue grottos all around the Mediterranean but, without being biased, this is truly the real thing… it certainly is a natural work of art and any other grotto compared to ours is arguably a poor replication. All boats that actually go to the Blue Grotto do so by going under an immense arch into a 140ft high cave which is cut into the rock face. There are six caves in all, and these have all been shaped and carved by the insistent pounding of the moody Mediterranean waters. You can’t help but notice that, as you enter

the caves, silence surrounds you and you can thoroughly enjoy the kaleidoscope of colours undisturbed. This Grotto is the largest and most striking, and the surrounding waters are an unbelievable sapphire colour, which is further accentuated by the reflection of the sandy white sea-bed. Added to this spectacular show, the caves twinkle and sparkle with reflections of the sea – the colours green, purple and orange from various coral and minerals light up and reflect back at you from the waters – it’s magical… During the warm summer months it gets amazingly busy at certain times of the day, so plan your visit carefully. The caves are at their best early in the morning before swimmers or divers arrive disturbing the waters. The caves face the rising sun, so if your visit is before the sun gets too high, then you will see them absolutely light up with colour.
No wonder it is a magnet for all tourists wanting to see something special whilst on vacation. Prior to the arrival of the British Serviceman, returning from Capri with the new name – the Blue Grotto was known as Il-Ħnejja [Hney-yah] – and it is certainly a must on your ‘to do’ list. Although it will take you a little longer to get to Żurrieq, it is well worth the effort, believe me. If you are mobile, just make sure you are prepared with a map and, quite honestly, anywhere in Malta is accessible! On the other hand, our public transport is fantastic and there is a bus that will take you straight there; don’t be afraid to ask – people are friendly and they will always point you in the right direction. Enjoy… you will not regret it – armed with a camera you will create unforgettable memories to take back home with you…

Outoor Clubbing: Gianpula Complex Gianpula Complex is Malta’s foremost open-air entertainment address during the summer months. The Gianpula Complex is a nightlife village with several venues suited for different events and ages. Bad breath, medically known as halitosis, may result from poor dental habits or a sign of other health problems.
Food may also be a cause of bad breath. As foods are digested and absorbed into the bloodstream, they are eventually carried to your lungs and released through your breath. In fact the odor will not completely go away until the foods have passed through your body.

1. Food particles under dentures. 2. Smoking or chewing tobaccobased products. 3. Persistent bad breath or a bad taste in the mouth may be caused by gum (periodontal) disease. This happens when the harmful bacteria in the mouth overcome good bacteria normally present. 4. Poorly fitting fixed or removable dental prostheses having spaces and food traps 5. Dental caries (cavities). harbouring food and bacteria. 6. Stained hairy tongue normally due to lack of brushing or due to consumption of tobaccocontaining products. 7. Calculus. 8. Dry mouth may also cause bad breath. This may be a side effect of various medications used to normalise blood pressure. Salivary gland problems may also be a cause, as well as continuous breathing through the mouth. 9. Other diseases/illnesses: respiratory tract infections such as pneumonia or bronchitis, chronic sinus infections, postnasal drip, diabetes, chronic acid reflux, and liver or kidney problems.
1. Good oral hygiene. Brush teeth twice daily with fluoride toothpaste after each meal. Tongue brushing using a tongue scraper. Replace toothbrush every 2 to 3 months or after an illness. Inter dental tooth aids may also help you reach those tight areas normally unreachable with a conventional tooth-brush. 2. Flossing with regular floss or super-floss. 3. Denture cleaning and disinfection using denture brushes and denture cleaning tablets. 4. Regular dental visits – twice yearly. 5. Stop smoking and chewing tobacco-based products. Ask your dentist for advice on how to quit. There is help out there! 6. Mouthwashes may help you reduce or eliminate bad breath. This tends to mask the smell but may not necessarily eliminate the cause of the bad breath. 7. Hydration: Drink lots of water keeping your mouth moist. Chewing gum (preferably sugarless) or sucking on candy (preferably sugarless) also stimulates the production of saliva, which helps wash away food particles and bacteria.

In most cases, your dentist can treat the cause of bad breath. If your dentist determines that your mouth is healthy and the odour is not of oral origin, you may be referred to your family doctor or to a specialist such as a gastro-enterologist to determine the odor source and treatment plan. Dropping by Hamburg on a business trip? Here’s what to do when you get some time off.
H
amburg is the largest German city after Berlin, and eight largest in Europe. Lying at the head of the River Elbe, its location has proved a strategic link between Germany and the sea, marking it on the international map as a major harbour and transport hub. Over the years, Hamburg has become one of the most important commercial and cultural centres in Europe, and is also proving to be an increasingly touristic destination.

Miniatur Wunderland – the model world According to its website, this model railway is actually the largest in the world, and undoubtedly one of the most visited attractions in Northern Germany. Miniatur Wonderland boasts of more than 12,000m of track and a staggering 890 trains laid out over 1,150 sqm. The exhibition includes various areas dedicated to the USA, Scandinavia and Germany, as well as an airport with planes that actually take off. The entire model world is illuminated by over 300,000 lights and inhabited by some 200,000 tiny (and unique) human figures.
Planten un Blomen – the park The ‘Plants and Flowers’ park constantly ranks as a favourite by locals and travellers alike. In the summer one can enjoy a light, water and music show, whereas, in winter, the park unveils an ice skating rink. The park is often frequented by families looking to spend some quality time with their loved ones, or by anyone wanting to take some time off the buzzing city.
Hamburger Hafen – the port The Port of Hamburg, the Hamburger Hafen, is home to a number of the city’s most prominent attractions. The 100 sqkm tidal harbour, often dubbed ‘the gateway to Germany’, is exciting to explore both by boat (there are numerous boat tours that depart from Landungsbrücken), as well as on foot (look out for the charming pedestrian route that will take you right into the 19th century Warehouse District). Another landmark is the 3.9km bridge that spans across the port harbour.

Alter Elbtunnel – the tunnel Take a trip along the Alter Elbtunnel, a pedestrian, bike and motorist tunnel that sits underneath the River Elbe, connecting the south side of the river to central Hamburg. If you happen to be walking, take time to admire the various artworks that line the tiled walls. Travellers enjoy the experience of walking beneath the river and enjoying the spectacular views from the opposite side of the bank. Elbe tunnel is open 24 hours a day for pedestrians and bikers.
Tiepark Hagenbeck – the zoo 04
Enjoy a morning at Hamburg’s zoo, named after zoo founding and owning family, the Hagenbecks. Make sure to visit the Troparium that includes artificial habitats such as a rain forest, a desert and a sea, with the different animals that inhabit these terrains in each. The zoo also offers several restaurant facilities, playgrounds for kids, a recreation park and a dolphin show, amongst others.

Above the rising banks of the Elbe you’ll come across Hamburg’s vibrant Altona district, with its protected neoclassical architecture and historical monuments. Look out for Museumstrasse, home to the Altona Museum, which exhibits include geology, landscape, settlement and economy. This is definitely most breathtaking view of the sun's powerful orange rays rising through scattered peaks of mountains I have ever seen. I think to myself, this is absolutely amazing. I'm standing on the peak of Borneo's highest mountain, Mount Kinabalu, 4095 metres above sea level.
W
e've all heard of the beautiful beaches of the Philippines, the lush rice paddies and peaceful temples of Bali and the exotic jungle of Thailand, but for some reason Borneo seems to be untrodden territory to many travellers. My partner and I spent five months travelling through South East Asia and I can honestly say that when it comes to real adventure and abundant wildlife, Borneo's Sabah region is one of the most exciting of them all.
Borneo is actually the third largest island in the world and is divided between three countries: Indonesia, Brunei and Malaysia. Sabah - which is in the Malaysian part - is home to one of the world's oldest rainforests, estimated to be around 140 million years old. It is not surprising then that this place is a haven for wildlife enthusiasts. The most popular destination to view wildlife at is best has to be the Kinabatangan River. Exotic hornbills flying past, ugly,
but fascinating, proboscis monkeys swinging between trees and crocodiles lying low on the river banks are just a few of the amazing shows you might witness. If you are lucky enough, you might even come across a herd of Bornean pygmy elephants crossing the river. Unfortunately though, the effects of industrialisation can be felt sharply in this area as you will notice that some of the rainforest surrounding certain areas of the river has been cut down for logging and palm oil purposes, a problem being felt in many SE Asian countries. However some measures are being taken to preserve areas of the rainforest and its wild inhabitants. The Sun Bear sanctuary and the Orangutan sanctuary, where visitors can come up close with these endangered species, both aim to protect their decreasing numbers in the wild.

The conservation area of Danum Valley is also a protected section of rainforest that is home to an incredible amount of flora and fauna, including deer, wild boars, gibbons, tarsiers, the endangered clouded leopard, and even the elusive Sumatran rhino, as well as a number of natural waterfalls visitors can trek to and have a refreshing swim under in the most natural of environments possible.
There isn't much to do in the capital city, Kota Kinabalu, except for the massive daily fish and meat market where you will be spoilt for choice with local delicacies. Just north of this city, the Tanku Abdul Rahman Marine Park has some nice islands, and, if you go at the right time of the year, you could even experience the unique opportunity of scuba diving with the magnificent whale sharks in the area. In fact, Sabah is world renowned for scuba diving thanks to Sipadan, an island off the east coast where divers can emerge into a fascinating underwater experience where massive shoals of barracuda, peaceful turtles, beautiful colourful coral and various species of

shark live freely. If you aren't into diving but would still like a sneak peak at some beautiful marine life, you can go snorkelling or visit Turtle Island, where you can see turtles crawling up the beaches at night to lay their eggs, and perhaps even witness the eggs hatching and returning to the sea. The land and marine wildlife is not the only perk Sabah has to offer its visitors. Adrenalin junkies are drawn to white water rafting down one of the state’s wild rivers in the western region, ziplining from one island to another in the Tunku Abdul Rahman Park, mountain biking through rural areas outside Kota Kinabalu, or even climbing up the highest peak in Borneo. The climb up to Low's Peak is a day-and-a-half 's journey that can be done by professional hikers and 04
amateurs alike. Starting at 1,000 metres above sea level, hikers will pass through various levels of terrain from lowland rainforest, to montane forest, to cloud forest up to subalpine meadow where base camp sits. Hikers can enjoy a couple of hours of well-deserved rest before resuming the climb over granite rock to the peak in time for sunrise. The climb is steep and slippery at times and so can be a physical and emotional challenge for some, but the breathtaking scenery and views are well worth it. Whatever thrill you seek, whether it’s watching rare creatures in their natural habitat, trekking through untamed forests, diving into the beauty of the underworld or challenging yourself to push beyond your limits up mountains, Sabah definitely has something to offer everyone.

June: Malta's Happy Month Enrico Sammut recalls the flavours that accompanied his childhood as he discusses traditional Maltese cuisine.
A
s a child, thinking of June always conjured up warm feelings and special expectations. End of the school year and back home for the holidays; beginning of the festa season; picnics by the sea and evening BBQs dusting down and putting up the hasiras - bamboo curtains – and hanging them across balcony doors and over garden
patios. In days gone by, the Corpus Christi procession would wind slowly through the streets led by children wearing their Holy Communion outfits with every proud housewife putting her best plants out onto the pavement. June means running barefoot along the patterned tiles and the cool flagstones of the house and garden. 02
We still enjoy long lazy garden lunches below trellises of vines and with the best fruit and vegetables that Malta’s farmers have to offer. Aubergines to make brungiel mimli - stuffed with savoury meat and bread crumbs – or moqli – Aubergine cubes fried with garlic and mint - or pasta using basil, plump tomatoes, freshly grated cheese and the home-pressed olive oil safely stored from the previous harvest. Bżar aħdar - green peppers – that are baked and stuffed with minced pork and rice and flavoured with cumin, lemon and grated cheese. Tomatoes come in many shapes and sizes but none like the Ċatt, the flat, crinkled beefy tomato which knows no substitute for making Ħobż biż-żejt – bread with oil – Malta’s favourite snack.

The country lanes overflow with caper bushes which, with their generous fruit and petite white and mauve flowers, explode like fireworks out of the sturdy rubble walls. These are cured in brine before being stored away in old coffee jars filled with red wine vinegar. Mint, is another must-have ingredient for Ħobż biż-żejt that flourishes in the shadows of trees and large bushes, spreading fast across the soil, claiming its territory.

Old biscuit tins were layered with crusty slices of the tomato spread bread for our daily tea time picnics down on the beach. June is also the height of Tuna season. Despite strict fishing quotas which limit the tonnage landed, there is enough fresh blue fin tuna to be enjoyed in restaurants. 'Gululu', the casual Maltese diner in St Julians Bay, offers a Festa tat-Tonn (tuna feast) menu throughout the month of June, with a selection of interesting dishes all incorporating tuna meat. Tuna fishing has long traditions in Malta and, over the centuries, most tuna was caught using the Tunnara method so typical of the Mediterranean, where the shoals were captured in an intricate system of nets before being

The weather is usually not too hot with a mild northwest wind, the Majjistral, blowing a cool breeze in from the sea. Most children are still at school until the last week and this means that the beaches are less busy and, certainly quieter than July and August. The colours between blue sea and skies are at their most vibrant and locals and tourists alike show off their tans against brightly-painted clothes. Full of flavour and prepared with passion, Maltese food must be sampled wherever possible and Gululu is certainly one of the best places to go for it.

GĦasri Valley gozo Għasri [Ah-sree] Valley is a picturesque natural creek with cristalline waters and a small pebbly beach. Getting there may be tricky as involves over 100 steps down a cliff; but the breathtaking views straight out of a postcard definitely make up for them!
Golden bay MALTA Large clay hills slope gently around the waters of this secluded bay found along the north west coast of the island. Taking its name from its golden coloured sand, Golden Bay is one of Malta’s most sought after and popular sandy beaches during the summer months.

Dedicated to the Assumption of Our Lady, the colloquially known Rotunda is a Roman Catholic church in the centre of Mosta. It is currently the fourth largest unsupported dome in the world, and the third largest in Europe.

part from being the perfect retreat from the frantic pace of modern life, Gozo has so much to offer. Whether you are into culture, trekking or just lying down on one of the Island’s pristine beaches, gazing out at the crystal clear, azure waters – there is something to suit everyone. And it comes as no surprise that it was awarded the Quality Coast Award for its amazing waters and magnificent geographical and geological views around its coasts.
choice – the Citadel in Victoria is a big ‘must’ – built in the 15th century by the Knights of St John, it served as fortified quarters against the incessant attacks by Turks and Corsairs. Once you’re there why not visit the Old Prison? Fascinating to say the least, and divided into two segments, the entrance hall served as a common cell during the 19th century, whilst a freestanding block contains six individual cells – these were used from the 16th century right up to the beginning of the 20th century.
Not only is Gozo immersed in history, myths and legends, but this beautiful island also has several lovely beaches all unique in their own way – there is Ramla Bay with its unique, striking red sand and its location, at the bottom of a rich, fertile valley – and Xlendi Bay, [Sh-len-dee] yet another picturesque beach worth seeing. It is good to note that some of the best diving sites can be found around the island - so it is worth the effort that will go into looking around for your ‘favourite’ spot to cool off.
You will also find, the Natural Science Museum right within the Citadel – this is actually an old house dating back to the Aragonese period which was also used as an inn during the 17th and 18th century. The mineral and geology collection is a sight to behold, whilst the upper floor is devoted to ornithology (study of birds) and entomology (study of insects).

And, of course, for the more adventurous, the Ġgantija Temples (Giants’ Tower) are a big ‘MUST’ – built from massive stones, they have stood on the sleepy island for thousands of years and have been a silent witness to a time lost in the
realms of pre-history. It is worth noting that they are older than the Pyramids and Stonehenge, and have been a UNESCO World Heritage Site since 1980. They are complex in their structure and were extended and decorated over a long period of time, and date back to the third millennium BC. This little gem of an island offers a much slower pace of life and the saying ‘where time stood still’ still stands today. Many agree that it is prettier and greener than Malta and one can see why. It is picturesque in its simplicity, with its conical hills and lush plains, and, being much less developed than the main island; it is certainly worth a visit.

Maltese Team to Promote Their Film, and the Local Film Industry, at Cannes Short Film Corner ‘Sħab’ is a Maltese/Swiss production by Shadeena Films, partly-financed by the Malta Film Fund
As Malta continues to serve as a backdrop for many high profile international films, Maltese filmmakers are reaching out and promoting local stories through film. In fact, a short Maltese language film called ‘Sħab’ (To My Little Turtle), by the award winning production company Shadeena Films, will shortly be shown at this year’s Cannes Short Film Corner (CSFC). The production, which is 15 minutes long, is only the second project funded by the Malta Film Fund to make it into this highly-competitive market, and the only Maltese entry to make it into this year’s CSFC. ‘Sħab’ is a Maltese/Swiss coproduced story about what happens to those who have been left behind after a death. The film introduces us to an old farmer, Joe, (played by Joe Cortis) who is mourning the passing
of his wife (Cettina Scicluna) while still trying to fulfil her life-long wish of rising above the clouds and looking down on the surrounding white. He does this, on their anniversary, as his own struggles and thoughts of regret push him to take a leap of faith. Local actors Peter Galea and Jules Darville complete the film’s small cast. This project was developed by Martin Bonniċi and Chris Galea at the 2011 edition of the European Short Pitch, a short-film development and co-production workshop run by Nisi-Masa – a non-profit organisation promoting young professionals in the European filmmaking industry. F
or centuries, the Mediterranean sea, spilling over the sill of Gibraltar, has been a reservoir of food, a highway, and more recently a major tourist attraction. Since ancient times it has been a uniting fountain of life, less a barrier between people than artery. Characterised by very weak tides it is often considered a tideless sea. Its salinity, as a result of evaporation, is surpassed only in the Red Sea and the Dead Sea. The scene of famous battles, the reluctant burial ground of men and ships, and unfortunately in recent years, of many people fleeing war and economic problems in other parts of the world, it has many a tale to tell. This is the amphitheatre of Salamis; of the Great Siege and Lepanto; of the struggle of the Cross against the Crescent. Its harbours were used for privateering and slave trading. This is the sea where Helen launched her thousand ships. In troubled times, danger and death could come from the sea. All kinds of vessels have plied its deep, mysterious waters: hulk and prison-ship, steamer and paddle boat; galleon and carrack; submarine and warship; oil tanker and liner. Even, perhaps, Noah’s Ark. Of men and ships the Mediterranean is king. Great cultures have flourished along its banks. Constaninople, Greece, Rome
have moulded the people that live around it today. And the sea around Malta, the creeks and inlets, the bays and harbours, are a microcosm of this classic sea. On a summer’s morning, when the sun is sizzling and the sea is shimmering and the atmosphere is incandescent, go to Marsaxlokk, Marsascala, Żurrieq, Spinola Bay... and expect to be spellbound by the scene of colour and light. The different kinds of boats which are swaying and bobbing on the dark blue luminous surface exude colour. The frejgatina, the kajjik, the firilla and the dgħajsa are all there. There is also the luzzu. This is a powerful boat, a mans' boat, a macho boat. No simpering dinghy this. Nor synthetic raft. It has been built to last. Since ancient times fishing in the
Mediterranean has never lost its artisan character. The mare nostro is one of the regions of the world where the social and economic importance of fisheries is greatest. And the luzzu is used for fishing. The fish struggling in the tonnara; as the tunny nets are called, are a stunning sight. Round the islands there is tunny fishing off precipitous cliffs. Fishing for tuna commences in May and goes on for three or four months. The lampuka (dolphin fish) is caught at considerable distance away from the shore. It has beautiful changing colours when taken out of the water. The first shoals appear early August. There is also the plain bonito, the belted bonito, the speckled mackerel and Spanish mackerel. The red mullet is still esteemed though it has ceased to command the fancy price paid by the ancient Romans.

the luzzu
The luzzu is more or less a flatbottomed boat. The strakes (or continuous line of planking from stern to stem) are made of white deal, while the inner works (that is the floor frames and side frames) are made of ash and red deal. The choice of wood often depends on the whims of the owner. This double-ended boat seems to have evolved from the plans of the firilla, a smallish boat which it has now been largely replaced. “The luzzu was developed at the turn of the century out of the need of a sturdy boat,” notes a fisherman in Marsaxlokk. The older luzzu was operated by four oarsmen only. The harbour luzzu was largely used for cargo carrying between the islands. At first, sails were fitted but, around 1913, it was adjusted and fitted with engines.
It has remained the main traditional fishing boat of the Maltese islands. The rather short stern, the moustaches fore and aft, as well as the oculus, are the main characteristics of a Maltese luzzu. The eye of Osiris has been used since Phoenician times to ward off the evil eye. It is only found on those boats which venture out into the open sea where the dangers are obviously bigger. The fishermen take care of their boats and paint them with bright primary colours. The Maltese love of colour has been channelled into carefully selected areas and onto objects where maximum impact can be obtained. Dgħajsas and luzzus have, for generations, been painted in rich, contrasting shades of red, blue, green and yellow.

The names given to the luzzu often reflect the religious nature of the Maltese: Santa Marija, Sant’Antnin, Sant Guzepp or just plain Anna have been all time favourites. When the sun is bouncing off the yellow limestone, the luzzu, whether resting on a beach and dreaming of things it has seen or done, or whether afloat contemplating its next catch, is typical to these islands and definitely worth a photo.

t was Grand Master von Hompesch who raised Żejtun a city in 1797 and called it after his mother’s maiden surname, Città Beland. This was the year he was elected Grand Master which made him a Prince of the Church. At the same time he also raised Żabbar and Siggiewi to the status of cities. Hompesch, the 71 st Grand Master of the Knights of St John, was the first German to be elected to the office and the last Grand Master. He capitulated on 11 June 1798 when Napoleon ordered the invasion of the Maltese Islands and resigned as Grand Master on 6 July 1799. Hompesch eventually died in Montpellier, penniless, of asthma. “The inhabitants showed us no small courtesy,” reported St Luke. Long before St Luke and St Paul were shipwrecked on this small cluster of islands, legend had it that Calypso had already shown considerable hospitality to Ulysses and delayed his homeward return by seven years. If you visit Żejtun you will be shown courtesy, too. People, mostly women, sitting on their doorstep in the hot summer months, the men discussing life around the church, the priest doing his social work, will come forth with help and information if you approach them. Some are keeping an eagle eye on the comings and goings of unfamiliar faces, but all of them have time to talk. Here, life has a security unknown today in big cities. Anyone in distress is quietly helped. The old part of Żejtun, which gets its name from the Sicilian Arabic word for ‘the fruit of the olive tree’, zajtun, has character and reminds the inhabitants of their common past. The old buildings are part of the collective memory. Indeed it was known for its olive production and pressing for oil. As in other Maltese villages, the piazza around the parish church embodies the social and commercial life of Żejtun. Lorenzo Gafà’s parish church, begun in 1692 and dedicated to St Catherine

of Alexandria, looks like a baroque fortress with its dome borne superbly aloft. He was an eminent architect and also designed the Mdina cathedral, as well as the one in Victoria, Gozo. Inside and out this church is a work of labour, art and love. The inside is rich and, on the day of the village feast

(festa), which falls on the third Sunday in June, it looks like Paradise dressed in gold and damask and lit up by candles and chandeliers. A short distance from St Catherine’s lies a smaller square with the statue of St Gregory elegantly decaying, and, nearby, the church dedicated to this pope.

This church was built in 1436 and one of the first built in Malta following the end of Saracen rule, at a time when churches started being built above ground. Like most early churches in Malta it is a thorough mixture of architectural styles with idiosyncratic additions here and there. Linger awhile in this square, gentle reader. Sit on one of the benches in the shade of a tree and let your imagination wander. I did, and would not have been the least bit surprised if a knight had come out of the door of the church while another one crossed the square, sword in hand. In the beautiful little square the appearance of Grand Master Hompesch himself would not have astonished me. He was very fond of visiting these casals and he is affectionately remembered for being able to speak Maltese. As you idle through the town you will see that niches have been erected on walls, façades, street corners and outside people’s homes. Żejtun has its share of chapels as well. If you enter by the motorway from Bir-id-Deheb you arrive at Vittorio Bonnici Square and the chapel of St Angelo, built in 1670. In the sacristy there is an urn containing the remains of this Carmelite martyr. Many votive chapels and small churches have been built in fulfilment of vows or in thanksgiving for graces received. Sanctuary lamps are kept lit because of some annuity. In a less secular age people donated fields from the rents of which feasts could be celebrated and panegyrics preached. St Clement church in Żejtun was built by Clemente Tabone in 1658. He built it to fulfil a vow he made when he was attacked by a band of marauding Turks as he was riding past where the church stands now. As he lived to tell the tale he built the church in thanksgiving. There are other versions of this anecdote. Punic, Phoenician and Roman tombs containing pottery among other artefacts, have, over the years, been excavated in and around Żejtun. It is in these towns that one remembers that Malta is a real country, not an artificial resort area created for tourists. Sitting around the church or the doorstep of their homes, walking to church or to the grocer’s, most of these people seem to enjoy in inner peace. “In their breasts, all their lives, long resteth a peace that passeth understanding.” They are quietly absorbed in the lives of their family and their town. They care very little for whatever it is going on in California!

Despite constituting less than 1% of the global ocean volume and covering slightly more than 1% of the global ocean surface area, the Mediterranean Sea harbours a disproportionately high fraction (approximately 20%) of the global marine biodiversity. Alan Deidun shares his expertise.
I
n addition, to the estimated 17,000 marine species recorded to-date from the same Basin, an estimated onefourth is considered to be endemic, or unique to the same marine area. For these two reasons, the Mediterranean is known as a biodiversity hotspot. The list of such endemic species includes some of the most charismatic and characteristic Mediterranean marine species, including the Neptune Grass (Posidonia oceanica), the stone coral and the Maltese skate. Besides the endemics, the Mediterranean Sea is also home to an impressive number of charismatic species, including the loggerhead and green turtles, the pilot and fin whales and the epitome of vulnerability – the monk seal – for which only an estimated 500-600 individuals still persist in the wild.
which allow detached branches to float and colonise unchartered grounds. Green algae range from the minute and umbrella-shaped Acetabularia to the plate-size Codium bursa. Bare sandy bottoms give the impression that they are desolate places – this could not be further from the truth. In view of the absence of cover from predators, marine species living here either resort to camouflage, or to stinging venomous body parts or to other refuges, such as tubes as in the case of fan worms, or the sand itself, or even vacant snail shells as in the case of hermit crabs.
The Maltese Islands are a quintessential Mediterranean archipelago and hence they are blessed with a considerable chunk of such Mediterranean marine biodiversity. Our waters even have bragging rights over our own endemic species, with the Maltese top shell, which appears to be speckled with white snow particles, being known only from local waters. This phenomenon, known as spot endemism, is rare indeed since in the absence of rigid barriers to dispersal in the sea, it’s fairly uncommon to have marine species being restricted to a relatively small area as that of the Maltese Islands.
Two other commonly-encountered marine habitats within Maltese waters include seagrass meadows and the shade-loving coralligenous habitat. Seagrass species are the only group of flowering plants (yes, they flower and some even shed olive-shaped fruit) to have fully colonised the sea and they are considered to be keystone species. A keystone is the central stone in an arch and its removal would cripple irreversibly the arch. Assigning such a title to seagrass meadows is a tribute to the numerous roles played by the same meadows, such as that of a nursery for fish species, the release of oxygen in the water column, the protection of the coast from wave action, the provision of food to herbivorous marine species and the stabilisation of the seabed through their roots.
The Maltese marine area presents a variety of different depths and seabed types, which, in turn, support a large variety of marine habitats. These include rocky seabeds at shallow depths which are mainly colonised by brown and green algal species which are sunworshippers. Some brown algae, like Sargassum, have spherical air bladders

is normally encountered at low-light intensities, at the mouth of caves, under boulders, along vertical drop-offs and in over shaded conditions. The major invertebrate (thus excluding fish and marine reptiles and mammals) groups of marine organisms include crustaceans, which may range from crabs to lobsters, to minute prawns and shrimps, and the sessile barnacles, molluscs, which range from familiar snails to smart cephalopods (octopus, cuttlefish and squid), echinoderms, ranging from starfish to sea urchins, brittle stars and sea cucumbers, sponges (the most primitive group of animals around), cnidarians (jellyfish, sea anemones and corals) and polychaetes (bristle worms, such as the bearded fireworm, dreaded by divers). Another of the most anomalous marine species encountered by divers in shallow waters is the green spoonworm, for which the female greater eclipses the male in terms of size, and within which the proboscis can be extended up to ten times the total body length. Upon being disturbed, this bright green worm, which secretes a chemical currently being investigated for the manufacture of antibiotics, retreats at breakneck speeds. The Islands’ waters' most important trump card is the high degree of underwater visibility as a result of

the unparalleled transparency of the same waters. Different factors are complicit in this – the waters are generally devoid of suspended plankton populations in view of the lack of nutrients, and strong currents generally prevent the accumulation of what small concentrations there might be. This results in good light penetration and the characteristic and disarming ethereal blue hue of the Mediterranean, which attracts divers and snorkelers from the world over.

The courses are spread over four afternoons and regale participants with a compelling overview of the major species and habitats to be encountered within Maltese waters, information on the dynamics of the sea and interactions between different species as well as an insight into the impacts of different human activities on marine ecosystems and conservation efforts underway to reverse such impacts. Although no prior knowledge of SCUBA diving or of marine biology is expected of participants, the course offers the possibility to embark on a PADI-certified introductory diving course consisting of two shallow water dives, or to opt for a snorkeling session instead. The course is open to experienced divers as well and synoptic course notes will be provided to participants.

Faithful Mythical Superstitious Marsaxlokk, in the southeast of Malta, has basked with quiet confidence in its reputation of being the Island's most popular fishing village. This is also the village where the first Turkish sail was sighted in 1565. It must have been an awesome sight. The Turkish ships dropped anchor and the infantry and guns were disembarked and moved like a plague of locusts across southern Malta. WORDS BY Richard Wolf
M
any of the fishermen in Malta operate on a part-time basis, and at least half of them live in or around Marsaxlokk. There are also fishermen in St Paul’s Bay and St Julians; Żurrieq and Għar Lapsi. In Gozo there is Xlendi in the west, with its fine cliff scenery and the popular holiday resort at Marsalforn. Għajnsielem, the village on the hill above Mġarr Harbour in Gozo, is also a fishing village. “All the men in Għajnsielem are fishermen!” a young man tells me as we make a rough count of the fishing boats, including luzzus in Mġarr. “Għajnsielem has its annual St Andrew procession, St Andrew (and not his brother Peter) is also the patron saint of fishermen,” continued my temporary companion.

and the sea that drowns,” to quote the poet laureate, John Masefield. Normally crew members on a luzzu are connected by ties of kinship and affinity. The skipper is often the owner. He would recruit his sons and brothers-in-law and, when needed, a cousin or two. In Marsaxlokk the fishermen are there mending their nets, cleaning their boats, drinking a glass of tea. Many of them are about the same age as Mustapha Pasha was when he came to Marsaxlokk all those years ago – that is around 70. “The ship and crew, as well as the skipper himself, are always identified by means of a nickname both in Malta and Gozo. Some nicknames have become legendary, for they belong to courageous men who have faced storms, wrecks and big fish. Men who have survived against
impossible odds,” an observer of the Marsaxlokk scene explains. Most fishermen set off before dawn. A crew would consist of as many as eight or nine in the lampuki season. Lampuki (dolphin fish) and fanfri (pilot fish) appear in Maltese waters by mid-August and disappear by December. Fishing for klamari (squid) would only require a crew of two or three men. Local fishermen also go out to catch swordfish and tuna between April and August. “Frozen mackerel is used as bait,” one fisherman explained. “We fish by means of long lines which sometimes extend to as much as 50 kilometres.” For lampuki and fanfri fishermen use floats and nets. But that is a longer story.

These fishermen work hard and you can see it on their faces. One 63-yearold tells me: “In the course of all these years on the water I remember storms and fatal accidents.” His father was a
fisherman before him and he was only young when he started to help him. “Times were much harder then. Fish was sold for next to nothing. In those days nobody seemed to realise how hard and precarious it was for us to earn our livelihood.” He has a knack for forecasting the weather. However, even he has been caught out on occasion. “One day in May, before the war, we set out before dawn - about five of us. We left Marsaxlokk behind and, after three hours, we arrived where we had planned to fish.” They threw in their nets and had something to eat. But the north-west wind (Majjistral) was rising, and rising fast, so they decided to turn back. They gathered their nets with some difficulty. “As we were nearing land and breathing a sigh of relief, the engine loosened up and we couldn't find the bolts.” Two of the men held it down with great difficulty until they finally got to shore. That day he decided never to go fishing again.

“But I had to go back on my decision. What else could I do? Become a plumber? The sea is part of me. I let my destiny take its course. I’ve faced worse storms since then and I’m still here to tell the tale.” Another fisherman recalled how his brother was to die with 22 others in the tragedy of Hondoq ir-Rummien in Gozo in 1948. “I named one of my sons after him.” However, before this tragedy, in June 1940, four fishermen set out to fish at dawn. “It was a fine summer’s day. We saw smoke coming towards us and then heard a kind of long whistle and a big bang. We realised that we were being shot at.” Suddenly they saw planes coming from all directions and a battle developed overhead between British and Italian planes. The smoke was coming from a British destroyer which was firing at the enemy. “Thousands of pieces of shrapnel were falling all around us. We had seen so many storms and it looked as if we were going to drown on a beautiful summer’s day! We started saying the Holy Rosary and mercifully we managed to get to shore safely. But even before that, the British and Maltese soldiers at Fort Delimara had a go at us, thinking we were spies about to land! It was against regulations to stay out at sea in the morning, during the war. Fortunately, the British officer who came to meet us took pity on us and allowed us to return to our families who were anxiously waiting.” If you go to the church of Ta’ Pinu in Gozo, or other sanctuaries and chapels on these islands, you will see many votive paintings and seascapes. Some of them were presented by
fishermen who were saved from some tempest or another. Many a mariner, after his rescue, has paid his debt to the saint whose help he invoked when he was caught out in some unexpected storm while fishing. These votive paintings can be recognised as exvotos by means of the four capitals VFGA (Votum Fecit, Gratiam Accepit) - For Graces Received. Many fishermen are very superstitious. No fisherman will go out to sea without painting the għajn, or eye, on the bows of his fishing boat for this is said to ward off the evil eye. But they also hang olive branches that are blessed on Palm Sunday on their boats for the same reason. For the evil eye lurking round every inlet is the same that drowns, they believe. At the beginning of the lampuki season the fishermen have their vessels blessed by the parish priest. And so it goes on; a combination of faith, myth and superstition.

Air Malta Flies to Four of the World’s Top 10 Airports
T
he international airports of Munich, Zurich, London Heathrow and Amsterdam Schiphol, to which Air Malta operates, have been named amongst the top ten airports worldwide.
Air Malta is currently flying to four of the world’s best airports. The 2015 World Airport Awards, organised by consumer aviation website Skytrax, named Changi Airport in Singapore as the World’s Best Airport for the third consecutive year.

This led to a number of revisions of various airline manuals.
The discussion to allow assistance dogs on Air Malta flights started a number of years ago under the first Chairman of the MGDF, the late Ron Colombo. As Mr Sciberras explained: “When Air Malta first allowed guide dogs to travel in the cabin on their flights, there were very few such dogs in Malta, but there are now 13 in Malta and Gozo, and that

Mr Mizzi said the airline felt the need to update its policy because it is confident that, so long as the dog meets the full membership criteria of the International Guide Dog Federation or Assistance Dog International and the dog is well trained, it will pose no risk to other travelling passengers. “Recognised Assistance Dogs include guide dogs, hearing dogs and service dogs that assist persons with disability

How long have you been working with Air Malta? This month I will be celebrating 20 years working for Air Malta. I joined the airline in June 1995 as a clerk in the Marketing and Public Relations department. Three words that describe your job? There is never a dull moment at work. If I can describe a typical day in three words it would have to be exciting, challenging and rewarding.

I also invest time in monitoring and reacting to what journalists and the public in general across the world have to say about our airline, and we have digital tools to help us to do so.
Today digital communication has put a lot of pressure on communication professionals in that stakeholders want to have and access information on a 24x7 basis.
I also like to listen to music especially the various forms of electronic music, from Vangelis to Richie Hawtin and alternative rock from Pink Floyd to the Foo Fighters.
At the time I started working for Air Malta we used to plan to meet the deadline for the 8pm national TV bulletin or the following day’s printed papers. Nowadays any communication statement issued at any time is
Do you have any hobbies? I like the outdoors and my passion is the sea. I like any kind of sea based activity, be it snorkeling, diving, sailing or fishing.
Which is your favourite destination and why? It’s difficult to select my favourite destination. I love visiting cities like London and Rome but my favourite holidays have always been seaside vacations, like when I travelled to the Greek islands, the Italian island of Sardinia and to California and
Florida in the United States. Apart from enjoying a holiday in Florida I also had the once in a lifetime opportunity to fly across this state in a Cessna 172, a 4-seater single engine aircraft. What are your favourite spots or tips for anyone visiting Malta? The Maltese Islands are very diverse in that they can offer many attractions such as cultural, historical, various leisure places or activity based opportunities, all within easy reach. In winter I love trekking in the countryside or strolling along the streets of Valletta, Mdina and Birgu, both during the day and night. There you can enjoy a nibble or two at the quaint restaurants or wine bars. In summer I like having lunch in Spinola Bay and organising a BBQ with friends in the evening, or a night out at an open air night club. I also like snorkeling along the rocky shores in the northern part of the island or in Gozo. My favourite beaches are Riviera (Malta), San Blas (Gozo) and obviously the Blue Lagoon in Comino. I also recommend a visit to the open air fish market of Marsaxlokk on Sunday mornings.

Any devices that can send or receive data by wireless means, such as mobile-phones and tablets, may be used during all phases of the flight provided their transmit/receive capabilities (e.g. Bluetooth and Wi-fi) are switched off. Alternatively, if the device has ‘Flight Mode’1 capability, this shall be enabled. Such devices shall be safely secured in the customers’ hand (handheld) or a pocket during taxi, take-off and landing. Larger devices (e.g. laptops) shall be switched off and stowed away safely during taxi, take-off and landing. Accessories, such as headphones, must not obstruct access to the aisle. If the data transmission capability cannot be switched off (whilst the device is operating), the device itself shall be switched off for the duration of the flight.
These could include, but are not limited to, items such as DVD players, electronic games, music players and personal cameras. Such devices shall be safely secured in the customers’ hand (handheld) or a pocket during taxi, take-off and landing. Larger devices shall be stowed away safely during taxi, take-off and landing.
Such devices may be used during boarding and during flight but not during taxi, take-off and landing. Any built-in data connectivity such as Bluetooth or Wi-Fi shall be disabled. These devices must be stowed away safely during taxi, take-off and landing since they could hinder an emergency evacuation.

C an I use headphones?
Personal headphones can be used during all phases of the flight. However, we ask you to remove your headphones during the safety briefing. For safety reasons, customers sitting at an emergency exit row must refrain from using headphones during taxi, take-off and landing.
Under certain circumstances, your Flight Crew or Cabin Crew may ask you to switch off all Personal Electronic Devices. This may happen during automatic landings, low visibility takeoff or landing, or during emergency situations.
I should inform the cabin crew w hen …
… a passenger notices that his/her device is overheating. In such a case, the Personal Electronic Device must be switched off immediately and a member of the crew informed.

Alcohol consumed at high altitude can have a stronger effect than usual. Cabin crew are legally empowered to refuse serving any alcohol to an intoxicated passenger and to anyone under the age of 18. In extreme cases, crew may also temporarily confiscate the passenger‘s own drinks so that the passenger would not become a nuisance to the other passengers and crew. Furthermore, Air Malta is bound by international regulations which prohibit embarkation or the carriage of drunken passengers. But once you are reading this article, Air Malta‘s Flight Safety Committee is confident that you are a law-abiding and exemplary passenger. Indeed, the cabin crew may need your assistance to restrain another passenger in the unlikely event that he or she may act irresponsibly during the flight. The consumption of one’s own alcoholic beverages in-flight goes against Air Malta policy.
Smoking is prohibited from when you leave the terminal building until you arrive to the terminal building. Smoking is allowed in designated areas only. Smoking is not allowed during any phase of the flight and in any area of the aircraft. Should you be aware of a passenger who has smoked in the toilet during the flight, please inform the cabin crew immediately so that they can check for any undetected fires. The use of electronic cigarettes (e-cigarettes) is also not allowed on board Air Malta flights. Similarly, the use of naked flames on and around the aircraft is also prohibited.
