Dear travellers,

Preparations are well underway for the start of our summer 2022 flight schedule which is set to commence on the 27th of March. Air Malta has put together a very ambitious flight schedule that reflects the strong demand for travel that we are expecting this summer.

“It was one of those March days when the sun shines hot, and the wind blows cold: when it is summer in the light, and winter in the shade.” As Charles Dickens famously wrote about the month of March, the same can be applied to the Maltese islands, as the days grow longer. March is a beautiful month to get out and explore a more rural side of Malta, and our “off the beaten track” feature this month takes us to the island of Comino. If you have never visited, be sure to put it high on your itinerary!

Several markets are already showing signs of recovery, and this increased propensity to travel fills us with hope that a strong rebound in tourism is expected in the coming months. During summer we are set to float 1.3 million seats on the market and operate over 125 weekly direct services to 19 key European airports.

Elsewhere in the issue, Ramona Depares meets local actor and Netflix star Joseph Vassallo, and Palazzo Falson in Mdina give us the lowdown on their beautiful botanical escape.

After an absence of over a year, we will be returning with up to a daily service to London Gatwick and a three times weekly service to Madrid. London Heathrow will be our most served route with 15 weekly scheduled flights, followed by Munich (12), Rome (10), and Paris with nine weekly frequencies on Orly and seven weekly frequencies to/from Charles De Gaulle airport.

St Paul’s Bay was named after St Paul, who was shipwrecked on an island located in the bay. The area was once a traditional village that has gradually developed into a popular holiday location. It’s just a 10-minute walk along the coast from Buġibba, an area that’s now brimming with restaurants, cafes, wine bars, pubs and beach clubs, as well as a cinema, a casino, the National Aquarium and more.

Built in 1638 by the Order of St John, this tower linked with a series of coastal watchtowers called De Redin Towers to allow the flow of communication between Gozo and Valletta. Today it serves as a restaurant and pizzeria that specialises in Maltese cuisine and barbeques during summer.

This house museum has its roots in the late 18th century and was completed in the 20th century. It’s famous for its impressive architecture, gardens and exhibits. The exhibits are mostly about a historically favourite pastime in Malta, hunting. An optional audio-visual tour is also available in several languages.

Figs. Ricotta. Anchovies. The Holy Trinity (or at least for me). These ingredients are some of our national treasures and what’s a better way than ravioli to make them all centre stage? The focus is on the ravioli; therefore the sauce is quite humble and timid. But, the sauce is the ideal canvas for these ravioli – and together they evoke magic.

FIGS AND RICOTTA RAVIOLI WITH ANCHOVY AND SAGE BUTTER INGREDIENTS FOR THE PASTA DOUGH 250gr (2 cups) 00 flour 2 whole eggs 3 egg yolks INGREDIENTS FOR THE FILLING 5tbs fig jam 1 tsp chilli flakes Pinch of sea salt Zest of ½ a lemon 250gr ricotta 100gr peppered cheeselet (ġbejna) Semolina, for dusting. INGREDIENTS FOR THE SAUCE 6 anchovy fillets 8 sage leaves 60gr Parmesan, grated METHOD Prepare the pasta dough by mixing the flour, whole eggs, and egg yolks together using a spoon or a mixer. Knead the dough for 10 minutes. Wrap the dough in cling film and refrigerate for 30-45 minutes. In a mixing bowl, combine the fig jam, chilli flakes, sea salt, lemon zest, ricotta, and grated cheeselet. Season well. If it is sweet, add a bit more chilli flakes. Set this aside to cool completely. Divide the pasta dough in half, and using a rolling pin or a pasta machine, roll the first half of the dough until very thin, adding some semolina as you go along to prevent the dough from sticking. Using a cookie cutter cut circle shapes from the dough. Take a teaspoon of the fig filling and place it in the centre of each cut circle. Repeat the same procedure for the second half of dough. Top each one with the other cut circles, pressing the edges down with your fingers to seal. Put the ravioli in a dish and put them in the refrigerator for a couple of minutes. The sauce and the cooking of the pasta should be prepared at the same time. In a shallow pan over medium heat, melt the butter and add the anchovy fillets. Mix continuously until the anchovy fillets dissolve into the oil. Add the sage leaves and continue cooking until the butter starts to bubble and browns slightly. Whilst preparing the sauce, bring a large pan of water to the boil and add some sea salt flakes (the water should be as salty as the Mediterranean Sea). Cook the ravioli for 4-5 minutes, until they start to reach the surface. Save a ladle of the pasta water for later. Add the ladle of pasta water to the butter sauce and reduce the heat to low. Mix in half the grated Parmesan and stir well. Remove the pasta from the water using a perforated spoon and toss it in the butter sauce. Mix well and serve with the remaining Parmesan on top.

Last month Malta International Airport celebrated 30 years since the Terminal’s inauguration. On 9 February 1992, 140 passengers arrived at Malta International Airport on board a flight from Moscow. These were the first passengers to be welcomed at Malta’s new air terminal building, which was inaugurated the previous day.

Working in a dynamic and fast-paced environment may have its challenges at times, however I try to remain motivated and drive myself to accomplish and tackle any tasks or issues involved. DO YOU HAVE ANY HOBBIES? I like to work out at the gym and go on hikes when I have time. WHAT IS YOUR PREFERRED MALTESE DISH? My preferred Maltese dish has to be the Maltese ftira, best served with freshly baked and crunchy bread. WHICH IS YOUR FAVOURITE MOVIE OF ALL TIMES? I consider ‘Into the Wild’ as one of my favourite movies. The film is based on a true story and I find it inspiring to watch the main character leave everything behind and focusing on surving on his own, without any form of technology, especially since nowadays our lives revolve so much around technology and the internet. WHAT KIND OF MUSIC YOU LIKE TO FOLLOW? I like listening to electronic music, mostly Techno. WHICH IS YOUR FAVOURITE DESTINATION AND WHY? My favourite destination so far has been Hallstatt in Austria. I visited Halstatt last Autumn and although its a small village, it offers amazing views of nature, mountains and also lakes. Trekking on the Dachstein montains and a boat trip around Lake Halstatt were two of the most enjoyable activities there. WHAT ARE YOUR FAVOURITE SPOTS AND TIPS FOR ANYONE VISITING MALTA? My favorite spot in Malta is Riviera Bay. In my opinion, it’s one of the most beautiful beaches in Malta. Apart from going to the beach, there is a short hiking route which leads to the other side of the beach and you can see the views of Ġnejna, Riviera and Qarraba beaches. It’s also a great spot to see the sunset.

SMOKING

Alcohol consumed at high altitude can have a stronger effect than usual. Cabin crew are legally empowered to refuse to serve any alcohol to an intoxicated passenger and anyone under the age of 18. In extreme cases, crew may also temporarily confiscate the passenger‘s own drinks so that the passenger does not become a nuisance to the other passengers and crew. Furthermore, Air Malta is bound by international regulations which prohibit the embarkation or the carriage of drunken passengers. However, since you are reading this article, Air Malta‘s Flight Safety Committee is confident that you are a law-abiding and exemplary passenger. Indeed, the cabin crew may need your assistance to restrain another passenger in the unlikely event that he or she may act irresponsibly during the flight. The consumption of one’s own alcoholic beverages inflight goes against Air Malta policy.

Smoking is prohibited from when you leave the departure terminal building until you reach the arrival terminal building. Smoking is allowed in designated areas only. Smoking is not allowed during any phase of the flight and in any area of the aircraft. Should you be aware of a passenger who has smoked in the toilet during the flight, please inform the cabin crew immediately so that they can check for any undetected fires. The use of electronic cigarettes (e-cigarettes) is not allowed on board Air Malta flights. Similarly, the use of naked flames on and around the aircraft is also prohibited.

FACE MASKS The Airline requires all passengers to wear an approved medical or cloth face mask at all times, starting from boarding, for the duration of the flight, through to disembarkation. Passengers will not be allowed to board without a facemask. Masks should also be worn within the airport building, before and during check-in, upon arrival, when collecting baggage, and up to the point that a passenger leaves the airport building. As per the Government of Malta Legal Notice 402 of 2020, children under three (3) years of age and persons with severe cognitive, physical, mental, or respiratory impairments who have difficulties tolerating a mask as certified by a licensed medical practitioner are exempted from wearing masks. Certified individuals shall always carry the relevant medical certificate exempting them from wearing a mask. Passengers risk fines if they fail to comply.

TRANSMITTING PORTABLE ELECTRONIC DEVICES (PEDS)

NON-TRANSMITTING PORTABLE ELECTRONIC DEVICES (PEDS)

Devices that can send or receive data by wireless means, such as mobile-phones and tablets, may be used during all phases of the flight provided their transmit/receive capabilities such as GSM & Wi-fi are switched off. Devices working on Bluetooth wireless connectivity are allowed. If the device has ‘Flight Mode’ capability, this must be enabled. Such devices shall be safely secured in the customers’ hand (handheld) or a pocket during taxi, take-off and landing. Larger devices (e.g. laptops) shall be switched off and stowed away safely during taxi, takeoff and landing. Accessories, such as headphones, must not obstruct access to the aisle. If the data transmission capability cannot be switched off (whilst the device is operating), the device itself must be switched off for the duration of the flight.

These could include, but are not limited to, items such as DVD players, electronic games, music players and personal cameras. Such devices shall be safely secured in the customers’ hand (handheld) or a pocket during taxi, take-off and landing. Larger devices shall be stowed away safely during taxi, take-off and landing.

LAPTOPS AND NOTEBOOKS Such devices may be used during boarding and during flight but not during taxi, take-off and landing. Any built-in data connectivity such as Bluetooth or Wi-Fi must be disabled. These devices must be stowed away safely during taxi, take-off and landing since they could hinder an emergency evacuation.

ARE THERE TIMES WHEN I CANNOT USE MY ELECTRONIC DEVICES?

CAN I USE HEADPHONES? Personal headphones can be used during all phases of the flight. However, we ask you to remove your headphones during the safety briefing. For safety reasons, customers sitting in an emergency exit row must refrain from using headphones during taxi, take-off and landing.

Under certain circumstances, your Flight Crew or Cabin Crew may ask you to switch off all Personal Electronic Devices. This may happen during automatic landings, low visibility takeoff or landing, or during emergency situations.

I SHOULD INFORM THE CABIN CREW WHEN … Your portable electronic device is damaged, becomes hot, produces smoke, is lost, or falls into the seat structure. If safe to do so, the device must be switched off immediately.
