Dear travellers,

Now that October is over and the summer season has come to a close, we can look back on it and feel extremely proud of our achievements. While some countries were slow to come out of COVID restrictions during April and May, we successfully operated five consecutive months (June to October) with +90% network wideseat utilisation. Italy, United Kingdom, and France led the way in terms of numbers of customers carried and London Heathrow takes top spot as busiest airport in the Air Malta network.

It goes without saying that it is a magical time on the islands during the month of November. Winter hits us much later than our European counterparts, so really and truly, it’s autumn here. As the hot balmy nights of mid-summer fade into our memories, the islands begin the highly-anticipated countdown to Christmas. As usual, this month’s Bizzilla is a hearty concoction of everything that makes the Maltese islands so utterly unique. We have cherry-picked inspiring artisans, trawled dreamy locations to while away an afternoon and compiled wonderful restaurants to put on your bucket list. All you need to do is sit back and decide where to visit first.

We now enter the historically ‘quieter’ winter season, but we are already seeing advance bookings significantly stronger than previous levels. The rebound demand for travel experienced across recent months appears to be continuing into November and later months. The festive attraction of visiting Christmas markets has seen strong advance bookings for cities such as Berlin, Munich, and Vienna, while there are already over 70,000 customers already booked to travel from April into the summer of 2023.

We finally managed to corner renowned local fashion designer Marco Parascandalo to find out what’s on the style horizon, and why he chose Żabbar in the South of Malta, as his base.

It is also particularly pleasing to see that major airports such as London Heathrow and Amsterdam Schiphol have not placed any further capacity capping restrictions on Air Malta during the forthcoming months. We hope this is a sign of improvements in airport and ground handling infrastructure support in readiness for busier periods ahead in summer 2023.

Elsewhere, Lyndsey Grima caught up with business owner Sarah Cachia, to learn about the truly inspiring and life-changing story behind Jacob’s Brew Café, as well as the recently launched Jacob’s coffee run. Foodies, we haven’t neglected you. If the somewhat unpredictable weather and darker nights have left you reaching for the comfort food, then Chef Stephen La Rosa’s delicious mushroom risotto may be just the solution you are craving.

Major customer service product deliveries in our digital arena during October have included the system upgrades to facilitate phase two of 3DS credit card payments. This upgrade will give customers and financial institutions alike greater confidence in secure payment processing.

Also in the issue, we head to Madrid in our destination feature. Home to the Tigné Fort which is currently undergoing renovation and a rocky beach, this peninsula in Sliema offers a majestic view of Valletta especially at dusk. It has experienced extensive redevelopment work and the opening of the largest shopping mall in Malta called “The Point” - perfect for all those lastminute souvenirs.

A theatre whose origins date back to 1908, it is part of a bigger oratory which acts as a hub of activity for people of all ages. Teatru Salesjan is the oldest existing theatre in the vicinity and one of the oldest operating theatres in Malta. The venue has been an active focus for local creativity for many generations and retains its primary mission as a community theatre.

The Independence Gardens are a scenic park and recreation area located near the coastal strip of Sliema on the island of Malta, almost on the border with the neighbouring town of St Julian’s. The park has plenty of greenery, equipped with walking paths and plenty of places to sit back with a good book or watch the world go by. There are children’s playgrounds, cafes and a fountain.

The baths are cut into the rock beneath the ideally situated Surfside restaurant and have been supplied with pool ladders for safety. Although they are named the Roman Baths, they are thought to only date as far back as the Victorian era, but they are still just as enjoyable! Make sure you wear suitable shoes, if you plan to swim, due to the rough terrain.

Stella Maris Parish Church is located in the heart of Sliema. The church dates back to 1878. If you are interested in beautiful neoclassical architecture, make sure you pay a visit. The church was built at the end of the 19th century when Sliema was still a small village. It is the oldest Church in the area and at the same time, it is a mother church or a “matrice” for other parish churches in Sliema and Gżira vicinity.

Built in the 1920's, the Balluta Buildings were constructed in the Art Nouveau style, designed by the architect Giuseppe Psaila. The building's name is derived from the oak trees (in Maltese: ballut) that once populated the gardens around the original site. These luxurious apartments are sought after, having a large footprint, traditional tiles and stunning ironwork on the facade.

Many are familiar with the history of the Order of the Knights of St John – the Hospitallers who after Palestine, Cyprus and then Rhodes, settled in Malta in 1530. History books inform us of their role as carers for the sick, the sea-battles they fought in defending the Christian religion, the building of the new capital city, Valletta, from where they ruled the land and so forth. In her new and exciting book however, Theresa Vella maps the history of the Order through the art they collected, providing the reader with a different approach to the subject as well as highlighting the history of art collecting in early modern Europe. Hundreds of paintings were commissioned by the Knights of St John or once belonged in their collection and are now found in several public and private collections in different countries. The Palace of the Grand Master in Valletta still displays several of these paintings, while others are in the national art collection at MUŻA. Paintings were often exchanged as part of a Hospitaller knight's bequest (the 'quinto'), representing the noble convention of gift-giving or even exchange. In her book, Vella aims to flesh out a better understanding of the history and significance of such paintings. The frequent sales of a knight's belongings, to raise revenue for the Order, led to the establishment of a market at the start of the 17th century. This was also the start of a market for luxury goods, including paintings and sculptures, for the Maltese people. We are told that the well-known artist Mattia Preti, explored these markets for buyers overseas, acting as an art dealer. The start of this marketplace instituted a form of cultural exchange, or the adoption of continental cultural norms on an island. Reading this book as a history of art collecting – a much more relevant and studied topic today – we are presented with answers and observations on how, and more interestingly, why, the knights acquired or commissioned the very works that formed part of their collections, what they had in common with other collections belonging to the Order in Europe, and what became of them once a knight died. This could only come to light after Vella’s careful cross examination of list upon list of inventories from the Hospitaller archives in Malta as well as wills and other correspondence. As Vella states in her introduction to the book, ‘these art collections are the subject of this book, which aims to locate the collecting history of Hospitaller knights within the broader narrative of European art-collecting history, thanks to its transregional presence and its adaptation of a humanist ethos to Counter-Reformation principles’. I am absolutely thrilled to be presenting our latest Bizzilla iGaming special supplement, all about the buzzing iGaming industry in Malta. “BISS”. In a relatively short time frame, iGaming has elevated itself as one of the most prominent sectors in Malta. Not to mention the significant boost that is added to the local economy each year. Its arrival, and a strong presence on the Maltese islands, has impacted every part of local life. As I got older though, I realised it was time for reinvention - I shifted my focus from parties to concerts, then to expos, a boat show, and eventually a gaming expo - SiGMA. Malta was growing as a gaming hub and I could see that there was a need for something that could bring everyone together. We grew quickly from there on, and eventually took a few leaps of faith and branched out from local to global and from gaming to emerging tech, digital health and affiliation. Every project we take on, whether the logistics of a massive live event or the carefully tailored appeal of a social media campaign - is undertaken with excellence in mind. I became active in the space a couple of years ago and have been following the developments within this sector closely ever since. When Malta decided to launch its landmark regulatory framework for DLT, I saw the opportunity to launch a massive summit for Blockchain modelled on the same successful concept as SiGMA. My initiative garnered more enthusiasm than I could have imagined and I am very grateful to be at the centre of this momentum. AIBC Summit has become more than just an expo. I want to make sure that this emerging sector thrives and find the right synergies with like-minded people at the forefront of blockchain and other emerging technologies. HOW IS M A LTA POSITIONED TO SUPPORT SIGM A? A ND W H Y M A LTA? In Malta the gaming industry has had 20 years of growth and success. It now directly contributes more than 8% of the country's GDP. Nearly 10,000 individuals are employed in the gaming sector today, which accounts for about 4% of all jobs with hundreds of professionals employed by the sector's support services. Companies are drawn to the island’s pleasant weather and pretty villages, an English-speaking workforce, and top notch leisure and entertainment facilities. Government initiatives have focused on turning the island into a hub for digital tech, while its regulatory authority - the MGA, holds a strong reputation. Malta has always survived on the skills of its population and its highly adaptable business acumen. Able to adjust

swiftly to changing trends makes it the perfect hub for accommodating those with an entrepreneurial mindset. HOW M A N Y PEOPLE A R E YOU A N TICIPATING W ILL PA RTICIPATE THIS Y E A R? We’re expecting 25,000 to attend Malta Week - our biggest event to date. This includes over 300 top-tier affiliates we flew to Malta as part of our 300 Spartans campaign. W H AT DOES THE FU T UR E HOLD FOR SIGM A? In addition to amping up our events next year, the SiGMA Group has also set up a VC fund called Ikigai Ventures, where we invest in great founders and incubate entire ideas from the ground up. Results here have been incredibly encouraging. We have a global mandate and invest not only in iGaming, but also frontier tech. We have also branched into affiliation. We aspire for our brand to be known as a world authority in internet gambling and believe that turning our website into a portal for news, reviews, education and events is the way to go. These are unchartered waters for us, and there’s no blueprint we could follow. To my knowledge, no other events company has attempted to pivot the way we are. But I'm convinced we have the right talent on board; in Belgrade, Cyprus and Malta, to lead the way with this ambition. The industry has shown itself to be agile and infinitely adaptable - and with the next generation of high-tech pioneers already carving out a path built on innovation and smart tech, the future promises to be an exciting one.

This rich and velvety risotto is all the comfort food you could wish for this winter, Chef Stephen La Rosa shows us how it is done!

ROAST MUSHROOM & PORCINI RISOTTO INGREDIENTS 275g button/chestnut mushrooms

200g Arborio rice

75g oyster mushrooms

100ml white wine, dry

1 large onion

40g Parmesan

4 cloves garlic

80g unsalted butter

4 thyme sprigs

20g rocket leaves or watercress, optional

25g dried porcini

Olive oil, salt and pepper METHOD

Begin by chopping the dried porcini into small pieces using a pair of scissors. Place into a measuring cylinder. Pour 1.25 litres of boiling water over them and allow them to steep while you prepare your ingredients. Finely chop 200g of button mushrooms, the whole onion and 2 cloves of garlic. Reserve separately. With the remainder of your button mushrooms, cut into bite-sized pieces or leave whole if they’re nice and small. Tear the oyster mushrooms into bite-sized lengths by hand. Place a medium-sized pot over medium heat and add 3 tablespoons of olive oil. Add the chopped onion to the pot and season with salt. Stir to cook for 4-5 minutes or until the onion have softened but not browned. Add your minced mushrooms and turn the heat up to high. Season the mushrooms with salt and stir constantly as they cook, they will give off a lot of moisture and reduce in volume considerably. Once the mushrooms have lost most of their moisture and have reduced considerably, lower the heat to medium and add the minced garlic. Cook for 2-3 minutes while stirring. Add your rice to the pot and turn the heat to low. Cook while stirring for 2-3 minutes to toast the rice and coat it in the mushroom mixture. Increase the heat to medium and add 100ml of dry white wine, allow it to reduce while stirring. Once almost completely reduced, add 1/3rd of your porcini stock to the pot and stir gently to separate the rice. Add all of the soaked porcini to the pot also. Cook while stirring occasionally for 5 minutes or until the liquid has reduced by half. Add a further 1/3rd of the porcini stock and continue cooking while stirring occasionally. FOR THE SAUTEED MUSHROOMS While that is cooking, preheat a large saute pan over medium-high heat. Place the remaining button mushrooms into the pan, drizzle lightly with olive oil and season with salt. Allow to cook without moving for 2 minutes. Lightly crush the unpeeled cloves of garlic. Add a tablespoon of butter to the pan along with 2 sprigs of thyme and an unpeeled clove of garlic. Coat the mushrooms in the foamy butter and cook until well browned. Season to taste with freshly ground black pepper and a few drops of sherry vinegar. Once cooked, add the mushrooms to your risotto and reserve a few pieces for garnish. Wipe your pan and repeat the sauteing process with the oyster mushrooms. FINISHING THE RISOTTO Add half of your leftover stock to the risotto. Continue cooking while stirring until almost all of the liquid has reduced. Taste your risotto for seasoning and doneness. If the rice still has a crunch, add more liquid and continue cooking with more stock. If the risotto is very under-seasoned, add a pinch of salt but don’t go overboard. We’ll be adding salty Parmesan later. Continue to cook the rice while stirring constantly until it is tender, but still has some texture to it and the liquid surrounding the rice is thick and starchy. If the rice is cooked but very dry, add a few teaspoons of stock to loosen it up. Turn the heat off and allow your risotto to sit for 1 minute. Add the rest of your butter and grated parmesan and stir off the heat until they have both emulsified into the risotto. Serve immediately on warm plates and top with the reserved mushrooms. Garnish with more Parmesan, black pepper, sauteed mushrooms and rocket leaves. 85

In recent years, the club has also seen an increase in rabbit pet owners and members from Gozo. The Malta Rabbit Club is in fact the biggest club in Malta serving its purpose. At the time of writing, the NGO has topped the 2100 mark of memberships. Furthermore, the club participates in most public events held all over Malta and Gozo, radio programmes and television shows, and even delivers educational talks in schools and colleges.

The Malta Rabbit Club is a Non-Governmental Organisation (NGO) which was founded way back in 1963 by Joe Debattista. Initially, the club was set up to support breeders raising rabbits for consumption and show rabbits. The club’s base is at “The Petting Farm” in Ta’ Qali, which is government owned. However, since its opening in 2012, the club has been given administration rights to run the rabbit zoo. During the past seven years, the club has undergone drastic changes, evolving from the above-mentioned concept, to a club embracing pet rabbit owners. The present main objectives of the club are to educate and inform the public about the health and well-being of rabbits. The club also promotes rabbit pet therapy, encourages home breeders and educates society at large about the best possible upkeep of rabbits and how to improve their environment. Most importantly, the club seeks to further develop the hobby and welfare of pet rabbits through research.

The NGO is synonymous with rabbit rescues, be they abandoned pets or abandoned sick rabbits. For this reason, the club has invested in a rabbit ambulance, with partial funding from the Animal Welfare Department. An emergency telephone number is also available for urgent cases, even though the NGO is run solely by volunteers.

The “Assisted Pet Therapy Project” promotes rabbits for therapy, helping children and young adults with autism and other special needs. Rabbit therapy has offered a smile and good company to elderly people residing in various senior citizens’ homes. Persons with Down’s Syndrome, persons with special needs, children and youths on the autistic spectrum, and also patients at the Gozo General Hospital have all benefitted from such

THE ROYAL MALTA GOLF CLUB – A JEWEL IN THE MEDITERRANEAN CROWN

The signature hole of the RMGC is the Maid’s Bedroom, a mid-length par three where the golfer has to play directly over an arched structure that was in years gone by the servants’ quarters. The RMGC also boasts excellent catering, a well-stocked Pro shop and great practice facilities.

The Royal Malta Golf Club (RMGC) is set in the expansive grounds of the Marsa Sports and Country Club and offers a sea of green in an otherwise limestone coloured landscape. The RMGC is one of just 65 golf clubs among the 40,000 courses worldwide that affords the Royal title and was founded in 1888 by Lieutenant-General Sir Henry D’Oyley Torrens KCB KCMG. He arrived in Malta on the 28th of September 1888 and within one month he had founded Royal Malta. At the time the then Duke of Edinburgh, Prince Alfred Ernest Albert, third son of Queen Victoria, was based in Malta as Commander of the Mediterranean Fleet and became one of the founder members of the club. Hence the royal patronage from where the club gets its name. Today the RMGC is 134 years young!

The ‘Putters Inn’ is uniquely placed between the 1st and 2nd holes on the course and offers first class fare in a unique venue. The course is maintained to the highest of standards and is green \all year-round. Steeped in history and nostalgia, the Royal Malta Golf Club offers a memorable golfing experience for members and visitors to this small but beautiful island in the middle of the Mediterranean.

Today’s course offers 18 holes of golf in a green oasis just outside Valletta. At par 68, the course is not one of the longest, but the apparent simplicity is deceptive as it demands accuracy off the tee and the relatively small greens are well protected. It offers a good challenge for the more experienced golfer, but at the same time is kind to the beginner. The RMGC hosts international tournaments annually and has been the venue for several regional finals. Distinctively, the course has 6 par threes, 2 par fives and 10 par fours – an eclectic mix of long, short, and challenging golf holes for the discerning golfer.

HOW LONG HAVE YOU WORKED AT AIR MALTA AND IN WHAT ROLES? I have been working with Air Malta for just over 10 years, starting off as an Online Sales Assistant, moving to a Network and Scheduling Executive, and am currently occupying the role of a Loyalty Manager. WHAT DO YOU ENJOY MOST ABOUT YOUR CURRENT ROLE? I am a people person and enjoy forming part of a team that help the brand target the right audience and provide benefits, experiences and rewards that drive long-term engagement. AND WHAT’S THE MOST CHALLENGING ASPECT? At Air Malta we have a genuine empathy for our customers, and we strive to create unique experiences. As a result, together with my team, I am always looking for ways to challenge outdated misconceptions, simplify the processes, offer better experiences, and create value-added rewards. WHAT DO YOU LIKE TO DO IN YOUR PAST-TIME? Life is too short and unpredictable, so I try to make each moment count. When I am not working, you will find me building memories with my husband and our son, sharing laughs and stories with family or friends over a delicious meal, or exploring the Maltese Islands. WHICH IS YOUR FAVOURITE COUNTRY TO HAVE VISITED AND WHY? This is a tough question. I manage to find something unique wherever I go. Last September we managed to tour Scotland the scenery and wildlife were breath-taking. However, if I had to choose, given Air Malta’s well-connected network, I would say Italy - culture, food, art, mountains – you name it, they have it. WHERE WOULD YOU RECOMMEND VISITING WITHIN THE MALTESE ISLANDS? The south is rich with attractions. Żurrieq and Blue Grotto which sit in its surroundings are possibly two of the best locations you can visit during your stay. In Żurrieq, one can visit a traditional working mill, coastal watchtowers, and a good number of chapels. Whilst some Maltese localities need to be experienced in the summer months, the town of Żurrieq is a beautiful spot you can enjoy all year round. TOP 3 MOVIES? August Rush, The Notebook, and Miracle on 34th Street. FAVOURITE GENRE OF MUSIC? I love all types of genres, and thankfully, YouTube allows me to listen to what I want, whenever I want. PREFERRED MALTESE DISH? Octopus Stew made with lots of onions, garlic, tomatoes, olives, capers, and wine. Serve the octopus with crusty Maltese bread and thank me later. DREAM HOLIDAY DESTINATION? My dream holiday destination is Cuba. I’m planning to go when my son is a little bit older. I’m pretty sure it’s vibrant culture will leave a positive impact on me. FAVOURITE MALTESE EXPRESSION? It would have to be ‘Bis-serjeta’ (biss-ser-ye-ta) which translates to ‘Seriously?!’, and often has a sarcastic undertone.

ALCOHOL CONSUMPTION Alcohol consumed at high altitude can have a stronger effect than usual. Cabin crew are legally empowered to refuse to serve any alcohol to an intoxicated passenger and anyone under the age of 18. In extreme cases, crew may also temporarily confiscate the passenger‘s own drinks so that the passenger does not become a nuisance to the other passengers and crew. Furthermore, Air Malta is bound by international regulations which prohibit the embarkation or the carriage of drunken passengers. However, since you are reading this article, Air Malta‘s Flight Safety Committee is confident that you are a law-abiding and exemplary passenger. Indeed, the cabin crew may need your assistance to restrain another passenger in the unlikely event that he or she may act irresponsibly during the flight. The consumption of one’s own alcoholic beverages inflight goes against Air Malta policy.

SMOKING Smoking is prohibited from when you leave the departure terminal building until you reach the arrival terminal building. Smoking is allowed in designated areas only. Smoking is not allowed during any phase of the flight and in any area of the aircraft. Should you be aware of a passenger who has smoked in the toilet during the flight, please inform the cabin crew immediately so that they can check for any undetected fires. The use of electronic cigarettes (e-cigarettes) is not allowed on board Air Malta flights. Similarly, the use of naked flames on and around the aircraft is also prohibited.

FACE MASKS The Airline requires all passengers to follow the necessary regulations pertaining to the wearing of approved medical or cloth face masks, starting from boarding, for the duration of the flight, through to disembarkation. You might also be required to wear a mask within the airport building, before and during check-in, upon arrival, when collecting baggage, and up to the point that a passenger leaves the airport building. As per the Government of Malta Legal Notice 402 of 2020, children under three (3) years of age and persons with severe cognitive, physical, mental, or respiratory impairments who have difficulties tolerating a mask as certified by a licensed medical practitioner are exempted from wearing masks. Certified individuals shall always carry the relevant medical certificate exempting them from wearing a mask. Passengers risk fines if they fail to comply.

PHOTOGRAPHY The users of the services are obliged to comply with the European Regulation 679/2016 on the protection of personal data as well as the Chapter 586 of the Laws of Malta (Data Protection Act). It is the sole responsibility of the user to comply and in any case of non-compliance for payment of any penalties arising from such non-compliance. Based on the above-mentioned laws it is strictly forbidden to take photos or videos of passengers or the crew (without their explicit consent) and uploading them to the web.

TRANSMITTING PORTABLE ELECTRONIC DEVICES (PEDS)

NON-TRANSMITTING PORTABLE ELECTRONIC DEVICES (PEDS)

Devices that can send or receive data by wireless means, such as mobile-phones and tablets, may be used during all phases of the flight provided their transmit/receive capabilities such as GSM & Wi-fi are switched off. Devices working on Bluetooth wireless connectivity are allowed. If the device has ‘Flight Mode’ capability, this must be enabled. Such devices shall be safely secured in the customers’ hand (handheld) or a pocket during taxi, take-off and landing. Larger devices (e.g. laptops) shall be switched off and stowed away safely during taxi, takeoff and landing. Accessories, such as headphones, must not obstruct access to the aisle. If the data transmission capability cannot be switched off (whilst the device is operating), the device itself must be switched off for the duration of the flight.

These could include, but are not limited to, items such as DVD players, electronic games, music players and personal cameras. Such devices shall be safely secured in the customers’ hand (handheld) or a pocket during taxi, take-off and landing. Larger devices shall be stowed away safely during taxi, take-off and landing.

LAPTOPS AND NOTEBOOKS Such devices may be used during boarding and during flight but not during taxi, take-off and landing. Any built-in data connectivity such as Bluetooth or Wi-Fi must be disabled. These devices must be stowed away safely during taxi, take-off and landing since they could hinder an emergency evacuation.

ARE THERE TIMES WHEN I CANNOT USE MY ELECTRONIC DEVICES?

CAN I USE HEADPHONES? Personal headphones can be used during all phases of the flight. However, we ask you to remove your headphones during the safety briefing. For safety reasons, customers sitting in an emergency exit row must refrain from using headphones during taxi, take-off and landing.

Under certain circumstances, your Flight Crew or Cabin Crew may ask you to switch off all Personal Electronic Devices. This may happen during automatic landings, low visibility takeoff or landing, or during emergency situations.

I SHOULD INFORM THE CABIN CREW WHEN … Your portable electronic device is damaged, becomes hot, produces smoke, is lost, or falls into the seat structure. If safe to do so, the device must be switched off immediately.
