Merħba,

Those long balmy nights are upon us, and the ethereal sunsets spent alfresco with good company and the abundance of great food that surrounds us here on the islands.

We remain committed to our published summer schedule which will see us operate increased flights and destinations over the coming months. This month we have added the cities of Lisbon, Munich, Prague and Vienna to our network, thus increasing our number of destinations to 15. You can read more about our June schedule on page 50.

Not to mention, our borders are reopened for tourism - at last, welcome back to Malta!

As some countries around Europe started relaxing their travel restrictions and placing the Maltese Islands on their safe travel lists, we started seeing increased demand. As requests and bookings grow, we have the ability to increase our operations in the months ahead.

At Bizzilla, we have been riding out the rough seas of the pandemic, and now we can get back to doing what we love, sharing snippets of daily life here on the islands, and showcasing which spots to put on the top of the bucket list next. And what an issue we have lined up for you. This month we caught up with world-renowned Maltese DJ Tenishia to discuss how he has been spending his lockdown days and what’s next for the global superstar.

Throughout these last months we have been working to continue improving our customer experience and last month we launched a new online pre-order and pre-pay service for our inflight menu and boutique. Next up we head to the capital of Valletta, a personal favourite place of mine in this month’s destination. Local Christine Cassar shows us where to find key points of interest and so much more. The stunning walled city was established in the 1500’s on a peninsula by the Knights of St. John, a Roman Catholic order. It’s known for museums, palaces and grand churches. Don’t leave without a visit to the mighty St John’s Co-Cathedral (on our cover), home to the world-famous Caravaggio painting, the beheading of St John. Built between 1572 and 1577, this cathedral contains two masterpieces by Caravaggio. St John’s CoCathedral is a gem of Baroque art and architecture. It was built as the conventual church for the Knights of St John. This church is till this very day, an important shrine and a sacred place of worship. It is also a venue for many cultural events.

Strait Street, or Strada Stretta, also affectionately termed ‘The Gut’ owing to its reputation as the former redlight district of Valletta, was once the place where sailors who were docked in the harbour went for a good time throughout the late 19th until the mid-20th century. Why not catch a show while you’re in town? The Manoel Theatre is a renowned theatre and famous performing arts venue in Malta. The stunning theatre is often referred to as merely “The Manoel”. It is named after Grand Master of the Order of the Knights Hospitaller, Fra António Manoel de Vilhena, who ordered its construction in 1731.

After a considerable restoration project, the Triton Fountain at Valletta’s entrance is a sight you cannot miss. The fountain consists of three bronze Tritons holding up a large basin, balanced on a concentric base built out of concrete and clad in travertine slabs. The fountain is one of Malta’s most famous Modernist landmarks, catch it as dusk begins to fall, and you’ll see it beautifully illuminated.

At the tip of Valletta’s peninsula sits the magnificent Fort St Elmo. It stands on the seaward shore of the Sciberras Peninsula that divides Marsamxett Harbour from The Grand Harbour and commands the entrances to both harbours along with Fort Tigné and Fort Ricasoli. It is best known for its role in the Great Siege of Malta of 1565. For Game of Thrones fans, it was also a popular filming spot!

Chef Daniel Vella came from humble beginnings. He started off helping at a small fish restaurant in his hometown Mellieħa. He began to develop his skills and graduated after four years of study at the Institute for Tourism Studies. Daniel has further stretched his talents through 11 years of experience in the UK where he worked for world-renowned chefs. Today he creates his own recipes and has a strong influence on the Gillieru menu. Gillieru is an a la carte fish restaurant renowned on the island where glorious food is served whilst enjoying spectacular views. 40

With a reddish hue on its skin, the Red Snapper, or Pagella as it is known locally, has a lean, firm and moist texture, with a mildly sweet taste. It’s regarded by seafood aficionados as one of the best white fish. Native to our waters, you’ll find snapper on plenty of menus on the Maltese Islands; take a look at Chef Daniel’s sumptuous dish here.

BA K ED W ILD R ED SNA PPER with Potatoes infused with Maltese Aromatic Herbs INGREDIENTS 1 large Red Snapper fillet 3 tomatoes chopped 1tbsp capers 5 black olives ½ onion sliced 1 big potato sliced thinly 100ml water or fish stock 30ml olive oil 1 garlic clove sliced 1tbsp fennel seeds Few sprigs of parsley, marjoram and mint chopped roughly Juice of one lemon Seasoning

METHOD Preheat the oven to 180ºC. In the meantime, mix the sliced potatoes with all the other ingredients except the stock or water and oil. Line a baking tray with baking paper, arrange the infused potatoes on the bottom of the tray, score lightly the skin of the fish, rub the oil, season and place on the potatoes. Skin side up pour the stock around the fish. Wet a piece of baking sheet and put it on top of the fish to act as a cover, bake in the oven for 10 minutes. After these 10 minutes uncover and cook for a further 5 to 7 minutes. Plate and serve.

Before joining the department, I worked for 10 years at the Airline’s call centre in reservations, ticketing, customer care and the frequent flyer programme. WHAT DO YOU LOVE ABOUT YOUR JOB? Challenging, interesting, and fast paced. WHAT IS THE BIGGEST CHALLENGE OF YOUR JOB? Working under pressure while still offering a great service to my clients. DO YOU HAVE ANY HOBBIES? Walking, swimming, and travelling. Recently, I started learning decoupage. WHAT IS YOUR PREFERRED MALTESE DISH? 'Kusksu bil-ful' which is a wonderful heart-warming broad beans and pasta soup with potatoes, carrots and fresh Maltese cheeselets. Definitely my favorite winter Maltese dish. WHICH IS YOUR FAVOURITE MOVIE OF ALL TIME? I love watching Christmas movies and comedies, but ‘The sound of music’ is my favorite. It reminds me of my childhood. I can watch this movie hundred times and I still get emotional. WHAT KIND OF MUSIC DO YOU LIKE TO FOLLOW? I follow all sort of music, but 80s and 90s dance music brings back a lot of happy memories. WHAT ARE YOUR FAVORITE SPOTS AND TIPS FOR ANYONE VISITING MALTA? I would recommend visiting Xrobb l-Għaġin and Delimara, which are both located in the south of Malta, between Marsascala and Marsaxlokk. These are two of my favorite spots for a nice walk during winter and for a swim in the crystal clear Meditterenean waters during Summer. Marsaxlokk is also a fishing village were one can find a good number of fish restaurants serving mouth-watering local fish dishes. WHICH IS YOUR FAVOURITE DESTINATION AND WHY? Italy and Sicily are my favorite destinations. I am fascinated by their historical sites and magnificent architectural landmarks. I also love their food and wine and their scenic countryside agriturismo lodgings.

Alcohol consumed at high altitude can have a stronger effect than usual. Cabin crew are legally empowered to refuse to serve any alcohol to an intoxicated passenger and anyone under the age of 18. In extreme cases, crew may also temporarily confiscate the passenger‘s own drinks so that the passenger does not become a nuisance to the other passengers and crew. Furthermore, Air Malta is bound by international regulations which prohibit the embarkation or the carriage of drunken passengers. However, since you are reading this article, Air Malta‘s Flight Safety Committee is confident that you are a law-abiding and exemplary passenger. Indeed, the cabin crew may need your assistance to restrain another passenger in the unlikely event that he or she may act irresponsibly during the flight. The consumption of one’s own alcoholic beverages inflight goes against Air Malta policy.

Smoking is prohibited from when you leave the departure terminal building until you reach the arrival terminal building. Smoking is allowed in designated areas only. Smoking is not allowed during any phase of the flight and in any area of the aircraft. Should you be aware of a passenger who has smoked in the toilet during the flight, please inform the cabin crew immediately so that they can check for any undetected fires. The use of electronic cigarettes (e-cigarettes) is not allowed on board Air Malta flights. Similarly, the use of naked flames on and around the aircraft is also prohibited.

FACE MASKS The Airline requires all passengers to wear an approved medical or cloth face mask at all times, starting from boarding, for the duration of the flight, through to disembarkation. Passengers will not be allowed to board without a facemask. Masks should also be worn within the airport building, before and during check-in, upon arrival, when collecting baggage, and up to the point that a passenger leaves the airport building. As per the Government of Malta Legal Notice 402 of 2020, children under three (3) years of age and persons with severe cognitive, physical, mental, or respiratory impairments who have difficulties tolerating a mask as certified by a licensed medical practitioner are exempted from wearing masks. Certified individuals shall always carry the relevant medical certificate exempting them from wearing a mask. Passengers risk fines if they fail to comply.

Devices that can send or receive data by wireless means, such as mobile-phones and tablets, may be used during all phases of the flight provided their transmit/receive capabilities such as GSM & Wi-fi are switched off. Devices working on Bluetooth wireless connectivity are allowed. If the device has ‘Flight Mode’ capability, this must be enabled. Such devices shall be safely secured in the customers’ hand (handheld) or a pocket during taxi, take-off and landing. Larger devices (e.g. laptops) shall be switched off and stowed away safely during taxi, takeoff and landing. Accessories, such as headphones, must not obstruct access to the aisle. If the data transmission capability cannot be switched off (whilst the device is operating), the device itself must be switched off for the duration of the flight.

These could include, but are not limited to, items such as DVD players, electronic games, music players and personal cameras. CAN I USE HEADPHONES? Personal headphones can be used during all phases of the flight. However, we ask you to remove your headphones during the safety briefing. For safety reasons, customers sitting in an emergency exit row must refrain from using headphones during taxi, take-off and landing.

Under certain circumstances, your Flight Crew or Cabin Crew may ask you to switch off all Personal Electronic Devices. This may happen during automatic landings, low visibility takeoff or landing, or during emergency situations.

I SHOULD INFORM THE CABIN CREW WHEN … Your portable electronic device is damaged, becomes hot, produces smoke, is lost, or falls into the seat structure. If safe to do so, the device must be switched off immediately.

If you require more information, please refer to the table below which includes a list of Personal Electronic Devices (PEDs) which can be used onboard Air Malta flights by phase of flight. Please do not hesitate to contact any member of our cabin crew if you have any further questions.
