Dear Guests, Merħba, This month we are planning to operate over 90 scheduled services to 19 European destinations. The current scenario is indeed offering a number of challenges to our daily operations; however we are determined to keep the Islands connected and operate our planned flight schedule with as little disruption as possible.
When I recall summer memories, they include six-yearold sticky chins from overindulging in Nutella ice cream, picking blackberries with my father and rural caravan holidays with my family. Later came the adolescent years spent full-body sweating on the London underground on the way to a festival.
At a time when airlines are competing to fill up as many seats as possible, the quality of our service to our customers is what can differentiate us from our competitors. Over the past year we have been working hard on the transformation of our digital ecosystem. I am pleased to inform you that we will shortly be launching our new website and native booking engine that will use advanced technologies which will in turn give us increased capabilities and functionalities. The launch of our new website is part of a new digital ecosystem that we are deploying at all our customer touch points to be able to provide an exceptional customer journey.
We still need to make a living; work doesn’t wholly halt for most of us, but we prioritise life, and now more than ever. So we are pulled to the grassy outdoors and sandy coastlines, we loosen our schedules and cannonball into a Vitamin-D state of ethereal happiness. And fortunately, with over 3000 hours of sunshine a year in the Maltese Islands, there’s plenty of that! So this Editor’s Letter is succint, like summer – a reminder to take a breath, get some sun (while wearing sunscreen, of course) and peel away the layers of what makes you tick before you have to bundle up again.

GET TI NG TO KNOW H AZ-ZEBBUG EXPAT COLIN BACKHOUSE SHARES HIS LOVE AFFAIR WITH THE RURAL VILLAGE OF ĦAŻ-ŻEBBUĠ.

Also known by its title Città Rohan, Ħaż-Żebbuġ sits in the Northern Region of Malta. It is one of the oldest towns in the country, and its population is around 11,000. The Church is dedicated to Philip of Agira and the feast is celebrated on the 2nd Sunday of June, although the actual feast day falls on the 12th day of May. The name of the town literally means "olives" in Maltese; it derives from the large olive groves that stood in and around the current location of the church and the centre of the town. The town was bestowed with the title of Città Rohan by Emmanuel de Rohan-Polduc, the Grand Master of the Order of St. John on 21st June 1777. As was the custom in such events, the people of Ħaż-Żebbuġ built an archway known as the De Rohan Arch at the entrance to their hometown by way of marking the incipiency of its status as a city. The gateway, also known by the locals as Il-Bieb il-Ġdid (Maltese for, The New Gateway,) still stands today. The town's coat-of-arms is also based on that of the House of Rohan. When Malta was an independent principality under the sovereign Order of St John, Ħaż-Żebbuġ was among the chief towns after Valletta and Mdina,

first because of the presence of leading corsairs among its inhabitants, subsequently due to its major role in the cotton industry. The locals, or Żebbuġin as they are known in Malta, are renowned for their business acumen amongst others, and there is a local saying to this end. Due to the Żebbuġin's Francophile past, the town was regarded as a friendly community when the Revolutionary French took Malta. During their rule in Malta (1798-1800), the local churches were plundered for their riches in order to fund Napoleon's campaign. The Ħaż-Żebbuġ locals opened the main door to the church when they heard the French were coming and hastily hid the gold and silver religious iconography. When the French saw the open doors of the church they kept on going and the Żebbuġin retained their religious riches.

GRANARIES Although Malta always produced some grain, this was never enough to satisfy the demands of the population, and the island depended on importation from Sicily. It was vital to have an abundant storage of grain at all times, due to the constant threat of sieges or plague outbreaks, when all imports were halted. This necessitated the provision of safe, long-term storages to protect this precious commodity from damage caused by insects, rodents, and mould. In Valletta, the Knights of St. John opted for the use of underground silos - reservoirs hollowed out of the solid rock which were filled with grain, before being sealed off to stop water from getting in. A single silo could hold up to 80 tons of grain for as long as 3 or 4 years. Although the most well-known granaries today are those in Floriana, which were built by the British in the 19th century, other granaries had already been built by the Knights themselves within the walls of Valletta. Many of them have since been obliterated due to development, but directly in front of Fort St. Elmo, one can still see a number of circular stones, which are actually the lids of 39 surviving grain silos out of the 70 that were excavated here in the mid-17th century.

IL-KUKKANJA During the repaving of St. George’s Square a few years ago, workers discovered an old stone block with a circular hole in it. This is believed to be related to the centuries-old tradition of the kukkanja - a game that for many years was held on this same square during carnival festivities. Based on a Neapolitan tradition, the kukkanja was brought to Malta by the Italian Grand Master Marc’Antonio Zondadari in 1721. It involved a greased pole, at the top of which foodstuffs would be tied. Competitors would attempt to climb to the top and claim these prizes, a feat that was both difficult and amusing to watch. Contemporary descriptions explain how crowds used to assemble on St. George’s Square, and at a given signal, they would attack the hams, sausages and even live animals dangling from the top. The annual event came to an end when the Knights left Malta, but the tradition was brought back to life in the 20th century, and is still occasionally held in modern times.
VICTORY KITCHENS Due to Malta’s reliance on importing most of its foodstuffs from abroad, the biggest threat to the island’s survival during World War Two was the Axis blockade intended to starve the defenders. As food shortages started to be experienced, rationing was introduced, and with time, the lack of proper nutrition started to cause serious health problems for the population, encouraging the spread of disease, and leading to an increased death-rate among the vulnerable. To control the situation, Victory Kitchens were opened all over Malta. Subscribers would give up a percentage of their rations, but in return they received cooked food, consisting of the surrendered rations, together with unrationed items. People were entitled to one meal a day, and the food was very plain and repetitive. But despite frequent complaints about these things, people had no option but to use them, and the Victory Kitchens remained in operation until improved conditions led to their closure. A few years ago, restoration works on a shop façade in Melita Street led to the discovery of a wartime sign indicating the location of a Victory Kitchen. I sought the help of experts at the Malta Aviation Museum in Ta’ Qali to help identify the aircraft. They confirmed that it was a Short Type 184 Sea Plane, a two seater folding wing seaplane designed by Short Brothers that could carry a torpedo. The flying boat was first flown in 1915 and mostly likely, the one in the photo was a similar seaplane damaged during the battle in the Gallipoli Campaign (April 1915-January 1916) in the Dardanelles in Turkey, close to the Greek Islands. Further investigation with fellow research volunteers led to a high probability that the photograph was taken on a voyage Olof Gollcher made from Valletta, Malta, to England near the end of December 1915. It is fascinating to read through old photos and place in a historical context. Volunteering at Palazzo Falson has been very rewarding, and it is a unique place that should be on the visitors list of must see in Malta.

Marco Lo Cascio is an Executive Chef at The Neu Collective. Born and raised in Palermo, he spent most of his time in his grandmother’s kitchen, where she was constantly cooking up savoury traditional Sicilian dishes. This is where he developed the love for cooking and traditional techniques. Nowadays he gets inspiration by how food tells a story, conveys cultural ideas, and gathers people together. Marco graduated from the culinary institute of Palermo in 2004 and after several experiences around the world he moved to Malta 14 years ago delivering authentic Italian cuisine at Grana. 62

Although originally an Italian invention, the beloved arancini are highly consumed and loved in Malta, available in all the pastizzeria (the Maltese Street Food stores) and many restaurants across the islands, rest assured, you are never far from an arancina. Every chef will give their personal twist to the flavoursome rice balls. Here’s Chef Marco’s delicious recipe.
A R A NCI NI AL SUGO INGREDIENTS FOR 8/10 PIECES 500g Roma Rice 1.5 liter of chicken broth 70g Butter 1 Bag of Saffron 50gr Grana Padano 2 Eggs ½ Onion 1 Carrot 1 Celery Olive oil 300g Minced Beef 3tbs Tomato Concentrate 200g Mozzarella Fior di Latte Bread Crumbs
METHOD Prepare a pot with 1 liter of chicken broth, add rice and bring to boil. When the rice absorbs the water, add the rest of the chicken broth with the saffron, let it cook slowly until ready. Place the rice in a bowl and let it cool down. Once ready, add the butter, one egg, the Grana Padano cheese and mix well. In a casserole, gently fry the sliced onions, carrots and the celery with olive oil for a few minutes. Once the onions become translucent, add the minced beef and tomato concentrate, and cook for another 30 minutes. When ready, let it cool down. Get the bowl of rice and using a tablespoon place a good ammount of rice in your hand. Flatten it and curve it in order to obtain some space in the middle to place the filling. Fill up the curve shaped rice with the meat mix and mozzarella and add some more rice. Use your hands to form into a ball. Dip the rice ball in a beaten egg and roll it generously in the breadcrumbs. Deep fry each of the arancini for 3-4 minutes.

HOW LONG HAVE YOU BEEN WORKING WITH AIR MALTA? I have been the Chief Pilot Fleet for the past three years but my journey with Air Malta started 42 years ago as a clerk in Ground Operations. After 7 years, I started pilot training in Perth, Scotland. My first jet flying experience back in the 80s was on Boeing 737 but spent most of my career on Airbus 320. WHAT IS THE BIGGEST CHALLENGE OF YOUR JOB? A pilot job offers many continuous challenges such as weather, air traffic, aircraft issues, ground handling and passengers. I believe that the more knowledge and awareness I acquire, the more prepared I am to face these challenges. Being prepared will reduce surprises. My preferred learning technique is mental visualisation. IS THERE A PARTICULAR EVENT OR MOMENT DURING YOUR CAREER WITH AIR MALTA WHICH YOU ARE PROUD OR FOND OF AND WOULD LIKE TO SHARE WITH OUR READERS? 22nd June 1995 was my first flight as Commander, a milestone in my career. Each flight is different, yet it always gives me great pleasure to see our customers with happy faces and satisfied with the journey. WHAT DO YOU LIKE TO DO IN YOUR SPARE TIME? I enjoy hobbies such as cycling with friends, both locally and abroad, walking and photography. I also enjoy doing DIY engineering projects whilst researching new technologies and innovations. WHAT IS YOUR PREFERRED MALTESE DISH? Stuffat tal-fenek - slow cooked rabbit stew, Patata il-forn - Maltese roasted potatoes, Soppa ta l-armla - vegetable soup with cheese and ricotta and my daughter’s, Kusksu - broad bean soup. It is difficult to choose just one dish. WHAT KIND OF MUSIC DO YOU LIKE TO FOLLOW? I listen to a variety of musical genres depending on location and my mood. In general, I listen to the latest music hits along with dance and 70 and 80s music. WHAT ARE YOUR FAVORITE SPOTS AND TIPS FOR ANYONE VISITING MALTA? I love the south west part of the island as there are many quiet country lanes which are also ideal for cycling. For swimming, I enjoy Wied Iż-Żurrieq, Golden bay, Comino and many of the beaches in Gozo. WHICH IS YOUR FAVOURITE DESTINATION AND WHY? Thailand, as it offers a variety of distinct locations, good food, culture and great hospitality.

ALCOHOL CONSUMPTION
SMOKING
Alcohol consumed at high altitude can have a stronger effect than usual. Cabin crew are legally empowered to refuse to serve any alcohol to an intoxicated passenger and anyone under the age of 18. In extreme cases, crew may also temporarily confiscate the passenger‘s own drinks so that the passenger does not become a nuisance to the other passengers and crew. Furthermore, Air Malta is bound by international regulations which prohibit the embarkation or the carriage of drunken passengers. However, since you are reading this article, Air Malta‘s Flight Safety Committee is confident that you are a law-abiding and exemplary passenger. Indeed, the cabin crew may need your assistance to restrain another passenger in the unlikely event that he or she may act irresponsibly during the flight. The consumption of one’s own alcoholic beverages inflight goes against Air Malta policy.
Smoking is prohibited from when you leave the departure terminal building until you reach the arrival terminal building. Smoking is allowed in designated areas only. Smoking is not allowed during any phase of the flight and in any area of the aircraft. Should you be aware of a passenger who has smoked in the toilet during the flight, please inform the cabin crew immediately so that they can check for any undetected fires. The use of electronic cigarettes (e-cigarettes) is not allowed on board Air Malta flights. Similarly, the use of naked flames on and around the aircraft is also prohibited.
FACE MASKS The Airline requires all passengers to wear an approved medical or cloth face mask at all times, starting from boarding, for the duration of the flight, through to disembarkation. Passengers will not be allowed to board without a facemask. Masks should also be worn within the airport building, before and during check-in, upon arrival, when collecting baggage, and up to the point that a passenger leaves the airport building. As per the Government of Malta Legal Notice 402 of 2020, children under three (3) years of age and persons with severe cognitive, physical, mental, or respiratory impairments who have difficulties tolerating a mask as certified by a licensed medical practitioner are exempted from wearing masks. Certified individuals shall always carry the relevant medical certificate exempting them from wearing a mask. Passengers risk fines if they fail to comply.

TRANSMITTING PORTABLE ELECTRONIC DEVICES (PEDS)
NON-TRANSMITTING PORTABLE ELECTRONIC DEVICES (PEDS)
Devices that can send or receive data by wireless means, such as mobile-phones and tablets, may be used during all phases of the flight provided their transmit/receive capabilities such as GSM & Wi-fi are switched off. Devices working on Bluetooth wireless connectivity are allowed. If the device has ‘Flight Mode’ capability, this must be enabled. Such devices shall be safely secured in the customers’ hand (handheld) or a pocket during taxi, take-off and landing. Larger devices (e.g. laptops) shall be switched off and stowed away safely during taxi, takeoff and landing. Accessories, such as headphones, must not obstruct access to the aisle. If the data transmission capability cannot be switched off (whilst the device is operating), the device itself must be switched off for the duration of the flight.
These could include, but are not limited to, items such as DVD players, electronic games, music players and personal cameras. Such devices shall be safely secured in the customers’ hand (handheld) or a pocket during taxi, take-off and landing. Larger devices shall be stowed away safely during taxi, take-off and landing.
LAPTOPS AND NOTEBOOKS Such devices may be used during boarding and during flight but not during taxi, take-off and landing. Any built-in data connectivity such as Bluetooth or Wi-Fi must be disabled. These devices must be stowed away safely during taxi, take-off and landing since they could hinder an emergency evacuation.
ARE THERE TIMES WHEN I CANNOT USE MY ELECTRONIC DEVICES?
CAN I USE HEADPHONES? Personal headphones can be used during all phases of the flight. However, we ask you to remove your headphones during the safety briefing. For safety reasons, customers sitting in an emergency exit row must refrain from using headphones during taxi, take-off and landing.
Under certain circumstances, your Flight Crew or Cabin Crew may ask you to switch off all Personal Electronic Devices. This may happen during automatic landings, low visibility takeoff or landing, or during emergency situations.
I SHOULD INFORM THE CABIN CREW WHEN … Your portable electronic device is damaged, becomes hot, produces smoke, is lost, or falls into the seat structure. If safe to do so, the device must be switched off immediately.
