Dear Guests, Merħba,

Dear travellers,

As we approach the end of the year and the world continues to reopen, we remain committed to gradually continue increasing connectivity to the Maltese Islands. In this regard, we have brought forward our restart of services to London Gatwick to December, in time to reunite family and friends during the Christmas festive season.

They say it’s the most wonderful time of the year, and I think they’re right. The holiday season seems to unburden us from reason and indulge our every whim: Chocolate for breakfast, plenty of sparkling wine on standby, and so many opportunities to just eat, and eat...and eat! But it’s a good time to pause, reflect, and make the most of our surroundings. Here on the Maltese islands, Christmas is indeed a magical time of year. Although we do not get the sheets of snow our European counterparts endure at the same time, it still feels incredibly festive, as Christine Cassar shares her personal account on page 30. In this month’s Bizzilla, we have pulled together all that makes our islands so unique, the people, their stories and magical destinations for you to take some time out of your hectic day, catch up on and add to your bucket list.

As an Island state, connectivity is very important for us, and we are pleased to have been one of the first airlines to sign a broad codeshare agreement with ITA Airways. This new commercial partnership signals another important milestone for Air Malta as our customers will benefit from a wider network of flight schedules and destinations through the airlines' main hubs in Malta and Rome. The airline’s dedication and commitment in providing humanitarian support during the pandemic cannot go unnoticed. Yet again, last month we operated a five-hour long direct flight to the city of Accra to deliver 135,000 vaccine doses donated by the Maltese Authorities to the Government of Ghana.

We also caught up with the incredibly down to earth and sensational songstress that is Destiny, Malta’s Eurovision entry of this year, to find out her plans for the new year and how she has navigated the pandemic scenario- what a woman she is! Elsewhere this issue is jam-packed with dance, DJs, art, events and the local artisans that bring the place to life.

We are continuing to improve our customer experience and throughout this year we have implemented a number of initiatives including the launch of a new website and booking engine. We have also launched new tools to let customers who booked directly with us the ability to retrieve their booking, effect changes and/or add ancillary products from the comfort of their home or office. We have also made it easier for our guests to travel with their pets through a simpler and seamless process.

Oh, and foodies, we haven’t forgotten you - Chef Romeo is back in the kitchen and has knocked up a rabbit dish just for us. Love it or loathe it, the meat is a regular feature on Maltese menus, and hey, they say don’t knock it until you have tried it!

We have just launched a new series of Business Class fares which offer significant discounts for bookings either 30 days or 21 days before travel. MAKING YOUR OWN TRADITIONS I would say there is a 'Christmas on the Maltese Islands’ checklist of sorts especially if this is your first visit. That said, I’ve always been a big believer in making your own traditions. As I look back on my own, I just can’t help but smile. Although I do enjoy catching up with my loved ones during the lead up and on Christmas Day, I would say some of my most memorable holiday traditions are tied to my childhood. Sure there’s always room for new traditions, but sometimes you’ve just got to treasure the old ones. Although I am now 28 years old, I still feel the same excitement I felt as a child when it’s time to bring down the decoration boxes. One of the first things that I reach for is my advent calendar. Yes, I am a still a child at heart and I refuse to part ways with the Playmobil one that I was gifted many years ago. That said, I always make sure that I have a chocolate advent calendar close by too. Best of both worlds, right? As I move on to hanging the coloured streamers, I always listen to some of my favourite festive tunes. We can all agree here that it’s surely not a holly jolly festive season without listening to the likes of Last Christmas, Have Yourself a Merry Christmas and Rockin’ Around the Christmas Tree. Amongst all the decorations I put up, I tend to save the best for last - the tree of course. As soon as all the lights are set up, I rummage through the vast selection of baubles that I collected throughout the years. Some of them are older than others, but nonetheless all tied to wonderful memories and people who are close to me. I guess I’ve always felt a deep connection with Christmas Trees for this very reason. Although it’s such a ubiquitous symbol across the globe, it’s special in its own way to each and every family. Once all that’s out of the way, I enjoy nothing more than watching some Christmas films for the rest of the month. At this point I’ve lost count on how many times I’ve watched Home Alone, but it’s still a classic I enjoy every year. Christmas just isn’t the same without spending a good portion of it with the Mcallisters. You might also catch me singing along to ‘I Feel it in My Fingers’ as soon as it’s time to watch Love Actually. All in all, I simply love the festive season. I’m grateful to still be able to relive my traditions and feel like I’m five years old all over again for yet another year. I guess what I’m trying to say is that there’s more to Christmas than just the exchanging of gifts and all the big dinners. It’s a time of togetherness where we all try to forget about the day-to-day struggles and get our Christmas cheer on. It is also a time where those of us who have lost a loved one try to remember all the happy moments despite it all being so bittersweet. Regardless of the situation you find yourself in, I hope this Christmas brings you joy and everything your heart desires during this special time of year.

STRAIT STREET

Built between 1572 and 1577, this cathedral contains two masterpieces by Caravaggio. St John’s Co-Cathedral is a gem of Baroque art and architecture. It was built as the conventual church for the Knights of St John. This church is till this very day, an important shrine and a sacred place of worship. It is also a venue for many cultural events.

Strait Street, or Strada Stretta, also affectionately termed ‘The Gut’ owing to its reputation as the former red-light district of Valletta, was once the place where sailors who were docked in the harbour went for a good time throughout the late 19th until the mid-20th century. Nowadays, after extensive regeneration, the area is filled with bars and restaurants.

Why not catch a show while you’re in town? The Manoel Theatre is a renowned theatre and famous performing arts venue in Malta. The stunning theatre is often referred to as merely “The Manoel”. It is named after Grand Master of the Order of the Knights Hospitaller, Fra António Manoel de Vilhena, who ordered its construction in 1731.

After a considerable restoration project, the Triton Fountain at Valletta’s entrance is a sight you cannot miss. The fountain consists of three bronze Tritons holding up a large basin, balanced on a concentric base built out of concrete and clad in travertine slabs. The fountain is one of Malta’s most famous Modernist landmarks, catch it as dusk begins to fall, and you’ll see it beautifully illuminated.

At the tip of Valletta’s peninsula sits the magnificent Fort St Elmo. It stands on the seaward shore of the Sciberras Peninsula that divides Marsamxett Harbour from The Grand Harbour and commands the entrances to both harbours along with Fort Tigné and Fort Ricasoli. It is best known for its role in the Great Siege of Malta of 1565.

If you’re looking for the most impressive views the Islands have to offer, this place should be on the top of your list! The public gardens provide an unhindered, panoramic view of the world-famous harbour, with the three cities; Birgu, Senglea and Cospicua as a backdrop. The gardens are located on the upper tier of St Peter & Paul Bastion, which was built in the 1560s.

Romeo Giacomotto - A violinist and pedagogue with a passion for cooking. Romeo’s love for the culinary arts was cradled in his grandma’s kitchen. Working on yachts as a deckhand and skipper, Romeo would double behind the stoves, preparing meals for passengers and crew alike. Through the years, this was further enhanced by various stages in local kitchens and collaborations with fellow chefs, culminating in the preparation of delectable menus for a number of celebrities who visited the Island. The uniqueness of his dishes stems from an infusion of passion and artistic skill. Rabbit aka “fenek” is one of Malta’s most famous dishes. Rabbits were most likely introduced to the Maltese islands around 3,600 years ago, by the Phoenicians. Rabbit is delicious, and just like any other meat can be cooked in a variety of ways. Don’t knock it until you have tried it, you’ll find it on plenty of local menus! Here’s Chef Romeo’s fantastic plate packed with seasonal flavours.

8tbs Water

1tsp Ground cumin

Icing sugar

Nutmeg

1 Bayleaf

Filo Pastry sheets

Fresh thyme

1 Red chili (optional)

Butter METHOD Bastillas and Carmelised Onions In a pot, sear your rabbit to a nice golden brown. Add the spices and sautee for a minute. Pour in 400 ml of water, bring to a boil and let simmer covered till the meat falls off the bone. Meanwhile add your sultanas. Lift any bones off the meat and continue simmering until most of the liquid has reduced. Add the pomegranate molasses, salt and pepper to taste and allow the mixture to cool down. In a separate pan, combine sliced onions, oil and sugar and cook on low heat until the onions caramelise. Add sherry vinegar and salt to taste. Wrap the rabbit filling topped with onions in filo pastry and bake at 180ºC until the filo becomes crispy. Dust with icing sugar. Dauphinoise Peel and finely slice your potatoes and heat up the milk, cream and garlic in a small pot over low heat. Line an oven dish with baking paper. Overlap the potatoes in layers over the baking sheet adding salt, pepper, freshly ground nutmeg and thyme to every other layer. Discard the garlic clove from the cream mixture, pour over the potatoes and bake at 180ºC for 50 minutes. Allow the bake to cool down, compress with another oven dish and leave to set in the fridge overnight. Portion and heat up before serving. Beetroot Purée and Pickled Mustard Wrap your peeled beets individually in foil together with the rest of the ingredients. Bake at 180ºC for an hour and process to a purée consistency. Prepare the mustard seeds in a pickling jar. In a small pot, combine the rest of the pickling ingredients, bring to a boil and pour the liquid over the seeds. Allow to infuse for at least 4 hours. 59

I joined Air Malta 42 years ago, straight from tertiary-level school as a trainee clerk. I always had a passion for planes and how they fly. I still think that was one of the best decisions I took. THREE WORDS THAT DESCRIBE YOUR JOB? Dynamic, creative and challenging. WHAT IS THE BIGGEST CHALLENGE OF YOUR JOB? For the last 34 years I have looked after Charter Sales, optimising aircraft availability and handling specific customer demands for dedicated air transport at a cost-effective price. It is much like a wedding organiser looking after the needs of the clients that would like to use the airline’s service to fly a large group to or from Malta, or to other destinations; be it a film crew, a football team, an incentive group, or to attend events such as weddings. DO YOU HAVE ANY HOBBIES? Aircraft model-making, movies, disco-dancing, and contemporary poetry often with a satirical style. WHAT IS YOUR PREFERRED MALTESE DISH? Braġioli, or beef olives consisting of stuffed rolled meat in tomato sauce. I love eating this dish with fresh Maltese crunchy bread. WHICH IS YOUR FAVOURITE MOVIE OF ALL TIMES? There is a range of favourite movies according to the genre and production, but the ones I like best are related to history or events or those that recount real-life stories and experiences. Titanic is a great epic film, probably my favourite. WHAT KIND OF MUSIC YOU LIKE TO FOLLOW? With my first savings I bought a turntable/cassette player and bought pop records of the 80’s and 90’s of artists like Bee Gees, Boney M, and Michael Jackson. I also like the romantic love songs of the 60’s and 70’s of Engelbert Humperdinck, Tom Jones, Neil Diamond, and Elvis. Current favourite is Bruno Mars with his varied musical styles. WHICH IS YOUR FAVOURITE DESTINATION AND WHY? During my career I have travelled to various places in Europe either for meetings, travel fairs, route inaugural flights, or accompanying delegations. My favourite destination for leisure, also because of family connections, are the Midlands in UK. WHAT ARE YOUR FAVOURITE SPOTS AND TIPS FOR ANYONE VISITING MALTA? When I welcome first-time visitors to Malta, I make sure to take them to visit Valletta and Mdina because of their history and architecture. If it's summer I then take them to one of our village festas to experience band marches, street-food and fireworks. WHAT GIVES YOU SATISFACTION AT WORK? Whenever our company ranks at a top place in international or professional awards. I always feel proud of such achievements and being part of the Air Malta team.

Alcohol consumed at high altitude can have a stronger effect than usual. Cabin crew are legally empowered to refuse to serve any alcohol to an intoxicated passenger and anyone under the age of 18. In extreme cases, crew may also temporarily confiscate the passenger‘s own drinks so that the passenger does not become a nuisance to the other passengers and crew. Furthermore, Air Malta is bound by international regulations which prohibit the embarkation or the carriage of drunken passengers. However, since you are reading this article, Air Malta‘s Flight Safety Committee is confident that you are a law-abiding and exemplary passenger. Indeed, the cabin crew may need your assistance to restrain another passenger in the unlikely event that he or she may act irresponsibly during the flight. The consumption of one’s own alcoholic beverages inflight goes against Air Malta policy.

Smoking is prohibited from when you leave the departure terminal building until you reach the arrival terminal building. Smoking is allowed in designated areas only. Smoking is not allowed during any phase of the flight and in any area of the aircraft. Should you be aware of a passenger who has smoked in the toilet during the flight, please inform the cabin crew immediately so that they can check for any undetected fires. The use of electronic cigarettes (e-cigarettes) is not allowed on board Air Malta flights. Similarly, the use of naked flames on and around the aircraft is also prohibited.

FACE MASKS The Airline requires all passengers to wear an approved medical or cloth face mask at all times, starting from boarding, for the duration of the flight, through to disembarkation. Passengers will not be allowed to board without a facemask. Masks should also be worn within the airport building, before and during check-in, upon arrival, when collecting baggage, and up to the point that a passenger leaves the airport building. As per the Government of Malta Legal Notice 402 of 2020, children under three (3) years of age and persons with severe cognitive, physical, mental, or respiratory impairments who have difficulties tolerating a mask as certified by a licensed medical practitioner are exempted from wearing masks. Certified individuals shall always carry the relevant medical certificate exempting them from wearing a mask. Passengers risk fines if they fail to comply.

NON-TRANSMITTING PORTABLE ELECTRONIC DEVICES (PEDS)

Devices that can send or receive data by wireless means, such as mobile-phones and tablets, may be used during all phases of the flight provided their transmit/receive capabilities such as GSM & Wi-fi are switched off. Devices working on Bluetooth wireless connectivity are allowed. If the device has ‘Flight Mode’ capability, this must be enabled. Such devices shall be safely secured in the customers’ hand (handheld) or a pocket during taxi, take-off and landing. Larger devices (e.g. laptops) shall be switched off and stowed away safely during taxi, takeoff and landing. Accessories, such as headphones, must not obstruct access to the aisle. If the data transmission capability cannot be switched off (whilst the device is operating), the device itself must be switched off for the duration of the flight.

These could include, but are not limited to, items such as DVD players, electronic games, music players and personal cameras. Such devices shall be safely secured in the customers’ hand (handheld) or a pocket during taxi, take-off and landing. Larger devices shall be stowed away safely during taxi, take-off and landing.

LAPTOPS AND NOTEBOOKS Such devices may be used during boarding and during flight but not during taxi, take-off and landing. Any built-in data connectivity such as Bluetooth or Wi-Fi must be disabled. These devices must be stowed away safely during taxi, take-off and landing since they could hinder an emergency evacuation.

ARE THERE TIMES WHEN I CANNOT USE MY ELECTRONIC DEVICES?

CAN I USE HEADPHONES? Personal headphones can be used during all phases of the flight. However, we ask you to remove your headphones during the safety briefing. For safety reasons, customers sitting in an emergency exit row must refrain from using headphones during taxi, take-off and landing.

Under certain circumstances, your Flight Crew or Cabin Crew may ask you to switch off all Personal Electronic Devices. This may happen during automatic landings, low visibility takeoff or landing, or during emergency situations.

I SHOULD INFORM THE CABIN CREW WHEN … Your portable electronic device is damaged, becomes hot, produces smoke, is lost, or falls into the seat structure. If safe to do so, the device must be switched off immediately.
