Dear travellers

The month of June was another record month for Air Malta as we carried close to 146,000 passengers, registering an average Seat Load Factor of 93% and 14 out of 17 routes operating above the 90% mark.

It's August, the most sweltering time of the year here on the Maltese islands! Although most of Europe this year has experienced sky-high temperatures, this summer so far has certainly been hot, hot, hot, so ensure you stay safe, keep topped up on sun cream and avoid the sun's strongest hours! Of course, being an island country also means there are endless places to cool down and take a dip in our crystal-clear waters, and of course, if you're anything like me, you'll want to stay refreshed in a lido or beach club! Malta has plenty of these to offer, as well as restaurants, cafes, kiosks and more - if you are not sure where to head, you can read about a few great offerings on our restaurant listing pages.

Italy was the most travelled route followed by the UK, France and Germany, whilst the busiest individual airport was London Heathrow followed by Munich and Rome Fiumicino. During the second quarter of this year (April-June), coinciding with the start of our summer 2022 schedule, we carried over 410,000 passengers across 17 destinations. This positive performance was achieved despite the post-COVID challenges across many European airports. Airport capacity restrictions, staffing issues amongst some ground handlers and airports are severely affecting the recovery of the European aviation market, causing frustrations and challenges to customers and airlines alike.

I must admit the August issue is always one of my favourites, and this month we have a stellar line-up of top features for you. First, go ahead and find out what ŻfinMalta offers this season, and if dance isn't your thing, check our event listings for further inspiration! See you at the wine festival?

The requirement to cancel flights or reduce seat capacity at Amsterdam Schiphol during the month of July has been enforced on all airlines by the Netherlands slot coordinator. To reduce passenger inconvenience and disruptions as much as possible, Air Malta opted to operate six flights to Rotterdam Airport instead. Rotterdam Airport is the closest airport to Amsterdam's Schiphol Airport. Air Malta believes that it is better to operate in one format or another opposed to just cancelling services and leaving valued customers and families stranded with no alternative travel plans. London Heathrow has also started to enforce capacity restrictions which required Air Malta to reschedule its KM102/103 services on two dates during the month of July.

Unlike many other airlines we have so far not cancelled any of our flights on any of the routes that we operate. This satisfactory performance in our operational performance is solely attributed to the dedication, commitment and flexibility being shown by our people across the company in Malta but also at our outstation in London Heathrow. As we continue to work with various airports to minimise disruptions in the travel plans of our customers, it is likely that the capacity challenges will continue during this month across some airports.

The harbour mouth faces northeast and is bounded to the north by St Elmo's point and further sheltered by an isolated breakwater, which was built when Malta was under British rule. In earlier times, the wide entrance was simply protected by a heavy chain which ran across the mouth of the harbour from Fort Saint Elmo to Fort Ricasoli, which served to keep enemy ships out of harbour. However, by the turn of the twentieth century, better protection was deemed necessary by the British Admiralty – not only from intruders and torpedo attacks, but also from the rough seas which could cause havoc within the harbour, especially when a strong north-easterly wind (Grigalata) was blowing. The harbour’s northwest shore is formed by the Scebarras peninsula, which is largely covered by the city of Valletta and its suburb Floriana. This peninsula also divides Grand Harbour from a second parallel natural harbour, Marsamxett Harbour. The main waterway of Grand Harbour continues inland almost to Marsa. The south-eastern shore of the harbour is formed by a number of inlets and headlands, principally Rinella Creek, Kalkara Creek, Dockyard Creek and French Creek, which are covered by Kalkara and the Three Cities. The cities around Grand Harbour came about precisely because of it. In a

way they are appendages to it. The building of such a grand and expensive city as Valletta could only be justified and sustained because of the economic and military potential of this harbour. If you choose to take a bird's eye view from the Upper Barrakka, go to the other extreme and get up close and personal. Take the glass lift down to the jetty and catch a ferry across to Birgu or one of the leisurely boat rides on offer. While in Birgu, stroll around the waterfront where the view of the harbour and Valletta changes with almost every step. Make sure you reach Senglea, where your visit would be incomplete if you didn’t take in the breath-taking views across the Grand Harbour towards Valletta. The best place to appreciate these views is from the stunning ‘Il-Gardjola’ watchtower on the side of the bastions at Safe Haven Gardens. You may not know, however, that this watchtower is also watching the harbour with you – it has intricately decorated eyes carved into it, which are believed to keep misfortune or evil spirits at bay. For an alternative to walking, go for a two-harbour cruise from the Sliema jetty in Marsamxett Harbour, on the opposite side of the Valletta Peninsula, to see both harbours. From here you’ll witness massive fortifications, stately palaces and magnificent marinas, on which the Knights of St John erected impressive edifices as an ostentatious manifestation of their artistic and aesthetic refinement, their military might as well as their opulence. So, there are many ways to admire the harbour for all its glory. Also keep your eyes open for special events such as the National Regatta, the International Fireworks Festival or the Jazz Festival to experience history, tradition and the contemporary all at once. If you're not around for any of these events, worry not, as the Grand Harbour itself is no less impressive and will amaze you whenever you visit and from whatever angle you view it!

SIX TOP SIGHTS

UPPER BARRAKKA GARDENS If you’re looking for the most impressive views the Maltese Islands have to offer, this place should be on the top of your list! The public gardens provide an unhindered, panoramic view of the world-famous harbour, with the three cities; Birgu, Senglea and Cospicua as a backdrop. The gardens are located on the upper tier of St Peter & Paul Bastion, which was built in the 1560s.

THE GARDJOLA Visit a beautiful garden situated in the northern tip of Senglea. It was planned in 1551. You can get a beautiful panoramic view of Valletta, Marsa, the Grand Harbour and Fort St Angelo from here. The guard tower called “Il-Gardjola” is located within the garden and has various symbols engraved on it. You might find this popular landmark in many tourist brochures in Malta.

FORT ST ELMO

MANOEL ISLAND

At the tip of Valletta’s peninsula sits the magnificent Fort St Elmo. It stands on the seaward shore of the Sciberras Peninsula that divides Marsamxett Harbour from The Grand Harbour and commands the entrances to both harbours along with Fort Tigné and Fort Ricasoli. It is best known for its role in the Great Siege of Malta of 1565.

Built in the early part of the 18th century by the Knights Hospitaller, the fort on Manoel Island is a World Heritage Site with lots of history. The British military took over the fort in 1800, and used it until 1964, including during the Second World War. Having been badly damaged, it's being gradually restored to its former glory. After crossing the stone bridge, you'll pass the island's marina and yacht yard on the way to the fort.

BRIDGE TO BIRGU

Home to the Tigné Fort which is currently undergoing renovation and a rocky beach, this peninsula in Sliema offers a majestic view of Valletta especially at dusk. It has experienced extensive redevelopment work and the opening of the largest shopping mall in Malta called “The Point” - perfect for all those lastminute souvenirs.

Birgu is the neighbouring city to Senglea and one of the three cities. You can take a shortcut to Birgu from Senglea by crossing the bridge. You can find this bridge not far from the border of the two cities.

The curator and volunteer team at Palazzo Falson have kept with the Gargallo family and I recently had the pleasure of visiting the Gargallo del Carmine palace in Ortygia, Syracuse, and Palazzo Beneventano del Bosco the seat of Barone Pietro Beneventano, who in his teens assisted Pier Nicola Gargallo in his expeditions. Deep sea diving is now an established sport in Malta with several diving schools and has become an important tourist activity. It has also developed academically within the Department of Classics and Archaeology at the University of Malta which also offers several programmes including one leading to a Master of Arts in Global Maritime Archaeology. Professor Timmy Gambin heads an ongoing exciting programme of deep UW Archaeology utilising many scientific modalities with many notable finds including a nearly intact Phoenician wreckage, again off Xlendi bay, at a depth of 110 meters. This was featured in a special exhibition at the Gozo Ċittadella. Olof Gollcher’s dream of exploring Malta’s underwater heritage has been fully realised with dramatic results.

This recipe combines the bold, moist and tender taste of duck with the earthly bean stew and sweet parsnips to tentalise your taste buds.

PAN SEARED DUCK BREAST WITH SPICED BEAN CASSOULET AND CARAMELISED PARSNIPS INGREDIENTS 1 duck breast

2 sprigs of fresh thyme

200g cooked red or pinto beans

A pinch of sweet paprika

200g onion, finely chopped

1/2 orange zest

80g chorizo sausage

1 parsnip, peeled and cut lengthwise in wedges

80g tomato sauce

50g butter

50ml extra virgin olive oil

A pinch of ground cumin

300ml vegetable stock

A pinch of sugar

1 clove garlic, finely chopped

Salt and pepper

2 bay leaves

80ml prepared demi-glace/gravy

METHOD In a casserole dish heat the oil and start by sweating the onions and garlic until translucent. Add the Chorizo, paprika, fresh thyme and seasoning and continue cooking for 5 minutes. Add drained beans, tomato sauce, stock and orange zest. Cook on a gentle heat until sauce reduces to desired consistency. With a very sharp knife start by scoring the duck breast fat in a cross-hatch pattern making sure not to reach the flesh. Season the duck with salt heavily on the fat side and just lightly on the flesh side. Start by cooking the breast fat side down in a cold pan. No oil is needed as the fat from the breast will be enough. You need low to moderate heat (depending on your stove) to render the fat to a crispy stage without overcooking the breast meat. Listen to the oil sizzling ... you should hear a continuous gurgling ... too low and you will have excess raw fat... too high and you will get dry overcooked meat. When you get a nice carmelised colour on the fat it’s time to turn up the heat and flip the breast to the meat side. Cook for another 2 minutes or until internal temperature reaches 54ºC for medium-rare or 60ºC for medium. Rest the breast for around 10 minutes on a drip tray lightly covered to keep warm. Finally in a skillet heat the butter and add the parsnip wedges. Season and cook until parsnips start to brown lightly. Add sugar and cumin and continue cooking until parsnips are tender and the sauce is a syrupy consistency. Plate by starting with the bean cassoulet, followed by the carved duck breast, caramelised parsnips and finally your prepared sauce. 75

IL-BIZZILLA TALKS TO C AROLINE Z AMMIT CREW PL ANNING AND PRE-OPS EXECUTIVE HOW LONG HAVE YOU BEEN WORKING WITH AIR MALTA AND IN WHAT ROLES? I started working for Air Malta in 2000, 22 years ago, as a Cargo Agent. My duties were varied making my job really interesting. After some years working there I was offered a job in the administration section as a resource planner. My role was to take care of the vacation leave, sick leave, staff complements and issuance of rosters. The things I learnt and the experience gained during those years spent at the cargo rostering section were invaluable. I started off issuing rosters within the Cargo operations department, then I moved on to implement a new rostering system for the Ground Handling Department. Now I am working within Flight Operations responsible to issue a monthly roster for 190 cabin crew to operate the current flight schedule. WHAT IS THE BIGGEST CHALLENGE OF YOUR JOB? When you work as a resource planner you come into contact with so many colleagues having their own exigency throughout that planned period which you need to take into consideration. When planning a roster one needs to make sure that the roster is efficient and cost-effective but at the same time you cannot forget the human element. Balancing these elements is what makes the job interesting and at the same time challenging. IS THERE A PARTICULAR EVENT OR MOMENT DURING YOUR CAREER WITH AIR MALTA WHICH YOU ARE PROUD OR FOND OF AND WOULD LIKE TO SHARE WITH OUR READERS? Looking back, I would have to say the launch of EasyRoster, a project which I was entrusted with from start to finish. It was quite an intense project as it was being overseen by various stakeholders. Each stakeholder requested different procedures which were then translated into processes in order to automatically generate a logic to then issue an efficient roster covering all the ground handling departments. WHAT DO YOU LIKE TO DO IN YOUR SPARE TIME? Having two active kids does not leave much spare time. I try to entertain my kids with outdoor activities as much as possible, which gives me a chance to enjoy nature and experience various sports with them. WHAT IS YOUR PREFERRED MALTESE DISH? This is quite tricky as I am a food lover but having to choose one dish, I would go for balbuljata, a popular Maltese breakfast made with eggs and tomatoes. It is my mum’s signature dish and she usually serves it with fresh Maltese bread and fries. WHICH IS YOUR FAVOURITE MOVIE OF ALL TIMES? Thanks to my son I am a Jurassic Park fan. I am thrilled that the last Jurassic Park movie currently showing in cinemas across the world was partially shot in Malta. WHAT KIND OF MUSIC YOU LIKE TO FOLLOW? I love pop music mostly. WHICH IS YOUR FAVOURITE DESTINATION AND WHY? I have two favourite destinations. Since I love Italian food and culture I love to visit Sicily. I like the scenery there. Sicily is only around 45 minutes away by air from Malta. I also love London since it is so diverse and there are so many things to do like going to watch a musical and great shopping! WHAT ARE YOUR FAVOURITE SPOTS AND TIPS FOR ANYONE VISITING THE MALTESE ISLANDS? I suggest exploring the northern part of the island, places like Popeye’s village, Mellieħa bay, It-Torri l-Aħmar, Riviera and Il-Majjistral Nature and History Park. These spots are beautiful especially at sunset.

Alcohol consumed at high altitude can have a stronger effect than usual. Cabin crew are legally empowered to refuse to serve any alcohol to an intoxicated passenger and anyone under the age of 18. In extreme cases, crew may also temporarily confiscate the passenger‘s own drinks so that the passenger does not become a nuisance to the other passengers and crew. Furthermore, Air Malta is bound by international regulations which prohibit the embarkation or the carriage of drunken passengers. However, since you are reading this article, Air Malta‘s Flight Safety Committee is confident that you are a law-abiding and exemplary passenger. Indeed, the cabin crew may need your assistance to restrain another passenger in the unlikely event that he or she may act irresponsibly during the flight. The consumption of one’s own alcoholic beverages inflight goes against Air Malta policy.

Smoking is prohibited from when you leave the departure terminal building until you reach the arrival terminal building. Smoking is allowed in designated areas only. Smoking is not allowed during any phase of the flight and in any area of the aircraft. Should you be aware of a passenger who has smoked in the toilet during the flight, please inform the cabin crew immediately so that they can check for any undetected fires. The use of electronic cigarettes (e-cigarettes) is not allowed on board Air Malta flights. Similarly, the use of naked flames on and around the aircraft is also prohibited.

FACE MASKS The Airline requires all passengers to follow the necessary regulations pertaining to the wearing of approved medical or cloth face masks, starting from boarding, for the duration of the flight, through to disembarkation. You might also be required to wear a mask within the airport building, before and during check-in, upon arrival, when collecting baggage, and up to the point that a passenger leaves the airport building. As per the Government of Malta Legal Notice 402 of 2020, children under three (3) years of age and persons with severe cognitive, physical, mental, or respiratory impairments who have difficulties tolerating a mask as certified by a licensed medical practitioner are exempted from wearing masks. Certified individuals shall always carry the relevant medical certificate exempting them from wearing a mask. Passengers risk fines if they fail to comply.

Devices that can send or receive data by wireless means, such as mobile-phones and tablets, may be used during all phases of the flight provided their transmit/receive capabilities such as GSM & Wi-fi are switched off. Devices working on Bluetooth wireless connectivity are allowed. If the device has ‘Flight Mode’ capability, this must be enabled. Such devices shall be safely secured in the customers’ hand (handheld) or a pocket during taxi, take-off and landing. Larger devices (e.g. laptops) shall be switched off and stowed away safely during taxi, takeoff and landing. Accessories, such as headphones, must not obstruct access to the aisle. If the data transmission capability cannot be switched off (whilst the device is operating), the device itself must be switched off for the duration of the flight.

These could include, but are not limited to, items such as DVD players, electronic games, music players and personal cameras. Such devices shall be safely secured in the customers’ hand (handheld) or a pocket during taxi, take-off and landing. Larger devices shall be stowed away safely during taxi, take-off and landing.
