FROM THE CHAIRPERSON...
The first month of winter normally experiences a lull in travel before the busy Christmas period in December. However, this year, we are seeing a very different picture and we are very pleased to see the Air Malta network continue its trend of operating at greater than 90% full across its total operation. This now constitutes six consecutive months of such performance. Growth in our premium cabin performance has been particularly encouraging, and it is very pleasing to see the number of online social media comments and pictures which recognize our exceptional premium cabin meal offering. Our in-house Chef, Joe Vella (formerly Executive Chef at Hilton Malta), has succeeded in delivering a menu offering and presentation style strongly linked to our proud Maltese heritage and culture. In addition, our recently amended range of premium cabin pricing has contributed, with strong growth of our 30/60-day advance purchase fares. These offer great value for those customers who are able to plan and commit to their journey plans in advance.
Safety, as always, remains and will continue to remain Air Malta’s number one priority. This important focus should never be taken for granted and with that in mind, on the 8th of November, Air Malta participated in a full-scale emergency response rehearsal in conjunction with Malta International Airport and all necessary support services. Such exercises serve an extremely valuable purpose in ensuring our processes and procedures are regularly reviewed, updated and immediately accessible as part of a co-ordinated response readiness plan.
As we approach the year end, on behalf of both Air Malta and myself personall y, I would like to thank all our valued customers for choosing to travel on Air Malta during 2022. Dear travellers,
They say it’s the most wonderful time of the year, and although I am often known as somewhat of a grinch with all things Yuletide, I have to admit, the festive season on the Maltese islands is absolutely one of my favourites.
This time of the year seems to unburden us from reason and indulge our every whim: mince pies for breakfast, prosecco on standby, and so many opportunities to just eat, and eat...and eat. With that last part, we can certainly help with a sumptuous panettone recipe from Vini e Caprici by Abraham’s in our ‘Food for thought’ section, as well as plenty of top restaurant suggestions. You’ll also find a stellar interview with top food blogger Elsa Messa, the unstoppable force behind What’s Cooking Malta, and how she’s raising thousands for charity through fine dining.
This issue is also a poignant one for me, as it is my last. Over the past five years of being at the helm of this fantastic publication, I have had the pleasure of getting to know the islands well and the rich tapestry of people and places that make it such a unique place. Bizzilla has been a big part of my life, and I am very grateful for the sheer warmth and kindness I received throughout these years. I cannot go without saying a huge thank you indeed. Now, as 2023 approaches, I shall leave you in the capable hands of Monique Chambers.

CHRISTMAS IN MALTA IS ONE OF THE MOST POPULAR EVENTS OF THE YEAR AND OFFERS A JOYOUS, FUN AND LIVELY ATMOSPHERE. THE COUNTRY DOESN’T SHY AWAY FROM THE ARGUMENT OF ‘CAN CHRISTMAS CELEBRATIONS START TOO EARLY?’ WITH MANY STREETS, HOUSES AND SHOPS UNVEILING THEIR CHRISTMAS DECORATIONS FROM EARLY NOVEMBER.
So, that means the islands are in full swing for the festive season for visitors, all through the month of December.
Downtown Valletta is where the Christmas spirit is at its most energetic and the capital’s festive lights are already wowing tourists. Every year the display seems to get bigger and better. And this year is no exception!
Republic Street, Merchants Street and Republic Square take on new hues as part of a month-long programme of activities. South Street, now synonymous with artistic installations all-year round also offers up a surprise or two.
Join with family and friends, take photos, and preserve those memories while enjoying the Christmas trees near Parliament and along the city’s main streets. A traditional Christmas crib can also be found next to St John’s co-Cathedral entrance. Moreover, St George’s Square is home to a magical atmosphere with projections on the façade of the historic Grandmaster’s Palace, built by the Order of St John.
Don’t miss out on the opportunity to visit Antoine Farrugia’s sculpture exhibition ‘It’s all paperwork’ which portrays a
transformation of the Maltese Globigerina Limestone into what can be perceived as ‘almost paper’.
Christmas in the Capital this year, also includes a wide range of music ranging from classical, folk and choral music, performing arts, children’s workshops and stilt walkers.
On the run up to the big day, award winning duo, The New Victorians, will perform seasonal religious songs and contemporary non-sacred music, including original compositions in a cosy atmosphere, in Strait Street.
Keep your eyes peeled too, for pop up events such as dancers in Christmas attire, marching bands and much more.
For the younger ones, head to the Valletta Design Cluster for a shadow puppet-making session and live mini show.
If you haven’t finished your Christmas shopping, worry not, the shops stay open late seven days a week to accommodate the increased festive demand. The beautifully lit Republic Street and the neighbouring Merchants Street and St Lucia Street are pedestrianised, so there is no traffic to stop you from soaking up

the festive atmosphere as you shop till you drop – interspersed with some traditional tipples such a glass or two of mulled wine from any one of the numerous bars.
Malta's beautiful Christmas markets can also help solve any holiday present selection dilemma.
Head to Fairyland, a large Christmas market at the entrance of Valletta (Just like our front cover!) Shop for some unique Christmas gifts at dozens of stalls, offering a range of arts and crafts, as well as excellent mulled wine and foods from different countries. Make sure to try Maltese holiday specialties: honey rings or Qagħaq talGħasel and hot cocoa drink Qastan tal-imbuljuta
As an alternative, Bisazza Street in Sliema is a shopping Mecca with many jewellery and vintage stores and over one weekend, the Christmas market takes over, with dozens of stalls, offering organic wines, Christmas gifts and decorations.
Just outside the city walls, Valletta Waterfront is another area which turns into a Christmas wonderland. The Christmas Village offers kids' activities, like puppet shows, face-painting, balloon art, music, and inflatables. The enchanted Snow Garden and a 35-foot (10m) Christmas tree are other highlights. Kids can have their photos taken with Santa and elves, while adults enjoy some quiet time in waterfront restaurants.
After rushing around you’ll need refuelling so head back to Valletta to finish off the day with some adult fun, kicking off your bar hopping in Strait Street, where the hip’n’happening crowd hangs out (and remember, the New Victorians are performing). If geekdom is more your thin g, head out to Archbishop Street for a pint where actor Oliver Reed enjoyed his last drink before passing on to a better life. Or maybe you prefer the alternative scene, head to downtown Republic Street.
Presepji (cribs) are everywhere from private houses to small chapels to roundabouts, some humble and plain, others lavishly decorated. Touring the various cribs is a popular pastime. The attention to detail is astounding, with moving figures and meticulous work by many dedicated craftsmen.
Finally try and make time for a visit to the wonderful Manoel Theatre renowned for its politically insensitive annual Christmas pantomime (oh no it’s not. Oh yes it is!) while a visit to the privately owned Malta Toy Museum, featuring dolls, soldiers, train sets, and clockwork tin trinkets dating as far back as the 1790s, is a heartwarming homage to childhood.

UPPER BARRAKKA GARDENS
If you’re looking for the most impressive views the Islands have to offer, this place should be on the top of your list! The public gardens provide an unhindered, panoramic view of the world-famous harbour, with the three cities; Birgu, Senglea and Cospicua as a backdrop. The gardens are located on the upper tier of St Peter & Paul Bastion, which was built in the 1560s.

TEATRU MANOEL
Why not catch a show while you’re in town? The Manoel Theatre is a renowned theatre and famous performing arts venue in Malta. The stunning theatre is often referred to as merely “The Manoel”. It is named after Grand Master of the Order of the Knights Hospitaller, Fra António Manoel de Vilhena, who ordered its construction in 1731.
ST JOHN’S CO-CATHEDRAL
Built between 1572 and 1577, this cathedral contains two masterpieces by Caravaggio. St John’s Co-Cathedral is a gem of Baroque art and architecture. It was built as the conventual church for the Knights of St John. This church is till this very day, an important shrine and a sacred place of worship. It is also a venue for many cultural events.
STRAIT STREET
Strait Street, or Strada Stretta, also affectionately termed ‘The Gut’ owing to its reputation as the former red-light district of Valletta, was once the place where sailors who were docked in the harbour went for a good time throughout the late 19th until the mid-20th century. Nowadays, after extensive regeneration, the area is filled with bars and restaurants.
TRITON FOUNTAIN
After a considerable restoration project, the Triton Fountain at Valletta’s entrance is a sight you cannot miss. The fountain consists of three bronze Tritons holding up a large basin, balanced on a concentric base built out of concrete and clad in travertine slabs.
The fountain is one of Malta’s most famous Modernist landmarks, catch it as dusk begins to fall, and you’ll see it beautifully illuminated.
FORT ST ELMO
At the tip of Valletta’s peninsula sits the magnificent Fort St Elmo. It stands on the seaward shore of the Sciberras Peninsula that divides Marsamxett Harbour from The Grand Harbour and commands the entrances to both harbours along with Fort Tigné and Fort Ricasoli. It is best known for its role in the Great Siege of Malta of 1565.

TRAVELLING TO THE CHRISTMAS MARKETS
Air Malta runs regular flights to (Zaventem) Brussels Airport and from there one has several transport options that will take you to the heart of the festive fun in central Brussels, Bruges or Ghent.
There are bus and train stations at the airport which will connect you with the centre of Brussels or take you on to Bruges and Ghent.
Journey times to Bruges can vary from 59 minutes to 1 hour 34 minutes by train, or approximately 2 hours by bus. Or you can arrive in Ghent in less than 2 hours by train. If you are taking a break in Brussels you’ll soon be in the heart of the festivities. There are regular bus and train services from the airport 7 days a week which take less than 20 minutes, with trains arriving at Brussels Central Station.
GHENT: THE CHRISTMAS CITY
All the family can enjoy the magic and wonder of the Christmas Market in Ghent. Located in the historic centre, and running through December, this traditional market is the place to soak up the festive atmosphere, and enjoy over 150 traditional festive stalls. Whether you’re looking for mulled wine and Belgian waffles, or beautifully handcrafted keepsakes to take home you will find them along the streets of Sint-Baafsplein, Botermarkt, and Klein Turkije.
Stay a while and soak up the atmosphere and decorations while you shop, but don’t forget the other festive treats available in this Winter wonderland. A Ferris wheel, Christmas lights, and a large roller-skating rink are among the attractions on offer for 2022. For a truly immersive experience, add a trip to ‘The Castle of the Counts’, a centuries-old city icon that embraces the Christmas season. From 10th December 2022 to January 8th 2023, the castle is magically lit and decorated. There is festive music, a winter bar, and a stand-up comedian, along with outstanding city views from the top of the castle keep.
FAIRY TALE CHRISTMAS MAGIC IN BRUGES
Widely dubbed one of the prettiest medieval cities in Europe, Bruges has an almost fairy-tale atmosphere during the Christmas season. Not only that but there are two Christmas markets to choose from, each with its own character and cosy winter charm. These markets are both centrally located at Mrkt (Market Square) and Simon Stevinplein (Simon Stevin Square), and between them, you can expect a mix of local crafts, handmade gifts, and tasty Belgian Waffles.
The markets are part of a wider ‘Winter Glow Festival’ a celebration of all things Christmas, which also includes the Vorst Winter Bar, an ice rink, and a light trail which includes lasers, lights, and

projections on venues such as the BMCC Convention Centre, and the historic ruin of the Old Water House. Exploring all the decorated areas, sipping on some Glühwein, and taking in all the festival activities could be the perfect way to start your festive celebrations.
CHRISTMAS IN THE CAPITAL: BRUSSELS
The Belgian Capital comes alive with the sights and sounds of Winter Wonders, their city-wide Christmas celebration from December until January 1st 2023. One of the centrepieces of this event is the traditional Christmas market, with over 200 chalets serving up all kinds of Christmas gifts and decorations. Find some great gifts and stocking fillers in and around the Grand Place area of the city.
All the family will enjoy a city break to the Belgian Capital at Christmas, as the Winter Wonders event also includes a beautiful Christmas tree, fairground rides, a sound and light show, and Winter Pop – a multilocation festival of art, craft, music, and street entertainment.

Stop at a town or village square and spend a cozy and warm evening at a bar or enjoy a meal in a restaurant.
VILLA RUNDLE CHRISTMAS MARKET
Gozo’s Villa Rundle gardens are all decorated with twinkling lights and sparkling magic that have turned this popular site into a Christmas wonderland. A special Christmas market is also organised here where you will be able to find traditional arts, crafts, and typical foods.
Maket is open on 2, 3, 4, 8, 9, 10, 11, 13, 16, 17 and 18 December.
SANTA’S WORKSHOP
Organised at Ta’ Dbieġi Crafts Village in Għarb, this workshop gives visitors the chance to watch local artisans at work, take part in craft-making activities, and buy genuine gifts. There will also be Santa and other characters and a host of fun activities organised for all the family.

The annual Christmas Parade will start from the lower part of Victoria’s Republic Street and make its way up to Independence Square. A CHILDREN’S WORLD
For many of us, Christmas is about seeing the smiles on our children's faces - and this is what Dinja tat-Tfal (A Children’s World) is all about! On the 18th of December, from 10am till 5pm, the Villa Rundle Gardens will be hosting an entire day of events for children of all ages. Activities will include unlimited rides, face painting, arts, crafts, games, cartoon characters and much, much more. This event is a must if you’re travelling to Gozo with children.
A SYMPHONY OF MUSICAL CONCERTS
There are more than 25 concerts being organised for this year’s Christmas in Gozo programme of events with the highlight being Schola Cantorum Jubilate’s ‘O Magnum Mysterium’ that will be held at Ta’ Pinu National Shrine on the 29th December at 7.30pm. Bethlehem f’Għajnsielem is Gozo’s live anima ted Bethlehem village. The attraction is a must-do yearly event for many. Visitors enjoy stepp ing back in history, witnessing the life, customs and traditions from the time when Christ was born. This unique naturalistic village fuses traditional Maltese customs with that of the nativity story, hence its name which means Bethlehem in Għajnsielem.
Every December over 20,000 sqm of rural land at Ta’ Passi fields are transformed into this expansive, village, featuring a real inn, a bakery, a carpenter’s workshop, a working farm, and a river. Not forgetting of course, the main focus – the live nativity crib where visitors observe Mary and Joseph inside the stable tending to baby Jesus.
Families visiting the village can pet many of the different animals and interact with the Bethlehem inhabitants as they go about their daily chores. You’ll see a horse turning the water mills, chickens and goats roaming around farm fields. A baker busily kneading Maltese bread, a carpenter carving wood using traditional tools while his wife prepares their family meal, a blacksmith working in his forge. It is an impressive and absorbing experience giving you a glimpse into life from 2,000 years ago.
Visitors can buy traditional Maltese foods at the local market and sail along the manmade river using a wooden boat operated via a pulley system! All the actors who play Bethlehem villagers (there are over 150 in total), improvise their roles and
interact with the public, who will often ask them questions.
Creating a grand scale historic village on what is essentially farmland, involves a huge community effort with many months of hard work. Local NGO’s and volunteers unite to maintain buildings, cast and rehearse the live actors, doing whatever is necessary to ensure Bethlehem will be back in business for their December 13th opening!
Bethlehem f’Għajnsielem also features re-enactments of the ‘trip’ from Nazareth to Bethlehem of Joseph and Mary, as well as the Adoration of the Magi on the Epiphany (which occurs on the first Sunday after New Year’s day), when the three Wise Men make their journey from Malta to the nativity village.

ANTONIO MIFSUD
BORN IN ĦAMRUN, ARTIST AND SCULPTOR ANTONIO MIFSUD IS HIGHLY ACCLAIMED FOR HIS ALTO RILIEVO (HIGH RELIEF) SACRED MASTERPIECES AND CONTEMPORARY PAINTINGS OF MALTESE LANDSCAPES. OVER THE YEARS, HE HAS WORKED TOWARDS CARVING HIS FINGERPRINT ON THE LOCAL ART SCENE, WHILST DEPICTING HIS THOUGHTS AND DREAMS ON CANVAS.
Although he doesn’t come from a family of artists, Antonio found himself immersed in the wonderful world of art from a very young age. He first got a taste of it when Professor Ġorġ Mallia took him under his wing back at the Archbishop's Seminary Secondary School. Fast forward a couple of years, Antonio and his family moved from Ħamrun to Santa Luċija. This sudden change initially shocked him; however, he came to realise that everything happens for a reason. Soon enough, he started attending private lessons under the direction of renowned sculptor, Chev. Alfred Camilleri Cauchi O.R.C.B.
Antonio recalls some vivid memories about this time in his life. The artist not only gained invaluable knowledge about sculpture, restoration and painting but also discovered his love for the sacred art genre. Initially, he wasn’t sure if he wanted to focus on sculpture or painting; but instead of making him choose one, Chev. Alfred Camilleri Cauchi O.R.C.B. asked Antonio if he would consider doing both. And as the saying goes, the rest is history.
However, given that art as a career is still a struggle to this day, Antonio had struck a fair compromise with his parents and agreed to continue his education (by becoming a nurse by profession), whilst keeping art at the forefront. Together, both professions have their purpose in the artist’s life. Antonio explains how as a nurse, he witnesses different complex emotions on a day-to-day basis; the joy of families welcoming a new baby to the world but also their sorrow when it’s time to say goodbye to a loved one. He believes that art gives us hope when we need it most and tha t is why it is so sacred.
Antonio discusses how he started his artistic journey from scratch. “If art isn’t reinvented, you end up sticking to what you know,” Antonio says. He is particularly inspired by literature, music, and film, as well as time and nostalgia; “Our lives are like an hourglass. Whilst each sole granule is insignificant, combined, they make up our life.” Adding to this, Antonio explains how in turn, time inspires us all to ask and read more and broaden our minds to even more knowledge.

ART
Before working on new pieces, Antonio explains how he takes his time to fully understand what he wants to create. His creative process involves hours of planning, reading, taking notes, and assessing which locations could be a good fit for any upcoming exhibitions. “It’s all part of the vision…all this is essential to create a symphony of art,” Antonio says.
When it comes to sculpture, Antonio experiments with clay, terracotta, limestone marble, bronze, fibreglass, and papier mâché.
As for paintings, he sticks to oil. However, Antonio points out that, although every medium used has its purpose, it can coexist with another. “No technique disturbs the other...there is a certain harmony in the way the clay is modelled and the composition of the painting,” Antonio says.
On his contemporary landscapes, Antonio discusses how different hues are used according to the seasons. Moreover, he insists that there is more to Malta than just the sun and sea: “There are even more Mediterranean roots to unearth,” Antonio says. Given its strategic position on the map, Antonio feels that Malta lets us interconnect with other cultures. In turn, we absorb everything and put our own twist on things.
Some of Antonio’s masterpieces include the Via Crucis; found at Mater Dei Chapel, the Crocifisso Risorto; featured at the Archbishop’s Seminary Secondary School, the MUMN monument found in San Anton Gardens, Attard, Nativita; which was awarded second place in sculpture in an international exhibition and was eventually displayed at the EU Parliament Brussels, as well as the Annunciation; the main altarpiece at the Lunziata Chapel in Rabat.
Adding to this, he also held five exhibitions across the Maltese Islands, namely, Anima, Sacred Spaces, Sacro, Autumn Hues, and Il-Kapitili t’Alla (God’s Book of Verses).
Whilst Antonio’s portfolio of works is indeed impressive, he believes that “Art isn’t just about exhibitions—it is sacred and it’s a way of living. It’s about having the palette as your mirror, remembering, authenticity, feeling the textures, discovery, smelling the clay and growing up...that's art.”
Throughout the years, Antonio has also crossed paths with many people who encouraged him to keep carving and perfecting his craft. In particular, Antonio recalls fellow sculptor and artist, Ġużeppi Theuma telling him: “I would like to see what else you can create with this style you’ve taken up. Never sell your soul.” These words had struck Antonio and are still relevant to him nowadays. He details how unfortunate it is that some people solely like the more traditional baroque paintings when it comes to sacred art. Nevertheless, Antonio is not discouraged; he believes that if the status quo is challenged there will be a breakthrough in innovation in art.
Antonio doesn’t have many regrets in life, other than the fact that he wishes he studied art full-time. In the future, he hopes to continue creating and developing himself as an artist, whilst dedicating himself fully to art.

THE SMALL, QUAINT VILLAGE OF QRENDI BOASTS OF A WEALTH OF BREATHTAKING SCENERY, A TREASURE TROVE OF HISTORY, A RICH RELIGIOUS CULTURAL HERITAGE, NUMEROUS LEGENDS, AND A PEACEFUL RURAL ENVIRONMENT.
The locality includes places such as the mysterious sinkhole known as ‘il-Maqluba’, the spectacular fishing hamlet of Wied Iż-Żurrieq, the scenic Blue Grotto, and also the famous Neolithic temples of Mnajdra and Ħaġar Qim. But equally fascinating is the old village core, which has changed very little despite more recent developments on the village outskirts, and it is here that one can find some of Qrendi’s most interesting landmarks.
SANTA KATERINA WINDMILL
One of these is the old Santa Katerina windmill. Although windmills already existed in Malta before the arrival of the Knights of St John in 1530, the Order would go on to drastically increase their numbers, and soon, every town or village in Malta and Gozo had at least one, with this one in Qrendi being built in 1686.
Like other windmills of the period, it had ample space for storing grain and flour, the mechanism, as well as living quarters for the
miller’s family. On the façade is a niche dedicated to St Catherine, no doubt influenced by the nearby historic chapel with the same dedication. Although windmills went out of use in Malta by the early 20th century, there are still numerous surviving examples, albeit minus their sails and with their distinctive shape as the only reminder of their past lives.
IL-ĠNIEN TAL-KMAND
Another interesting feature in Qrendi is the so-called ‘Ġnien tal-Kmand ’, one of a number of similar gardens built in the early 1800s in various localities throughout Malta for use by the local temporary Lieutant or Mayor. The idea of Sir Alexander Ball, a Civil Commissioner of Malta, they increased the greenery of the islands and served as experimental agricultural centres.
The one in Qrendi is known to have had a variety of fruit and citrus trees, many of which survive today, including apricot,

peach and prickly pear trees, as well as almonds, apples, pears and pomegranates amongst others. Today it serves as a venue for weddings and other functions, but is also open to the public.
OCTAGONAL TOWER
One of the most peculiar buildings in Qrendi is the Octagonal Tower, which, from its architectural features, is believed to date to medieval times, perhaps the only one of its kind in Malta. Its octagonal shape certainly makes it unique, although towers in general were once relatively common as a defence against the constant threat of pirate attacks in previous centuries.
Qrendi was particularly prone to such raids due to its seaside location, and this tower would have been constructed by a wealthy local family to protect itself during such eventualities. Today, it is a privately owned residence.
THE PARISH CHURCH
There are seven churches and chapels in Qrendi, with the most important being undoubtedly the St Mary’s parish church in the village centre. Built on the site of a number of older churches, the present structure was completed in 1712, having been financed by the local parishioners.
Designed by the Maltese architect Lorenzo Gafa’, it contains works by some of the most distinguished local artists, including the
renowned Giuseppe Calì, who was responsible for the altarpiece, while the ceiling and dome, damaged during the war, have since been redecorated with episodes from the life o f the Virgin Mary.
OUR LADY OF MERCY CHURCH
Another interesting chapel is that dedicated to Our Lady of Mercy. First recorded during the 13th century, the present chapel was rebuilt in 1668. Once highly venerated as a sanctuary and place of pilgrimage, the chapel is still decorated by a large number of ex-voto paintings, commissioned by individuals to thank the Virgin Mary for delivering them from some kind of tragedy or serious illness.
The continuous flow of pilgrims to this church led to the digging of a well on the parvis to help them quench their thirst, and the addition of a portico to protect from inclement weather. Bailiff Johann Wolfgang von Guttenberg, of the Order of St John, was a major benefactor, donating various paintings to the church located just across the street from his private residence.

RE ADERS WERE GETTING TO KNOW WHO I AM, BUT I WAS CONVINCED THAT I WAS CAPABLE OF WRITING MORE THAN JUST SCI-FI NOVELS,” KIRSTEN SPITERI, SAYS AS HE DISCUSSES BECOMING A PUBLISHED AUTHOR, THE MALTESE LITERARY SCENE, AND MORE.
“I would like to tell aspiring authors that if they really believe they have a talent, to keep persisting until they manage to get published.”
With just four novels out in the world, Spiteri may be relatively new to the publishing world, but he knows a thing or two about persisting. From writing his first article on the extinction of dinosaurs aged 12 to now searching for a home for his latest finished manuscript, he has learned a lot, including about the challenges of writing in his native language. “I’m currently writing in Maltese because it’s my native tongue, and because I hope, in my own small way, I can contribute to the body of Maltese literature. It’s more challenging to write in Maltese than in English, because when writing in English, even a simple Google search can help a lot.”
From plot lines to characterisation, and all that comes in between, there’s a lot of work that has gone into every page of these novels, and getting them published. If you are an aspiring author in Malta, then in Spiteri’s view, the literary scene is perhaps not all it could be.
“The way I see it, we have three established publishers and a small number of micro publishers, which clearly shows the small size of
the market." However much truth there is in these observations they haven’t stopped Spiteri from pursuing opportunities that have come his way. The Maltese-born author’s debut in 2016 is award-winning, picking up the young adult category of the London Book Festival in 2017.
For an author to be recognised in the UK for his debut novel is an achievement to be proud of, although opportunities closer to home are somewhat limited. He would like to see more literary competitions and awards to push promising talent but does say there's still plenty of life in the Maltese literary scene.
“There’s the Malta Book Festival, held yearly in November, by the National Book Council, which is the most-awaited book celebration on the island. They also organise the Campus Book Festival at the University of Malta. There's also the Malta Mediterranean Literature Festival run by a voluntary cultural organisation called INIZJAMED.”
Despite these festivals, the National Book Prize, and various small book fairs Kirsten still feels that “It’s a fact that most Maltese people aren’t

big readers.” It’s also true that a love of reading and writing does not always happen at the same time, something which this author agrees with.
“To be honest, I wasn’t always a voracious reader. I preferred watching movies, and football matches. Then, something happened in my mid-twenties, something which I never understood, but I started reading a lot, buying books, and going to libraries.” A love of reading may have come later on, but Spiteri now has no problem building up a reading pile. On his list at the moment is a 1965 children’s novel called Belle and Sebastien by Cécile Aubry, a guide to Anime by Colin Odell and Michelle Le Blanc and a Sci-Fi/Fantasy delight by Jostein Gaarder.

It wasn't always like this, of course. Right up till the start of the noughties, the climate was considerably different, and it took a small number of individuals to be the trailblazing heroes, paving the way for what would ultimately become an island that welcomes diversity.
One of these individuals was Katya Saunders. One of Malta’s first openly trans women, Katya knew who she was at an incredibly young age, and she never shied away from being herself. Her passing on January 27, 2019 left a huge void within the Maltese gay community, and every single media house in Malta paid tribute to her contribution towards making the island a more inclusive place.
Which is why MGRM, an NGO that works towards achieving full equality for LGBTQI+ people, this month are launching an official biography of this unique woman’s life, titled Katya: Easy on the Tonic. The publication is complemented with an exhibition at Spazju Kreattiv in Valletta, cataloguing her life through photography, installations and film.
So, what makes this woman special enough for her life to be celebrated at Malta’s national culture hub? She was by no means the only trans woman of her times, yet it is her that the community still speaks of with love, admiration and a touch of incredulity. She modelled internationally at a time when trans women were barely accepted in mainstream society. She got photographed with the likes of fashion designer Karl Lagerfeld on Vogue. She was friends with David Bowie and Mick Jagger and received VIP treatment at London’s hippest clubs.
But she was also kind to those who needed her, especially those who were still struggling to come to terms with their gender identity. She took in young men who were kicked out by their families, supported them and helped them find their feet in a society that was still very cruel to them. This subtle form of activism is what would earn her the respect of not only the gay community, but also of advocates for human-rights and inclusion in general.
MGRM’s Joe Grima explains how he first became acquainted with Katya’s story soon after her passing, when a close friend of hers got in touch asking whether the NGO was interested in archiving any of her belongings.
“We could easily organise storage for a few boxes, I thought. I was to find out later that there was a garage-full of boxes. As we brought in movers, the friend opened up about his memories of Katya. He spoke less about the m odelling and the glam, and more about the dear friend he had lost, and the people she had welcomed in her apartment and helped build a stable life. As an LGBT activist, this piqued my interest,” Joe explains, adding that if all the stories he heard about her were true, he knew that these needed to be formally documented. MGRM secured a grant through the Voluntary Organisations Project Scheme, and by early spring the call for an author, curators and an exhibition space was on.
“I was able to meet the amazing Ramona Depares who would become the researcher and author of Katya's biography, and
also my partner-in-crime. Charlie Cauchi and Romeo Roxman Gatt also embarked on an artistic journey towards curating the exhibition. We are extremely lucky to have secured one of Spazju Kreattiv's exhibition halls for the exhibition, as it’s fitting that Katya’s story should be shared via the national culture hub.”
And just like that, Katya Saunders would take over Joe and Ramona’s lives, as together they met relatives, friends, designers, world-renowned photographers and everything in between. Ramona explains how, with every interview, she uncovered a different facet of this woman who lived such a public, yet mysterious, life.
“This book is very different to my previous publications, I like to think of it as part-journalism and part-detective work. It’s a weird feeling, investigating the most intimate details of someone’s life.
“I will never forget the feeling of triumph when I managed to track down the photographer who shot the famed ‘Bianca Jagger’ photos quite a few decades ago. It was quite thrilling to have this super-famous photographer, based in Miami, agree to give us full permission to print these fabulous shots,” Ramona says.
This spirit of cooperation, she says, has been a constant throughout her research. People have been happy to share incredibly personal stories, to waive copyright and be generally helpful.
“It just goes to show how well-loved she was. And there is a sense of wanting to make this project happen, because Katya was a hero for every member of the LGBTQ community and everyone acknowledges the impact she left on the scene.”
Charlie Cauchi and Romeo Roxman Gatt, who are curating the exhibition, say that they wanted it to reflect all these elements of her personality and her larger-than-life spirit. Rather than simply presenting archival material or displaying her clothes on mannequins, they decided to reimagine her life story through their artistic practice.
“The exhibition will also feature archival images, and key garments that are part of her collection will also be displayed. But we’re also incorporating sound, video work and built structures to add more layers to the show. We’ve had people donate some fantastic items for the exhibition, as well as some footage of Katya hosting the opening of Rock Café in 1992, thanks to Magna Zmien. So, apart from being terrific documentation of Katya i n her element,it’s also a great snapshot of Maltese nightlife,” they conclude.
A limited number of books will be available against an optional donation on www.katya.mt. The exhibition and the book launch on Friday, 16 December at Spazju Kreattiv, and the exhibition runs until 22 January 2023. This project has been funded through the Voluntary Organisations Project Scheme, managed by the Malta Council for the Voluntary Sector.

IL-PRESEPJU
The traditional presepju (the crib) is regarded as a centrepiece in most Maltese homes. Interestingly, its roots date back to the Knights of St John, when the exquisite and artistic Neopolitan cribs used to be brought over to Malta. However, due to the extreme poverty that the country was facing in the 17th century, some Maltese families couldn’t afford to buy them. Eventually, times changed and cribs became a staple decoration in parish churches, chapels and almost every Maltese home.
The true craftsmanship of Maltese cribs has to be seen to be believed. The most common one; il-presepju tal-familja (the family crib) is made from materials such as rustic stones known as gagazza, wood, chicken wire, and papier-mâché. Whilst some families tuck away their cribs in particular areas of their homes, others display them in their windows for passersby to enjoy.
And what a sight indeed; adorned with miniature figurines known as pasturi, the much-loved nativity scene is brought to life so beautifully. Baby Jesus, Mary, and Joseph as well as the donkey
and the cow, are stationed in their own little grotto, the Three Wise Men and their camels are seen coming from afar to bear gifts to Baby Jesus, the shepherds are herding the sheep, and the angels are often placed on top of the Holy Family’s grotto alongside the Star of Bethlehem.
Besides the principal characters, other notable pasturi tend to make an appearance in Maltese crib. Some of these include the famous L-Għaġeb tal-Presepju; a villager who is depicted with an expression of awe as he stares at the sight of Baby Jesus, ir-Rieqed; a character who is lost in deep slumber, tal-Fanal; another villager who is seen holding a lantern in his hands, and ix-Xabbatur; often stationed close to the grotto because he is known to be the character who wants to get a closer look of the newborn King. Other figures include bakers, milkmen, and fruit vendors positioned next to their stalls, along with musicians, folk singers and many other characters who make the Maltese presepju all the more special.
To add that extra unique touch to their Maltese cribs, some families prepare what is known as ġ ulbiena (vetches). As per tradition, canary seeds, wheat or grain are planted in small pots

lined with cotton woo l on the 7th of December. During the lead-up to Christmas, these are then watered every two days as they grow in the dark.
Whilst the popular family crib is indeed something special to have in every home, you also have the opportunity to visit multiple crib exhibitions that are held across the Maltese Islands. From life-size presepji, mechanical ones and even others that come to life such as the famous Bethlehem f’Għajnsielem in Gozo, there is truly something for everybody.
THE BABY JESUS PROCESSION
Another tradition that takes place on Christmas Eve is the procession of Baby Jesus. Organised by towns and villages that have M.U.S.E.U.M society in their neighbourhoods, the origins of this procession date back to the year 1921 when San Ġorġ Preca first held the very first one in Ħamrun.
Throughout this demonstration, children carry the statue of Baby Jesus in his manger along the quiet streets, whilst singing popular Christmas
songs in Maltese such as Ninni La Tibkix Iżjed, O Ġesu Ħelwa Tarbija, and Ninu Ninu tal-Milied. Once the procession makes all the stops, it makes its way to the parish church to finish off the evening with more hymns, prayers and even short Christmas plays. This ceremony usually ends with a raffle wherein traditional cribs, small statues of Baby Jesus and other prizes are up for grabs. All the children and their families are also given a traditional qagħqa tal-għasel (honey ring).
THE MIDNIGHT MASS
Undoubtedly, il-Priedka tal-Milied (The Christmas Sermon) is one of the reasons why the midnight mass is such a highly anticipated tradition in Malta. Il-Priedka tat-Tifel (as it was known back then) knows its roots in the 19th century when a young Ġorġ Sapiano first recounted it in 1883. Every year, a boy or a girl (or multiple children) is chosen to deliver the sermon that they would have spent weeks learning by heart before Christmas Eve. Once they finish it, the priest awards the children for their efforts with a small gift. Needless to say, it remains a tradition that is loved by many.

LYNDSEY GRIMA TALKS WITH MARK CASSAR, A LOCAL PHOTOGRAPHER KNOWN FOR HIS INTRICATE LIGHT PIECES THAT AIM TO ACCENTUATE MALTA’S BEAUTY.
Local photographer, Mark Cassar has been taking photos for as long as he can remember, well before digital cameras. Finding it difficult to express himself with words, he felt the need to find another outlet to capture his emotions. That is when Mark fell in love with photography.
“At around the age of 18 years old, I had this passion for cars, and I used to go to Ħal Far Raceway and take photos of cars and races. One time, I left my camera at home and, I remember that I got so upset, that I went home. That’s when I realised that my passion was actually photography and not the cars themselves. That day hit me quite hard, and I started looking for other subjects to shoot.”
Having been doing photography for approximately 20 years, Mark today focuses on weddings and movie stills. Feeling incredibly grateful for the opportunities that he’s been given, Mark explains how he takes photos of every single moment
that goes on behind making a movie, from scenes of the movie, behind-the-scenes to the movie posters you see on DVD boxes and outside cinemas.
However, Mark is also known for his light paintings, especially his recent re-creation of Gozo’s iconic Azure Window. Collapsing into the sea due to a horrible storm in 2017, it left a gaping hole in Gozo’s magnificent landscape which gave Mark an opportunity to reconstruct it out of light and thin air.
“You are basically creating light,” explains Mark. “Darkness is your canvas. It all depends on how long the shutter is open and a hundred other things, which makes it interesting because it’s so challenging and you’re constantly learning from it. It never gets boring, so it is something that really keeps me hooked.”
Mark gets started with an idea and a concept. From there, he chooses and scouts for the
location, as well as, the right time of day, lens, angle, frame, and specific lights to use.
“Imagine you’re painting on a canvas; you have a paintbrush that is simulating light and you decide to paint and brighten up an area. That is exactly what I do but with an actual flashlight attached to a drone or in my hands. It’s quite simple to understand if you’re seeing it happen but it might be quite difficult to explain in words. You’re literally painting light on darkness”.
The Azure Window is one of his most recent light paintings. However, Mark is also known for lighting up the entire White Rocks complex. Always on the hunt for abandoned villages around the island, Mark came across White Rocks in Pembroke and he decided to light it up using only an €11 camping headlight and stacking 480 long exposure images.

that it was a painting that was on his mind for a long time – almost as soon as its downfall. Putting it together and bringing it to life, last October, Mark’s sense of achievement was through the roof.
“I consider myself lucky that I can draw in the sky. It’s a lot of hard work but you can recreate anything - the sky is the limit. My mind is constantly thinkin g of the next thing I could do – it doesn’t give me a break!”
Mark considers himself one of the luckiest people in the world to be living on this island.
“I always want to say ‘look how beautiful Malta is.” I’m extremely grateful to be living in Malta; I think it’s a treasure and I keep exploring and seeing new places at different times of the day, so I view them differently. I also want to inspire others with my light paintings and show them the beauty that we can create. I’m not hiding anything here. I also like teaching other photographers how it’s done. The desire to teach is a big motivator for me.”
Mark is influenced by everything and anything. “I get inspiration from movies, the music that I’m listening to, social media, and so many other things. I look out for seeds; if someone plants a seed or an
idea in my head, I will definitely try and find a way to incorporate it in my future work.”
The beauty of photography is that it is seasonal, says Mark. “There are seasons within seasons too. There’s a wedding season, a movie season, a landscape season, and so on. So, when you’re just about to get bored of the wedding season, for example, it’s time for something else. What motivates me is that around the corner, I’m going to be focusing on something different.”
Will we be seeing more light paintings in the future?
“I do have a list of ideas on my phone, this gets updated almost daily! I would like to light up St Paul’s Islands completely in the near future and that is quite a task. I would also like to light up under the sea with a radio-controlled boat. Learning new things along the way; producing something amazing is cool but I just want to learn. If I went on a night shoot and didn’t manage to produce what I had in mind on my first try, I will probably learn something new and try again the next day.”

Marquis Nicholas de Piro is the founder of the beautiful Casa Rocca Piccola House Museum in Valletta. He has opened his home to the public to share the many decades of shrewd art collecting. He was years ahead in recognising and appreciating various decorative
art forms and unfashionable pieces of art well before others jumped onto the bandwagon. He was instrumental in the revival of the art of il-bizzilla - lacemaking - by creating a competition for contemporary makers while collecting the very finest pieces of Maltese lace and historic costume to survive.
Timmy Gambin is a maritime archaeologist and an associate professor at the Department of Classics and Archaeology at the University of Malta. His interest is specifically in wrecks that lie deep below Maltese waters - whether they are ancient or date to World War II. He has directed several underwater surveys not only in Maltese waters but also in Spain, Italy, Croatia and other parts of the Mediterranean but his passion remains the World War II period and he has indulged it by discovering and exploring wrecks of submarines, ships and aircraft from this time period.

But perhaps his most exciting project to date is the excavation of the Phoenician shipwreck off Xlendi, Gozo which is currently considered the oldest shipwreck in the Central Mediterranean and for which, together with his team, he has pioneered new methodologies for excavating a wreck at a depth of over 100 meters, which is likely a world record.
Matty Cremona is an accomplished cook and food history writer. She has written four books and numerous articles about the history of food and the context of dining in Malta. Her knowledge of Malta’s food history, honed through years of research both in the archives and in her kitchen, has revealed new information and translated these old writings into modern-day doable recipes. The interest in food, what it means and how we prepared and ate it in the past, is universal. But Matty Cremona takes this interest to a new dimension. Her excitement at her subject enthuses all who listen to her. For those of us lucky enough to have actually tasted the food she prepares based on recipes she has discovered in the archives, the experience is exceptional. For those who cannot partake of her dishes, Matty’s books gently guide us on forays into the past while advising us how to recreate these recipes with ingredients easily at hand.
Anna Borg Cardona is a musician and music researcher whose eyes fire up with incredible excitement whenever she talks about the discoveries she keeps making in our many rich historic archives here in Malta. Through the decades she has discovered musicians and musical instrument makers from the past, she has uncovered and played long forgotten sheet music, and pieced together much of Malta’s rich ethnographic music history. She has lectured extensively at the University and delivered many public presentations, she has formed a musical ensemble to promote Malta’s musical heritage both locally and in performances overseas, and has published books on Maltese music history that have become landmark studies in the discipline. She has also curated exhibitions on musical instruments and has also published a myriad of articles, papers and studies that continue to build on our previously sketchy knowledge of the musical legacy of Malta.

OH YES, IT IS! THE CHRISTMAS PANTOMIME IS BACK – AND IT HAS BROUGHT CHOCOLATE. LAURA BONNICI FINDS OUT HOW MALTA’S FIRST POST-PANDEMIC PANTO, THE ROALD DAHL-INSPIRED ĊIKKU AND THE CHOCOLATE PANTO, WILL BE BIGGER, BETTER AND SWEETER THAN EVER.
Ladies and gentlemen, boys and girls, please take your seats, for the return of one of Malta’s – if not the world’s – favourite festive traditions: the Christmas pantomime.
Opening on December 23 at Teatru Manoel in Valletta, Ċikku and the Chocolate Panto will mark the eagerly awaited comeback of this much-loved Christmas must, after a three-year hiatus due to the COVID-19 pandemic. And with a show inspired by one of the greatest storytellers of all time, produced by leading local theatre company Masquerade Malta, and featuring a cast of the finest performance talent, Ċikku and the Chocolate Panto will bring panto back with a bang.
“Here we go again! Excitement is high, not just among the cast and crew but among audiences too for the return of panto, after three
long years for everyone,” says Masquerade’s artistic director and director of Ċikku and the Chocolate Panto, Anthony Bezzina. “Plus, after our highly acclaimed production of Matilda the Musical earlier this year, it's fantastic to be rehearsing another vibrant homage to the master of children's storytelling, Roald Dahl.”
Written by panto stalwart Malcolm Galea, Ċikku and the Chocolate Panto takes Dahl’s classic tale and adds a generous sprinkle of panto twists. Ċikku (pronounced ‘Chickoo’) is a penniless young man who lives with his mother, Dame Desserta, in a giant bajtra or prickly pear. His fortunes change when he finds a coveted golden ticket to visit Willy Wonder's famous Chocolate Panto, along with a group of other winners. Unfortunately, everything is not quite as splendiferous as it seems. Ċikku discovers that the show's protagonist, the glamorous Diva Divine, is a frightsome witch who

wants to destroy all the children in the audience! Will Ċikku and his new friends succeed in exposing Diva for the horrible person that she is and turn her own magic against her?
Led by Galea as the deliciously flamboyant Dame Desserta herself, Ċikku's stellar cast also includes other top panto performers Joseph Zammit, Katherine Brown and Marco Calleja, as well as some new faces. “Malcolm Galea and Masquerade go back a long way and always work well together. It is handy that the Dame is also the playwright, since we can add satirical references to events as they happen in the outside w orld, keeping the show fresh and funny right through the run,” highlights Bezzina. “Likewise, we have great chemistry with the rest of the cast. The audition process for Ċikku was rigorous, so it is especially exciting for the young actors who are taking part for the first time. Energy is high!”
Serving as a backdrop to this talent is an equally impressive crew, including musical director Kris Spiteri, choreographer Valerie Burke and vocal coach Tina Frendo. Meanwhile, Romualdo Moretti and Simona Mamo will ensure that two other panto essentials – set design and costume – will make Ċikku and the Chocolate Panto truly a night to remember for the whole family.
“Panto staging should be awe-inspiring, colourful and unique – and it is becoming more technical. Projections are the future, which also help us simulate aspects such as naked flames,” he reveals. “While panto costumes are traditionally elaborate, in Malta we take it a
step further, making the costumes an experience unto themselves. The Dame changes outfit – wigs, accessories, everything – every time she appears on stage. And of course, the show’s overall design has a distinctly chocolatey flavour, with a few tricks up our sleeves.”
Between the staging and the cast, the story and the history, Ċikku and the Chocolate Panto will celebrate the wonder of panto this Christmas once more at Teatru Manoel. “Every audience is different, reacting to different moments in the show,” shares Bezzina with a smile. “To be a part of that, among family and friends, is an experience. For many, panto makes Christmas, and we have all missed that togetherness and joy that panto brings. It is the ideal three hours of entertainment for the young and young at heart, in Malta’s magical capital city, inside one of the oldest and most beautiful working theatres in Europe. GAIA GAMBUZZA IS A 13-YEAR OLD GIRL FROM MOSTA, MALTA. AT THE AGE OF 4 SHE STARTED ATTENDING AN INTERNATIONAL PERFORMING ARTS SCHOOL LOCALLY. THE TUTORS IMMEDIATELY POINTED OUT TO HER PARENTS THAT SHE SHOULD TAKE SINGING FURTHER. AT THE AGE OF 5 SHE JOINED A VOCAL ACADEMY AND STARTED TAKING PROFESSIONAL SINGING SESSIONS ON AN INDIVIDUAL BASIS.
Gaia loves musicals and she is not only a great performer, but very comfortable on stage. During many singing competitions, professional judges have pointed out that she should take musical theatre sessions as she literally owns the stage! Following their advice, she also started attending classes on regular basis, completing several musical cover versions from Mary Poppins to Oliver Twist and to Evita to mention a few.
During the past ten years she achieved various successes during singing competitions both locally and even abroad. She achieved 10 “Gran Prix” , various ‘’Overall Winner’’ titles, Best Performer, Best Voice, Best Interpretation, co untless 1st placing and many more accolades. She attends piano lessons and enjoys her daily practice on this instrument.
Gaia has a dual citizenship – Maltese and Italian - and for the past four years has been attending an Italian Music Academy in Rome for masterclasses and calls for auditions with Italian producers. In January of 2020, she was chosen out of 240 Italian singers to perform as a soloist during a musical ‘La notte tra le stelle’.
During the Covid 19 period she did not stop her desire to continue with her learning and practice. She participated in many online competitions and achieved amazing results. In October 2021 Gaia
had an amazing opportunity where she went to Cologno Monzese, at the studios of Mediaset and participated on an Italian TV show called ‘IBAND’. This was then aired on La5 and Mediaset Infinity.
In April 2022, she was also one of the finalists of San Remo Junior Malta where she gave an impeccable performance of the cover ‘Proud Mary’. Her biggest dream was to represent her country Malta in the ‘’Junior Eurovision’’. She is proud to say that because of her determination, hard work, persistence, sacrifices and passion, combined with enthusiasm for what she loves to do, she was able to achieve her goal.
This month, Gaia is going to represent Malta in Armenia with her original song ‘’Diamonds in the Skies’’ written and composed by Matthew James Borg. Her future ambitions besides continuing to improve her knowledge and acquire more singing experience, is to become a speech and language pathologist.
Gaia’s amazing voice, attitude on stage, natural smile, flexibility, charisma and even beauty to top it all, will surely make this diamond a future star. Keep on chasing your dreams girl!

YOU ARE A WELL-KNOWN FOOD WRITER AND CRITIC. WHAT LED YOU TO FOLLOW THIS CAREER PATH?
It was after university. I studied Law and Criminology, although it was a subject I was interested in, I knew I would never pursue this career. My passion has always been for food, and I also love writing. However, I started with a few internships with the best restaurant PR companies in Lon don with very big clients, from Nobu to Gordon Ramsay and Restaurant Story, to the Caprice Holdings Restaurant Group.
I learnt a lot during this period. I spent a lot of time calling journalists, pitching news stories, writing press releases, and hosting and helping to organise events. I, however, wanted to be on the other side of the fence.
TELL US A BIT ABOUT YOUR BLOGGING EXPERIENCE.
I started with a blog, just my ramblings and reviews of my dining experiences in London (I ate out a lot). I never knew how popular it would become. This was around 13 years ago when real food blogging had just started. The blog was called Messi Palate.
I then launched a food-oriented lifestyle guide called The London Sinner. Mostly on openings and news. I had a team and am very
happy to say it was award-winning, and I made quite a name for myself in the London restaurant scene.
WHERE DID YOU GET THIS LOVE FOR FOOD FROM?
Well, I have to thank my parents for that. I grew up in a household that was exceptionally passionate (and still is) about food. My mother can cook anything from authentic traditional Cantonese dishes dim sum, Indian, West African, Caribbean, Classical French and Thai.
I also grew up in Central London, and we ate out quite a lot. So, I consider myself deeply rooted in London's buzzing food scene, personally or professionally.
As I mentioned, I have always had a successful blog or food platform, and instead of always writing for someone else, I wanted to start something different here in Malta. A completely independent guide to show what is opening, restaurant news and more. I do all the research myself, and I am proud to say my Facebook page has grown organically. I may not have the most considerable following (6k to date), but the site used to have 20k a month of unique hits, though it has been dormant since March. I am currently relaunching it with a total makeover.

Adventurous for some is normal for others, but by western standards, I am going to go with crickets, fish eye maki, scorpion, fugu (poisonous blowfish) and chicken sashimi (it is the freshest of chickens, and restaurants in Japan must have years of training and be licenced to prepare it).

I live for organising foodie events, and I want to start bringing things locally that I feel Malta has yet to experience. I am all about women's rights and women supporting other women, and fighting the patriarchy. It all came togeth er in my most recent event last month.
I am a member of the Women for Women Facebook group, and I come across many heartbreaking stories, so I thought, let's use my platform and contacts to help the foundation. I organised this
particular event in under three weeks. Five top chefs, including Cliff Borg from Rosami at The Villa, Terence Saliba from Grotto Tavern, Charles Pintonino, Ritianne Bondin from Harlequin and Tom Peters from Gracy’s Brasserie whipped a 10-course culinary feast.
I can't believe how well it was received. We were a full house, and I raised over €2,000. But, of course, I could not have done this without all the sponsors such and volunteers who were exceptionally generous with their services and time.
WHAT WOULD BE YOUR DREAM DESTINATION FOR FOOD?
It would be Mexico (I can't believe I haven't been yet!). For fine dining and street, the Sichuan region in China, Northern India, and Denmark for out-of-this-world fine dining. I think it is the country with the most listings in the World's Top 50 Best.

1kg Brera Milano Panettone Artigianale Classico (which you can find at Vini e Capricci and on www.viniecapricci.com) 100g sugar 4 whole eggs 500ml milk 500ml full fat cream
METHOD
Preheat the oven to 180°C. Slice the panettone. Lay the slices in a low baking tin. Whisk together the whole eggs, milk, full fat cream and sugar in a large mixing bowl. Combine thoroughly. Pour the egg mixture over the slices of panettone. Repeat a couple more times until all the mixture is used and all panettone slices are soaked in the mixture. Bake in the oven for 30 minutes. When finished, sprinkle over with icing sugar.

As Air Malta’s Summer 22 schedule ended on the 31st of October, the airline has achieved unprecedented levels of seat occupancy as for five consecutive months between June and October it operated at a +90% network wide seat factor, carrying 1,100,000 passengers from and to the Maltese Islands.
David Curmi, Executive Chairman, stated “throughout summer we lived to our purpose of providing regular and stable connectivity at all times. We stood by our belief that it is better to give our customers confidence that they will travel as opposed to enforced flight cancellations leaving customers stranded with no alternative travel options available. Despite the challenges faced at certain of our key airports, we were one of the airlines that cancelled the lowest number of flights keeping delays and disruption to the barest minimum although this was not always within our control.”
David Curmi added, “we will continue with our strategy to fly to key European cities and major European airports and cargo hubs and to attach to the bigger airlines through our 13 codeshare and 61 interline agreements. We value our strong partnership with a range of very significant network airlines across a range of alliances that contribute to around 15% of our passengers. We are also looking forward to the bigger long haul network airlines regrowing their schedules as this will provide more long-haul connecting customers over our key European hub airports.”
Roy Kinnear, Chief Commercial Officer, stated “For 2023 and 2024 we have plans to grow our network further and increase our flying time. Whilst existing routes will be retained, we are considering adding five new destinations provided we can get suitable airport slots. This will mean that we will increase our weekly flights by over 20% to 155 flights.”

HOW LONG HAVE YOU WORKED AT AIR MALTA AND IN WHAT ROLES?
I joined Air Malta 28 years ago in 1994. I am currently occupying the role of Emergency Response Manager and during my exciting career within the company I have been involved in various departments including Finance, Commercial, and Marketing.
WHAT DO YOU ENJOY MOST ABOUT YOUR CURRENT ROLE?
Primarily, in my role as Emergency Response Manager, I am responsible for engaging all those involved and keeping everyone readily prepared in the eventuality of an emergency and any other challenges faced by the aviation industry. A great example was the recent Covid pandemic which we had to deal with as a company to contain the adverse effects on the operation of our airline.
AND WHAT’S THE MOST CHALLENGING ASPECT?
The most challenging aspect of my role is to be prepared as best we can for the eventuality of an emergency which can hit us anytime. Aviation is a sensitive industry, which requires careful and meticulous planned operations, because any direct or indirect disruption could have significant negative effects on the airline.
WHAT DO YOU LIKE TO DO IN YOUR SPARE TIME?
I love nature, the outdoors, and my daily walk, which gives me peace and time to gain my energy back from the hectic life I lead. I also like shopping and following fashion as I use it as personal therapy.
WHICH IS YOUR FAVOURITE COUNTRY TO HAVE VISITED AND WHY? Bali without a doubt. It’s truly a natural beauty with its stunning views, temples, lakes, and waterfalls. A fascinating tropical island where you are able to indulge into a totally different world.

Alcohol consumed at high altitude can have a stronger effect than usual. Cabin crew are legally empowered to refuse to serve any alcohol to an intoxicated passenger and anyone under the age of 18. In extreme cases, crew may also temporarily confiscate the passenger‘s own drinks so that the passenger does not become a nuisance to the other passengers and crew. Furthermore, Air Malta is bound by international regulations which prohibit the embarkation or the carriage of drunken passengers. However, since you are reading this article, Air Malta‘s Flight Safety Committee is confident that you are a law-abiding and exemplary passenger. Indeed, the cabin crew may need your assistance to restrain another passenger in the unlikely event that he or she may act irresponsibly during the flight. The consumption of one’s own alcoholic beverages inflight goes against Air Malta policy.
SMOKING
Smoking is prohibited from when you leave the departure terminal building until you reach the arrival terminal building. Smoking is allowed in designated areas only. Smoking is not allowed during any phase of the flight and in any area of the aircraft. Should you be aware of a passenger who has smoked in the toilet during the flight, please inform the cabin crew immediately so that they can check for any undetected fires. The use of electronic cigarettes (e-cigarettes) is not allowed on board Air Malta flights. Similarly, the use of naked flames on and around the aircraft is also prohibited.
FACE MASKS
The Airline requires all passengers to follow the necessary regulations pertaining to the wearing of approved medical or cloth face masks, starting from boarding, for the duration of the flight, through to disembarkation. You might also be required to wear a mask within the airport building, before and during check-in, upon arrival, when collecting baggage, and up to the point that a passenger leaves the airport building. As per the Government of Malta Legal Notice 402 of 2020, children under three (3) years of age and persons with severe cognitive, physical, mental, or respiratory impairments who have difficulties tolerating a mask as certified by a licensed medical practitioner are exempted from wearing masks. Certified individuals shall always carry the relevant medical certificate exempting them from wearing a mask. Passengers risk fines if they fail to comply.

USE OF PORTABLE ELECTRONIC DEVICES ON BOARD
TRANSMITTING PORTABLE ELECTRONIC DEVICES (PEDS)
Devices that can send or receive data by wireless means, such as mobile-phones and tablets, may be used during all phases of the flight provided their transmit/receive capabilities such as GSM & Wi-fi are switched off. Devices working on Bluetooth wireless connectivity are allowed. If the device has ‘Flight Mode’ capability, this must be enabled. Such devices shall be safely secured in the customers’ hand (handheld) or a pocket during taxi, take-off and landing. Larger devices (e.g. laptops) shall be switched off and stowed away safely during taxi, takeoff and landing. Accessories, such as headphones, must not obstruct access to the aisle. If the data transmission capability cannot be switched off (whilst the device is operating), the device itself must be switched off for the duration of the flight.
NON-TRANSMITTING PORTABLE ELECTRONIC DEVICES (PEDS)
These could include, but are not limited to, items such as DVD players, electronic games, music players and personal cameras. ARE THERE TIMES WHEN I CANNOT USE MY ELECTRONIC DEVICES?
Under certain circumstances, your Flight Crew or Cabin Crew may ask you to switch off all Personal Electronic Devices. This may happen during automatic landings, low visibility takeoff or landing, or during emergency situations.
I SHOULD INFORM THE CABIN CREW WHEN …
Your portable electronic device is damaged, becomes hot, produces smoke, is lost, or falls into the seat structure. If safe to do so, the device must be switched off immediately.
LAPTOPS AND NOTEBOOKS
Such devices may be used during boarding and during flight but not during taxi, take-off and landing. Any built-in data connectivity such as Bluetooth or Wi-Fi must be disabled. These devices must be stowed away safely during taxi, take-off and landing since they could hinder an emergency evacuation
CAN I USE HEADPHONES?
Personal headphones can be used during all phases of the flight. However, we ask you to remove your headphones during the safety briefing. For safety reasons, customers sitting in an emergency exit row must refrain from using headphones during taxi, take-off and landing.
