When March comes around I always question where the year so far has gone. Weren’t we just celebrating New Year’s Eve? No, is the always the answer. Time and the year marches on. So then to March and the onset of spring. This is the month where we put the throes of winter behind us. Somewhat ironically then we will explore the locations of Game of Thrones on the island as our destination as the world gears up for the final series. It should never be forgotten that Malta was where it all began so it is a welcome farewell to the series by exploring these now infamous scenes and landscapes. Elsewhere in the magazine we explore the theme of the sea. As Malta is surrounded by the Mediterranean on all sides, the sea has a very deep relationship with the Maltese psyche and its culture. We go off the beaten track in the seaside town of Marsascala and explore the fishing industry here from a very human perspective, not to mention, our recipe this month is a Maltese-inspired Fish and Chips by chef Sean Gravina.

This newfound past – a newfound beginning – emerges somewhat naturally in the simple, “primitive” aesthetic of his work, which he developed in the late ‘40s, and continued to reinforce and experiment on during his years in Malta. Ironically, it was the past that Pasmore wanted to explore with the modern language he was developing. He did not seek to represent nature or its effects, nor did he seek to abstract it: “If people want to think they look like stars, that’s perfectly OK, but not for me. I have no interest in representing any external object. My ideas come in the form of line, or tone, or colour, or form.” This “language” was considered rather radical, especially in the British mid-20th- century artistic circles Pasmore was active in; in Malta, it was anything but the norm. Figurative work was still very much in high demand, and work like the one Pasmore produced was indiscriminately categorised under the loosely-defined term “abstraction.” “I think abstract is a very bad word for the kind of work I do,” protests Pasmore, “but I suppose it’s the only we’ve got. I prefer to call them independent paintings.” Indeed, very much like the sea – the embodiment of uncontrolled, unrestricted, and independent Nature. “And as when the land appears welcome to men who are swimming,” as Homer puts it in The Odyssey, so too would be the sight of the sea to those whose feet have grown weary of beating the same earth, the conventional path that leads to nowhere. Walking along the cliffs, with his eyes desirously scanning the unrestrained surface of the sea and Homeric images inevitably pouring into his mind, Victor Pasmore thus takes his place among his fellow artists – contemporary and not – who each, in their own way, faced and attempted to overcome their own artistic cul-de-sac, at least within their lifetime.

Here is Charlotte’s recount… “It took me seven countries to find the one I call home. Originally from France, I was moving around Northern Europe for my work as a curator and as a cultural manager. Mother of two young children, tired of watching them I was stuck inside the house because of the constant bad weather, and exhausted by the city pace, I was
determined to make a drastic change. I opened the map of Europe in search of a sunny English-speaking country. I came to Malta to scout around and immediately fell in love with Gozo. It took me by surprise! At first, maybe it seemed a little small and restricting, but I can now say that moving here was one of the best decisions of my life. I came for the weather and stayed for the people and their land. This is such an inspiring island, with ample possibilities for creative people. Businesses are easy to start up, and there are plenty of new concepts to develop and a choice of funds to help you get started. In my first year, I opened a small organic and fair trade shop. Twelve years later, I am running a fair trade art gallery, Lazuli ART, in the heart of Victoria, which is my third
venture. I am also a house hunter, and a consultant for entrepreneurs who wish to establish their business in Gozo. This is a discerning land. I like the rural mindset that the route to success is to show respect to the value of work itself and to be driven by something genuine. This is a land of perspective. You can’t drown in stress here because everybody takes things philosophically, and at their own pace. And the majestic landscape and presence of the horizon offer you a frame of reference, and a space, to develop your vision. And after work, we all go to the beach! Life is simple. I am so attached to my little rock, which fulfils the promise of its name in Castilian: JOY.”

Quite the challenge for a photographer I thought, to set out at sea and document the action in the absence of light. However, Gilbert explains how it was never solely the visual element that attracted him to this project, his principal interest was more an anthropological one. “My camera was just my passport onto the boat. If I didn’t have my camera, it would have been difficult for me to convince these fishermen why I wanted to get onto their boat and enter their world.” The work that Gilbert does is not work that could be done from a distance, from the bank-side (ix-xatt) for example, and he stresses how important it was for him to be onboard, whilst the crew was working; “for me that’s the value of the work. I was interested in the dynamics between the crew on the boat - a space dominated by men - and the hierarchies between the captain and the crew.” On land, the women played a very important role of selling the fish once they’re brought to shore, a supporting system that was, however, much more significant some 30/40 years ago. Fishing is a living trade, in evolving and changing with time. There are aspects that are changing but there is also a very strong cultural element that relates to Maltese identity - we are island people. “This also really interested me, so I posed the question how can we be people who live on an island and don’t know how to fish or at least understand the sea? To fish is to understand the sea, it’s to understand what is surrounding you.” The fact that we have a long, complex and rich history itself ties us to the past but it should not be an excuse to remain living there - the past is only a background to the life we live today. This rich history does work against us at times; it allowed for stereotypes and a certain ‘hiddenness’ to take place; “it’s very easy for me to stay on land and take pictures of the men fixing their nets, but that means nothing to me. I have a problem with those images because they are very stereotypical, they feed the stereotype that these people have fallen victim to.” Moreover, when one looks out at the bank-side, it is very evident as to which industry dominates it: tourism, and this, amongst other things, has damaged the sustainability of small-scale fisheries. Small-scale fishing operations are after all highly environmentally conscious, whose goals are long-term and not for short-term profit. Gilbert’s fascinating project has uncovered a labyrinth of many rippled layers of anthropology and sociology as he continues to inhabit this world, documenting it through photography, film, and also sound. However, he does not simply inhabit this complex world but has become very much a participant: “today I do feel part of a community, to a certain extent, but maybe more than a community, part of a family.” He continues to shine his own light and create awareness about what could very quickly become a tradition of fishing in absolute darkness.

FISH AND CHIPS INGREDIENTS Pea Puree
Fish
Tartar Sauce
4 Perch fillets about 180g each
3 egg yolks
25g butter
(or any meaty-white fish such as cod)
1 tablespoon Dijon mustard
1 shallot finely chopped
Sea salt to taste
4 teaspoons white wine vinegar
½ teaspoon sea salt
Lemon to serve
500ml vegetable oil
100ml vegetable stock
2 hard boiled eggs shelled and grated
1 tablespoon chopped mint
Beer Batter
1 shallot, finely chopped
350g defrosted frozen peas
2 egg whites
2 tablespoons finely chopped gherkins
4 teaspoons caster sugar
240ml Cisk lager
2 tablespoons capers in brine drained
350g self raising flour

½ teaspoon bicarb of soda
2 tablespoons chopped parsley
Thick fries using Maltese potatoes Vegetable oil for frying
METHOD Prepare the tartar sauce. Place all the egg yolks, Dijon mustard and white wine vinegar in a food processor and blend until smooth. With the blender still running, slowly add the oil until the mixture thickens. Stir in the remaining ingredients and season. Cover and refrigerate. Prepare the pea puree. Melt the butter in a sauce pan over a low heat, add the seasoned shallots and fry, stirring occasionally, for at least 5 minutes until softened, but not coloured. Add the vegetable stock and mint and bring to the boil. Add the peas and sugar, return the stock to the boil and simmer for 5-6 minutes until the peas are tender. Strain the peas and shallots over a bowl to catch the liquid, then transfer them to a blender. Add 2 tablespoons of the cooking liquid and blend until smooth, but not too thin. Adjust the seasoning with table salt, if necessary, then set aside and keep hot. To make the batter, mix the egg whites and beer together until fluffy. Mix the flour and bicarbonate of soda together in a large bowl and add the egg-white mix, season and place in the fridge. Heat the oil to 180C and fry the chips, once ready place them on a kitchen towel to absorb the extra oil, season to taste. Reheat the oil to 180C. Dip the fish into the batter, letting any excess drip back into the container, then add to the oil and fry for 3-5 minutes until crispy and golden. Drain on a kitchen towel and season. Serve the fish accompanied with the fries, tartar, peas & a lemon wedge.

Maltese potatoes are considered to be a top quality produce in mainland Europe, especially in the Netherlands because they contain little to no pesticides and barely any damage as they are picked by hand. Malta's porous and clay soil allow potatoes to "breathe" in the favourable Mediterranean climate which results in natural, damage-free produce and gives a sweetness to this tasty tuber.

ST MONICA’S SCHOOL ORGANISES EDUCATIONAL FLIGHT FOR ITS STUDENTS

One hundred and forty students from St Monica’s School of Birkirkara were hosted on an hour-long educational Air Malta flight. The flight saw the school f ly at an altitude of 16,000 feet to Sicily and back with a f lyby of Mount Etna. Many of the students had never boarded and travelled on a commercial aircraft.

Alcohol consumed at high altitude can have a stronger effect than usual. Cabin crew are legally empowered to refuse serving any alcohol to an intoxicated passenger and to anyone under the age of 18. In extreme cases, crew may also temporarily confiscate the passenger‘s own drinks so that the passenger does not become a nuisance to the other passengers and crew. Furthermore, Air Malta is bound by international regulations which prohibit the embarkation or the carriage of drunken passengers. But since you are reading this article, Air Malta‘s Flight Safety Committee is confident that you are a law-abiding and exemplary passenger. Indeed, the cabin crew may need your assistance to restrain another passenger in the unlikely event that he or she may act irresponsibly during the flight. The consumption of one’s own alcoholic beverages inflight goes against Air Malta policy.

USE OF PORTABLE ELECTRONIC DEVICES ON BOARD TRANSMITTING PORTABLE ELECTRONIC DEVICES (PEDS)
NON-TRANSMITTING PORTABLE ELECTRONIC DEVICES (PEDS)
Any devices that can send or receive data by wireless means, such as mobile-phones and tablets, may be used during all phases of the flight provided their transmit/receive capabilities (e.g. Bluetooth and Wi-fi) are switched off. Alternatively, if the device has ‘Flight Mode’ capability, this must be enabled. Such devices shall be safely secured in the customers’ hand (handheld) or a pocket during taxi, take-off and landing. Larger devices (e.g. laptops) shall be switched off and stowed away safely during taxi, takeoff and landing. Accessories, such as headphones, must not obstruct access to the aisle. If the data transmission capability cannot be switched off (whilst the device is operating), the device itself must be switched off for the duration of the flight.
These could include, but are not limited to, items such as DVD players, electronic games, music players and personal cameras. Such devices shall be safely secured in the customers’ hand (handheld) or a pocket during taxi, take-off and landing. Larger devices shall be stowed away safely during taxi, take-off and landing.
L APTOPS AND NOTEBOOKS
ARE THERE TIMES WHEN I CANNOT USE MY ELECTRONIC DEVICES?
Such devices may be used during boarding and during flight but not during taxi, take-off and landing. Any built-in data connectivity such as Bluetooth or Wi-Fi must be disabled. These devices must be stowed away safely during taxi, take-off and landing since they could hinder an emergency evacuation. CAN I USE HEADPHONES? Personal headphones can be used during all phases of the flight. However, we ask you to remove your headphones during the safety briefing. For safety reasons, customers sitting in an emergency exit row must refrain from using headphones during taxi, take-off and landing.
Under certain circumstances, your Flight Crew or Cabin Crew may ask you to switch off all Personal Electronic Devices. This may happen during automatic landings, low visibility takeoff or landing, or during emergency situations.
I SHOULD INFORM THE CABIN CREW WHEN … … portable electronic device is damaged, becomes hot, produces smoke, is lost, or falls into the seat structure. If safe to do so, the device must be switched off immediately.
