FRO M THE ED ITO R... Dear travellers, What can one say about a year like 2020? Filled with social and economic turmoil, controversial debate, and of course, there’s no skirting away from the pandemic. It’s been a bit of a kicker as far as millennial vintages go. Thank goodness then that 2021 is now just peeking around the corner, and following in the wake of this year one has high hopes for a more serendipitous 12 months to come. Even so, it’s not been quite all doom and gloom. From Bizzilla’s perspective, 2020 has been a productive and positive year; we’ve been fortunate that the magazine has continued to grow and expand, as has our presence online. The team has developed utmost flexibility, and there are big plans afoot for next year, which we all cannot help but be excited about. In this month’s Bizzilla, we have aligned plenty of glorious features for you to enjoy. Peruse a legacy made of hair (page 26) which tells the fascinating tale of how a hair salon in Valletta (just a stone’s throw away from Teatru Manoel), has been passed through generations, specialising in the art of theatre wig-making. Of course, Covid or no Covid, it’s still the festive season, Alessia Caruana shares her personal views on this poignant time of year given the current scenario, and Natalya Vuković describes traditional Maltese highlights. Let’s take a moment to stop, pause and reflect on the things that really matter. Onwards and upwards then as they say. Integrated with the National Convention was the JCI Malta Annual General Meeting, where the projects of the year were presented and the National Board for the upcoming year was elected. An interesting element of JCI’s modus operandi is its ‘one year to lead’ approach. While a person may occupy several roles over the years on a board, they may only occupy that role once and for the duration of a year. The psychology behind this is to give people the chance to try out different roles and possibly push themselves outside of their comfort zone. JCI believes in providing a safe space to try (and possibly fail, too). While the current 2020 board will continue with their duties for the rest of the year, the 2021 board is already gearing up and planning. In 2021, JCI Malta will be led by Nicole Borg who currently occupies the role of Deputy President. Each year, the president selects a theme to focus on and, spurred on by the massive unforeseen changes that happened throughout this year, Nicole opted for #LeadersForChange. “In 2020 we have seen the world shift to a new kind of normal; life as we know it is no more and we have to adapt to a new way of living. Being a leadership organisation, JCI Malta in 2021 has identified the importance of leaders being open to change. Based on this, the theme #LeadersForChange was chosen in order to remind all members that we need to be as future-proof as possible if we are to come out of this rough spot stronger than ever before,” she explained. It was built as the conventual church for the Knights of St John. This church is till this very day, an important shrine and a sacred place of worship. It is also a venue for many cultural events.
Strait Street, or Strada Stretta, also affectionately termed ‘The Gut’ owing to its reputation as the former redlight district of Valletta, was once the place where sailors who were docked in the harbour went for a good time throughout the late 19th until the mid-20th century. Why not catch a show while you’re in town? The Manoel Theatre is a renowned theatre and famous performing arts venue in Malta. The stunning theatre is often referred to as merely “The Manoel”. It is named after Grand Master of the Order of the Knights Hospitaller, Fra António Manoel de Vilhena, who ordered its construction in 1731.
After a considerable restoration project, the Triton Fountain at Valletta’s entrance is a sight you cannot miss. The fountain consists of three bronze Tritons holding up a large basin, balanced on a concentric base built out of concrete and clad in travertine slabs. The fountain is one of Malta’s most famous Modernist landmarks, catch it as dusk begins to fall, and you’ll see it beautifully illuminated.
At the tip of Valletta’s peninsula sits the magnificent Fort St Elmo. It stands on the seaward shore of the Sciberras Peninsula that divides Marsamxett Harbour from The Grand Harbour and commands the entrances to both harbours along with Fort Tigné and Fort Ricasoli. It is best known for its role in the Great Siege of Malta of 1565. For Game of Thrones fans, it was also a popular filming spot!

This style of cooking pork is one of my favourites when entertaining because it’s so hands-off and turns out perfect each time. I cook the pork sous vide, which makes for succulently cooked meat that just needs a quick sear in a pan to be finished to perfection. Sous vide is a technique and technology that is quickly making its way into home kitchens. In fact, if you’re stressed about preparing Christmas dinners, this technique could provide the answer to a minimal-stress holiday roast that’s cooked to perfection.
PORK COLLAR WITH MELTED RED CABBAGE AND POACHED APPLES INGREDIENTS 1.5kg pork collar 4 thyme branches 2 garlic cloves ½ tsp black peppercorns 2 tbsp butter 1lt unsalted chicken or pork stock 1kg red cabbage 2 red onions Wholegrain mustard, salt, and pepper to taste 3tbsp butter 3 Granny Smith apples 750ml apple juice METHOD Trim the pork to make a nice cylindrical roast shape. Your butcher can do this. Season liberally with salt. Place into a ziplock or vacuum sealed bag with the thyme, black pepper and garlic and cook sous vide at 60C for 36 hours. For the cabbage, peel and thinly slice the onion and cabbage. In a medium-sized pot, add 2 tablespoons of butter and a small bundle of thyme sprigs. Melt the butter and add the onion along with a generous pinch of salt. Cook for 10 minutes or until completely softened and add the cabbage. Season well with salt and pepper. Cook over high heat while mixing. Add 500ml of water or stock to the pot, cover and cook over high heat for 10 minutes. Remove lid and continue cooking until the liquid is almost completely dissolved. Remove from heat and adjust the seasoning with salt, pepper, a few drops of apple cider vinegar and wholegrain mustard to taste. Remove the thyme sprigs. For the apples, peel and cut the apples into eighths. Fill a medium-sized pot with apple juice and the juice of half a lemon and bring up to the boil. Add the apples and turn off the heat. Cover the pot and allow the apples to sit for 20 minutes. Remove from the heat once tender. If not completely tender bring to the boil again and turn off the heat. Allow to sit for 5 minutes and check for consistency. When ready to serve warm through in some of the poaching liquid and season with salt. For the sauce - remove pork from the bag and dry out with paper towels. Strain the braising liquid into a pot and add equal parts unsalted chicken or pork stock. Reduce by half and add a few knobs of butter and a few drops of apple cider vinegar. Finally, place a hot pan over high heat and add 2 tablespoons of vegetable oil. Sear the pork on all sides until well browned. Optionally, add a few tablespoons of butter to the pan and baste. When nicely browned, slice and serve with the cabbage, poached apples, your sauce and a few slices of fresh apple and a few sprigs of parsley. 63

HOW LONG HAVE YOU BEEN WORKING WITH AIR MALTA AND WHAT ROLES HAVE YOU SERVED? My journey with Air Malta started in 2018, when I joined as a Sales Agent. I have recently moved to the Customer Experience Department as an Acting Call Centre Manager, working mainly within customer care. WHAT IS THE BIGGEST CHALLENGE OF YOUR JOB? In my current role, each day can present a completely different new challenge. Nevertheless, I view this as a positive thing as I tend to remain focused and motivated in such a fast-paced work environment. WHAT DO YOU LIKE TO DO IN YOUR SPARE TIME? I love travelling and I like to watch movies and television series. However, in my spare time, I like going out and about visiting and exploring different places around the Islands. WHAT IS YOUR PREFERRED MALTESE DISH? My all-time favourite Maltese dish remains the Mqarrun il-forn. This is a baked pasta dish with mince and tomato sauce. I started following a vegetarian diet three years ago, and even now, I manage to make my own variation of this dish without compromising the taste. WHICH IS YOUR FAVOURITE MOVIE OF ALL TIME? I consider myself as a big fan of cinema and films. Without any doubt, I consider Pulp Fiction as my favourite film of all time. WHAT KIND OF MUSIC YOU LIKE TO FOLLOW? I follow various types of music, ranging from pop, electronic, indie, and hip hop. The type of music I listen to mostly depends on my current mood, however I find myself listening to indie music the most! WHICH IS YOUR FAVOURITE DESTINATION AND WHY? Out of all the destinations I have visited, the city that I find myself most eager to return to is Budapest, in Hungary. I seem to never get tired of the overall ambience of the city, the exceptional local cuisine and the scenic views of the lake and the Hungarian Parliament. Berlin and Athens also deserve an honourable mention. WHAT ARE YOUR FAVOURITE SPOTS AND TIPS FOR ANYONE VISITING THE MALTESE ISLANDS? There are several spots in Malta which are not frequently explored by visitors, such as Wied Babu and Wied ix-Xoqqa. These spots offer a serene and calming environment, and an opportunity for a great hike!

Alcohol consumed at high altitude can have a stronger effect than usual. Cabin crew are legally empowered to refuse to serve any alcohol to an intoxicated passenger and anyone under the age of 18. In extreme cases, crew may also temporarily confiscate the passenger‘s own drinks so that the passenger does not become a nuisance to the other passengers and crew. Furthermore, Air Malta is bound by international regulations which prohibit the embarkation or the carriage of drunken passengers. However, since you are reading this article, Air Malta‘s Flight Safety Committee is confident that you are a law-abiding and exemplary passenger. Indeed, the cabin crew may need your assistance to restrain another passenger in the unlikely event that he or she may act irresponsibly during the flight. The consumption of one’s own alcoholic beverages inflight goes against Air Malta policy.
Smoking is prohibited from when you leave the departure terminal building until you reach the arrival terminal building. Smoking is allowed in designated areas only. Smoking is not allowed during any phase of the flight and in any area of the aircraft. Should you be aware of a passenger who has smoked in the toilet during the flight, please inform the cabin crew immediately so that they can check for any undetected fires. The use of electronic cigarettes (e-cigarettes) is not allowed on board Air Malta flights. Similarly, the use of naked flames on and around the aircraft is also prohibited.
FACE MASKS The Airline requires all passengers to wear an approved medical or cloth face mask at all times, starting from boarding, for the duration of the flight, through to disembarkation. Passengers will not be allowed to board without a facemask. Masks should also be worn within the airport building, before and during check-in, upon arrival, when collecting baggage, and up to the point that a passenger leaves the airport building. As per the Government of Malta Legal Notice 402 of 2020, children under three (3) years of age and persons with severe cognitive, physical, mental, or respiratory impairments who have difficulties tolerating a mask as certified by a licensed medical practitioner are exempted from wearing masks. Certified individuals shall always carry the relevant medical certificate exempting them from wearing a mask. Passengers risk fines if they fail to comply.

TRANSMITTING PORTABLE ELECTRONIC DEVICES (PEDS)
NON-TRANSMITTING PORTABLE ELECTRONIC DEVICES (PEDS)
Devices that can send or receive data by wireless means, such as mobile-phones and tablets, may be used during all phases of the flight provided their transmit/receive capabilities such as GSM & Wi-fi are switched off. Devices working on Bluetooth wireless connectivity are allowed. If the device has ‘Flight Mode’ capability, this must be enabled. Such devices shall be safely secured in the customers’ hand (handheld) or a pocket during taxi, take-off and landing. Larger devices (e.g. laptops) shall be switched off and stowed away safely during taxi, takeoff and landing. Accessories, such as headphones, must not obstruct access to the aisle. If the data transmission capability cannot be switched off (whilst the device is operating), the device itself must be switched off for the duration of the flight.
These could include, but are not limited to, items such as DVD players, electronic games, music players and personal cameras. Such devices shall be safely secured in the customers’ hand (handheld) or a pocket during taxi, take-off and landing. Larger devices shall be stowed away safely during taxi, take-off and landing.
LAPTOPS AND NOTEBOOKS Such devices may be used during boarding and during flight but not during taxi, take-off and landing. Any built-in data connectivity such as Bluetooth or Wi-Fi must be disabled. These devices must be stowed away safely during taxi, take-off and landing since they could hinder an emergency evacuation.
ARE THERE TIMES WHEN I CANNOT USE MY ELECTRONIC DEVICES?
CAN I USE HEADPHONES? Personal headphones can be used during all phases of the flight. However, we ask you to remove your headphones during the safety briefing. For safety reasons, customers sitting in an emergency exit row must refrain from using headphones during taxi, take-off and landing.
Under certain circumstances, your Flight Crew or Cabin Crew may ask you to switch off all Personal Electronic Devices. This may happen during automatic landings, low visibility takeoff or landing, or during emergency situations.
I SHOULD INFORM THE CABIN CREW WHEN … your portable electronic device is damaged, becomes hot, produces smoke, is lost, or falls into the seat structure. If safe to do so, the device must be switched off immediately.
