W ELC OM E

FROM THE CHAIRMAN...

FRO M THE ED ITO R...

Outgoing Chairman's Message Merħba.

Dear travellers

It has been a privilege for me to have served as Chairman of Air Malta for the last three and a half years.

Ahhh it’s finally January. We can all breathe a deep sigh of relief 2020 is over. This last year the world has been thrown into a tumultuous situation, and I am sure we will be glad to see the back of it. It’s been a year of fist-bumping, learning new terminology, and having to shout “Don’t worry, it’s not Covid!” every time you cough or sneeze. But alas now we are here in a new dawn, ready for whatever 2021 may bring.

When I joined the Airline in July 2017, together with the Board of Directors, we immediately set out to reform the Airline. At the time, the Company was emerging from a five-year-long restrictive restructuring plan which limited operations but was required by the European Commission. We had no time to waste and we immediately set the ball rolling by signing new Collective Agreements with all sections representing the Airline’s workforce, launched a new Vision, Mission and Values for the Company, initiated a fleet replacement project which will see the Airline having a brand new fleet of Airbus A320neo aircraft in the coming years, launched 25 new routes, upgraded on-board services with better quality items and started offering more choice through the ‘Buy on-board’ concept, won International Awards including CAPA’s ‘Turnaround Airline of the Year’ following our return to profitability after 18 years, improved aircraft utilisation, unbundled our commercial offering and introduced Go-Light - a hand luggageonly fare and saw our biggest increase in operations in 2018/9 of +30% over the previous year when we carried two million passengers. During this time, we endeavoured to move the Airline forward and to start thinking with a new growth mindset.

To pique your interest and ignite your travel ambition, we have thrown together another fabulous Il-Bizzilla magazine, jam-packed with travel tips from local influencer Taryn Mamo Cefai, and how to spend your time in our featured destination of St Petersburg. Closer to home, we focus on the language that has shaped our island’s culture, with this special literary edition. Dean Muscat meets Charles Saliba, an expert on the Maltese language and a renowned author. As a non-native Maltese resident, I recall fondly when I first heard people speaking in Maltese - I have never heard another language like it! With border restrictions easing, it’s time to finally book that trip to get to know our own spectacular country, just take a look at the delightful offerings of Mġarr.

When the pandemic struck, we upheld our Corporate Social Responsibilities and ensured vital flight connectivity to and from the Islands.

Foodies fear not, Christine Cassar steps into local restaurant La Buona Trattoria del Nonno, to find out the secrets of their success, and prises a top-secret recipe from Chef Kane, take a look at the sumptuous paccheri dish on page 32. For those looking for a “new year, new me” health kick, Leanne Bartolo is here for all your fitness goals. Check out our inspirational interview with the gym guru on page 14.

This will be the last time that I will address you as Chairman of this Airline. As from the 1st of January I’ll pass on the baton to Mr David G. Curmi, who was confirmed as the new Air Malta executive Chairman. I wish to augur Mr Curmi all the best in his new post heading the Airline. I wish also to take the opportunity to thank my Board of Directors, Management and employees for their dedication, support and commitment during these years.

Sit, back, relax - you’ll soon be there!

Thank you for flying Air Malta! Enjoy this edition and stay safe.

WITH SO MANY CITIES, TOWNS AND VILLAGES ON OUR LITTLE ISLANDS, IT’S HARD TO DECIDE WHAT TO SEE AND WHERE TO GO. THROUGHOUT THE YEAR WE’LL BE HIGHLIGHTING OUR TOP LOCATIONS FOR THE SEASON. THIS MONTH IT'S MĠARR, MALTA.

SIX TOP SIGHTS

FENKATA RESTAURANTS

MGARR PARISH CHURCH

RIVIERA MARTINIQUE

Ask any local where to get the best rabbit dish in Malta and they’ll surely point you in the direction of Mġarr. A fenkata is a rabbit feast where local delicacies are accompanied by the many rabbit dishes on offer for lunch or dinner.

The Mġarr Parish Church stands proudly in the village core with its large parvis as the highlight of the religious grounds. Surrounded by core village amenities as well as village-favourite restaurants, the pjazza is rather lively during the day as well as the evenings.

This gorgeous bay is not easily accessed but well-worth the effort. Power through the long flight of stairs to find yourself on the hot sand where deckchairs and a kiosk will ensure your comfort for the day.

STRAWBERRIES

FOMM IR-RIH

HAGRAT TEMPLES

There’s no strawberry better, in Malta, dare I say the world, than that of Mġarr. They’re sweet, they’re fresh and they’re so tasty. Locals flock to the village to get their hands on the Mġarr strawberries.

Fomm ir-Riħ Bay is a north-west facing creek that is considered the wildest and most isolated beach in Malta, not to mention one of the most beautiful. It is a favourite among snorkelers, divers and of course, sun-seekers.

Ħaġrat Temples are found in the heart of Mġarr, close to the village parish church. They allow our heritage to live on due to their pre-historic worth and serve as a highlight of the megalithic period on the Maltese islands. Ħaġrat Temples have even made it on the UNESCO list.

WE BRING YOU THE BEST THAT THE MALTESE KITCHEN HAS TO OFFER WITH RECIPES INSPIRED BY MEDITERRANEAN AND EUROPEAN CUISINE.

YOUR DELICIOUS

MONTHLY RECIPE

Kane Palmier has been extremely instrumental to La Buona Trattoria del Nonno. At just 18 years old, he jetted off to London to read for a degree in Hospitality and Business, whilst also working at some of the city’s finest Michelin Star restaurants. He is personally motivated to continue fine-tuning his grandparents’ 50-year-old legacy in the catering industry, whilst exposing their lifetime commitment on an international scale. His concepts focus around the idea of “Fun Dining” - a concoction between fine and casual dining with 3 main aspects: Food porn, sexy cocktails and live music. 32

FOOD A ND DRINK

This sensational pasta dish is just the comfort food you’ll be craving for throughout the January cold snap. With guanciale, pistacchio, local olive oil and a touch of parmesan, Chef Kane’s recipe is oozing with Mediterranean flavours.

KANE’S PACCHERI INGREDIENTS 200g roasted pistacchio di Bronte 1 handful of fresh basil 1/2 a lemon juice 100ml Olive oil extra virgin 50g Parmigiano Reggiano Orange zest Top up with water until desired texture.

METHOD Cook 150g guanciale in a pan. Do not add oil, garlic or onions. Let the guanciale cook in their own fat. Cook the pasta of your choice for half the cooking time indicated on the packaging. Strain the guanciale on a napkin to remove any excess oil and keep the fat in the pan. Add pasta water to the fat and finish off cooking the pasta in the fat and oil. Toss the pasta and add a handful of some more parmigiano. Add 1 table spoon (per person) of pistachio sauce and a dash of cream (optional). Top up with crushed pistachios. Toss & Enjoy!

IL-BIZZILLA TALKS TO YANIC A FREND O H U M A N R E S O U R C E S S E R V I C E S C O O R D I N ATO R

HOW LONG HAVE YOU BEEN WORKING WITH AIR MALTA AND WHAT ROLES HAVE YOU SERVED? My journey with Air Malta started back in 2017 when I started working in the Passenger Handling Section. Earlier this year, I felt the need for a career change and was chosen to form part of the HR department in my current role. WHAT DO YOU LIKE TO DO IN YOUR SPARE TIME? Whenever I have some time off, I spend it cooking meals or baking some delicious treats for my family and friends. I also love going on long countryside walks with my dog. WHAT IS YOUR PREFERRED MALTESE DISH? I really enjoy eating the typical Maltese ftira. This can be served in many ways but perhaps my favourite fillings are tuna, capers, olives, sardines and seasoned with a dash of olive oil. Cool fact: Our ftira has been included in the intangible cultural heritage list by UNESCO! WHICH IS YOUR FAVOURITE MOVIE OF ALL TIME? I am more into watching series rather than movies and my favourite definitely is ‘La Reina del Sur’. I never get tired of re-watching the episodes. WHAT KIND OF MUSIC YOU LIKE TO FOLLOW? I typically listen to Latino and R&B genres. WHICH IS YOUR FAVOURITE DESTINATION AND WHY? By far my favourite destination is Barcelona in Spain. I am in love with the Hispanic culture and the romanticised language. Every region in Spain has its very own unique traits, dialects, history and a delicious cuisine, hence re-visiting the same country never gets tiring. WHAT ARE YOUR FAVOURITE SPOTS AND TIPS FOR ANYONE VISITING THE MALTESE ISLANDS? Vittoriosa which is situated in the south of Malta, holds a fantastic historical background given the fact that it served as the headquarters of the Knights of St John. One can visit the harbour which is full of luxury yachts whilst also enjoying a great meal in one of the harbourside restaurants. Something which makes this city unique is the long and winding traditional Maltese alleys.

ALCOHOL CONSUMPTION

SMOKING

Alcohol consumed at high altitude can have a stronger effect than usual. Cabin crew are legally empowered to refuse to serve any alcohol to an intoxicated passenger and anyone under the age of 18. In extreme cases, crew may also temporarily confiscate the passenger‘s own drinks so that the passenger does not become a nuisance to the other passengers and crew. Furthermore, Air Malta is bound by international regulations which prohibit the embarkation or the carriage of drunken passengers. However, since you are reading this article, Air Malta‘s Flight Safety Committee is confident that you are a law-abiding and exemplary passenger. Indeed, the cabin crew may need your assistance to restrain another passenger in the unlikely event that he or she may act irresponsibly during the flight. The consumption of one’s own alcoholic beverages inflight goes against Air Malta policy.

Smoking is prohibited from when you leave the departure terminal building until you reach the arrival terminal building. Smoking is allowed in designated areas only. Smoking is not allowed during any phase of the flight and in any area of the aircraft. Should you be aware of a passenger who has smoked in the toilet during the flight, please inform the cabin crew immediately so that they can check for any undetected fires. The use of electronic cigarettes (e-cigarettes) is not allowed on board Air Malta flights. Similarly, the use of naked flames on and around the aircraft is also prohibited.

FACE MASKS The Airline requires all passengers to wear an approved medical or cloth face mask at all times, starting from boarding, for the duration of the flight, through to disembarkation. Passengers will not be allowed to board without a facemask. Masks should also be worn within the airport building, before and during check-in, upon arrival, when collecting baggage, and up to the point that a passenger leaves the airport building. As per the Government of Malta Legal Notice 402 of 2020, children under three (3) years of age and persons with severe cognitive, physical, mental, or respiratory impairments who have difficulties tolerating a mask as certified by a licensed medical practitioner are exempted from wearing masks. Certified individuals shall always carry the relevant medical certificate exempting them from wearing a mask. Passengers risk fines if they fail to comply.

TRANSMITTING PORTABLE ELECTRONIC DEVICES (PEDS)

NON-TRANSMITTING PORTABLE ELECTRONIC DEVICES (PEDS)

Devices that can send or receive data by wireless means, such as mobile-phones and tablets, may be used during all phases of the flight provided their transmit/receive capabilities such as GSM & Wi-fi are switched off. Devices working on Bluetooth wireless connectivity are allowed. If the device has ‘Flight Mode’ capability, this must be enabled. Such devices shall be safely secured in the customers’ hand (handheld) or a pocket during taxi, take-off and landing. Larger devices (e.g. laptops) shall be switched off and stowed away safely during taxi, takeoff and landing. Accessories, such as headphones, must not obstruct access to the aisle. If the data transmission capability cannot be switched off (whilst the device is operating), the device itself must be switched off for the duration of the flight.

These could include, but are not limited to, items such as DVD players, electronic games, music players and personal cameras. Such devices shall be safely secured in the customers’ hand (handheld) or a pocket during taxi, take-off and landing. Larger devices shall be stowed away safely during taxi, take-off and landing.

LAPTOPS AND NOTEBOOKS Such devices may be used during boarding and during flight but not during taxi, take-off and landing. Any built-in data connectivity such as Bluetooth or Wi-Fi must be disabled. These devices must be stowed away safely during taxi, take-off and landing since they could hinder an emergency evacuation.

ARE THERE TIMES WHEN I CANNOT USE MY ELECTRONIC DEVICES?

CAN I USE HEADPHONES? Personal headphones can be used during all phases of the flight. However, we ask you to remove your headphones during the safety briefing. For safety reasons, customers sitting in an emergency exit row must refrain from using headphones during taxi, take-off and landing.

Under certain circumstances, your Flight Crew or Cabin Crew may ask you to switch off all Personal Electronic Devices. This may happen during automatic landings, low visibility takeoff or landing, or during emergency situations.

I SHOULD INFORM THE CABIN CREW WHEN … your portable electronic device is damaged, becomes hot, produces smoke, is lost, or falls into the seat structure. If safe to do so, the device must be switched off immediately.

If you require more information, please refer to the table below which includes a list of Personal Electronic Devices (PEDs) which can be used onboard Air Malta flights by phase of flight. Please do not hesitate to contact any member of our cabin crew if you have any further questions.
