We are excited to announce that we are moving the Boerne Wild Game Dinner to the Kendall County Youth Agriculture & Equestrian Center located off IH-10 at 649 FM 289 between Boerne and Comfort. As our event has grown, so must our venue. The “YAEC” will house the entire event under one roof! This year’s event takes place on Saturday, November 5th. Gates open at 5:00 pm with admission at the gate. The Wild Game Dinner event was created with a vision of sharing good food with our friends and neighbors. And, we throw quite a party! We now welcome over 4,000 folks to our event and have given a total of eleven scholarships to graduating seniors in Kendall County. Youth, Agriculture & Equestrian Center to Host Boerne Chamber Event

This year the Boerne Chamber of Commerce will host its Wild Game Dinner at a new venue, the Kendall County Youth Agricultural & Equestrian Center (KCYAEC) located adjacent to Joshua Springs Park and Preserve on FM 289 between Comfort and Boerne.

Wild Game Dinner moving to largest outdoor venue in Kendall County With 72,000 square feet under one roof, the Center is the largest, outdoor, covered facility in the county and is the new home of Kendall County Jr. Livestock Association and Kendall County 4-H Horse Club. The two non-profit groups joined forces to design, plan, and build the facility and have formed a new non-profit organization to manage it. In addition to an arena and showbarn, the Center offers a concession stand, office, announcer’s stand, bleachers, LED lighting, sound system, and rainwater capture tanks. Located on 33 acres, the venue also features an equestrian trail, bird-watching blind, and a picnic area with grills, rustic amphitheater, and a team-building course. Wild Game Dinner Co-Chair, Beca Short said the committee is excited about having the fundraiser at a large, weather-resistant facility. “We think the new place is amazing and we have the

opportunity to grow the event at the new home. It will conveniently house everything under one roof and everyone will be able to know what's going on in the entire venue,” said Short. Karen Daly, Co-Chair, concurred, adding, “There will be no more going from building to building and the traffic flow will be very efficient,” said Daly. “Also, we will be better able to handle rainy weather.” Although KCYAEC was constructed primarily to host livestock shows and equestrian activities, the facility is versatile making it ideal for other types of events. KCYAEC President, Andra Wisian said, “The Center is multipurpose and large enough to accommodate gatherings like the Wild Game Dinner. This venue is a great asset to the county and we are pleased that so many of our citizens will benefit from its existence,” said Wisian. KCYAEC secretary, Meg Grier, agreed, saying, “We look forward to

the Chamber hosting its premiere event at the Center and being a part of all the success.” Jr. Livestock president and KCYAEC board member, Wayne Zoeller is part of the Grill Billies cook team and is not only looking forward to cooking at the new venue, but believes the event will provide great exposure for the annual livestock show and sale in January of next year. “This big event will help us tell our story to folks who otherwise would not know about our Jr. Livestock youth program,” said Zoeller. Dating from 1939, the Kendall County Jr. Livestock program has a rich heritage, with many generations of the county’s youth learning to be productive, responsible leaders. For seven decades, hundreds of citizens have served as directors and volunteers for the Junior Livestock Association, while thousands of community members and business owners have supported the sale financially by purchasing animals and cheering on the young participants. Texas AgriLife Extension Agent Stephen Zoeller reports that membership in 4-H is up across the county, with around 400 4-H and FFA youth expected to participate in the county show and sale set for January 10 and 11, 2017. The 2016 sale totaled more than $920,000 in direct livestock purchases by bidders, plus add-on money to individual participants. “More than 700 different buyers directly bought or contributed to a buyer’s cartel, sometimes with as little as a $25 donation. appreciate all the folks who come out to support our youth,” said Zoeller. “To a lot of them, this is the start of their college savings.” A private/public partnership, the KCYAEC was constructed with funding from Kendall County, citizen donations and in-kind services, and other private and public grant money. Junior Livestock director and KCYAEC board member, Marty Carroll, said, “Junior Livestock and 4-H Horse Club leaders and volunteers are grateful for our private benefactors as well as county support. We are honored to be entrusted with this project.” A supporter of the project, County Judge Darrel Lux said, “The new youth ag and equestrian center will foster economic development in Kendall County for years to come. It also gives families from all socioeconomic levels the opportunity to work together on

projects that instill responsibility and develop the character of our Kendall County youth.” According to 4-H Horse Club director and KCYAEC board member, Rick Wood, the new arena has hosted several youth rodeos and other equestrian events since the opening last April with more on the books this fall and next year. Both the Kendall County Junior Livestock Association and the Kendall County 4-H Horse Club are non-profit, 501(c) 3 organizations. The groups have no paid staff and operate solely with volunteers. KCYAEC is incorporated and in the process of filing for 501(c) 3 status. The 13-member board of directors includes five representatives from Junior Livestock, five from the 4-H Horse Club, and three members from the community. Directors include Andra Wisian, President; Krista Upham, Vice President; Meg Grier, Secretary; David Geistweidt, Treasurer; Wayne Zoeller; Marty Carroll; Weston Hamilton; Craig Jackson; Jack Speir; Rick Wood; Dwaine Rivers; Cliff Wheeler; and Mike Lang. Wheelers Feed & Outfitters Wows Customers with Quality Products, Friendly Service

Anyone who works at Wheelers Feed & Outfitters in Boerne will tell you straight up, “We’re not your grandpa’s feed store.” They’re right. This isn’t your traditional feed store where you buy hay and hen feed along with some seed for your pasture and garden. Before longtime Boerne residents Cliff and Rhonda Wheeler bought Barkley’s Home & Ranch Center in 2011, it was predominately a feed store covering 6,000 square feet of retail space that also sold some guns and archery equipment. But the Wheelers, who envisioned something far beyond a feed store, performed an extreme makeover in 2014. Besides increasing the retail space to 15,000 square feet and adding other facilities, they reworked the business with skill, finesse, and humanity, pursuing their vision of the store being a full-service, one-stop destination for customers wanting high-quality western, livestock, and outdoor products of every description. At Wheelers you’ll find well-made Western and English tack, roping supplies, archery equipment, a full selection of pet food and supplies, hunting gear and knives, lawn and garden supplies, horse and cattle trailers, and, of course, feed for cattle, chickens, sheep, goats, or horses. As the store name proudly proclaims, Wheelers is also an outfitters. They’ve added a ladies boutique and carry high-quality, name-brand western and outdoors’ clothes, boots, hats, and outerwear for men, women, and kids. If a customer cannot find the clothing they want, which is rare, Wheelers processes special orders. ADDITIONAL SERVICES “We converted a hay barn into a feed barn that customers can pull right into and added a 10,000 square foot trailer sales and service facility with four service bays. We even included an acid wash bay for trailers,” says General Manager Dale Garner. They also carry just about anything a hunter will need or imagine. With more than 65 feet of wall space and 1,000 guns in stock, their gun department is second to none. They also updated their archery department to include an indoor archery range where customers can try their products on site. “We work really hard to meet every need of our customers – whether they’re farmers or ranchers or someone who lives and plays in the great outdoors,” Garner declares. “In fact, we’re always evaluating everything we carry to make sure it meets our customers’ needs. We do this daily just to make sure we have what our customers

want or are asking for.” Along with an extensive inventory of great products, Wheelers is known for its caring, friendly staff. “Even though we’ve gotten bigger, our staff strives to always create a warm, home-town feeling for everyone who enters. And once you shop here, our staff is likely to call you by name when you walk in the door. We want our customers to know they’re special,” Garner says. Have a question about guns, archery, tack, or anything else? No problem. Wheelers’ staff is very knowledgeable, many of them with years of experience in their specialty. WILD GAME DINNER An avid supporter of Kendall County youth, Wheelers Feed & Outfitters will again support Boerne’s Wild Game Dinner. They’ll donate items for the silent auctions, showcase their wares at one of the booths, and sponsor Frank Addington, the “Aspirin Buster.” “Frank, an amazing archer, entertained our guests at our Grand Opening in January 2015. Former Governor Rick Perry and Peter Holt, owner of the Spurs, were present and saw Frank shooting targets with his bow placed behind his back. “Frank, who lives here in Boerne, is very well known throughout the country. We thought it a natural fit to sponsor him since he’s an archer and we have an archery department,” Garner says. THE “ASPIRIN BUSTER” Frank Addington, Jr. (www.frankaddingtonjr.com) has entertained thousands of people for more than 30 years with his uncanny ability to hit

the tiniest of targets with the bow behind his back. But he also inspires people with how he overcame diversity. Addington was born with a severely sunken chest, pectus excavatum, which required surgery to make room for his heart and lungs. Left with a sunken chest and underdeveloped lungs, he wasn’t allowed to play sports like other boys. But because both his parents were avid bow hunters, he showed an interest in archery at age 4. “My dad got me a fiberglass bow. He told me to draw the bow and look at what I wanted to hit. I remember the day like it was yesterday,” Addington says. “Forty-five years later, I’m still shooting archery.” His trademark behind-the-back shooting happened in 1994. He had been in an automobile accident prior to an archery exhibition and discovered his left shoulder hurt when he shot the bow the regular way. Since he always did one shot behind the back at all his shows, when he tried it again he noticed his shoulder didn’t hurt. For the remainder of the show, all his shots were from behind the back. As his assistant tossed objects in the air for Addington to hit, Addington kept telling him to toss up smaller objects. Before the show ended, he became the first person ever to hit a baby aspirin in mid-air while shooting from behind his back. Today, he shoots aspirin one-third the size of a baby aspirin as well as tiny mustard seeds. How can he see such tiny targets, let alone hit them with an arrow in mid-air? “My vision is 20/8, which is good as the human eye gets. The eagle’s vision is 20/5 and fighter pilots are 20/10. It’s very rare to have someone with 20/8 vision,” he remarks. “What I tell my audience is that you may be born with a handicap or birth defect like I was, but God will give you a talent. The key is finding that talent and then developing it. For me, that talent was my vision.”

I was once asked “how do you choose your cook teams?” I thought that was the craziest thing I’d ever heard. I simply answered that when you grow up in a small town, someone is either getting married or buried and everyone cooks! If you’re from a small town, you know it’s true! To begin the cook team search, I started with family and friends. They really can’t say “no” to you and I knew they could all cook. Anytime we sampled someone’s cooking and it was good, I asked them to cook. Most had never cooked for a crowd our size, but all were willing to give it a try. Our cook teams are the backbone of the event and the reason folks continue to come back year after year. I have no words to thank them for all the hard work and time they put into this event to make it a success. They are all amazing! Mike Saur, who happens to be a cousin, has the Axis Guisada team. Last year he called and said “we need to talk.” Those are scary words for anyone! I drove to his automotive shop in Comfort to see what was going on. It was the “good news, bad news” conversation. Mike and his brother, Phil, drew mule deer hunts in the Panhandle. They had waited years to do this hunt, but were sad to miss the dinner. Well, what’s the “good news”? He was sending replacements. I said “who”? He was sending his wife, Nadine, the Pierce brothers and Mr. Flach continued on page 14

with the chuck wagon. I breathed a sigh of relief knowing they could cook and we were safe! Mike and Phil were unsuccessful with the hunting and swore they wouldn’t miss the dinner again! It’s just too much fun! We realize that some folks think of “wild game” as “road kill” and may not want to try the fine cuisine we serve up. David Hohmann and his team from Comfort will be joining us again this year to cook the briskets. They are notorious cookers in the Comfort area and their bunch cooks up over 1,850 pounds of brisket each year for Comfort’s 4th of July celebration. David has cooked at this celebration since 1979. At the Wild Game Dinner, they put the briskets on Friday evening and spend the night at the pit tending the fire and checking the briskets. Last year, he called me over and made me a brisket taco. He said he’d heard me say that I never get to eat because it’s so busy. He wanted to make sure I had something to eat that day. David said the best part of the event was the fellowship shared between the cook teams. Come and Get It Chuck Wagon is the food truck owned and operated by the Asher family. You’ll find Wade, Kathy, Taylor and Niki cooking up a storm! They are best known for their Piggy Puffs! You can’t eat just one! In fact, you might eat the whole bag! Last year Wade and his group surprised the Wild Game Dinner crowd with the whole pigs they cooked. They created a cinder block pit on site, built a roaring fire that they reduced to

coals and then loaded up the pigs. This too was an all-night affair and the crowd loved it! They are professional cooks and are available for hire at your private or corporate events. And, then there is desert! Our main desert is peach and berry cobbler! Riverside Catering serves up 1,000 servings and they are out within minutes! You may recognize the “Riverside” name in Boerne. The Zoeller family owned and operated the bar-b-que store at the corner of Main and River Road for years. Stephen and his family branched off into the catering business when the store was sold. They have a long family history of good cooking and we are glad they are part of the Boerne Wild Game Dinner! This is only a sample of what’s to come! We welcome back 20 plus cook teams again this year. These folks take great pride in what they do. They have fun and work hard. If you were to ask these teams what their favorite part of the dinner is, I’d venture to say that they would say this is some of the best fun they have. There isn’t much arm twisting to get them to come back the next year!

Wild Game Dinner Fine Arts Scholarship

Jose is a hard working student both inside and outside of the classroom. He knows the value of higher education and has worked hard to reach his goal of becoming an architect, planning to attend the University of Texas at San Antonio. During his high school career, Jose has taken multiple dual credit courses while also holding an after school job for two years. Even with all of his challenging classes and working 31-36 hours per week outside of the classroom, he still manages to maintain a high GPA. Castillo has even received academic awards as the most outstanding student in English I, Chemistry, Geometry, Ceramics and English III. Jose puts the same dedication and attention to detail into his job as he does to his school work. Jose not only excels academically, but creatively too. He produces beautiful ceramic work, intricate sculptures and remarkable graphic design. He has even qualified for State Competition in Graphic Design. According to Amanda Pelletier, Integrated Science and Biology teacher at BISD, “It is rare and refreshing to find a young student with such amazing purpose and drive.” Jose’s demonstration of outstanding leadership, excellent work ethic and an outstanding desire to achieve his goals are a sure recipe for success! scholarships continued on page 32

Bill Eichholtz, a native of San Antonio, grew up with an ingrained appreciation of art and creative expression. Having a grandmother who was an accomplished artist, it was only natural that he developed an interest of his own as he spent time sketching and painting with her early in life. Her love of horses became his love of horses and was often reflected in his artwork during those formative years. Bill attended Trinity University in San Antonio where he earned his Bachelorâ&#x20AC;&#x2122;s Degree in Homebuilding. LAY | Born in Lubbock, Paula moved to Boerne two years ago after living in Houston, North Dakota and then Alaska. She credits a dark Alaskan winter with prompting her to pick up a paintbrush and begin to combine two passions: the love of art and animals. Her watercolors look beyond the physical nature of her subjects to capture their essence through the expressive use of color. Bringing quality, reliable electric service to the Texas Hill Country was Bandera Electric Cooperative’s first mission when local community members chartered the cooperative 78 years ago. The aspirations of those early member-owners, to improve their quality of life, have been realized and BEC continues to serve this mission today. The cooperative has grown from a small office near the banks of the Medina River in Bandera, Texas to a thriving business with four office locations that offer member-owners innovative programs and rates and promotes economic development. Furthermore, BEC employees fully embrace the mission to care for local communities; going above and beyond providing electric service. “After all, we’re your neighbors,” said Brian Brockel, manager of strategic products and services. “That’s why BEC makes it a point to be involved in our communities through regular donations to education and nonprofit organizations like the Boerne Wild Game Dinner.” Concern for the community is also about neighbors helping neighbors through Bandera Electric Charitable Foundation’s Operation Round Up program. This program is funded when members choose to round up their monthly electric bills. Donations are granted to individual members, families and nonprofit organizations in need. The average donation per member is $6 a month, and any member who would like to donate is encouraged to call the cooperative to opt-in to the program. Brockel says that BEC regularly supports local schools by offering a classroom program that teaches children electricity safety in a fun and innovative way. Bandera Electric is committed to education beyond the elementary classroom. “We encourage members and their children to work hard and follow their dreams,” said Brockel. “Each year, BEC gifts 10 academic scholarships, sponsors local high-school students on the Government-in-Action Youth Tour and supports local agriculture at area stock shows.” BEC’s service territory, to include Kendall county, is currently seeing a strong upswing in the number of commercial and residential construction projects. “BEC is invested in sustainable, responsible business development, and the cooperative’s experienced staff of industry professionals is extremely knowledgeable and familiar with the region,” said William Hetherington, chief executive officer. “No matter the size or scope of a project, BEC is available to help businesses manage their growth from beginning to end.”

To continue to provide members valuable and needed services into the future, BEC is adding renewable energy options and broadband internet to the cooperative’s portfolio of services. Hetherington, notes that all of this is in keeping with BEC’s key mission to enhance the quality of life of members through highly reliable electric and other related services. The introduction of broadband communications is one more initiative the cooperative is undertaking to serve members into the future. In a time when access to high-speed internet is almost as important as access to electricity, BEC is able to encourage business growth, educational opportunities and guarantee value for future generations of members. “In this new century, BEC members are once again seeing a disparity of essential services,” said Hetherington. “This is not about electrification; this is about the ‘digital divide’.” This year, BEC broke ground on a community solar farm in Leakey. Hetherington says the project will serve to support the Leakey substation transformers, diversify the BEC energy portfolio and offer an affordable renewable energy option to all members. BEC members will not have to install solar panels on their rooftops or property to be a part of solar energy. Instead, members can purchase 100 kilowatt hour blocks of solar energy at a guaranteed longterm rate for their home or business. BEC encourages any member interested in learning more about solar installations or community solar to call the cooperative. “It’s about education of our members,” said Brockel. “They are not alone in their renewable energy endeavors, our member services staff and sustainability engineer are ready to answer any questions they may have.” Hetherington says that BEC will continue to develop new energy programs and value-added services to meet member needs, as well as to continue to provide reliable, safe electricity to homes and businesses well into the future. this gift would be the last one her dad would give his wife as he was terminally ill with cancer. A couple of years later, Henglein was in a different city in another shop when its owner stopped Henglein to admire a pendent she was wearing. The shop owner told Henglein that a visitor had recently been in the shop wearing a monogramed silver pendent. The visitor called it her signature piece because it was the last gift her husband gave her before his death two years previous. “Full Circle” moments are not rare when the product is so personal. In 2015, the Wild Game Dinner Chairman Beca Short met Henglein who agreed to create a custom piece just for Boerne’s Wild Game Dinner and donate it for auction. Aware of Boerne’s heritage, the artist researched German styles and icons. She created

a stunning piece resembling a hunter’s shield and features the letters JM for Jeager Mister or Master Hunter in German, a rank achieved by only the most respected hunters. This pendant also proudly featured a bow and arrow set decorating the top of the pendant. Ted Zrzavy purchased the Argentinian dove hunting trip during the 2014 Boerne Wild Game Dinner live auction and describes the experience as a “dove hunter’s paradise!” “Everything about the trip was top-notch,” says Zrzavy. “The Sporting Adventures team treats you like a king!” According to Ted, “The staff is courteous and helpful, the accommodations are beautiful, the food is amazing, and that is all just an added bonus to the unbelievable dove hunting.” It is recommended that you rent your guns from Sporting Adventures, which is what Zrzavy did. “It was really nice during the hunts, there was someone with you to load your guns and hand you a new one when you needed to reload. I shot 1,025 rounds in three days and never even touched a shell! We shot so many dove that my shoulder was black and blue when I got home, but it was a great time.” As for the meals, the Sporting Adventures team provides lunch that is cooked out in the field “Gaucho” style over an open fire. Dinner is a gourmet meal back at the Estancia. Zrzavy added, “We had a fabulous time and I would highly recommend this experience to anyone who loves to dove hunt. Beca Short Wildlife Management Scholarship

Hollis Leonard’s experience with the Boy Scouts has played a large roll in shaping who he has become. “I have been involved in Scouting since I was eight years old,” states Leonard. “I enjoyed experiencing the outdoors with my friends and learning valuable skills.” Having invested countless hours in completing requirements for rank advancements and earning merit badges, attending high adventure camps, as well as being a counselor at leadership camps all required Hollis to develop a strong sense of hard work and determination. That hard work paid off when Leonard was inducted into the Order of the Arrow, Boy Scouting’s honor society and eventually when he was awarded the rank of Eagle Scout. Leonard has applied this same work ethic to his education, having been accepted to Texas A&M University where he plans to study agriculture. “Hollis is extremely passionate about his animal science and other educational pursuits,” said Joanna Marsh, Agriculture Science Teacher/FFA Advisior at Champion High School. “Any opportunity he has to learn something new serves as fuel for continued excellence and a new experience he can apply to his practice,” she added.

Hollis’ determination is evident in his accomplishments. While too numerous to list, Leonard has excelled in agricultural activities through the Boerne Champion High School FFA and Kendall County 4-H, including showing cattle and participating on the Livestock Judging Team. Just to name a few of his many accomplishments, in 2016 Hollis won 1st Place and Champion Hereford Steer and 1st Place and Champion Chianina Steer at the Kendall County Junior Livestock Show. Those wins are accompanied by countless other awards for his steers and heifers over the years. He was also a San Antonio Stock Show Calf Scramble Winner and was the recipient of the 2016 Reserve Champion Senior Showmanship award at the Kendall County Junior Livestock Show. Leonard is also very active in his youth group at the First United Methodist Church in Boerne. With his youth group he attended a mission trip and participates in service projects that benefit the local community. It is evident through his accomplishments that Hollis is an outstanding young man that is intelligent, capable and willing. Wild Game Dinner Fine Arts Scholarship

Music has had a profound affect on Delaney Young. She believes that “music and all fine arts have the power to influence, inspire, and bring humans together.” Young’s love for music runs so deep that she aims to make a career of it. “A career in the arts will provide me with an avenue to encourage, repurpose and heal people, and I cannot imagine a more noble and fulfilling vocation,” said Young. Delaney plays classical piano, guitar, ukulele, cello and also enjoys songwriting. According to Young, “I was raised in a very musical family and encouraged to sing and explore different instruments from a very young age.” She even created her own EP album as a junior, featuring her guitar, piano and vocal talents. Already using her talents to serve others, Delaney served as the worship leader for Oak Hills Church Youth Ministry during her sophomore and junior years of high school and has even taught piano lessons to several students. “Whenever I express myself through music, those around me – artist or non-artist – open up and express themselves in their own way,” she said. In addition to music, Delaney possesses even more creative talents. According to Becky Ryden, one of Young’s instructors at the Geneva School of Boerne, she has a “brilliant mind for the written word.” Delaney has been on the Journalism staff where she has served as Editorial Editor and

Through her collaboration with other students, the Geneva School of Boerne’s publication has won several awards. “While Delaney was on the editorial staff she worked extra hours to teach herself design and quickly started laying out her own articles. Overseeing her growth in her leadership in journalism has been a deep honor,” said Ryden. This past summer Delaney worked at an internship for a local publication and had many of her articles published for the community to enjoy. Delaney possesses excellent leadership skills and looks for opportunities to serve and encourage others. She has participated in various community outreaches, short-term mission teams and as a mentor. Young believes in giving her best in everything that she does. Living the Dream

Coming from rural Minnesota, hunting was a way of life for Matt Otten’s big, close-knit family. Their rich tradition of hunting was a means to feed the family. Like families in the Texas Hill Country, Matt’s family celebrated their hunting adventures by preserving their shared memories through the art of taxidermy. As a child, the mounted deer racks that lined the walls of the Otten family homes left an indelible impression on Matt. It was only natural that he would later become interested in hunting and gathering his own trophies to preserve his own family memories. For Matt, capturing events such as your son’s first white tail, that last family vacation with your parents, your first bow hunt or the one that didn’t get away through a well-done trophy can instantly allow you and your family to relive that successful experience. While in his early teens, Matt’s big brother Art began training him to handle trophies. Together they worked on hundreds of mounts provided by family, friends and neighbors. As they worked together, a shared a dream of opening their own business developed. Anxious to spread his wings, setting out on his own, Matt left Minnesota and joined another brother, Duane, who is the foreman of the Double Diamond Ranch in Boerne. During this time, Matt met his future wife Kristin, who helped him through an unexpected battle with cancer. Matt soon found himself once again dreaming about opening his own business. He developed a business plan and launched Otten Brothers Taxidermy five years ago. Matt’s brother Art still serves as his mentor. Matt invites visitors to stop by his exhibit and take pictures with the trophy mounts in the display. For example, guests may choose to snap a unique selfie with a mounted bongo, an herbivorous, mostly nocturnal forest animal! It is among the largest of the African forest antelope species and features thin wavy stripes around its body. The Otten Brothers’ projects are varied. Their most exotic job was an African lion attacking a zebra, but not all of their jobs are so dramatic. Matt produces his art with animals of all kinds, including fish and fowl, as well as game heads, European mounts and lifesized animals. Matt’s customers come with all levels of experience, from the novice hunter to the avid outdoorsman. His website provides details for the steps that need to be taken

at the time of the hunt to ensure a successful transition to the final product. Matt welcomes phone calls before or after the hunt to make sure his customers have a great experience and get the results they desire. To Fast Talk At Another Wild Game Dinner by Joe Lilli

Who’ll give me a hundred dollars? One hundred dollar bid, now two, now two, will ya give me two? Two hundred dollar bid, now three, now three hundred, will ya give me three? That’s the familiar, fast-talking, rhythmic chant of auctioneering. While it may sound like a foreign language, the speed makes it exciting and the rhythm makes it mesmerizing. This rapid-fire way of talking is an auctioneer’s way of selling more animals, automobiles, or whatever else needs to be auctioned in a shorter period of time. For instance, at an average horse auction, the auctioneer’s chant can help him or her sell an average of 30 animals per hour, while at an automobile auction, as many as 125 or more cars can be sold per hour. Folks who attend Boerne’s Wild Game Dinner event on Nov. 5 will get to hear world champion auctioneer Craig Meier display his auctioneer’s chant. Since the event was established five years ago, he’s auctioned guns, trips, hunting adventures, and vacations.

Childhood Interest

Meier has always been fascinated with auctioneering. “My parents will tell you that I was trying to auction even before I could count. Just always had an interest in it from the time I was a kid,” he confides. He did his first auction – a charity event for the Chamber of Commerce in Ennis, Texas – when he was only 17. In 1998, he attended the Texas Auction Academy continued on page 48

in Lewisville. Although his instruction lasted only nine days, Meier notes, “You can’t really learn how to auction in nine days. At the Academy, they teach you a number of drills and techniques that you take home and practice. And continue to practice. Over time, you get a lot faster and a lot better.” The same year he completed his training at the Auction Academy, Meier opened Meier Auctioneers in Ennis. Two years later in Norfolk, Va., he met his future wife, Angie, at the National Auctioneers Association’s 2000 Conference and Show. They married in 2001. After marrying Craig, she attended the Texas Auction Academy in 2003 to become an auctioneer.

Champion Auctioneers

Both Craig and Angie are champion auctioneers and work their business together. Craig is the 2003 Texas State Champion Auctioneer and the 2007 World Champion Automobile Auctioneer. Angie won the 2005 Texas State Rookie Championship and the 2007 Texas State Ringman Championship (a Ringman, also “bid spotter,” is an auction term used to describe someone who works the auction floor before, during and after the auction). Competing together as a team, the Meier’s also became the 2007 World Champion Auction Team. With several auctioneer championships in hand, the Meier’s fittingly changed the company name from Meier’s Auctioneers to Champion Auctioneers. Together, they conduct nearly 500 auctions annually, including automobile, industrial, commercial, real estate, personal property, farm and ranch, and fundraising-benefit auctions. Craig, whose education includes Spanish, is also a skilled bilingual auctioneer. This allows him to reach a wider audience for his clients.

At one point, they auctioned dotcoms, traveling to such places as Milan, Italy, Vancouver, Canada, New York, and Las Vegas. Meier says one of his most unusual auctions involved white racing mice in a Calcutta auction for the Texas Auctioneer Association (Calcutta is an open auction held in conjunction with multiple entrants). “We sold five mice for a total of about $30,000. The mice then raced. Part of the proceeds went to charity and the rest went to the winner,” he says.

Helicopter Hog Hunter

From mid-January through mid-March, Meier takes hunters to the air to hunt wild feral hogs. The hunting is done from a helicopter. The huge feral hog population across parts of Texas has become a costly burden on farmers and ranchers. The hogs eat and destroy crops, and cause extensive property damage. In 2009, Meier created Heli-Hunter to reduce the feral hog property damage. With a change in Texas law in 2011, which took the financial burden of helicopter hog hunting off landowners, he was able to charge his customers to hunt

the hogs from the air. For a time, he and his former partner, Terrell Coleman, became hosts of a popular TV series on the Sportsman Channel featuring celebrities engaged in helicopter hog hunting. Although the show was number one in the ratings, they ended the series in 2014 to concentrate on their hog hunting business. This past season, HeliHunter sportsmen killed more than 4,000 hogs in areas around Dallas and Fort Worth, the Trinity River, and in West Texas around Abilene. â&#x20AC;&#x153;We donate the meat to Hogs for a Cause and local food banks. In 2016, we donated more than 20,000 pounds,â&#x20AC;? Meier says. At the 2016 Wild Game Dinner, Meier will auction a helicopter hog hunt.

ALLIGATOR JAMBALAYA 1 lb Marinated alligator fillet cut into small pieces 1 lb Smoked sausage (diced) 3 Tbs Vegetable oil 2/3 cup Bell peppers chopped 2 clv Garlic crushed 3/4 cup Parsley chopped 1 cup Chopped onion 1 cup Chopped celery 2 can Tomatoes (16 oz each) 2 cup Chicken stock 1 cup Green onion 2 tsp Oregano 2 ds Red hot sauce (optional) Cajun spice blend to taste Salt to taste 2 cup Raw white rice DIRECTIONS 1. Preheat oven to 350⁰F. 2. In deep frying pan (cast iron preferably)

sauté the bell pepper, garlic, onion, parsley & celery. 3. While this is cooking, add tomatoes & their liquid, the chicken stock &, green onion to a pot that can cook on the stove and in the oven. 4. Stir in spices, sautéed vegetables raw rice, sausage and alligator fillet pieces. Cook on medium-high heat until liquid is absorbed (stir occasionally) 5. Bake covered in the oven for 25 minutes.

VENISON MEATLOAF 1 ½ lbs ½ lb 1 cup ½ cup ½ cup 3 Tbs ¼ cup 2 Tbs 1 1/4 tsp 1 1/4 tsp 2

Ground venison Ground pork Crushed saltine crackers Finely chopped celery Finely chopped onion Worcestershire sauce Dijon mustard Chopped fresh parsley Salt Black pepper Large eggs, lightly beaten

1 can Tomato paste, 6 oz 5 slices White bread 2 Tbs Firmly packed brown sugar 1 Tbs Fresh lemon juice DIRECTIONS 1. Preheat the oven to 350⁰F. 2. Line a rimmed baking sheet with aluminum foil. Spray the foil with nonstick cooking spray. 3. In a large bowl, combine the venison, pork, crackers, celery, onions, Worcestershire sauce, 2 Tbs of the Dijon mustard, the parsley, 1 tsp each of the salt and pepper, the eggs and half the can of tomato paste, and mix together until just combined. 4. Place the white bread on the bottom of a baking sheet and place the beef mixture on top. Shape the mixture into a 12-inch loaf. 5. In a small bowl, combine the brown sugar & lemon juice with the remaining tomato paste, Dijon mustard and salt & pepper. 6. Spread the mixture over the meatloaf and tent with aluminum foil. 7. Bake to 165⁰F, about 50 minutes. Remove the foil during the last 10 minutes of cooking. 8. Let the meatloaf stand for 10 minutes before serving.

DIRECTIONS 1. In a skillet, deeply brown the meat in oil. Add onions, garlic. Worcestershire sauce, bay leaf, oregano, salt, and water. Simmer, covered, for 1 ½ to 2 hours, or until meat is tender. 2. Add potatoes and carrots; cook until tender. 3. Combine flour and water. Stir into the stew. Remove bay leaf before serving.

DIRECTIONS 1. Whisk together the ketchup, brown sugar, mustard powder, lemon juice, onion powder, garlic powder, celery salt, black pepper, Worcestershire sauce, nutmeg, & hot sauce in a bowl. 2. Place the elk roast into a large slow cooker, and pour the sauce over top. 3. Cover, & cook on High until the meat shreds easily with a fork, about 5 hours. 4. Shred, and serve on the hamburger buns.

Janik Alligators

Janik Alligators, LLC is more than just an alligator farm. They are your one stop shop for all things alligator. Founder Larry Janik was not always in the alligator business. He started off managing hog eradication for ranchers in the area. In 1987, the U.S. Fish and Wildlife Service removed the American alligator from the endangered list. Soon after that the Texas Parks and Wildlife Department started seeing an increase in the number of phone calls as people encroached on alligators’ habitats. In the late 1980’s Larry started Janik Alligators, LLC. Larry went from being called to remove hogs to hunting alligators. He has since retired from the alligator business, passing the reins to his wife Donna and son Jason. The Janiks are licensed by and contracted with the state as alligator nuisance control hunters. Janik said, “April through July are some of their busiest months for nuisance alligator encounters.” An alligator is deemed a nuisance when they endanger people, livestock or pets. Alligators breed and nest during the spring and summer months, driving

them farther inland to find a mate. His incentive for capturing the alligators is that he can harvest them for commercial use. Janik makes it clear, “We are not a sanctuary. We are a working alligator farm and all alligators killed are processed for their meat, hides and skulls. We can do everything on site: we process meat, make wallets, purses and belts from the hide and even have an onsite taxidermy service.” Janik says it is important to know that most of the nuisance alligators they kill are not alligators that can be relocated to another place in the wild. They are no longer afraid of humans and will continue to be a threat to people and livestock. In 2003, the state of Texas made it a Class C misdemeanor punishable by a fine of up to $500 for feeding an alligator. “Once an alligator associates people with food they will be hard to drive away,” says Janik. Janik Alligators are also certified alligator egg harvesters. They pay land owners for access to nests that are located on their property. Their state license allows them to collect one nest

for every two they find. According to Janik, “robbing an alligator nest is not an easy job and must be done by at least two people. One person stands guard to distract the mother while the other takes the eggs.” They are careful to not cause harm to the mothers because they will typically continue to lay their eggs in the same place for many years to come. Once they gather the eggs they take them back to a building on the farm that is used as an incubator. The eggs begin to hatch in the middle of August and Janik says they expect to hatch over 5,000 babies this year. Once they hatch they will sell them to a farm that raises them to be at least 4 feet before killing them for their meat, hides and skulls. It is required that a minimum of 14% of the alligators raised must be released into the wild. Interested in a guided alligator hunt? Hunting an alligator is a combination of spot and stalk, baiting and running lines. Janik Alligators, LLC has opportunities for guided hunts along the Texas coast. The Texas alligator hunting season is from September 10-30th.

Karen Daly Agriculture Scholarship

Wesley Zoeller knows that higher education doesn’t have to only come in the form of a degree from a four-year university. Zoeller, who plans to attend Texas State Technical College in Waco to get his Associates of Applied Science and Welding Technology degree believes that there is much benefit to people furthering there education in trades. “The country will always need farmers, plumbers, electricians, mechanics, welders, etc.,” said Wesley. “These professions are just as much in demand as those that require a master’s degree,” he added. Through his education at TSTC he plans to further his knowledge in different welding techniques, soldering, pipe fitting, machine operation and academic classes. “These skills will prepare me to apply for jobs in areas of welding that interest me and that I can make a living doing,” said Zoeller. Wesley has a strong agricultural background and a history of community involvement and leadership. He has been an active member in the Kendall

County 4-H Beef Club, serving as Treasurer during his freshman year, Vice President his sophomore year and Council Delegate during his junior year. He is also involved in the Kendall County 4-H Swine Club and was a council delegate during his senior year. Zoeller participated for three years in the Champion High School FFA Livestock Judging team, which made it to State competition during his sophomore year. Pursuing his passion of welding, Wesley also participated in the 4-H Welding Team during his senior year. This team was awarded Reserve Grand in Division in San Angelo and San Antonio, Reserve Grand Over-All at the Houston Livestock Show and Rodeo and they went to the Skill USA State Competition in Corpus Christi. No stranger to hard work, Wesley has helped with the Kendall County Junior Livestock Show since he was old enough to volunteer. According to Wesley, “I have dragged the show ring with our four wheeler, set up and torn down tables and chairs for the auction, sorted and loaded animals to be transported to various places, and helped line up steer exhibitors and their animals.” Wesley also helped the Kendall County YEAC get their new facility finished. “I helped dig a ditch and glue pipes for the rainwater catchment system, welded on the arena panels, weeded and picked up trash at the entrance, helped with the plumbing in the wash rack and more,” he added. “Growing up in a small community that always works together and puts others first, Wesley knows it takes everyone to keep the livestock show a success. At his age, his desire to volunteer is admirable and a trait that is unique for young people today,” said Kendall County Judge Darrel Lux. “Zoeller’s participation in FFA and showing animals at the Kendall County Junior Livestock Show while maintaining a good grade point average in school, is another demonstration of his good work ethic.” Zoeller is also an excellent cook! He has volunteered for the last five years at the Boerne Wild Game Dinner, helping his dad’s cook team, the Grill Billies, as they cook up savory food for the event. In addition to Boerne, he’s also cooked at the Fredericksburg and Gatesville Wild Game Dinners in support of their 4-H Clubs. With his strong work ethic and moral character, Wesley has a bright future ahead of him. As a welder he will lend great support to the many farmers, ranchers and businesses in the community.
