the making of a custom cave How cool would it be to have your very own cave? Have you ever thought of having an underground getaway that acts as an extension of your home or business? What would you use the space for? Maybe a wine cellar or the ultimate home theater, or how about a spa-like retreat or even an amazing home gym? “The possibilities are endless and limited only by your imagination,” said David Provost, owner of Bacchus Caves. “We have even had people approach us about underground tennis courts and bowling alleys.” Currently, Provost and his team are in the works of constructing an approximately 4,200 square foot cave for a local Boerne couple. The cave will include a dining/entertaining area, multiple lounge spaces, a kitchenette and full bathroom as well as a home gym and storage areas.

“This particular project is expected to be about a year long process. Each project differs depending on the size, the geology, etc. There are a lot of different factors that go into each cave and they are all unique,” Provost added. According to David, “If someone wants their very own custom cave, we do whatever we can to make it work. There have been very few instances that we have come across in which we just couldn’t make it happen.” So once it has been determined where the cave will go and how the client would like the space to function, construction can begin. “The current Boerne Cave project has all been cut out using a cutter head mounted on an excavator. Many caves require blasting, but that all just depends on the geology of the site,” said Provost. As you can imagine, a 4,200 square foot underground structure would result in a lot of displaced dirt. To date, Bacchus and his team estimate that they have removed approximately 2,000-cubic-yards of dirt. Once the digging has begun, the Bacchus team tries to work as many areas at the same time as they can, starting with the main run of the cave and then progressing to the off shoots. To secure the walls of the cave, high strength wire mesh is installed and covered with layers of shotcrete, which is sprayed concrete

that is projected at a high velocity onto the surface. “The process of building something underground is more difficult than above the ground. Everything depends on the ground itself as to what the final outcome will be. The more the owners are involved, the more successful the project will be. When building a cave, it is important for the clients to be flexible. For example, if you hit bad ground along the way, it may be better to stop digging in that direction and go a different way in order to keep the costs down. Ultimately, you don’t want to fight the ground.” Bacchus Caves also works a lot with the clients’ personal architects, general contractors and interior designers in order to achieve the desired vision for each project. Just as in a custom home, there are so many different finishing touches that can truly customize each individual cave.

CELEBRATING 40 YEARS OF PROVIDING QUALITY WESTERN WEAR TO THE TEXAS HILL COUNTRY!
This December marks 40 years that Billy’s Western Wear has been outfitting the Texas hill country in the latest western fashions, and through those years the store has become synonymous with quality western wear and accessories. While you may be familiar with the stores, have you ever wondered who the “Billy” behind Billy’s Western Wear is? Well, it’s not just Billy that is the driving force behind the stores, but rather the Bishop family! And the story behind the stores’ 40 years is actually a lot more than meets the eye. The Billy’s Western Wear tale is in fact a good old fashioned love story: love of God, love of their country, love of each other and love and service to their fellow man. Billy Bishop and his wife Sarah are both native

Texans and currently live in Boerne. Born in 1926, Billy will be 95 this upcoming January 2021. He grew up on his parents’ dairy farm where he remembers helping out by delivering milk. Sarah’s parents were farmers and she was the seventh of eight children, born in 1938. Both Billy and Sarah had to work very hard to help their families growing up. It was a hard life for both of them. After Billy’s 16th birthday, his father died, leaving his mom with two sons. Sarah’s mother died when she was just five years old. These absences left both families with huge struggles just to make ends meet. “I recall having to walk to school without any shoes and being made fun of because our family was so poor,” said Sarah, “Perhaps that’s one of the reasons our stores carry so many boots continued on page 18

growing something. Although Sarah had to work to help her family, she knows it helped her to learn the value of hard work and reward. She remembers picking cotton at a very young age. When her father would take the cotton to be weighed and then paid, he would always give her a little bit of money by the amount she picked. “I have always valued the work ethics my father taught me,” said Sarah. After moving from home, Sarah moved in with her sister. She got a job at a garment factory for several years. She was such a hard worker that they moved her to the office to process payroll. Billy & Sarah met in church. They courted and knew they were meant to be together. It was truly a God-designed marriage and they were married in 1956. The two will celebrate their 65th wedding anniversary this coming February! While Billy worked at Kelly Air Force Base, Sarah went to school and completed her education and attended San Antonio College, Texas A & M, and International Bible College. Sarah worked her full-time job and took a part-time job as a file clerk at a large food & department store. Little did she know, this would be the opportunity that would change her and Billy’s lives, as well as the lives of their future family. It didn’t take long and Sarah was soon hired on full time and began working her way up. With lots of hard work, sacrifices and many promotions, she was eventually promoted to the Senior Store Manager. This was a distinguishing honor, making history within the company that had over 45 stores throughout the United States. She was the first female to become a Store Manager within that organization. The collection of their life experiences eventually led them opening a western wear store. The dream had grown from their love of the land they had grown up on and the farm animals that had been such a large part of their lives. “Growing up in the country, Billy and I had been poor, but rich in a heritage of the country life,” said Sarah. continued from page 16
and shoes in all sizes and price ranges!” At age 18 Billy was drafted into the Army and served one and a half years in the “Wolf Division” 1st infantry in World War II. According to Billy, “Many of my fellow service men didn’t make it back home to their families. I was always very appreciative for my mother’s prayers. At a young age I developed a great love for my country, for the men and women who enlisted, and the people of our great nation.” After his return from WWII, Billy joined the reserves and was called once again and served in the Korean War as well. After the war, Billy then started working as a civil servant at Kelly Air Force Base in San Antonio, Texas and retired in 1980 after serving faithfully for 36 years! At age 16, Sarah had to quit school to help support her family, as was expected at that time. She remembers her father was always planting and

So in 1980, Billy and Sarah, along with their teenage daughter Deborah, opened their first Billy’s Western Wear store. The store was a small 600-square-foot “hat shop” in the old McCreless Mall in San Antonio. As they saved up some money, they eventually opened up a boot shop there too. Over the course of the next 12 years, the Bishops opened six larger western wear stores, several kiosks and purchased a distribution center, all of which were located throughout San Antonio. Billy’s Western Wear opened their first store in Boerne in 1997 in a strip center. Soon after, they opened an even larger 4,365-square-foot store in Kerrville. In 2002, Billy & Sarah purchased 0.9 acres on S. Main Street in Boerne where the first 9,000-square-foot Billy’s Western Wear debuted in 2005. At that time, they moved their offices and distribution center from San Antonio to Boerne. Having designed over six retail locations in San Antonio, it was Sarah’s dream to have the opportunity to design both the Boerne & Kerrville stores. The Kerrville store debuted in 2008 and Sarah’s designs even won the prized award of “Kerrville’s Beautification” city award in 2016. Along the way, Billy and Sarah have received many distinguishing awards. Some of which are being nominated Business of the Year 2012, Best Western Wear, Best Retail Shop, Best Home Décor and Best Looking Business. Sarah has been a guest speaker at hundreds of events and churches and has been nominated Businesswoman of the Year! In 2019 Sarah was named with the Trademark Woman of Distinction Award. Billy’s Western Wear is also recognized by many top vendors as their number one account! So what do both Billy and Sarah attribute to their success? According to the Bishops, “First and foremost we credit our faith in God, along with serving and giving to our church, local charities and nonprofit organizations.” In addition, Sarah’s years in management, Billy’s faithfulness in business, their many great employees and finally their multi-generational family that has been working along side of them for these 40 years are all things that have lead to the success of Billy’s Western Wear! These days, the business is run by a whole team of family members. Billy has since retired, but Sarah is still the CEO and works 45-50 hours every week. The Bishop’s only daughter, Deborah White, grew up in the business and has always been a part of the store operations. Deborah recalls as a teen witnessing her parents’ dream coming to life. “It was a total act of faith,” she recalls. “They had no money, no resources, but just a dream, much prayer and a whole lot of hard work. I witnessed first hand the incredible sacrifices my parents made while building this business.” Deborah’s current role is the Vice President of Administration, and while she has done it all, she has currently settled into the accounting side of the business. In addition, she is still a buyer and does just about anything else needed within the business. Deborah met her husband, Greg White, in college and he began working part time at Billy’s. After they graduated, they were married in 1988 and Greg joined the team full time. Through many years of working his way up through the organization, Greg
now serves as the Vice President of Retail Operations and has been with the company for 32 years! Greg and Deborah have two daughters and a son-in-law, all who work in various roles within the company. “Billy and Sarah have five great grandchildren under the age of six. We can only imagine the excitement of adding to the family business one day,” added Greg. The Bishop family is very thankful to all of their customers that have supported them through the years and encourage those that have never been to Billy’s Western Wear to stop in! According to White, “The Billy’s team attends every market to ensure they stay in front of the western wear trends and fashion styles. They strive to offer all the newest styles, while keeping the classics. The GVTC Foundation’s Thanksgiving Giveback Project Delivers 427 Meals this Year!

Here at GVTC, we are so thankful that we could hold our Thanksgiving Giveback for the 8th consecutive year amid the pandemic. Though our process was changed this year with social distancing, PPE, and contactless deliveries, we were so excited to give back to our community again, especially with the hard times COVID-19 has brought to so many families. The GVTC Foundation, GVTC’s employee-driven philanthropic arm, has dedicated its time each fall to partner with local nonprofits and youth organizations to bridge the local food gap. We host an annual Thanksgiving Giveback Project where we supply Thanksgiving meals, including a full frozen turkey and all the traditional fixings, to those in need. By teaming up with local food pantries, The GVTC Foundation is able to identify families truly in need within the GVTC service area, which encompasses all of Boerne, Canyon Lake, Bulverde, Spring Branch, Blanco, and Gonzales. LOCAL NONPROFITS PARTNER This project would not have been possible without the continuous support we receive from GVTC employee volunteers, local groups, and donors each year. First, The GVTC Foundation partners with local food pantries who supply the family names of those we deliver to. Then, we work with local organizations, including school groups, churches,
and businesses, from September to November to raise food items and monetary donations needed for each Thanksgiving meal. And last, our GVTC employee volunteers personally pack and deliver all meals to needing families. This year, we partnered with nine food pantries and 20 local organizations for this Thanksgiving Giveback Project. We were very fortunate to have had some of our donations come from large corporations. We are so appreciative and honored by their support. Their graciousness allowed us to feed more families than we ever have before. “It’s the biggest election of our lifetime.” “The market will definitely crash after the election”. These were a couple of comments I heard prior to the 2020 presidential election. And, they were the same comments I heard prior to the 2016 presidential election. And the 2012 and so on. But, should you really modify your portfolio based on elections? It’s not uncommon for investors to become nervous prior to elections. In fact, volatility does tend to increase in the weeks leading up to an election. However, investors that are too focused on elections and changing their portfolio tend to regret that decision later. Building an investment portfolio to help meet financial goals has more to do with an investor’s time horizon, financial goals, ability to take risk, and willingness to take risk than it does about specific events like elections. In fact, much of the data suggests that stock market cycles are very similar over the long term regardless of who is in the White House. So, why do so many investors get so caught up in politics in regard to their portfolios? There are a few logical reasons. A new president could try and change tax policies, he or she may be more or less friendly on business, or they may work better with Congress. These are just some valid concerns that could impact the profitability of companies and thus the future value. But, this is just one piece of a very large puzzle. What about interest rates, Fed monetary policy, the underlying health of the economy, consumers, etc.? Those are also factors that move stocks. But, it’s even bigger than that. It goes back to you and your financial situation. For example, should a 22-year old fresh out of college that’s saving in their new 401(K) be concerned about the election from a financial standpoint? No. They should be learning the art of saving, compound growth, and the long-term returns the stock market has historically provided. Conversely, should an 80-year old that is living off their portfolio by making monthly withdrawals be that concerned about who wins an election in relation to
their portfolio? No. They should be more concerned about ways to earn a reasonable income and where interest rates currently stand. All investors, regardless of age, should start with a comprehensive financial plan that takes into consideration their current and future expenses, their goals, the assets and liabilities, inflation rates, and expected returns on several asset classes to build a long-term portfolio. A well-built portfolio should be able to withstand some volatility and have enough diversification that if short-term cash needs can’t be met, the portfolio can supplement. Elections shouldn’t play a part in that construction. To put it mildly, financial markets were volatile in 2020. The volatility that was present had more to do with COVID and a future vaccine rather than the election. But, even COVID shouldn’t be something that alters your long-term plan. The key is to have a plan. Yes, plans will be modified over time as your situation changes. But, events such as elections shouldn’t have a bearing on it. Year-end Tax Planning for Small Business Owners

As the year comes to an end, it is time again to consider how you can keep a little bit more of your money out of Uncle’s Sam pocket. Below is a list of tax ideas for the savvy small business owner. Some you have likely heard of before, but maybe you’ll see something new that will save you some money! 1. PUT YOUR KIDS TO WORK: As a business owner you can literally put your child on the payroll. You will be able to deduct their wages like you would any other employee, which will lower your taxes. Meanwhile, your child can earn up to $12,400 without paying any federal income tax! This strategy makes the most sense for older children in high school and college. Keep in mind that your child should earn the wages they are paid! 2. CHARITABLE DONATIONS: If you are thinking of making a large donation to charity, but don’t know who to give the money to, consider a donor recommended fund. These organizations act as an outsourced private foundation, allowing you to donate the money into a holding account and take the related deduction now. At a later date, you may direct the fund to send the money on to charities of your choice. 3. RETIREMENT PLAN CONTRIBUTIONS: This is one of the best ways to reduce your taxes, for two reasons. First, you keep the money! Second, you can make retroactive contributions after you have a better idea of your tax situation. For example, you can make a SEP IRA contribution in April of 2021 that will be deducted on your 2020 tax returns. Many retirement plans are available, but the most common for small business owners are SEP IRA accounts and 401k accounts. Make sure to discuss with your CPA at tax time! 4. QUALIFIED BUSINESS INCOME DEDUCTION (QBI): As a business owner, you are eligible for the QBI deduction. This deduction is calculated based on your business net income after your own wages are paid. There are many limitations

beyond the scope of this article, but suffice to say, the higher your business income the more likely you are to get a nice QBI deduction. One of the oddities of this deduction is that the W-2 wages you pay to yourself are deducted from your business income. That means it is important to keep your own W-2 wages low to maximize your QBI deduction, as well as pesky payroll taxes. 5. COST SEGREGATION STUDIES: If you have purchased real estate or completed construction on a new building in 2020, you need to consider a cost segregation study. These studies are conducted by qualified consultants, who will break down the cost of your property into different line items, for example the sidewalk or cabinetry. The reason this is beneficial to you, is that your CPA can take accelerated depreciation on many of these items rather than spreading the write-off over decades. This will reduce your taxes now, but keep in mind your deduction will be smaller in future years. 6. CAPITAL LOSSES: If you expect to have large capital gains derived from the sale of stocks, real estate, etc., consider harvesting your capital losses before the end of the year to offset the gains. But remember that after you have offset capital gains, you can only deduct an additional $3,000 of capital losses against taxable income. So be mindful that harvesting losses may not wipe out all your taxes. 7. SPEND MONEY: Purchase equipment and vehicles to get a quick write off through 100% bonus depreciation. Pay bills before the end of the year to get the deduction on your 2020 tax return. Remember that the IRS doesn’t care if you use cash or credit. That means that you can use loans or credit cards to get a deduction now. But keep in mind you will have to pay back the people you borrow money from! 8. DON’T SPEND MONEY: Remember that your tax write-off is saving you cents on the dollar. In other words, a dollar spent will save you somewhere between zero and fifty cents in taxes. Don’t spend a dollar just to save fifty cents! Make sure that your expenditures make sense for you and your business. HOW TO MANAGE BEING STRESSED & DEPRESSED DURING THE HOLIDAYS

by Dr. Leigh Ann Greenberg, RPh – Annie’s Apothecary Stress and depression can ruin your holidays and hurt your health. Planning, being realistic, and seeking support can help ward off stress and depression. Maintaining nutritional support is also a must during this time. Depression can occur during the winter which is typically termed SADD or Seasonal-Affective Depressive Disorder. Symptoms usually start in the fall and continue during the winter. These symptoms may include hopelessness, increased appetite with subsequent weight gain, increased sleep, less energy, and ability to concentrate, social withdrawal, unhappiness or irritability. Although most physicians will prescribe an anti-depressant for just a few months, we would rather recommend vitamin D3 supplementation. You can have your vitamin D levels tested at your physician’s office. The goal level of 25 (OH) vitamin D is 50-60 ng/ml. It may take doses of 2000-10,000 IU/day to get an optimal level. Your doctor may prescribe a weekly dose of 50,000 IU or you can take a pharmaceutical grade vitamin D3 daily to keep your blood level more stable. Getting repeat lab tests will determine how much vitamin D3 supplementation is necessary for you. Vitamin D will help keep the winter blues at bay, but it will also boost your immune system and help you cope with stress. Stress can be managed during the holidays by creating realistic goals for parties, gifts, decorations, and budgets. Procrastination will inevitably lead to higher stress levels, so try to plan ahead of time. Don’t forgo the healthy habits you have spent all year establishing. Overindulgence will only add to your guilt and stress. By eating a healthy snack before parties and staying well-hydrated, you can cut down on the amount of sweets and drinks you consume. Don’t forget to continue getting plenty of sleep and exercise too. When our bodies are stressed, vitamin and
hormone deficiencies become more apparent. Our bodies’ resources are used up much quicker. Maintaining hormonal balance, such as thyroid, estrogen, progesterone, testosterone and cortisol, will keep you even-keeled. The B vitamins are essential during stressful periods. A pharmaceutical grade B-complex along with a B12 (preferably by injection or under the tongue) may keep your energy levels up so you can tackle the long holiday to-do lists. Adaptogenic herbs can be useful to calm anxiety that is often associated with stress. Rhodiola rosea, Panax gensing, and Ashwaganda may support the body’s adaptogenic response to stress. Prior to this she was a teacher for 12 years and coached and developed students in volleyball, basketball and track. She spent two years employed in the casino industry in Las Vegas, while she worked on a degree in Casino Management. Bridget grew up in San Angelo and is a proud graduate of Water Valley High School. She is a graduate of Angelo State University, where she obtained a degree in Agricultural Communication. Bridget has served and continues to serve on numerous trade, community and civic boards and committees. She was recently accepted into the National Pest Management Association’s Executive Leadership Program. In addi-
tion, Bridget is a professional Barrel Racer in the Women’s Professional Rodeo Association. Lindsay Cranek is a life-long West Texan. Lindsay’s breadth of experience spans across banking, accounting, manufacturing and retail. Most recently, Lindsay owned and operated JL Mercer Boot Company in San Angelo, and she currently runs a successful traveling retail business, Vaquera, while operating the family ranch. Lindsay attended Texas A&M University, where she received an Agricultural Economics degree. While there, she competed on the Texas Aggie Rodeo Team and was a member of Saddles & Sirloin. Upon graduation, she began working full time while continuing her education at Angelo State University, where she earned her master’s degree in business administration. Lindsay is a member of the Texas and Southwestern Cattleraisers Association and Texas Sheep & Goat Raisers Association; is a lifetime member of the San Antonio Stock Show & Rodeo; and strong supporter of the San Angelo Stock Show & Rodeo, St. Ambrose Catholic Church, West Texas Rehab and West Texas Boys Ranch.
