We have a new date for the Wild Game Dinner! This year’s event will take place on Saturday, October 15, 2022! We look forward to seeing all those hunters that have missed our event in the past due to it being on “opening weekend”. Please mark your calendars for the third Saturday in October for future events. The Wild Game Dinner is designed to raise funds for the kids of our community. This past year, Kendall County Jr. Livestock Association, the Scott Bradley Memorial Scholarship Fund, and the Wild Game Dinner awarded 24 scholarships totaling $49,500. We provided funding for 23 kids to attend the 4-H Round-Up, along with other judging and competitive events. Our asso ciation was also able to assist numerous exhibitors at this past year’s stock show and sale. We truly do this for the kids. I say it year after year, this group can cook! Most of our cook teams have been with us from the start. Out of twenty plus teams, we have only one professional amongst the group. Our cook teams are made up of our family, friends, and junior livestock directors. When you join us at the event, take a minute to meet these folks. They love doing this and always appreciate a little shout out about the good food. We would also like to thank our friends at Apache Rifleworks in Comfort. This group has also been with us for years. They work diligently to put together an outstanding inventory of guns and ammo to be auctioned and raffled at our event. Please join us on Saturday, October 15th, at the Kendall County Youth Ag & Equestrian Center located at 648 FM 289, Comfort. Gates open at 4:00 pm and we will begin serving at 5:00 pm! The Kendall County Wild Game Dinner is one of the hill country’s most anticipated events –and for good reason! People come from near and far to experience everything this event has to offer. “Going into our 11th year we are still amazed at what a success this event is,” said Beca Short, founder of the KC Wild Game Dinner. “When we started this event all those years ago none of us had any idea what to expect. I enlisted the help of some of my friends and family who I know can cook, the food was phenomenal, the atmosphere was fun and laid back and everyone just had a really good time. With each year, this event just keeps getting better and we are all so excited to see what it has become, and more importantly we are very proud of the money it has raised over the years to help our local youth.”

The Kendall County Wild Game Dinner became the premier fundraiser for the Kendall County Junior Livestock Association in 2021. According to Joe Lozano, President of KCJLA, “Our missions were aligned with both organi zations being focused on serving the youth of Kendall County by promoting education and agriculture. By joining forces, we were able to streamline our efforts and increase the funds raised to provide more opportunities to our local youth through scholarships, educational programs and leadership camps.”

Last year the Wild Game Dinner raised over $100,000 that was put towards scholar ships, grants, the KCJLA annual stock show sale and more. In 2022, both groups awarded $49,500 in scholarships and $10,500 in grants to the 4-H judging teams and leadership camps. “Last year we had approximately 2,500 people attend this event! Each and every one of them helped us to raise the funds to support our local kids through the purchase of their ticket, the raffles, live and silent auctions, participating in the games and supporting our vendors. We are truly grateful for the outpouring of support from all of those who attend and keep making this event a success each year,” said Short. And let’s not forget the incredible amount of people who are working tirelessly behind the scenes to make sure the Wild Game Dinner goes off without a hitch! “We have so many volunteers who help with everything from the cook teams, to parking, tick et sales, raffles, the auctions, set up, tear down and clean up and the list goes on,” added Lozano. “Our KCJLA Board of Directors are a big help, but beyond that we have volunteers from local organizations, businesses, and just kind members of the community who believe in our cause and want to lend a helping hand. We could not do it with out all of their help!” We look forward to another great event this year and can’t wait to see you all on October 15th!

Kendall County Wild Game Dinner Scholarship

Each year the Kendall County Junior Livestock Association awards scholarships to local graduating seniors. The mission of the KCJLA Agricultural Scholarship Program is to encourage and promote agricultural, horticultural and livestock education and related industrial interests in the young citizens of Kendall County while promoting academic excellence, entrepreneurship and careers in the agricultural industry.

This year’s scholarship winners consist of twenty outstanding local seniors who were awarded KCJLA Scholarships, Scott Bradley Memorial Scholarships, and KCJLA’s Wild Game Dinner Scholarships.

Erin is the daughter of Thomas and Amanda Alt. She plans to go to UTSA and major in Biology. After getting her bachelors in Biology, Erin plans to go to Medical School.

Sydney is the daughter of Brian and Heather Austin, she will attend Texas A&M in the fall, pursuing a degree in Nutrition. She firmly believes that her involvement in leadership positions for the Boerne FFA chapter deeply influenced the person she has become today. She showed market lambs through high school and served as a KCJLA Junior Board member.

Wild game – some people LOVE it, others not so much, and there are a whole lot of other folks who have just never tried it! With 20+ cook teams, the Kendall County Wild Game Dinner makes sure to have something for everyone, whether you are a wild game aficionado or a newby who’s curious to try it out. From fried alligator and wild fries to smoked turkey and brisket tacos, there truly is something for everyone – and it’s all delicious!

The Grill Billies cook team is one of the largest ones to cook at the Wild Game Dinner and they need as much manpower as they can get because their Jalapeño Bacon Wrapped Quail Breasts create one of the longest lines at the Dinner! “Last year we made 3,500 of the wraps,” said Wayne Zoeller. The team also includes Darrell Bourgeois, Mando Giatan, Zack Feller, Mike Day, Colton Bourgeios, Tuffy Bourgeios, Duane Zoeller, Wesley Zoeller, Colton Zoeller, Justin Zoeller and the help of countless other friends, family and wives. “Cooking for the Wild Game Dinner is a lot of work, but a lot of fun. We do it because every year we have a good time. We are glad to support the KCJLA!”

The cook teams at the Kendall County Wild Game Dinner are all volunteers who put in lots of time and effort to create what we know is the best wild game dinner food in the state of Texas. Most of the teams have been cooking for the KC Wild Game Dinner since it first started. They love getting to gather with their friends and family to create mouthwatering dishes, while donating their time towards raising money for the KCJLA. It’s a lot of hard work and this event would not be possible without our cook teams! Check out a few of the cook teams and some fun facts about what goes into making this event happen!

One of the fan favorites year after year is the fried alligator. Last year 125 pounds of alliga tor was fried up and you can bet that every last piece of it was gone by the end of the night. This year, the Young Guns cook team will be frying and serving the alligator. This team is made up of John Mark Matkin and his sons Turner and Cord, Mason and Jatin Smoot, Hayes Hallmark and Luke Wyle.

So where does the KC Wild Game Dinner get all of this alligator meat? Janik Alligators in El Campo, Texas is basically your one-stop-shop for all things alligator. They provide everything from guided hunts and nuisance control to egg harvest ing and hatching and even meat, wallets, purses and taxidermy.

Another cook team that had people coming back for more is the Agave Landscape Design team, aka The Pork Dorks, who cooked up a mean Wild Boar Chili Verde! This will be their second year at the KC Wild Game Dinner and their team is made up of Keith and Vanessa Brady, Leigh and Daniel Owens, Ty Young, Becky and Boyd Welch, Scott Culler and they will also be adding a few more helpers to the team this year. The Brady’s daughter, Maddie, was also a huge help with a lot of the prep the day before the event. The recipe for this delicious Wild Boar Chili Verde was created by Vanessa Brady, who just so happens to be a former private chef. The Pork Dorks also came up with a special treat for the event – bacon Rice Krispie treats with a maple bourbon drizzle!

JOSH BOWMAN Boerne - Samuel V. Champion High School

Kendall County Wild Game Dinner Scholarship

Samuel is the son of Michael and Elaine Bohnert. He will attend Schreiner University this fall to pursue a degree in Computer Information Technology. Through his years in Kendall County 4H, Samuel showed breeding gilts and market barrows at the county stock show as well as the major stock shows like San Antonio, San Angelo and Houston. Samuel is so honored to receive this scholarship and so thankful to the Bradley family for their generosity since the scholarship will help him achieve his future goals.

KCJLA Scholarship

Colby is the son of Mike and Traci Brown. He will attend Texas A&M University this fall and plans to pursue a degree in Agribusiness. Throughout his years at Boerne ISD, Colby was very involved in StuCo, NHS, Track and Football and loved serving as a Kendall County Junior Livestock Junior Director for two years. Before doing so, he enjoyed raising chickens and pigs and teaching others what he’d learned. THALIA AVALOS Comfort High School

Thalia is the daughter of Maria Avalos. She will attended West Texas A&M this fall and plans to purse a Bachelor of Science in Nursing with a Minor in Business. Throughout her years at Comfort ISD, Thalia was actively involved in Softball, Volleyball, HOSA, FFA and 4-H. She loved to show pigs at the local stock shows and judge wool through her high school FFA chapter. Thalia is excited for the future she holds at West Texas A&M and thankful to the Wild Game Dinner Committee for the scholarship to help her reach her goals of becoming a Labor and Delivery Nurse.

Josh is the son of Rodney and Michele Bowman. He will attend Tarleton State University this fall where he plans to pursue a degree in Nursing. Josh started showing projects in 3rd grade and contin ued throughout high school. He was involved in 4-H and worked hard with his swine projects and accomplished his goal of raising a Grand Champion Market Duroc his senior year! Josh is thankful to KCJLA for their scholarship to help him further his education and is excited about his future at Tarleton.

“In the late 1990s, deer breeding became a hobby for my father. He started growing big deer with a goal to grow traditional, clean, typical whitetail deer. Headwaters Ranch boasts over 7,300 acres of scenic serenity with views of the surrounding hills, flowing springs and creeks and even multiple trophy bass lakes. In fact, the ranch’s name reflects the fact that it is home to the headwaters spring of the crystal-clear Blanco River.

The ranch boasts a rich history of farming and ranching, complete with the historic mid-1800’s Meier cabin settled by German immigrants. Family owned and operated, Headwaters Ranch has been in the same family since the early 1980s and is still a working cattle ranch. Shane and Tracy Baker manage Headwaters Ranch and raise their family along the banks of the Blanco River. “We look after the cattle operation as well as run the commercial hunting operation,” said Tracy. “I oversee the business end, while Shane manages the ranch and guides our hunters.”

Historically, the ranch has bred and raised premium Hereford cattle and other beef cattle, appaloosa horses, and run angora goats and sheep. The ranching legacy has been preserved throughout the years and today Headwaters is still a working ranch, raising primarily Black Angus cattle. “We run cattle on two other ranches in different areas of Texas,” said Baker. “Currently we have Brahman here at Headwaters. They are usually down in south Texas but because of the drought, we had to move them here. Collectively between the three ranch es, we run about 1,000 head of cattle. We practice a rotational grazing method to insure the best grasslands and forage for both the livestock and wildlife.”

“The headwaters of the Blanco River are located on the ranch; there are several large, fully stocked lakes as well. Guests can add on Trophy Bass Fishing to their hunting pack age for a lot of self-guided catch and release fun!” Baker added. Headwaters hosts people from all over the country and offers both rifle and bow hunting. Guests can choose from either a Ranch Lodging or Luxury Lodging Trophy Hunt Package. The Ranch Housing offers comfortable accommodations with a kitchen and BBQ grill. In addition, they also host corporate hunts and fund-raising events.While their whitetail are certain ly impressive, they aren’t the only animals available at Headwaters Ranch. They also offer axis, elk, buffalo, aoudad, blackbuck antelope, turkey and hogs hunts. According to Tracy, “We’ve had an awesome elk herd here at the ranch since the late 1990s. These are Rocky Mountain Elk and we have brought in new genetics over the years. The elk are one of my favorite. We have had a lot of older gentlemen come to the ranch to hunt for elk. It is a great fit because they can be harvested with out having to do a lot of hiking and climbing. We also offer handicap accessible hunting blinds.”

It is their hope to encourage youth hunting, fishing and ranch life exposure.TheBakers have raised their own family on the Headwaters Ranch, and while that experience has been invalu able, ranch life certainly comes with its challenges. “Between the big freeze a couple of years ago and now the drought, we have had some challeng es,” said Tracy. During the freeze we had nine to ten days without water and intermittent electricity, power lines were snapping, and of course we had to get out to feed the animals in the snow and ice, chop up the frozen water troughs and just make sure all the animals were ok. We did lose a few black buck and axis, but the loss was minimal.” During this time several truck drivers even got stuck along the highway in front of the ranch. For several days, the Bakers helped them out by taking them food, water and even a Valentine’s dinner!

The recent drought has been hard on the ranch as well. With the river getting low and the smaller springs drying up they have had to add 12 new water troughs and dig new water lines, along with having to sell some of their calves before they would have liked to. Despite it all, Baker says that the deer are healthy and they have had a great fawn crop. Tracy ended by saying, “It’s a lot of hard work, but definitely worth every minute of it. We feel blessed to live this life, and to be able to allow others to come and create memories that will last a lifetime.”

The Livestock Judging Team was made up of a talented group of kids this year. They competed at the District 10 contest with the following teams.

The National 4-H Meats Judging Champion team was made up of Caroline Holmes, Karson Kurtz, Kelsey Pfeiffer, and Anna Wyle. They placed first at the American Royal Stock Show last October where Anna Wyle was 1st high overall individual, Caroline Holmes was 2nd high overall individual, Kelsey Pfeiffer was 3rd high overall individual, and Karson Kurtz was 4th high overall individual.

Intermediate Team placed 2nd - team members included Cade Werner, Nash Montalbo, Brady Espensen, and Atlas Tonroy. Cade Werner was 2nd High Individual in the Junior Intermediate Level.

4-H MEATS JUDGING TEAM

The Intermediate Team #1 placed 1st - team members included Briley Sralla, Allie Esser and Owen Schulze. Briley Sralla was 1st place high individual, Allie Esser was 2nd place high individual and Owen Schulze was 3rd place high individual.

The 2022 Texas 4-H Shooting Sports State Games occurred in July, and four local members competed. Case Barrett shooting a 98 out of 100 in American Skeet and ending up in a 3- way tie for 2nd place, a shootout occurred to determine placings and he ended up 4th. Case also tied for 5th place in skeet doubles with a score of 45, but ended up in 8th place losing that shootout. He also found himself in a 7-way tie for 5th place in American trap with a score of 95. Case held strong and knocked all the other kids out to hold onto 5th place. Cash Barrett tied for 1st place in American Skeet with a score of 47 out of 50. He went into the shootout never having shot doubles in skeet, but took the win to hold onto 1st place and win his first buckle. He was also in another shoot off for a tie in 2nd place for the American High Overall and WON.

Backyard Poultry club had their annual Fun Show in April were 4-H members had a blast learning about their chickens, eggs and playing games. Will Muck received the Backyard Poultry Club scholarship award this year at the 4-H banquet.

ROBOTICS CLUB

The Livestock Skillathon Team had a successful year competing at the State 4-H Round Up contest this year. They took 2nd place as a team and the team members were Emma Zoeller, Kelsey Pfieffer, Brianna Thomason, Corrie Smith, and Addison Pape. Emma Zoeller was 2nd high overall individual.

This was only the second year for the Photography Club, but it has been very active with members entering photography contests at the San Antonio Stock Show, Green Spaces Alliance’s Picture Your World, our first county contest, District 10’s contest, and four seniors sent photos into the State 4-H contest. Will Muck and Keona Ellis also competed in the photography judging contest at Round Up, with Will being recognized for outstanding reasons and Keona placing 3rd high individual.

STATE 4-H HORSE SHOW

Last year the Robotics Club sent their first team to State Roundup and they placed 3rd overall, as well as being the only all-girl team competing! This year, using grants money, the club purchased a 3D printer and has held workshops for kids ages 5-18 allowing them to create and take home their 3D designs. The club also purchased a new Farm Bot that will be on display this fall at the Cibolo Nature Center, teaching the community about how tech nology helps grow our food.

Over 20 youth completed 30 projects competing at county, district, and state levels for outfit construction, buying, fashion storyboard design, and team sewing contests. Members also sewed almost 100 stuffed animals and donated them to the Boerne ER for their youngest patients. In June, three senior level mem bers competed at State Roundup, earning two 4th place awards and one 9th place award. A team of seniors also earned 4th place for Duds to Dazzle.

Anna Elisabeth Muck is the daughter of Andrew and Kelly Muck. 38 WILD GAME DINNER | 2022 Hunt, harvest, process, cook. The old saying goes, the hard part starts once you pull the trigger, but most hunters know it takes hard work at every level. For the Kendall County Wild Game Dinner to happen, the hunters, processor, and cooks all have to come to the table. Klein Smokehaus partners with the annual event to assist with meat process ing for the wildly popular dinner fundraiser. “We processed more than 1,100 lbs gross weight of venison, nilgai, and hog from local hunt ers’ donations for the 2021 dinner,” explained Clayton Klein, co-owner of Klein Smokehaus. “Once the deer come in, we coordinate with the cook teams to process the meat to their specifications,” adds Colton Sells, co-owner of Klein’s. This year, Klein Smokehaus will produce 100 pounds of marinated venison fajita meat, 150 pounds of ven ison cutlets, 100 pounds of axis stew meat, 150 lbs of venison chili, 70 lbs of hog chili, and a variety of other specialty ground products, sliders, and sausages. “We’re proud to partner with the folks of the wild game dinner. We get to cut meat and socialize with community leaders, all while helping 4-H and FFA kids,” said Klein. “We look forward to this partnership continuing for many years.” Aside from the Wild Game Dinner, Klein Smokehaus had a busy year. When the main deer season ended in late January, new growth and expan sion began. Co-owners, Clayton Klein and Colton Sells, saw an opportunity to expand the retail store and add sit-down dining to their award winning barbeque.

The new dining room provides a place for Kendall County residents and visitors to sit, cool their heels, and enjoy great Hill Country oak smoked barbeque. The expanded retail store provides more space to display their variety of smoked meats, sausages, cheeses, and apparel. “Sit-down dining for our barbeque has been the most requested option from our customers for a long time. We had the vision, and the space became available, we just had to roll up our sleeves and pull the trigger,” says Sells. “It’s been a great experience for us and our customers.”

Klein Smokehaus deer processing has grown organically year over year. “Our deer numbers grow every year,” said Klein. “In the off season we’re busy streamlining to accommodate more growth. We look at freezer capacity, rail space, and new equipment. It’s a seasonal business but it takes year-round commitment. Once rifle season opens it turns on like a light switch and you have to be prepared. Managed land permits and bow season is like our pre-season game, just the warm up. Last year was great and we’re expecting a better one this season” says Klein. “This year we plan to add cranberry jalapeno smoked ring sausage and summer sausage, and expect to see a new twist on our same great fajitas,” he adds.

For pork: 2 tablespoons of cooking oil 2 lbs pork shoulder, cut into bit size pieces

½ lb of ground pork Salt/ pepper to taste 2tbls of cumin 1½ cups of chicken stock (more depending on how thick or thin you want the sauce)

Heat a large Dutch oven over medium-high heat. Add cooking oil and then pork. Season generously with salt/pepper and cumin. Sear meat on all sides until nicely browned. Remove. Add ground pork and cook until no pink shows. Add pork shoulder back to pot and prepared chile verde and mix thoroughly, making sure to scrape the bottom of the pot with a wooden spoon to get all the bits of the bottom of the pan. Cover, lower heat to simmer and cook for 2 to 3 hours, until pork is tender.

The Herbst Ranch, located in Boerne, Texas, has been home to the family for several generations. Once upon a time it was a dairy farm; today the family runs about 50 head of cattle, chickens and maintains a very large garden. The ranch was even certified as a Texas Historic Ranch by the Family Land Heritage Program & the Texas Department of Agriculture for being maintained in continuous agricultural operation by the same family for 100 years. According to Charlie, “Every year since my grandparents first purchased the property there has always been a garden.” From this garden grows a bountiful harvest of everything from potatoes, tomatoes, okra, cucumbers, beets, radishes, onions, green beans, squash, asparagus and even something called a kohlrabi! “Most years we have an abundance of fresh vegetables. We keep some for ourselves and share a lot with family and friends. This year our harvest was not nearly what it usually is due to the drought,” said Barb.

Whether it’s backyard chickens, growing your own garden, or learning the art of canning, many people are seeking ways to become more self-suffi cient these days. Looking back to the days when you lived off the land and preserved what you grew or harvested is becoming more and more popular. One local couple, Charlie and Barb Herbst, have been doing just that for decades, carrying on the family traditions that were started by Charlie’s grandparents in 1905.

Also unique to the Herbst Ranch is a small patch of corn grown from the seeds brought over by Charlie’s ancestors from Germany in 1856! With a garden this big, you can bet that Barb knows a thing or two about canning and preserving. “We eat what we can, share some too, but sometimes there is just too much. Canning things is a great way to cut down on wasting, and to save some for winter when those crops aren’t growing,” said Barb. “We do a lot of pickles, pickled okra and jalape nos, chili, a sort of okra/tomato gumbo.” Barb also enjoys making fruit preserves with friends in flavors like blackberry brandy and peach pie jam. She and the Herbst family have even made a jelly out of the wild mustang grapes! One of everyone’s favorite dishes made from fresh garden tomatoes is Tomato Pie. Never heard of it? Well, lucky for us Barb was nice enough to share her recipe with us! In addition to growing food in the garden, Charlie enjoys hunting and making his famous deer sausage, a family recipe that has been handed down for generations. Charlie shared that with us too! Family ranches that have been passed down from generation to generation are becoming more and more rare around this part of Texas. It sure was nice of Charlie and Barb to share their little piece of heaven with us!
