If you are looking for a taste of the northland be sure to check out Cedar Chest’s walleye sandwich. This large, lightly battered fish filet fills your plate, and when paired with their batter dipped French fries and homemade tartar sauce, you have a meal that can be shared. The walleye is perfectly cooked and flaky and the hoagie style bun is fresh and tasty. Looks may be deceiving. Passing by the Cedar Chest you often see a full parking lot and what looks like a small venue. Don’t be deceived. Their newly remodeled lower level and outside deck seating overlooking Big Pine Lake, offers accommodations for more customers than one would think and the friendly staff makes you feel welcome.

MAUCIERI’S ITALIAN BISTRO
Maucieri’s is rich in Italian family history and recipes that have been cherished for generations. Menu staples include spaghetti and meatballs, fettuccine alfredo and their very own homemade sausage. But, if you move down the menu, you will come across a dish that is a “must try.” The chicken marsala features a tender chicken breast sauteed with Marsala wine, garlic, sundried tomatoes and mushrooms served over fettuccine pasta. This dish is light, fresh and delicious. Tomato-Mozzarella-Basil. The perfect pairing for the Marsala is the Tomato-Mozzarella-Basil starter. These ingredients are splashed with olive oil and balsamic vinegar and gives your palette a shot of freshness and makes you crave more. Family. Family is very important to the owners and staff of Maucieri’s. Pictures of family history are displayed throughout the restaurant and give the space a warm, friendly feeling. LUCKY CHICKEN PIZZA
RAFFERT Y’S PIZZA
Feeling Lucky. The Lucky Chicken pizza is explained in the menu as “deliciously unique” as it features a parmesan and mozzarella cheese mixture on top of Rafferty’s famous crust. Other toppings include red onions, cajun chicken breast smothered in a sweet lingonberry sauce and garnished with green onions and an oregano-parmesan blend. Lucky Chicken has been a Rafferty’s menu item in Nisswa for more than 20 years, according to Nisswa Manager Tony Dullum. “It has a lot of flavor and it’s not too heavy since there’s no actual sauce. All the different ingredients really compliment each other.” Other unique favorites. Rafferty’s has other specialty pizzas, like Rafferty’s Finest, buffalo chicken, taco, Jamaican jerk, vegetable supreme, baked potato and Feisty Pig. They also offer a popular calzone. The menu includes fresh salads and appetizers along with buffalo wings and boneless chicken bites. Rafferty’s has sandwiches like Italian Lovers, Tuscan Chicken, Cuban, Steak ‘N Cheese and Chicken Pesto.
SMOKED BABY BACK PORK RIBS
BIG AXE BREWING COMPANY
Weekend special. Meals of smoked baby back pork ribs are prepared fresh and featured at Big Axe starting around 4 p.m. each Friday and running through the weekend. “We smoke the ribs with a hickory and applewood mix for 4 1/2 hours with our own dry rub and cover them with our homemade barbecue sauce,” said Big Axe Manager Chris Milby, who added the tender and tasty smoked ribs have “been our best plate by far.” The ribs are served with Big Axe’s in-house baked beans, coleslaw and homemade corn cake, which includes a mixture of ingredients like cream corn and coconut.” Other popular meal choices. Big Axe also features dinner specials like smoked chicken, brisket and walleye. The kitchen serves delicious soups, salads, burgers and sandwiches. Appetizers and platters are also available. Dine inside or on Big Axe’s patio. Curbside pickup and online ordering are available. Thirsty. Big Axe specializes in producing a variety of full flavored and freshly crafted brews and root beer. PEQUOT L AKES SUPERVALU Deli favorite. One of the SuperValu deli favorites with customers is the fried chicken dinner prepared fresh daily. The dinner includes two pieces of warm chicken, mashed potatoes and gravy, coleslaw and a fresh bun. You’re welcome to eat-in at the large friendly seating area or take out. “We make the chicken dinners fresh every morning,” explained Deli Manager Julie McGuire. “Our deli menu changes weekly, but we always have chicken dinners since it’s one of our most popular meals.” Variety of meals. McGuire added that their deli features many daily specials — like pot roast, tater tot hotdish and fish. The deli has many different soups, salads and sandwiches — plus many meals to go made fresh daily from Asian, European and Mexican favorites, including chow mein, spaghetti and enchiladas.

Who doesn’t like to start out dinner with a great appetizer? The Pickled Loon has several tempting appetizers on its menu and one of the favorites is the tenderloin medallions. This dish could be a meal in itself, but don’t stop there as the full menu has a large variety of great dishes. The medallions are pan seared with caramelized onions and mushrooms, finished with a red wine demi-glace. On the side is a creamy bearnaise sauce for dipping. The tenderloin is cooked to perfection and tender. Consider pairing it with a glass of Merlot. Fun Location. The Pickled Loon in Emily has another location in Grand Rapids. Many of the customers make this a destination stop while riding ATVs along the Emily/Outing trail system. The atmosphere is fun and vibrant. TURKEY PESTO PANINI
CROW WING FOOD CO-OP A healthy lunch. The Turkey Pesto Panini is a great sandwich made with sliced Ferndale smoked turkey, provolone cheese, fresh spinach and tomatoes and an organic pesto between two pieces of sourdough bread. The sandwich comes with a side of vegetables and a garlic hummus dip. “We use clean, organic ingredients made in Minnesota whenever possible. We serve foods for specialty diets that are vegan and allergen friendly,” said Co-op General Manager Angie Fox. Other deli features include a breakfast panini, burrito, hummus wrap, mushroom Swiss panini, grilled cheese sandwiches, plus a build-your-own salad, wrap or sandwich. Smoothie drinks. The Food Co-op deli serves a variety of smoothie drinks like strawberry banana, berry pineapple, green goodies, tropical sunshine and PB&J. The deli is open Monday through Friday 8 a.m. to 3 p.m. and offers daily specials. The Co-op has inside deli seating, orders-to-go and lunch catering.

KC’S SALOON
This popular pulled pork sandwich is covered with coleslaw, bacon and a special barbecue sauce and served with thin-cut homemade fries, tater tots or chips and a side of pickles. The pulled pork sandwich is a meal that’s perfect for lunch or dinner. “We first brine the pork then season and smoke it,” said owner Kim Gibbs. “We have new equipment that cuts down smoking time. We can also smoke chicken and brisket.” Other features. KC’s Saloon menu also features a variety of nine burgers, plus other sandwiches like triple grilled cheese, honey mustard grilled chicken, a broasted chicken patty and a chicken melt. Appetizers are also on the menu, along with a grilled or crispy chicken salad. Broasted chicken dinners served with fries, coleslaw and toast are a popular menu item and can be ordered in buckets up to 24 pieces. here others might say maybe, Justin Christenson says “why not.” Why not bring three of my closest chef friends and elevate the entire dining experience at Cragun’s Resort? And really, why not? Christenson moved from Grand View Lodge to Cragun’s to tackle the executive chef duties for the entire resort. The new sheriff in town came with a posse, too. Matt Calistro is the new executive chef at Cragun’s Legacy Grille. Cody Vogt is the new manager for the Cabana Cafe and Brett Buchite is the new banquet chef. “There’s a pretty good amount of new faces that have migrated to Cragun’s,” Christenson said. “We all know each other and that helps immensely. You don’t have to go through a learning process of figuring people out while you’re figuring out a whole new system and resort.” Christenson already revamped the catering, wedding and boat menus and he wasn’t shy
about change. His goal is to put Cragun’s on the culinary map. And Christenson has been around the map before landing at Cragun’s. “When I first started, I was in the kitchen with my mom,” Christenson said. “I’ll always give her credit. As soon as I could see above the countertop, I started cooking. I started working in the kitchen when I was 14 years old. I started working at some places down by Garrison, which is where I grew up. After high school, I went up to Ash River, which is up by International falls. I worked with a lady, her name was Jan, and she was awesome. She really inspired me to go to culinary school.” Christenson went to school in Portland. With bitterness in his voice, he said he graduated with a 3.99. He interned at Timberline Lodge in Mount Hood, Oregon. Florida was his next stop and he worked at country clubs and restaurants. One of the more recognizable stops was a Hawaiian fusion restaurant called Roy’s.

“He was one of the better chefs that I worked with because he really challenged me,” Christenson said. “He would give me certain things to make. He said ‘if you have questions, by all means come and ask me, but this is your baby and I want you to prepare it how you want to prepare it.’ It was just a really great restaurant.” He moved to Philadelphia to work at the same restaurant and returned to Minnesota. He’s been back in the lakes area since about 2009. Christenson said the older he’s gotten the longer his stays at restaurants have been. He said he’s always stayed where he’s been challenged and he knows overseeing a resort will be a challenge. “It can be tenuous at times, but great experience and the great people that I’ve worked under have kind 18 | 2022 LAKES AREA DINING GUIDE

of honed me into the task I need to do,” Christenson said. “It’s a lot of multitasking and coaching other people. I can’t be everywhere at one time. To oversee everything is just kind of the life of a chef. “There needs to be a calmness. The older I get the calmer I get. I use the most important muscle, which is the brain, a lot more now.” This will be made easier by working with chefs he knows and trusts. “I have had lots of great experiences and these guys bring stuff to the table themselves,” Christenson said. “With Cody, I’ve worked with him for five years now. In the beginning, I taught him how to make a basic soup. Now he makes all the soups. He’ll ask for tips like whether something needs a bit of acid or salt, but I think our flavor characteristics all
mesh pretty well. And it’s kind of nice, but these guys do look up to me.” Calistro is a Philly native and of course, brought the authentic Philly cheesesteak to the Legacy Grille menu. Christenson admits to having tricks up his sleeve to elevate the dining experience, but understands sometimes less is more. However, having different eating establishments on the property allows him to flex his creative muscles. Irma’s Kitchen will remain the fine dining establishment. The Cabana remains poolside and will expand onto the deck. There may also be a take-out order for those arriving by boat. “What people should expect when they come here is they’re going to eat good food,” Christenson said. “Whether it’s a burger, sandwich, or a steak, we’re trying to raise the quality of everything.”

MOONLITE BAY
This juicy, tasteful half-pound burger features bacon with a mixture of pepper jack and cheddar cheese smothered in a special gold sauce. “It’s our secret sauce … like a barbecue sauce,” said Moonlite Bay’s kitchen manager Justin Benzick. “We’ve been serving it for a few years. Someone mentioned it, so we tried it and everyone loved it.” The Bilski burger, named after the family of long-time customers, is served with chips, french fries or tater tots. As an added bonus, the Bilski family donates $1 for every burger sold to the nearby Camp Knutson. Other favorites. Moonlite Bay offers a variety of dining options from steaks to sandwiches. Some popular sandwiches include: grilled reuben, grilled ham and cheese, turkey pepper jack, club croissant, halibut, pulled pork and pesto chicken. The menu includes 10 different burgers and 10 different wraps. Dinner choices include steaks like sirloin and filet mignon and other favorites like barbecue ribs, shrimp dinner, grilled salmon, lemon pepper chicken and stir fry. A variety of pizza choices, plus soups and salads and a kids’ menu are also available.
FRIED CHICKEN AND BARBECUE RIBS WITH AU GRATIN POTATOES
RIVERSIDE SUPPER CLUB
Riverside’s signature dish is the fried chicken and barbecue ribs with au gratin potatoes. They have been serving this dish for more than 40 years and for good reason. The chicken is fried to perfection and is juicy and tender. The ribs are smokey, tender and fall off the bone. Add the cheesy potatoes and you can’t go wrong with a meal you’ll be telling your friends about. Classic Midwest Supper Club. The Riverside has been family-owned since 1978. The fish. “The reason why I chose salmon is because it’s coming from a self-sustained farm out of Wisconsin,” Cragun’s Head Chef Justin Christenson said. “The farm grows produce with the water they use for the salmon so they both cycle themselves out.”

ROCKY BOT TOM AT THE “Y” One of the favorites at Rocky Bottom is the 12-ounce flat iron steak marinated and grilled to perfection, and served with a side of mashed potatoes and broccoli. “I marinate the steak in my own seasoning blend, along with a dijon demi glace,” said Chef Steve Moe. “The flat iron is similar to a sirloin, but is a lot more tender. We also have the option to add gravy or get it black and blue. The potatoes are roasted with red garlic and the broccoli is sautéed in butter, garlic salt and pepper. (This entree) is made to order, and is made fresh daily.” More menu entrees. Other popular entrees include: pan fried, beer battered or blackened walleye; almond parmesan crusted walleye; fish and chips; grilled rib eye steak: prime rib, chicken and waffles and smothered chicken breasts. Rocky Bottom also services a variety of tacos, burgers and pastas. The menu features a dozen sandwiches, including Rocky’s pulled pork, bruschetta chicken, gyros and French dip. NORWAY RIDGE SUPPER CLUB A signature item for Norway Ridge features the 14-ounce handcut ribeye dredged in Norway Ridge’s blackening seasons made from scratch. The steak is then marinated for a day and then charbroiled to perfection and covered with garlic butter. “We’ve had the blackened ribeye on our menu for quite a while,” said Head Chef Tommy Lee. “We offer sides of mushrooms and onions. We also have a side of our golden brown au gratins that we make daily using our house blend of cheeses. A dry, red wine really brings out the flavor in this meal.” Other features. Norway Ridge, which has been open since 1948, has a bar, plus restaurant seating with window views overlooking Kimble Lake. The menu offers numerous house specialties, like smoked pork ribs, smoked half chicken, filet mignon, grilled center cut pork chops, teriyaki beef kabobs, roast duckling and grilled chicken Caesar salad. They also offer a chef ’s choice for a vegetarian dish. Norway Ridge also has a variety of choices for fish and seafood and pasta meals.

am a sports editor.
I’ve been writing about Brainerd lakes area sports for 23 years, but for the past six years, I’ve helped bring words to pictures of food for the Brainerd Dispatch Dining Guide. Whether it’s featured dishes or feature stories, I’ve donated my time and taste buds and sacrificed my waist line to highlight the many great dining options the lakes area has to offer. And because of that, the most frequent questions I get asked about my job aren’t about sports, but rather, “where’s a good place to eat?” The answer to that is anywhere. The lakes area isn’t nationally known as a dining mecca like it is with golf or fishing. What it does have, however, is numerous family and locally owned restaurants along with fantastic resort options to give people something to salivate over. One complaint I hear, and don’t agree with at all, is all the restaurants are the same. It’s so untrue and what I believe is the problem is people don’t want to take a 30-minute drive across Crow Wing or Cass or Aitkin Counties in any direction. There are steak houses in the lakes area. The seafood is amazing. Looking for a vegetarian dish or four, yes, there’s a place for you. There’s now an authentic Italian restaurant. There’s a Thai restaurant that packs some heat in Hackensack. One of the most frequent questions I get is “where can I get a good prime rib?” In my six years of doing this, I’ve had prime rib at probably eight different restaurants. Whose is the best? That depends on each individual person’s preference. I can’t tell you which prime rib you’re going to like. I can tell you which one I liked, but you’ll have to buy me dinner.
My advice to people who ask me is this: if you’re worried about buying an entree you may or may not like, don’t buy an entree. My favorite thing to do when going out to eat is ordering four or more different appetizers or what some restaurants call small plates. 1. They’re less expensive. In my opinion, you get more bang for your buck. Often, the size of the appetizers is bigger than an entree. The artichoke dip at the new Baia Della is meant to be shared with a large group. 2. Most of the time appetizers are smaller so by ordering more smaller plates you’re getting a variety of flavor profiles instead of a one-note meal. Manhattan’s Head Chef Casey Bryant said when he goes out he’ll order an eight-course meal because he wants to try everything, but says sticking to the appetizer menu is a good way to be introduced to new flavors. “A lot of people get appetizers as entrees so what I do is put stuff that might be a bit spendier, but are delicious like halibut bites,” Bryant said. “People love them. It’s absurd. With our appetizers, we’re trying to do a little bit of everything.”

3. If you don’t like a certain flavor or if something is too spicy then just share the dish with someone else. Ernie’s has Moroccan short rib nachos on its starter menu. Not sure if you like Moroccan flavors? Try the nachos. If you find out you don’t like that type of seasoning then enjoy one of the other three appetizers you ordered like the soft pretzel bucket with the best cheese sauce on Gull Lake. At The Pickled Loon Saloon north of Emily, they have signature shrimp. You can order a half pound or one pound of shrimp in a creole seasoning or a Thai seasoning. Both come with a dipping sauce and both are delicious, but if you like one more than the other you still had a great meal and so will someone else. 4. Often, the appetizer menu is where chefs can get a bit more creative and adventurous as long as the audience will allow it. “It’s really what the market will bear,” Bill Coyle, executive chef at Grand View Lodge said. “Right now at Char, we have a house made tater tot and it’s really fantastic. It’s a great way to utilize leftover baked potatoes that are super flavorful. They come with a smokey cheese sauce and they’re really fantastic. I’m surprised we don’t sell more of them. “With the Pub, we’re selling a fried chicken sandwich people can get with Nashville Hot sauce and we’re selling a lot of those. So people are fairly accepting of it.” For this year’s Dining Guide, I was served three appetizers as Featured Dishes. Bruschetta, usually on the appetizer menu, has been a featured dish for numerous restaurants. So next time you go out, don’t just skim over the appetizer menu; give it a moment. Is there something you’ve always wanted to try but never have? Be adventurous and order that crazy flavor combination or unique seasoning, but also order another appetizer you’re familiar with. Get two plates instead of one large entree. And if you’re one of those people who believes there aren’t enough different dining options in the area, pick a summer night and pick a direction. Drive a half hour or 45 minutes in that direction and stop at a place you may have heard of but have never been. A week or two later, pick a different direction on the map. Do the same thing. See how different this area really is when it comes to dining and then you probably won’t have to ask me where to eat.

Ernie’s summer menu is set to take you around the world. “I tried to go a little bit around the world with it,” Chef Tower Kruse said. “I wanted to challenge myself and give people options. We’ve been locked down the last couple of years so I wanted to broaden people’s horizons.”

Head chef Darrell Lorenz’s family used to raise sheep. “It’s one of those flavors that is really rich,” he said. Pesto presto. “Who doesn’t like pistachios?” Lorenz asked. “And the mint is really light and carries through to the end. Everyone wants mint jelly with their lamb, but I’m not that type of person. CRU AT GRAND VIEW LODGE Origin story. Cioppino is a fish stew originating in San Francisco, but Grand View Lodge Executive Chef Bill Coyle perfected this dish while in Oregon. Seafood galore. During the season, this dish will also feature clams which will enhance the broth even more, but pictured are mussels, tiger shrimp, scallops and blue crab meat. The sauce. Red, yellow and green peppers, green onion, cilantro, chipotle pepper and white wine. It’s similar to a bouillabaisse, but cioppino is Italian in nature with a purely tomato-based broth. A bouillabaisse is French and often has saffron added. It’s also a fish-based broth with chopped tomatoes added.

SUNSHINE’S SUMMERHOUSE Friday night one will want to make plans to arrive early to Sunshine’s Summerhouse, located on County Road 77 on the west side of Gull Lake. Their special, starting at 5 p.m. (until gone) is a meal consisting of a half slab of St. Louis style freshly smoked ribs, served with coleslaw, smoked barbecue beans and bread pudding. Being a craft kitchen, all ingredients are fresh and made from scratch. The ribs are slow smoked, tender and full of flavor. Summer vibes year-round. Their Summerhouse burger, a juicy burger consisting of two premium Minnesota beef patties stacked with melted white American cheese, Sunshine burger sauce and caramelized onions on a brioche bun is the top choice for most patrons. One could also opt for breakfast Saturday or Sunday morning and enjoy one of their homemade caramel rolls that will leave you wanting more. Large parties. Large parties are no problem for Sunshine’s Summerhouse as they have additional seating on the patio or let them bring the party to you with party packs and custom catering.

THE QUARTERDECK RESORT The meat. You can’t visit the Brainerd lakes area without indulging in walleye and wild rice cakes are one way of getting your fill of Minnesota’s state fish. Wild rice. While this dish is a play off of crab cakes, walleye wild rice cakes are a great way to be a Minnesotan as not only is walleye the state fish, but wild rice is the state grain. The extras. Served with a lemon caper remoulade and lemon greens for that hit of citrus.

A new menu item at Lost Lake Lodge is the Seared Scallops with spring risotto, asparagus tips and early peas. “It’s an old Mediterranean classic,” said executive chef Andrew Clark. “Risotto is a traditional, hearty dish made with chicken stock and rice grains - not pasta.” Also new on the menu: Lost Lake Lodge, located along the Gull Lake Channel, has many new menu items. Some of the small plate items include: Tuna Nachos (soy, chili paste, sesame oil, scallion and wonton crisps); and Swordfish Skewers (zucchini noodles, salsa verde and bechamel). PEQUOT L AKES AMERICAN LEGION A Legion favorite. The patty melt has been a popular American burger since it was introduced in California in the 1940s. And today it’s one of the favorite requests at the Pequot Lakes American Legion. The entree starts with a onethird pound of fresh hamburger with a slice of American cheese on top and Swiss cheese mixed with fried onions on the bottom. These ingredients are cooked and melted between two slices of buttered 12-grain wheat bread. The patty melt is served with a side of chips or an upgrade to tater tots or French fries.
Appetite needed. The Legion menu includes favorites like a variety of hamburgers, sandwiches, wraps and salads. Basket food and appetizers are also available. Bring an appetite to the Legion which is open to the public.
