BACK INTO THE SWING OF SCHOOL AND SPORTS I’M PROUD OF AVIDLIFESTYLE MAGAZINE and the hard work that goes into bringing you this high-quality content from ideation to excellent writing to top-notch design. But during my tenure so far, this is one of my favorite issues. Of course, it’s back-to-school time, and local independent schools are starting the application process for next year. So, if you’re thinking about private school education for your children—no matter the age—check out our private school guide (Back to School, page 48). On another schoolrelated topic, I love the way Tailgating Time (page 42) came together with the fun CU and CSU gear and delicious food and drink ideas to help you kick off the college (or NFL or high school) football season right. There’s another local sport spawning tailgating parties, and that’s polo. The Denver Polo Club has a long history in the sport, but today’s owners are striving to make this pastime more inclusive to a wide range of participants (In the Saddle, page 32). It’s chile season here in the Centennial State (mmm … can’t you smell them?), so we’ve got a couple of delicious recipes for bringing these smoky, spicy peppers to your next meal (Pepper Your Table, page 20). And to go with your chiles, writer John Lehndorff introduces some local hot-spots for margaritas and shares the much-sought-after recipe for My Neighbor Felix’s spicy margarita (Margarita Sunset, page 24). THE DENVER BALLET GUILD is a 501(c)(3)

nonprofit, and its structure as an umbrella organization, with no dance company of its own, allows the Guild to host events that include a diverse group of dance companies, dancers and students. The Guild makes a significant impact on the local dance community by awarding annual grants to professional dance companies, sponsoring dance education and in-school programs, and awarding scholarships to young dancers. In 1969, Le Bal de Ballet was created to raise money to support dance programs and education in the Denver metro area. Originally, Le Bal introduced young ladies from Denver area families to Denver society. In 1988, young men were added to the Le Bal de Ballet program as Young Men of Distinction. Today, the young men and women in the program are a representation of outstanding young people from the Denver area. Le Bal honored accomplished high school seniors, this year from 13 metro-area schools. These individuals exhibit a cross-section of exemplary academic achievements, display exceptional character, and have outstanding involvement in extracurricular activities, community service and the arts. The 2023 event, with a La Belle Époque theme, began at the Ellie Caulkins Opera House with 32 young women and 16 young men being pre-

sented as Debutantes and Young Men of Distinction. The stage was designed as an evening in a French garden with chandeliers. Mr. Arthur Espinoza, Jr., master of ceremonies, opened the evening with the Mustang Cadet Squadron Color Guard of the United States Air Force. The Colors were presented while Miss Audrey Johnson, a 2016 Honoree and daughter of chair Maura Johnson, sang the National Anthem. After the introduction of the receiving party (Maura Johnson, 2023 chair; Jane Buckley, honorary chair; Katy Truitt, co-chair; and Kelli Fisher, Denver Ballet Guild president), Colorado Ballet performed to “La Vie En Rose.” The Young Men of Distinction were presented first followed by the Debutantes, with the assistance of the Mustang Cadet Squadron Honor Guard. After the honorees joined the audience, the Colorado Ballet performed to U2’s “City of Blinding Lights.” Both dances were performed by Ariel McCarty and Patrick Mihm, with choreography by ballet master Sandra Brown. Young Man of Distinction Garrett Jobe from Centennial

The evening continued with the ball at the Sheraton Denver Downtown Hotel. After the cocktail hour, the Debutantes and their fathers/ presenters and the Young Men of Distinction and their mothers entered the ballroom and performed a waltz. The ballroom was decorated with classic touches of an evening at a Paris night club, including white tablecloths, red velvet runners, candles and an abundance of red roses. There was a photo area with a red velvet sofa and black backdrop. The Jerry Barnett Orchestra played classic French music during dinner in keeping with the La Belle Époque theme. After dinner, three cancan dancers performed, kicking off three hours of dancing to the Jerry Barnett Orchestra. At midnight, DJs took over and kept the dance floor full until the lights came on at 1 a.m.

Pepper Your Table CHILES ARE NOT just for topping a burger or eating relleno-style By Heather Shoning

THE SMELL OF ROASTED CHILES is in the air—don’t you just love it when you run across one of those big, spinning barrels in a shopping mall parking lot or at the farmers market? Mmmm. While there is another nearby state that tries to claim chile fame, we known Pueblo chiles top the pepper list. The popularity of roasted chile peppers in Colorado can be traced back to our rich agricultural heritage and cultural influences. In the early 20th century, Hispanic immigrants began settling in Colorado, particularly in the southern part of the state. They brought with them traditional foods and cooking techniques, including the roasting of chile peppers and introduced the flavors to the local population. The southern region of the state has a warm, semi-arid climate with abundant sunshine and fertile soil, making it ideal for growing chile peppers. The annual tradition of the “chile

CHICKEN POZOLE VERDE PREP TIME 10 MINUTES COOK TIME 1 HOUR INGREDIENTS 2 pounds boneless skinless chicken thighs 1 pound tomatillos, husks removed and rinsed 1 large onion, chopped 3 jalapeño peppers, halved (remove seeds if you don’t want it spicy) 2 cloves garlic 1 tablespoon dried oregano (preferably Mexican oregano) 1 teaspoon kosher salt 6 cups broth (chicken or vegetable) 1 handful cilantro, stems and leaves 2 (15-ounce) cans white hominy, drained and rinsed Toppings: lime wedges, sliced radishes, Mexican oregano, thinly shredded cabbage, diced onions, cilantro INSTRUCTIONS In a large pot, add chicken thighs, tomatillos, onion, jalapeños, garlic, oregano, salt and broth. Bring to a boil over high heat. Reduce heat to low, cover partially, and simmer for 40 minutes until chicken is fall-apart tender. Transfer chicken to cutting board and shred with a fork. Set aside. Using a large, slotted spoon, carefully transfer the cooked tomatillos, onions, jalapenos and garlic to a large blender. Add in a cup of the cooking liquid and the cilantro, and blend until completely smooth. Pour the blended mixture back into the pot and stir in the shredded chicken and hominy. Bring to a simmer over medium-high heat and cook uncovered for 15 minutes. Taste and season with more salt, if necessary. Serve with fresh lime juice, thinly shredded cabbage, sliced radishes, cilantro, diced onions and Mexican oregano as optional toppings. *Recipe adapted from isabeleats.com

GREEN CHILE APPLE PIE INGREDIENTS 1 box premade double-crust pie crust (or make your favorite scratch recipe) 2 tablespoons all-purpose flour 1 teaspoon lemon zest, grated 1 tablespoon fresh lemon juice ¾ cup granulated sugar 1 tablespoon brown sugar ¼ teaspoon ground nutmeg ¼ teaspoon ground cinnamon ⅛ teaspoon ground allspice ¼ teaspoon salt 7 ounces medium-hot green chiles, roasted, peeled and chopped 4 pounds of Gala apples, peeled and sliced ¼-inch thick ¼ cup cheddar cheese, shredded 1 egg white, lightly beaten

INSTRUCTIONS Place pie crusts unopened on the counter to come to room temperature. (Or make your own from scratch.) Add flour, lemon zest, sugar, brown sugar, nutmeg, cinnamon, allspice, salt and green chile to a large dutch oven or 6-quart pot. Place apple slices into the pot with the spices and stir to coat. Set the apples over medium heat and cover. Cook, stirring occasionally, for 15 to 20 minutes until the apples are soft. Stir in lemon juice. Scoop filling out with a slotted spoon onto a rimmed baking sheet to cool, discarding excess liquid in the pot. Unwrap one pie crust onto a clean work surface. Gently place it into the pie plate, pressing it down into the bottom and along the sides. Sprinkle the cheddar cheese evenly into the bottom of the crust. Cover with plastic wrap and place in the fridge to chill and set. Move an oven rack to the lowest position and set oven to 500 degrees F. When the apples have cooled, remove the pie plate from the fridge and fill to the brim with the green chile apple filling. Unroll the second pie crust. Cut slits on top, or get decorative and cut it into lattice strips.

Place the crust on top and crimp the top and bottom pie crusts together in a decorative fashion. Brush egg white over the top crust with a finger or a pastry brush. Sprinkle turbinado sugar over the crust. Place pie on a baking sheet and then on the bottom rack of the oven. Adjust temperature to 425 degrees F. and bake for 25 minutes. Rotate the pie and lower the temperature to 350 degrees. Bake for an additional 30 to 35 minutes until the crust is nice and golden brown. If the crust is browning too deeply, carefully cover the edges with aluminum foil to prevent more browning. Remove from the oven and let cool for 1 hour before serving. *Recipe adapted from goldilockskitchen.com

1¾ ounces Herradura Double Barrel Reposado Tequila ½ ounce freshly squeezed lime juice ½ ounce freshly squeezed orange juice ½ ounce agave syrup Habanero crystals INSTRUCTIONS Coat half the rim of a highball glass with habanero crystals. Add one large ice cube. Add all ingredients to a shaker with some crushed ice. Give one quick shake and strain into glass. NOTES: Any tequila can be substituted. Suddenly, you feel the earth shaking beneath your feet as the thunderous roar of hoofs pounding the ground draws near. A thwack, then a crack as long-handled mallets swing ’round, threatening anyone in their wake. The freight train of ponies wallops past with shouts from the players and crowd alike. One final crack and the crowd goes wild. This is polo at the Denver Polo Club.

With the vast traditions and beacons of opportunity surrounding polo, most enjoy watching a classic match, and Sunday Fundays is the name of the game in Denver. “It’s like football tailgating meets Kentucky Derby,” says Erica Gandomcar-Sachs, co-owner of Cottonwood Riding Club and Denver Polo Club. On select Sundays throughout the summer, Coloradans can enjoy a field-side drink while witnessing the brilliance of polo in the comfort of their lawn chairs. Spectators often like to dress to impress, but tailgate parties are also a casual affair. At half-time, the divot stomp is a beloved tradition that invites people onto the field to help the players by stomping upturned grass back into place. The game of polo is experienced all over the globe. Most historians believe it started around 2,000 years ago for military training. It wasn’t long before its thrilling and addictive nature spread to the United States, and Denver Polo Club, founded by Gandomcar-Sachs’ parents John and Chris Gandomcar, was a pioneer in bringing it to the Centennial State in 1986. Gandomcar-Sachs started riding horses when she was just 2 years old and felt an immediate connection to the equine creatures. By age 10, she was riding at thundering speeds on grassy fields across the country as a competitive polo player. Today, Gandomcar-Sachs is widely known as a leading female polo player of her generation, holding multiple top titles, and she has devoted her life to the sport. 36

As one of almost 300 existing clubs in the country, Denver Polo Club prides itself on being the ultimate polo destination but with a Colorado twist. Long known as a prestigious sport, Gandomcar-Sachs and her sister, Tara, are changing the narrative. Together, the duo embraces innovation and inclusivity at Denver Polo Club while remaining deeply rooted in its storied past. Located south of Littleton, the 100-acre club is surrounded by century-old cottonwood trees and boasts world-class professional players, leagues and events. All skill levels and backgrounds are not only welcomed but celebrated. “If people want to get started, they just come to the club, we put them on a pony and away we go,” Gandomcar-Sachs says. While there are undoubtedly financial barriers to polo—primarily due to the expensive upkeep of the ponies—Denver Polo Club offers weekly polo lessons and leagues with custom membership options to make the game accessible to more people, according to Gandomcar-Sachs. Several hundred polo players maintain membership at the club, with more joining each year. In either group or private settings, the club’s pros teach everything from horseback riding and polo basics to refining the mechanics of an experienced player’s seat, swing or game strategy. Resident summer pro Mark Wates has played worldwide and believes Denver Polo Club is unique in its approach. Wates first met Gandomcar-Sachs at Kingston Polo Club in Jamaica 15 years ago. After crossing paths again at a tournament in the distinguished polo hub of Aiken, South Carolina, Wates agreed to come to the Mile High City to help grow Denver Polo Club. “While I came here for a job, it’s become a family,” Wates says. “Erica and I also share the same values on how to grow polo, with a strong belief in making it accessible for beginners to watch and try the sport.” Every day, twice a day, Denver Polo Club’s professional players are on the field. The object of the game is to move the polo ball down the field using a long-handled wooden mallet, hitting the ball through the goalposts to score. But most importantly, polo players say it’s about the human-horse connection, believing few sports can rival the nobility and thrilling intensity of riding horseback. Polo ponies are specially bred for agility, speed and responsiveness, and the polo player must exhibit exemplary horsemanship with their equine companions.

RICH KARLIS, former placekicker for the Denver Broncos, now handcrafts unique wood products to benefit community organizations By Kim D. McHugh BACK IN THE 1980s, Rich Karlis was wowing Denver Broncos fans with his placekicking prowess. As the NFL’s last field goal specialist to kick barefoot, he helped the team make the postseason playoffs seven times and played a key role in securing two Super Bowl appearances over his seven-year career with the Broncos. At the age of 32, Karlis retired from the NFL and, after first being involved in several start-up ventures, he stepped into the corporate world, managing the sports marketing programs for Qwest and CenturyLink for 20 years. But when the winds of change started blowing, he was at a crossroads. “They had new leadership come in and decided that they didn’t want to do (sports marketing) anymore, so we shook hands, and they paid me to leave,” Karlis says.

“At that point, I just wanted to take some time and explore other startups. I also decided I was going to teach myself some new stuff.” Among his new pursuits? Woodworking, beginning by building a farmhouse-style dining room table and kitchen table. Motivated by techniques learned in a class at Rockler Woodworking and Hardware in Denver, he then built a walnut desk, lateral file cabinet and shelves for his office, as well as a dresser and nightstand tables for his house. His affinity for woodworking was sparked as a boy when he and his dad, a general contractor in Salem, Ohio, spent part of the summers sanding and refinishing the gymnasium floors at area schools. “We worked with these heavy sanders we’d walk behind. Often, the janitors had pretty much just slapped more varnish on the floors year after year, so they were dark brown,” Karlis says. “After days and days of sanding, we’d reveal this beautiful wood. We’d then paint the lines and the logo, and apply the finish coats, which really made me appreciate just how pretty it looked.” That love of beautifully finished wood resurfaced in recent years as his latest venture, Barefoot Bronco Woodworking, found its way into his circle of family members, friends and customers that have discovered that the former field goal kicker is as skilled with his hands as he once was with his right foot. Asked by his niece if he could make her a charcuterie board, he accepted the challenge—and today it is one of the most requested of his hand-made wood products. PHOTOS BY CHRISTIAN MARCY-VEGA

“I’ve always enjoyed challenges and working with wood; you really have to be patient as there are plenty of chances to make mistakes. I’ve been at this for a couple of years now and people are really liking what I’m doing,” Karlis explains. That is clearly the case given that, in addition to his charcuterie and cutting boards, he also takes on commissioned projects, including custom items like a large tasting table for a local winery. Inspired by the Points for People fundraising program he was involved in as a Bronco, today he often donates products for silent auctions and a portion of each cash sale goes to Family Tree, a Denver-based non-profit providing services designed to end child abuse, domestic violence and homelessness, and Winter Park’s National Sports Center for the Disabled, where he serves on its board of directors.
