Greetings, Fellow Beer Enthusiast, Welcome to Spring! That happened fast. I am sure many of you are in the midst of a losing battle with allergies, just as I am. However, we all have the advantage and cure of delicious craft beer. Part of that deliciousness includes the sour beers, which are becoming more and more popular. We get you some awesome insight into brewing a sour beer and just exactly how it’s created. It is interesting, to say the least, and while my palate is still warming up to these beers, the creation process helps me want to enjoy them even more with the appropriate warmer weather approaching. Also, in this issue, we have some stats and info on some of the latest and upcoming breweries (Spring Chickens). It was great to visit these breweries and their prospected locations. We, at BC Mag, want to wish them the best of luck, and I encourage all of you to go experience them for yourself! Mmmmm New Beer! We have Trails and Ales; finding beer, once again, in the most unusual of places! Our new home brewing segment, brought to you by “Dukes of Ale”, gives a great introduction to the home brewing world -- with tips on how to join and how to brew. We are very excited to have this in the issue and we hope you enjoy it as well. Finally, you will see several events in this issue. The Beerfest season is ready to commence, and we really hope everyone enjoys -- and enjoys responsibly. Thank you all for your continued support! Salud!

range here, orange there, orange, orange everywhere. While I’ve never had a deep love of the color orange, I have also never disliked or feared it. Because of A.R.T., Mr. Hops and my fellow Albuquerque drivers now loathe seeing those ominous barrels, cones and barriers spawned by the over-constructive. There’s little doubt that the intentions are pure, but did Albuquerque really need such an invasive over-haul of the city bus system? No matter what reasons the powers-that-be gave for justifying such a monstrous project (global warming, convenient transportation, increase of business) it is hard for Mr. Hops to believe, just because the buses
will now drive on a red-brick road and the bus drivers will have control of the traffic-lights (yikes!), that rider-ship will increase to a level that warrants this money pit. A.R.T. manifests itself every time I see new, fresh pavement/ red cement, laid out with precision and high effort of the construction crew, only to see that very same fresh pavement/red cement, being tore-up by the same construction crew a couple days later. Perhaps the lead planning folks simply abide by the unofficial City motto, “Why do it right the first time, when we can do it twice.” “C’mon Mr. Hops, when it’s done, everyone’s gonna ride A.R.T.” Hmmm…you sure about that? In a recent non-scientific Mr. Hops’
poll, 0% of those questioned, who currently do not ride the bus, will begin riding the bus when A.R.T. is completed. It’s not a snob thing or a holier-than-thou thing. It’s not even a buses-are-scary thing. It’s an urban sprawl thing. It’s just a thought, but maybe a central commuting bus-line, in a city as spread out as Albuquerque, just might not work so well. (Deep Breath...) So what do we do mis Queridos? I think I may have a solution – avoid any areas that A.R.T. has turned into a Mad Max Beyond Thunderdome-landscape, relax, enjoy the warming of Spring, Easter, Little league Games, Mothersday, and, most importantly, the fruit of the local Brew Masters’ labor. What if you’re favorite watering-hole has been imprisoned by A.R.T.? I feel for you, but take comfort my Beerthren, Mr. Hops has braved A.R.T.’s hazard-maze, has been able to find safe, decent parking, and was always able to get to any desired tap-room for full fun and beer satisfaction.
If you’re looking to avoid the traffic-headache, try other areas of town. Mr. Hops has recently hit-up The 377 Brewery near the airport, and is looking forward to enjoying the “coming soon” Lava Rock Brewing Company on the west side. Of course, these are only two of many worthy placesof-beer-worship, so please get out, belly-up and order many pints. Now we know “where” to enjoy, but let’s discover “what” we should be drinking this Spring. Mr. Hops typically matches this season with a nice Bock. Boasting a dark amber to brown hue, a good Bock is medium to full bodied with a malty, slight chocolate and toasty edge. A Bock will calm the restlessness of Spring and help facilitate the transition of seasons. As always, no matter what you choose, enjoy what you have, take care of yourselves and think of ol’ Mr. Hops the next time you blow the froth off a few. Cheers!! --Mr. Hops.

beer scouting Having been a Boy Scout in my younger days I learned valuable skills, good morals, good judgement and pathfinding, knowledge that has saved my butt several times in the mountains and deserts of the Southwest in all sorts of weather. The west is expansive and humans have journeyed these territories by foot, upgraded to horses and trains, and now touring in vehicles ranging from small cars to big rigs hauling complete homes!
All along our chosen routes we can find cities and small towns and ultimately road houses and taverns, to wet our whistles and grab some grub. These were always welcome watering holes to discuss our adventures from wonderfully pleasant to scary and harrowing, sometimes the ‘almost didn’t survive kind of craziness’! I’ve seen dust storms as thick as wind driven snow, to monsoon rains that made driving seem more like motor boating. Now, fun new places known as brewpubs, microbreweries and tap rooms are popping up all over, and are attracting a unique crowd of active outdoor enthusiasts who seek out these places brewing beer. Beer scouting has become its own sport! In the immortal words from Animal House - “Road Trip!” Will, owner of Three Barrel Brewing in Del Norte Colorado, located on US Hwy 160, sees people daily who are on the ‘tour de brewpubs.’ He told me recently that Beer Scouting, when I used the term for people going from brewpub to brewpub, has indeed become a lifestyle. Sitting in a comfortable spot on Nob Hill, contemplating the A.R.T. Project, I watched a guy walk in wearing a Beaver Street Brewing sweatshirt. I have been there a number of times in Flagstaff and reminded me of one of my Beer Scouting expeditions. Part one of our mission, with my friend Jim, was to complete the Rim to Rim on the Grand Canyon. My friend Tracy dropped us off at the North Rim and she made the drive to the South 7

Rim, where Jim and I would emerge later that day. We dropped off the North Rim and into the canyon on a cloudless and cool late September morning. A mile down, an excited woman said to her hiking group, “Hey everyone! We have runners!” She looked at me and asked, “Are you doing rim to rim to rim or just rim to rim?” “Just rim to rim,” I replied. Her face changed, “Oh, so you’re just rim to rimmers.” There ya have the extent of our conversation, and Jim and I were labeled. But, on our run we had amazing views of the canyon, passed Roaring Springs, a natural ‘fire hydrant’ blasting out of a hole in the north canyon wall that is collected and pumped and becomes the water supply for the whole South Rim! We ran past cacti, and yucca, and changes in dirt colors to bunnies and snakes. Several hours later we reached Phantom Ranch at the bottom of the canyon and the temps in the shade were well over 100! We refilled water, crossed the bridge over the Colorado River, flowing
the color of coffee with cream, as a recent monsoon had flooded a tributary upstream. We endured the afternoon heat climbing toward Indian Gardens on the Bright Angel Trail. We encountered several R to R groups resting there, from ABQ, Tucson, and LA. We discussed the distance. One women’s GPS proclaimed the distance as 23.871 miles which blew my theory of thinking it was 24! We did see several R to R to R guys and one was not friendly. No big deal said Jim, ‘we will be drinking beer before he even gets out of the canyon.’ Tracy found us, and we made a beeline to Beaver Street. Never, has an IPA, tasted so good! Our beer scouting mission for the next two days took us back through NM and southern Colorado where we found more beer! We had to rehydrate, replace carbohydrates, and hops are good for inflammation. I have been on many a beer scouting mission since. Enter Dave and Sandy - residents of Taos. They met at a brewpub in Denver, got married, hit retirement, bought an R-Pod,
and are now Beer Scouting professionals. I met them at Three Barrel in Del Norte, CO on one of their beer scouting outings. They have completed a tour of 43 or more in Colorado and are now on the New Mexico Circuit, many, and counting. Their beer reviews match mine almost exactly so they are excellent judges of breweries! See their pics - the award for the most out of the way rustic brewery goes to Comanche Creek on the Enchanted Circle Beer Scouting route. Their philosophy for beer scouting? - “We kind of let the beer find us.” Beer scouting itineraries. In the cities, there are now companies that transport groups on brewery tours. Or, if on your own in the outer limits, I meet people who travel in small groups of one or two vehicles, have designated drivers for each, while the others get to sample the beers at beer stops during the day. Arriving to a destination at night, cars are parked, and everyone participates! Next day, someone else’s turn to drive. Some groups journey 200 or more miles in a day, because, if you are going to drink beer all day at lots of distant breweries, you have to get an early start! NOTE: We are not promoting over imbibing. If you find a phenomenal brewery, have empty growlers to fill, or buy their six pack or bombers for future enjoyment. BEER SCOUTING - Keep taking those backroads, keep finding those breweries, keep meeting great people and good memories will follow... Residents of ABQ - there are plenty of options for circuit routes as well as Beer Tour companies. Also consider Rail Runner for brewery stop options all the way to Santa Fe! Suggested road trip itineraries out to the North - On the way to Taos is Blue Heron in Embudo. Then head to Taos for Taos Mesa Brewing with two locations, one in town and one toward the gorge. Don’t forget Eske’s! Under new ownership and experienced brewers! Or, head up through Angel Fire and visit Enchanted Circle and scout farther north for Comanche Creek. Through Colorado head up 285 to 17 North and find Crestone Brewing. Head west to Del Norte and find Three Barrel for beer and Pizza. Hang a night at the remodeled Windsor Hotel, rent mountain bikes at Kristi Sports across the street and be the first to cruise some of the newly opened trails accessed from town. Trail Selection and Safety
• Pick a route appropriate to your skill level. • Tell someone where you’re riding, and the estimated start and end times for your trip. • Ideally, ride with a friend or group. If you’re biking alone, pick a route that you know well, and that is highly trafficked by other riders. Save the more technical and remote trails for another day when you can ride with friends. • Take a wilderness rst aid class.
What You’ll Need for Your Ride
• Gloves, helmet, and proper shoes. • Shock pump, hand pump, nutrition, water, maps, cell phone, multi-tool, extra tubes, CO2 innator & cartridges, tire lever, and light rst aid supplies. • Keeping a supply of items in your car can sometimes make or break your ride in an emergency situation.
Pre-Ride Bike Check
A properly working bike is essential for having fun and being safe on the trail. • Spin both wheels to make sure they are straight. • Inspect tires for cracks and punctures. Set your tire pressure based on the terrain you’ll be riding. • Check both front and rear skewers or thru axles and make sure they are tightened appropriately. • Set your SAG correctly. Refer to our suspension guide set up for more information. Test the fork and shock to makes sure they’re rebounding properly. • Check brakes and shifting to make sure they are in good working order. • Inspect your headset for looseness. Adjust as needed. For optimal performance and safety, Rose recommends you have your bike tuned up, and suspension serviced at least once per year and ideally, every season if you ride a lot. our beer is not a single style of beer but rather a broad category of beers. Typically, sour beers are fermented by brewer’s yeast, “wild” yeasts like Brettanomyces, and bacteria like Lactobacillus and Pediococcus. This somewhat broad category captures everything from the ultra-traditional Belgian Lambics to quick and dirty American kettle sours. Digging into the old high school chemistry text, I’d like to reference the pH measuring scale. In a nutshell, pH is a measurement of acidity and alkalinity, from 1 to 14, acidic to basic, with 7 being the balanced middle point. Fun fact, the person who invented the pH scale, Soren Sorensen, was a scientist working at the Carlsberg Brewing Laboratory. Normal beers will have a finished pH measuring in the low 4’s, around 4.2 to 4.4. Sour beers on the other hand are considerably more acidic, with a finished pH in 3’s. Beers on the higher end (3.9 to 4.0) will taste just slightly tart, while beers on the low end (3.0 to 3.3) will display a mouth-puckering sour flavor. Basically, if it tastes sour, even just a bit sour, then I would call it a sour ale. So how do these beers develop that sour character? The most common souring agents in beer are Lactobacillus and Pediococcus. These two bacteria produce lactic acid during fermentation, which lowers pH developing a sour taste and mouth feel. Both bacteria also serve in other food service capacities, with Lactobacillus in sour dairy products like yogurt and Pediococcus used to make sauerkraut. When there is a large amount of available oxygen, the wild yeast Brettanomyces can produce acetic 11

acid, but that is not typical in a brewery environment. To generalize, Lactobacillus and Pediococcus are your primary sour ale culprits. There are a few traditional sour beers, which served as the inspiration for the array of options available today. From Germany, there is Gose and Berliner Weiss, both are wheat beers that rely on Lactobacillus for their sour character. From Belgian, there are West Flanders Reds, East Flanders Browns, and Lambics. All three are fermented by a combination of beer yeast, Brettanomyces, Pediococcus, and Lactobacillus. The holy grail of sour beers is the Belgian Lambic, which is spontaneously fermented. This means the brewers don’t add any yeast or bacteria to the beer and rely completely on airborne microorganisms, as well as the yeast and bacteria residing in their barrels and foeders (large wooden vat) for fermentation. That is a crazy concept and just part of the reason that I think Belgian brewers are super badass. Now that you know what makes a beer sour, the next questions are when and where to add that bacteria. There are quite a few options here but all depend on the same types of bacteria. The first option is to get sour in the mash vessel, a mash being a stew of hot water and crushed grain (step 1 in the brewing process). Malted barley is actually covered in Lactobacillus and will make the mash sour all on its own, just given about a day to sit. The second option is the kettle. When the kettle is filled with sweet wort (sugar water that becomes beer), the brewer
can add souring microorganisms. This can be accomplished by pitching a laboratory culture of Lactobacillus, adding yogurt (remember what makes yogurt sour), or even just tossing in a bag of malted barley. All three methods are kettle-souring techniques, which are rapid albeit non-traditional ways of achieving sourness in a beer. The next option is to create sourness during fermentation. Souring bacteria can be pitched in conjunction with brewers yeast and remain present during fermentation. The beer will increase in sourness throughout fermentation and the bacteria will continue to be active even after the beer yeast has finished. The fourth option is a secondary fermentation. Basically, the brewer produces a normal beer all the way through the “typical” end of fermentation. Next, bacteria are introduced to the beer either in the original fermentation tank, barrel, or foeder. The souring bacteria can still thrive in finished beer, despite the acidity and alcohol. Finally, there is that good old spontaneous fermentation. Wort is left uncovered and exposed, allowing wild microorganisms to just fall in. This practice is crazy, risky, but also pretty awesome. Additionally, the beer will accumulate more bacteria and yeast when it encounters the resident cultures living in the wooden fermentation vessels of the brewery. So there you have it, a brief overview of sour beers, souring bacteria, and souring techniques. This paper is by no means a comprehensive guide to sour ale, but hopefully it has shined a bit of light on this sometimes confusing subject. he boom of craft beer in Albuquerque has been met with a resounding welcome in the past few years, and the love for such exclusive brews is more apparent than it has ever been. With what seems like a new brewery opening every other week in the Duke City, to several publications naming Albuquerque as one of the top craft beer cities in the nation, the growth and excitement is mind boggling. But did you know that there is an Albuquerque club that has been promoting the hobby of homebrewing for nearly 30 years? The Dukes of Ale homebrew club was established in 1989 as way to get homebrewers together to discuss and share their ideas and homebrewed beer. The Dukes of Ale club is still going strong to this day with over 80 active members. The Dukes still champion the ideas the founders had when they created the club, which is to promote the hobby of homebrewing through education, activities, and competitions. The Dukes of Ale hold monthly meetings where an educational aspect of the homebrewing process is discussed. This can be anything from learning about the different styles of beers to members sharing their homemade gadgets they have created to make their brew day easier. Members are encouraged to bring their beers and share 25

with the club to get feedback on their brew. The feedback consists of praise for a wellcrafted beer to constructive criticism on how they may improve their homebrew. The Dukes of Ale also participate in brewing demonstrations such as the American Homebrewers Association Big Brew Day (usually held the first weekend in May) and Learn to Brew Day (usually held in October). During these demonstrations members bring out their brewing equipment to a predetermined location and brew a batch of their best beer. These demonstrations are open to the public and are intended to spur interest in the hobby of homebrewing. There are also memberonly events, such as wort share projects with local breweries and organized pub crawls held throughout the year. The Dukes of Ale also sponsor two homebrewing competitions throughout the year, which include the Enchanted Brewing Challenge held in the spring, and the New Mexico Homebrewing Competition, which is held in the fall. These competitions allow homebrewers to enter their beers in specific style categories and get unbiased
feedback on how close (or not) their beer is to the BJCP style guidelines and what steps they may take to improve it. The Dukes of Ale Homebrew Club is open to anyone 21 years or older who has an interest in craft beer and homebrewing.
