Publisher Hello everyone and welcome to our patio and Summer beer issue. I hope you have all enjoyed your Summer thus far and are taking advantage and cooling-off with cold craftys. If you need to wrap up the Summer with a bang, we have some last-minute Summer fun ideas for you. In this issue, we have the winner of our first annual patio. A big Congratulations to Dialogue Brewing! They certainly do have an exceptional patio (which is gracing our patio) with some wonderful metal sculptures and refreshing shade in the afternoon. Dialogue Brewing has been well known for its sour beers, but check out its other styles too - they are delicious! As far as the poll goes, we had more votes than we thought and it was honestly a close race until the end. Because of that, we decided to include the runners-up as well. Thank you to everyone who voted we look forward to doing it again next year. Be sure to read the fantastic article about craft beer and camping, as we all know these two things go hand in hand. We also review how the outdoor lifestyle pairs swimmingly with any cold crafty and look at some sweet camping locations to check out. Also, take a look at some of the suggestions as to which beer packaging may be most ideal for the camping, With so much traveling going on this Summer we found ourselves with a beer map from the Southwest to the Pacific North West, which includes key stops along the way and a list of beer we found. Of course, Trails and Ales is back at it again! There is an awesome brewery Treasure Hunt inside where you can find some superb beer spots up North. They all look like fun, so choose wisely. Finally, as this issue is out, we will find ourselves knee deep in Mountain West Brew Fest, Hop Fest and Octoberfest Beers! YAY!! Wow! This year is flying by my Beerthren and if we don’t force ourselves to enjoy life, we’ll find ourselves anxious, on edge and unsatisfied. As I’m sure you’ve figured, Mr. Hops calms his own soul with some smooth tunes and cold brew. In the Summer heat, when the humidity gets cranked up, I beat the oppressive temperature with a cool mindset, flowing linen accoutrements and ever so small beads of chilling sweat upon my brow. Some have said that Mr. Hops is radiant in the Summer temps, but I must humbly reply – only sometimes. But hey, not everyone is perfect. Mr. Hops has definitely made some ale-related errors in my day – drinking that iffy beer from that back corner of the fridge

that was never good to begin with and extraordinarily brutal at its funky spoiled phase (thank you AlkaSeltzer for your effervescent healing intervention). Or that undyingly bitter room-temperature homebrew that kills your taste buds for eighty-two and a half minutes. Good luck enjoying pigs in a blanket after that fiasco. Lucky for us, the current atmosphere of fine beermaking has allowed us to be as adventurous as we’d like with low-risk of encountering a bad brew. Time after time, Mr. Hops will simply wander the corridors of Downtown Albuquerque, popping in

When the Summer sun begins to set and that warm Albuquerque breeze flows all around you, you can rest assured that times are good and all those worries you have can take a back seat to taking care of Numero 1. You see my Beerthren, Mr. Hops will never stop rockin’ and, although I have plenty on my plate, I’m always careful to maintain a closely measured regimen of sun, fun and frothy indulgence. Mr. Hops, with the help of Teeny Bop Hops and Baby Hops, has recently revamped his backyard patio relaxation arena in order to maximize his sun basking, steak Q-ing, tunes blasting and beer internalizing time. Like Lil’ Mama Hops said, “Ain’t no party like a Mr. Hops party, cuz a Mr. Hops

party don’t stop…” (until she says STOP!), Mr. Hops gets down with stylistic wonders like Kolsch, Hefeweizen and Gose. I like the delicate fruit aroma and crisp body of a Kolsch, the smooth whiff of clove and banana in a Hefeweizen, and a Gose’s unique saltiness smoothed out with citrus sourness. Pack a cooler full of these beers and time that goes by so fast, just may pull up a chair and have a coldie with you. Mis Queridos, my hopes and wishes are that you are well, content and enjoying the wonders of life. ummer road trips! 2 hours, 2 weeks. Road trips expand to fill the time we have to squeeze in fun, excitement, learning, adventure, and BEER. Because we like craft beer, we seek out new breweries, explore strange new beers, and drink beer where we have not consumed before. Variation on the Star Trek prime directive but why should beer treasure travel be any less exciting? But first, we must earn those exceptional crafties we crave! Without further adieu, here are suggested ‘Treasure Hunts’ of varying duration of Mother Nature’s finest, history, art, and beyond. And craft beer all along the way... (The main hub is ABQ). No space to list long descriptions. Look up these real places and discover your own treasures. Treasure Hunt #1. Day trip to overnight. I-40 to NM 14. The Turquoise Trail. Sandia Crest Road Tinkertown. Sulphur Canyn Trail to ABQ overlook. Shady trail through pines and oaks and altitude. Cool air! Explore Madrid - Craft beer can be found at Mine Shaft Tavern. Stop in Cerillos. Then, Santa Fe Tap room on site at Brewery where 14 meets I-25. Discover MEOW WOLF in Santa Fe. Need a high alpine adventure? Head to trails up toward Santa Fe Ski Basin. In town - Museums, art galleries - then, Blue Corn, Second Street, Duel, Chile Line Brewing, Rowley’s. Need lodging? Try the Sage Inn. Four iron (as in golf shot) from Second Street at the Railyard. Soak in healthy water. Drink healthy craft beer in their restaurant. Treasure Hunt # 3. 550 Tour. 2-4 nights. Kaktus Brewing in Bernalillo. Chaco Canyon. 550 Brewing. Three Rivers Brewing. Wow wee on food and beer! Durango - hmmm - so many choices! Do not skip the Brew House or Animas. Gluten reduced beers and wonderful food at Carver Brothers. Do the brewery tour at SKA and get a free beer directly off the canning line! Trails? Horse Gulch for mountain biking, hiking, running. Great views of Animas River valley and Durango. Work up a thirst. Head west on 160 to Mancos. Mancos Brewing. Beer fest there is August 19th. A new brewery and a true treasure. Treasure Hunt #4. Outer limits. 2-5 days. 285 north. Square Peg Brewerks in Alamosa. Tap room - bring

in your own food. Games and unique beers! Crestone Brewing. Excellent beers. Gluten reduced and healthy food! Pair with North Crestone Trail. Head north to Joyful Journey Hot springs or Valley View Hot springs. (Birthday suits okay at VV). BYOB if camping. Ties to NM? 200,000 bats from Carlsbad Cavern colony take up residence in old mine for summer months to eat millions of insects that want to consume our barley! Go bats! Do the evening outflight guided tour to experience just one of Mother Nature’s wonders. (Orient Land Trust - olt.org). Return via US 160 west to Del Norte CO for a beer and a pizza at Three Barrel Brewing, stay at a restored hotel a block away - The Windsor, and rent mountain bikes at Kristy Sports for a wild ride in Penitente Canyon or, ride directly from town to the Pronghorn Trail system south of town. Thirst will come quickly. Head over Wolf Creek Pass to Pagosa Springs - Riff Raff Brewing. Food, beer and a ghost! Kyle is brewing extremely good bevvies as he perfects his crafts! Soak at the Hot Springs and stay at Motel SOCO (beer on draft there). Tube and raft the San Juan River before it gets turned into beer. Wolfe Brewing and Pagosa Springs Brewing up the hill to the west completes the Pagosa circuit. Bottom Shelf Brewing is another nice stop in Bayfield on way to Durango. JESSE’S TOP 5 TIPS ON MAINTAINING YOUR SUSPENSION SYSTEM

• As a starting point, set the air pressure in your suspension system to achieve 25% Sag. To fine tune, try increasing or decreasing Sag in small increments. • Wipe off dust seals and stanchions with a clean rag after every ride. • Inspect upper stanchions for scratches after every ride. • Monitor for cracks and misalignment of dust seals. Check for oil leakage. • Have your suspension serviced at a minimum once per year, and once a season if you ride a lot.

SUMMER ROAD TRIPS

eer cheese fries. Is there anything more enticing than beer + cheese + fries to motivate a Burqueño to travel outside of New Mexico? Ok, yes. But when my boyfriend suggested we take a road trip to Breckenridge, CO for beer cheese fries at Breckenridge Brewery, we ended up taking a two-week long road trip up through Colorado, Montana, Washington, Oregon and down the coast of California before heading through Arizona and back home to New Mexico. I knew we would be stopping at a few breweries along the way, and though I’m not going to write about every awesome beer and brewer I met on my journey, there are a few worth mentioning. Not just because of the beer, but because of the experience and connection that made sleeping in a tent for more than half the time worth the journey. Breckenridge, CO - yes, vanilla porter. I had it straight from the source, and it was good. I also had the beer cheese fries that sparked this journey and they were also good. Breckenridge is a beautiful little town and visiting in the spring was just as fun as visiting during ski season. My second beer was the Trademark 2.0, a classic American pale ale and my road buddy had the Kensho kolsch. For my next visit, just for shits and giggles, I will need to try the Sexy Motor Oil. A nod to an imperial oatmeal stout and the first beer brewed at Breckenridge 27 years ago. It measures in at 11.3% ABV and I’m sure that will keep this girl warm and toasty. Cheney, WA - Just outside of Spokane Washington is the town of Cheney and home to the university of Washington. We found ourselves here after visiting family, and had a chance to beat the heat and head into New Boundary Brewery. New Boundary Brewery is run by head brewer and owner, Shane Noblin. The brewery opened in 2015, the town’s first brewery scene 1910. Noblin started brewing and distilling at the age of 18 and later, he found himself in Alaska brewing beer simply because there wasn’t any beer worth drinking. Some specialty beers Noblin has on tap at the time of the trip include a blue corn and lime cha-cha, hard lemonade and a honey wheat. Future brews include a peanut butter brown ale and cherry cider. Mount Rainier Beer - Is now owned by Pabst Brewing in Canada, however if you get the chance to look up the backstory of this beer, it is the classic American story of brewing before and after prohibition. I mention Mount Rainier because I drank a lot of it in Washington and while visiting Oregon. It’s a good, inexpensive and a solid go-to while hanging out by the campfire. Portland, OR - There are so many great things I can say about Portland. I love the restaurants and the food and all the local beers and wine available at every grocery store and corner bodega. We chose to stop in at Stormbreaker Brewery on Mississippi Ave. for a few pints while shopping and visiting more family. The offer a great variety of well brewed beers ranging from a seasonal triple double IPA to a classic spin on a refreshing kolsch. They offer a verity of food from burger and subs to charcuterie boards. The patio over looks Mississippi Ave and is great for people watching.

Making our way back to New Mexico, we stopped for pizza and beer in Sonoma, CA and camped in Lake Havasu, AZ. By the time we reached Albuquerque, we were all tired and ready for a shower and something to eat that wasn’t grilled over an open flame. The road trip was a success, and I returned with some good stories and some good beer. Cheers!

Shrimp Ceviche with your favorite craft beer

Looking for a fresh and easy summer meal? Try this shrimp ceviche using your favorite craft beer. This recipe works with anything from a Pilsner to an IPA. We used Santa Fe Brewing Companys Freestyle Pilsner. 1 lb Raw Shrimp Peeled and deveined 3 Limes 2 Lemons 1/2 Cup Cilantro chopped 1/2 Can of your favorite beer 1/2 Can V8 Juice 2 Large Avocados 2 Large tomatos 2 Jalapenos 1/2 Red Onion 1 tsp Salt

In a large bowl, Squeeze juice of limes and lemons and remove seeds. Chop raw shrimp and add to juices. Stir often soaking shrimp. Set aside for 20 minutes or until shrimp is fully pink. Add remaining ingredients and stir. Let sit for an hour before eating for flavors to mix and for the shrimp to fully cook. Eat with crackers or chips......Enjoy!

craft beer drinker craves a perfect patio. On a summer evening, not much is better. Everyone who knows the feeling of a cool wind and a calming sun will agree. The ambiance of a patio may seem seasonal, but it works it’s magic all year long. Even in the cooling Autumn patio-lovers will wait to move inside. Once a craft beer enthusiast knows a summer patio, they will wait for summer to return like nothing else. The outside patio of Dialogue Brewery is a dreamscape of steel forest and the magnificent shadows of Albuquerque sunsets. The metallic trees bend the shade and their electric veins can project music and lights for any performance. The largest tree, “Mother,” weighs 9,300 pounds and stands 45 feet from the ground. The others, “Troll-Toll”, “Fat Max”, “Skinny Pete”, “Payroll,” and “Blaze” are the names of the other towers soaring, blossoming spirals, spikes, gears and lights. Dialogue won the Brewer’s Crew patio contest with over 1,100 votes. According to co-founder Eliot Salgado, that’s over one-third of their Facebook followers. Dialogue Brewery has been open for less than a year, but they’ve earned their following. What this means is: The word on Dialogue is quickly spreading, and it might be because of their mission. Dialogue Brewery was created as a space for conversation and creation. “We wanted to create a place people can talk or talk to other people,” Eliot said. “We created art—what we think is art and our space is so unique and different; it’s a reflection of us and what we’re trying to achieve and how we’re trying to change things in Albuquerque or move the needle forward. That’s where Dialogue came from.” Conversation is the focus of Dialogue and they hope that conversation can be gained through art. They hope to be an epicenter of Albuquerque art scene, where visitors can find acts including aerialists, theater, and dance, in addition to the vibrant city music scene. “We wanted to build the place for artists to come and enjoy art whether the art is our beer, whether it’s our trees, orwhether it’s the roof that’s in here that was created in the Twenties,” Eliot said. It’s hard to find a part of Dialogue that is not some kind of art. Ian Graham, former head brewer of Greenport Harbor Brewery in Long Island, is the head brewer of Dialogue. Ian has been brewing for over seven years. In their first year, Dialogue Brewery won a bronze medal for their kettle-sour Berliner Wiesse and a silver medal for their Biere De Mars Attacks from the North American Brewers Association. They won’t stop here. Like the rest of their business model, Dialogue wants their beer to be different. They want their beer to be art. They are currently focusing on sours, usually have about five on tap, but they have no limits to their palates. According to Eliot, “We are continuing to push ourselves in flavor styles, in new approaches to how we’re brewing the beer to make the quality consistent.”


Dialogue has an assortment of beer styles to offer. They want to have something for everyone. The most popular beer at Dialogue is the Sour Raspberry. Eliot says, “It is tart and refreshing. I like to describe it as a green raspberry hanging on the vine. You’re picking it just when it’s about to ripen but not really, and it’s all being cut by the tart, clean citrus.” Their other best-seller is the Belgian Citrus IPA, an a-typical IPA brewed with yeast and citrus, but still plenty of hops for the IPA lover. Eliot does a bit of everything. “I’m ‘the guy’,” he jokes, but he has been at Dialogue since the very beginning, and he can see how far the vision of the Dialogue founders has reached. His vision for the patio is a busy place “with people enjoying all that we have to offer. A couple weeks ago we had belly dancers and aerialists and fire breathers. It’s this interactive experience that’s more than you’re used to. We’re trying to create something that’s ‘more than’.” If being ‘more than’ is Dialogue’s mission, they are more than ready for the marque.

The Best Summer Beer Pairing By Mattie Hensley

P

rime camping season starts when people start to realize that they are too clean and civilized. Their hair doesn’t smell like smoke. They are missing out on the sweat combined with sunscreen feeling. The camping gear has been nestled in the garage for too long. Instead of watching Netflix, they could be staying in their RV, or camper, or tent. They could be day hiking or backpacking. They could be enjoying a high mountain peak, boating a lake or fly fishing on a river. They are missing out on the wild adventure that they could be having on spectacular public land in New Mexico, Colorado and Arizona. On these adventures people pack many things, but one of the truly supreme parts of camping season is the outdoor beer! Beer is best paired with the smell of mountain air, collecting firewood, and your closest friends or family. For my husband and friends and I, beer tastes great at the end of a

long hike, as an appetizer before camp dinner, or around the camp fire in the evening after the 9 pm sunset. It is a central part of our camping season and there has never more choices in which beer to take or how to bring it with you. Choosing a beer is an important part of preparing for the next outdoor adventure. It is a personal choice that is tailored to your tastes and your outdoor activity. We went car camping in the beautiful Jemez Wilderness last weekend and picked up hot weather favorites from New Mexico like Bosque Lager, Marble’s Dang Pale Ale and Santa Fe Happy Camper IPA. We brought a couple session beers with low ABV that would keep us on our feet all day like Ska Brewing’s Rudie Session IPA from Colorado. As home brewers, we have found that it is important to try out your latest brew in the wilderness. Our BSD (Brew School Dropout) SMASH tasted way better outside!

There are many choices about how to bring beer with you, including cans. Many craft breweries now sell their brews in cans. Some breweries like Canteen in New Mexico or Riff Raff Brewing in Colorado even fill 32 oz empty cans with draft beer at the brewery and seal them up. On camping trips, we have found that cans are nice because they are light weight, and fit well in a cooler. In a campsite, or especially near a stream or on a lake, cans are better than bottles. There is less risk to breaking and there is no glass to lose in the lake or campsite. Empty cans take up very little space when they are crushed flat. We play a silly little game to see how flat we can crush a can on a scale of 1, a whiff, to 10, a perfectly flattened can. Canned beer is environmentally conscious if you recycle. Always remember to recycle. Another way to store a beer is in a growler. Growlers come in ½ gallon and 1 gallon sizes and are great for storing a beer that isn’t commercially available in a can or bottle. When we are camping with growlers, we get them filled at a local brewery or from our home kegerator. We use a vacuum jacketed stainless steel growler instead of traditional glass. The vacuum jacket will keep the beer cold for longer. There is less risk of breaking a growler and losing the beer with a stainless

growler than there is with glass. Many stainless growlers have superior seals to glass growlers and will keep the beer carbonated longer. There are some especially interesting growlers available that have CO2 cartridges, regulators and tap handles that makes draft beer portable and keep longer. A new brewery seems to open every day. Most likely there is a local brewery on the road to where you are camping. On the way to our campsite, we stopped at Kaktus Brewery in Bernalillo, NM to try some of their beer. It was a good opportunity to stretch our legs and support a local brewery. We really liked their beer and ended up filling one of our empty growlers to take to the campsite! D

uring the heat of the summer it is often refreshing to relax with a night light ale or lager. The Beer Judge Certification Program (BJCP) has beers such as these broken down into several categories. There are a wide array of styles such as American Lager (yellow fizzy beer that you can buy in 30 packs), German Pils, Czech Pils, Kolsch and Cream Ale that all have one thing in common. They all require temperature control during the fermentation process. Temperature control in the homebrew world can be as elaborate as a mini glycol systems like the pros use or as simple as an evaporation system using a t shirt over a carboy in a bucket of water. Seeing as homebrewing is a hobby, most homebrewers have simple cooling systems (if any) preventing them from truly controlling fermentation temperature in the hotter months. Fermenting the lighter styles listed above at higher than recommended temperatures would result in off flavors and subpar beer. But there is a beer that thrives on high temperature fermentation: Saison. Per the BJCP Guidelines , Saisons were originally brewed in the French-speaking part of Belgium for consumption during the farming season. The beer was low in alcohol so as to not debilitate the farm workers. Stronger versions appeared after WWII. They are commonly a pale, refreshing, moderatelybitter with a dry finish. The alchol strength is usually between 5.0% to 7.0% ABV.

Typical ingredients include continental base malts but can also include other grains such as wheat and oats as well as adjuncts such as sugar or honey. Hops are also usually continental varieties such as Kent Goldings, Styrian Goldings, Saaz and Hallertauer. The yeast is the key to this beer. There are several varieties of Saison yeast carried by all of the yeast laboratories. They are all meant to ferment at high temperatures and different strains give out a variety of esters such as pepper, clove, citrus and even bubblegum . The high temperature fermentation makes this a favorite style with many homebrewers. If you are new to brewing Saisons, you can find many recipes online from websites such as the American Homebrewers Association (homebrewersassociation. org) or Craft Beer and Brewing Magazine (beerandbrewing.com). There are quite a few nice examples of Saison from regional and nationl breweries available but support our local breweries and try a fresh Saison on tap next time you are out. I think you will find it refreshing. If you would like to learn more about Saisons I recommend the book Farmhouse Ales by Phil Markowski and also checking out the BJCP guidelines for the style at bjcp.org. rewer’s Crew enjoyed a beautiful Sunday afternoon at Dialogue Brewing Co. (winner of our first annual patio contest) with Lance Martin, Co Owner of Disk-ODawg, our newest sponsor and featured food truck. We dug deep to find out as much as we could about this business, and asked some questions that will appeal to those who thoroughly enjoy the current food truck craze. You may find yourself curious about this one -- a unique, cultural twist on a timeless food. Keep an eye in the fall for events at Dialogue and Drafty Kilt with Disk-O-Dawg. Big things are coming!!

• Who are the masterminds behind the Disk-O-Dawg? The way we started off was the idea of my father Terrence Martin (Co Owner). The thought came overnight and we ended up running with it. We are solely a family and New Mexico oriented business which has been operating for over 6 months now. • “Disk-O-Dawg” is quite an intriguing name. Tell me about the inspiration. A Disk-O is a staple in NM and Mexican traditions for over 100 years. The beauty is in the disk itself. It holds flavor forever because it seasons itself. We can have fresh nachos, hot dogs, or even street tacos, that would bring memories as if you are walking int your own grandmothers house from 40 yrs ago. Memories galore! We have seen how food trucks/street food are represented in the city of ABQ, and we believe there was something missing -- A touch of home cooking. Whether we have hot dogs, hamburgers, street food, tacos, or even nachos, we can incorporate a NM twist to it. • What are your specialties? So we normally do a sausage pairing which can include polish sausage, hot dogs, bratwurst, hot links, etc. which infuse flavors of the beers served at the current location. We like to adapt to any venue and please any crowd we come across.

Well when I visit a food truck, I should expect hot and fresh ingredients, made to order; preparation and everything. That’s what we do. Nothing is pre-packaged at all. We guarantee that what you order, you’ll see all done right before your eyes -- so it’s 100% fresh everytime. Everyone has a niche. We just decided to make everything fresh and keep it local. This is a state that is very good to small businesses.
