Publisher Greetings, my fellow craft beer enthusiasts, I hope we are all embracing our cooler weather, enjoying fall festivities, and finding ourselves up to our neck in glorious Oktoberfest and Märzen beers.

In this issue, we discuss statistics regarding the local industry with Executive Brewers Guild Director John Gozigian. We talk about some trends emerging in 2017 and what to look for in 2018. You will read about the number of current breweries and get a brief forecast of what to expect in the future. We also have the list of the Great American Beer Festival entrees. Congratulations to the NM Brewers Guild on a job well done. This year, all of its events reported record-breaking numbers as it continues to move New Mexico breweries upward and onward.

In the spirit of Oktoberfest, we give a brief history and point out some interesting facts, such as how Oktoberfest actually starts in September. It’s general knowledge to some, but not to everyone. You get to find out how it all got started. So, next time you are out and about enjoying some cold crafties, make sure you get an Oktoberfest while you still can. ’Tis the season to be Märzen!

Of course, Trails and Ales returns with a different type of trail. This trail includes a trip through the experience of a craft beer lover who watched the industry evolve. It’s quite nostalgic and gives good insights on how things used to be. We also have the head brewer from Picacho Peak Brewing, Las Cruces, talk about chile beer. It’s a novelty concept and, to those who cherish both chile and craft beer, the combination is a delicate issue. Still, it is a topic that requires some attention given the fall chile season. I, for one, won’t be in a hurry to try it anytime soon. If you have never tried one, though, I urge you to give it a shot—cause after all, it is still beer! Finally, I am also very happy to announce BC Mag has celebrated its 2nd anniversary. It has been quite a ride and a lot of fun. We would like to thank all our readers and the businesses and many breweries that have contributed to our success. We will continue to support local business and always urge everyone to drink local beer. Good luck to all our friends and breweries at GABF 2017—you can expect to see results in the next issue. As always, enjoy responsibly and drink local beer. Salud!

hilst I reminiscently watch the everelongating shadows of the cypress junipers lining the edge of some patio like proper soldiers awaiting a command, I sip my cold kolsch. I sip, enjoying that tingly, excited, stomach-butterfly sensation of first falling in love, or discovering a new beer, or first falling in love with a new beer. As autumn relentlessly approaches, summer does its best to hang on, beaming sun and heat until the position of the planet requires it to cease. Mr. Hops doesn’t fret though;

Because, you see my beloved, mine eyes have seen the glory of the coming of FOOTBALL SEASON (Yes, I used all caps last year too) to which many other holidays and special times of year yield dutifully and appropriately. I know not all folks, some Beerthren included, are as jazzed as Mr. Hops about football season. It’s absolutely alright, because what fall also brings are new and interesting types of brew, created and provided by our local Brew Masters. Even though Mr. Hops, a native New Mexican and

Burqueño, loves him some green and red chile, I haven’t developed the palette for some of the exotic uses of the spice. Call me traditional, but green chile ice cream and red chile pudding just haven’t made the cut for Mr. Hops. However, I will not reject something without trying it – which is a motto I’m happy to live by, especially when it comes to some of the chile beers being brewed. Mr. Hops, who will NEVER order “Christmas” in response to the greenor-red question, hasn’t yet been introduced to the flavor

What I can brag upon is Santa Fe Brewing’s Oktoberfest! While Mr. Hops is more than a connoisseur but slightly less than an expert, I know Oktoberfest should be crisp and clean finishing with a good balance of hoppiness and maltiness. I

often tell myself that aging trades time for experience. Much can be said about each of us from “What You Are Is Where You Were When,” a brilliant series of videos by Morris Massey, a former CU Boulder sociologist who describes how people go through three major periods in development. During the Imprinting Period we learn right from wrong, good from bad. Next, in our Modeling Period, we copy people to see what feels right for us. Lastly in our Socialization Period we are influenced by our peers. These periods intertwine with regional and world events and the way they shape our lives, and explain why we relate to people from our ‘generation.’ What does this have to do with beer? Tons. I grew up in the Midwest, a baby boomer. Late in my modeling period, I had friends starting to collect beer cans. My brother and I took up the hobby. The artwork and history behind US breweries were quite interesting. My brother and I would ride our bikes, scouting from country road ditches to lakes where people had weekend cabins and tossed their cans to Mother Earth. Rummaging through ravines, scavenging under years of fallen leaves, we would find well-preserved cans. Beer can archeologists! Treasure hunters! One year in the early 70’s, we came to Colorado and dug through old miners’ dumps and somehow talked our parents into going by the old Walter’s Brewery in Pueblo. The brewery crew liked our beer can passion and gave us numerous brands with colorful artwork. That summer trip yielded 49 different brands! One was an almost mint condition Tivoli can from 1951. 9

In my Socialization years, I started going to high school parties. Kegs piled in horse troughs and buried in ice made a beautiful sight while rock “n” roll blasted from someone’s van. Sometimes parties were BYOB. Somehow we always found someone who would buy us beer. Breweries subtlety began marketing to women by introducing 7-ounce cans. Meanwhile, Miller introduced their 8-pack of 8-ounce Ponies in stubby clear bottles. They looked like urine samples but tasted like beer! Girls loved them. An 8-ounce bottle was not intimidating and easy to drink before getting warm.

us... but, then, graduation. It is time to move and travel.

Competition among major breweries bred loyalty with beer drinkers like major sports teams. No Green Bay Packer fans were drinking Budweiser just as no St. Louis Cardinal Fans were drinking Miller, Pabst, or Schlitz. I would go to the tavern with my girlfriend’s dad when I was 17. He was a hardworking welder for a refinery near St. Louis, a Cardinal fan, and a Bud guy. We drank returnable longnecks on Saturday nights. ‘Of age’ was never an issue; the tavern culture at the time.

2017. The craft beer lifestyle scene in the US is blazing a path. Recently, I met a group from England who were in Colorado for Steam Trains and Breweries. Great people with whom to share conversations and beers!

In college I began my beer drinking R & D, a member of the coed organization, Tappa Kegga Brew. We had only three styles from which to choose, Beer, Malt Liquor, and ‘Cheap.’ A quarter would yield a schooner during Happy Hour at Johnny’s Tavern. A pocketful of change would score a six-pack on sale. Falstaff, Stag, Busch, Stroh’s, Coors, Old Style, Blatz, Schlitz, Old Milwaukee, Olympia, Pabst, Mickey’s Big Mouth. Premiums were Michelob, Andeker, Budweiser, Schlitz Malt Liquor. Beer found

Boulder CO, early 80’s. Green bottled skunky beer scene. I was never a fan but, it prepared us for what was to come! CRAFT BEER! It came to Boulder, and other parts of the country, especially the West Coast, along with people’s garages and bathtubs. I found my way into the beer scene. I attended the first GABF! I became an original member of Mug Club at Walnut Brewery. I even drank beer with Dr. David Hummer to test Boulder Beer before it hit the market.

I’m in with the trail running crowd traveling all over the country to ‘test drive’ gnarly trails and tasty ales! What’s your passion for fun and mixing it with breweries? Think back to your beer travels in time and places. One suggestion in two words - BEER TRAVEL! I have seen too many breweries and beers to name favorites. I’m not sure if there is any brewery more remote than Death Valley Brewing in California. Or any beer better than our next one! Okay, a sing along with Woody Guthrie’s “This Land is Your Land.” Change Land to Beer and sing - “This beer is your beer, this beer is my beer, from California to the New York island, From the Redwood Forest, to the Gulf stream waters, this beer was made for you and me...”

W

hen it comes to fall in New Mexico, what is the first thing you think of? If you’re like most people in the land of enchantment, you would say the smell of roasted chile. From enchiladas, to ice cream you can pretty much find chile in any dish imaginable, and people will try it. So why is this not the case when it comes to chile beer? There seems to be quite a debate when it comes to chile beer, and whether the two belong together. When presented with this style of beer most people won’t even give it a chance. There are many factors that could contribute to people shying away from chile beer. I think the biggest reason being, it is too hot! The beer Ghost Face Killah is what comes to mind at the thought of really hot chile beer. Twisted Pines is responsible for the six-pepper blend that is sure to take your breath away, literally. If this beer was a first experience for someone being introduced to chile beer, it is understandable that they would shy away at the next opportunity. Another popular nostalgic chile beer is the Cave Creek Green Chile Beer. It is bottled with an actual pepper in the bottle, which looks great as a bottle on your shelf, but lacks a place for a case in the fridge. Although these are fun beers to try, they lack in drinkability. Making a sessionable chile beer that can be enjoyed year-round can be a bit of a challenge. The Pancho Verde Green Chile Cerveza by Sierra Blanca has been around longer than most breweries in New Mexico have been open. It is a golden beer with roasted chile flavor and a bite on the back of the throat. A drinkable and delightful beverage to have with a meal, it’s still too spicy for those less familiar with the local scene. Santa Fe Brewing Company is no stranger to chile beer and boasts red chipotle peppers in several of their specialty beers. Straying away from the more common trend of light chile beer, they make a bold 11% Imperial Rye Smoked Porter. The sweet finish of the peppers perfectly accentuates the roast and smoky flavor without the hot kick.

In September of 2014 Santa Fe Brewing company hosted the first American Homebrewers Association rally ever held in New Mexico. The theme was chile beer and the homebrewers in attendance set out to make it a rally to remember. Many styles were made in small five to ten-gallon batches. Over 100 pounds of chile were used in beers ranging from blondes to barley wines. Of all the recipes brewed that day, one still stands out to me as my favorite, Tom’s Green Chile Amber Ale, a medium bodied amber ale with a malt-forward taste and a roasted, green chile flavor and finish. Tom Riggs, the man responsible for the recipe, is no longer with us, but his spirit lives on through his beer. Tom was a brewer in Northern New Mexico, who understood the balance that chile beer takes to be truly enjoyable. Leif Rotsaert brewed Tom’s recipe that day and everyone was pleasantly surprised. So many found a chile beer they liked because of Tom’s passion and creativity. As with any beer, the key to a successful chile beer is balance. Finding the

2017 LOCAL BREWING INDUSTRY STATS

& FACTS

Cenosillicaphobia is the fear of an empty glass (Urban Dictionary). Lucky for beer lovers, that’s not something we have to worry about in 2017! In 2017, 11 breweries and seven tap rooms opened in New Mexico. For 2018, there are already some rumored breweries-in-planning in Raton, Carlsbad, Lovington, Hobbs, and Mosquero. Last year, New Mexico craft breweries numbered 57 and ranked 26th in the US. The state’s breweries produced 111,237 barrels of beer, 32nd in the US (Brewers Association). We don’t have the numbers yet, but it’s safe to say that this year NM will produce even more. The New Mexico Brewers Guild has been serving NM Breweries since 1996, when they lobbied the New Mexico State Legislature to lessen the state excise tax from 41 cents per gallon to eight cents per gallon for breweries that were brewing less than 5,000 barrels a year. Back then, New Mexico’s largest breweries were brewing less than 1,000 barrels. Times have certainly changed. According to John Gozigian, Executive Director of the Brewers Guild: “In 2009, Marble and Santa Fe Brewing did over 5,000 barrels. We could see it going up, up, up, and up.” Since then, the Brewers Guild has attained a non-profit status and has lobbied for excise tax relief in the legislature several times. “We guarantee whatever we save here (for the biggest breweries $100k a year in savings) were going to be spending more than that re-investing, expanding and hiring”, John said.

“We’ve fulfilled that promise hundreds of times over.” The Brewers Guild also helped pass legislation that legalized growler-fills and created allowance for a third off-site tasting room, alternating proprietorship that permits different breweries to share space and equipment, and reciprocity with New Mexico winemakers, which allows breweries and wineries to buy and sell each other’s product. The mission of the Brewers Guild is to protect and promote New Mexico Brewers. In 2017, the Brewers Guild took their role of protector very seriously. “We’ve become more defensive,” John said. Its work this year was to prevent the NM legislature from passing a misrepresented excise tax that would have raised costs per beer for breweries, buyers, and consumers. The promotion side of the guild allows for events like the New Mexico IPA Challenge, Winter Brew Fest, Blazing Brew Fest, and the upcoming Beer Premiere at Bow and Arrow Brewery on October 28, 2017. According to John, the Beer Premiere is “an annual festival where each participating brewery brews a beer they’ve never brewed before and there’s a massive release party.” Red carpet and suspense are certainly included.

New Mexico Beer Trends of 2017: New England IPAs! Across the state (and nationwide), many breweries are shifting from the bitter, ultra-hopped, clear filtered West Coast style IPA to the traditionally turbid, subtle citrus, floral notes, and shadowed hops of the New England style.

Other US Craft Brew Trends of 2017: New Flavors: New is the trend across the nation. Brewers and beer lovers want to try everything new! Vegetable or Fruit infused beers Kombucha (in beer or on tap) Sours & Barrel-Aged styles are still brewery and beer-lover favorites, but are more and more becoming lasting offerings. Spent grain donations that go to community members ensure less waste from the breweries and that valuable food does not go to waste.

The guild also has a Beer Map that shows all the breweries and tap rooms in the state. Since 2011, the guild has added 38 breweries and tap rooms to the map.

IPA: Still the largest category, IPAs have infinite variations this year. Brewers and consumers are eager to find more and more complex flavors.

What does John foresee for 2018?

Gruit: An African brewing style that utilizes alternative grains and many complex flavors.

“I see a lot of the breweries doing the same thing now. I’d like to see a little more creativity. There’s this model: Open up a brewery and a tap room; you don’t have a kitchen and get food trucks to come. Everyone does yoga. That’s cool, too, but I see a lot of repetition. Now that there are so many breweries and the density has gotten really high, I think and I hope that we see more differentiation begin to take place.” Survival needs both creativity and chemistry. The beer world is an ever-changing and innovation-driven atmosphere, and so we know that the sky’s the limit.

Coolship or wild inoculation which is a Belgian brewing style for Lambic style beer that relies on spontaneous fermentation and wild yeast.

ktoberfest denotes summer’s transition into fall, socializing with friends and strangers, and drinking great beer at long tables outside or in a tent. The official event, held annually in Munich, Germany, is known as the largest folk festival in the world. Boasting five- to six-million visitors in past years, the event is actually held mid-September. The festival runs 16-plus days and beer is purportedly served only in staggeringly sized one-liter glasses. Its history is equally impressive. The festival itself dates back to 1810 as Munich’s citizens celebrated a royal marriage. Aside from a handful of years, the event has run continually since in the same location, marked by large beer tents, steins, Bavarian cuisine, and its signature beverage. The beer that is nearly synonymous with Oktoberfest is the Märzen. Before refrigeration, hot summers meant that March (Märzen) was the last feasible month to brew. The result—Märzen beers—were available to drink in the late summer and fall. Fortunately, not everybody has to buy lederhosen and travel abroad to fill their glass. Given that almost onefourth of the US claims German heritage, there are many local Oktoberfests to be found. Taos Ski Valley hosts an Oktoberfest at the Bavarian Restaurant, complete with German food, beer, and a yodeling contest. The

Oktoberfest at the Moriarty, NM-based Sierra Blanca Brewing has historically sported horseshoes competitions, a band, a family-friendly atmosphere, and plenty of bratwurst and sauerkraut. Boese Brothers Brewing’s Oktoberfest begins on September 16th. Like pumpkin-spice-everything, Oktoberfest beer abounds in the fall. Santa Fe Brewery’s Oktoberfest beer is widely available in New Mexico. Sidetrack Brewing Company on 2nd Street in downtown Albuquerque has a Märzen style on tap that makes for a great growler fill. Local German Clubs host Oktoberfests that are open to the public. The fact that many local brewers provide Oktoberfest styles or variations means that DIY-ers can embrace the spirit of Oktoberfest by coordinating their own celebration. A backyard Oktoberfest may be one growler-fill away -- just add a big table, food, and good company. Alternatively, a bar crawl between nearby breweries that have really nice patios (See the last Brewer’s Crew issue for our patio issue winners,) may approximate reveling from tent to tent on the weis’n, or Oktoberfest grounds. Today, the mayor of Munich opens the festival by opening the first keg and declaring “O’ zapft is!” (It’s tapped!). T

he weather is finally cooling down and homebrewers are getting back into their brew routines. This change of seasons triggers a new season: Competition season. There are many homebrew competitions held in the fall and winter. By the time this edition of Brewers Crew goes to press the Dukes of Ale New Mexico Homebrew Competition will have come and gone. But the Santa Fe Open organized by fellow homebrewers the Sangre de Christo Homebrew Club usually occurs in November and there are numerous scheduled competitions in the region and nationwide. The main objective for any homebrew competition is to help homebrewers improve their beer. Sure it is fun to win ribbons, medals and swag but the feedback on a beer is what most homebrewers are looking for with their entry fee. Most competitions are certified by the BJCP (Beer Judge Certification Program) and use a score sheet and the style guidelines provided by the BJCP. The BJCP has grouped beers, ciders and meads, into specific categories in which they are judged. For example an IPA would be in its own category and would not be judged against a stout. Each category has guidelines to evaluate the style of beer. These guidelines help the judge evaluate the beer using the scoresheet. The score sheet focuses on five areas which are aroma, appearance, flavor, mouthfeel and overall impression. The first area evaluated is aroma. The aroma can consist of hops, malts, esters and off aromas. The idea is to be descriptive in what is being smelled. When evaluating an IPA the hop aromas usually dominate and can be very specific such as grapefruit or lemon. Hop aromas can range from earthy and floral

to piney and tropical fruits. Malt aromas can also be very distinct giving a stout can give the impression of roasted coffee in the nose. Next is appearance. This is where the evaluation of the color, clarity and head occurs. Does the color of the beer match the guideline being judged? How long does the head last after the beer is poured? Is the head creamy and thick or rocky with big bubbles? What is the clarity of the beer? Is it brilliant or is it hazy? Finally we get to taste the beer! Using the guideline for the style of beer being evaluated the judge comments on the malt flavors. The judge could be tasting anything from a sweet, honey like flavor to chocolate and coffee to dark stone fruits. The flavor of hops could be full and flavorful grapefruit with pine to basically nonexistent. Are the malts and hops in balance? Are there any fermentation “off” flavors? How does the beer finish; what is the aftertaste? Next is mouthfeel. This is the section where the judge evaluates the body, carbonation and any palate sensations. For instance is a beer “too thin”, “too thick, or “chewy”? This is also where the carbonation is noted as being either too low or too high for the style. Other things such as alcohol warmth and astringency would also be noted. The final section is the overall impression. Here is where the judge would give their general opinions on the beer such as the drinking pleasure associated with the entry. This is also where the judge would give suggestions on how to improve any “off” flavors or shortcomings to the style guidelines. It is best that judges use

generalities and not make assumptions when giving suggestions. Telling an entrant to back off on the Cascade hops when Cascades were not even used will hurt the credibility of that judge. All off these categories add up for a possibility of a score of 50 points for a beer. Beers scoring 30 to 37 are considered very good, 38 to 44 being excellent and 45 to 50 outstanding. There are usually two or more judges evaluating a beer and each fill out a separate score sheet. The scores are then averaged for the final score. Next time you are drinking a beer it may be fun to evaluate the beer against the style guidelines and maybe even fill out a score sheet.
