Publisher My fellow craft beer lovers, we are excited to bring to you yet another issue of BCM. We are especially excited to have this issue dedicated to the women in brewing and how they help shape and mold what the industry is today. In this issue you are going to read about an all women brewers association called “Pink Boots Society”(on the cover). A society created by and whose members are only women brewers. We have our very own local chapter and it is headed by none other than Monica Mondragon of Santa Fe Brewing. She is very dedicated to the craft and you can always count on a good local beer representation by this awesome group. We also have a handful of other women who we feel have been making an impact through their hard work and leadership in the craft beer industry. So with that said you will be reading on some wonderful women from 377, Pecan Grill & Brewery, Santa Fe Brewing and Riff Raff Brewing. Each has a story to tell and you do not want to miss what they have to say. Of course we have some words of wisdom from our own Mr. Hops who enlightens us on some historical beer quotes and tips on how to select a beer at a local brewery. Trails and Ales is back at it again providing you with some insightful options to some summer beers you definitely want to try from Durango to Las Cruces. Finally, as you are reading this you may find yourself smack dab in the middle of beer week. A great week of events put on by Feel Good Festivals, we have the full schedule inside so make sure you plan accordingly to have fun! I hope the summer months treat you all well. Something about the dawn of Summer that stokes the flames of reminiscence in Mr. Hops. It may be the increasingly warmer weather, sweet smell of Spanish Broom, invigorating cool breeze of some far-off storm, or perhaps the calm created by the adjournment of school. And, no my dear Beerthrens, Mr. Hops is not of school age, but both Teeny-Bop Hops and Baby Hops are school age, and, despite our efforts to avoid the obligation, Lil’ Mama Hops and I are indentured to provide private car service to the little ingrates… ahem…angels (please excuse my necessary digression). As part of Mr. Hops’ nostalgic jaunt, I often hear echoes of famous folks conferring wisdom upon my ears and mind. Over many a beer

I have celebrated our Nation’s long-past leaders and the insight they have provided. Quite possibly my favorite quote, and tattoo, was spoke by President Abraham Lincoln, “I am a firm believer in the people. If given the truth, they can be depended upon to meet any national crisis. The great point is to bring them the real facts, and beer” (emphasis added). Another beer down and Mr. Hops’ mind goes back, recalling other quotes of yore, beyond our borders, to Kaiser Wilhelm’s utterance, “Give me a woman who loves beer and I will conquer the world.” Of course, the Kaiser’s 1800’s vparadigm differs greatly from the modern world. Mr. Hops, in his poetic and insightful way, sees it more as, “Women who love beer

will conquer the world” (although stated otherwise hereto, this is now my favorite quote and tattoo – damn you brilliance!!). Women have long been stewards of brewing. From legendary Chinese brewing of grog and honey mead, to Sumerian brew, which was guarded by the female deity, Ninkasi, to Egyptian brewing, known to be the province of women, and blessed by the goddess Hathor, women, throughout history have been central to the development and proliferation of brewing our sweet and cherished libation. Perhaps the ancients smile upon us today as we honor some of the best women brew masters (better put – some of the best brew masters, who happen to be women) around. It’s with beaming pride that Mr. Hops highlights the female contribution to beer making, and it’s with a grateful heart that he says -- Cheers!! Yes, of course, I’d love another pint. Question: Dear Mr. Hops, Admittedly, I’ve been somewhat of a wall-flower when it comes to micro-brews. I would like to take the plunge, but I’m sorta

apprehensive – there are soooo many choices out there. Where do I start!!! Sincerely, Your Dedicated Beerthren – Lucky Day Dear One Amigo: Fear not, for I bring you good tidings of great joy. You see, the beautiful part of your conundrum is that it isn’t a conundrum at all. Mr. Hops advises thee to shatter your apprehension by strutting in to one of Albuquerque’s (or whatever city you may be in at the time) wonderful tap-rooms, look the brew master in the eyes and, without wavering, ask her what she recommends (or him if the brew master’s a dude). They won’t steer your wrong – I promise. Mr. Hops, when in doubt, usually reaches for an amber, but you may want to put a toe in with a pilsner or lager. However, and I can’t stress this enough, if you find yourself outside with a beautiful woman, and she asks you to take a walk so you can kiss her on the veranda, you must always tell her ---- The lips will be fine. SUMMER BREWS make us feel fine

A slight variation on the Seals and Crofts song ‘Summer Breeze.’ A late blast of winter in April into early May has slowed mountain snowmelt, keeping future beer in cold storage. The rivers in southern Colorado on both sides of the divide are running fast and furious and will be well into July! Beers will soon be made from this precious wonderful water! And then... hot fun in the summertime! What’s your pleasure? What are your destinations and trail plans? Beer and music festivals? Solitude on a stream or trail by day, a brewery by night, telling tales of the fish that got away, or the mother bear and cubs that crossed your path? Mountain biking a gnarly trail with minimal bleeding? Rafting gnarly stretches of the upper Rio, Chama, San Juan or Animas? Or a simple road trip on the brew trail? When was the last time you did something for the first time? All of the breweries within a few hours drive, by train, or maybe a bike ride or a walk have lots going on this summer. Check out as many as possible and take professional notes and pics! Become part of my Brewers Crew Ale Trail R & D team on the website. Why? Cuz I can’t do all the trails or taste all the beers!

NEW MEXICO • Santa Fe Brewing - The Research and Development Department is busy as usual. They will be doing many small batch releases available at the brewery and for the tap room in ABQ. Several of note will be a ‘hoppy hefeweizen’ a yet to be named beer with extra hops and extra kick with a higher ABV than regular ‘heffies.’ There will also be an experimental Pale Ale. The one that caught my ear will be a new IPA coming out in cans in 7

July - The Seven K IPA. It will not be a quiet release, as Alana, the GM informed me this IPA will have a big publicity campaign prior to its coming out party. Hopheads get ready! The artwork is supposed to be kinda cool too, a good thing on a NM summer day! • Duel Brewing - According to Sean, they are busy preparing all sorts of fun at both locations in Santa Fe and ABQ. Look for the rooftop deck in downtown to be open sometime in June. Be prepared to be part of the comparison team - a flight of five Saisons from last year to this year. For instance, compare the spring saison to the summer version - same beer but the summer version has been ‘hiding’ in red wine casks for several months adding to the already complex flavors of the nature of this style. And be prepared for the Cezanne Magnifique - also aged in red wine casks, light in body but with a 9.5% kick! • Broken Trail Brewing - Paul gave me his preview of their summer special - Sancho de la Sierra Saison - he indicated it had bold flavor and a big nose (like WC Fields? - Ahhh yes, got to be that way... hmmmm. Look up his humor - well worth it.) • 550 Brewing - They are right on the Beer Trail for those heading up 550 into Colorado Beer Country. Stop by in Aztec for two of their new summer brews - a European Blonde and a Milk Chocolate Stout using chocolate from the Animas Chocolate Company from upstream in Durango.

COLORADO • Riff Raff Brewing - There are backroads to Pagosa that take you across the Jicarilla Apache reservation and land you in this beer, fun, and hot springs town. Kyle at Riff Raff is brewing

up batches of an Apricot Blonde for those who like their summer beers on the fruity side. He will do the same with an Amber but has yet to decide on choice of fruit. He is also toying with a refreshingly citrus IPA. Don’t make make Pagosa a drive by. With the San Juan River, the mountains, the hot springs and all the activities and three breweries - stay a night or two. Pagosa is busy in the summer. Plan ahead! • Three Barrel Brewing - Over Wolf Creek Pass in Del Norte, Will and crew are brewing up an unfiltered summer wheat beer Zigeunerweisen (say it properly in German for a free one - taste anyway!). Chill Session Beer - an amber for post physical activity recovery after sand boarding at the Dunes or riding mountain bikes in nearby Penitente Canyon. Local honey bees will be proud of their yet to be named honey Kolsch. • Square Peg Brewerks - will be opening their doors by June in downtown Alamosa CO and feature farm to tap ingredients. Derek, one of the owners is planting barley and hops that will go from the local farmland right into their beers. Mark, his brewing partner has let me sample some of their barley juice before it has fully become beer. Yep, it’s gonna work just fine. • Crestone Brewing, Dave, the head brewer there, has a regular lineup of beers but this year is working on incorporating local ingredients to make special ‘grogs’ with yarrow, sage, juniper, choke cherries, honey, and several other local plants. Yarrow he indicated will be a substitute for hops and impart a citrusy bitterness to his creations like nothing else. Working with Colorado Malting Company, supplier to many NM breweries, they will also be using cottonwood smoked barley malts. Cheers! • Deeper into Colorado is Elevation Brewing. They brew a lot of beer! Elevation is making their beers available in cans and hope to enter the NM market soon. Expect 12 packs to contain 4 of their top beers. In the meantime? A road trip to taste their beers in Poncha Springs CO is highly recommended. These are a few recommendations for summer 2017. A growing list from breweries will be on the website. Both apps provide an extensive database of worldwide mountain bike trails, allow you to download maps and use offline, see your GPS location on the map, look up local trail information and conditions, check in and post your rides, see how other people have rated rides and much more. He also recommends the Strava Beacon app, a real-time activity tracker that allows family or friends to know where you are at all times.

here is historic evidence showing that women were the first brewers. Women were brewing in ancient Sumer in Mesopotamia as early as 3500 BCE. The Sumerians even honored a beer goddess, Ninkasi, the “lady who fills the mouth.” In the hunter/gatherer work division, the women were responsible for gathering supplies to craft food and drink for their communities. In America, the Pilgrim women brewed small batches of beer and cider in their kitchens. Homebrewing was the most common form of beer-making in the early United States. It wasn’t until taverns and businesses developed that large-quantity brewing was necessary. In the United States, the onset of prohibition stalled the extensive craft brewing industry, but it continued in most other parts of the world. Now, in the United States, women in brewing are making a comeback. After modern commercialization of the brewing industry, with beer being marketed as a drink “for men” in the post-prohibition 1950s, women have had to reclaim their place in the brewing world. Pink Boots was established in 2007 by Terri Fahrendorf and is now the contemporary global

non-profit resource for women who work in the industry which is still primarily run by men. The

self-described character statement of Pink Boots Society says: “We are the female movers and shakers in the beer industry. We get the beer brewed and fermented with the highest possible quality. We also own breweries, package the beer, design beers, serve beers, write about beer, and cover just about any aspect of beer, and we are all women. Most importantly, we teach each other what we know through our own seminar programs, and we help each other advance our beer careers by raising money for educational scholarships.” Education and enablement are their focus as they reach out to women in all aspects of the global beer industry.

Monica is the Laboratory and Quality Control manager at Santa Fe Brewing Company. She has loved being part of the Santa Fe Brewing team. “I am extremely grateful to them for giving me an opportunity to show how much I can learn and grow to become an integral part of the day-to-day workings on the production side of brewing,” she says. Her work at Santa Fe Brewing connects to her role in Pink Boots. “I feel like PBS is fulfilling its mission statement of providing mentorship, networking and access to educational opportunities that will help advance the careers of women in the beer industry,” Monica said. Part of the continuing education is the “Big Boots Brew” fundraiser. According to Monica, “Every year a day is selected around International Women’s Day for [Pink Boots] chapters all over the world to brew a collaboration beer with other ladies in local chapters to raise funds for our monthly educational scholarships. A basic recipe is sent out to all chapters and each chapter is allowed to modify the recipe as they see fit.” The 2017 beer is the “Melissa” which is a Belgian Honey Ale. The New Mexico breweries that participated in the collaboration also have had the Melissa on tap. These Pink Boots brewers include Sidetrack, Santa Fe Brewing Co, Tractor Brewing Co, and Bosque Brewing Co and students from the CNM beverage/brewing certification program. Membership is open to women who are “students in beer industry educational programs, women with breweries in planning, and women actively employed, or retired from, the beer industry,” Monica said.

It doesn’t stop there. According to Monica Mondragon, president of the New Mexico chapter of Pink Boots, since the establishment of Pink Boots, “More has been reported on lately in the industry regarding how to market to women (and if it should be done at all), and the treatment of women bar staff, as well as the controversial guidelines put out by the Brewer’s Association regarding their review of “offensive” names for

“W

e are accessible. You don’t have to be super knowledgeable about beer or already know about IBUs and hop varieties to enjoy one of our beers. You can just walk in. We can find a beer for everybody,” general manager Alana Jones says of Santa Fe Brewing Co., the oldest brewery in New Mexico. She would know this certainty more than anyone else. Alana started working at Santa Fe Brewing thirteen years ago as a bartender when it was just a small neighborhood brewery in Santa Fe, NM. There were five people working there and Alana was still in college. She has been part of the process every step of the way. When Santa Fe Brewing opened its new location in 2006, Alana was there to help. Even now, Santa Fe Brewing rapidly continues to grow. They distribute their beer in ten states and are the bestselling craft brewery in New Mexico. As the general manager, Alana oversees many operations that include Santa Fe Brewing’s priority, becoming a part of its community. “We’re building an experience for people,” Alana says. “We have not only a tasting room but a music venue. We put grass in there. It’s a place we encourage people to bring their families, come out and seeing awesome live music. We will have a new tasting room. We are building a barrel-aging cave for sours and any barrel-aged beer. We will also have water treatment plant that we’ve been building which will water a whole landscaped beer garden, using reclaimed water.” Sustainability is a high priority for Santa Fe Brewing. With the new water treatment plant and beer garden they hope to create a space that the community can enjoy because of recycled water. The Brewery has something to offer for everyone including rotating taps for its signature seasonal IPA’s and experimental brews for the bolder beer connoisseurs. Santa Fe Brewing’s most popular offering is the Happy Camper IPA—also the #1 selling IPA in New Mexico-but they have so much more. develop in the last several years as craft breweries have spread across the state. “It is so exciting to see the level of knowledge and participation that the consumer has. They are participating in this experience. More and more breweries come up and they raise the bar higher and that’s a great thing and it has made everyone better. It has educated more and more people. We all take turns raising each other up. It’s a beautiful awesome thing that I’m really proud of.”


W

inning brewmaster of Albuquerque’s 377 Brewery, Lyna Waggoner has thirteen taps in her home just to keep her palate sharp. The craft of brewing is constantly in her mind, and for this she has been recognized. This year at the 2017 Denver International Beer Competition Lyna and 377 Brewery were awarded a double-gold medal for the 255 Schwartzbier, a German-style dark lager with a full-bodied flavor but very drinkable at only 4.3% ABV. According to Lyna, the Schwartzbier is a “German beer for the workers, that they could drink during the day and still get back to work. It is very malty up front, very low IBUS, drinkable, malty, and awesome.” Lyna’s swift recognition in the New Mexico brewing world has been spurred by her perseverance and enthusiasm about beer.

Before moving to Albuquerque in 2013, Lyna lived in Portland, Oregon, where she was a stonemason. She spent much of her time learning the many different Portland neighborhoods and the micro- and macro-breweries that were overtaking the city. “The craft brew scene hit heavy there, and I was just drinking Dos Equis. I got into craft brewing not making beer, just drinking the beer. There was a macro-brewery on every corner. All I ever drank was IPAs.” Visiting these tiny but craft conscious establishments inspired a life-changing goal in Lyna. She loved craft beer so much that she decided she would learn to brew. She says, “When I moved [to Albuquerque] I didn’t know what was here. I didn’t know anything, so I made a pact that when I moved here I was going to start making beer. I started right away.” When Lyna arrived in Albuquerque, she got to know Dukes of Ale president Kevin Fleming. Together, Fleming and Waggoner won a silver medal at the New Mexico State Fair in 2013 for their German Pilsner. It was a fast track from there, and in 2016, Lyna became the brew master at the 377 Brewery. Brewing also connects to Lyna’s educational background in biology and chemistry. “I love the science because I have a degree in biology and chemistry. I was going to be a veterinarian. When I decided not to do that, I got into the artistry side. I started being a stone mason and creating all kinds of designs, water features, walls and patios, and I do murals. It’s the creative side with the science side, and it all comes together with brewing. And I love beer. God, I love beer.”

THE 377 BREWERY

377 Brewery opened in 2016. Their best-selling offerings include the 377 IPA, a New Mexico Lager, and the award-winning Schwartzbier. The uniqueness of 377 Brewery is the range of beer they offer. They offer are fourteen beers on tap including an English bitter, imperial cream ale, a whiskey stout, a Kolsch, and soon a double IPA, a red, with two more of Lyna’s brewing projects on their way this summer. “I absolutely love it,” Lyna says about her recent double-gold medal. “It shows me that I can keep going. I didn’t hit a wall my first time out. I’ve got lots to do.” Lyna has many plans but she credits a lot of her success on the support of the community and friends that she has found in Albuquerque. “In the beginning, I think everybody was skeptical, I don’t know what it was, but now I have so many bros—Ty and John at Rio Bravo, Sky and Dave Tractor Brewing, Josh and Elliot at Dialogue, Robert Palmer at Palmer Brewery and Ciderhouse— I could just go on and on about the people that are willing to embrace me.”

Imagine being Jason, one of the owners of Riff Raff Brewing, giving his homebrewing equipment to one of his bartenders, and unknowingly, creating a ‘mad scientist brewer!’ I caught up with Maddy, the first Saturday in May with HOPS (Homebrewers of Pagosa Springs), where the small group was gathered on the front lawn of Motel SOCO, which for a few hours, became an outdoor brew house and tasting room. Approaching the topless kegs turned brew kettles, I was down wind of the boil, and the steam from the wort imparted a wonderful aroma in the air. Ahhh, beer! The group was making two new beers and had samples of their recent home brews. “Maddy, how long have you been brewing?” “I got a home brew kit from Jason in November 2013. Been crafting uniquely flavored beers since then.” She has so perfected her concoctions that Riff Raff gave her the ‘Outlaw tap’ at the brewery. Her kegs go quickly. Beers on her tap have included a Wasabi Citra (really!), Imperial Cranberry Kolsch, a Toasted Pecan Brown, and one of the biggest beers I’ve tasted in awhile - her Imperial Blueberry Single Hopped Oatmeal Pale Ale. On Saturday we tasted her Blonde Stout, surprisingly good because looking at the color, a deep gold, and having it taste like a dark powerful stout, throws off what the beer brain is expecting. I asked her about what regulars and visitors like at Riff Raff. “People love our regular flagship beers. And we always have several seasonals including my Outlaw Tap. One really popular seasonal right now is the Spirited Lass Strong Scotch Ale.” (I was able to enjoy a sample size and she is right. Amazing flavor in this beer as oak spirals from Scotch barrels were used during fermenting). And of course there is our menu including local yak and lamb. We use our beers in many of our sauces and recipes.”

Beats wasting good beer! Maddy has yet to enter her beers in homebrewing or other competitions. She may get around to it but for now she is happy being the marketing director, bartender, and brewer while working for Pagosa Outside Adventures in the summer when the rivers nearby are running.

ASHLEY SPRINGER PECAN GRILL & BREWERY

shley Springer, Director of Operations at the Pecan Grill & Brewery in Las Cruces, NM gives much of the business’s success to its in-house beer production and distribution. Starting out as a fine dining restaurant by the Springer family in 2010, the Pecan Grill & Brewery has gained recognition for its small batch seasonal beers and state-wide distribution. From day one, the family-owned and operated restaurant has had its foot in the brewing game, but it wasn’t until the hiring of Head Brewer David Allan, paired with Ashley’s marketing 19

background, that the restaurant’s main focus changed from fine dining to beer brewing. Thanks to Ashley’s business savvy personality, the Grill’s beer can be found all over the state and recognized nationally. In three short years, the Grill has taken home 7 gold medals and at least 15 awards for their brews. However, it’s not just about winning; for Ashley it’s what the beer has done for the restaurant. “We’re a large restaurant in a small town, and that can offer challenges”, says Ashley. David’s beers have turned the Grill’s clients into regulars, and he is considered part of the Springer family. Ashley wants to make sure there is a beer for everyone. She has listed beer suggestions next to menu items; she organizes beer tastings, food pairing at the Grill, and participates in beer festivals. You may have caught sight of the Grill’s tent at the Blazin’ Brewfest this May. The Grill also has some new brews to look out for, a Scottish 70 Schilling, a “Red As Ale” red ale, and a brown ale made for the nitro tap -- along with the house favorites. Her plans for the Brewery are to continue putting out beers that people love and making them more accessible. I

t has been a busy spring for the Dukes of Ale Homebrew Club! The Dukes of Ale just finished with their annual Enchanted Brewing Competition. This is a BJCP (Beer Judge Certification Program) certified event for homebrewers only. The judging was held on April 21, 22, and 23 with the awards ceremony held on April 29th at Broken Trail Distillery and Brewery who graciously hosted the entire event. There were 250 entries from not only New Mexico but Colorado, Arizona and even Florida and Minnesota! Long time Dukes of Ale member Tammy Pluym won the beer best of show with her Weissbier. Kevin Fleming picked up the Best of Show award for his cider and newcomer Jess Stafford won best of Show for his mead. The Dukes also showed well in the National Homebrew Competition with several placing in the regional rounds to qualify for the final round to be held in Minneapolis this June. Those that qualified are Kevin Fleming, Tim Lambert, Kirk Bigger, Mike Archibeck, Krista Jantz, Tom Hart and Ben Miller. The Dukes also partnered with Victor’s Homebrew shop on May 6th to celebrate Big Brew Day. This is an event organized by the American Homebrewers Association to celebrate National Homebrew Day. Homebrewers from all over the United

States and world participate in the event. Last year there were 12,780 participants in 12 countries and 48 states that brewed 17,804 gallons of beer!

Events like these support the mission statement of the Dukes of Ale which emphasizes the educational aspect of homebrewing. Most Dukes of Ale meetings have an educational aspect to them whether it be reviewing and tasting specific beer styles or learning about specific brewing techniques. There club also plans activities like bicycle pub crawls, picnics and camping trips. If you are interested in learning about homebrewing you are welcome to join any Dukes of Ale meeting. The Dukes of Ale currently has nine female members in the club and are very active in participating in the planning and execution of club events. Shannon Dyke is the Co-Vice President and is on the Competition Committee along with Carolyn Parsey. We interviewed Owner and Operator of Street Food Sensations, Lorenzo Garcia, to get some insight on what makes his food truck one of the best in the Southwest! How did Street Food Sensations start? Having been in the Catering Industry for 6 years, I decided I wanted to get my own food truck to help with my passion and cook gourmet items. I knew that if I could own a truck it would balance out for the summer. Who are the founders/owners/chefs/staff? I am the owner and head of operations; I have plenty of close family and friends who contribute to the running and success of food truck. What are some popular favorites? Items that are always popular are, BBQ Chipotle Pulled Pork Nachos made with a Chile con queso/ beer cheese, New Mexico Green Chile Burger Sliders, and fresh hand-cut fries with parmesan-cilantro truffle oil and roasted serrano ketchup. What sets your food apart from the other trucks? What I think makes me different at this point is that I learned from one of the best food trucks out here, I was blessed to work and intern with The CNM program Street Food Institute. Even though I already had a previous knowledge of cooking, I had lot to learn from a food truck standpoint like the concept of fresh and local product, which food items work, timing, preparations, as well as food quality. Which brewery do you enjoy most? I tend to work with all breweries and have much love for all of them. If I had to choose one, it would be La Cumbre Brewery. They opened their doors to us when we first got started and the partnership just grew from there. Do you have a favorite craft beer? Style? Name? There are two beers that I enjoyed this past year. One is that made my mind blow was a beer called “Blackberry Hefe” from Red Door Brewery. This was one of their seasonal summer beers that was great to drink and even better to cook with. My other favorite is “A Slice of Hefen” from La Cumbre Brewery. Do you think the booming craft beer industry in ABQ has helped your sales? We work very well together. Our food and their beer pair up well. I love the idea of working with beer in our cuisine. Our sales and name is what it is because of the industry of craft local breweries. There are a lot of tourists who come to New Mexico and want to get great southwestern food as well as craft beer. We made it possible to get both in one location.
