“No winter lasts forever; no spring skips its turn.” ~ Hal Borland And thank goodness for that! It’s been a very dreary couple of months, spent buried beneath the duvet hoping not to have to face the outdoors. That said, doesn’t time fly? It doesn’t feel like five minutes since we were digging out the Christmas baubles and excitedly putting up the tree, but now, already, we’re hankering after the sunshine, dreaming of salads (and not the far more hearty fare that we’ve been noshing on of late), fishing out the short-sleeved tops and swapping steaming mugs of tea at bedtime for a chilled glass of wine. Yes, spring is all about new starts. From the fresh fashions that fill the shops, to our pressing desire to get out into nature and enjoy life; there’s a lot to look forward to. Which is exactly what we have been doing in preparation for this issue of Style. The team has brought together the very best of what the coming months should bring – from the delights of this season’s must-have nautical themed fashions (pg 29), to the joys of bringing the outdoors in at home (pg 67). We also met with model and TV presenter Diane Stafrace, who is our cover interviewee for this issue. Diane has made her mark internationally but is resolutely

proud to be Maltese. She shares some anecdotes from her glamorous life, as well as her plans for the future, on page 11. But Style hasn’t just been looking forward, but back too, meeting with five of Malta’s distinguished personalities who are now in their 70s and 80s. On page 19 of this edition they tell us some of their most interesting and touching stories from their careers and personal lives, helping us to step back in time through their eyes, if only for a moment. This feature certainly makes for delightful reading, and gives the chance to reflect a little on just how quickly life does zoom by. And so, it is with that in mind, that I leave you to enjoy Style. Do take the time to put your feet up and enjoy that steaming cup of tea – possibly one of the last mugs that you’ll be clinging onto for warmth this season! Happy reading!

Diane Stafrace first became a local household name when she formed part of the winning Malta Song for Europe trio, Times Three, which went on to represent Malta at the Eurovision Contest in Jerusalem in 1999. Ever since, she’s been travelling the globe as a successful model and TV presenter, working at red carpet events that include the Cannes Film Festival and London Fashion Week. Now based in London, she recently returned to Malta for a short holiday, when she found the time to catch up with us at Style on Sunday to share her story so far. The Eurovision Song Contest definitely sparked the start of my career and gave me a taste for the entertainment industry. Having said that, my sister Moira (of Chris and Moira fame) is the singer in our family and she was the one who really encouraged me to give it a go. But modelling was, and still is, my first love. It was an industry that fascinated me as a child, and I got into it in my teens. By the time I reached to the Eurovision I was already doing the odd campaign locally, and the contest highlighted the fact that there was a whole world outside of Malta waiting to be explored. Looking back, I did start my international career later than most models, but I’m so glad to have had a proper education to my name before that. There’s a definite stigma when it comes to modelling, as people assume you’re stupid. Being a little bit older, I knew more about what I wanted to achieve. In fact, by the time I graduated from the University of Malta, I was desperately hungry to get out there and travel. I left a good job behind here to move to Brazil, where I had a friend who was working in the beauty industry. He introduced me to all sorts of fantastic contacts who opened doors for me

STYLE inTERVIEW there, and before I knew it I was working in Rio and having the time of my life. Of course it wasn’t easy going from the safe confines of a tiny island to the big, wide world of Rio. Thankfully I have a flair for languages and I picked up Portuguese within four months, which was very helpful as no one spoke a word of English! I was lucky enough to be taken on by 40 Graus, the agency which has launched the careers of top models including João Vellutini, Ana Beatriz Barros and Bianca Klamt, and I started working quite a lot. I loved living and working in Brazil, but before I knew it my visa ran out and I had to return to Europe. It was sad to leave behind the friends and lifestyle I had got used to there, but it was great to be back in the vicinity of Malta. Ever since I have travelled and worked in Europe, basing myself in London and moving regularly between Belgium and France. I have really enjoyed modelling in different capacities. I spent a season working as a showroom model for Vivienne

turning 30 this year and my best friend, who is from Miami, has offered to throw a huge party over there – and I’m certainly taking that into consideration! She has a fabulous house right on the water, and it would be wonderful to stay with her for a while enjoying her company, and exploring work possibilities too. Coming back to Malta is always a pleasure, and it will always be home. I love the summer for its lively social scene, and the winter for the nights when I can curl up and spend quality time with my family, just like the good old days. I am always happy to promote the island when I am working, and feel proud to be Maltese. Most people I meet assume I am South American or Lebanese, but the feedback is always extremely positive when I mention home – they’ve either heard wonderful things or visited and loved it. As a local I am also thrilled to see the steps that have been taken here when it comes to fashion and style. And while I don’t think that, from an international perspective, I can ever think of Malta as a fashion hub or destination, we’re

Westwood, as well as for Chloe and Juicy Couture. It was fascinating getting to meet buyers from all over the world, and I loved knowing what trends would be in season well ahead of everyone else. But modelling also led me to other things, and I was asked to work as a reporter for Italian channel Highlife TV, which broadcasts fashion events and film festivals. Moving into this side of the industry marked a big step for me, and I finally started to enjoy the glamorous side of it too. It truly has been amazing, and I’ve loved chatting to designers and stars including Judi Dench, Vivienne Westwood, Jasper Conran, Paul Smith, Aaron Aronoscovy and John Malcovich. I’ve covered all sorts of awards for the channel, including working London Fashion Week four times; next up will be the Cannes Film Festival in May. Now, aside from working, I’m looking forward to having a lot more time to travel. I’d love to visit Asia as it has been my dream for a while now, so that’s on the cards. I am also

definitely making progress – and we certainly have the talent to make an impact. It’s great that those who work so tirelessly at it are starting to see results and be appreciated. Looking to my own future, I’m excited to have the time to concentrate on myself a little more these days. Fashion and style are in my blood, and I love to socialise, so I am happy to dedicate time to all three. Living in London is wonderful, and I thrive on being able to go to all the new, trendy places that the city is constantly dishing out; it’s such a fabulous place to be. Thus, I don’t think I would have been happy had I stayed here and I’ve been so lucky to follow my dreams. I may not have become a top model, but I feel that I have achieved a lot for myself – including forging many wonderful friendships. Because, while glamour and glitz are great, none of it matters if you can’t share it with the people you love, and I’m lucky to be able to do that in both the places I can now call home, London and Malta.

Diane’s Style Notebook It’s hard to pinpoint just one designer that I couldn’t do without. Ralph Lauren would be a favourite for the daytime because I find his collections to be so elegant and effortlessly chic, as well as the eternal style of Chanel. At night I’m drawn to the stunning dresses by Hervé Léger, although I do love mixing things up with items from the high street, too. Milan is my favourite shopping destination as absolutely everything is within walking distance. London is fantastic too, though it tends to be much edgier, which isn’t really me. I’m more drawn towards sophisticated looks. When it comes to fashion must-haves, I love staples – like the classic Chanel bag; I think every girl should have one. I also find that any outfit can come together with the right shoes, bag and coat. Finally, jewellery – whether real or costume – provides that pivotal finishing touch, and you’ll never see me without it. Audrey Hepburn will always be my ultimate style icon, for her incredibly classy look. I also like Carla Bruni and Catherine Zeta Jones, both of whom always look beautifully put together. Socialising is a major hobby of mine and I love the London scene. Anabel’s and the Arts Club are two of my current favourites, both trendy members-only venues where everyone looks great and both settings are stunning. Just recently I was enjoying a meal at the Arts Club, and Cameron Diaz, Reese Witherspoon and Gwyneth Paltrow were dining at the next table. Funnily enough, Diaz was also just across from Diane wears... me at the gym the following morning. My favourite place in the world would have to be Brazil. I feel a real sense of freedom there; the people are so positive and carnival seems to come round everyday. They also love a good dance, which makes me love them even more! People may not assume this of me, but I’m actually very religious. I pray a lot, and don’t think I could get through life’s complications without God. I do think He has listened to my prayers and helped me through many dilemmas. My parents are also very spiritual; we all are. Concentrating on God helps me to meditate, and I would love to go to Lourdes one day soon to experience the spirituality of such a place.

Some of us dread it, while others look forward to it. Here, Style on Sunday meets five distinguished septuagenarians and octogenarians, all of whom have left indelible marks on Malta’s history, to share their life stories, wisdom and thoughts on the inevitability of getting older.

Giovanni Bonello, 75, is now retired from his position as a judge within the European Court for Human Rights, but he is still extremely active, both as an author and cultural forerunner. My earliest memory is of when I was almost four years old and the police arrived at our house to arrest my father. I hid behind a curtain and heard my father say to mum: “You’d better pack some pyjamas. I may not be sleeping here tonight”. He was right. He didn’t return home that night, nor for five years after. He was one of the political internees, exiled illegally and in breach of a British court order to a British concentration camp in Africa, without charges or trial, and never ever told why. I never wanted to be a lawyer, as I was far

more engrossed by culture, history and art. Through no fault of mine, I had lawyers on my mother’s side and was only 14 years old. I found myself enlisted on the university law course, resentfully and rebelliously. But among various infirmities I suffer, I have been diagnosed with an incurable sense of duty. If it was my distasteful duty to be a lawyer, then I was damned if I didn’t put all I had into it. It somehow worked. There have been many highlights. When I won my first human rights case in court. When I pleaded my 170th human rights case in court. When I was appointed Chief Justice and turned it down. When I sat, for the first time, as judge in the European Court of Human Rights. When I was the first judge in that international

court to have his law opinions collected and published behind his back. And when I published my first book. Today that excitement is rather jaded, with 20 books printed and 200 churning in my mind. Looking back, I’m a firm believer that my favourite decade hasn’t been yet. It will be the next one. Meanwhile, my favourite age has been every age of discovery – teen age for love, middle age for rebellion, old age for detachment and death for fulfilment. Now, as I get older, it means caring more and more about less and less. If I could have done anything differently I would have liked to be more patriarch in my youth, more juvenile in my senility. My wisdom to pass on? Wisdom is unteachable and unlearnable.

Professor Frederick Fenech, 78, has long been a pioneer of Malta’s medical profession, including as a University Dean and as the founder of the Malta Red Cross Society. I was born and bred in Birkirkara, where I had a happy childhood; we spent the summer holidays and first year of World War II on Gozo with my mother’s family. I also thoroughly enjoyed my Jesuit College days. Back then, life in Malta was simple with none of the modern day distractions. Though I come from a family of lawyers, I was drawn to the medical profession and qualified as an MD in 1955. In June 1977, when I was Professor of Medicine and Dean, the medicalpolitical dispute erupted with academic staff dismissed from their posts. This was traumatic for my family and me; as an academic physician it was vital that I pursue my career in hospital medicine and academia. So, after helping some 90 medical students to find places in UK medical schools, I looked for an academic career overseas. Though I was offered academic positions at King’s College in London and Southampton

Medical School, in 1978, after consulting my wife, I accepted the challenge of the post of Foundation Professor of Medicine at the newly established Medical School in Kuwait. I returned to Malta in 1987 to again take up the position of Professor of Medicine and Dean. Looking back, I enjoyed my international commitments as visiting professor to overseas medical schools, as well as external examiner in medicine, an activity which I still look forward to. In fact, I will be going to Dubai in May and Kuwait in June. I also founded the Malta Red Cross Society in 1991 and retired in 2010 as Honorary President for life. Malta, back then, was the only country in Europe without a Red Cross Society. Since I qualified I have marvelled at the explosion of medical knowledge and the changes of medical practice. The Maltese medical profession is a credit to us. And while getting old naturally slows you, I have remained active and, until quite recently, held the post of director of the UN International Institute on Ageing. People are living longer and healthier; yet

society in Malta does not make full use of their knowledge and experience. I hold the strong view that the age of retirement and pensionable age should be raised, except for those who do heavy work. Indeed when I was giving a talk at the UN in New York to the elderly and was asked when old age begins, I jokingly responded: ‘five years after one’s age’. I for one still enjoy lecturing medical and pharmacy students as it gives me a chance to interact with many young people. Would I have done anything differently? I don’t know. I am basically an optimist and my wife calls me the ‘happy fool’ as I always believe everything to be for my own good in the long run. One has to adapt, and I was lucky to have a very supportive, loving and sensible wife and family. Now, if I were passing advice on to doctors I would tell them to be good listeners. Remember Osler’s advice: the kindly word, the cheerful greeting and sympathetic look that can make a difference. The practice of medicine, if carried out with courtesy and politeness, as well as competence, will give you a lot of pleasure and satisfaction.

Karmen Azzopardi, 78, remains one of Malta’s best-loved and respected actresses of all time. Although still recovering from open-heart surgery undergone a few months ago, she can’t wait to get back on the stage as soon as possible. My earliest memory is that of being taken to Balzan from Hamrun due to the air raids, where we stayed with my uncle. It was very unfortunate though, because while the house in Hamrun was never hit, the Balzan property was, injuring three of my brothers and taking the life of my aunt. From a young age I remember taking part in shows. Teachers would choose me to play different roles and I always loved it, and continued to do so throughout secondary school and at training college, where I was studying to be a teacher. I remember playing Lady Macbeth back then, and the show being quite a hit at the school. After that I joined the British Institute Players as one of only four Maltese actors, and later acted with Maleth, MADC and other local clubs and companies. I worked as a teacher for just a year-and-ahalf before being asked to join the Education Department’s Broadcasting Unit, where I wrote scripts and took part in plays for

schools. It was an exciting time, and I was even sent on a course at the BBC, and later continued my own studies in drama at the Actor’s Studio in London. Back in Malta, my colleagues and I really lived the theatre; we loved it and were completely dedicated to it. Of course it wasn’t without its disappointments and, eventually, I was encouraged by Chevalier Paul Naudi to open my own company, along with some fellow performers. This developed into Atturi and our first show was a very ambitious piece – Pirandello’s Six Characters in Search of an Author, directed by Lino Farrugia. It developed brilliantly from there and we would perform very regularly, both in English and Maltese, in various venues, including overseas. Today I am still recovering from my recent surgery and very grateful to be alive. I went into hospital for a different reason but the doctors realised something was wrong, and that saved my life. My last show was a onewoman production, telling my story mixed in with extracts from well-known plays. Now I would love to get back on stage, as I miss it so much. I would love to be in one more Tennessee Williams production, especially Suddenly Last Summer. It’s been a

marvellous mixed bag of 58 years of theatre, as well as wonderful TV series such as Wirt; I do so hope there will be more. Malta has made great strides in the arts, and I have great regard for those who are involved in it. Architect Richard England’s name is synonymous with innovation across Malta, and he is credited with some of the island’s best-known landmarks. Now 74, he continues his work as an architect, artist, author and poet. Looking back to my earliest memories, recurringly, my childhood abode returns in dream and reverie with memories of my grandmother striving to pass on her cultural world of literature and music. Nostalgic memories also abound of the architectural ambiances of Malta of that time, before today’s destructive, materialistic, moneyhungry ideology. My path towards architecture was largely influenced by my father, also an architect, by my early interest in the arts and following my internship at the studio of the renowned Italian architect-designer Gio Ponti. My architecture moved from an early regionalism to a later expression of much freer forms. The industry has changed so much. Instant

communication and digital technology have completely altered the design and making of architecture. However, I believe that globalisation has diminished respect for place, memory and cultural identity. Architects today need to practice more ‘eco’ than ‘ego’. I look back fondly on many highlights, including, in the early ‘80s, working on the rehabilitation of Baghdad with such international architects as Robert Venturi, Arthur Erickson, Arup Associates and Ricardo Bofill. It offered the most exciting opportunities, as did the making of Manikata Church and the rehabilitation of St James Cavalier. Personal highlights would include my election as an Honorary Fellow at the American Institute of Architects and the

once stated that: “if you survive long enough, you’re revered like an old building”. What she forgot to add was that, like an old building, you also need conservation. Remaining young at heart is so important, for as Michael Ende said: “man dies when the last part of the child in him becomes an adult”. Looking back I’m pleased to say I wouldn’t have done anything differently. What is the point of lamenting? You can’t change anything anyway. Life is a one-take shoot! My one bit of wisdom to pass on would be a quote from Antoine de Saint-Exupéry’s ‘Little Prince’: “It is only with the heart that one can see correctly, that which is essential is invisible to the eye”, as well as to remember that what you weave in this life, you will wear in the next.

privilege of having befriended many of the outstanding international practitioners of my profession. I would think the ‘60s were the most exciting period, with the zeitgeist of the age, Malta’s independence and working with friends in the arts in search of a new Maltese cultural identity. The presence in Malta of such personalities as Basil Spence, Victor Pasmore, Quentin Hughes and others further enriched this era. I look at the present as my favourite age so far, as I still consider it as a launching pad for the future. I still believe that if you rest you rust. I prefer the term ‘maturing’ to ‘getting older’, although it is like being penalised for a crime that you never committed. Katharine Hepburn

Tenor Paul Asciak may have retired from the stage in 1961, but his teaching legacy lives on through performances of the likes of Joseph Calleja and Gillian Zammit, both of whom he has mentored. At 89 years of age, he remains active and devoted to the arts and his family. My memories take me back to my youth, as part of the then-famous San Gakbu Boys’ Choir and the many cultural activities that took place in Valletta, including performances at the Royal Opera House, our ‘Rjal’, which I had the privilege of attending. When it comes to getting older, I think it is all about how gracefully you look on life, as I started rather late but I am still learning a

great deal. Obviously everyone goes through bad patches, but life has mostly been kind to

me. There may have been disappointments but I’d like to think I bypassed any hurdles.

My experiences have certainly taught me never to waste any opportunity, and to always be generous.

No Ordinary Home Malta’s high-end property market has exploded in recent years, reflecting the ever-increasing demand for luxury items and services, and attracting a whole new set of buyers. Here Jo Caruana discovers two very different homes currently on the market, each worth millions and offering features that are completely unique.

Malta’s property market seems to have entered a new era – and interest in it is flourishing. After all, years back it would have been hard to imagine just how many properties would be on the market for well over a million euro – and some come with price tags stretching well above €8 and even €10 million. It’s not just large houses in traditional areas that are turning heads and securing these prices, but everything from apartments in luxury developments to sprawling villas in the south. Meanwhile, the buyers themselves are a mixed lot, with both locals and foreigners seeking homes of this sort – including the likes of A-listers David Beckham, Brad Pitt and, most recently, Tom Cruise. So, Style on Sunday set out to discover more about the truly

unique properties that are currently out there on the market. After all, with the recent media reports, albeit conflicting, that Cruise has eyed a €12 million property in Madliena that meets his particular property tastes (such as his request for a 2,000 square foot living room), there were bound to be some gems to discover. It seems that space definitely comes at a premium, as can be seen from one of our two properties of choice – this stunning, modern bungalow in Marsascala, priced at €4.5 million (available at Remax Alliance). Here the homeowners chose to spare no expense when it came to maximising on the property’s best assets – the area available and the view. “We were totally inspired by the space,” explains the homeowner who, as a retailer of electronics, also kitted the

STYLE LIVING house out with every element of technology imaginable. “So many houses can only enjoy the view from the living quarters, but we wanted to do things a little differently and designed the house so that every single room has a view of the sea. It is also south-east facing, so sunset is stunning – and the vista of the moon above the bay at night is pretty incredible, too. It may not have been easy to organise, but an L-shaped arrangement made it possible and the results are fantastic.” They certainly are, as you’re never more than a few seconds walk from the unobstructed view of the property’s own lovely pool, with the bay behind it. It may be a house that could, realistically, have been built anywhere, but it is this view and access to it that pushes it into a league of its own.

Meanwhile, the house also feels wonderfully spacious, not least because it is spread over 360sqm up top, and 600sqm below. “Upstairs are the main living quarters, whereas the massive basement is home to an eight-car garage, games room and gym,” continues the homeowner. “It’s a home for someone who really wants the best.” Clearly this type of property does have a lot to offer, with its open spaces and stunning views – all of which contribute to the well-deserved, hefty price tag. But there are other houses that offer a different flavour entirely, but still sell for millions – like the one featured on the next page, in Rabat, which is currently on the market for €3 million. My own particular favourite is the master bedroom, which has a very distinct feature – a retractable roof. “The homeowners wanted to be able to lie in bed and look up at the stars,” smiles Carmen, and now they can. “They actually devised the mechanism for the roof themselves, as they are in the automation industry. Thus it truly is exceptional and very unusual.” Leaving both properties behind, it becomes clear that there really are some wonderful houses on the market, each bursting with features that set them apart from the norm. All that’s left is to match them to a suitable buyer. Now, if I could just find where I left that €4 million…

In The Making… Designs that Delight From interiors to graphics, the Maltese design industry has come on in leaps and bounds. But what of those creating actual products for our homes and wardrobes? Style on Sunday meets three talented designers doing just that.

Luisa Diacono: The creative journey towards a stunning collection Luisa Diacono tries to think back to a time when art and design weren’t her driving passions. “I can’t!” she smiles. “I think they have always been. Even as a little girl I would make outfits and accessories for my dolls and redesign my dollhouse. I saw every blank piece of paper as a challenge and couldn’t wait to draw all over it – I ruined a few of my parents’ prized possessions that way! Creating was something that came naturally, and to this day I get my inspiration from seeing ordinary things in an extraordinary way. Plus, I always have my mum on hand – she’s a fantastic inspiration and my best critic.” Fresh out of school, Luisa began her

career straight away working with wellknown local interior design brands. “Art is in my blood from both sides of my family, so I automatically veered towards it as a job. Having worked for four years, though, I was eager to take on a new challenge and enrolled on the design degree at MCAST; it was a perfect time as it had just been launched. It turned out to be a really amazing experience and I got so much out of it.” Within months of graduating Luisa was already making her mark. Last year she designed a line of hand-painted and embellished scarves, which were a hit as Christmas presents. “I was overwhelmed by their popularity,” she says. “It was a fantastic feeling. I have always been an accessories junkie myself, so scarves were the obvious choice to get me going.”

Now, though, Luisa is looking at where to take her collection next – jewellery, other clothing accessories and even clothes themselves. She was also asked to design a collection of scarves for a local company, which will be launched shortly. “That in itself was a dream come true,” she says. “It feels fantastic to be doing what I have always wanted to do. A creative career isn’t easy, but it is very rewarding, and I enjoy mixing my business head with my artistic one. Now I’m just looking forward to continuing to develop my collection and discovering new ways to make beautiful things.” Asked where she sees herself in three years, Luisa grins: “I’ve no idea! I’ve got no set plans except to keep on creating. I’m enjoying the journey.”

Roberto Tweraser: Inspired by his surroundings Being completely surrounded by sea, one of the Maltese islands’ most abundant resources is salt, “which was the inspiration behind my SALT pendant lamps,” designer Roberto Tweraser, who was born and bred in Malta, explains. “I have always admired designers who fuse their work with local trade techniques and materials, as is often the case in Asian design, but as an island Malta’s resources are limited, whereas salt is not.” Although, like many, he wasn’t sure of what he wanted to do when he was

younger, having returned from a short stint in the US, Roberto knew that he wanted to study design, which he did at the MCAST Institute of Art & Design, from where he graduated last December. “Even as a student I sought out opportunities and, in September 2010, I showcased my work in one of the UK’s most renowned design exhibitions, held throughout London Design Week,” he explains, adding that this preparation was important as he knew how hard it would be to develop a design-related career locally. “My passion is decorative lighting design and it is my dream to have my own brand, but the market is limited. However if you have something unique

I believe you can find people who will want to buy it,” he says. In the six months since completing his studies he has been working as an interior and product designer, and extending his SALT collection. “I like to think my lamps are versatile and fit almost everywhere,” he states. Speaking about inspiration, Roberto believes that this depends heavily on the project at hand, but admits that a quiet environment helps. “My best ideas tend to come to me as I fall asleep. The next morning I try to put them into action. “Each piece I create tells a different story. Even though personal style does influence every product, each one is unique,” he concludes.

Jenny Zammit: Blending vintage and modern for that perfect balance It is all about blending a few unique vintage pieces with new, sleeker designs to create that perfect balance, especially in the home, explains Jenny Zammit, the woman behind Rogue Furniture Transformed. RFT takes old, unwanted pieces, strips the paintwork, removes any fabric or stuffing and makes any necessary repairs, before embarking on a creative process of applying different styles, paint techniques and colours. Jenny’s interest in design was always there, but it was a culmination of experiences and events during a two-year stint in London that started her off on this path. “I remember being inspired by aged wood;

there’s something very warming and homely about it. I was used to the starker, more modern interiors in Malta, but in the UK a more ‘back to basics’ trend was emerging. It made sense to me, and slowly evolved into what I’m doing today,” she says. The vintage trend has been gaining popularity in Northern Europe, and the Maltese market is definitely following suit, she states. Jenny explains that the wardrobe pictured above is an example of a work-in-progress. She goes on to say that inspiration can come from anywhere and anything, and adds: “I am excited by what I do and my radar is almost always on. “I’ve only got one pair of hands, and there’s plenty to keep them busy,” she says, while admitting that demand is growing and she

is looking into expanding. Finding the right people to recruit is a challenge though, she admits, as the reality is that being passionate about this job is a must. Multiple sources provide her with furniture, although she explains she is picky about what to take in, as it is easy to end up with a pile of junk. “I wait till I see a piece I’m immediately drawn to. If the piece doesn’t inspire me, I know it will sit in my workshop for ages, untouched,” she explains. Jenny is also approached by people who have furniture they’d like revamped, and enjoys these as they allow her to realise people’s ideas, although being a creative individual, she likes to give things her own little twist, too.

Mixing different materials and textures Contrasting textures is a clever way of mixing patterns. For a stylish and bold feature create a composition by mixing different materials such as ceramic and fabric (eg within a table setting) together. If too much mixing and matching of patterns is not for you, you can still have fun in a more subtle way. I would suggest that you mix and match with scatter cushions, which will liven up even the plainest of sofas. Opting for coffee cups and mugs, serviettes and a table cloth in different prints is another easy way to add some colour to your white dinner set, while a patterned hand towel added to your plain collection will add some vibrancy and excitement. The common denominator Another way to go wild with pattern is to choose a colour that permeates throughout the composition. Although the patterns are different, the common colour will create harmony within the setting.

Spring TimE for Meat Lovers Nothing impresses quite like a perfectlycooked steak. And, as we’ll discover, when it comes to beautifullycooked meat, simplicity is key.

Roasted Scottish Rack of Lamb Serves 1

1 lamb rack (frenched), 5 tbsp olive oil, salt and pepper Method: Dry the lamb loin well with a kitchen paper towel, season with salt and pepper, and drizzle with oil. Place the lamb in a pan, bone side down, and fry for two minutes on each side. Place the lamb in a hot oven (185°C) for about four minutes. Allow to rest before reheating for two minutes, season and serve.

Grilled Aberdeen Angus Beef Rib Eye Serves 1

350g beef rib eye, 5 tbsp olive oil, salt and pepper Method: Season the steak. Drizzle with oil and grill over a high heat for three to five minutes on each side, then allow to rest for a further five minutes. Reheat the steak on a high temperature in oven for few minutes.

Bordelaise Sauce 40g shallots (finely chopped), 8 white peppercorns (crushed), 200ml red wine, 300ml veal stock, 1 small bouquet garni, 200g beef marrow (soaked in iced water for four hours), 30g butter (chilled and diced) Â Method: Sweat the shallots, crushed peppercorns and red wine in a saucepan over high heat and reduce the wine by one third. Add the veal stock and bouquet garni, and bubble

gently for around 20 minutes (or until the sauce coats the back of a spoon). Pass it through a sieve into another saucepan. Drain the beef marrow and cut it into small pieces. Place in a small saucepan, cover with a little cold water and salt lightly. Set over a medium heat and bring to the boil. Immediately turn off the heat, leave the marrow for 30 seconds and then drain. Season the sauce to taste, whisk in the butter, add the well-drained beef marrow and serve immediately.

Grilled Milk-Fed Veal Fillet Serves 1

300g veal fillet, 5 tbsp olive oil, salt and pepper Method: Season the fillet well, drizzle with oil, then grill over a high heat for three to four minutes on each side. Remove from the heat and allow to rest for four minutes. Reheat in a hot oven for three minutes and serve.

BĂŠarnaise Sauce 1 bunch fresh tarragon, 3 tbsp white wine vinegar, 2 shallots (chopped), 6 peppercorns, 1 bay leaf, 1 sprig of thyme, 5 egg yolks, 250g unsalted butter Method: Pick the tarragon leaves from their stalks and set to one side. Put the tarragon stalks in a small saucepan with the vinegar, shallots, peppercorns, thyme and bay leaf. Add a good splash

of water, bring the liquid to the boil and then simmer until it reduces by half. Strain the liquid through a sieve into a bowl and allow to cool. Meanwhile melt the butter. Place a bowl over a bainmarie. Add the eggs yolks and vinegar reduction, and whisk to a pale cream. Then add the clarified butter into the egg base sauce, a little a time. When this is done, finely chop the tarragon leaves and add them to the sauce along with a seasoning of salt and pepper.
