probably your all-encompassing reality as you presents pristinely under the tree.
For the Style team, though, Christmas almost feels as though it’s been and gone. You see, we first discussed festive style back in the
summer months and have had Christmas on our minds ever since; by the time November rolled around it already felt like January!
Nevertheless, I know we’re all merrily looking forward to our Christmas break spent with
family and friends. I for one can’t wait to curl up by the fire, sipping some hot chocolate

and diving into that book I’ve been trying to get stuck into for months.
For this season is all about quiet rest and
reassessment, and no-one better understands that than the cloistered Sisters of St Clare,
who have dedicated their lives to prayer. In an interesting interview (pg 29) we meet seven
of these devoted women to learn more about their lives and the ways they celebrate the
the importance of family unity, as well as accomplishments.
Meanwhile, the Style on Sunday team has
really embraced Christmas style this issue.

STYLE INTERVIEW Giannella Caruana Curran and Fiorella de Marco are both very much in business mode when we meet – each fresh from a busy morning in court, with the challenges of the day still on their minds. Nevertheless, as we stop to chat about their relationship as sisters, they smile, recalling their close bond - which is just as impenetrable today as it was when they were growing up. “I have always admired and loved my big sister,” smiles Fiorella, who considers Giannella to be her best friend. “There’s a one-and-a-half year age gap between us and, when I was little, I would stick to her like a barnacle – so much so that Mama often had to ask Giannella’s friends whether I could tag along to their parties! I don’t think Giannella appreciated that very much! “Naturally we did quarrel as children, but only because we played together all the time. As teens, however, she paved the way for me quite brilliantly as I was allowed to stay out as long as she was, which worked just fine for me! We were very close, and would share secrets and discuss our evenings out. We’d confide in each other all the time. We’d also experiment with clothes and make-up together, as well as borrow each other’s things. “Today, of course, we’ve grown into different circles of friends and have our own lives, but our closeness has never waned. We’ve always had each other in common, and we’re lucky that our men – Paul and George – are best of friends too. We travel together, talk often and are very comfortable in each others’ company.” Giannella explains that while she and Fiorella are extremely close, they’re also very different. “It’s hard to qualify our differences, but they’re there,” she explains. “I think I am probably more impulsive than Fiorella, while she can be fierier, yet more patient too. Even without speaking we know exactly what the other is thinking.

“We’ve shared a lot of experiences together, such as the start of our careers and raising our respective children, the oldest of whom are very close in age. We were raised to be family focused and in that sense I think we are extremely similar; we have the same beliefs and code of ethics.” That code seems to extend to their work, as both sisters are renowned for their career achievements. “I didn’t always know I was going to be a criminal lawyer, although I had always been fascinated by it,” continues Giannella. “I’d heard so much about criminal law growing up; my father would enjoy discussing cases with my mother, who always offered great insight and thinks outside the box. In fact, I still discuss my trials with her today as she is always quick to see things in a different light. “When I first started working with Papà I was like his shadow. I started practising law in my early twenties, but was also juggling life as a mother to two young sons at the time. Then, a few years later, my father became a minister, so I took over his practice. “I was the first to graduate in law out of us three children, and I knew I had a lot to live up to, especially as my father’s clients inherited me when he moved to politics. After all, I was taking over from someone who was considered to be one of the best criminal law lawyers on the island; so, when my first murder trial came around a few months later, I knew it would be an important step in my career.” That trial dealt with the murder of an old man from Valletta. “The forensic evidence seemed to imply that gunshot residue, as well as some fibres that matched the deceased blanket, had been found on his jacket. However my client, who protested his innocence, claimed he’d never fired a gun or been into the old man’s home. “I recall going to prison to meet my client for the first time. My face often

betrays my thoughts, and thus, my client could tell from my expression that I was worried. He tried to placate me and said: ‘Your father had a case where the accused admitted, his palm print was found at the scene and he had gunshot residue on his clothes, and yet he was acquitted – what are you worried about?’ But instead of calming me, it had the opposite effect and actually piled on the pressure! Finally, after many hours of cross-examination and observations, it emerged that the jacket in question could not have been my client’s and he was subsequently acquitted. The sense of exhilaration and satisfaction was enormous. “There have been other important trials too, one of which captured the whole country’s attention and focused on a young Gozitan man accused of patricide. It was a horrible story, and there was an unbelievable history of physical and emotion abuse on him, his mother and siblings. As an adult my client was still very afraid of his father and in the end the verdict was ‘excess of self-defence due to fear or fright’ and he walked free. It was such a touching case, I think people found it hard to believe that such horrible crimes of abuse could occur in their midst. Despite the fact that the father was unarmed, there was incredible support for the son, and I received numerous calls and letters of encouragement. “Naturally, trials such as these can cause a lot of tension, so it is wonderful to have a peaceful home to return to at the end of the day. George, also a lawyer, truly understands and supports me, which makes all the difference.” Meanwhile, Fiorella is equally as engaged in her career as a family lawyer. “Of course I do see a lot of anguish, which is the hardest part of my job,” she says. “I always joke that, had I been a family lawyer before getting married, I may never have gone ahead with it! Thankfully, having done things the other way around, it makes me treasure and appreciate my family so much more. “Times have certainly changed for many families. I have the luxury of being selfemployed and can work my hours around my family’s requirements, but not many people can do that. Family law is mainly heartache, as you’re dealing with people whose lives are breaking down. Occasionally I manage to
reunite a family – which is always a milestone for me – but those cases are rare. Often, by the time I meet them, couples have reached the point of no return and it’s my job to try to smooth things over as much as I can. “Of course I want to see families together, but it’s more important to ensure no one is suffering. Easing the pain of a family suffering domestic violence gives me a great sense of purpose. Often these cases also give rise to an annulment and it is so wonderful to see the injured party being given a second chance to find happiness. “One of the saddest things that I have regularly witnessed is child manipulation, where the primary care-giver indoctrinates the child against another member of the family, often the father. It definitely seems to be on the increase, possibly because relationships –

“I have always adMIRED Giannella; she has been my best friend since childhood.” – Fiorella whether wedded or not – seem to break down faster these days, which means the child hasn’t had the time to bond with both parents before they are separated. It’s often my role to find the truth in their accounts, and my early training in psychology is certainly an advantage.” Now enjoying the pinnacle of their successes – both professionally and privately – the sisters take time to enjoy their favourite things in life too. “Meeting my husband Paul will always remain an incredibly important moment in my life,” explains Fiorella. “We shall be celebrating our 30th wedding anniversary next June. Not only at work, but also at home, the family remains my core focus. In fact, although I had already
successfully finished my first year of law, I did not hesitate to leave to spend the first few years of my married life accompanying my husband, an architect, to the different countries he worked in. My first degree helped no end, because whether we were living in Italy, Belgium or Saudi Arabia, it enabled me to teach. In my last few years in Saudi Arabia I even opened my own school, and I must admit that that gave me great satisfaction. Upon coming back, my husband gave me all the backing required to finish the law course, by then as a mother of two. “The thing I relish most is watching my children grow. Anjelica, a lawyer who specialised in Cambridge, Tias, a final-year architecture student, and Federica, who is in Form One, make me unbelievably proud, and watching their achievements so far has given me an overwhelming sense of happiness.” Both Giannella and Fiorella hold the festive season dear to their hearts as they remember Christmases spent round the tree with their beloved family. This year marks a poignant milestone for the sisters – the first Christmas without their father, Professor Guido de Marco, who passed away earlier this year and to whom they affectionately refer as ‘Papà’. “Christmas has always been very special to us,” smiles Fiorella. “We lived the whole season to the hilt. During advent we would decorate the Christmas tree together, grow vetch (gulbiena) and sing carols in front of the crib. Advent festivities would culminate with a special private mass for the family on Christmas Eve. “On Christmas Day, Papà invariably took on the role of ‘Father Christmas’ – which he did until his very last Christmas – while Mama creates the perfect festive aura through her lovingly-prepared menu. Mama is a great cook and infallibly prepares our favourite dishes and crafts a banquet that each of us enjoys. “Our present-giving ceremony was always great fun. Papà, dressed as Santa, would hand out the presents. He would always write special messages in his characteristic green ink on each of the gifts – whether funny, touching or complimentary – and he would have a ball reading them out. He would write such beautiful words of love and praise for each of us, which would make each one of us feel special, and I think we’ve probably treasured

those cards for longer than the actual presents! “In all honesty, I am a bit apprehensive about this first Christmas without him. While I believe it is our duty to keep on recreating the Christmas atmosphere as it always was, I don’t sincerely know how we are going to manage it without him.” Giannella echoes that sentiment, but is evidently heartbroken at the thought. “Papà’s spirit is very much with us,” she says. “His presence is still very strong in my life; it always has been. We’ve always been an extremely close family unit. When I think back on my childhood I recall complete happiness.” The sisters recollect the memories of their father. “Papà – although busy with work – always brought so much joy to our lives,” says Fiorella, recalling the atmosphere of their home. “His presence would fill the whole house. I remember us all singing in the car together, or him chasing us around the house. He and Mama had an incredible relationship and it made us feel very secure. He adored her, and constantly told her how wonderful and beautiful she was.” Meanwhile, Giannella recalls that their mother’s practical sensibilities provided the perfect balance. “She is very down-to-earth and was always the disciplinarian,” she says. “She also created a lovely home for us – there was always a hot meal on the table, and she was always there to listen to us and to follow our studies. Both of our parents also strove to pass on a sense of correctness to all three of us and we were taught how to act in various situations. I think I have successfully passed on their teachings to my own sons, Joe, who is in business, and Gianluca, a lawyer who practises in our firm. They are both hardworking and feel a great responsibility to their
work, while striving to be correct in their dealings with others. I feel very close to them. “Looking back, I suppose it was quite forward thinking on Papà’s part that he never even considered our female gender as a limitation. Going to university was a given in the same way that going to secondary school was, it was simply a case of narrowing down the course we were to follow.” The sisters grew up knowing that education was vital. But they were also encouraged to take pride in their appearance and develop their own sense of style, something that is evident in them both today. “I think we did get that sense from our mother,” both sisters agree. “We were raised to think of Mama as a beautiful and elegant woman, and in my eyes I shall always see her that way. She is the centre of our family and we all radiate around her; she has taught us that family always comes first.” The whole family is evidently very close, which the sisters agree is testament to the way they were raised. “Looking at our family today I think it’s wonderful to see that what Mama and Papà so lovingly sowed, they have reaped,” adds Fiorella. “Giannella, Mario and I are all different with our separate roles to play, but we are very united. Our parents have given us a lot of love, warmth and happiness.” Giannella adds: “We always knew how much Papà meant to us, but after his death we were so pleased to continually learn how much he has touched the lives of so many other people too. He had the gift of knowing how to listen and make each person feel special. “We feel blessed and privileged to be the daughters of two such wonderful people, and hope to be able to live up to them.”

Freedom Behind Closed Doors
What makes you want to leave the freedom of this world for a cloistered community? Jo Caruana meets seven of the exceptional women who’ve chosen to join the Poor Clare’s fraternity, and discovers their individual stories of hope, love and complete dedication. Photography: briangrech
We all have predisposed ideas of what life in a cloistered community must be like. Some of us have great admiration for the people who choose to close themselves off from the rest of the world in order to dedicate their lives to prayer, while others can’t fathom why such a radical decision could ever be necessary. As I get ready to meet the sisters myself, I am in two minds about it all. Ushered into the small reception room where they would normally have their once-monthly meetings with friends or family, I try to imagine what it must be like to live here day after day, forgoing the chance to pop to the shops or take a long drive into the countryside. Part of it seems so strange, but as I glance down the bright hallways
and am met by wide smiles, I can’t help but acknowledge the overwhelming sense of peace; it’s mesmerising. The 27 sisters who live here in the Kappara convent – aged between 30 and 92 – have embraced their simplistic lifestyle hook, line and sinker, and they love it. But what is it actually like to live here? I went behind the partition to find out. Sister Rose Therese Ellis is the Mother Abyss. She joined the convent when she was 19 and has lived in the community for 43 years. “I’ve been dedicated to prayer since I was a little girl and was raised by very religious parents. I once read the story

Mother Abyss Sister Rose Therese Ellis of St Theresa of Lisieux and was very touched by her life; she became patron saint of the missions and I knew that I wanted to achieve something equally fruitful with my own life. I wanted to do something beautiful for God. “My parents were very happy with my decision to join the cloister and they blessed me. Of course, everything is difficult to begin with, but having had a calling for it I knew I had the grace to get used to this way of life. “Life here is a very simple one – we pray for over five hours a day, sing psalms and read the word of God. It is a very caring environment, no one is an outsider and there are no generation gaps between us – the older sisters try to understand the younger ones, while the younger ones learn from the experience of their elders. We get on very well; during our recreational time we talk and crack jokes just like any family would. “Since the last Vatican Council, life in the convent has changed a lot and we’ve tried to adapt to some of the world’s changes. For instance, we do have access to the internet now, which we use for correspondence, and we have a television on which we watch religious programmes. The ‘grill’ (a metal gate behind which the sisters used to be required to stand when greeting people) has been replaced by a ‘symbolic partition’ that is essentially a low wall with large windows. However that

separation symbol is important, as it is a constant reminder that we are separated from the rest of the world in order to be wholly dedicated to God. “According to our founder, St Francis, Christmas is ‘the feast of feasts’. We live every stage of advent and rehearse often for Midnight Mass. On Christmas Day itself we have a special adoration and prayer session, as well as longer recreational hours and a lovely lunch. Each sister also receives a gift and listens to the Pope’s blessing. It is a very special time for us and we all look forward to it greatly.” Sister Francis Hilary was 23 when she joined the convent, and has been there 23 years. “I really didn’t want to be a nun to begin with. Although I’d been educated at the Sacred Heart, the thought never crossed my mind. I looked at nuns as living in a different world and had never met a young nun with whom to compare myself. “When I first started to consider a more religious life I was residing in the UK and joined a prayer group. I was quite unsure what to do with my life and started to develop my relationship with Jesus. He was someone I could talk to, like a companion. One day I attended a talk by a nun who was talking about vocations. She said that God was calling
Sister Francis Hilary out to us, and I felt as though she was talking directly to me and that I was being called to be a nun. I struggled with it for a good while – my reaction was to say no, I didn’t want to be a nun. But after my relationship with my boyfriend broke down I couldn’t find peace anywhere and I finally said yes to the idea. Immediately I started to feel better. “At that time I still didn’t know which community I would join, but as soon as I came back to Malta on holiday the realisation hit me like a flash, remembering contact that I’d had with the St Clare’s years earlier. I walked up the Regional Road unsure of where the convent was and finally knocked on the door. I explained my confusion and fears, and the Mother Abyss said I could stay for the weekend to see how I felt. The minute I stepped inside I felt at home and I knew it was the place I would find peace. I knew this was the place that the Lord wanted me to be. “Of course there were difficulties, not least because I was also coming to terms with leaving England at the same time as joining the convent. But I felt an inner strength that helped me to get over my material difficulties. Looking back on my life I don’t think I’d do anything differently – except perhaps take up carpentry because I have always been drawn to it! The more time goes on, I realise that I made the right choice. It was not me who did

STYLE In-DEPtH something special for Him, but the other way around. I love my life here. The outside world doesn’t scare me, but I am always struck by the noise when I do have to be out there. There seems to be so much agitation outside, and often over what seems to be so trivial. “Here we all have our roles to play – each of us has a job to do and we try to use our natural talents too. We have our own private rooms, which are our sanctuaries for work, prayer and rest. It is so peaceful here, and if anyone is wondering what life is like, they should just come and see it for themselves. I know I had a very different impression of what it would be like! When I look back I recall feeling frightened that I would lose my freedom, but I’ve learnt that freedom is not outside but inside you; I feel very free and fulfilled.” Sister Claire Agnes is 33. She joined the convent 12 years ago. “I was 20 when I first felt my calling. Before that I’d led a very normal life, although I’d known since I was about 17 that something was missing. I worked for the Water Services Corporation, I was in a serious relationship and I loved travelling. You’d think I would miss all that, but I don’t – Jesus took the place of everything.

“Looking back I recall that I used to live for the weekend. I went out a lot and partied in Paceville. I lived my life, but I don’t regret leaving it behind. A trip to Jerusalem changed things for me. It was quite a fluke, as my aunt had a plane ticket she wasn’t using so I just upped and left. It seemed to be a message for me to reassess what I was doing with my life. So I did, and Jesus led me here. “Of course people were shocked, especially as they knew what I was like. They had no idea how I would manage but I knew my life was in God’s hands. I enjoy life here – praying for the world’s needs; I feel more a part of the world now than I ever did, and more alive. I think I have been out six times since joining, for medical reasons mostly, and the noise always shocks me. I don’t know how I managed to live with the noise. God has cleansed me – life is no longer about make-up and branded fashion, but love and prayer. I find so much joy in the unity of our fraternity.” Sr Clairefrancoise joined the convent when she was 29, 16 years ago. “I lived a lot before I joined the convent. I had always been sporty and that was my passion, in fact I took part in Malta’s firstever marathon and won. I had hoped it would
lead to great things for me, but funds didn’t exist for those sorts of things back then and I was very disappointed. Eventually I got a job as a post woman, which I worked around my athletics and cycling training sessions. “At the same time, I knew there must be more for me in life. Then the Pope came to Malta for a visit, and it changed me. I recall watching the Pope when he stopped to pray – he was so engrossed that he actually had to be asked to move on eventually. I realised that nothing else mattered to him when he was praying, and I longed for that. There and then I vowed to make more time for God and I remember that I would drive to work early just so that I could sit in my car for a while and read my Bible. “A few years later I went to Egypt to help the lepers. There was a missionary there, Francis Baldacchino, who also had a profound effect on me. In time he encouraged me to find God in my life and, when I returned to Malta, I was changed. I recall hearing a voice that told me all my sins had been washed away, and another telling me about the Sisters of St Clare. When I listened, I realised that here was where my destiny lay so I followed it. “Aside from sports there isn’t much that I miss. Last year I was keen to hear what was

STYLE In-DEPtH going on with the Olympic Games, and I did catch a few glimpses of it on the internet, but not much. I also miss the missionaries and their stories, and would love for God to one day open a window that would allow us sisters to be part of that world again, but I know it is unlikely. “However all that is just a dream, I am very happy here. I believe that people need God. If you are feeling empty, you should open your heart so that He can get through.” Sister Maria Liliana is a novice who has been part of the convent for two-and-a-half years. She joined when she was 40. “This will be my third Christmas here and I am definitely looking forward to it. I am not professed yet, but will take my temporal vows in 2012. After a further three years I will be professed solemnly, which will then be for life. We were a total of seven novices together when I joined, which helped me to settle in. “Before I came here I led a very ordinary life – I worked in a bank, had a great group of friends and travelled as often as possible. I had everything I could have wanted and yet something was still missing. It took me quite a while to figure out what I needed to do, but slowly I started to pray more and more. I knew I was destined for a religious life; even though I had had boyfriends I knew they weren’t what was meant for me. Finally, a friend who used to pray here at the convent, told me to come along, and when I did I was finally at peace.

“Of course it was difficult to give up my family, especially my young nephews and nieces, but I have never looked back. Now I don’t think I would even want to go out into the world if I could! The sisters have been so wonderful and welcoming that they have made it very easy to be here. It’s been a true blessing; I came here to find Jesus but it was actually Him that found me!” Sister Chiara Letizia was 25 years old when she chose to join the cloister, and has been there for just over eight years. “I both worked and was in a relationship before I came here, but I knew it wasn’t my vocation to do either of those things. I didn’t choose to be cloistered, it chose me, and I simply followed. “Of course it was difficult for me to accept to begin with. But once here I felt at peace and nothing would make me reconsider my choice. And although we live according to a routine, it doesn’t feel that way. My life is spent with Jesus 24 hours a day, seven days a week and there is never a separation between us. “When I think back to my earlier days, when I loved shopping and fashion, I realise how nothing matters except having peace in your heart. I am currently enjoying advent because it is a time when I feel very close to Mary, which is important to me. There really isn’t anything that I would change here; after nearly a decade I am very happy and very much at home.”
Anne Marie Magrin, 32, joined in November 2009. “I never wanted to be a nun, and had excluded it from my life. I wasn’t always religious either, and went through different trying phases as a teen. I dreamed of travelling the world, and that was all I thought about. But, while on a trip with the Living Waters missionary group to Ethiopia, I started to see God all around me. “I know it is hard for people to understand why I chose to be a cloistered nun, but only God can answer that. Obviously every life has its difficulties, this one included, but I am completely at peace. You learn that nothing can give you the fulfilment that God can. This life gives you the freedom not to have to depend on material things. “For me it is early days as I am still going through my trial stage. I don’t know for sure whether I will remain here, but I do know how happy it makes me. Life can seem hard – we get up at 5.15 every morning, and even wake to pray at 12.30 in the morning three times a week. But we are very united and at one with God. People may think us lonely, but that couldn’t be further from the truth. When I started discarding the noise of the outside world I discovered that everything I had spent my life searching for was within me. As it is written in the Bible (Matthew 11: 28), God says, ‘Come to me all you who labour and are overburdened and I will give you rest.’ That really is exactly how I feel and I couldn’t be happier.”

With Music as my Saviour Local music artist, Claudia Faniello, opens up about her battle with bulimia. Words by Krista Micallef Trigona Photography by briangrech
It’s not easy to open up and admit that you have or had a problem, especially when you are in the public eye. But Claudia Faniello is doing just that, sharing her experience with others and motivating them to seek help – she serves as an inspiration for all those who have also fallen victim to an eating disorder. In Claudia’s case it was bulimia nervosa, which unlike the horrific starvation ‘techniques’ of anorexia nervosa, is predominantly characterised by binging

“Listening to music was like having an imaginary friend by my side, who could relate to what I was going through.”
(rapid consumption of a large amount of food in a short amount of time) and purging (through self-induced vomiting or the use of laxatives or diuretics). At just 14, Claudia fell victim to an eating disorder, but her story actually begins long before. “I don’t recall the exact moment it started,” she says, trying hard to remember. “But from a very young age I was always unsatisfied with the way I looked. I always felt that there was something wrong with me. “People who suffer from eating disorders feel very lonely, and unless you go through it yourself, it’s not really something that you can understand. Speaking from my own experience, bulimia became a part of me and my lifestyle, and I found it very hard to let go,” she openly admits. For two years, after every meal, Claudia would secretly purge everything she ate. And, as we get chatting, she recalls some of the darkest days from her early teen years. “When my condition was at its worst I would start each meal with a tomato. Later I’d use its red colour as a benchmark to know whether I’d successfully thrown up the entire meal,” she reveals. “You start to think up elaborate strategies that become the secrets of your trade. I would, for instance, drink up to six litres

of water a day to make the purging process easier and would also carry a teaspoon in my bag wherever I went, to avoid getting my hands dirty.” As she continues, she points out the bite marks on her hand, “from trying to purge,” she tells me. Though most of the marks are now gone and just a few scars remain, she says that back then, they were a lot deeper and more noticeable. Claudia was hooked, just like a drug addict searching for a release in that ultimate high. “From the moment I woke up to the second I went to sleep, it was all I thought about. The feeling I’d get after purging made me feel good. It became a necessity – something that I had to do,” she confesses. Whilst battling the disease Claudia never opened up to anyone about it. She would occasionally tell the people she trusted that she was unhappy with her body – but that was as far as it went. Her love of music is what eventually helped her through her sickness. “It was a very difficult time for me, and definitely one of the worst periods of my life. I was very depressed, but the music I listened to gave me hope and helped me relax. I really felt as though I could relate to songs by Enya and Savage Garden. Listening to music felt as though I had an imaginary friend by my side; someone who could relate to what I was

Claudia’s dark secret was brought to a crashing halt the moment a friend realised that she would shower after every meal, and questioned her. “Once my mum found out I was placed under high surveillance – it was as though I was this precious diamond. I was rarely left alone, even when I went to the bathroom, someone always stood outside the door,” she recalls. “It hit me most when my doctor told me that I would be institutionalised. I also became fearful of the damage that could be done to my vocal chords. And it was then that I knew I had a choice to make – be sick, or choose to live my life and make singing my priority. Because of this, I really do see music as my saviour,” she says. The recovery process was not an easy one, and Claudia recalls frequent relapses. But, as she points out, what it really came down
to was her eagerness to recover. “It is imperative that you admit to having a problem – I even had to repeat that to myself in the mirror,” she says. “But I knew it was a means to the end, and the start of something new.” Having been down such a difficult road, Claudia hopes to open a wellness centre for people who suffer from eating disorders in the future. “There are a lot of people who suffer from bulimia locally. It is horrible because it alienates you completely. Unlike anorexia, people often can’t tell what you’re going through, and you’re locked in a lonely world. “As a result I have decided to speak out in the hope of helping others to seek help; it’s not something you should be ashamed of. There are so many repercussions and, though it never completely goes away, I am certain that I never want to go back! Having overcome bulimia has made me a very strong person,” she concludes.

Diamonds in demand Rare, precious and enduring... three qualities that thoroughly sum up a diamond, the perfect connotation for everlasting love. Krista Micallef Trigona speaks to Alfred Fenech, Chairman of the Sterling Group of Companies about why diamonds continue to be in high demand.
The international economic climate has, over the last few years, had an adverse effect on many sectors, perhaps with the exception of diamonds. In fact, diamonds still top the wish list of many and their demand is on the rise. Mr Fenech explains that diamonds have proven to be a perfect recession-proof investment: “Diamonds of all sizes are an excellent investment. Over the past year, Sterling Diamonds has actually seen a distinct increase in demand for diamonds. It is worth noting that whereas other commodities or sectors in recent times – like certain shares, bonds or types of property – started to lose their value, with diamonds it’s a different story as their value has continued to rise.”

Are the Maltese after a particular type of diamond? Mr Fenech explains Sterling Diamonds cater for everyone – as long as it’s a good diamond: “It’s interesting to note that the demand is rising from different social strata. There are people who can invest a restricted amount of money on a diamond and there are others who can afford much more. We cater for everyone – from leading designer-branded diamond jewellery to tailor-made sized diamonds on demand.” A diamond’s cost is based on the characteristics known as the ‘4 Cs’. Cut, Colour, Clarity and Carat. The Cut dramatically affects the diamond’s fiery light. The proportions of the cut and the skill of the polisher determine whether its full beauty is released. Shape is a matter of taste, with the most popular being the round brilliant. Other shapes include the emerald, pear, marquise, princess, oval and heart. Colour – The closer a diamond is to colourless, the rarer and more valuable the stone. Diamonds with a strong pure colour are extremely rare and called fancies. Clarity – almost all diamonds contain small inclusions, many are so small they cannot be seen. These are nature’s fingerprints and make every diamond unique, however, the fewer there are, the rarer and more valuable the stone. Only a small percentage of diamonds are flawless.
There are three major grading systems for classifying diamonds: GIA, HRD and IGI. Carat – As with all precious stones, the weight of a diamond is expressed in carats. A carat is now fixed at 0.2 grams. One carat is divided into 100 points, so that a diamond of 25 points is described as a quarter of a carat or 0.25 carats. Finally the fifth ‘C’ is Certificate and Sterling Jewellers pride themselves in offering GIA, HRD & IGI certified diamonds. Mr Fenech explains how Sterling Jewellers are happy to offer their expert advice. “Many people come to us for advice because they are not willing to gamble or take chances. They know we will give them honest advice and that we always act in their interest.” The history of diamonds is equally fascinating: A diamond is formed in the earth’s interior and is shot to the surface by extraordinary volcanoes. A diamond is likely to be the oldest thing you will ever own, probably 3 billion years in age, two thirds the age of the earth. “So it is true, a diamond is something superb, the ‘king of gems’”, explains Mr Fenech. Without an ounce of doubt, a diamond is the stone that many women aspire to own; it is something outstanding, symbolising purity and strength, and is suitable for just about any occasion. A diamond is, after all, the ultimate symbol of everlasting love, epitomising a never-ending romantic commitment.

Still in the Running Model, judge, activist and father, as well as the man who made the name Nigel sexy… international photographer NIGEL BARKER chats to Style on Sunday about Tyra Banks, fatherhood and tattooed fans. Exclusive interview by Jo Caruana Nigel Barker is undeniably multi-talented, not to mention rather alluring. Discovered in his teens, he was thrust into the spotlight as a model while still at school. Bitten by the fashion bug, he threw himself into a career as a photographer before joining the judging panel on the second season of the now-cult series America’s Next Top Model. Fourteen seasons later and all that is history. Today he is as much a part of the show as its creator Tyra Banks, with loyal fans in more than 140 countries.
How did you get started in the fashion industry? While at school I was en-route to becoming a doctor, but fashion has always fascinated me, and I had a passion for design, dressmaking and photography on the side. By the time I was 17, one of my hat designs had been picked up by a huge company and was being sold in Sloane Square, London. At around the same time I entered The Clothes Show’s model search in 1989. I didn’t win, but placed fourth. Nevertheless I decided to try my hand at it and took a year out from my studies. The rest is history

“With viewers in more than 140 countries I am always impressed to discover the places I have fans – I once went to a remote island in the Philippines and found that a guy had tattooed my name to his arm!” – I got used to the financial freedom and the interesting people, and I loved the life. Although I never really thought that modelling was my destiny, I was intrigued by it. By 1994 though, things in the industry were changing. Gone were the ‘Glamazonia’ days of Naomi Campbell and Christy Turlington. Androgyny, grunge and small frames were in. I remember looking at my 6’4 self in the mirror and deciding to get out while I was ahead. So I did, and that’s when I started to take photography seriously. I moved to New York and have been based here ever since. I now live here with my wife Christi and our children in the West Village. Was your journey behind the panel of America’s Next Top Model a calculated move or a bit of a fluke? It was neither; it was simply the way things worked out. I watched Season One when it was a tiny show with an even tinier budget, but it was already a cult classic that everyone was talking about. I’d been involved in the industry for 12 years then, and I knew a few people on the show. One of them suggested that I photograph one of the model shoots, so I did. It turns out that they liked me and the things that I had to say because I was invited back, and am now the longest standing judge on the show, after Tyra. We’re about to start shooting my 15th season and it has been quite a journey. It was a risk; I’d worked hard to build my career up until that point and some people frowned on the fact that I was getting involved in a TV show. But I knew my face was going to be beamed in houses across the country every week during a prime-time slot so I figured it was worth it. Now we’re in 140 countries with 100 million viewers tuning in every week. I’ve never looked back. What is Tyra really like? Great! We’ve worked together for years; she’s very hands on and a lot of fun. She is the show’s creator, as well as its executive producer and host, so she wears a lot of hats. She’s very inspiring, both for us and the girls on the show. How much of what we see in the show is real and how much of it is played up for the cameras? It’s real. Reality shows in the US have strict guidelines to ensure things aren’t faked. The producers don’t tell us what’s happening so we have no idea what’s going on behind the scenes. I watch the show like everyone else and am often surprised by some of the girls’ behaviour. That’s reality though – if you’re a horrible person at home but a professional at work, then your clients won’t care.

We’re not telling people how to live, but how to work, and it has worked for the show too. How well do you get to know the girls and how difficult is it to eliminate them? It’s always difficult; I never take joy in eliminating anyone. Some of the girls struggle with being scrutinised in front of the cameras 24/7, while others are homesick and react in ways they probably wouldn’t anywhere else. We do have a bit of a parental role to play, and I can truly empathise with them as I got my modelling break very much in the same way they are. But at the same time we have a job to do. What’s the most important trait for a model to have? Personality. Good looks are a given but personality tips the balance when you have to pick one girl from 200. Krista White recently won the latest cycle to be shown in Europe – what do you think was her best asset? Her attitude. She is a real go-getter and her arc of improvement was quite impressive. We try to go beyond a pretty picture to find an ‘it girl’. She fits the bill.

Who’s your favourite model to work with? And your favourite designer? I can’t really say! I did do a recent shoot with Helen Mirren, Russell Brand and Jennifer Garner for a new film coming out next year though; it was a blast shooting them. Meanwhile I love designer Pamella Rolland. I’m deeply involved with her work on a creative level and the results are always incredible. Is the life of a fashion photographer as glamorous as one would imagine? Life’s only glamorous in the imagination! In reality it is my job. I’ve just completed the tour for my new book The Beauty Equation, and it was a non-stop series of 4am starts, interviews, signings, flights and late nights. It’s not particularly glamorous but it is fun to see the world. Normally life is more ‘average’ than that though. I get up at 6am to take my kids, Jack and Jasmine, to school before heading to the gym. Then I head to work like everyone else, be it to a photo shoot or a day at the office. I try to finish work by 5pm so that I can bathe my kids in the evening and put them to bed. Cristen and I usually head out after that, to some party or event, but we like to be in bed by 11pm! I always take stock of how lucky I am, but at the same time I do work extremely hard. Things don’t just happen, you have to see luck and grab it. You are also involved in charity projects, like your film Haiti
Hunger & Hope, as well as your work for animal awareness. What do projects like these mean to you and why do you do them? If there is one brilliant thing that my ‘celebrity status’ can give me, it is the chance to make a difference. I take pictures of issues, make documentaries and spotlight real problems. It has given me a whole new drive. It’s one thing getting up to take a picture of a girl in a gown, but it’s another helping to change the world. Plus, I want my children to be inspired by what I do. Jack and Jasmine are certainly more interested in the humanitarian projects I work on than fashion; they constantly question what animal we’re going to save next and ask about what’s happened in Haiti. It helps me to be a role model to them. How does it feel to know your fan base stretches as far as Malta? It is very nice! Even though I have never been there, I am very aware of Malta. With viewers in more than 140 countries I am always impressed to discover the places I have fans – I once went to a remote island in the Philippines and found that a guy had tattooed my name to his arm! I do hope to make it to Malta soon as I have lots of friends there. Maltese girl, Tiffany Pisani, recently won Britain’s Next Top Model – what do you think of her? She’s very beautiful. From what I know of the Maltese, they are kindhearted and very spirited, and that’s what you want in this industry. Tiffany seems to embody that, and I trust she will do well.

GET THE LOOK Step 1 Start with a great foundation, like the Body Shop’s Moisture Foundation, which offers light coverage while nourishing the skin at the same time.

Modern families are as diverse as ever, encompassing various cultures, beliefs and circumstances. But, as Jo Caruana discovers, love is all that really matters in the end – especially at Christmas.
WE ARE FAMILY Amber and Chris Knights have three young children – four-and-ahalf-year-old fraternal twins Asia and Maya, and Jacobi, one, who they adopted from Cambodia earlier this year. Amber: “I have always been interested in adoption. My family had talked about it when I was a child and, when I had difficulty getting pregnant, Chris and I discussed it quite early on. I had one round of hormone fertility treatment and got pregnant with the girls; the doctor said that I could have been expecting anything between one and six babies when I went for my first scan, and I think he was quite relieved to learn there were only two!
“Nevertheless my pregnancy was quite difficult, and I was bed-ridden for five months before giving birth. So, knowing that we wanted to have another child, we were keen to explore the idea of adoption.” Chris: “The adoption process isn’t an easy one and there’s a lot of red tape to get through. We attended a course with other would-be adoptive parents, and underwent financial and psychological tests as well as a home inspection. Once we got the stamp of approval it was up to us to find the country we wanted to adopt from; there was very little guidance on that front.

STYLE IN-DEPTH “As it turns out, Cambodia – Jacobi’s country of birth – is one of the most straightforward places to adopt from. Having said that, we had chosen Cambodia long before we knew that, as both Amber and I had travelled around south-east Asia and felt drawn to it.” Amber: “We finally went to Cambodia to get Jacobi a few months ago, when he was six-months-old. He was living in a very small orphanage with around 10 other children but, having heard horror stories, the conditions were better than I expected and very clean. “Since bringing Jacobi back to Malta we’ve had no negative feedback at all; on the contrary people have been so excited to meet him and very complimentary of our decision to adopt. I think things are certainly easier today than they were for

past generations.” Chris: “When we brought Jacobi home the girls reacted brilliantly. We’d been preparing them for a while and they were both excited about their new baby brother. Nevertheless it was wonderful to see how well they embraced him as part of the family. They have been absolutely fantastic.” Amber: “This will be Jacobi’s first Christmas and, of course, we’re looking forward to a big family affair. Chris’s parents will be here from the UK, and my parents will also be joining us for the first Christmas at our new house. For us it’s all about getting together as a family, and Jacobi will certainly make that picture all the more complete.”

Patricia Graham and Julia Partridge have been partners for three-anda-half years. They live in St Julian’s, together with Patricia’s teenage daughter Beatrice, as well as two foster babies. Patricia: “As far as I am concerned I was born gay, and came out when I was 16. But I was raised in a God-fearing, Scottish family and I was told I had to get married. As a result I went on to have six wonderful children, and thankfully their father is a lovely man. I am delighted that he is happily married today, which essentially means that we both got what we wanted. “When Julia and I moved to Malta three years ago I never really considered that we wouldn’t be accepted and, thankfully, we were. To our neighbours and friends we are just another couple and we’ve never met with discrimination or issues. My 16-year-old daughter, Beatrice, is also happy here and hasn’t had any problems because of her ‘gay mums’. “Both Julia and I love children, and I have fostered many over the years, so I wanted to do the same here. I went through the process with Appogg and successfully fostered seven children, including the two babies we have now. I was open about my sexual orientation with Appogg from the get-go, and they have never had a problem with it. However, when the Minister for Education, Employment and Family, Dolores Cristina, got wind of it I was told that the babies would be removed. We’re currently fighting against that and cannot understand what the problem is; equal opportunities should apply with us in the same way that it shouldn’t matter what race or religion a foster parent is.”
Julia: “Patricia and I don’t flaunt our relationship, but at the same time we don’t hide it. We used to hold hands in public – or rather we did before we had a double buggy! “We really are a normal family – except, perhaps, for the fact that I fly to the UK for four days a week for my job as a social worker. There are no stereotypical roles with us. For instance, while Patricia may seem more feminine than I am, she recently changed all the plumbing under the sink! We’re very equal in our relationship and just get on with it. “I haven’t got children of my own. Even though I went through fertility treatment in the past it didn’t work out, so it is wonderful that I have ended up with someone who has so many children and is always acquiring more! I love them to bits.” Patricia: “I have always been honest with my children, biological and otherwise, and they have always supported me. Now we’re looking forward to Christmas – which I am obsessed with! I will be baking, making gifts and covering the house in lights. We have a lot of fun together, and we can’t wait to spend this year with our two little babies too.” Beatrice, 16: “I don’t think there’s much of a difference between a gay family and any other type. This is all I’ve ever known and I’m completely fine with it. I’ve never been bullied; on the contrary people think it’s cool. I’m very upset about the fact that the babies could be taken away and have started a Facebook page in protest called Gay Fostering. It’s already been ‘liked’ by nearly 1,200 people and I hope that it could one day be used as a tool to defend our right to foster babies in our family.”

STYLE In-depth Taryn Butler moved to Malta with her two young children, Molly, 6, and Max, 4, a few months ago. As a widow and single mother, she shares her hopes for the family’s first Christmas on the Island. Taryn: “This is our first Christmas in Malta and we are all very much looking forward to it. I wanted us to have a fresh start and Malta offered everything I wanted to bring up my family: a safe environment, a love of family life, great people, great schools, great weather, busy towns, the sea and easy access to the rest of Europe and our family and friends. “My husband very sadly died after fighting cancer for over two years when Molly was two years old and Max was nine months. I, myself, had been diagnosed with cancer six weeks after my husband and I had first met. We were told that, because of the harshness of my chemotherapy, I would probably never be able to have kids. However, against all the medical odds, we had our two beautiful children. “My husband’s cancer diagnosis came before our daughter’s first birthday and he died before our son’s first birthday, but the love and joy we felt together for those years will never leave me or our

children; it is the rock that started the foundations of our family and it continues to bond us all together even though he is no longer here. “Christmas for us is a time to celebrate, have fun and play games. We will go to church and no doubt have a great time playing charades, snap and snakes and ladders in front of our log fire. My children love the Christmas lights and putting up the decorations. We have always done it together and this year we have lots of new places to make sparkle! “The challenges of being a single parent are there 365 days a year and not just at Christmas. They are the same challenges every parent has, but everything is dealt with by one person instead of two. Sometimes this has meant 20-hour days, but the love and energy I get from my children has always kept me going. When we all laugh together, or when I see them lost in a made-up game that takes their imagination to wonderful places, wrapping up presents and reading Christmas stories together, I feel so proud of the love that my husband and I shared and of the family we created against all odds. That reward is given to me every moment of every day.”

It’s not every day that you take tea with a Chancellor while overlooking Marsamxett Harbour and discussing antiques, but here we are. Reverend Canon Simon Godfrey took over the post of the Chancellor in Malta some 19 months ago, and has since created a wonderful home in the Chancellor’s Lodge, which lies adjacent to the Anglican Cathedral in Valletta.

STYLE HOME “Previously I was living and working in Northamptonshire, England,” explains Simon, who has been ordained for nearly 30 years, but prior served in the Royal Navy and later worked in marine insurance in London. “I was approached by the Anglican Bishop of Europe and asked whether I wished to be considered for the post here. Of course I did, and procedures eventually went through.” The Anglican community in Malta dates back to before the Islands formed part of the United Kingdom. Today there are some 6,000 British people living in Malta, of whom roughly 10 per cent are linked in some way to life in the Anglican Church, whether in Valletta or the Church of the Holy Trinity in Sliema.
After the last Chancellor left, it was decided that the Chancellor’s residence needed to be completely renovated. Fortunately, Simon was already being considered for the post at that time, and was able to participate in its overall effect. “This house was built in the 1920s alongside the Cathedral,” continues Simon, who has a great love of history and antiques. “The Cathedral was built on the German Knights’ auberge, and the site was acquired by the British Government through the good offices of Queen Adelaide. At the time the buildings were in a very bad state of repair and had to be pulled down so that the ground could be prepared for construction. The Cathedral took just four years

It is also an authentic copy of the frame, and the original ensemble can today be seen in the Pitti Palace in Florence. “This is a Grand Tour piece, which essentially refers to a time when 18th-century gentlemen would tour Italy’s major cities, as well as other European areas, learning about classical architecture and collecting copies of art and sculpture for their homes back in England. What I have tried to do here is largely the same, in that today – in the 21st-century – I have bought copies of the items I like in the classical European tradition.”

Simon brought this altar with him from the UK. He says, “this Gothic reredos (the piece behind the altar), is actually the most interesting thing about the whole item and is very typical of a 19th-century private chapel that would have existed in a small country house. I bought it from an antiques dealer in Northamptonshire and it originally came from a chapel in Rugby, Warwickshire. But while I do have a reasonable collection of ecclesiastical antiques, including chalices and vestments, I tend to prefer domestic items.”

to build, while it took them 80 years to get round to constructing the house!” Part of the basement level of the house would actually have formed part of the Auberge d’Allemange, and some original features – including the ribbed ceilings – still remain. “I am certainly enjoying living here. The house has such a wonderful outlook over to Manoel Island and it is very bright. I am particularly pleased to have a large home as it allows me to host events. We have had some lovely occasions here, and anyone can rent out the house and
terrace, which in turn generates funds for the upkeep of the chaplaincy.” The first floor, with its spacious reception rooms, large dining room and library, is where Simon works and entertains, while the basement floor houses the more intimate quarters, including the bedrooms, bathrooms and chapel. Throughout the house, Simon’s love of antiques is evident, and he brought much of his collection with him from the UK. “I’ve had a penchant for antiques since my childhood. My father would encourage me to buy items at auction when I was in my teens and we

STYLE LIVING would restore them together in his workshop. “Before moving here I lived in a presbytery in England, so I have collected items based on what worked there, as well as in the home I share with my cousin in the Burgundy region of France. When choosing something I tend not to be drawn to its monetary value but to its domestic use, visual effect and its intrinsic value. “I have, in particular, always collected mahogany furniture – it was just the English thing to do! In my last home I stuck to dark, regency colours as they suited best. Here though, I have tried to utilise hues that work well with the Mediterranean Sea and the blue skies; thankfully light walls definitely suit as the background for portraits, clocks, porcelain and furniture.” Today, while not a serious collector, Simon still enjoys sourcing

antique items. “I’ve never used eBay, but I do try to make it to a sale whenever there is one on. I have bought a few pieces locally, including a large sofa that was previously housed in Mdina. I love knowing the history of my pieces and where they come from, so I try to look into their stories whenever possible. “There is no doubting the fact that we live in a very visual world, but so many people’s vision is today located at the end of a lens or on a computer screen. I don’t really take to either of those forms, and prefer to see something I can feel and appreciate in its three-dimensional aspect. I certainly believe collecting to be an extension of my love for Creation, in the same way that God became man and yet is a threedimensional being Himself, in the person of Jesus Christ.”
Simon has quite a collection of Chinese porcelain, including some items from the K’ang Xi era, which is dated between 1661 and 1722. “This blue bowl is one of my favourite pieces. It’s from the Late Ming Dynasty and has a decollated edge. It’s a pretty example of a piece from this era, and has good markings on the back.”

A Very Customised Christmas
From tea-towels transformed into cushion covers to beautifully customised Christmas stockings, Style on Sunday meets the family who’ve made ‘home-made’ chic the heart of their home.
Children can provide the inspiration for all sorts of things, and in Karly Cole’s case her three young daughters have been the catalysts that inspired her blossoming creativity. Christmas in their household is all of a flutter. As with most homes, advent calendars line the walls and eager stockings have been perched in full view of Santa’s entrance point. Only these advent calendars and stockings are a little different – they’ve been hand-made and customised to match the

STYLE LIVING children’s likes and personalities. So much so, that today their Dingli home is bursting with all sorts of items that Karly has lovingly crafted for them based on their myriad requests. “When I was growing up I always loved unusual things,” explains Karly, who is British-born but came to Malta for her sixth form years and now lives here with her partner Daniel. “I have always been quite creative. I’d had some wonderful art teachers over the years and each really encouraged me to branch out and try new things. I don’t think I’ve ever looked back from that.” Karly put her portfolio together and started a course at Central St Martin’s within The London Institute, where top designers including Alexander McQueen and Stella McCartney have also been students. “When the kids came along I decided to shelve my ideas of designing professionally for a while, and instead turned my attention to designing things for them. “When I was first pregnant with Mia Bella, now 6, I started to make things for her as I hadn’t found many items I liked in the shops. I didn’t know I was having a girl so I kept things quite unisex – I chose a rainbow and garden theme, and then made it all more girly once she arrived.”
Karly enjoyed putting her stamp on absolutely everything for her daughter, including cushions, lampshades and a chair, which she reupholstered. She bought a chest of drawers from a junk shop and had a great time painting and varnishing it. She’d also been given a sewing machine for her birthday, and was keen to work out how to use it. “I’m completely self-taught. Mia Bella’s birth was quite late, so I got bored towards the end of my pregnancy. It gave me the chance to get creative with all kinds of things, especially cushions. I made them for my mum and friends, and it spiralled from there. By the time I gave birth I was 16 days overdue and I must have made over 40 cushions!” Today Karly also makes all sorts of things for her other daughters, Theadora, 3, and Bibiana, 2, as well as bespoke items to order for friends. “I’m so lucky to have three girls, and they’re all shopaholics like me!” she smiles. “We have so much fun discussing the things we’re going to make. Often they’ll go through my wardrobe and find something they like, and ask me to transform it into an outfit for them – so I do. Living in Dingli it’s hard for us to just pop into town whenever we fancy it, so we find new ways to go about it. It shows originality

and I’m keen for them to never be slaves to fashion labels.” And Christmas has also provided plenty of inspiration for the family to get creative. “We all love Christmas and try to make as many things as possible. For instance, we make gift bags with each others’ names on and hide little treats in them for one another. “I’ve also made each of the girls a very special advent calendar. Each has a theme – Mia Bella’s is covered in rich rainbow colours and Theadora’s is made from vintage and Cath Kidson fabrics. Bibi’s consists of lots of little boots and hats hung onto a long string with pieces hanging down. “I’ve read a lot about the way that colours stimulate children and I certainly find that to be true with my own girls. I also encourage them to make their own decorations for our tree, so they collect things through the year – such as twigs and bits of fabric – and then we sit down to put them together.”
Karly has garnered quite a reputation for creating truly unique pieces, and is often called on to make one-off pieces for her friends and their children (for info contact craftykiddies@gmail.com). She is even going to be giving art and craft classes to adults and children in the coming months. “Whether it’s advent calendars, Christmas stockings or clothing, I think people like to have personalised items in their collection,” she says. “I take inspiration from the things that they enjoy and create something they are bound to love because it is all about them. A lot of people do see the point of investing in something that is that little bit out of the ordinary. “That’s part of the idea with my girls too. I want them to look up to me as more than a mum, and to see someone creative and individual who does stuff outside of the daily ‘mummy’ routine. I love that they give me the inspiration to create, and I hope that one day it will give them the inspiration they need to achieve their dreams too.”

Chicken Galantine stuffed with Fruity Veal Farce Serves 2

Ingredients: 2 deboned chicken legs; 150g veal mince; 30g dried apricots, chopped ; 20g raisins, soaked in white alcohol for 60 minutes; 1 egg; 30ml fresh cream; 1 tsp Dijon mustard; mixed herbs/spices, cleaned and chopped thyme, crushed coriander seeds and cumin; 6 slices of parma ham; Seasoning Preparation: Place the veal mince, dried apricots, raisins, egg, fresh cream, mustard and mixed spices (retaining some spices for the chicken) in a bowl and mix all together. Spread a large piece of cling film, and place the flattened chicken legs on to it. Place the parma ham in the centre of the cling film, and overlap the pieces onto each other, moving along 1cm each time. Place the chicken onto the parma ham and season with the spices. Place the fruit and veal mixture on the lower part of the chicken and roll into a cylindrical shape. Boil for 15-20 minutes. Panzerotto Ingredients: 2 sheets (10cm X 10cm X 3mm thick) of shortcrust pastry; 20g fresh mozzarella; 3 cherry tomatoes, sliced; seasoning Preparation: Dust the surface area with flour before laying out the pastry sheets. Place the mozzarella and cherry tomatoes into the centre of each sheet and season to taste. Brush the edges of the pastry with water to make them stick and close the edges. Cut into a semi-circular shape and fry until golden. Garnish: Cut vegetables of your choice into fancy shapes; blanch for 2 minutes in boiling water, then gently cook them with butter and seasoning.

STYLE CUISINE Chicken and Chorizo Croquette Serves 2 Ingredients: 150g chicken mince; 80g chorizo sausage, chopped; 20g brie cheese; 2 eggs (1 beaten); 30g flour; 60 fresh breadcrumbs; seasoning Preparation: Put the chicken mince into a mixing bowl and season to taste. Add the egg and mix well. Take a handful of the mixture into your hand and flatten it. Place some brie and chorizo sausage into the middle and roll the whole thing into a cylindrical shape making sure it is well sealed. Place in the freezer for 45 minutes, before passing each cylinder through some flour, a beaten egg and the breadcrumbs; repeat the egg and breadcrumb stages three times. Deep fry and serve immediately. Potato layers Ingredients: 300g sliced potatoes; 50ml fresh cream; 50g grated pecorino cheese; 50g grated cheddar cheese; 10g butter; seasoning Preparation: Place the sliced potatoes into a mixing bowl with the rest of the ingredients (excluding the butter) and season to taste. Mix well. Layer the potato mixture into a wellgreased pan; top with butter and seal with aluminum foil. Bake at 160째C for around 60 minutes, then uncover and cook for a further 10 minutes at 180째C, leave to set and cut with round cutter. Garnish: Trim the asparagus spears; blanch for 2 minutes in boiling water, then gently cook with butter and seasoning.

Redcurrant and Vanilla Parfait Ingredients: 60g redcurrant puree; 20g sugar; 2 gelatine leaves; 25g fresh cream; 50g egg whites Preparation: Soak the gelatine in cold water and dissolve in the warm puree. Whisk the egg whites with the sugar and fold in the puree whilst cold. Finally, add the semi-whipped cream. Place into a mould and deep freeze. Set into different shapes and garnish.

Orange Cheese with Cinnamon tart Orange Cheesecake Mix Ingredients: 500g soft cheese; 100g sugar; 4 eggs; 250ml cream; 75g flour; 50g candied orange peel Preparation: Cream the cheese together with the sugar. Beat the eggs in gradually. Add the cream, flour and, lastly, the candied orange peel. Pour into your desired mould and bake at 150째C. Cinnamon sponge Ingredients: 2 eggs; 80g icing sugar; 80 ground almonds; 20g flour; 15g butter; the whites of one egg; 20g sugar; cinnamon to taste Preparation: Lightly whisk the eggs, icing sugar and ground almonds. Whisk the egg whites and sugar to make a meringue and delicately fold in the almond mixture. Finally, add the melted butter, flour and cinnamon. Pour onto a baking tray and bake at 180째C. Cut into a round shape with a cutter and place the baked cheesecake onto the sponge. Garnish.
