“At Christmas, all roads lead home.” – Writer Marjorie Holmes The quote above conjures up lovely images in my mind – a representation of the relief that the festive season can bring. After all, this time of year feels like a culmination of sorts; as though we’ve been working towards it for 12 long months, and we’re all desperate for a rest. But there’s something of a long, hard slog to get through first – present buying, tree decorating, turkey cooking and party planning. Those are just some of the things that we all get up to in the run up to ‘the most wonderful time of year’ and we have two choices: dig our heels in and panic as Jingle Bells chimes in the background, or embrace the mulled wine, reindeer sweaters and glitter, and just go with the festive flow. This year, probably for the first time, I’m opting for Option B and supressing my inner Grinch. The tree is up, the cards are written and there’s a sprightly spring in my step that I could swear wasn’t there in November. Of course I’ve taken inspiration from many of the fantastic features found within these very pages. For instance, turn to page 87 for a brilliant selection of ideas on how to bring Christmas into your home in a flash, or check out our article with three top international celebrity chefs for their take
on the festive season (pg 97). Additionally, stunning soprano Gillian Zammit shares her own Christmas plans (pg 13), while our Mother and Child feature celebrates the special joy that babies bring to festivities. Plus I’m looking to 2012 with anticipation, wondering what the next year will bring. For that reason, we wanted to start things off on a great note with advice from some local experts. With guidance on health, fitness, psychology, confidence and more, they offer very real tips on how to make the coming 12 months your best yet (pg 67). So turn the pages (as well as a new leaf ), sit back and enjoy – while the festive spirit of Style washes over you. Renowned soprano Gillian Zammit has travelled for her art and is an advocate for classical music in Malta. Here, she chats openly to Style on Sunday about her innate passion for song, travelling, teaching and her new CD to be released in the coming days. Soft-spoken, focused and effortlessly stunning, soprano Gillian Zammit epitomises the glamour of a modern classical music artist. Proud of her successes, but equally eager to never stop learning, she is determined to carry on on her musical journey – one that will go a long way towards encouraging future generations to develop a love for this very special genre. Here, in her own words, she tells her story.

My first real brush with music came when I was five and I began taking piano lessons. My earliest memory is actually of watching my sister play, and I can still remember the incredible sensation that music gave me. When I started learning it myself, it felt so natural. The piano was my instrument for a long while, until I joined the St Patrick’s choir in my early teens. Previously I had felt myself moving towards a career as a pianist; I even planned to audition for the Royal College in London and to continue my studies there. But it was during one rehearsal that the choir master suggested I should take singing more seriously, and I quite liked the idea; I remember thinking it would be a nice, ‘easy’ second instrument! But as soon as I began training, under Antoinette Miggiani, I found it to be an incredible mode of selfexpression and was hooked. Things moved quickly from there. I

began training with Paul Asciak (tenor, and Joseph Calleja’s vocal coach and mentor) and later moved to Italy to study with Carlo Bergonzi, one of the greatest tenors the world has ever seen. I was 19 when I moved there and I loved it. I may have been out of my comfort zone a little – especially because everything was obviously in Italian – but it was such a wonderful experience and I learnt so much. Now I consider myself to be a musician whose instrument is the voice. The joy of making music is what inspires me; often I actually prefer the rehearsal process to the performances because getting together to create with other musicians feels incredible. I know I will never be done and am constantly learning new things – whether through my colleagues or students. I love the fact that my work is a constant journey in progress. And while I have, on occasion, tried
different styles, classical music has always been my first love. Plus it is where my voice feels most comfortable; I guess I’m lucky to love the style that suits me best. Many highlights stand out in my mind, including playing the role of Gilda in Verdi’s opera Rigoletto at the Manoel Theatre. It was the combination of the fantastic cast, lovely role and the fact that the music worked well with my range. Another special moment was obviously singing with Joseph Calleja at his Luxol concert a couple of years ago; it was a magical moment. Internationally I’ve been lucky to get a lot of recital work and it has been wonderful to travel to many different places to perform. While I love operas, I find that I enjoy recitals most as I can pick and choose the pieces that mean the most to me. Next year I’ve already planned a trip to the US, where I’ll be performing various recitals for a couple of weeks.

I have found a classical style that works well for me and makes me feel comfortable.
Gillian’s Style Notebook Armani would have to be my favourite designer because I feel very drawn to his inherently classical style. I like to stick to shapes that I feel comfortable in so he’s perfect. I would like to wear far more of him than I actually do. Although I’m not a big shopper there are certain streets that I love more than others. The King’s Road, in London, is a particular favourite as there are some truly stunning stores with a great range of items. There are plenty of places I would love to perform, but Covent Garden is right up there. It would be a dream come true because it is one of the top five theatres in the world and, as my mother is British, I feel very at home in London. I head there as often as possible, especially to catch up on the latest theatrical productions. Mauritius, where James and I went on our honeymoon seven years ago, was easily the most incredible place I have ever visited. As sea lovers it was heaven for us, as we spent plenty of time snorkelling and sailing. My biggest indulgence would have to be time to myself; just a few hours to sit at home and read a brilliant book. It’s sheer bliss! Christmas is all about family time – I’ve never missed a family Christmas so far and can’t imagine myself doing so. James and I did host lunch at our house one year and, while it was alright, I did find it a bit of a stress! This year I am very grateful to have been invited over to my mother-in-law’s.

Singing to a foreign audience is always nice because there aren’t really any expectations and it is somehow more liberating, whereas local audiences know your work and know what to expect. Nevertheless, I simply love performing here and classical music certainly has a following, especially among niche audiences. They are especially fond of Italian classics, and while I would like to present more contemporary works, I
know how much they relish the chance to listen to pieces they know well. As a result, I am very focused on igniting a passion for classical music in the younger generation; it’s why I enjoy teaching so much. So many people simply assume that children won’t enjoy opera, but I am always thrilled by how much they do. I have been working on children’s operas for several years now, usually within my role as the musical
director of Drama Troupe, and I’m so inspired by how open our students are to new things. If it’s good, they’ll get into it regardless of the style. I really hope that they continue to foster that interest in the genre, as they are the audiences of the future and we need them desperately. Many of my students have gone on to take music seriously and it feels great to watch them do well, especially when their talents take them overseas.

There are so many wonderful opportunities nowadays; when I was a teenager the choice was ‘ballet or piano’ so we’ve certainly come a long way in a decade or two. Although I think it should still be just about the music, now audiences want to watch someone who looks the part as well as one who can sing it well. Thus it is much harder, especially as there is so much talent, all after the same job. As my own next project I am releasing a CD of love songs by Italian/British composer and music teacher Paolo Tosti. I feel very drawn to his work and always include a couple of his numbers in my recitals, especially as I think he’s become very underappreciated. It was wonderful putting the CD together. My pianist and very close friend, Lucia Micallef and I travelled to the UK in July to record it at the Menuhin Hall in Surrey, and it will be released in a few days. I’ve recorded before, as part of Maestro Joe Vella’s baroque music group, but this is my first solo venture and
it’s certainly been an experience, a real labour of love, and one I hope to repeat in the future. The project actually got going on the suggestion of my husband, James, who is a Tosti fan too. I suppose that, aside from my music, I’d have to cite James as my main passion! We love travelling, especially on our sailing boat, and recently enjoyed an incredible holiday in the Aoelian Islands just off Sicily. Each of the seven islands there is completely unique, offering everything from unspoilt landscapes to unabashed luxury. I can actually imagine retiring there – it’s the perfect place to escape to! Meanwhile, as such, image isn’t high on my list of priorities, although I do like to take care of myself. I have found a classical style that works well for me and makes me feel comfortable. I did try something a little different once and had my hair coiffured into an up do. I liked it to begin with, but, by the time I’d got home, I was feeling so

awkward that I pulled it all down, ending up with a massive bouffant. I learnt my lesson there and then that I am much better off sticking to the looks that I know work for me; as you can see I’m not much of a risk taker! Having said that, life in the music industry doesn’t lend itself too well to someone who likes routine, and I have had to become very laid back about the ups and downs of it. There are really busy periods, followed by weeks when nothing much happens at all. I’m now more selective about the work I take on and don’t plan too much but prefer to wait and see what happens. On the contrary, though, right now I’m looking forward to a few weeks of planned… relaxation! Christmas is very much a family time, and I relish every moment of it. Then, James and I will be flying to Rome for a few days, soaking up the atmosphere and enjoying the wonderful food. After a busy few months it really will be a fantastic end to 2011, and start to 2012.

How does style evolve once you become a mum, and is it possible to be chic, sophisticated and fashionable post-pregnancy? Here, these four gorgeous mums (and one mum-to-be!) prove to Jo Caruana that yes, they certainly can be. Katie Holmes. Victoria Beckham. Angelina Jolie. All names that spring to mind when the phrase ‘yummy mummy’ pops up in conversation. Yes, the age of the stylish mum is certainly upon us, with the pressure on to squeeze back into that pre-baby pair of jeans just weeks after you’ve ‘popped’. It sounds like quite the challenge. But, as these mums (and mum-to-be) all prove, looking great while managing a happy family CAN be done. Each is the epitome of stylish parenting, and they share their stories here.
Sarah Woods, and her husband Cassidy, welcomed baby Elijah five weeks ago. Before the birth, the couple had been living in Dubai for a number of years, but chose to return here to raise their family. I always knew I wanted children, but I was more focused on my career for much of my twenties. I think it was in our second year of marriage that we really started thinking about starting a family. Cass and I met in Malta and moved to Dubai together, later marrying in 2009; we always knew we wanted to raise a family in Malta. We went travelling in South America before coming back to the island, and I found out I was pregnant as soon as we got back. It was a
fantastic surprise and perfect timing. Being pregnant was wonderful and I absolutely loved it! I was lucky not to have any of the nasty symptoms you hear about – only the good ones. I was always happy and calm, and grateful to have Cass on hand. I didn’t even get any weird cravings – just a regular desire for peas and Nutella. I also had a pretty easy birth, which lasted three-and-a-half hours in total. It felt so magical to hold Elijah in my arms, but the memory of the pain didn’t slip away immediately as some people said it would; I’d say it lasted a good week! I have always enjoyed style and dressing up, and

tried to retain that side of me throughout my pregnancy. I loved having a bump and dressed it up proudly. As I didn’t show much until my third trimester, I was keen to flaunt it while I could! Now I’m looking forward to the glamour of Christmas as we never really decorated much when we were in Dubai. Cass and I are very excited to do up our home and to really enjoy the season as a family. It’s so nice to be back and have both sides of the family here, sharing this wonderful time together. Mummy moment: It feels amazing to have someone who is your own to look after and care for. There’s nothing better than watching Elijah stop crying as I hold him in my arms. It feels like we’re a proper family now and the experience has brought us closer together. Well-known dancer and the artistic director of the Dance Project Kristina Bianco is married to Matthew. Kristina’s second daughter, Sienna, was born three months ago. The work that I do means that scheduling in giving birth wasn’t easy! I was rehearsing until two days before and back to it as quickly

as possible – within just three weeks. The fact that I had a caesarean section, for health reasons, made it even harder. Sienna is a very good baby and is already sleeping through the night, which is bliss! As I’m back to working quite long hours, that makes things so much easier. I always knew I wanted to be a mum and three would be the ideal number; I would really love to go for another if it’s possible. When Matt and I got married I wasn’t sure if I would be able to conceive, so when I did it was a complete blessing. I was so much younger when I had my first daughter, Naomi, now 10, so it all felt quite surreal. Until I actually held her in my arms it didn’t click quite how incredible it would feel and it changed my life completely – for the better. It made me work so much harder. She loves being a big sister. It’s fantastic to watch her develop into the role and she seems to relish having that special duty. All that said, I didn’t enjoy being pregnant! The first trimester was impossible, and never mind morning sickness, I had morning, noon and night sickness! I lived on crackers and lemonade for weeks. But it didn’t slow me down too much, thankfully, we still went on a pre-planned family skiing holiday,
and I took one dance group to Croatia, as well as my pupils to Italy. I danced and taught throughout, but kept movement to a minimum. Now Sienna’s already been to the studio and I’m sure she’ll be bobbing along to the music before she’s even old enough to walk! It’s lovely to be able to treat her like a real girly-girl, and her outfits are so cute. She’s already got more pairs of shoes than Matt – all presents from my students. They’re adorable. As for me, I am definitely less adventurous fashion-wise than I used to be but my style is still very ‘me’. I spend the week in dance gear and trainers, though, so I relish the chance to dress up and feel feminine whenever I can. Now we are really looking forward to a family Christmas altogether, and will be buying Sienna her own stocking to hang up. Family is so important to me, and I’m so grateful for their input – especially Matt’s as he is an incredible, hands-on dad. Most incredible moment: Matt and I opted to have a 4D scan, which was unbelievable. You get to see all the baby’s features beautifully defined, and it was a pretty magical feeling. World’s most stylish mum: Gwen Stefani – she’s the perfect mix of elegant and edgy.

Wedding planner Sarah Young and her husband Mark celebrated the birth of their second child, Ann, this year. I have always wanted to be a mum and having a family was my dream. As a child I was always playing with Barbie and Ken, as well as their nice, big, happy family! I was thrilled when it was time for that to happen for me. My husband Mark and I have been married for three years but have known each other for 10. We have a great relationship and I love him to pieces; it still feels as though we’re in the ‘honeymoon’ stage, and not 10 years down the line! We found out I was pregnant with Ann in January and were overjoyed, as we wanted a brother or sister for Jerome, our son, who will be four in March. We got the news just days before leaving for a holiday to the Maldives, which gave us plenty of time to relax and process the news.
Both of my pregnancies were great and I loved them. I did have a couple of cravings – strawberries and oranges with Jerome, and Pizza Hut and Garibaldi biscuits with Ann! Oddly, I was huge with Jerome but much more contained with Ann, proving that each pregnancy is different for its own reasons. Balancing business with pregnancy is easy, as you’re secure in the knowledge that your baby is safe and with you at all times. Balancing motherhood with work is a little harder, but I manage. I was even emailing clients while in labour; thankfully technology makes it possible to multi-task. Now I have a set routine; I work until 2pm and reserve the afternoons for my children, later catching up on emails once they’re tucked up in bed. Style has always been important to me. Before I was a mum I never thought twice about treating myself to a designer purchase, whereas now I tend to spend more money on the kids.
I was actually pregnant right through the wedding season so staying on trend wasn’t easy – the solution was to buy a couple of stylish black dresses that grew with me, paired with my favourite pair of heels. It all worked out quite nicely, and now I’m pleased to be back to my pre-bump wardrobe! Biggest post-motherhood change: I absolutely loved shopping for me before the kids were born; I was a complete shopaholic. Now it’s all about them! World’s most stylish mum: Angelina Jolie, of course.

Keith and I got married at a young age and, whilst I knew I always wanted to have children at some stage, I wanted to enjoy married life, travel and

progress in my career before starting a family. I think that family planning has become harder for young women as you never know when the time is right. . Now I’m fortunate to have a year’s maternity leave over here, which means I can really enjoy Faye to the fullest. Overall, I believe that I had a relatively easy pregnancy, with some nausea at the beginning. It was a strange but wonderful sensation to feel my body changing over the months, and a pretty surreal feeling to know a child is growing inside you.Now life has changed dramatically as I was accustomed to the freedom and spontaneity of living in a big city and travelling frequently but now everything revolves around Faye as she is still so little. In the beginning it is challenging to go from feeding to changing and back again soon afterwards, but now she is starting to react more and just a little smile makes it all so rewarding. I was convinced Faye was a boy until we found out for sure at my 20-week scan. I was so shocked to have got it wrong, but loved the idea I was having a girl. Now I love dressing her up, taking her out to meet friends and inevitably taking her shopping in London – her wardrobe is already bigger than mine! As for myself, I’m almost back to my prepregnancy wardrobe, although I did find some great maternity wear over here, which meant I didn’t lose my sense of fashion. As I was working right up until the last few weeks of my pregnancy, I needed to be smart, which was doable. I think it is so important for a woman to make an effort once she’s had a baby; even though it isn’t always easy, looking good boosts your confidence. As for Christmas, we will be spending it in Malta with family and friends especially since both my sister and sister-in-law have new-born daughters too. There will certainly be a few toys under the tree this festive season! The Auction AND STERLING EVENT Under the distinguished patronage of H.E. Dr George Abela, President of Malta, a special auction was held in aid of the Malta Community Chest Fund on 18 November. Two of Sterling’s major suppliers, Bulgari and Lladro, each donated a beautiful piece for charity. Additionally, Sterling donated a flawless diamond, while artist Jeni Caruana contributed a painting. The auction was run by professional auctioneer Joe Sammut. “We believe in giving something back to society,” says Sterling Diamonds director Romina Grech Fenech. “We have run an annual event in aid of the MCCF for the past four years, and are thrilled to know that, through our endeavour, we can help a great number of people. “This year we raised over €10,000. It was a huge success and the atmosphere was brilliant.”

The Wine Event On 19 November, Sterling brought together a vibrant crowd to enjoy some of the finer things in life – scrumptious fusion foods, excellent wines and champagne from Alsace, St Emilion, Sicily and more – as well as a gorgeous 40-year-old Taylor’s port, and, of course, the new Sterling collections. “This was a fantastic occasion where wine lovers from Malta gathered to enjoy some great wine surrounded by beautiful jewellery and to contribute to the benefit of society,” says wine connoisseur Michael Tabone, who joined forces with Sterling in the organisation of this event.
November also saw the introduction of a new brand by famous designer Marc Jacobs. The Marc by Marc Jacobs watch collection is now available from e-Jewels and Sterling shops.

Extension of Sterling Diamonds, The Point November also saw the introduction of the extension of the Sterling store at The Point with a Sterling Diamonds corner. “Many clients have commented that it is harder to get to Valletta at the moment,” explains Romina Grech Fenech. “So, we decided to facilitate them as best we could by further improving our Point store. We have now added a Bulgari corner here too. It provides the perfect space to browse, enjoy and shop for Christmas.” We are also giving free parking to our customers during the Christmas period.

Venezuelan model CARMIN MARTINEZ moved to Malta a couple of years ago and now lives here with her partner, Keith Marshall. She chats to Style on Sunday about her exciting life on the international catwalks, but explains why having a great home life will always come first.

There’s something a little daunting about meeting an international model who’s walked the catwalks of some of the most well-known fashion events in the world… The perfect hair. The sparkling smile. The long legs. As a result I’m not too sure what to expect when I pull up at the home of Carmin Martinez and Keith Marshall. Turns out I needn’t have worried, as Carmin throws open the door and welcomes me in with a charming grin. She exudes the confidence you’d expect, but she’s clearly got both feet on the ground – and she makes a great pot of tea. “I first got involved in the world of modelling when I was still in high school,” smiles Carmin, who has done work for top international designers including Alexander Castro, Mayela Camacho, Luis Bracal and Sugar Ferrini, at events including Venzuela Fashion Week and the iconic Arhavi Festival in Istanbul. “Back then I was sent to Asia, where Western-looking models were all the rage. I was still in my teens, and would attend school during the year and then head over to China during the holidays. “It was a very exciting lifestyle for a young girl. China Fashion Week, for instance, was incredible, and I went on to walk the catwalk there a number of times in the years that followed, including on three trips in 2010. There fashion takes a very spectacular approach and no expense is spared, whether it is incredible light shows or huge stages. You’re treated like a celebrity, with cameras flashing in your face every five seconds. It’s a bit like living in a movie, though it’s hardly a realistic representation of life there.
“You have to work very hard, whether you’re getting up at the crack of dawn to ensure you look tip-top for a casting, or travelling cross-country to get to a job.” Nevertheless, it is all done very artistically and I loved being part of it.” Of course there were challenges, she explains. “The culture is awe-inspiring, but very different and I quickly realised how many things I had taken for granted back home,” she says. “When I first went, the local modelling culture was just taking off; now the industry has boomed. I was given access to five-star China – eating at the best restaurants and staying in the most beautiful places. As wonderful as this was, I don’t think it was a correct representation of the country. I’d like to go back and experience it without that fake shine.” Aside from modelling on various international stages, Carmin has also represented both Spain and Venezuela at global competitions. “Winning the title of Miss European Union was a big moment for me,” she continues. “The cash prize meant that I could afford to leave Venezuela and support my education in the United States; so I made the move to California to study at UCLA. My brother, Gustavo, was living and working in Beverley Hills at the time. We had a great time there, and I learnt so much.” Carmin later moved to Europe and settled in Barcelona for a while, during which time she modelled constantly. “I

My favourite shopping city is Barcelona. I know it so well, so I head to my usual haunts to find good designer names at great bargain prices. I spend most of my time at La Roca Village or on Paseo de Grazia, the city’s main designer street.

I absolutely love Cavalli, and would easily pick him to be my favourite designer. He blends personality with style in a way that seems to work for me. My wardrobe is full of his designs.

I love travelling to exotic places as I like being somewhere completely different. That said, a little closer to home, I can never resist Istanbul. The city is absolutely buzzing, with great food, incredible nightlife and a budding modelling industry. I really enjoy working there, as well as just being there on holiday.

A restaurant that really stands out in my mind is The Tribu in Nairobi. It is situated within a charming boutique hotel and its whole aura is incredible. The owner is an antiques collector, so every nook and cranny is bursting with character. I even remember the dish I devoured – lobster ravioli, they were incredible!

The accessory I believe completes an outfit would have to be high heels. I simply cannot live without them. When I moved over from Barcelona I had a 90kg box of shoes to bring with me!

I am really passionate about animals and nature. I recently started growing a banana tree in our living room – which is doing really well! I also brought my dog, Lola, a soft-coated wheaten terrier (and the only one of her kind in Malta), with me from Barcelona, and adopted a cat, Lili, from one of the sanctuaries when I arrived. They keep each other company; it’s pretty cute!

“We ended up meeting by chance in Ethiopia, when I was building a school in Bulbula and Carmin was working there on an international campaign. I guess that was that!” – Keith Marshall
was signed to Elite,” she says, “one of the world’s largest agencies. I was constantly on assignment, whether for editorial work, runway or catalogues. I also competed in the Top Model of the World competition and made it to the top ten; it was a pretty exciting moment. “But while most people think that the life of a model is easy and relentlessly glam; it’s not! You have to work very hard, whether you’re getting up at the crack of dawn to ensure you look tip-top for a casting, or travelling cross-country to get to a gig. In China it’s easier, as you are taken from job to job, whereas in Europe you’re often left to your own devices.” Nonetheless, Carmin has always chosen to stay in the industry, largely because she enjoys it. “Getting famous has never been my goal; on the contrary I prefer to keep quite a low profile and to have a more stable

Meeting a Model: Keith on Carmin Keith Marshall is well known in Malta, both for his business endeavours and his regular charity work. But how did he and Carmin end up together? “We met eight years ago,” Keith smiles, perched on the sofa next to Carmin’s dog, who has evidently won him over. “Carmin was here to compete in a beauty pageant that I’d been asked to judge. I thought she was stunning from the moment I saw her, and she was the only girl I gave a ‘perfect 10’ score to in every round. “I spotted her at the after-party and was trying to work out how to make contact when she suddenly spilled a drink on me accidentally! She was mortified – especially as it was silk cashmere – and kept apologising in broken English. It was like something out of a romantic comedy, but it meant I got her number! “We exchanged numbers and stayed
in touch. Then, in 2007, we ended up meeting by chance in Ethiopia, when I was building a school in Bulbula and Carmin was working there on an international campaign. I guess that was that! “Now we enjoy a very strong relationship based on respect, trust, individuality and freedom. We’ve stayed ‘us’ but do as much as we can together. Carmin has even learnt to cook since we moved in together; something her dad still can’t believe. “When we do have quality time, we usually try to head off on one adventure or another. We’ve travelled together quite a lot so far, including to Venice and Stockholm, and we’ve just returned from a trip to Venezuela to see Carmin’s family. It was wonderful, and we’re now looking forward to a fantastic Christmas here in Malta.”

Education was always something I prioritised, and now I keep my focus on Keith, my partner, and our plans.” With regular international events to attend, Carmin has certainly developed her own sense of style and even makes her own outfits (designed in tandem with her brother, Gustavo Martinez) on occasion. “When it comes to style, I believe that the most important thing is to take care of yourself,” she smiles. “It doesn’t matter whether you are sporty, elegant or sophisticated, you can come up with a look that works for you. “In my case I like to look elegant. I’m quite old-fashioned in that way, and always choose to represent myself in a sophisticated manner – electing to turn down work offers for underwear or nude shoots. It’s just not my style. I prefer to be a bit more conservative. It’s true that it may have held me back as a model, but I’d much rather live by my morals than do something
that shows me up to be someone I am not. It’s a personality thing. I believe it’s more important to play the role expected by the client, and to be someone who wears their clothes proudly. Confidence is vital, and I think it is that that has got me great results.” Now firmly based in Malta, Carmin juggles a full-time job in hospitality with regular trips away on modelling contracts. “Elite International recently invited me to Kenya to choose a black model there for the first time; I was one of the judges. It was an incredible experience as Africa is largely untapped when it comes to modelling – there are so many beautiful girls there! It’s so much harder for them to break into the industry, but I’m thrilled that opportunities are finally being sent their way. I look forward to hopefully working on more projects like this in the future, as they demonstrate ways that fashion can make a substantial difference.”

The urge to reinvent ourselves is stronger at this time of year than at any other – but is there any point making New Year’s resolutions? Here, Style on Sunday chats to six experts to discover how, with a few tweaks, we can all make 2012 our best year yet.
Dr Joanna Delia and Joseph J Abela
Dr Joanna Delia is a cosmetic doctor. She shares her advice and tips for a 2012 that will have you looking, and feeling, fantastic. Life shouldn’t be about New Year’s resolutions, but about making plans, taking decisions and sticking to them. I believe that if you feel something is wrong – in your self, relationship, career or whatever – you should fix it, and not procrastinate or make excuses. I think my life is defined by this attitude; I know that “the only thing you can really change in this world is yourself.” I have chosen to take control of my own life, as demanding as that can be, and to follow through, because I know it will lead to better things. Image is important, and I am in an industry that highlights that. The truth is that most people aren’t image
New Year: New Me, New You obsessed, they’re just annoyed with one particular aspect of themselves and are adamant about improving it. I watch people get upset as they age, and it showcases how prevention is better than anything else – so do take care of yourself. It is about being healthy, and I beg my clients to drink lots and lots of water – after all, it is ridiculous to spend hundreds of euros on treatments, but not be willing to hydrate your skin from the inside out. It will improve the turgidity of the skin in the same way that a water-starved plant will revive as soon as it is fed. My idea of beauty is that you should never let a detail about yourself take over from the rest of what you have to offer. If there are one or two things truly getting in the way, then seek professional help, but over all try to
focus on the good instead. If you make a New Year’s resolution, strive to appreciate the beauty in you. As for me, I have so many resolutions on the go, including finishing my home in Valletta. I love to socialise, but a calming home environment helps me to relax and balance everything so much better. Well-known hair stylist Joseph Abela has made positive thinking a focus for his life, whether that’s related to image, relationships or any other aspects. A new beginning is great, but it can come at any time. “Every day should feel like you’re starting a fresh copybook” – just like you did when you were back at school, determined to write neater this time around. The New

Year could be your incentive, but so could anything else. When it comes to image, it is important to keep up-to-date and to change your look when it feels right – but do it for the right reasons. When a person enters the salon following a break-up or other traumatic experience, they often want a radical change. But think things through, as you may end up regretting it. You also have to be realistic – you may want a funky hair do, but if you don’t have the time or energy to maintain the look as a whole, then it might not be for you. Of course changing your hair is great, but it’s not going to change your life. At the end of the day, it’s just hair; it’s not going to solve all your problems. Put things in perspective – if every hair doesn’t stay in place it shouldn’t ruin your evening; if it does, there’s bound to be another underlying problem there. So this year I suggest you look at the bigger picture and live positively in every aspect, seeking change where it will really improve things. Personally, I’m being pushed, by my partner, into finally getting my driver’s license this year – quite a big thing for me! I also plan to focus more, both on my career and my personal life, and to allocate a bit more time to having fun. Shelia Jin is qualified in both eastern and western medicine, and specialises in alternative therapies including acupuncture. She shares her thoughts for a healthy, productive and successful 2012. I’m not a believer in resolutions because I think it is vital to assess your life every day. When I wake up I give myself five minutes to think through the previous day’s successes and failures, and to think about how I can make the next 24 hours better. Resolutions at New Year are purely ritualistic; if you want to change something, do it now. I have made resolutions that have changed my life – including making the decision to leave China for England to further my medical studies. It is definitely worth it.

It is important to search for inner and outer peace in everything we do, such as yin and yang. “Seek balance in everything” from friends and family to work, and without peace you cannot have health, and without health you cannot be truly happy. Strive for everything in moderation, even the good things, and go with the flow; of course everyone has stress in their lives, but it is how you deal with it that matters. From a Chinese medicine perspective, prevention is much more important than the cure so keep your well-being in mind every step of the way. Think of your body as a car that needs to be serviced; regular check-ups should happen before you realise there’s a problem, and you should develop a relationship with your GP so that he or she will know if something changes within you. Medication is definitely abused in Malta, so do think of alternatives, including managing your nutrition and fitness. This year I won’t be making a resolution but will continue to strive for change every day. As for everyone else, I suggest they choose to put their health first as, without that, nothing else makes sense.
Xandru Grech is a well-known ex-athlete, power-plate trainer, personal trainer and sports coach. He will shortly be launching a new, state-of-the-art centre in Ta’ Xbiex, specialising in helping people to make valuable life changes. In principle I am a fan of resolutions, although I don’t think they necessarily need to happen at New Year. That said, on 1 January I am made more conscious of time passing and people getting older, as well as of the things I have and haven’t achieved. The start of the year serves as a reminder of my failures and successes so far. I have made resolutions in the past – some of them successful and others not so. Often, I would set challenges and then life would get in the way, but I am pleased to have changed my attitude and outlook on life over time; I have definitely become more relaxed and easy-going, and less analytical. I have realised that “the mind is an amazing gift and the best tool that one has.” Once you know what you want, the path towards it will become clear; our worst enemy is simply the belief that we cannot do something, as that creates obstacles.

STYLE LIVING And this is the exact approach that I took a few years back when I decided to lose weight. My inspiration was actually a car – an MX5 – as I had been given one to drive for a year but couldn’t fit into it! I wasn’t going to let my weight get in the way of my fun, and started dieting and exercising there and then. I lost 35 kilos, and it was life changing. My advice to readers would be to assess what makes you happy and to follow it; live in a way that motivates and satisfies you. Follow your dreams, and don’t ever get stuck in a rut. As for me, I know I’ll be resolving to take a break and get my life back a bit – but as soon as that resolution is made, I’m sure I’ll be dying to get back into another hair-brained project!

I really do believe that we can achieve anything we set our minds to, a certainty that I suppose developed from my years as an athlete, and later a personal trainer. The New Year is often a time when people choose to reassess their own fitness, and to lose or gain weight. I disagree with looking at things this way, my advice is to start training so that they can, eventually, feel better about themselves. When you feel good, everything falls into place and you start to feel good about life. I’ve discovered that it’s not about losing 2 kilos, but about improving life a day at a time. If you don’t feel good, seek help from someone who can give it to you. This year, find something you can enjoy doing, whether that’s an indoor class or an energetic walk through the countryside; once you find something that works it will feel right and you’ll stick to it pretty effortlessly. As for my own resolutions, this year I’ll be focusing on the launch of the new centre from a business perspective and further self-growth from a personal one. I continue to look forward to changing, growing and achieving every year.
Motoring journalist, lecturer and TV presenter Tonio Darmanin isn’t the sort of man to let life pass him by. He constantly strives to make changes to better himself and the lives of those around him. Resolutions can be a good way of getting things done. I’ve learnt that, whether at work or personally, if you are not constantly reviewing and evolving, then you’re not moving forward. Improvement should be a constant focus. I believe that you should live by motion and not by rationality, and this has certainly been true of my life. In my own experience, while I had been in one industry (insurance) for most of my career and was very qualified in it, I knew I wanted a change. It would have been easy to stay put and not rock the boat, but life is far too short. Looking back on what I have achieved so far, I am thrilled with everything I have done – both successes and failures. My advice is to never feel like you’re done. Every year, after Paqpaqli ghall-Istrina, I spend the night wide awake, already looking forward to the things that I can improve in 12 months’ time. “Resting on your laurels won’t take you anywhere.”
Psychologist and psychotherapist Dr Dorothy Scicluna knows the importance of putting mental well-being at the forefront. She shares her thoughts, and tips, for a less stressful 12 months ahead. I am a big believer in the importance of taking decisions and putting them into action. We have to acknowledge who we are, shortcomings and all, and reflect on how we can grow – without becoming obsessive about never being quite good enough. “Self-growth is vital, for us, and those around us.” I have often made resolutions in my life and stuck to them – it is the best way to improve. If a client had to come to me wanting to change their life, I would first ask them to define the change they desire, as each of us looks at life in a different way. It is so important to ask them why they feel upset and unhappy, and to listen. Similarly, stress is very personal and we all react to it individually. We need to, first accept our psychophysiological limitations among others and then try to live within these limits. It is far better to refuse or postpone a task, versus to accept it and make ourselves miserable. Accept the fact that some things will have to give, as you cannot achieve everything in one go. So, if people are looking to improve their psychological well-being, I would advise them to start by walking for 30 minutes every day, and to trust that life does know best. As for me? I’ll be striving to live a more simple life in 2012.

The Mercedes SL350 oozes luxury and style. Krista Micallef Trigona speaks to Winston Zahra Snr, the man behind the wheel of this classy car.
Winston Zahra Snr might be better known for his successful hotel business but those who know him cite cars as one of his other main passions. His choice of vehicle? The Mercedes SL 350, a car he purchased six-and-a-half years ago in cubanite silver. “It still looks as new as the day I bought it,” Mr Zahra begins, “despite the fact that a relative of mine crashed into it a few weeks after I purchased it,” he chuckles. “One morning, I left the car in front of my house and soon after a close relative parked her vehicle in front of mine. Some minutes later, I heard a knock at the door and found her crying as she told me that she had just crashed into my new car. She explained that she had reversed, forgetting that my car was there, and badly dented my bonnet,” he recalls. Still, Mr Zahra was adamant that the car should look good as new again, as, after all, his dreams of owning a convertible
Mercedes SL take him back to 1980. “I was very close to buying a second-hand model but, at the time, had to give up on my dream in order to pursue more important priorities,” he says. His patience paid off, and today Mr Zahra is the proud owner of this luxurious vehicle. And even though he’s had it for some years now, he still loves everything about it. At a Glance The Mercedes SL has a long history that is synonymous with luxury and a refined way of cruising in style. But this model, in particular, caused quite a stir when it was first revealed, as Mercedes decided to give the SL brand a facelift, making it look more aggressive with the addition of CLS-inspired L-shaped lights and a more furrowed bonnet. The result? A far more masculine shape, especially when compared to its

previous model. The SL’s design and overall look are wellbalanced and attractive whether the folding hardtop is up or down. And although the car is a two-seater (which may make it appear small), its interior is well-thought out from an ergonomic standpoint, enhancing the ease with which the car can be driven. Its booth is also spacious – or at least, spacious enough to house a set of golf clubs at the very least. In terms of the car’s performance, the SL 350 is no sloth either – the engine hums beautifully and, according to Mr Zahra, its power suits Malta fine. “I opted for the 350cc because I felt that it was an ideal size. In my opinion the 500cc is too mighty and won’t allow you to benefit as much from it,” he states, adding that he has travelled abroad with the 350cc many times and found its performance to be suitable for him there too. This comes as no surprise, as the SL350 has been classified as a very
relaxing car to drive around in, especially on smooth, long straight roads. Unfortunately, though, Maltese roads are far from the best that you can find (although improvements have been made throughout the years) and, as Mr Zahra says, “sometimes, driving on Maltese roads can be frustrating, but you have to be practical and accept that, both in terms of quality and distance, they are perhaps not made for this type of car.” The Mercedes SL350 is also a leader when it comes to safety features – having a top speed capability of 130mph and a zeroto-60mph time of under nine seconds, the brake system is on tact and is highly efficient, particularly due to its electronic Anti-Bloc unit, which was introduced for the first time with this model. Other safety features include the steering box, which is located behind the front wheel centres and has a column that is designed to collapse on impact. The fuel tank is also cleverly

positioned above the rear wheel behind the passenger compartment and to the front of the luggage boot, making a rear-end collision less dangerous. Without a doubt, these, among other features, make the SL350 a really special vehicle. Winston Zahra’s Verdict “From my own experience, the car is a real pleasure to drive especially with the top down on summer evenings. It is stylish and elegant, but don’t let its beauty fool you – this model is anything but fragile and is built like a tank! To give you an example as to how strong and safe it is – I once had an accident where a contractor’s truck drove into the back of my car. Having sustained no injuries myself, I was fearful that I would find the back of my car completely smashed in. But to my surprise, I discovered that while the truck had massive damage to its front, my SL only sustained a few scratches!”

Think Outside the Box Think beyond the obvious. This centrepiece looks a million dollars but was so easy to put together. I upturned a glass fish bowl for height and placed a plate on top of it to use as base. I topped this with glass candle holders and Christmas tree beads. Different coloured berries were bent around the plate, surrounded by matching baubles, crystals, tea lights and candles.

All In A Name This is a really simple, yet fun, idea. I found these reindeer decorations and added a bauble to the top – finishing the look by writing my guests’ names onto it (I used a white board marker so these can be wiped off and reused). Fun, festive and entertaining!
Put a Ring On It A really simple way to decorate even the plainest of napkins at the fraction of the cost. Roll them up and loop a Christmas tree decoration around them. The result is really cute, and they can be popped back on to the tree when you’re done!

Catalan celebrity chef Ferran Adrià i Acosta is best known as the head chef at El Bulli on the Costa Brava. Considered one of the top chefs in the world, he began his culinary career as a dishwasher, climbing the ladder one step at a time. El Bulli was named the Best Restaurant in the world in 2006, as well as three Michelin stars. El Bulli has now been transformed into the El Bulli Foundation, and Ferran Adrià is now running Tickets Restaurant in Barcelona with his brother Albert. “When it comes to Christmas, I believe that it is all about family and we follow many traditions in our house. Among them, is the fact that my brother and I always put together a seafood feast for us all to enjoy – it’s our favourite type of food. “Although I’m working at this time of year, I still get into the spirit of the season. It has always been one of my favourite seasons and even as a child

I remember how much I loved eating at this time of year – especially the traditional festive nougat. “When it comes to the restaurant, I don’t think that we have had any Maltese customers so far – although we don’t always know who is dining with us. Should any visit, we would love to know! I’ve not been to Malta so far, but would love to at some point – it is on my travel wish list!”

French chef and restaurateur Joël Robuchon was named Chef of the Century in 1989 and awarded the Meilleur Ouvrier de France (France’s Best Craftsman) in cuisine in 1976. He operates a dozen restaurants in Hong Kong, Las Vegas, London, Macau, Monaco, New York City, Paris, Taipei and Tokyo, with 26 Michelin stars between them – more than any other chef in the world. Here, he and his award-winning London executive chef Olivier Limousin look forward to Christmas at their West Street restaurant, L’ Atelier. Joël: “This year’s theme is ‘elegant jewels’ – so we’ll be dazzling! We have a great time doing the restaurant up for Christmas. One of our managers, Jerome Taverson, is a real whizz when it comes to decorating, so we leave it in his capable hands. Every year he comes up with a new idea for the décor of the whole building, as well as indoors – always something elegant, sexy and lovely that works with our existing look. It goes well with the most extravagant item on our festive menu – white truffles.” Olivier: “We’ve often welcomed Maltese customers to L’ Artelier, as well as some great

There’s no one ingredient but part of my philosophy is that positive attracts positive. I always try to ensure my team feels great, and I believe this will echo through to our customers and our food.
Celebrity chef Jun Tanaka is best known for his work on Britain’s BBC One, ITV and Channel 4, on shows including Saturday Kitchen, Saturday Cooks and Cooking It. Born in America with Japanese parents, Jun has worked his way up and is now the executive head chef of the celebrated Pearl Restaurant and Bar in London. “Christmas is all about nostalgia and memories so I always try to evoke that when coming up with a festive menu by including ingredients such as chestnuts, Brussels sprouts, clementines, cinnamon, game and wild mushrooms. I believe that food should be relevant to the season. In fact, this year my favourite dish on our Christmas menu would have to be our venison cooked in a spiced salt crust with beetroot tart-tatin, pears and chestnuts. It reminds me of the candied chestnuts that my mother makes every year; they are so good! Plus, we make use of one very extravagant ingredient – Perigord truffles. “We have definitely had some Maltese customers visiting the restaurant and would love to have more. Though I’ve never been to the island I know that one of my dishes is very similar to your traditional pastizzi; comparable to your ricotta and eggs wrapped in puff pastry, I serve Vacherin Mont D’or (French winter cheese) and squash wrapped in puff pastry. So

One of my favourite ingredients over the festive season is game – partridge, hare, mallard and venison. They are all on my menu at the moment. Enjoyed with a bottle of Cabernet, Bin 707, Penfold 1990 any would be my perfect meal.

I try not to make them, but instead make changes as and when they’re required!
My secret ingredient:
More than an ingredient, it’s a tip for cooking the perfect roast turkey that’s moist, tender and full of flavour. Try brining the turkey for 24 hours in 10 litres of water, mixed with 1kg salt, 500g sugar, a bunch of thyme, one head of garlic and four bay leaves – perfect!

Christmassy Chocolate Brownies Serves 4
Ingredients: 150g fondant chocolate, 125g butter, 100g brown sugar, 75g Amarena and syrup, 100g flour, ½tsp sweet yeast, 2 small eggs, pinch of salt Preparation: Place the chocolate and butter in a bowl and melt over a bain-marie. In another bowl, whisk the eggs and brown sugar together until combined, later incorporating the flour, yeast and salt. Mix well. Add the melted chocolate and butter mixture, and add 50g of the Amarena to the top of it. Transfer the mixture to a pre-prepared baking dish and cover with a baking sheet; level the mixture to make it neat. Bake in a pre-heated oven (190°C) for 15 to 20 minutes. Leave to cool, and serve with a piping hot mug of strong coffee.

Snow-Topped Chocolate Delight Serves 4 Ingredients: 150g fondant chocolate, 150g butter, 100g sugar, 40g flour, 3 to 4 biscuits, 3 eggs, 100g red berries, icing sugar, pinch of salt Preparation: Mix the fondant chocolate with 140g of the butter and 100g of sugar, and melt in a bain-marie. Leave to cool before adding the eggs (whisked in one by one), 30g of the flour and the salt. Keep mixing until it goes thick. Divide the batter into six butter-coated pudding cups and cover each one with foil; freeze for two hours. Remove and place in a pre-heated oven (220°C) for 15 minutes. Leave to cool, then flip out of the cups – carefully. Sprinkle with icing sugar and serve with red berries on the side.

Festive Panettone with Ricotta Veloute Serves 4 Ingredients: 6 egg yolks, 1 orange, 100g sugar, 40g corn flour, 450g fresh ricotta, 100g sultanas, 3 slices of readymade panettone, 350ml milk, icing sugar Preparation: Wash and peel the orange, and separate it into two; add these to a pan with the milk. In another bowl whisk the eggs and sugar until the mixture is clear and soft. Add the corn flour and re-mix, then add the milk mixture; heat on a low flame and stir continuously. When the mixture is piping hot, cover with a baking sheet and leave to cool. Meanwhile, in a small bowl, soak the sultanas in water for 20 minutes. Mix the ricotta and cream mixture, and add to the drained sultanas. Toast the panettone and serve, dusted with icing sugar and with the warm creamy mixture in a small bowl on the side.

Magical Mousse Serves 4 Ingredients: 150g fondant chocolate, 125g fresh cream, 150g sugar, a pinch of cinnamon Preparation: Melt the fondant chocolate over a bain-marie. Add the fresh cream, as well as the sugar and cinnamon, and heat. Bring the mixture to boil and then leave it to cool. Whisk, and then place in the fridge. Remove from the fridge every ten minutes and beat. Finally, transfer the mixture to a baking pipe and pipe onto ready-made chocolate brownies.
