In a Cask of its own! The increasing popularity of real ale is driving demand for microbreweries to produce more cask beer, writes Alex Wright, which is in turn boosting pub trade according to a new industry report

The report also found that a good range of cask ales was key to a pub’s driving footfall, developing sales and building reputation. Currently cask ale represents just 17% of all beer sold in on-trade, but, with four new breweries opening in the UK every week and the continued growth in volume and the overall decline in total on-trade beer, that figure is growing and is expected to reach 20% by 2020.

The rise of cask ale has been fuelled largely by the growth in the microbrewery industry since the government’s Progressive Beer Duty introduced tax relief for small breweries in 2002. Added to that has been a preference for greater flavour, localness and authenticity, as well as a backlash against the homogeneity of global corporate brands and the growth of beer festivals, and it shows no signs of slowing down soon.
“There’s also been a reaction against big corporate brands and people would rather be supporting what they see as the little guy rather than give their money to a huge corporation, and they are more interested in flavour than they used to be. For that, cask ale ticks all of the boxes.” Brown added that cask beer had the advantage over bottles and kegs in that it required a smaller capital investment by new brewers.

BREWERY FOCUS WIMBLEDON BREWERY COMPANY The Wimbledon Brewery started production of cask and keg ales from its 30-barrel brewery in SW19 in June 2015, 125 years since beer was last brewed in Wimbledon. Master brewer is Derek Prentice, who has been brewing beer since the 1960’s, at Truman’s, Young’s and Fuller’s. Prentice recently received the Society for Independent Brewers’ (SIBA) lifetime achievement award for brewing and was named Brewer’s Brewer of the Year 2013. The Wimbledon Brewery has a long and interesting history. The original brewery was established in 1832 in Wimbledon High Street and stood where the old fire station is today. It produced beer until 1889, when its five-storey tower brewery burned down. The brewery produces a range of fine beers. Its flagship beer is ‘Common’ pale ale, a quintessentially English bitter and easy drinking at 3.7% ABV. Wimbledon Brewery also have a delicious Tower Special pale ale at 4.5% ABV with a lovely malt on the palate. The brewery also has ‘Quartermaine’ IPA, a traditional English IPA at 5.8% ABV.
The brewery currently supply the Hurlingham Club as sole ale provider and the RAC at Pall Mall and Woodcote as well as a growing number of more than 200 landmark sites across London. A specially brewed beer, Plough Lane Ale at 4.1% ABV, is supplied to AFC Wimbledon football club. It is also currently in the process of producing a beer bread with Marcus Miller of Miller’s artisan bakery and also a beer cheddar using hops and beer in collaboration with The Cheddar Gorge Cheese Company. BREWERY FOCUS GYLE 59 Nestling in Marshwood Vale where the counties of Devon, Dorset and Somerset converge, the location of Gyle 59 is idyllic. With a 10-barrel plant set up in 2013, it produces an eclectic range of beers from juicy porters to a farmhouse saison, wheat beers and a clutch of IPAs. Starting with spring water that is good for brewing with, the hot liquor tank is heated by an industrial log burner and the boil is managed by two propane burners that kick out 75KWs a piece. Why go to these 19th century lengths to make beer when you could have a computer controlled system? A simple answer, without any three-phase electricity, alternative heat sources had to be found. The result is that brew days are “a bit like cooking on an Aga,” said owner and head brewer Jon Hosking. Not content with working with equipment that chimes with the steam train, from the outset Jon was adamant that all beers would be unfined. Coincidently, this has meant that the brand has attracted a large vegetarian and vegan following who prefer not to drink beers containing fish products. While not everyone feels good about drinking hazy beer, it is becoming more acceptable and in more progressive, urban areas even quite trendy. For Hosking it really is about the flavours and how to balance the myriad of ingredients available to modern brewers that drives his passion about brewing.
Brewster Emma has a gift for foraging and will often come up with seasonal specials that may contain hedgerow fruits and plants. Originally designed for the nettle eating competition held at The Bottle Inn in Marshwood, Nettle IPA has become a firm favourite, and mild weather conditions this winter has meant production has continued. Other seasonal beers include Elderberry Pale, as well as a 7.5% abv Elderberry Stout currently in storage, allowing it to mature and mellow. Tropical Thunder a beer brewed to commemorate the 250th anniversary of Abbotsbury Sub Tropical Gardens, contains Tasmanian Drimys Lanceolata from the Gardens, which gives a spicy and warm finish to the 3.7% abv Amber Ale. Co-owner and beer sommelier Amanda Edwards, drives sales and monitors market trends. This season the brewery is going into production of kegged beers in part to supply their new retail venture Cellar 59, a beer house situated in the seaside town of Lyme Regis. Beers will be unfined and will be a showcase of Gyle 59 brews and other local microbreweries. Excited about the new project, Edwards has a clear vision: “I want Cellar 59 to be a centre of beer excellence where people can learn about the fantastic range and styles of beer available currently, and how it pairs so well with food”.

BREWERY FOCUS SADLER’S ALES BREWERY Sadler’s was first opened in 1900 by Thomas Alexander Sadler. The brewery supplied its 12 public houses operated and managed by the Sadler family. The most famous being the Windsor Castle Inn in Oldbury that adjoined the brewery. Though brewing stopped in 1927 and the business was sold to the Holt family, Thomas Alexander’s son, Jack, passed his knowledge of brewing to his son and grandson. Grandson Chris brought the brewery back to life again in 2014 and is the current managing director and fifth generation family brewer. Sadler’s produce award-winning beers in cask, keg and bottle formats and supply extensively in to the on and off trades. It now operates from two sites – the original 10-barrel plant adjoining the pub venue – The Windsor Castle Inn in Lye, near Stourbridge and also from the corporate offices, a 30-barrel plant and brewhouse, next to the train station making it 40 barrels in total. Regionally, it has a great deal of heritage. It uses its 10-barrel plant as a small batch, craft brewery and larger production is carried out at the 30-barrel site – it also kegs its beers and filter and carbonates on site in E-keg and key keg formats. The brewery has a range of 10 core beers that are available in cask or keg and a monthly special, as well as its small batch of super craft beers sold to exclusive venues within the area. In addition to this, Sadler’s packages eight beers in 500ml format that are sold to free trade, off license customers and grocery multiples.
It has a small portfolio of its own venues – four in total. That includes the Windsor Castle and the Brewhouse Bar, and they are actively looking for urban venues that fit with its styles and branding. Although it enjoys a strong commercial business, the brewery’s style has a strong craft prominence and they have some iconic brands within its portfolio – Worcester Sorcerer, Hop Bomb, Peaky Blinder and its multi award-winning Mud City Stout. They are constantly working in the trade with their team of promotions staff. The brewery has between 50 and 70 visitors every week who attend the brewery tours and it has a beer bus that is in action in all kinds of locations, along with a strong social media presence. Crucially, it has a full Safe and Local Suppliers Accreditation, and also have the specific beer module, as well as being Beer Company Level 1 brewers.

BREWERY FOCUS LACADA BREWERY Lacada Brewery has its origins in a love of beer and brewing, a love of place, and a love of people. It began with a father and son in Portrush who built their own nano-brewery, in order to discover just exactly how their favourite beers were made and they soon began to invent their own distinct recipes. The initial phase of playing with the huge range of flavours from American and New Zealand hops, soon changed to marrying these New World varieties with the established British, German and Czech hop varieties. Attention was then turned to ‘a pint of Plain’s yer only man’ and the brewers came up with a porter that was very exciting in its subtle flavours and drinkability. The inevitable question arose of how to do this commercially. A steering group formed and they soon agreed that they needed a diverse skill base in order to make the venture successful and sustainable. Discussion quickly turned towards investigating the establishment of the brewery as a Co-Operative. A Co-Operative is an autonomous association of persons united voluntarily to meet their common economic, social, and cultural needs and aspirations through a jointly owned and democratically-controlled enterprise. This led founding member Laurie Davies to attending the launch of the Co-Operative Business Hub, where successful examples of Co-Operative breweries were presented, such as Heston Newmarket, Topsham Ales and Manchester Brewing Co-Operative. Back in Portrush this translated to setting up a steering group. BREWERY FOCUS KNOPS BEER COMPANY Knops Beer Company was founded in 2010. After graduating from Heriot-Watt University with a degree in Brewing and Distilling, owner Robert Knops worked his way through production, purchasing and sales in a variety of different breweries across the UK. In 2010, he left the corporate world with the dream to start his own brewery. Trial brewing began on a 20-litre kit in his dad’s garage, and with only an angry little robin for company, the first batches of California Common’ – a beer inspired by the steam beers of the US West Coast – were tested out on family and friends. With the financial climate in 2010 still a barrier to opening up his own production facility straight away, he decided to have his new beer contract brewed for both bottle and cask to get things up and running. Contract brewing provides its own stresses and issues, and at times it did feel like an uphill struggle. The situation as a contract brewer could not continue, so in 2013, Knops was delighted to finally move into our own brewery. Situated in the Archerfield Estate, on the beautiful East Lothian coastline, 20 or so miles east of Edinburgh, the new brewery and bottling line controls 100% of the beer production and packaging. Finally, the brewery has a facility that allows the company to focus along a set of principles that Knops sums up in the term “Craft Beer Engineered”. To him, modern micro brewing is all about the fusion of art and science.
