SofieFormica

A bright presence on our small screens since the late 80s, Sofie Formica is a dynamic performer and dedicated mum who is proud to call Brisbane home. Here she reveals a little of her determination to make media her career and the diversity of her background.

What’s your current TV role?

I am the longest running host of The Great South East for Channel Seven. I took over the host role in 2006 - and the only woman to have ever hosted the show. The program is 15 years strong and still a ratings winner. We are seen throughout Queensland on Sunday night and nationwide on 7Two every Saturday. It is a travel/ lifestyle magazine show highlighting the best in the south east corner.

What keeps it fresh for you?

The Great South East is a positive program so everyone is always so happy to see us. The passionate people I meet and the positive effect our visit and exposure can have on their business is enough for me. No two days are the same and I really love it! I am also a director of my own boutique media training business Media Potential.

Do you have family and how do you make it work?

I have 14 year old twins, Jack and Jessica and a 12 year old daughter Emily. My husband, mum and my sister are incredibly supportive. We are all looking for the elusive ‘balance’ I think that it is unique to each of us and I work every hard to find balance for my family. I get it right most of the time, I think!

When did you begin in TV and what role?

After work experience in Year 10, I set myself the goal of working in television. I hosted my first show ‘Footprints’ for channel 10 in 1988 at the EXPO studio, I was in Year 12. My first real TV job came in 1989 when I started as a reporter on ‘Wombat’ for Channel Seven, and all my dreams had come true.

What are some career highlights?

Being the first woman in Australia to host a game show, Now You See It. Filling in as host for Steve Vizard on Tonight Live. At one point in the early 90s I was on five different shows for Channel Seven at the same time: Saturday Disney, Now You See It, Great Outdoors, Home and Away and The Main Event. Shooting for a week with Oprah in Chicago for Oprah Goes Online, a series for Oxygen Network.

What is it about Brisbane that makes it a great place to live and work?

Brisbane is blossoming and the people who live here are really proud to stand tall. I hate comparing us to any other city. We are unique, we have positives and negatives (like every city in the world) I think it is a wonderful place to live and I am really happy that I chose to raise my family here.

Brisbane is in the midst of an exciting year with less than six months to go until the G20 Leaders Summit when we will, for a few days, be the capital of the world.

Hosting the G20 is a once-in-a-generation chance for Brisbane to step up and take its place among the emerging new world cities of the 21st century. There is no better opportunity to showcase what our city has to offer to the leaders of the world, their delegations and the 3,000 international journalists attending the summit. One of several ways that Brisbane is preparing for G20 is with a program for 2,000 of Brisbane’s hospitality workers to ensure Brisbane is remembered as the ‘friendly G20 host city’. One of our City’s best assets is our friendly and caring community. Despite our city’s growth, we are still renowned for our welcoming spirit. This will be a fun, interactive and engaging program encouraging participants to think about what makes Brisbane special and how they can share that with our visitors. The aim is to give visitors a personal connection with our city, our culture and our events that we hope they will share with their friends and relatives. Another exciting announcement has been the launch of free Wi-Fi internet access in South Bank, Victoria Bridge and the Queen Street Mall. This initiative is helping make Brisbane “digital friendly” and will allow all of the 7,000 visitors to Brisbane during G20 access our public Wi-Fi facilities. Both the Queen Street Mall and South Bank will be popular locations for G20 guests and represent important aspects of Brisbane’s digital connectivity for our visitors. Brisbane will bring together some of the world’s most influential thinkers in a bold new initiative: the Global Café. This two-day meeting of minds will feature speakers, workshops and media conferences in the week of the G20, as well as a series of events ahead of the Summit. The virtual “café” will be the first of its kind and will explore important philosophical issues around improving human life, developing cities that match future needs, powering the future economy

While the official Brisbane G20 summit will focus on achieving stronger economic and employment growth and dealing with future economic shocks, Brisbane Global Cafe will fill the gaps on issues such as improving human life, technology and design. This is a way to achieve thought-provoking discussions and champion issues

In favour of remedying the serious structural issues and decaying interior, Brisbane residents came out in full voice to support the restoration of City Hall of particular relevance to our city. At the same time as we prepare for our city to be on the world stage, there are many exciting projects underway that will continue to transform our city. We have new iconic developments and signature infrastructure projects underway, heritage areas being revitalised and major businesses taking up residence. One of these exciting upcoming projects is for a $150 million three-tower development in the heart of Fortitude

Valley’s commercial precinct. This project was recently approved by Council and will see a vacant lot on Wickham Street transformed into a vibrant accommodation hub. The three-stage development will activate the surrounding area with its 30 storey residential tower with 187 units, a 24 storey residential tower featuring 137 units and a 25 storey hotel featuring 189 rooms. Another upcoming project is the renovation and refurbishment of the heritage listed TC Beirne building, which links the Brunswick Street and China Town Malls. Under this development recently approved by Council, the TC Beirne building will be transformed into a new hotel while still retaining some retail and commercial components. The TC Beirne building represents an iconic piece of Brisbane history. The building was originally constructed as a department store in 1902 by Irish draper Thomas Charles Beirne and now, under its redevelopment, it will include 112 rooms. This new hotel is just one of several for Brisbane this year, with 575 new hotel rooms and 337 serviced apartments to come online. In coming months Brisbane can look forward to TRYP and Alpha Mosaic Hotels opening in the Valley and Next Hotel in the City. These new hotel rooms come on top of the recently opened and represent vital accommodation opportunities to visitors in our city in time for G20.

ARIA Hall of Fame inductee Marcia Hines launched her latest album Amazing in April this year, her first recording of all original songs in 20 years. Now at 60, Marcia remains a national inspiration. Here she shares some insight into her evolution, her muses and the hallmarks of the songs that have endured for more than three decades. How has your music evolved over time? It’s grown with me and I’ve grown with it. You have to stay hip and be aware of what’s going on, but at the same time you have to remain true to yourself.

How have you evolved as an artist? I continue to try and get better. It’s like opening a present – you open a box and there’s another box, then you open that box and there’s another – it’s a never ending present.

Your ties to the US are very strong, why did you remain in Australia? My daughter was born here, my work was here and the work was plentiful. My support system was here, which I think is very important to be with people who support you. My mother passed away some years ago, but she lived with my daughter, Deni, and I. She helped me take care of Deni so that I could focus on my career.

What was the muse or inspiration behind your latest album?

SOUL PURPOSE

You don’t realise the incredible amount of emotions you have until you start writing them down. I tend to listen to people speaking, and take inspiration from their words.

What are the hallmarks of this album?

I wrote the whole album. Necessity is the mother of invention. I went to America for a holiday and I was in LA at the time. A friend of mine knew Joni Mitchell, and we were invited to her house for dinner. We started talking about writing music, and she really encouraged me. She was a lovely kindred spirit. I found two writers in Sydney and we wrote non-stop. They were a great team. We plan on writing the next album together.

Will you use the same writers? If it ain’t broken, don’t fix it. We would accept new contributions, we would be mad not to. The writers are a great mixing, one is classical and one is very R&B and Hip-Hop.

Who were the biggest influences on you during your career? Just about everybody that’s good. I grew up in Boston, so I was lucky that I got to see some really great live music before I left, like Miles Davis & Jimmy Hendrix. I love gospel music. I just like good music. My CD collection is quite eclectic. I live for music.

What are you future goals and plans?

The French Pavilion Courtyard is yet another space for exclusive functions such as Baby Showers, Birthdays or to hold a farewell memorial service. Brides will be delighted with the recent addition of a bridge over a small waterway, sublime for photo opportunities and complete with a restored, vintage carriage. Teavine House is open Thursday, Friday, Saturday and Sunday, between 9 and 5 for light lunches and High Tea. Bookings are essential. CELEBRATE & SAVOUR “HARVEST” GOMA, Brisbane’s dynamic and diverse hub of art and culture, will present its next major exhibition, “Harvest”, from 28 June to 21 September. errie Hess lives every girl’s fantasy life – illustrating and painting, splitting her time between Brisbane and her former hometown, Paris where her select coterie of clients – among them Loius Vuitton and a confectionary company, Maison Ladurée – pay in Euros for her exquisite art. She has exhibited her work in the City of Light at the equally divine Hotel Le Meurice, designed campaigns and branding for Collette Dinnigan, created packaging for a cosmetic line, and seen her fluid and fabulous designs on billboards for chic department store, Le Printemps. It must all seem like a dream come true? “Yes,” Kerrie acknowledges, gazing out over the distinctly Gold Coast scene outside the window in the QT foyer – patrons in thongs and board shorts, bikinis and cut-offs, all clutching beers and cocktails. “But it was entirely unplanned. Things just happened. I always loved to paint and draw. But I chose the path of graphic designer because I thought I would have to have ‘a proper job’. 14 years ago I went overseas to London where I worked for The Independent newspaper as a graphic designer. They needed an illustration for the fashion, lifestyle and beauty section on deadline and I illustrated an image as we went to press. A year or so later I decided to try my hand at illustrating full time, and I gave myself a year to make it work. Thankfully I haven’t looked back.” Influenced by the originator of the pen and ink fashion illustration, French-Italian luminary René Gruau, whose work infused joie-

de-vivre to the covers and pages of Marie-Claire, Elle, Vogue and Madame Figaro, along with the campaigns of quintessentially French designers, Balmain, Dior and Givenchy, Kerrie loves the challenges of her chosen medium. “Watercolours on paper is a very unforgiving medium. It’s fast and you can easily make a mistake. I go through a lot of paper. But it’s so satisfying when it all comes together.” Her whimsical, classic water-colour renderings took on a life of their own, gaining a following among the fashion magazines, designers and brands who wanted something entirely original that would evoke the insouciance and allure of turn of the century Paris. Some of the triumphs of her career to date include the cover of Harper’s Bazaar celebrating 15 years of the Australian version of the masthead, in collaboration with Collette Dinnigan, being feted like a celebrity by media in Malaysia at the launch of Covo cosmetics whose illustrated branding she created, and the thrill of seeing billboards all over Paris with her stylised figures looming larger than life. When Louis Vuitton contacted her, Kerrie was at first unsure if she had read the email correctly. “I wondered, ‘is this real? Do they mean me’?” Turned out, Kerrie’s reputation and distinct style appealed to the creative gurus at the brand. Kerrie was engaged to create a campaign for the Iconic & Cruise Collection 2013 and given free creative range.


“They asked me to ‘design my own brief’, which was very daunting, as well as being exciting. They are the rare brand that makes sure the artist can work without boundaries.”

When Louis Vuitton contacted her, Kerrie was at first unsure if she had read the email correctly. “I wondered, ‘is this real? Do they mean me’?”

Kerrie devised a series of paper dolls to showcase a blend of classic LV readyto-wear pieces with the 2013 summer cruise collection. The concept struck a chord with devotees of the brand, the global fashion press, and the new generation of bloggers who edified her designs on their sites, multiplying their reach to their readers on every continent.

In January this year, Kerrie celebrated her crowning achievement as an artist, a hat she wears with as much pride as commercial illustrator: her own exhibition at Hotel Le Meurice in the delectably named “Grand Salon Pompadour”. “The walls were so ornate and beautiful, it was hard to hang my pieces. It was surreal. All these people, media, the fashion crowd. I was slightly sad, because my family was all back in Australia, but it really was an incredible high.” Having relocated back to the city of her birth, Brisbane with her young son, Marcel, Kerrie – like the great impressionists before her – is once again inspired by the heat, the bright colours and casual lifestyle of Australia.

“I see some tropical themes creeping in to my work! It’s nice to be back among family and I am just loving this hot weather! I spent 15 years enduring very cold winters!” As for life back in Brisbane, Kerrie is enjoying getting to know a more sophisticated city than that she left behind. Her son has started school and she is renewing ties with family and friends.

“I am going to have to travel to Paris every few months to see my clients in fashion, beauty and food. It will be short and sweet, but important to see them and top up my love of Paris. But this is my home-base now. “ Kerrie’s ethereal designs are available online, via her site and Big Cartel. She is an avid Instagram user, using the feedback from friends, clients and followers to test ideas. “I can draw a random sketch and put it out there. Sometimes they turn in to a limited print, or other ideas emerge from them. I absolutely love when people buy my prints they send photos of them on their wall in their homes. The dynamic duo, sisters Hayley and Lauri Smith, launched their edgy, dark and entirely original fashion label, Serpent & The Swan, in 2009. Their current collection is a beautifully designed statement of their own quirky take on what is fashion. Describe the beginnings of Serpent & The Swan, and how the label was born? Our label was born about four and a bit years ago over a family dinner when we were chatting about buttons, and Hayley said she would love to make clothes with different trimmings like eyeball buttons and [Lauri] said I can make eyeballs‌ It all started from that conversation and from that we got together on the weekends and would just brainstorm, drawing, sculpting, creating. It just started to take on a life of its own.

As sisters; what are the joys and challenges in working together so closely? It definitely makes it easier as we can pretty much speak our mind and not have to step on eggshells! We share the same ideas and visual aesthetic so collections develop quite naturally. Because we have different creative backgrounds we never compete, but rather complement each other. Of course we have our disagreements or times of stress, but you get over it very quickly! You have to!

What are each of your roles within the label? We definitely collaborate and create the collections together, but we both have different strengths. Hayley, with years of experience

as a fashion designer usually is the one who works more closely with the development and construction of the garments during the sampling process, as well as doing all our graphics, logos and visuals for the brand. I [Lauri] create all the trimmings that adorn the garments by hand, as well as our jewelry range. I also work with the accounts and business side. We both work through production and orders together, Hayley works closely with our manufacturer in Sydney and I put the orders together and deliver them to the shops. There is so much that goes into having a label, you just learn all the different roles you need to take on as you go.

What style does your label embody? The style has a distinct edgy look to it. Other people often describe it as quite dark, but ultimately it is designed for those that want some originality and uniqueness to their wardrobe/style.

Where does your inspiration come from? Our inspiration has always come from our fascination with animals and the anatomy. I think being born in South Africa has influenced our love of animals, as well as the weird movies we used to love and watch growing up has definitely influenced us. Each collection is usually inspired by something different that takes our


imagination, but it always comes back to this fascination we both have. Also, music always inspires us during the design process.

Who or what are your muses? So many things, but just to name a few: art, surrealism, nature, natural history museums, imperfections found in nature and music.

What was your greatest moment of success in launching your own label? Winning a trip to showcase our work in New York a few years ago was definitely a big highlight, and debuting at MBFWA last year as we got some great press and exposure.

You have just launched your new customisable basics range, Sculpt It; describe the collection and how it works? The new Sculpt It range was an idea we have had for a few years now, we wanted to make a high quality essential basic range to sell at wholesale prices direct to the customer to compliment our boutique collection. The idea with this range is that it can be customised by the customer to suit there own style – so they can choose the trimming or adornment to create the basic garment. Basics include organic tees, vintage washed linen shirts, cosy merino wool cardigans and sweaters as well as a neck accessories. The range is unisex so you can share it with your boyfriend/girlfiend/flatmate/ friend/etc. All you have to do is go to our website select your basic, then select your size and unique trimming you want added to your garment and we will put it together and deliver within 7 to 10 days. We now offer free delivery to anywhere in Australia too.

You presented your Spring/Summer 2014/2015 collection in April at the Mercedes-Benz Fashion Week Australia, can you tell me about the collection? This collection was inspired by a recent trip to Eastern Europe. While in Bulgaria I came across this beautiful ancient metal plate, which was in one of the museums, and I took a photo of it. From this photograph we created a print which then inspired the whole collection, which is about ancient rituals and symbols. We also worked with Annie from the band Little May on a snake sketch that we’ve used as a print. The collection has a lot of interesting textures and different metal colours throughout, and of course our favorite colour in the colour palette black! We created a trans-seasonal collection with lots of layering pieces and even jackets, so we can appeal to the overseas climate too.

Sarah Blasko perfored live at this show, how was her music incorporated into your runway presentation? We were really excited to have Sarah be part of our show! She created a beautiful piece of music that played during the show alongside her live element during the runway.

W

e’re a visual animal. Long before we process the words that we’ve heard we’ve already read the speaker’s face and pretty much decided everything about them. This is a primitive reflex that well pre-dates modern society and even pre-dates the spoken word. “Friend or Foe?” “Sick or well?” “Young or Old?” We decide these things in a fraction of a second. It’s a habit that is printed in our DNA and it only takes us about 0.7 of a second to scan a face and form an opinion. For all these reasons, it’s best to put your best face forward. To keep your face in the best possible condition and to preserve it as long as possible the following may be good advice. Protect your skin. The shiny pink youthful glow can easily become a dull, matt, dusty finish. For the Caucasian, our skin was never designed to cope with the climate we live in here. We’re more adapted for the cold north. It’s nice for your skin to apply a moisturiser each day and you may as well include a sun block in that. Using a sunblock on your skin will undoubtedly help to reduce the damage from UV light. However, because sunblocks aren’t perfect and moreover we don’t use them perfectly – that is we don’t put enough on, we rub it off, we don’t reapply – for all these reasons, it’s wise to take advantage of the clever skin preparations that science has developed over the last 20 years. Start with the antioxidants. While the right diet and vitamin pills can push the level of antioxidants up in your skin a little, it’s far below the leap you get when applying scientifically -proven antioxidant skin preparations. These can stimulate the formation of collagen in the skin, help to fade sun-induced pigmentation and most importantly act as an internal “sunblock”, mopping up

the free radicals that form in the skin as a result of exposure to UV light. The other way free radicals form in the skin and damage its elastic network is from smoking. This is a very potent cause of premature aging. Again, while antioxidants can help, there is a simpler answer: DON’T SMOKE!! After using an appropriate skin care program the next step in reversing the aging changes of the skin are light-based treatments and microdermabrasion. Microdermabrasion helps to enhance the absorption of the skin care agents and has a positive effect on the top layer of the skin. Light-based treatments include intense pulse light and lasers. Intense pulse light is a no-down-time procedure which is most effective at treating the discolorations of the skin that one gets with aging – the reds and browns that really shouldn’t be there and that make the skin look tired and unattractive. There are a wide range of lasers to improve the skin. These may be a vascular laser designed to eradicate those spider veins that form especially around the nose and chin, or a resurfacing laser designed to remove the top layer of the skin and stimulate the deeper part to form new collagen. The resurfacing laser treatments however take most of a week to heal but they are much more effective at dealing with wrinkles. We also age from our habitual expression lines. The smile lines, the crow’s feet, the frown lines. All of these create a wear pattern on our face. With a few simple injections, the over-active muscle that creates these lines can be relaxed and the lines will soften. The aim is not to create a mask-like face that cannot move. It’s too easy to overdo these potent agents in the wrong hands. The ideal result has a full range of movement but doesn’t maintain the line after the expression itself has gone.

When the lines have been there for too long, simply relaxing the muscles themselves may not make them go away. The lines may need to be “filled in”. Again injectables have proven increasingly popular to deal with these issues. But due to the enhanced effectiveness of modern injectables, their use has extended beyond simply line “filling”. They can be used to recontour the cheeks, the lips and even the nose. Our faces can deflate as we age, particularly those who are conscientious enough to stay fit and watch their weight. Injectables help to overcome that deflation, which is part of the aging process. The wonderful thing about using the right injectable is that if there is a problem, even something as simple as not achieving the right shape, the product can be safely melted away. This provides a degree of control and safety that is quite remarkable. Of course eventually the effects of time will show as a sagging in the face. While there are various light sources around which are designed to improve these features in truth their capacity to reverse the aging changes is a tiny fraction of that achieved with a surgical lift. Modern facial rejuvenation operations

combine a range of procedures targeting different parts of the face to try and create a harmonious and natural rejuvenation of the face. This may include surgery to the eye lid, lifting of the brow, face and the neck, laser to the stronger lines around the eyes and mouth, and use of the patient’s own fat as an injection to restore shape to the cheeks, the lips and the jaw-line. These procedures can be done at the same time and you’re usually “back on the road” by 10 to 14 days. With all these options, it is essential to get a careful assessment and a thorough explanation of the preferred options in your particular case. There is no point in persisting with a mountain of injections or lasers when a simple and safe operation is going to achieve a much better and longer-lasting result with a brief recovery time. And once the surgery is complete the other modalities can help to maintain and enhance the effect, by treating various aspects of facial aging. So take care of your skin, soften those frown lines and keep the nice contours to your face. It’s not a bad thing to have people guessing your age. As long as we remain the visual creature that we have always been it will always be worthwhile to put your best face forward.

n a country that experiences more skin cancer than anywhere else in the world, and in the capital of melanoma, Queensland, Australian scientists believe they have found a way to stunt the growth of melanoma by cutting off its food supply. Scientists from the University of Sydney and the Centenary Institute believe they need to prevent the amino acid glutamine from entering the melanoma cells. The scientists have discovered a pump system on the surface of cancer cells, which they aim to block with a new class of drugs, according to their article published in the International Journal of Cancer. This could lead to a new way of treating melanoma, which rapidly becomes resistant to current therapies. “Melanoma is one of the most difficult cancers to treat once

it has spread,” says research leader Dr Jeff Holst, who heads the Centenary Institute’s origins of cancer research group. Although the study has been restricted to laboratory cultures so far, he is optimistic the concept will lead to a new class of drugs that could work across a range of cancers. In 2013 the same team published a study on a way to starve prostate cancer cells, which need the amino acid leucine to grow. “We first demonstrated this nutrient pumping mechanism in prostate cancers, and it now looks like it occurs in a broad range of cancers, particularly solid cancers such as melanoma,” says Dr Holst. “This opens the possibility of designing therapies that can be used to block nutrient pumps across multiple cancers.” Visit sydney.edu.au/cancer-research

In this respect, there is one thing that you can always be sure of… change! Change in the social, political, technological, financial and economic environment. I often find the start of a new financial year brings a renewed enthusiasm for investors to take a closer look at their portfolio and how it stacks up against their long term goals. As we approach the beginning of the 2015 financial year (where did the time go?), it’s an opportune time to share with you my ten top investment tips for anyone looking to spice up their portfolio.

1. Focus on your goals, not the Jones’s Be aware of fads and fictions which are short-term in nature and add little to no value to the performance of your portfolio. Taking a short-term view of the investing world is really gambling with your future and a behaviour which should be avoided.

2. Change – the only real constant Although still undergoing great change, the market has recovered somewhat since the GFC hit. This means those ready to consider retiring can now make that significant life decision. When asking yourself if you are in a financial position to retire, an external voice for advice is certainly worthwhile.

3. The innovators The latest directional change is the evolution of cloud computing. Opportunities that are yet to hit scale in this area include data centres, security providers, transition managers and software providers. This is an area to watch.

7. Where to invest offshore Investing offshore can provide exposure to brands with products that are consumed, applied, utilised, watched or enjoyed by Australian’s every day. Think Apple, Google, Microsoft and Johnson and Johnson. They not only have sales and profits driven from mature markets, they are also benefiting from the faster growing emerging markets.

8. Yield does not equal income Given dividends represent a reasonable portion of total returns and wealth creation, it is important to identify quality companies where there is a strong correlation between earnings per share growth and dividend growth.

9. Infrastructure and property – the new annuities If an annuity is not your cup of tea, then where should you look for a reasonable distribution on a regular basis that also provides some inflation protection? My view is infrastructure and property. The key to successfully investing in this space as part of a diversified portfolio is understanding the longevity of cash flow generated from good quality infrastructure and property assets.

10. What to do with the banks The notion that you are better off owning the banks rather than lending money to them through term deposits has proven correct over the last 12 months. If it is for income, then the banks offer excellent dividends in a range of around 5%-6% fully franked, which equates to around 7% including the franking credit. If you own them for growth, then they do appear to be fully priced.

When considering the demographics and dynamics of our population and the businesses that one might consider investing in, it is likely that access to quality aged care facilities will become more difficult as demand outstrips supply. The key to investing in this area is identifying who the major players are in provision of affordable in-home care.

Around 30,000 spectators will make their way to Willowbank Raceway between June 5 and 8 for the FUCHS Winternationals – the largest championship drag racing event held outside the USA. The FUCHS Winternationals is a real jewel in the crown of Willowbank Raceway and Australia’s drag racing industry, with up to 500 racers from across the country expected to compete. Located only 45 minutes from Brisbane or just a short drive from Ipswich, Willowbank Raceway is Queensland’s premier drag racing facility and this is the biggest event of the year.

SEASONED TRAVELLER Chip Popescu shares his insight on travel trends and must-visit destinations.

T

ravel is an ever-changing and competitive industry. Any wonder then, the dynamic duo of Chip and Michelle Popescu head up a multi-lingual team of 25 with a travel business that is evolving and diversifying to meet market demands. Founder and director of premium travel brand, Select World Travel, Chip also manages several other branches to his travel enterprise, including wholesale business, Eastern Eurotours & Mediterranean Holidays; online travel network, iFly; SkiTheWorld. net.au for global skiing packages; and soon, TravelRez, which will be a comparison site sourcing hotel accommodation. “It is exciting,” he says of the expansion. “Online is really our future, working with partners and aggregators. That’s how consumers look for travel these days. Of course, you’ll always have your premium end that want the personalised service, the planning, advice and relationship with their agent, and that’s what Select World Travel is all about. But for volume, online where the activity is.” Migrating from Melbourne, where he gained his Bachelor of Tourism and Marketing qualifications, Chip is originally from Romania – Transylvania to be exact. His first jaunt in tourism was a gig as a ski instructor, working mainly with English and Irish tourists. Romania’s situation under the regime of Nicolae Ceaușescu made it impossible to prosper, so in 1984 Chip fled to Vienna, Austria, where he honed his sales skills working for a chain of budget hotels. Just two years later, his family migrated to Melbourne, Australia – a massive move, and not his last. With his degree in hand, Chip worked in ski-tourism. The

recession and a seasonal market meant opportunities were scarce, so he relocated to sunnier climes and started Eastern Eurotours in 1992 from offices in Southport and with the assistance of a Commonwealth Government grants program. He met and married Michelle and together, these days from offices in Surfers Paradise, they have built their travel empire on impeccable client service, a genuine passion for travel and appetite for innovation – both in their business and on the travel landscape. Chip recently travelled to Dubai for the International Travel & Tourism Industry Expo, and says he was astounded with the new products proliferating in the region and globally. “It’s constantly changing and as travel professionals, we have to be on top of the innovations. That’s what keeps it fresh for us.” Like most industries, the GFC impacted on travel. But Chip reports a new wave of consumer confidence, which with a high Australian dollar has propelled local travel. “We had our ups and downs during the GFC, and of course, following 9/11. But the rise of the Middle Eastern airlines, like Emirates, and some of the newer budget players, has grown the market.” Within weeks, TravelRez will launch both direct to consumer and to trade. “We created it from feedback from agents, who said they were looking for an online system that could compare hotels around the world. We will have a white-label version for them and our own branded as TravelRez. G20 BRISBANE’S TIME TO SHINE

The G20 forum, 15 and 16 November, is unique in its economic influence. It brings together the leaders of the 20 largest developed and emerging economies annually to make decisions on global economic challenges.

With the global spotlight upon us, we will make the most of this opportunity, by showcasing the diversity of our sunshine state as a world-class destination to invest and do business, study and visit. HOMES Showcasing the new approach to domestic design in Australian architecture from the 1950s through to the 1970s, 50/60/70 Iconic Australian Houses by Karen McCartney, brings together 15 examples from different architects of significant homes from this period.

aren’s love for architecture and interior design began with her living in Bruce Rickard’s 1967 designed Marshall House, whilst studying Art History and English and editing for interior magazines. “That opened my eyes to the simple pleasures that came from someone actually having thought about space, light, materials, convenience and aesthetics,” said Karen. The idea for this book was born from Karen’s love of her home and its quality in being so well-preserved, and she wanted to put together a collection to illustrate significant homes from the creative talents of other great Australian architects. “I did some research, sent in a proposal and [Murdoch Books] liked the idea. Then I had the really hard task of sourcing all the houses and making the idea a reality,” said Karen. The Australian economic boom of the post-war period of the 50s to 70s that was the impetus for a fresh approach to domestic design. Each house featured in this book embodies this approach in its timeless designs and quality, its connections with landscapes and the outstanding integrity of interiors in keeping with the principles underlying the concept.

Featuring the iconic homes around the country from the genius of Harry Seidler, Peter Muller, Roy Grounds and Bruce Rickard, among other, the book also pays tribute to the influence of the pioneers of modernist principles – American and European luminaries like Frank Lloyd Wright, Walter Gropius, Ludwig Mies van der Rohe. Asked to settle on a favourite house from the 15 featured in this collection, Karen explains that she has a fondness for every one of the houses. “When I was working on the book I could only focus on one architect and one house at a time, because it is important to become immersed in that particular philosophy. They were all fascinating and had a different rationale and aesthetic that kept the process interesting, it was a great education for me. I still love the house we live in (since 2000) that my children have grown up in, but maybe I am biased,” she said. CARROT, FARRO, CORIANDER, MINT AND ORANGE SOUP Serves 4

3 tablespoons cracked farro, soaked overnight in cold water salt flakes and cracked black pepper 100 ml extra virgin olive oil, plus a splash for drizzling 1 onion, diced 4 cloves garlic, crushed 1 tablespoon ground coriander 1 teaspoon ground cumin 1 cinnamon stick 1 kg carrots, diced

4 tablespoons dry white wine or sparkling white wine

finely grated zest and juice of 1 orange 1 handful each of mint and coriander leaves, chopped ½ cup (140 g) Greek-style yoghurt Carrot soup runs the risk of becoming onedimensional if the sweetness of the carrots is allowed to dominate. This recipe acknowledges the sweetness, but it’s rescued by the cumin and coriander, which nudge the flavours more to a savoury spectrum, and the yoghurt and orange zest, which deliver tang. The farro brings an earthy dimension to the dish and almost turns it into a complete meal. I don’t get too fussy about the quality of the carrots for this. I believe very strongly in buying the best ingredients I can, but in this case I would rather spend the money on a great extra virgin olive oil to finish the dish. Farro usually requires quite a bit of soaking. You can get away without it in this recipe, if you’re in a hurry, but make sure you rinse the farro a few times under cold running water, then up the water content by

½ cup (125 ml) and add 15–20 minutes to the cooking time. Oh, and a note about using wine in cooking: if you wouldn’t drink it, don’t cook with it. You will notice undesirable flavours in your dish if you skimp on the wine. In this case, you are after something dry; I often use sparkling white if I don’t have a suitable dry white wine on hand. 1 Drain the farro, discarding the soaking water. Place it in a heavy-based saucepan with ¾ cup (180 ml) of cold water and 1 teaspoon of salt and bring to a gentle simmer. Cook the farro for 20 minutes until it’s tender to the bite, then drain and set aside. 2 Meanwhile, heat the olive oil in a large heavybased saucepan over medium heat and sweat the onion until it’s soft and translucent. Add the garlic, coriander, cumin and cinnamon and saute for five minutes, then add the carrots and three teaspoons of salt and saute for a further five to eight minutes until the carrot is coated with the spices and slightly coloured. Deglaze the pan with the wine. Add 800 ml of water and simmer over low heat for about 10 minutes until the carrot is tender. 3. Remove the pan from the heat and discard the cinnamon. Carefully blend the diced carrots to a smooth consistency using a stick blender. Stir in the orange juice, then check the seasoning, adding more salt to taste. 4 Fold the orange zest and chopped herbs through the yoghurt and add a pinch of salt. Place a large spoonful of farro into four warmed soup bowls and ladle the carrot and orange soup over the top. Garnish with a dollop of the herb yoghurt. Finish with an extra splash of olive oil and a good twist of black pepper.

CAULIFLOWER ROASTED WITH PANCH PHORAN AND FRESH TURMERIC Serves 4 1 cauliflower, trimmed 120 ml ghee 1 tablespoon freshly grated turmeric or 1 teaspoon ground turmeric 4 tablespoons panch phoran 1 tablespoon salt flakes 1 long green chilli, sliced, seeds and all 1 small bunch coriander, leaves picked juice of 1 lemon Preserved lime pilaf (see page 196 of Simon’s book) or jackfruit biryani (see page185), to serve (optional) Whenever I visualise cauliflower, I always think of my vegie patch on a frosty winter morning after overnight rain, with the cauliflowers nestling in their leaves like they’re tucked up in blankets, and a drop or two of rainwater gleaming on their flowery tops. I was never a kid who hated vegies, but I did think that boiled cauliflower smelt a bit like old socks (and overcooking it pushed that smell to somewhere nearer rotten eggs). I’ve since learnt that the trick is to leave the cauliflower a little undercooked or to roast it. As a young chef, I was a little reluctant to do the latter because I thought it made the florets look a bit sad and wilted, but my appreciation for messy-looking things has grown with the years (old dogs, dented cars, beaten pots and pans ) and I now think roast cauliflower looks rather compelling. 84 BRISBANE CITY Magazine

Panch phoran is my choice of spice for this. It’s essentially a blend of fennel, fenugreek and cumin seeds and sometimes wild celery or mustard seeds, but absolutely always nigella seeds. I always think it smells slightly medicinal. I especially love the combination of the fennel seeds with the cauliflower. This, along with the slight bitterness of the fenugreek and the way the turmeric stains the cauliflower a vibrant yellow, makes the dish another favourite of mine. 1 Preheat the oven to 200°C fan-forced (220°C conventional). Cut the cauliflower into quarters. Working from the stem end up, cut each quarter into florets about 4 cm wide at the top with a trailing stem. The stem is the best bit so do not trim it all off. 2 Heat the ghee in a small frying pan over medium heat. Add the turmeric and panch phoran and fry until a few seeds crackle ever so slightly. Do not allow the panch phoran to get too hot as the fenugreek will become very bitter. Add the salt to the pan and stir to combine. Transfer the spice mix to a large bowl. 3 Add the cauliflower to the bowl and toss to coat with the spice mix, adding a little more ghee if the cauliflower is not properly coated, and pressing the seeds on to the florets. Transfer the cauliflower to a roasting tin. 4 Roast the cauliflower for about 25 minutes or until it’s tender; a few burnt tips are nothing to worry about. When you are ready to serve, toss the roast cauliflower with the chilli, coriander and lemon juice. This works really well served with preserved lime pilaf or jackfruit biryani.

The Fireplace

The Fireplace has stoked the flames with a new Chef, inspired vision and taste for the extraordinary.

E

xecutive Sous Chef, Parashuram Pathak heads up the team of 300 at InterContinental Sanctuary Cove. Born in Nepal in the shadow of Everest, Parashuram, known as “Para” has as his mission in this iconic hotel and its dining areas: “to introduce new methods of cooking and help change the philosophy of dining at the resort”. The Fireplace, the property’s fine dining venue, has always been popular for events, weddings and special occasions, but Para wants to open it up to families and locals with a menu that is at once accessible and also defined by the exotic and intriguing. “We just take normal ingredients, and some unusual ones, and create something new.” Para has taken his global experience and ethos of using fresh local produce to heart, establishing a large herb garden on the terrace of The Fireplace. Teamed with the expert suggestions from the resort’s Sommelier and Maitre d’ at The Fireplace, David Stevens-Castro, the menu consists of a la carte or a degustation option. We chose to leave it to the Chef in charge on the occasion of our visit, Chris, who sampled from both menus for our delectation. While we waited, we tucked in to house-baked bread loaf, with pepe saya butter and local olive oil. Unique to InterContinental Sanctuary Cove is the team of pastry and bakery experts who prepare rolls, bread and sweet pastries daily for guests at the resort and in the restaurants. First up, from the Seafood Tasting Menu was the appetiser: Oyster cream, with baby cucumber and yuzu citrus. It was paired with NV Deutz Brut from Marlborough, New Zealand, but we chose to stick with the 10 Minutes By Tractor 10X Pinot Noir – a refreshing berryinfused drop from the Mornington Peninsular and one that we vowed to buy for our own cellar. From the entrée menu, the next dish was Prosciutto-wrapped quail with activated almonds (soaked in water for 12 hours to ‘enliven’ them), cherry gastrique and summer herbs. Nobody cooks quail at home with much success, so this was a treat – a melt-in-the-mouth delight doused in crushed cherry sauce and crispy almonds – both superfoods – then sprinkled with freshpicked herbs. The quail was masterfully prepared, but there was no time to linger on the quail as the next morsel presented itself: Slow-cooked pork

cheek with honey roasted peach, asparagus and pear textures and puffed emmer. The light, white meat of pork and the sweet peach sliver are about as perfect together as ingredients can be. The puree was light but important and the emmer – a hulled wheat grain – was a nutty gesture. Para has thought of everything. Even as we yearned for just one more pork cheek, a palate cleanser of pear sorbet, citrus and micro mint refreshed our senses ahead of mains. We chose from the a la carte menu, which had dazzled with tantalising fare, among them Lamb loin with sweet potato, smoked tomato and macadamia; Rib fillet of Kobe Wagyu beef, with re onion-apple chutney and jus; Venison fillet with kohlrabi puree, pickled shimeji and Valrhona jus– yes, Valrhona chocolate! The intimacy of the open kitchen with its two blazing furnaces and the quietest chefs ever seen (no cursing or throwing sharp implements here!) meant we could see dishes prepared in studious but no less thrilling detail. From our observations of the meals of guests before us, I chose King Salmon with watermelon marmalade and lemon and my husband chose Confit of Free Range Lilydale Chicken, with roasted plum, black bean ragout and nasturtium. Salmon is a versatile fish and I am too much of a devotee to deride any form of its preparation, cooked or raw, but straight off the wood fire grill is a delicacy beyond compare. The skin home chefs too willingly discard was succulent and crisped to perfection, offset by grated watermelon – the green part – that was just tart enough, plus a side of lemon for an extra tang. My husband’s Confit of free range chicken was just as divine. The chicken was tender and flavoursome, superbly juicy and contrasting with the black bean ragout, like a small splash of Brazilian-style stew, that have a flavour akin to mushrooms. Gratified with the inventive blends of sweet and savoury, suave and textural, we decided to forgo dessert and try instead the cheese platter – a stroke of genius for aiding digestion and something simple we could wash down with our Pinot Noir (an excellent find and now, firm favourite.) The objective of the InterContinental Sanctuary Cove is to bring The Fireplace into the echelon of Hats and other accolades. Armed with his arsenal of herbs, culinary wisdom acquired from working in Dubai, San Francisco and Sydney, talented team and real feeling for food, Parashuram Pathak is well on the way to achieving this and acquiring a cult following among his guests. A new era of exquisite dining has dawned on Brisbane at Bacchus Bar Restaurant and Pool, hosting indulgent Dom Pérignon Experience degustation dining.

he seven course degustation is the result of a collaboration between Bacchus Head Chef Mark Penna and Dom Pérignon Chef de Cave, Richard Geoffroy. “I believe the Dom Perignon Experience is the only degustation dinner in Australia that boasts the honour of champagnes that have been personally paired with the menu by Mr Geoffroy,” Penna said. “It was an absolute honour to collaborate with him on this menu.” As the creator of Dom Pérignon, Richard Geoffory takes a personal interest in the wine, an international symbol of all that is best in Champagne. He alone is responsible for deciding whether or not to declare a Dom Pérignon vintage. The 1996, 2002, 2003 and newly release 2004 vintages are amongst those he hand picked to accompany the Dom Pérignon Experience’s seven courses. Named for a bird, Heron Island is renowned as the home of the Green and Loggerhead Sea Turtles. Visitors travel from all over the globe to take part in an up close and personal encounter with these ancient mariners.

ust 72km north-east of Gladstone and 539km north of Brisbane, Heron is bustling with biodiversity. On the tiny islet located on the southern end of the Great Barrier Reef, the Heron Island Resort is Great Barrier Reef ecotourism at its best, which is no doubt why it has been awarded an Advanced Eco-Certification by Ecotourism Australia. The resort leaves no stone unturned, catering to every style of traveller, with diverse choices for those who like to explore and get amongst it, to those who prefer to site poolside or laze on beaches absorbed in a book. But it’s what you don’t see around Heron that makes the resort so special. You won’t see any buildings above the tree line and you won’t bump into any day-trippers. the Island’s custodians hope to secure a brighter future for these wondrous creatures. Heron Island is the nesting location for two vulnerable turtle species, the Green Turtle (Chelonia mydas) and Loggerhead Turtle (Caretta caretta). Strict guidelines are in place for the viewing of nesting and hatching turtles, which starts each year in around November, but it is possible to witness the last metres of the journey of pregnant females as they lumber to shore to lay their hundreds of eggs, or those very eggs bursting forth with black offspring who face umpteen challenges on their way to the Big Blue, and beyond. In response to dwindling numbers, Heron Island and the Sea Turtle Foundation, a non-profit, organisation dedicated to safeguarding sea turtle populations, migration routes and habitats, have struck up a partnership to enable guests to the island the opportunity to better understand these amazing creatures. Information sessions and materials are readily available in and for people staying during turtle season, November to March, there are guided walks led by Foundation or Resort staff. From donations, the Foundation plans to buy Turtle Stretchers which enable volunteers and guests to move trapped and stranded turtles with minimal stress. Many of the resort’s rooms offer sea glimpses through the island’s unique vegetation and some offer direct beach access. The different styles of rooms (there are six unique types) arc around the natural curve of the island, from the jetty to North Beach. Over the course of your visit you will find yourself monitoring the snowfall in hopes of what the locals call a “powder day”. At the beginning of your stay purchase a Fresh Tracks ticket which you can use on any unspecified day – it is recommended you use this ticket on the morning after heavy snowfall – to be one of the first on the mountain. Do not panic at the idea of reaching the top! Whistler and Blackcomb Gondolas stop at mid-station before continuing to the top. Don’t lose your nerve and get off halfway! Green (easiest) runs are available from top to bottom, throughout both mountains. For those on foot, ski’s or snowboard the top has everything you need and everything you absolutely must see. Starting with the view, on a clear day you can see the entire Whistler valley, the distant glaciers, the adjoining mountains, both villages and so much more. It is the view of a lifetime and a top of the world feeling that is truly unforgettable.

Also located at the top of each mountain is the PEAK 2 PEAK Gondola, a breathtaking feat of engineering that links Blackcomb and Whistler mountains. It is the longest unsupported lift span in the world and the highest elevated lift of its kind. It stretches across Whistler valley from each mountain peak, offering a bird’s eye view of the forest, mountains, valleys and glaciers surrounding Whistler. XJR There’s an unwritten rule in motoring. Luxury cars can’t be good performance cars and vice versa. That rule exists because luxury often means serenity and performance means noise, power and adrenaline.

A

dvances in technology now mean that luxury and performance can coexist and one of the first cars to master such a blissful unity is the Jaguar XJR. The latest Jaguar XJ debuted in 2009 and was launched with a range of engines that included naturally aspirated petrol engines, turbocharged diesel engines and a high-performance supercharged V8. Each engine offering excels in the XJ due to the use of aluminium panels throughout the body. The advantage of using aluminium instead of steel is weight saving, structural rigidity and better fuel economy. While the XJ Supersport is both fast and luxurious, the XJR takes it one step further. Sporty overtones such as chrome highlights, quad-exhaust pipes and ‘R’ badging front and rear give the XJR away in traffic. Inside the cabin it’s much the same story with body-hugging seats, suede headliner and ‘R’ badges strewn throughout. The sporty look doesn’t detract from the quick cat’s luxury side. Expanses of legroom, a panoramic glass roof, leather on almost every surface and exquisitely finished trims set the benchmark in this segment. Standard leather colours can be swapped out for extravagant reds, sunburnt oranges or soft beiges in a bid to offer buyers even more personalisation. There is also no shortage of space-age technology in the cabin.

For example, the speedometer cluster is entirely computerised and displayed using a large LCD screen. To turn the lights on, you simply swipe your finger across the light to activate it. Then there’s the remote control for rear seat passengers to adjust the track or TV show and even a motorised glove box lid. Audiophiles will instantly fall in love with the epic 20-speaker, 2-subwoofer 825W Meridian sound system. Capable of producing 7.1-surround sound and streaming music via Bluetooth, digital radio, DVD or CD, there’s no end to the hours of quality sound on offer. Throw in your favourite DVD and the passenger is able to watch a movie while the driver sees the navigation screen. This amazing technology allows two images to be displayed from the same screen; varying only depending on the angle it is viewed from. Under the bonnet is Jaguar’s renowned 5.0-litre supercharged V8 engine produces a herculean 404kW and 680Nm of torque. These figures translate to a physics defying 0-100km/h time of just 4.6-seconds. To put that into perspective, it’s as quick as a Porsche 911 Carrera S, or even a Mercedes-Benz SL500 — both bona fide sports cars. On the open highway, the XJR glides along smoothly and soaks up bumps and potholes with aplomb. Even some of the state’s worst roads are no challenge for the XJR’s adjustable


suspension and dampers. It’s not until you prod the throttle or engage the dynamic driving mode that things turn from serene to postal. The sport mode engages dynamic damper control and allows the ride to immediately firm, which helps keep the car flat during cornering and aggressive driving. Faint supercharger whine is teamed with a devilish exhaust note to accentuate the XJR’s sporting prowess. Sharp throttle response and accurate steering help top off the vehicle’s performance credentials. Handling isn’t as crisp as it could be, but that can be put down to the XJR’s huge 5.1m length. Rear wheel driven cars this size will always struggle to maintain confident grip during cornering and low-speed quick manoeuvring. Now you understand why Jaguar has managed to nail the brief — luxury motoring with a switchable performance element. It’s not often that a car comes along that looks so good and feels so right. The Jaguar XJ range starts from $198,445 and moves all the way up to $319,645 for the XJR tested here.
